A checklist of BK Magazine’s most important discoveries this week Soon National Park tickets will be sold at 7-Eleven, and only 7-Eleven If you’re thinking of visiting Khao Yai or Doi Inthanon anytime soon, you might need to stop off at Sehwen for more than just snacks. The Department of National Parks, Wildlife and Plant Conservation are hoping to quell overcrowding at such popular weekend spots by forcing people to buy their tickets in advance. Only a set number will be sold per day and only at convenience stores, with none whatsoever available at the gate. Sukhumvit Soi 11 may be dying even sooner than expected After five years, Soi 11 mainstay Snapper will close its doors on Sep 10. And it might be a sign of things to come. Citing politics and a slower than expected low season, the owners decided to bow out early before their property gets torn down for a large residential development in March, 2017. While the likes of Cheap Charlie’s, The Alchemist and Tapas Bar hang on grimly, you’ll now find Snapper’s star fish and chips over at sister restaurant Kai on Sathorn Soi 12. Even hotel brunches are getting on the healthy eating bandwagon Le Meridien (Surawong Road) just unveiled its new Healthy Sunday Brunch. Forget bacon and full-fat fry-ups (though there’s still foie gras and lobster), this one’s big on sashimi, detox juices and lean meats. In between return trips to the salad bar, you can get a BMI test and have a consultation with BNH Hospital nutritionists or get some workout tips from the swole dudes in True Fitness uniforms. Every last Sunday of the month, B1,350 per person. Swing dancing is really starting to take off in Bangkok A few hundred people, from little kids to 60-year-old couples, crowded into Cho Why in Chinatown last weekend all in the name of swing dancing. The weather was hot but the beer was icy cold, as the action took over all three floors. While Instagram opportunities abounded, the real charm was in mingling and dancing with people you just met, just like in the good ‘ol days. May there be more to come!

upfront HOT OR NOT

Hot: Quality tourism

Not: Tourism

The visa-on-arrival fee has been increased from B1,000 to B2,000. China is among the 19 countries whose visitors must purchase such a visa, so the move seems aimed at them. One might argue that Thailand doesn’t need tourists who can’t pay an extra B1,000 to visit our heavenly kingdom, but Taiwan has lifted visas for ASEAN countries saying the move would generate an extra B14 billion yearly tourism revenue. Couldn’t we use the cash?

INTERVIEW

Hot: Thai films

Not: Censorship

This past month we’ve seen films by Mai Suwichakornpong and Chai Siris premiere at festivals in Europe. On top of that, the BBC just announced its “100 greatest films of the 21st Century” as determined by 177 critics around the world. The list is topped by David Lynch’s Mulholland Drive, but also contain three Thai flicks— all by Apichatpong Weerasethakul, naturally, including possibly the only film more divisive than Lynch’s, Uncle Boonmee. Of course, Apichatpong’s latest film, Cemetery of Splendor, didn’t even screen in Thailand due to his disdain for local censors. Let’s hope a similar fate doesn’t befall Mai’s Dao Khanong (see page 6).

Hot: Sukhumbhand

Not: Pokemon humor

Even we fell for making some kind of Pokemon parody last week. (No one laughed.) These are officially over. Done. We don’t want to see someone photoshopping another red ball onto a picture of Thaksin or a motorcycle taxi on a sidewalk or super aunties on the BTS. What’s that you say? You have a GIF of Prayuth capturing Sukhumbhand wearing a giant Pikachu costume? OK, yeah, we’d like to see that

Hot: Super Tower

Not: Mahanakohn

Yay! Mahanakohn is now officially open. It’s the tallest tower in Bangkok. It was designed by starchitect Ole Scheeren (except it wasn’t because that would be illegal). And it’s now officially old news. Time for BK to move on to feeding you regular updates on the construction of the Super Tower in Ratchada: 615 meters tall, 320,000 sq meters, LEED platinum certification, fine dining platform six-star dining of the world. Cannot wait.

THAT’S WHAT SHE SAID

Bangkok is finally getting the indie cinema it deserves. Set to open its doors on Sep 13, Silom’s Bangkok Screening Room will screen cult films from all over the world, from directors as diverse as Apichatpong to Hitchcock, using a high-end 4K digital projector and professional surround sound. Ahead of the opening, we chat to the trio of founders, Sarinya Manamuti, 37, Nicholas Hudson-Ellis, 34, and Wongsarond Suthikulpanich, 37, about their plans to offer an alternative to the city’s blockbuster-obsessed cinemas. What was the trigger for opening a cinema? Sarinya: We saw a trend of giant cinemas starting to embrace quality independent films through things like the Documentary Club. But such films can’t really compete with the blockbusters for revenue. So, we thought why not start up a traditional screening room space that’s geared at showing local and emerging filmmakers, as well as the type of independent films that don’t often screen here. What do you think about the disappearance of so many of Bangkok’s standalone cinemas? Sarinya: With the growth of shopping malls and multiplexes, standalone cinemas just couldn’t keep up. There is too much competition. It’s obvious that there’s so much money invested in these massive cinemas that they probably have to play it safe with blockbusters to see a return. Nicholas: These multiplexes are a trend globally, but in places like New York, Australia and Singapore it’s actually pushed the smaller, arthouse cinemas to step up their game and do something different. This can mean carefully curated programs, events for film makers or unique spaces.

