A checklist of BK Magazine’s most important discoveries this week Chula is opening a new public park next month This news might have passed you by since it’s barely made a single headline, but central Bangkok’s getting a brand-new park opening as soon as the end of March. It’s part of Chulalongkorn’s big reinvention plans for the whole of the Samyan neighborhood (the massive slab of city center between Siam Square and Rama 4 Road), and will account for 30 rai of the whole development. OK, so that’s just one-tenth the size of Lumphini, but it beats another mall. Duangrit Bunnag is launching his own hotel brand It’s called Hotel Bocage and kickstarts its way into life with a predictable combo of chic gray tones and well-considered spotlighting in Hua Hin this Mar 1. Thailand’s leading starchitect and purveyor of all things slow-life hopes it to be the first of many hotels under the Bocage brand, and has already had it registered with the Design Hotels collective. Here’s the snag, though: there are only six rooms, taking bookings as of Feb 20 for a starting rate of B5,000/night. The Great Outdoor Market is back (in its safest location yet) The chill pop-up market best known for stunning, occasionally rickety riverside spots like Bangkok Docklands returns next Mar 4-5 in miniature form at The Commons community mall in Thonglor. Before then, though, you can get your outdoor shopping fill at Sansiri Market Fest, the annual food and fashion gathering that’s wisely dropped any reference to “winter” in its name. Museum Siam will unveil new exhibitions, finally After closing its main exhibition space for nearly a year, Museum Siam next month unveils “Tom Yam Goong,” an exhibition devoted entirely to the spicy soup, which will be followed in May by something called “Thai DIY Inventions.” In related news, the value-packed Muse Pass is back for the fifth year letting you visit 56 museums around Bangkok, including Museum Siam, for just B199. Thanapat Boonsanan, 31, is the founder of bamboo-centric architecture and construction firm Thor Kaichon (www.fb.com/thorkaichon). Up until recently, the local bamboo construction scene was dominated by foreigners; now Thanapat is one of the most sought-after architects around for his humble, environmentally-friendly yet sturdy designs. After returning from Konstruck Bamboo Art Festival in Malaysia to put the finishing touches on his stage designs at Wonderfruit festival (Feb 16-19, see page 22), Thanapat talks to us about the future of this natural material. Why did bamboo first draw your interest? After two years working as an architect, I was pretty tired of traveling between my office in Huay Kwang and my home in the Rama VII area. I was at a crossroads. I was always into natural resources as my dad loved to grow plants, but the floods in 2004 killed all of them. Then four years ago my friend sent me information about a bamboo workshop hosted by Bambooroo, an architecture and construction firm in Chiang Mai. I’ve worked with bamboo ever since. Where did you learn about the special qualities of bamboo? Bamboo requires great craftsmanship. I spend a lot time talking with craftsmen to learn their techniques and studying different kinds of bamboo suitable for construction. I’ve learnt a lot from ethnic groups up North, like the Karen people. Attending Arsom Silp Institute of the Arts, I also got the low-down on a humanfriendly bamboo treatment that uses borax to change the chemical status of the sugar in bamboo so that weevils no longer eat it and the construction lasts longer. I applied this technique at my first project, Cool Down Resort Chiang Mai.

What are your main bamboo sources? Though Thailand has more than 70 types of local bamboo, I mainly use two types: phai tong [sweet bamboo] and phai liang [hedge bamboo], which I source from Nakhon Nayok and Kanchanaburi, as they are close to my factory in Nonthaburi. That said, the bamboo grown at higher altitudes up North is far bigger and stronger, but it costs much more logistically. How is bamboo construction environmentally friendly? The growth rate is about five times faster than normal trees. When we use it, we cut only 30-percent of a cluster so that next year we can come back to cut it again. And of course, it’s reuseable. Tell us about your project at Wonderfruit? I’m working on three projects there including the main Farm Stage, which is the most challenging project I’ve ever done. Designed by PO-D Architects, the 15-meter-high bamboo construction takes inspiration from the Isaan tradition where farmers build ornate rice palaces from leftover rice straw. The most challenging thing was making sure the structure could take weight without com-

