A checklist of BK Magazine’s most important discoveries this week. Astronaut food is actually great Two-time “Asia’s Best Restaurants” winner Gaggan Anand welcomed his buddy Takeshi Fukuyama from Japan’s La Maison de la Nature, for a little four-hands cooking last week. It took place in the restaurant’s new extension, a twin-story glasshouse mezzanine that the chef says cost B20 million, in no small part because of his new freezedryers. Why the urge to make NASA-food? It allows him to make crunchy peach juice and vegetables that soak up the broth they’re in, as opposed to just floating in it. The intensity of flavors is suitably out of this world. MahaNakhon Tower will light up this month It’s been a long wait, but this Aug 29 marks the grand opening of Bangkok’s most luxurious apartment building and tallest tower. The “jenga tower” (to give one of its nicknames) will announce itself with a spectacular hourlong light show (7:30pm-8:25pm). Get that phone ready— prizes will be up for grabs for the best pictures taken of the lit-up building. Another top bartender is going it alone In recent weeks, Hideyuki Saito departed Vogue Lounge to launch his own bar, Bronx (Thonglor), while former House on Sathorn bartender Michele Montauti has popped up with Mikys (Pan Rd., Silom). Now comes news that Touche Hombre’s Sebastian De La Cruz has left the fledgling Mexican joint to open his own place. Don’t hold your breath, though—it’s not expected till early 2017. There’s something missing from the MRT Purple Line No connection to the MRT Blue Line means no commuters. Those who have taken a ride are complaining of obscene shuttle bus changeover times. No wonder the line, which launched on Aug 12, is well down on its target of 60,00070,000 commuters per day. Fare reductions have been mooted, but we think we’ll hold off buying that condo in Bangyai for a while yet. Going from Hua Hin to Pattaya will get much easier Don’t you hate it when you’re trying to get from Pattaya to Hua Hin, and your only option is a four-hour drive, even though you could just cut across the Gulf of Thailand? The government has found the solution, by reviving plans for a 1.5-2 hour ferry. What’s that you say? You’ve never thought of going from Pattaya to Hua Hin? Clearly you are not a general.

The Economist just released its global liveability index and while we’re still down a couple points compared to 2011, our newfound stability is starting to pay off, making us one of the few cities to improve from 2015 to 2016. Elsewhere Dubai, Adelaide and Budapest are some of the big climbers, while over half of the top 10 spots still go to Australia and Canada’s second cities, from Melbourne to Vancouver, Toronto and Perth.

Is 2016 finally the year when the mooncake gets with the times? We tried Chocolab’s latest batch—glorious mounds of, well, chocolate—and for a moment forgot we’d ever even considered using these annual treats as doorstops or paperweights (joking—no hate mail please). More flavors to get excited about this season include Man Fu Yuan’s whiskey and rum spiked cakes, Harrod’s truffle and Maxim’s oozing lava offerings.

Ekkamai’s new fusion salad “bowl bar,” Kikimade, only opens from morning till 5pm, after which it transforms into Light Room, a nightclub that’s a blend of white decor, sci-fi lighting, cool customers and heavy basslines. Meanwhile in Thonglor, most of 72 Courtyard is slowly but surely starting to see the light of day, on weekends at least (see Lady Brett’s new brunch, page 16), leaving the night free for the really important stuff, over at Beam.

Move over Khao Yai. The latest round of resort evictions is for the once-forest-clad hill of Phu Thap Boek. Judging by the pictures, it’s too late. The place is crammed with bungalows and villas, dotted along the hillside without any semblance of a plan. It will take decades for the Northern destination to return to its former glory. Pencil it in for 2057? And make sure you bring a tent.