Bangkok’s standalone cinemas have had a troubled past. What makes you confident you will succeed? Wongsarond: We did a lot of research before reaching this point. Two years ago, we hosted the Open Reel Rooftop Festival and it got a good reception. We didn’t expect a lot of people to turn up, but tickets sold out and there was still more demand. As we talked to our audience and exchanged ideas, we realized there were a lot of people waiting for this kind of cinema. Sarinya: Our mindset is, sure, we can’t stop people from downloading films to watch at home, but at least we can set up a space where we’re actually giving back to the filmmakers. Apart from screenings, what else do you plan to do with the space? Nicholas: We want to host events, whether it’s gatherings for filmmakers or discussions or special things, like live music, to complement a screening. Sarinya: We’ve just launched an open film program, where we reserve one slot for an independent Thai film to screen each month. The filmmaker will get a fair share of the ticket sales.

We also plan mini showcases before every feature film, when the big cinemas show all their ads. We will allot 20-30 minutes to young filmmakers who want to show their films for free. How did you fund the project? Wongsarond: It’s self-funded. We ran a crowdfunding campaign on Indiegogo but it didn’t hit the target. So we’ve paid for it all by ourselves, a couple of million baht. It’s our dream project, so we’re moving on. As I’m an interior designer at my company Armonia Living, I handled all the design work myself. How much will you charge for tickets? Sarinya: It’s B300 per seat and we have a membership card at B1,100, which will get you discounts of 20-percent on tickets and 10-percent at the bar. We will have two shows on weekdays and four on Saturdays and Sundays.

DAO KANONG (BY THE TIME IT GETS DARK) BY ANOCHA “MAI” SUWICHAKORNPONG

The people and places breathing life into Thai indie film. By Choltanutkun Tun-atiruj

Emerging Filmmakers to Watch

Mai, 40, was a producer of Pee Chai – My Hero, which was chosen as Thailand’s representative for the foreign-language category at the Oscars 2016. Her rom-com, Dao Kanong, debuted at last month’s Locarno International Film Festival in Switzerland, and centers on the dark days surrounding the 1976 Thammasat massacre while also leading audiences to question what’s reality or fiction. Should it get past the censors (fingers crossed!), it will screen in Bangkok before the end of the year.

Thitipong “Pong” Kerdtongtawee Thitipong, 29, is the director behind the playful short movie The Only One, which ramped up 10 million views on Facebook in its first week. The film, made for The One Card (a customer loyalty program), tells the story of a girl dealing with the death of her boyfriend, dark subject matter that Thitipong turns into that classic Thai mix of cute nostalgia and tearjerker. As he begins work on his debut feature film, we visited him at his production house, Hello Filmmaker, to discuss the challenges of Thai filmmaking in this era of commercialization. How did The Only One come about? I had pitched similar ideas to several clients, but never got approval until The One Card. These days it’s necessary to compromise because the fact is clients are where the money is. You just need to find a client who will give you freedom to express yourself. I still wanted to make the kind of movie that I enjoy watching: an ordinary couple, nothing too romantic. The reaction has been good. Maybe people don’t even like my movie that much; they just like how different it is compared most Thai movies. What’s holding back young Thai filmmakers? Most people use references without developing them any further, so they end up just copying. And it’s all the same old references. The internet makes it easier for us to watch rare independent movies from around the world, which means Thai directors are not only competing with other Thai filmmakers but the whole world. Thai education only teaches you to recite and copy, but not to think for yourself. That partially explains the prevalence of Japanese and Korean cultures. How can young Thai filmmakers go about getting funding? You have to make a lot of short films first, build up your profile, and then present your portfolio to organizations who support this kind of thing. There are also a lot of short film competitions. Social media plays a big part in connecting filmmakers, too. Are things getting better or worse for indie Thai filmmaking? It seems things are getting better, but I must emphasize the “seems.” Right now it’s easier than ever to hear about indie movies, what with social media. Maybe the scene is just as big as before, only there’s more exposure. I don’t feel like the industry itself is any better, though; it’s still difficult to get funding.

THE FOREST BY PAUL SPURRIER English director Spurrier, the guy behind FrieseGreene Club, has lived in Thailand for 17 years and previously directed the ghost horror film P (2005). His new film has already screened at Cinequest Film Festival in California, Ferrara Film Festival in Italy, where it won Spurrier a best director award, and South Korea’s Bucheon International Fantastic Film Festival, where it won another award for promoting Asian cinema. Shot on location in Isaan, it tells the story of a bullied schoolgirl who finds comfort with a mysterious boy she meets in the forest. Blending drama, horror and fantasy, the film looks to subvert Thailand’s gory ghost movie tradition. The Forest will screen at SF CentralWorld from Sep 15 onwards.