promising on the beautiful curved design. Another one I designed myself is Quarry, which is an afterhours zone that is designed to look like a hidden forest with visual mapping to complement the DJs. What’s the future of bamboo design in Thailand? It’s definitely growing in terms of designers. The green trend isn’t going away. Many young Thai designers are thinking of ways to use bamboo in public spaces, libraries and schools. But there’s a shortage of skilled craftsmen. Those with good techniques are hard to find, and young designers aren’t willing enough to learn from them. Spending hours drawing beautiful designs on a computer won’t result in amazing bamboo structures without the technical know-how. Meanwhile, European and American architects have long been interested in bamboo construction, but they don’t have the bamboo resources that Asia does. Moreover, bamboo in hot countries like ours is stronger than those in cold countries like China or Japan, which use bamboo in craftwork rather than construction. Bamboo is like steel that you can grow. We’re in a unique situation, if designers are willing to advance their knowledge. Interview by Monruedee Jansuttipan

Top Tipples The people who know Bangkok drinking best describe the city’s biggest upcoming booze trends—and where you can get a taste. By Choltanutkun Tun-atiruj

B

angkokians will readily tell you that we’re becoming the cocktail kings of the world—well, Southeast Asia at least. With six bars in Asia’s Best Bars 2016 and one of our bartenders crowned the best on the continent (more on cocktail competitions in the box below), things are looking bright on the local cocktail scene. Here, we look at the trends taking over the city, as well as where you can taste some of Bangkok’s craziest drinks.

CHRYSANTHEMUM COCKTAILS

Forget cocktail menus that say stick to the same old brands. Customers don’t just care about trying new drinks; they care about trying new spirits, too. Which is why Bangkok has recently seen a wave of boutique importers bringing in ever-more-diverse bottles. Some of the most recent on the scene include The Melbourne Gin Company courtesy of distributor Australis Wines. It’s available at various bars around Bangkok including Vesper, which pours it into a mean G&T for B380. Looking for some seriously special tequila? Head over to Revolucion Cocktail to try Casa Noble Reposado Tequila (B419/shot) made from the Carlos Santana-supported tequila brand. And Schweppes tonic won’t do these days, either—you need a Fever-Tree (available at Bunker) or East Imperial (available at Teens of Thailand).

The days of reading a drink's name and knowing what might be in there are over. A menu now needs a concept. At Soi Convent’s Vesper, that takes the form of The Art Book, a ring-bound tome styled after Phaidon’s cult publication of the same name. Each cocktail is inspired by a famous painting, resulting in stuff like The Treachery of Images, in which Rene Magritte’s painting of a pipe is translated into Moonshine unaged whiskey, Alipus San Baltazar mezcal, Carpano Bianco and tonic bitters (B390). At the railway carriage-themed Track 17, their “Destinations” menu takes on the theme of a new city every three months. Right now, that’s Chicago and includes drinks like Gold Coast Cloud (B370) made from Sailor Jerry Spiced rum, blueberry jam, apple juice, maple syrup, lemon, egg white and barbecue bitters. The Bamboo Bar has also just launched a spring menu (and will have another one inspired by different jazz singers in March).

In the space of weeks, we were served chrysanthemum cocktails at four different Bangkok bars (Chrys' Lemonade at Little Bao, Yellow Flower at Freebird, Chrysanthemum Vanilla Fizz at Dim Dim and two things at Teens of Thailand that were wiped off the board not long after). And that’s not the end of it. Expect it to make an appearance in the upcoming menu at Mikys Cocktail Bar as well, while other bars are embracing lesser-known Chinese flowers. The Owl Society’s 24K cocktail (B350) has something called moonflower. And that flower on top of your Lotus (B300) at Mikys Cocktail Bar—that’s edible.