INTERVIEW Design firm Party/Space/Design, led by Suparat “Toh” Chinathaworn, 35, and Kijtanes “Him” Kajornrattanadech, 32, are behind some of the most singular restaurants in town: Too Fast To Sleep, Hands and Hearts, Thinking Outside the Fox. The list goes on with Baa Ga Din, the street food-turned-fine-dining restaurant which was recognized at Thailand’s Demark Awards 2016, and dessert cafe Shugaa, shortlisted for next month’s UK Restaurant and Bar Design Awards 2016. Here, the founders discuss the future of Bangkok’s restaurant scene. How did P/S/D start? Toh: We both had experience working in design at Design Lab [a local design company]. However, when we first founded our company we didn’t only want to design restaurants. We’re a small interior company, so we can’t compete with the big guns like A49. But we’ve been lucky to have had really good clients, like Too Fast Too Sleep and Wine Republic, for whom we’ve overseen both their design and branding. The latter was a real challenge because all previous six restaurants in the same location had failed. We decided to break all the rules and tear the space down and start all over again. What are the crucial parts of designing a restaurant? Toh: Design isn’t everything. People always think good design equals good sales. This is completely false. Design accounts for only 30 percent. The other 70 percent is who you are: is your food is delicious? Is the seating suitable? Do you have good service? People might want to take a picture when you first open, but that doesn’t assure repeat visits.

What do you make of Bangkok’s restaurant scene? Him: There are so many restaurants opening, but the ones who survive have a good balance between quality food and service along with quality design. Toh: You can’t succeed with the old methods anymore. People are willing to travel wherever others say is good. Things like Michelin stars make going to a restaurant like a mission nowadays. People now have such high expectations it’s a challenge to live up to them. How do feel about copycat restaurants? Him: I look at this question from the perspective of someone who wants to be a restaurant owner. They’ve scoured Pinterest for pretty restaurants they like. The food is another matter. The cooking schools here don’t offer much variety. And graduates want to open their restaurant right away without learning the ropes in a reputed kitchen first. The outcome are places full of carbonara and duck confit.

So, what’s next for restaurant trends? Toh: People are looking beyond design to develop a good story. Say you hashtag “Thai food” in your Instagram, that’s boring. But if you specifically describe yourself as redefining the story of kanom krok, that will attract people. There’s so much room to be creative. Which neighborhoods do you like the most? Toh: I love Thonglor, where our company is based. It’s the cream of the crop when it comes to food trends. Thonglor people may be rich, but they don’t always have expensive taste. There are people who drive Lamborghinis who will hop out in their shorts to sip a coffee at The Commons. They’ll try anything once. Him: Sure, Thonglor and Ekkamai are trendy, but there are tons of oldschool eats like guay jub, beef noodles and tam sang like our beloved Jay Nong. Interview by Monruedee Jansuttipan

Burger Joints “It seems impossible to eat right at a burger place. You walk into a shop with that monstrous craving, and I tell you: Just go for it. Holding out will only lead to a ‘revenge return,’ where you’ll find validation to binge. If you go for your burger, try to cut out sides like fries and sugary sodas, instead. I personally like Mos Burger as it’s portioned a bit smaller so you don’t end up overeating. Grilled slices of zucchini substitute in for bread in this version of bruschetta. The mixed chopped walnuts and tomato on top are very well seasoned.

The skewered tofu chunks are marinated with the same spices used in pork satay, thus giving out a familiar aroma. The skewers come out pretty oily, leading us to believe they’re fried, rather than grilled. However, the side peanut butter sauce and arjard compliment the dish very well.

The fried rice features little veggies like peas, corn and carrot in addition to kimchi, and comes with nice charred notes. We found the dish too oily and the kimchi slightly too salty.

The verdict and tips: Eating vegan doesn’t always mean eating healthy. In this case, the excessive amount of oil used is a warning sign. That said, Broccoli Revolution provides creative alternatives for vegetarians, only you have to make sure to balance your diet to not take in too much fat and too little protein. Lack of protein in a meal can lead to overeating as you may not feel full.

You can tell from its look that this dish is inspired by yum pla dook foo (crispy fried minced catfish salad). Shredded green mango is mixed with quinoa, pomelo, toasted almonds and pomegranate, then topped with crispy fried salmon flakes which make this sharply sour salad feel a whole lot less healthy.