500,000 YEARS BY CHAI SIRIS The Chiang Mai-based director’s 15-minute film premiered at Venice International Film Festival just last month. Set in Lampang, it documents the eerie supernatural events that occur at an archeological site where fossils were found nearly two decades ago, exploring concepts of death and rebirth. Sadly, there’s no word yet on any Bangkok screening. SAIDUEAN TA BOD NAI KHAOWONGKOT (BLIND EARTHWORM IN A LABYRINTH) BY PEN-EK RATANARUANG Veeraporn Nitiprapha’s SEA Write award-winning debut novel gets the film treatment from some of the biggest names in the business. The director will be none other than Pen-Ek Ratanaruang (Last Life in the Universe, Funbar Karaoke) and the screenplay will come from Kongdej Jaturanrasamee (P-047, Tang Wong). Exploring the idea that people are blinded by the modern world’s values, the novel tells the story of a cheating father and a mother who never hugs her daughter again after finding out about his affair. Filming will start in March, 2017.

cover story Asamaporn “Phrae” Samakphan Phrae, 23, recently graduated from Chula University with a Bachelor of Communication Arts majoring in Filmmaking. Her selffunded thesis project, Klose, was chosen to screen at the Bangkok Art and Culture Centre (BACC) as part of last month’s Thai Short Film & Video Festival. The 40-minute film has been lauded for its storyline, which looks to remind us that nothing lasts forever through the relationship between two close friends. Can you tell us a bit about Klose? It was inspired by my own life. I don’t have many close friends, but those I have become a big part of my life. However, I feel that all friendships must come to an end eventually, and sometimes it’s for reasons that can’t be helped. Klose emphasizes our impossible desires for wanting things to remain the same. We have to move on. What’s the feedback been like? Many people keep asking me to have it screened more, so I’ve been contacting a lot of small bars and art galleries. However, I really want to show it with a live score, as my friend and I did the original score ourselves. We will see. What are you working on now? I am writing a plot for a new coming-of-age style film. I don’t know what length it is going to be yet. I love Richard Linklater’s style of movies—just telling stories about relationships. How are you planning on getting this movie funded? Thailand is not a country that supports artsy independent movies. Maybe I will try some foreign film festivals. There are few funding opportunities here, unless it’s a partnership or commercial arrangement. It’s sad, really. Thailand is just not in the position where people consider art as something indispensable yet. Movies are still considered as entertainment; something that’s easy to understand sells more than something that requires a bit more thought. Sadly, the foundation of Thai education teaches us to recite and copy instead of think for ourselves.

Documentary Club Founded by Thida Plitpholkarnpim, a consultant for the movie magazine Bioscope, Documentary Club started as a crowdfunding project to bring better quality documentaries to Thailand. Its unprecedented popularity has seen sold-out screenings for cult flicks like Tower Records documentary All Things Must Pass and street photography film Finding Vivian Maier at SF CentralWorld. Not only do they attain the required screening licenses, Thida and co also produce the Thai subtitles and set up after-movie discussion groups. Last month saw the screening of The Lovers and The Despot, which documents former North Korean dictator Kim Jong-Il’s love of film and his late’70s kidnapping of two famous South Korean actors. Coming up on Sep 22 is Tsukiji Wonderland, which tells the story of Tokyo’s world-renowned fish market open since 1923. www. fb.com/DocumentaryClubTH

Which Thai directors do you look up to the most? Anocha “Mai” Suwichakornpong. I used to be an intern at her production company, and I really like how she looks at things. For example, her latest work, Dao Kanong [see page 6], took years to make. She’s so brave covering topics that most people are too afraid to tackle. Another great indie film I’ve seen recently is Onthakan [The Blue Hour] by Anucha Boonyawatana, which was screened in Berlin before coming to Thailand, where it was greatly underappreciated. It’s a tense story about a boy who has realized he is gay that’s told in way that blurs reality and unconsciousness.

The Acropolis

Vikos Gorge

EUROPE

Go Go Greece There’s more to a Hellenic holiday than souvlaki and the Acropolis. By Mrigaa Sethi

G

reece has been on everyone’s list and holiday albums lately, so it might feel a bit done to death. But economic downturn notwithstanding, the Balkan nation has plenty to offer beyond the usual ancient history, Ottoman influences and amazing beaches (though all those are great, too). And with an affordable new way to get there, there’s never been a better excuse to book your trip to Greece. Here are four reasons to do it now.

There will soon be a low-cost, direct flight from Singapore Singapore’s budget carrier Scoot announced last month that it was going to start flying direct to Europe in June 2017, with Athens as the first destination, the longest direct flight by a low-cost carrier. There will be four flights departing from Singapore weekly, on Tuesday, Thursday, Saturday and Sunday, on the 787 Dreamliners. You can book the ticket in advance now at www.flyscoot.com/th starting from as cheap as SG$288 (B7,362).