“Bangkok has reached the stage where customers walk into a bar and say, “I’d like an old fashioned, what whiskey brands have you got?” instead of “I don’t know anything about cocktails, what should I have?” which happened about five years ago. People have started to pay more attention to innovative spirits, not just the big brands.”

“The story behind each cocktail helps engage the customers with the drink, it also helps the customers make a decision on which drink to get. When there’s a story and a connection to a drink, there’s another level of interest.”

We Thai bartenders pretty much grew up with chrysanthemum, it is very easy to access and also very cheap. It also has a clear character and smell, plus it's known worldwide so foreigners won't find it difficult to understand the taste."

STIFF COMPETITION Cocktail competitions have become big business. Cynics say the number of booze awards has become so oversaturated that to win is all but meaningless, while others praise how competition raises the standard and creativity of what the bar scene offers. Whatever you think, the difference between winning and losing can make or break a bar’s fortunes. Here’s a calendar of Bangkok’s biggest cocktail comps of the year, and a look at their past winners and losers.

Whether it’s bartenders hosting guest shifts within the Bangkok bar community or bartenders from overseas heading here to do guest stints, it’s a win-win situation for both the bars and the customer. Mandarin Oriental's Bamboo Bar is bringing over Marco Corolla from Hendricks Bar in Dubai on Feb 27. Bacardi is bringing the winner of the Bacardi Legacy Cocktail Competition Global, Gn Chan, over to Backstage Cocktail Bar, also on Feb 27. Time to bar hop, we think.

The last few years have not been kind to Scotland. With whiskey drinkers turning to the bourbon of Kentucky for their old fashioned, or a nice, smooth glass of Japanese Hibiki for when they want it straight up, the days of Black Label’s dominance were looking like they could be numbered. But the Scots were taking notice, which means we just got an American-style Johnnie Walker (Blenders Batch Red Rye Finish, B899/bottle) and a Japanese-style Chivas (Mizunara, B2,650/bottle). So maybe you can show them some love, put down the Suntory highball and go back to your old Chivas 12 every once in a while. Come on. They invented the darn stuff.

FATS IN COCKTAILS

THE TRICKLE-DOWN EFFECT

Adding oily fats to cocktails is becoming a thing—yes, actual fats. Bronx Liquid Parlour on Thonglor Soi 25 now has a menu of six drinks with drops of oil in each. Umami (B300), for example, combines black sesame oil with sake, vodka, mirin, ginger syrup and lime for a very Japanese flavor (also see box, right). Elsewhere in Bangkok, Freebird on Sukhumvit Soi 47 offers a butter-infused vodka called the Salon Prive (B320). The trend for dripping oil in cocktails has developed from the fat-washing technique of last year, which saw bartenders freezing vodka with butter and truffle oil (or even bacon fats) to get the flavor without the actual fat itself.

After years of advanced mixology, the whole thing has finally fallen into the domain of the mass market. Local brand Rock Mountain is even tackling the soda duopoly held by Singha and Chang with an ad that features cliched hipstery barmen juggling with the new soda. Could Wine Connection and Wine I Love You get wiped out by a chain of Cocktails are You joints? Judging by the number of barrel-aged negronis and sazeracs we knocked back at hotel functions over New Year, we reckon the time's come already.