Sitting on a dab of balsamic sauce, a slice of whole-wheat toast is topped with smashed avocado, smoked salmon, poached egg and sprinkled with sesame. Here, you get the real taste of healthy food—less-seasoned ingredients with just a touch of saltiness from the smoked salmon, richness from the avocado and grainy wholewheat bread.

This dish looks and tastes just like a good ol’ krapao fried rice, only made with quinoa and a poached egg. Still, it’s as oily as you’d expect from a normal fried rice. The accompanying pork shoulder steak is well-seasoned but not the leanest cut you could find.

Brekkie The stylish cafe promises diners healthier options of hearty classics. Ingredients like quinoa, avocado, spirulina, flaxseed, acai berry and chia seed dominate the menu, substituting for other carbohydrates and fatty options. The verdict and tips: Brekkie doesn't claim to be a cafe for clean-eaters. However, it does get points for offering well-rounded options that cover protein, carbs, fat and vegetables. Those who are on a diet will have to avoid items like fries. Check out the ingredients and ask questions like what oil they use for frying. Rice bran oil, for example, is a better choice than other vegetable oils.

It’s basically a salad roll in seaweed. Along with crispy fresh vegetables like shredded carrot and lettuce, the “mock salmon” comes in the form of a nut puree. It’s all topped with a carrot puree sauce with some hints of shoyu, which when combined with the seaweed somehow do remind one of sushi.

Kale, carrot, tomato, avocado, raisin, cabbage and onion get chopped up and mixed with sesame seed and honey miso dressing , which satisfyingly mildens the leafy taste of all the vegetables.

The verdict and tips: On the plus side, the food here comes fresh and with little processing, resulting in less sodium volume.

Dishes are packed with fiber from vegetables and good fat from grains. However, it lacks essential sources of protein, especially when even soy products aren’t served here. Vegetarians should eat a wider variety of food to cover all their body’s needs.

Tehran Treasures

T

he land of Persia is a lesser-visited gem of the Middle East, bursting with cultural heritage, amazing landscapes, heavenly food and great hospitality. Here are some ideas for your a perfect trip to Tehran and beyond.

TEHRAN

Bazaars Exploring Tehran Bazaar (Panzdah-e-Khordad St.) is the perfect place to adjust yourself to the flow of the city. For a true taste of local food, wait in line to grab a spot at Moslem Restaurant, where they dish out delicious kebabs and tachin (crispy rice cake with chicken). Friday morning, head to Jomeh Bazaar (Jomhuri-ye-Eslami Ave.), where a flea market of antiques and second-hand finds awaits in a three-story parking lot. Each floor is dedicated to different products such as silverware, carpet or film cameras. The entrance is a bit tricky to find as you need to walk in through the car exit, but you should see plenty of people flocking in and out. Note that you can’t take photos inside. Come the evening, don’t miss the heritage teahouse Baghe Saba (Shariati St.), or Darband (Darband St.), a hilly spot full of cafes and restaurants. The menu of barbecue dishes is equally as wonderful as the ambience and cool breeze.

City Center The first spot to check off in central Tehran is Azadi Tower (Azadi St.), the capital’s grandest landmark. Completed in 1971, the city’s West Entrance is the work of architect Hossein Amanat, who won a design competition to build the monument celebrating the 2,500th anniversary of the Persian Empire. Blending Persian and Islamic architectural styles, it’s part of the Azadi Cultural Complex in Azadi Square. The base of the tower even has an underground museum showcasing precious stones, while at the top you’ll find an observation deck. Other spots not to miss include The National Jewels Treasury (Ferdowsi Ave.), which houses the exotic jewel collections of kings and queens, the grandiose Golestan Palace (Naser Khosrow St.), and the National Museum of Iran (30th Tir St.). The former U.S. Embassy, where 52 US diplomats were held hostage for 444 days, has also emerged as a popular tourist destination. Now known as the US Den of Espionage (Taleqani St.), the building is covered in eye-catching anti-American graffiti. KASHAN This charming little oasis city is located 240km south of Tehran. Its compact size make it easy to walk around the architectural attractions. Head to Bazaar Kashan (Baba Afzal St.) first, which features a stunning blue dome with a large vent allowing sunlight to shine through. The long, narrow lanes are full of shops and tearooms, too. After the bazaar, head to Agha Bozorg Mosque, one of the most important mosques in the city, built in the 18th century. For a glimpse of the grandiose residential architecture of Iranian, stroll around the historical houses near Alavi Steet such as Sultan Amir Ahmad Bathhouse, Abbasian House, Tabatabaei House and Borujerdi House. Kashan is also home to a UNESCO world heritage site, the 15th A.D. Bagh-e Fin Garden (Amir Kabir Rd.)—the oldest ancient garden in Iran. From Kashan, you can also easily access the Maranjab Desert, where you will get to see wild camel, sand dunes, salt lakes and even a caravansary that was built in the 16th century.