There’s more to Athens than the Acropolis Athens gets a bit of a bad rap, especially since the economic downturn. It’s understandable—many streets are lined with boarded up businesses and graffiti-festooned walls, and the homelessness, poverty and unemployment are hard to miss. And with a population of just three million (compared to, say, the 10.5 million of Paris), it can feel a bit provincial. But still, it’s easy to feel enchanted by one of the world’s oldest cities. There is a lot to see and do in the Greek capital, with its incredible light, hilly roads and charming lowrise apartment buildings. You have to see the Acropolis, of course, which lives up to expectations. Turn a corner while walking around in central neighborhoods like Monastiraki and Syntagma, and there it is, all lit up and glorious in the twilight. It’s equally rewarding up close, despite the throngs of tourists and the baking heat in the afternoon. Entry is 20 euros per adult, and though opening hours keep changing depending on the season and the government funding situation, go either first thing in the morning to avoid the worst of the crowds, or an hour before closing, to enjoy the softer light. Save some time, energy and another 5 euros for the Acropolis Museum (www.theacropolismuseum.gr/en), a gorgeous building housing artefacts from the Acropolis and Parthenon, and with some pretty dramatic views of the ruins, too. Surrounding the Acropolis hill is the trendy Plaka neighborhood, bursting with souvenir shops and sidewalk restaurants. The touristy-ness of it all can be a bit off-putting, except the streets and buildings are just so pretty, and there are some cute shops worth browsing, such as Forget Me Not (www.forgetmenotathens.gr), a multi-label boutique carrying a curated selection of accessories, stationery, affordable art and apparel by hip Greek designers. Food options can feel a bit same-y in Athens, with sidewalk cafes selling souvlaki, Greek salads, dips and house wine everywhere you turn, but there are plenty of gems to discover if you do your research. We loved the cozy Kiki de Grece (www.fb.com/kikidegrece), a mostly alfresco wine bar tucked away in a narrow alley in Plaka, with a fascinating list of all-Greek bottles from all over the country and simple light bites. If cocktails are more your thing, then don’t miss The Clumsies (www.theclumsies.gr) a pleasant 15-minute walk away from Kiki de Grece and #22 on the 2015 World’s Best Bars list. An old cavernous building with dim light, peeling plaster, lots of plants and strong cocktails, it’s highly Instagrammable.

10

For the most memorable aperitif of your trip, bear the crowds and the mediocre food and head up to the bar at A for Athens (aforathens.com), a non-descript boutique hotel just off busy Monastiraki square. The tight, crowded rooftop space (make a reservation) has a dramatic, panoramic view of the Acropolis, nothing less than magical with a cocktail in hand.

And there’s more to the islands than beaches Obviously, you’re going to visit all the famous islands like Mykonos, Santorini and Crete. The Cyclades islands are synonymous with glorious beaches and those charming warrens of whitewashed buildings with blue shutters and dramatic sunsets. But there is a lot more to explore, too. Sign up for a day trip to the island of Delos, a UNESCO World Heritage site located an hour’s ferry ride from Mykonos. (Most island ports will have a couple companies offering the tour. We paid 55 euros round-trip from Paros, which included an afternoon on Mykonos.) The 5km-wide island is the mythical birthplace of Apollo and Artemis and was an ancient center for religion and commerce during the Hellenic era, pre-Roman Empire. There are no hotels or restaurants on the island, just a museum and a coffee shop. But you can walk for hours among the falling-down temples, amphitheaters and old residential villages, with the deep-blue Aegean Sea as backdrop.

Epirus

Delos

It’s also a hiker’s dream Your Instagram following will eat their hearts out with jealousy when you skip the islands and head north to Epirus, home to the Zagori region and the Zagorohoria, a collection of some 48 old villages dotting the mountains of the region, largely unknown to non-European visitors. Many of the villages now house cute guesthouses, which make excellent jumping off points to trailheads, rafting excursions, rock-climbing sessions with plenty of mountain views and relaxation in between. We stayed in Anemi (anemihotels.com) a boutique, seven-room guesthouse in the village of Kato Pedina, run by an Athenian couple, with enormous traditional breakfasts, rustic, color-splashed rooms— and great water pressure. Hikers shouldn’t miss the chance to hike Vikos Gorge, the second-biggest gorge in the world after the Grand Canyon. We signed up for a guided tour with the well-informed and mild-mannered Georgia Kanellopoulou of Geo Zagori (geozagori.gr), who is an expert on the geology of the gorge. The hike takes six to eight hours, depending on your speed and length of rest stops, beginning with a long, tricky descent into the riverbed, followed by a few hours of beautiful trekking through the gorge, before finally climbing out at the other end (make sure you arrange to have your guest house or your tour operator pick you up). It’s somewhere between 130-150 euros for a group of up to four people, and in the grand scheme of things, it’s not that difficult. We didn’t train for it, and were only sore for a day after. There are harder hikes, too—one up to Dragon Lake, which involves a sleepover—and easier ones—a half-day tour of the old bridges of the Zagorohoria. To get to Zagori, fly up to the regional capital of Ioannina, a charming college town with an old fortress and plenty of Ottoman and WWII history, rent a car and make the 50-minute drive. You can also drive west from Greece’s second city, Thessaloniki. Bear in mind that Greeks drive on the right side of the road, and the winding, twolane mountain roads will make inexperienced drivers a bit nervous. It’s worth the freedom your own car affords you, though.

