A checklist of BK Magazine’s most important discoveries this week That street food on Thonglor ends on Apr 17 A feature in this week’s Economist about Southeast Asia’s escalating war on street food reckons that as of Apr 17, all food stalls will be gone from Thonglor. No Family Mart ba-mie, no Midtown khao ka moo, no moo-ping between sois 19-21. But in other Thonglor news, the neighborhood just welcomed chic new tapas and wine bar Arroz, where a delightful squid-ink paella for two costs B1,200. So that should keep people happy. That Asok now has its own craft beer Changwon Express, Asok’s Thai craft beer bar and Korean-Mexican fusion restaurant, is launching its own canned beer named after the neighborhood. Bar owner Ted Ahn tells us Changwon Express Asoke Pale Ale is brewed in Korea before being legally imported here. With extra hops and a more tropical aroma, it’s designed to be more refreshing than a regular American Pale Ale—the perfect reward for a long journey stuck in Bangkok traffic. Available for pre-order online at Wishbeer.com. That the BTS now stretches outside Bangkok The first station in the BTS Skytrain extension of the Sukhumvit line is now open. Trial runs between BTS Bearing and the new BTS Samrong, in Samut Prakarn, launched on Mar 15 and will continue until Apr 2, after which trains servicing the whole Sukhumvit line will end at BTS Samrong. The whole extension to Samut Prakan is planned to open in 2018. Oh, and rides are free until the end of April. That Cloud 47’s days are numbered The Silom rooftop bar which took Thai beer garden-style boozing to the sky is set to close at the end of March. Owner Pheeraphon Pipawakorn says the bar’s lease has expired, with the 47thfloor space now set to be transformed into another office. The announcement follows arguably the venue’s biggest ever event, a sold-out concert by UK singer Joss Stone on Mar 9. That the BMA is bulldozing ahead with its Chao Phraya Riverside Promenade Despite public and professional criticism, work to transform a 14km (seven kilometers on each side) stretch of the river into a cycle lane, public walkway and riverside landmark, will officially begin this April with the auctioning off of four construction agreements. This news also confirms the clearance of 10 riverside communities, including 285 households, with construction starting this July. The much-maligned project is scheduled for completion by 2018 at an estimated cost of B8.4 billion.

upfront HOT OR NOT

Hot: Taxi apps

Not: Airbnb Experiences

Land Transport boss Sanit Promwong did drinks with the Uber peeps on Monday where he decided that taxi apps are awesome and he wants to keep them roaming Bangkok’s streets. Airbnb, that’s a different story. With it still totally illegal to rent out your property on the room sharing website, it also turns out the company’s new line of wannabe tour operators are brushing with the law as well. Not that the 300+ Bangkokians using the website seem to care.

INTERVIEW

Hot: Street-food apps Not: Food-tasting robots The government is bringing street food into the 21st century with a new app which it boasts will root out the best street food in Bangkok, Chiang Mai and Phuket. Only thing is, the app isn’t new. They actually launched it back in 2015. But since no one downloaded it then, we doubt anyone’ll notice now. Oh, and if you were wondering what happened to that restaurant which used robots (developed at a cost of B3 million) to test the authenticity of Thai cuisine, we can tell you: it closed down.

Hot: Airport joggers

Not: Airport cyclists

The on-again-off-again romance between Suvarnabhumi and cyclists is once again on icy terms. After all the effort put in by the airport back in Jan 2016 to make its cycling track as smooth as possible, it’s now closing down for another seven months. And for what? So joggers can use it too.

Hot: Soft serve

Not: Cheese tarts

Last Mar 14, Terminal 21 introduced Bangkok to Cha Tra Mue-flavored softserve ice cream. Eight hours and 300 ice creams later, the self-serve machine had been so overworked that it broke down. Meanwhile over at Siam Paragon’s Pablo bakery, the wait for cheese tarts was down to a cool three minutes. But who cares about them any more?

THAT’S WHAT SHE SAID

Japan-native Hideyuki Saito is the newly crowned winner of Thailand’s Bacardi Legacy Cocktail Competition 2017. One of a slew of cocktail comps that now run every year in Bangkok, this one bills itself on the same level as booze-behemoth Diageo’s World Class event, its only stipulation being that bartenders must feature Bacardi in their drink. Formerly head-man at the always on-point Vogue Lounge, Hide fixed cocktails at London’s swanky Soho House before arriving in Bangkok in 2014. Now he runs his own bar, Bronx Liquid Parlour, down on Thonglor, where he and barman Krit Pragobdee dole out rich, often strangely savory, drinks that are some of the most creative in town. Here, he discusses Bangkok’s booming cocktail scene—and whether there can ever be too much competition. What does winning this kind of competition mean for your business? It means a lot. It’s definitely big. Winning competitions brings you so much media exposure—it’s not something that happens in everyone’s life. Of course, I just won so I can’t say exactly what impact it’s going to have at Bronx but I’m hoping it will be big. I was very focused on winning this competition, I’ve been trying for many years. It’s something every bartender wants to achieve in his lifetime. There has been a big boom in the number of cocktail competitions in Bangkok recently. Why do you think that is? Yeah, there are a lot more competitions right now. It’s certainly coming up in Thailand. When I was in London there was always a lot of competitions. It’s good marketing for these liquor companies and also exciting for the bartenders—a good opportunity to really achieve something. Then for brands like Diageo and Bac-