Simplicity and Sophistication Thanida “Oat” Dhimasombat, an architecture graduate who went on to get a master's in product design in London, is making waves with a new collection of bags that applies architecture’s form-follows-function philosophy to fashion. Inspired by traditional Thai outfits, but also the challenges facing a working woman in an urban setting, the collection oozes elegance—and yet every detail is driven by practicality. Its masterpiece is the Allure bag, a completely unique bag with a flexible, lightweight form and irresistible sophistication. Function often drives architecture, while fashion accessories put aesthetics first. As a trained architect designing handbags, what’s your take on this? We didn’t want to make a bag too focused on fashion trends but more on practicality. But being functional doesn’t mean you have to be boring. I believe that, for fashion, minimal and timeless elegance is always on-trend. So we intended to design a classic bag that focuses on function, meaning it’s flexible and works for different occasions. That’s how I adapted the logic behind architecture to fashion. My bags are designed to solve everyday challenges. Why did you choose to transition to the fashion business? As an architecture student, we learned to compromise between beauty and functionality. But at Kingston University London, I learned a philosophy of product design—a design that logically concerns on function. Therefore, as a product designer, I develop design by functionality. I also see Allure as a functional objects that you can use every day, really a fashion thing that comes and goes. I felt other bags were not designed with that in mind, and that I could solve the problems women face using them. The Allure bag is designed to adapt itself to the different needs women face throughout their day, literally changing its shape if need be. I wanted a simple, elegant solution to this challenge, but it actually takes a long time to develop that kind of design.

What is the uniqueness of the Allure brand? We started by looking at common complaints women have about their handbags. The problem of weight came to my mind. No one wants to carry a heavy bag. So I designed this bag to be as light as possible, removing almost all the metal hardware and replacing it with leather knots. With leather straps and knots, the bag’s shape also becomes more adjustable. You can change the knots around and it’s like getting a new bag. That allows you to use the bag for every occasion, no matter the purpose or the style of the event. Are you applying this approach to other products you’ve designed? I won a DEmark award with an elephant made of wooden blocks, which was my way of telling the story of illegal ivory trade, and its effect on elephant populations. It’s another illustration of narrative product design concept that i adapt with Allure design. Moreover, we also have the PRIMM bag in our collection. I felt like there isn’t a good, all-round bag designed for overseas travel. I wanted something with hidden storage for money or a passport. That’s why PRIMM has a leather flap covering it—no more getting pickpocketed on your holiday. How do you see the future of your bag? Lightweight, functional, good-quality bags with a simple, classic design is what working women are looking for. But I think it appeals to a younger market, too. We did quite well on our previous collection, selling in both online and physical stores. Our current plan is to expand internationally. We’ve already started raising awareness for the brand in Singapore and Malaysia. We also want to offer a wider range of designs, but always in keeping with our design philosophy.

To welcome the arrival of UberEats, we tried out all of Bangkok’s most popular food delivery services and ranked them. By Alisha Pawa

Promised delivery time: Varies, though they highlight restaurants that can deliver in under 30 minutes. Actual delivery time: 25 minutes Pricing: Delivery is free in central Bangkok (for now, at least) with no minimum order. The restaurants: More than 100 offerings, from comforting street-food places like Hai Som Tam Convent and Bundit Kim Kao Mun Gai to foodie favorites like Appia, Daniel Thaiger and Ippudo. This app by the American ride-hailing service Uber launched just last month to a tide of online adulation, and we were interested to see what exactly they do differently. After signing up for the website or mobile app, you’re asked to plug in your credit card details. They make a big deal of showing you restaurants that can deliver to your door in under 30 minutes. Right after your order, you’ll be sent the driver’s contact number and then you’ll get real-time updates just like the Uber ride app. Our experience was supersmooth, with our food delivered in well under the promised time. Prices are reasonable, too, though we’d like to see cash payment as an option. This being Uber, rest assured there will be plenty of promos.

Outside these areas, choice is far more restricted, including only about 30 in Sathorn.

The restaurants: There are 93 to choose from, including plenty of chain names plus cool standalones like La Monita, Hickory and May Veggie Home.