PHUKET

Ice Ice Baba Torry’s Ice Cream (www.fb.com/torrysicecream) might well serve Phuket’s most exciting ice cream flavors. Founded by art school graduate and island-native Torry Wongwattanakit, the store sits in a gorgeous pink Sino-Portuguese building on Soi Rommanee, where it’s pulling in both locals and tourists for its scoops inspired by Phuket’s iconic desserts like O-Aew (clear jelly serves with red beans and ice cream, B75), A-Pong (crispy coconut crepe, B75) and Bi-co-moi (glutinous sticky rice topped with coconut milk, B85). There are some 50 flavors in total, as well as booze-spiked options like Irish coffee (whisky) and rum raisin (dark rum). You might not think of portable speakers as something fashionable enough to carry around, but Bang & Olufsen’s new B&O Play A1 (B12,300) is a real thing of beauty. Made of cool aluminum with a polymer base, the splash and dust resistantspeaker also boasts an eye-catching leather strap that’s soft to the touch. Of course, the ambient “True 360” sound is no afterthought. The A1 can last up to 24 hours at moderate volume, and also comes with a microphone that picks up speech from 360 degrees around the speaker. You can use voice command easily, like you do with your smartphone. Try Bang & Olufsen Concept Store, 1/F, Gaysorn Plaza, 999 Phloen Chit Rd., 02-6561017. Open daily 10am-10pm. BTS Phloen Chit

Swing dancing is hot right now, but you can’t just wear any old threads. All that movement could tear them to shreds. Launched by two Lindy hop-loving ladies, Susie Q Happy Lindy Hopper aims to provide high-quality clothes specially made for swing dancing: fashionable but at the same time durable and breathable in Thailand’s hot and humid weather. Top picks go to the flowy swing skirts (B3,800), made of layers of cotton, tulle and polyester, long enough to not flash anyone when you twirl around on the dancefloor, cute pastel bloomers (B2,500) for those who love to spin, and the ribbon headbands (B400) to complete the look. www.fb.com/SusieQHappyLindyHopper or IG: SusieQHappyLindyHopper

With more and more Bangkokians taking up CrossFit and functional training, it’s becoming apparent regular old gym shoes just aren’t going to cut it. The Reebok CrossFit Nano 6.0 (B4,900), the sixth iteration of the brand’s popular CrossFit series, has been getting rave reviews, and the good news is it’s now available in town. Lightweight but durable, the shoes aim to offer stability during even the most extreme movements. Upgrades on the Nano 5.0 are said to be a thicker and softer tongue, a reduced break-in period and a less “baggy” toe box. The shoes also feature improved RopePro technology for better grip on the climbing ropes. Available in Reebok stores and department stores nationwide. Try 3/F, CentralWorld, Rama 1 Rd., 02-646-1318. Make it Personal Want to make these drinks for your friends? Here are three tips. 1.You don’t need that much gear. Just get a Boston shaker (the kind with a big glass tumbler and a metal one), a long bar spoon, a jigger (the thing used to measure liquids) and a strainer so that the ice stays in the shaker when you pour the drink.

2.When you’re using the bar spoon, keep it touching the glass, don’t shake it around in the drink. You want to create a vortex that pulls all the ingredients down and mixes them uniformly.

3. Shaken or stirred? Shake cocktails when they include mixers like fruit juices (including lime or lemon) or egg whites (used to make frothy drinks like whiskey sours). Stir when it’s a booze-forward drink that contains only spirits, like a negroni or martini.

RESTAURANT

Sushi Garden After the closure of its original branch on Sukhumvit Soi 49, Teien has made a comeback at On Nut’s Habito Mall in a more mature fashion. Draped in greenery, this garden-themed venue doesn't feature the oversized sushi platters and flashy cut-price deals of old, but rather puts the focus on more carefully curated items at reasonable prices. Of course, favorites like engawa sakura butera (pressed sushi with torched fluke fin and ponzu jelly on layered sakura-flavored rice and plum-flavored rice, B250) and salmon lava roll (B160) still remain. Sushi sets start at B125, while there are also rice bowls (try the salmon ikura don, B180), salads (from B120) and grilled fish (from B320). The restaurant also carries a list of sake and umeshu (from B200). 2/F, Habito Mall, Sukhumvit Soi 77, 081-988-9742

Melbourne-born Mexican bar-slash-restaurant Touche Hombre is the latest spot at 72 Courtyard to now open in the light of day. The weekend brunch menu, available every Saturday and Sunday from 11am-3pm, features Mexican-flavored eggy dishes like frittata Mexicana (baked eggs with peppers, onions, oregano, chipotle mayo and cactus salad, B250) and huevos rancheros (grilled wagyu rump steak with two fried eggs, spiced black beans, avocado, cheese and tortillas, B880). For sweet tooths, there are pancakes (with cinnamon ice cream and dulce de leche, B250) and waffles with agave syrup, whipped tres leche and gooseberries (B250). Depending on your mood, wash it all down with a calming horchata (B195) or restart the party with a Bloody Maria (B275). 1/F, 72 Courtyard, Sukhumvit Soi 55 (Thonglor), 092-539-0990