ISFAHAN The third biggest city in Iran is the South’s most popular tourist destination. Make Imam Square your first port of call. This UNESCO world heritage site is where you’ll find four incredible architectural relics: Sheikh Lotfollah Mosque, Ali Qapu Palace, Shah Mosque and Jame Mosque of Isfahan. The square is also home to many teahouses. We recommend the famous Azadegan for its amazing decoration of dangling tea pots and antiques in every corner. Make your way from there to the grand Bazaar of Isfahan, one of the oldest and largest bazaars in the Middle East, which dates back to the 17th century. Spend your evening at Zayandeh River for a local market experiences as well as to wander over the ancient bridges of Kajou, Shahrestan, Siosepol and Marnan while munching on Gaz (Persian nougat) or a cone of rose saffron ice cream. If you still have some time left, head to Sofeh Mountain for the best panoramic view of Isfahan.

The resolution is 12MP, which is not as high as some other models, but still very good. Using your smartphone, you can easily control the SJ5000X Elite—record, play back and share your videos and photos, or even do some minor editing using the SJCam Zone app. It is equipped with a stabilization function, anti-shake, as well as face and motion detection. The camera also comes with slow-motion and time-lapse functions, and while the camera itself is not waterproof, waterproof housing is available.

Almost one year on from opening, hip Cuban bar Havana Social has unveiled its second-floor cigar lounge. The smaller room sticks to the Latin pastiche, with spare lighting, crumbling walls and vintage curios, and offers a more upbeat atmosphere than your usual sedate lounges thanks to the sound of live music traveling up from downstairs. While the Cuban cigars are the main attraction—from Guantanamera Puritos (B165) through to Cohiba Siglo I (B1,285)—the bar also stocks a ton of new booze, mostly rum. Maybe the most exciting development, though, is a little cart serving probably the tastiest Cuban sandwiches (pulled pork, ham, Swiss cheese, pickles and a killer mustard, B280) in town, plus beef and spinach empanadas (B120 each). Lowering the Bar After years of charging us B400 for cocktails, some Bangkok bartenders are saying it doesn’t have to be that way. By Choltanutkun Tun-atiruj and Oliver Irvine U.N.C.L.E.