ardi, it’s really their biggest marketing tool. That’s why we’re seeing more and more—all the other brands are following. Does brand involvement prevent these competitions from being truly impartial? It’s competition. It doesn’t prevent impartiality but you have to represent the brand. Each brand has its rules you have to follow but really we can do whatever we want. Every competition has its own rules and different style, but at the end of the day it comes down to technique, personality, skill, presentation and, of course, taste. What other competitions do you enter and how did this one compare? I just entered Bacardi Legacy last year. This is my second time. There are not many competitions in Thailand which expats can enter. Diageo, for example, is just for Thai people.

What are your favorite bars in Bangkok? Bamboo Bar and Q&A—I love their cocktails. They have an approach which is very similar to my own— boozy and spirit-forward. Every drink I have had at those bars is really well prepared. What’s missing in Bangkok’s bar scene? I would say it’s all about the market. The bar scene here has really been picking up fast but the market is maybe not always there. Now it’s growing, but as bartenders we still can’t go really crazy like in Singapore. There, if you create a totally unique bar then people will come for it. In Bangkok the market is not always ready for that—we have to approach things in a way that people are more able to understand. That’s how I feel about where we’re at right now. Interview by Oliver Irvine

The End of the Soi As Bangkok waves goodbye to the unnamed alley on Sukhumvit Soi 11 that became a Bangkok nightlife landmark, we look at the fate of its businesses. By Bonnie Sananvatananont and Choltanutkun Tun-atiruj

BK ASKS

A

s of Mar 31, the little sub-soi on Sukhumvit Soi 11 where some 10 bars and restaurants have formed a popular mini nightlife hub will be cleared to make room for a new development, details of which are still uncertain. Much to the disappointment of both the venue owners, some of whom have been there for more than 30 years, and Bangkok’s nightlife crowd, the soi follows a spate of laid-back, pocket-friendly street-side bars and food places swept aside in central areas. Here, BK looks at the fate of each business in the soi, as well as the other neighborhoods primed for development.

Cheap Charlie's

Cheap Charlie’s Satit Budkajang discusses the 35-year history of his bar and what happens next How did it all start? My older brother, Charlie, opened the bar and then he passed away so I took over it until today.

The Alchemist Bar

Cheap Charlie’s Status: Still looking for a new home Loved by locals and tourists alike, Satit Budkajang’s tiny bar brimming with haberdashery has been peddling some of Sukhumvit’s cheapest beers for 35 years. It’s also singlehandedly responsible for much of Soi 11’s popularity, turning the area into many people’s de facto after-work drinking hangout. Satit officially shuts up shop on Mar 31, and for now remains unsure whether he’ll open another Cheap Charlie’s in Bangkok or move the bar’s signature decor down to his Cheap Charlie’s resort in Hua Hin. “The customers are very sad about this,” says Satit. “A lot of them are tourists who travel here and always drink at Cheap Charlie’s.” See the full interview, right.

Charley Brown’s Status: Moving to Sukhumvit Soi 19 Soi 11’s veteran Mexican restaurant (it opened back in 2004) is lucky enough to have already found a bigger, better spot over on Sukhumvit Soi 19 at The iCheck Inn Hotel, where they’ve been open since Mar 24. “Soi 11 has become a destination in itself and we

6

Charley Brown's

would get a lot of walk-ins,” says Dave Bell, the partner manager. “So we are going to have to promote our new place a bit more." For him, the move away from Soi 11 also comes at a convenient time. “A bar around the corner on Soi 11 recently had their rent tripled when the new contract came out,” he continues. “The landlord doesn’t care if you’re going to stay or leave.”

The Alchemist Bar Status: Permanently closed Another bar that decided to close early, the Alchemist shut its doors on Dec 31, 2016. The space was originally a tailor shop for 30 years and belonged to Alchemist co-owner Saloni Jirathaneswongse’s father-in-law. Saloni transformed it into a bar five years ago. “It wasn’t a surprise to us, we actually expected it to happen sooner,” says Saloni. Together with his business partner Tapanee Manaves, he reveals they have no plan to open somewhere new anytime soon. “The closure is very sad because that space in Soi 11 has a lot of character. But there’s not much we can do about it,” says Saloni.