Sathorn’s fashionable rooftop bar Vogue Lounge has welcomed a new bartender. Much-traveled Italian Francesco Moretti started his training at Michelin-starred chef Jean-Claude Brugel's Sea Lounge in Monaco, and has been mixing drinks all over Europe, America and Asia ever since. His Asian adventures include stints are Shanghai's long-established Bar Rouge and VOL. His signature cocktails will be found on Vogue Lounge’s new drinks menu starting from October, but in the meantime you can ask him to mix a Rosemary New York Sour (bourbon, lime juice, rosemary syrup, egg white, chocolate bitter, topped up with red wine and garnished with burnt rosemary). 6/F, Mahanakhon Cube, Narathiwat Ratchanakarin Rd., 02-001-0697. Italian mixologist Michele Montauti, previously of J. Boroski and House on Sathorn, has unveiled his own cocktail bar nestled down Silom's leafy Pan Road. Located out the front of Italian fine-dining mainstay Opus, Mikys takes over a large open space flanked by floor-to-ceiling windows. A black wall bears the colorful painting of a strange fantastical creature by street artist Mauy, while a lengthy backlit bar is the stage for Montauti to whip up signature cocktails like Julie (Broker's gin, Mancino Bianco, earl grey tea, jasmine syrup, lime and egg white, B340). Accompanying the drinks are small tapas dishes like beef fajita (B490) and salmon cubes (B390). Montauti also aims to bring over bartenders from overseas to do guest stints. 64 Pan Rd., 02-001-0697

Real pros use a Boston shaker, with one big glass and one metal tumbler, not the ubiquitous martini shaker we all have at home.

COCKTAILS

Home Comforts Eight top Bangkok bartenders tell us their favorite drinks you can easily make at home. By Choltanutkun Tun-atiruj Backstage Bar

Eastside, Liam Baer (behind the cocktails at Freebird) Ingredients: 50ml gin, 30ml fresh lime juice, 10ml simple syrup, 8 mint leaves, 2 slices of cucumber. How to: Lightly muddle the cucumber and mint leaves in a shaker, then add all the liquid ingredients and shake well with ice. Strain into a chilled glass. Top it with cucumber. Liam says: “Pretty easy to make at home with all these ingredients that you will find in the kitchen. Nice for the summer months.” Evil Man Blues, G/F, 72 Courtyard, 72 Sukhumvit Soi 55 (Thonglor), 02-392-7740. Freebird, 28 Sukhumvit Soi 47, 02-6624936. BTS Phrom Phong

Aperol Spritz, Passapong “Bard” Phetpradit (ownerbarman at Junker and Bar) Ingredients: 4ml Aperol, 50ml prosecco, a splash of soda water, topped with a slice of orange How to: Add ice into a glass, then pour in all the liquid ingredients, garnish, and you’re done Bard says: “Super easy to make and super refreshing.”

Daiquiri, Sebastian De La Cruz (former head barman at UNCLE/ Touche Hombre, now opening his own bar) Ingredients: 50ml rum, 30ml fresh lime juice, 20ml of simple syrup How to: Put all the ingredients in a shaker, shake and then strain over a coupette. Moscow mule, Milk Pailin (head bartender at Vesper) Ingredients: 45ml vodka, 110ml ginger beer, 10ml lime juice, lime wedge How to: Add vodka and ginger beer in a copper mug (or regular highball glass), fill it with ice, add lime juice, stir gently, garnish with lime wedge Milk says: “Simple. Americano, Philip Simple Punch, Stefanescu (former Kiattikoon Auengkum head barman at (Bunker) Ingredients: Touche Hombre, Rum, fruit, now opening a bar syrup, with Sebastian De La lime juice How to: Cruz) Pour your Ingredients: 30ml red vermouth, 30ml Campari, soda water, slice of orange How to: Fill glass with ice, add Campari and vermouth, a splash of soda, garnish with orange and serve Philip says: “One of my favorite drinks. The low quantity of alcohol makes it a bit easier to endure a full night of drinking.” Touche Hombre, 72 Courtyard, 72 Sukhumvit Soi 55 (Thonglor)

Rebujito, Hideyuki Saito (ex-Vogue Lounge, now ownerbarman at Bronx) Ingredients: 60ml dry sherry, ginger ale or Sprite, lime wedge How to: Pour the sherry, add ginger ale, garnish with lime and ready to serve Hideyuki says: “This Spanish drink has always been my favorite. Muddlers allow you to crush some fresh fruits and herbs into your drink. Crushing is great for mint, as it extracts the aromatic essence.

Your boston shaker doesn’t have a built-in strainer (unlike the martini shaker) so you’ll need this guy to keep the ice out of your drink,

Tom Collins, Ronnaporn Kanivichaporn (Backstage Bar) Ingredients: 45ml gin, 30ml lemon juice, 1.5ml sugar syrup, soda How to: Put all the ingredients in a glass filled with ice, stir, and garnish with a lemon wedge. Ronnaporn says: “It’s a very easy cocktail to make and to twist to your own personal taste. You could switch to vanilla syrup or honey. Perfect for the hot Thai weather.” Backstage bar, L/F, Playhaus Thonglor, 205/22-23 Sukhumvit Soi 55 (Thonglor), 02-712-5747

The coupette looks a bit like a martini glass but it can hold more volume, not just a bit of vodka and melted ice. It’s ideal for daiquiris.