The restaurants: With more than 1,000 restaurants, Foodpanda wins on quantity. There are also plenty of BK picks like Peppina, Indus and Roast. While Foodpanda’s delivery time took considerably longer than promised, the restaurant selection puts competitors to shame. For example, key in Sathorn and you already have some 204 places close at hand. You can easily sign up in Facebook and pay through cash, credit card or Paypal. There are some quirks, though. Once you place an order, they’ll give you an estimated delivery time, but this just kept on climbing on our last try. There is also no way to contact the delivery man until they call you, though you can keep track of the delivery with the app’s location updates and constant notifications. This spin-off from the all-conquering messaging app Line is not so much a food delivery service as the equivalent of having a personal motosai dude at your beck and call—they’ll even do odd jobs, from picking up your dry cleaning to shopping for groceries at 7-Eleven. The app is available on iOS and Android, and you’ll need to have a Line account (but who doesn’t?). The main pro is it gives you access to street food stalls that aren’t on competitor apps. The cons: the fee is quite steep (though we’re not arguing with our 33-minute delivery time), and placing an order is not actually through the restaurant. Instead, your delivery guy will physically go into the restaurant and order for you (sometimes after a visit to the ATM!). Most restaurants are in Thai and you may have to zoom in on some poorly uploaded menus. Love: Convenience of Line

This 10-month-old, locally-owned service is still making its way in the delivery game, as the short list of restaurants attests. There’s no app, so ordering is done through the website or Facebook messenger. You don’t even have to sign up or create an account. Just add your location and the available restaurants will show up. You can pay by cash, or card and Paypal if the order is above B300. Ginja will call, text and confirm the order with a follow-up link. Add them on Line for free delivery vouchers.

One of Bangkok’s oldest food delivery service is still making a big deal of its no mark-up policy. The good: prices are approximately 20-percent cheaper than other services for select restaurants like Sunrise Tacos. The bad: you won’t find out what’s available in your location until after you choose your order. That becomes really, really annoying when you realize a lot of the chain restaurants listed only have limited branches. NEW BEER BAR Golden Coins Taproom Following the closure of much-loved beer bar Let the Boy Die, its founder, Pipatnapon “Piek” Pumpo, is back with a new project: Golden Coins Taproom. The six-tap craft beer bar exclusively serves strains of Piek’s own Golden Coins beer, priced at B180 per glass or B100 during 5-7pm happy hours. The barebrick wall, shop-house space in Ekkamai also dishes out staples from the old LTBD menu,

Clinton Street Baking Company New York’s favorite pancakes are now on sale in Bangkok. The buzz: If you want to dine at the original branch of Clinton Street Baking Company, located on the eponymous street in New York, you can expect a wait of up to two hours. Fear not, though, the restaurant renowned for its buttermilk fried chicken and pancakes, which New York Magazine and Lonely Planet dubbed the best in New York, is now open in Siam. The decor: The brand’s first ever venue in a mall sits at the back of Paragon, just opposite Siam Kempinski. Thanks to its dedicated streetside entrance, the restaurant can open two hours earlier than the rest of the mall. The decor borders on barebones with its red walls and Emeco "navy" chairs. We like

the high ceiling and big bay window, though. The food: They’ve brought all the bestsellers, starting with the crispy cornmeal-crusted chicken on a light waffle (B320), served with warm maple butter—delicious! The blueberry pancakes (B260 for two; B320 for three) also live up to the hype, with a slightly crispy crust and very soft interior that is complemented by a dense blueberry sauce. They also offer burgers (from B450), breakfast plates (from B280) and brioche French toast (B260). We particularly vouch for the oh-so-fudgie brownies (B100) and the classic carrot cake (B180)

The drinks: Match the retro diner vibes with a milkshake (from B140) in flavors like vanilla and chocolate or a light and refreshing house lemonade (B90). Coffee and tea start at B90 while there's also a short list of beer, wine and cocktails. Why you should care: This is one brunch import that doesn’t disappoint despite the plain setting. At B930 for lunch Mon-Sat, it’s also a bargain, with cooks shucking fresh oysters for the seafood tower as well as Iberico and Parma ham in the cold cuts section. Water Library, the restaurant group behind fine-dining mainstays like Water Library Chamchuri and Hong Bao, followed its string of increasingly populist openings with the launch of an Italian restaurant in Silom late last year. Situated right beside sister restaurant Kuku Ramen on the busyby-day thoroughfare that is Silom Soi 3, Ciao takes a relatively basic approach to pizza and pasta that’s proving a hit with the local office hordes. Of course, there are still lofty claims behind the pizza dough; they say it’s twice stretched over a period of up to 48 hours for a base that’s lighter and crispier than most. We agree, the pies that come out of the big hybrid gas- and wood-fired oven by the window have a nice crunch, but the bread tastes like a one-dimensional throwback to a time before the tangy and charred crusts of Peppina and Pizza Massilia. The toppings are divided into traditional favorites (starting at B150 for an 8-inch margherita)