Are you planning to move anywhere? I am looking for a new location but it is very difficult. I want to remain in Soi 11, but I haven’t found anything yet. I also have a resort in Hua Hin, also called Cheap Charlie’s. I will probably just open a bar there. Where did you get all the decoration for your bar from? A lot of it is actually gifts from our customers. Tell us how you came to have the model train running overhead. I love trains, so I wanted to have one running around my bar. I went and bought a set and let it run around. Sometimes when the battery runs out or when I don’t turn it on, the customers will ask about it, so I have to go and get new batteries. Are you planning to bring all these decorations with you when you close? Yes, we are keeping every single thing. You can’t buy history like this, and we’re not looking to sell anything. When we open a new Cheap Charlie’s, we will try to make it as identical to the old one as possible.

cover story Snapper Status: Still looking for a new home New Zealand-style fish and chips specialist Snapper was probably the first bar on the block to shut up shop once the news broke that the area was being redeveloped, following a closing party in midSep 2016. According to Craig McLean, the owner, “our lease ended up being too short to recover from our original investment,” but they would also like to open up again some place new. “We are still looking for an appropriate place,” he says. “Soi 11 had its day, I suppose.” You can still get the fish and chips at McLean's other restaurant, Kai, on Sathorn Soi 12.

Tapas Cafe

Snapper

Status: Focusing on branch in Silom When this restaurant first opened, it filled a much-needed authentic-tapas hole in the Bangkok dining scene, bringing delicious Spanish cuisine to us in a casual setting. The owner, Guy Jackson, says that the closure comes as “no surprise” considering Bangkok’s rapid development over the past few years and the fact that Soi 11 is not exactly an aesthetic part of town. “If there’s nothing protecting, say, the 100-year-old house that used to be Hemingway’s, then who would protect this run-down street?” he says. “I think of it as a unique cultural hub, but that doesn’t seem to be valuable enough to be protected.”

Stash Bar

Stash Bar

Status: Still looking for a new home Those who have spent a night partying on Soi 11 will have witnessed the breakdancers that take to the street almost every weekend, courtesy of this casual dive bar at the beginning of the subsoi. “We’ve been here for four years,” says business partner Patrick Laurent. “We still haven’t found a new place to relocate to, meaning for now we might have to just close down.” Despite that, Laurent believes it’s the right of the landlords to make this decision. When asked what he loves about Soi 11, he points out the casualness of the soi, something increasingly hard to find amid a Bangkok nightlife scene that has seen the arrival of many more classy clubs and bars. “It’s been a great run and I’m sad to see it go”.

Street Food Under Threat An update on Bangkok’s street-food neighborhoods earmarked for development.

Sukhumvit Soi 38

On Nut

Samyan

Ari

What was once a cheap, casual street-food hub was cleared in Jan 2016 after a government campaign to organize the city’s sidewalks. While many of the stalls were forced to move away or shut down entirely, several of them (including the khao mun gai, pad Thai and moo ping vendors) have moved to outside the Sutti Mansion apartment complex at the start of the soi, and still serve up delicious food despite the atmosphere being noticeably quieter. The famous Joke Moo Jao Gao Thonglor has also set up camp in the alley between Soi 38-36, not too far from the original site. The arrival of popular new cafes and restaurants like Toby’s, Schnitzels and Hands and Heart have meanwhile reinvented the soi into a more upscale food destination.

Back in Oct 2015, the On Nut night market had to close. The building which takes its place is now around half finished, with signs out front stating it’ll be a Century Mall, complete with cinema, shopping area and condominium component. Despite this, a number of stalls are still trying to make a living on the footpath in front of the construction site. The new On Nut market is located in Sukhumvit Soi 81, about a 10-minute walk into the soi or B15 motorbike ride. It has been there since the end of the original On Nut night market but definitely isn’t as popular. You’ll also still find the bar with a big projector for sports matches here, popular with Bangkok’s rugby community.

Chula students flocked to the cheap streetfood of Samyan market for some 50 years before it began its relocation process in the early 2000s. The move was officially completed in 2013 with a new market properly set up in an alley between Chula Soi 32-34. However, while it has been given a cleaner and more modern revamp, there has been a visible hit to its popularity. Kanoknan Prapapan, 53, a pork butcher at the new Samyan Market, says, “The new market isn’t as good as the old one, which customers could access so much more easily from Rama 4 Road. Most people don’t even know there is a new market here. I was even in debt for the first two years I moved here. The expenses are too much, and I don’t know how much the rent will go up to—it keeps getting higher every year.”