W

hen U.N.C.L.E. opened on Sathorn Soi 12 back in 2014, it introduced to Bangkok the cocktail that costs as much as your dinner. Here was a bar that wasn’t in a hotel, wasn’t on a 30-story-high rooftop with killer views, but which still asked you to pay over B400 for just one drink. Fast-forward to today and there’s barely a new cocktail bar that doesn’t cost that much. At Rabbit Hole, something called a Mad Hatter containing Hendrick’s gin, passion fruit, citrus, smoked tea soda and absinthe will set you back B418 once service has been added. Or you could head across the road to Evil Man Blues, where a Honey Badger (rosemary-washed bourbon, yellow Chartreuse, honey, citrus and ginger) will sting you for B456 net. But right above Evil Man Blues on the third story of 72 Courtyard, you’ll also find U.N.C.L.E.’s Thonglor follow-up—also conveniently called U.N.C.L.E. Here, the bar team that pioneered Bangkok’s premium cocktail boom dish out a menu of drinks which are virtually all priced at B195—or B228 after tax and service. Take their Manhattan Latino; a sweeter, rumbased take on the classic booze-forward rye whiskey drink. In that sub-B250 glass you’ve got nothing but alcohol: a shot of Flor De Cana seven-year-old rum, another of Mancino sweet vermouth, and a dash of chocolate bitters. It’s not the super-top-shelf premium spirits you might find at some bars, but it’s not exactly the cheap stuff either. Dannie Sorum, the boss of U.N.C.L.E., explains, “We are customers ourselves, and are fed up with the expensive cocktails trend. If we were to follow the trend, our prices would have to keep increasing, but we want people to be able to afford it. We don’t use overly expensive imported spirits; we just use the decent normal ones and then get creative with other ingredients. We still keep up with cocktail trends around the world but keep it affordable as well as interesting.” Sorum’s head barman at U.N.C.L.E, Sebastian De La Cruz, agrees. “As a bartender, I want people to want to come back, I don’t like this whole B450 cocktail trend,” he says. “People should be able to afford drinks and cocktails. I want to have a bar that’s full everyday where people can drink.” Over on Sathorn, Passapong “Bard” Phetpradit’s Junker and Bar also has a reputation for selling drinks at prices far cheaper than your average cocktail bar. From his barebones shop-house cocktail and burger bar on Soi Suan Phlu, the former W Hotel barman serves up one of the cheapest Hendrick’s and tonics in town; a big, balloon-shaped glass containing 45ml of premium gin and Waitrose Indian tonic water garnished with cucumber— yours for B240 including service and tax. Head across the road to Suan Phlu’s other popular cocktail lounge, Smalls, and a gin and tonic poured with a 45ml shot of Hendrick’s gin will cost B400 net. OK, we get that Smalls is a chic blend of valuable artwork, beautiful people and delicately hands-off restoration, while Junker is a corridor with a chipboard bar and a burger fryer out back. And there are many nights when we’d rather be drinking that expensive cocktail at Small’s instead. But it’s also worth knowing that the price distinction exists.

“I want more people, regular people, to be able to afford good cocktails and enjoy them,” says Passapong. He’s able to keep his cost down for a number of reasons. There’s the decor, for one (don’t expect any fancy expensive paintings hanging off the wall at Junker), but also the bar is set up at his home, so he doesn’t have to deal with crippling rents. “Places that sell very expensive cocktails, sometimes it’s really just because of the decoration and location,” says Bard. “Personally, I think if I just want to have a drink with my friends and chat, I don’t care about how fancy the bar is, especially if the spirits are the same quality. Why should I want to pay more?” Sitting somewhere in between these two bars in terms of price is WTF Bar & Gallery. The average cocktail price here, according to bar manager Shane Denoon, is around B300—a price which he feels allows them to deliver a quality drink that people can afford without having to compromise. “Cocktails are not supposed to just be alcoholic beverages,” says Denoon. “Making proper cocktails is a craft, a work of art. So if I order a cocktail which the bartender really puts a lot of work into, I don’t mind paying more.” He continues: “Our average cocktail price is B300. We have a lot of cocktails for under B300, but we also have some above B300 that use more premium liquors.” At B280, The Orchard contains Gordon’s gin, lynchee juice, lemongrass syrup, lime juice, and a lemongrass sprig—a single-shot drink containing a 45ml of a not-bad spirit and other quality ingredients. The more expensive Mezcal Margarita (B380), by comparison, contains Alipus San Baltazar—a costly mezcal that’s still hard to come by in Bangkok— along with triple sec, orange and lime juices, lime wedge and an optional dash of salt. “If there’s a market for B450 cocktails then sure, go for it,” says Denoon. “But not everyone wants to spend B450 on a drink.” De La Cruz at U.N.C.L.E., however, is willing to say that some people are pushing their prices because they can get away with it, not because their drinks are any good: “There are a lot of rip-off places in Bangkok that sell their cocktails at unnecessarily expensive prices when they don’t even use any premium quality spirits or any special ingredients, and I feel sorry for those people who go there.” Bard at Junker agrees. “Expensive, overpriced cocktails may make you money in the short term, but nobody is going to want to spend that much on drinks forever. At the end of the day it’s down to what the customers want; it’s their choices based on how much they are willing or able to spend.” As we sit and sip on our third Manhattan Latino in a row at U.N.C.L.E., knowing we’ll still be going home with change from a grand in our pocket, we can’t help but hope more people make this particular choice.