Vie Halong is an institution that’s been serving reliable Vietnamese fare to diners in the know for roughly 20 years, though you might be better acquainted with Muine, its next-gen cafe spinoff at Habito mall. The owner, who hails from South Vietnam, rolls out a menu heavy with classics like pho (Vietnamese noodles, from B125), cha ca (sea bass fish salad, B195), cha tom (minced prawn on sugarcane, B165) and banh xeo (rice crepes filled with stir-fried pork and prawn, B205). Despite its two decades, Vie Ha Long keeps things fresh thanks to updated decor (the restaurant moved to its current location over a year ago) and a new menu, both of which bring the place a bit more in line with Muine. Of the new dishes, we’re particularly fond of the

and chef Gerardo Calabrese’s substantially pricier specials (sample name: “Pizza Sexy Salmon”). Of the former category, the diavola (B270 for 8-inch, B350 for 13-inch) will appease those whose primary concern is cheese, and lots of it. The recommended pizza croccante burrata crudo e rucola (B555 for 13-inch), too, comes piled with burrata, parma ham, rocket and parmesan, standing out for its tomato sauce that adds a slightly acidic kick. A bit like the Peppinaaping decor (raw concrete, rustic logs) and vaguely operatic soundtrack, Ciao’s food can feel like a facsimile of Italian authenticity, rather than the real deal. This comes across in the few nods to local tastes, like the fritto misto (B390) that comes with carrot and zucchini or the deep-fried chicken meatballs “with Thai spices,” which we had in the strozzapreti with pesto (B260). The pasta is springy and full of basil notes; shame about the kid-size helping of what tasted like chicken nuggets plopped on top. No real surprises on the dessert menu, just nicely balanced tiramisu (B220) that beats plenty of the creamy messes out there. Water Library-sharp service and decent portions at reasonable prices (those 8-inch pizzas), make this a lovely lunch-time spot. Come dinner when expectations are raised, the whole thing just falls slightly south of what a Bangkok pizzeria can be nowadays. There are still reasons to visit if you’re in the neighborhood, not least house wines going for B160-180 per glass and daily buy- one - get- one (and occasionally even -two) deals on beer.

fun and delicious bahn mi (Vietnamese sandwiches, from B185), made with crispy baguettes, which are pre-baked to be finished on order with the interior scraped out from the crust. The barbecue chicken option is a delicious handful filled with juicy, tender chicken, pickles, veggies and a mayo-based sauce, nor can you go wrong with the classic cold cuts or nem nuong (Vietnamese pork sausage) sandwiches. In general, this housemade nem nuong is spot-on. Order a set (B185) and you’ll get to sample these grilled plump pork balls that are dense yet balanced, served alongside moist rice sheets plus green mango, pineapple, u n r i p e b a n a n a , g a r l i c a n d f res h vegetables. Banh cuon (steamed rice dumplings with minced pork, B165) are another staple that shows off the kitchen’s expertise, thanks to the perfect wrapping of the rice batter; while the charcoal-grilled pork with rice noodles (B185) delivers tender meat and flavorful seasoning. For sweets, the banana fritters (B85) are pretty forgettable. Opt instead for a Vietnamese coffee creme brulee (B115), sweet dumplings in ginger soup (B65) or sago with cantaloupe (B65). The crowd of families wandering in from the neighborhood couldn’t be more different from the hipster kids at Muine, but the food at this down-to-earth restaurant is definitely on par and worth a visit.