The copper mug was the hipster hit of 2015. What does it bring to your drink? Style! Find these at www.jjthaibarsupply. com, with good kits starting from B1,300.

O-Yua River Terrace

Having made a home for itself right by the Chao Phraya River, O-Yua offers views and a cool breeze that make it ideal for a rowdy gathering. With large portions for low prices, it’s hardly a surprise that this riverside eatery is as busy as it is. This simple Thai joint offers seafood the way it’s meant to be — fresh and without frills. With the smallest draught of Singha coming in a pitcher, don’t expect your night at O-Yua to be a short one.

Song Pochana consistently uses fresh seafood. By raising their fish in the back of the restaurant they provide their customers with a product they’ve put their all into. This attention to detail combined with efficient service and bold Thai-Chinese flavors is the reason why this spot has stayed open for over 35 years. Each dish is authentic and the affordable prices make the trip across the river more than worth it.

Fresh and Classic Old-school seafood restaurants to chill out, feast on barbecued shrimps and knock back a few beers. O-YUA RIVER TERRACE

With a name like Bangkok Sea View, this location hardly feels like Bangkok at all. Perched atop a platform in the Gulf of Thailand, the view is well worth the twenty minute boat ride. With classic Thai dishes on the menu like talay pao (grilled prawn, crab, cockles, mussels and squid) and yam cha kram, the experience is a comforting one. The Up, 54 Phayakkhaphon Alley, Rama 3 Rd., 02-117-2986. Open daily 10am-12am

OB AROI

What was once a small food stall with only four tables is now a booming restaurant with over 100 seats; a fairly remarkable feat considering its far-flung location. What makes this place so special is not the atmosphere or the décor — as it’s lacking in both — but the food. The seafood is undeniably fresh and Ob Aroi makes even the simplest of dishes remarkable. Their grilled river prawns are not only juicy and tender but also have an incredibly smoky flavor. Lad Phrao Soi 94, 02-559-0628. Open daily 4-11pm

SONG POCHANA

While this isn’t the most budget-friendly restaurant, the food is well worth the cost once you take quality into account. The cooks at Sompong take the time to ensure that every dish is made the oldfashioned way, and while that may detract from speedy service, it definitely adds to the taste. Making a reservation at this perennial favorite might be your best strategy if you plan on eating here in a group.

THAI FOOD PAIRINGS Beer is your best bet with spicy food: it’s cooling, its flavors somehow survive the numbing effect chili has on your tongue, and you can drink more of it than wine. Don’t go for very strong ales or dark beers, though, which can clash with the subtle flavors or aromatics of Thai cuisine. Singha, Thailand’s oldest brewery, has been the beer of choice for Thai food lovers since 1933.

OPEN DOOR

Muine Fresh and flavorful Vietnamese in an achingly hip setting. The buzz: A spin-off of the longstanding Vie Halong restaurant (near BTS Udom Suk), this chic space looks to take Vietnamese food in a younger, more playful direction. Drawing on his family’s restaurant experience, Thai-Vietnamese owner Prachya Wilapol serves a street food-focused menu that contains some of the very best banh mi (Vietnamese sandwiches) in Bangkok. The decor: Definitely more contemporary than your average Vietnamese restaurant. The space is decked out like a hip cafe with all the rustic-industrial signifiers: red bricks, bare concrete, wooden furniture and plants. A large window at the front of the restaurant lets you peek into the kitchen.

22

The food: The banh mi serves as a good example of the attention to detail, here. The crisp-yet-fluffy bread is pre-baked to be finished on-site, coming with a variety of fillings. Some ensembles like the scrumptious cold cuts option (liver pate, Vietnamese pork sausage and Chinese pork sausage, B185) require more specific handling, like scraping some bread out from the top half of the baguette. Other fillings include charcoal-grilled pork shoulder blade (B185), crispy omelet with Sriracha dressing (B145) and Oyster Po’ Boy (crispy-fried oysters, B200). Elsewhere on the menu, there are dutifully prepared staples like pho (B160), spring rolls (B125) and grilled pork with vermicelli (B180), alongside rarer items like the thick and

flavorful Vietnamese curry (B200). Desserts are more adventurous, like the creme brulee with black sticky rice and coconut (B145). The drinks: Imported Vietnamese coffee is the star. Try the superstrong Vietnamese drip (B165) which sees a glass of condensed milk and ice under a Vietnamese-style dripper. They also experiment with the likes of non-alcoholic butter beer (B165). Why you should care: While the hipster-cafe decor might set alarm bells ringing, Muine packs all the flavors of a good Vietnamese restaurant. Salad Days New health cafe Modish (1/1 Chan Rd., 090-919-7414) stands out from surrounding shop-houses thanks to its crisp, all-white decor. Offering both dine-in and delivery, the space was dreamt up by a physician who specializes in nutrition. Here, you’ll find a salad bar where you can build your own bowl from B69 or choose from pre-designed options like seared tuna salad (B149) made with organic veggies and house-made dressing. There are also rotating specials like whole-wheat tart with egg and quinoa (B59) and spaghetti with tomato sauce (B159) alongside cold-pressed juices (B89) and almond milk (B89). The delivery service offers tailored meal programs for those who require special diets or would like to eat healthy, control their weight or build muscles.