Set to launch mid-September, Crying Thaiger will take over the intimate wedge of space formerly Opposite Mess Hall on Sukhumvit Soi 51. Kitted out with a big flat-top griddle and a charcoal grill, the open kitchen will serve up what Daniel Thaiger founder Mark Falcioni calls "American steakhouse burgers" along with steaks, other proteins (pork, lamb) and a few sides. The hint, he says, is in the name, which is a reference to the famous Thai dish of grilled steak and jim jaew.

Water Library’s ever-expanding and diversifying empire branches into pizza with the launch of this Italian restaurant in Silom. Ciao, they tell us, will specialize in “the kind of pizza most commonly eaten in Italy”—thin, crispy and with a light crust produced from dough rested for 48 hours. Also expect other Italian staples like pasta, cold cuts, cheese and salads. Opening in September.

Jess Barnes, the chef who introduced Bangkok to rustic sharing plates, bao buns and duck waffles, is bringing back his much-loved (and longmissed) signature restaurant set to take over a space above Whiteline bar on Silom Road. The news comes following Barnes’ departure from two of 2016’s most high-profile openings—the restaurant that was to become Bunker on Sathorn and Lady Brett on Thonglor. We can’t wait to see where he takes the OMH name next.

One of Alain Ducasse’s restaurants No doubt the Frenchman is one of the world’s top chefs. Not only did he become the first chef to own restaurants carrying three Michelin stars in three different cities, but he currently holds 21 Michelin stars at more than 30 restaurants across the world. Word has it he’ll be opening a restaurant at a glamorous mall by the Chao Phraya River.

Jamie’s Italian The rumors about British celebrity chef Jamie Oliver’s coming to Bangkok have proved real. He’ll be opening a branch of the massive chain Jamie’s Italian in the newly renovated Siam Discovery, though for now we can’t reveal any opening dates. We can give you some info on what to expect, though. The space will be industrial, chic and casual, offering comforting Italian fare like pasta, pizza and antipasti—a sharing board of cured meat, cheese and pickles, served his style.

Kuku Ramen Another Water Library opening, here, this one set for September. Kuku Ramen sees the restaurant heavyweight move into Japanese food— specifically, ramen. But on top of steaming bowls of well-simmered tonkotsu ramen, you can also expect some serious yakitori action.

The follow-up to Gaggan It still doesn’t have a name but it does have a chef: Garima Arora, who cooked for Danish food-forager extraordinaire Rene Redzepi at Denmark’s Noma for three years before Gaggan Anand caught wind of him. Arora will head the kitchen at the new venture opposite the celebrated future-Indian cuisine restaurant on Lang Suan. Gaggan’s original restaurant has also just opened a B20-million food research laboratory. Wow!

HOT WHEELS PIZZA Teddy Blackway’s pizza truck has always seemed so small for such a sizable woodfired oven, where he makes his Neapolitan-style pizzas. Now he’s set to partner with the people behind local craft brewer Golden Coin and Let the Boy Die bar to open a pizza-and-beer place on Thonglor. Opening very soon.

Cantina BKK Soho Hospitality—the group behind Above Eleven, Havana Social and Charcoal—will soon unveil a homey Italian restaurant on Aree Samphan Soi 3 that promises to be like an “upscale Wine Connection.” Expect pizza, pasta, plenty of affordable wine as well as house-made limoncello from the group’s new head mixologist Davide Sambo. Set to open by mid-September; get updates on their Instagram page (@cantinabkk).

EL MARIACHI TAQUERIA The taqueria truck was once a restaurant way out in Srinakarin before closing down and hitting the road. By the end of August, you’ll find its hearty Mexican fare in a sitdown setting at Sansiri’s new community mall Habito in On Nut.

Thailand’s suarn aharn could be described as our answer to beer gardens. O-Yua’s views of Rama 7 Bridge over the Chao Praya lend a festive touch to your family gathering, there’s plenty of outdoor seating, and the smallest serving of draft Singha you can order is a pitcher. Don’t expect cocktails or glazed ribs, though. This is Thai dining pre-”Wine I Love You,” when giant bubbling pots of tom yum (B170/240) and a plate of barbequed shrimp (B750/400) was all the fun we needed on a Saturday night. We like O-Yua’s down-toearth vibe, the classic menu, the retro bric-a-brac decor (some banquettes were literally taken from Pizza Company, Colosseum-

printed partitions and all), the friendly owner who goes around handing lucky draw coupons, and the mix of generations. We just wish all that low-key appeal came with properly executed Thai food. The stir-fried chayote leaves is a good example of what’s wrong. The smokiness that should come from proper wok technique is completely absent, the sauce’s taste industrial, and the garlic too sparse. If you can get smokey fry-ups at fancy spots like Soul Food (Thonglor) or Hot Rod (Ekkamai), then you’d think a popular spot in the ‘burbs would get it right. The produce is fresh­— we actually saw the giant baskets of live prawns getting delivered— but there’s a feeling the kitchen is on auto-pilot. Simple dishes like gab glaem or barbequed seafood therefore end up outshining curries, soups and stir-fries. The crunchy somtam with fresh crab (B240), the dried shrimp with fresh peppercorn (B140) and the bloody cockles (B140) all get a pass, but you’ll still need to leave your inner food critic at home. Prices are reasonable, so bring lots of friends, order a bottle of JW Red (B950 for 750ml, mixers B30, ice B30/60) and enjoy the view. At least the bill will feel as retro as your evening.

Morimoto The renowned Iron Chef serves a fun and inspired take on Japanese cuisine. The buzz: High-end dining paradise Mahanakhon Cube welcomes another big international name. Best known as one of the Iron Chefs America, Masaharu Morimoto specializes in harmonizing Western and Japanese ingredients. He first opened his eponymous restaurant chain in Philadelphia after training in Hiroshima, Japan, and New York's Nobu. Since then, he has opened branches across the US, as well as Japan, Mumbai, New Delhi and now Bangkok. The decor: With its stylish, decor—think wood and lots of it—the sizable restaurant boasts an innermost sushi bar where diners can also see through to the semi-open kitchen, along with an alfresco area and a drinking lounge. The food: A real mix of traditional, fashionable and fusion dishes. You’ll find straight sushi and sashimi (from B1,300) served along-

side Sashimi Caesar Salad (B320), playfully “giftwrapped” in a clear plastic sheet, hamachi tacos (B290) and Morimoto’s Championship burger (B590), which boasts a katsu-style breaded wagyu patty, pickles, tartare and barbecue sauce. Another of Morimoto’s signature cross-cultural dishes is the tuna pizza (B390), a crispy tortilla crust topped with fresh tuna, olives, tomatoes, chili and anchovy aioli, which he created as a way to introduce Americans to raw fish. Meanwhile, the ishi yaki buri bop (B590) takes its cues from Korean-style mixed rice, featuring yellow tail and vegetables cooked at your table in a hot-stone bowl. French chef Arnaud Drouville heads the Bangkok kitchen, introducing some exclusive dishes, like the roasted lobster epice (B1,200), their take on pad Thai featuring a whole lobster. For dessert, try the Morimoto Monkeybread (brioche