New Leaf Taking over the space that used to be fine-dining favorite Paste, Leaf Thai Bistro (Sukhumvit Soi 49, 062-048-8351) sticks to a similar line of traditional Thai food with modern

touches. Having trained under celebrity chef Chumpol Jangprai, chef-owner Atithep Thongsawang serves rotating dishes like braised beef massaman, Phuket-style moo hong (braised pork belly with sweet soy sauce), crabmeat curry with piper leaf and chakram (annual seepweed salad). The bar serves up fruity cocktails like The Hunger’s Choice (Campari, orange, grape juice and lime, B240) and Passionate Storm (Olmeca Gold Tequila, passion fruit, Triple Sec and chili. B300).

Papa’s Back Having left our shores a couple of sad years ago, Japan's cream puff specialist Beard Papa’s is now back in Bangkok. This time, though, you can’t just step off at BTS Siam and head down to Paragon to grab your ball of sweet cream. The first shop is tucked away in The Mall Bangkapi (3522 Lad Prao Rd.), but they say future shops will be closer to downtown. The classic custard cream puff starts at B55 while there are also cookie and eclair options with matcha, chocolate and melon fillings.

Vogue Lounge 6/F, Mahanakhon Cube, Narathiwat Ratchanakarin Rd., 02-001-0697. Open daily 5pm-late. BTS Chong Nonsi This cocktail bar serves more than just expensive drinks by a highly regarded mixologist. They’ve also brought onboard a Michelin-star-winning chef, Vincent Thierry, formerly of Caprice in Hong Kong, to create a menu of incredibly elegant (and equally delicious) fashion bites. The 1920s-inspired bar features an indoor area with elegant design by David Collin studio and a beautiful air conditioning terrace. Exclusively for Citi credit card members. Chef Thanunya “Gai” Kaikaew is the only female chef from the Iron Chef Thailand TV show. Her specialization lies in sweets, so it’s no surprise that desserts star at her restaurant. The lovely wooden house and garden her restaurant inhabits wouldn’t be packed out on weekends were it only for maple syrup souffles, though. Thanunya also has a solid savory menu with plenty of brunchy nods; and she is backed by impeccable service. In the plate, flavors are comforting but not always all that refined. There’s a sameness to many dishes (eggs, truffle oil and cheese will only get you so far) and the pasta is disappointing, be it the oily-yet-dry spaghetti with bacon and garlic (a special on our last visit, B240) or the overly salty gnocchi served with the roasted barramundi (B340). Nor will you see high-end produce here like Iberico ham or delicate seasonal

greens from the Royal Projects. Be that as it may, it’s all very solidly executed. So that while the ratatouille and ham frittata (B240) doesn’t really contain a ratatouille, the sprinkling of veggies at the bottom of this cheesy little casserole still makes for a lovely Sunday treat. We recommend the lobster souffle (B980): the whole lobster’s charred notes, the eggwhite-only souffle and the umami bisque combine beautifully. As for that aforementioned barramundi, despite underwhelming sides, the fish itself is perfectly cooked and the tiny dash of tapenade (black olive paste) makes for a great touch. The souffles are all made fresh (you can see them literally whipped up in the open kitchen) and are consistently delicious. The chocolate souffle’s (B260) molten center is like the fluffiest lava cake you’ve ever had. The Osaka cream souffle (B280, served with a floral honey ice cream that has unusual rosemary notes) is so rich it feels like a meal of its own, an equally decadent yet more delicate answer to After You’s honey toast. When a place is this popular with Bangkok’s black-van-driven bourgeoisie, there’s legitimate concern that it might be nothing more than a selfie opportunity. But Souffle a n d M e m a k e s fo r a f u n a n d reasonably-priced brunch destination where the decor and service are as adorable as the food.

toppings like seasoned ground beef (B290) and chicken chorizo (B270). With its dense layers of cheese, peppers and tomato, the beef pizza looks an intense proposition, but the corn tortilla base makes for a relative light bite. Another hit are the tacos vampiros , made by grilling the tortilla and cheese until crisp, before t h row i n g i n f i l l i n g s l i ke b e ef barbacoa (pulled beef chuck, B350/ two pieces). Crunchy and succulent. The other half of the menu, devised by chef Chalee Kader, doesn’t always reach these heights. The duck confit mac ‘n’ cheese (B450) is not only bland but also a chore to eat—we see no reason to plop a full duck leg into this mound of mushy macaroni a n d b e ch a m e l. N o a m o unt of rubbery bacon can save it. Much better are the fried chicken and waffles cupcakes (B180), featuring little golden morsels of chicken and delicious maple cream. Basically this is no place for a dieter, with just two salads—including the rich and smoky corn, yogurt and bacon salad (B250), which hardly counts. With regular parties and very-good-very-strong drinks, this can be a happening place, but we’d think twice about visiting on a quiet mid-week night. Overall, Knock has enough substance to go with the style, and can now claim to have some of the most exciting Mexican food on the strip.