dough, sliced banana, raspberry, pecan and banana caramel chocolate cookie ice cream, B350). The drinks: Mixologist Shingo Gokan is behind the cocktail list, which goes heavy on Japanese spirits and refreshing flavors. Try the Yuzu (shochu, yuzu, shiso and yukari salt, B380) or Kyuri (Hendrick’s gin, cucumber, lemongrass, pineapple and absinthe, B320). Drippin’ Good Connected to the bike shop Aran Bicicletta, the tiny Sutdrip cafe (Phahonyothin Soi 2, 087-907-0099) is all about drip coffee. Get your daily dose of coffee tailored for you by Sutida Srirungthum, winner of National Thailand Brewers Cup 2016, who brews each cup of coffee according to the tastes of the drinker—you can choose if you want your coffee slightly sweeter or more bitter, fruity or nutty, or more or less sour. Sutdrip has a wide range of coffee beans, from now-familiar origins (B100/cup) like Kenya, Ethiopia and Thailand, to ever-changing specialties like Geicha (from Panama, B300/cup).

Puff Me Up Chef Thanunya “Gai” Kaikaew is best known as the only woman on the Iron Chef Thailand TV show, whose specialization lies in sweets. So it’s no surprise dessert stars at her new restaurant, Souffle and Me (Narathiwas Soi 24, 02-674-0442). At this white renovated old house, the menu revolves around the namesake

puffed up, baked egg-based dish—try the Mont Blanc souffle with cognac sauce (B380) or blue cheese souffle with honey lavender ice cream (B280). Savory flavors abound in the lobster souffle (B980) and truffle souffle with mushroom cream sauce (B360), while there are also breakfast dishes, pasta, frittatas and meaty mains.

So Viet A spin-off of the longstanding Vie Halong restaurant, the cool and contemporary Muine (Habito Mall, Sukhumvit Soi 77, 092-959-4629) spotlights Vietnamese street food. The various styles of banh mi (Vietnamese sandwich) go from classic cold cuts (liver pate, Vietnamese pork sausage and Chinese pork sausage, B185) and charcoal-grilled pork shoulder blade (B185) to newer creations like crispy omelet with Sriracha dressing (B145) and Oyster Po’ Boy (B200). Pho (B160), spring rolls (B125) and grilled pork with vermicelli (B180) round out the menu, alongside Vietnamese-style drip coffee (B165).

Man Fu Yuan Kitchen aims at something a lot more casual than its full-on original branch. To match its mall setting, the kitchen dishes up casual items as well as all-day dim sum. Don’t miss the aromatic tea-smoked duck (B600 for half, B1,150 for whole bird) and the signature 5 Elements tea (B120/pot). Dim sum starts at B100. How did this project come about? Whenever I visit Thailand, I spend a lot of time sitting in the back of a car listening to conversations I can't understand and passing billboards that I can't read. All I'm left with to rely on is my imagination to create meanings for these things. I fill the gaps with stories and characters I make up. Those moments gave me the idea to create a storyboard of photos that doesn't aim to construct a story but to let the viewer fill in the gaps just as I did. This project is quite different from your usual fashion photography. What do you hope to express here? I am trying to expand the limits of storytelling through photography. Photos don't need to be seen in a particular order, meaning the viewer can connect the dots with an infinite possibility of sequences to create their own narrative. Another factor I'm exploring is the idea of a forced or altered reality that includes made-up elements rather than an honest set of images. With fashion images, you know what you're seeing and it's usually about showing one aspect of culture or one garment.

What was the most unexpected thing you came across in your journey through Nakhon Pathom? I wouldn't say anything was really unexpected since that would mean I had expected things to be a certain way. Prior to my first trip to Thailand, I didn’t read anything about the country in order to prevent building up a certain image in my head. One element that struck my attention was the use of colors. I would see lots of bold, vibrant colors on houses, billboards, cars and trucks that you don't find in many other places. I found it fascinating that trucks carrying mostly soil, sand and other raw materials used for construction would display such elaborate ornaments despite their "basic" function. Can these vibrant objects suggest something about Thai society? It seems like, when given the opportunity, people here love to express their individuality and to keep traditions alive. Maybe this suggests the relationship between tradition and modernity in Thailand, where the two don't oppose each other but rather complement each other in a form of harmony. Perhaps next time Thai people are stuck in traffic, they can enjoy it by letting their imagination run wild and thinking more about the ordinary things that pass them by.