Back in Dec, 2016, a member of the "I Love Ari! Aree Bangkok" Facebook group posted that the end was near for Ari's stalls: "The khao mun gai stall on Ari has just informed me that all food stalls on Soi Ari have been ordered to move on by Mar 8." The post caused an outpouring of grief, but was followed by slightly better news on Feb 6 that some of the food stalls would, in fact, be moving to an alley between Soi 1 and 2. Now it looks like all changes are off the cards, for the time being. We visited the area and stall-holders told us they're allowed to stay put. "We were going to have to move out by Mar 8," said the auntie who runs the fruit stall at the start of the soi. "But we've since been told it's OK to continue selling around here." The owner of the orange juice stall expanded on the subject: "I heard they [the government officials and police] called off the order for us to move... But who knows when the next order will come."

HUA HIN

Room for More The latest in a spate of new hotel openings in Hua Hin is Ananda Hua Hin Resort & Spa (032898-989, www.anandahuahin.com), which is set to open its doors this Apr 1. Actually located in Cha-am, a 15-minute drive from Hua Hin town center, the property is a mix of some 196 villas and rooms scattered around a pool and along the beachfront. Until May 15 opening rates start from B3,900 for a superior type, rising to B35,900 for a two-bedroom beachfront pool villa. Drinking and dining highlights include jazz bar Blue Biscuit and Italian seafood restaurant Brezza, which spotlights wine from Hua Hin’s Monsoon Valley Vineyard.

Villas by the Sea For a little more privacy on your next beach trip, consider Hua Hin’s Kehad Fa Villas (096-889-8899, www.kehadfa.com), which offers just two villas by the sea. The Elegance Villa (five bedrooms) and The Isolated Villa (seven bedrooms) each cover 1,400 sq meters and come with their own 15-meter pool, dreamy beach pavilion on the sun deck and butler. Exact prices depend on the number of guests, starting from around B27,000 for two people up to B37,800 for six people. Expect those to spike considerably for holidays like Songkran, starting from B68,600 for 10 guests. It’s close to the airport, too—perfect for a quick in-and-out weekend.

SARABURI

Healthy Weekend Combine your next trip to the green expanses of Khao Yai with a health-centric program at Wellness We Care (02-038-5115, www.wellnesswecare.com), a new health center led by Dr. Sant Chaiyodsilp, a heart surgeon and the ex-director at Phayathai Hospital. Located in Saraburi’s Muak Lek district, the center offers a variety of vacation programs like "Good Health By Yourself," a two-day “total lifestyle modification” program. For B9,000, you get crash courses in good nutrition and plant-based cooking through to Tai Chi and hands-only CPR. The on-site Pranaa Kitchen restaurant serves up plant-based wholefoods to the public, too—threeday advanced bookings recommended.

AIRLINES

Head South After rolling out four new routes to India, Thai Smile (www.thaismileair.com) is now heading south with direct flights from Bangkok to Kota Kinabalu in Malaysia’s Sabah state. Starting this Mar 26, the four-hour flight eliminates the usual stopover in Kuala Lumpur or Singapore with prices coming in at a resonable B6,480 per round trip. That’s especially good news for divers looking to head to the clear-water paradise of Sipadan Island.

JAPAN

Tour de Onsen Fancy cycling along the coast of Kyushu, Japan’s largely rural, southernmost island, while stopping at a different traditional ryokan (traditional inn) every night? SpiceRoads (www. spiceroads.com) is now offering the six-day Kyushu Onsen to Onsen tour, a 237km ride from Fukuoka to the Kunisaki Peninsula. Covering about 60km per day over four days of riding, the tour includes stops at natural and spiritual attractions including Usa-jingu, a Shinto shrine that dates back some 1,200 years. The real highlight comes at the end of the day when you can relax after a gruelling ride with a soak at a different onsen, including those of the renowned hot spring area of Beppu on the east coast. Tours take place once a month during Apr-Oct of this year and next. The price of US$2,200 (B77,700) includes bikes, meals and rooms but excludes international/domestic flights and visa fees.

Bangkok’s biggest CrossFit and fitness facility is branching out to a second location. Training Ground, which launched in Phra Khanong in 2014, will open a second facility on Rama 4 Road this Mar 27, taking over a vast warehouse, this time with some 600 sq meters of space (half the size of the Phra Khanong facility). Five-hundred meters will be dedicated to fitness space while the remaining 100 sq meters goes to a lounge and reception area. No word on pricing yet, but all-access membership at the Phra Khanong gym costs B4,500/ month, while open-gym membership starts at B3,000/ month. 3789 Rama 4 Rd., 094-479-6988. Farm Fresh Chiang Mai's popular salad and steak restaurant Ohkajhu has branched out to Siam Square and is already packed. Known for using fresh veggies from its own organic farm, the restaurant highlights salads: design your own or choose from the likes of spicy tuna salad (B165), a photogenic fruit salad served in a melon shell (B240) or a huge bowl of salmon with grilled tofu, greens and grains (B285). They also serve heartily portioned meat dishes like barbecue spare ribs (B315) and pastas (B125-285). To drink, you can opt for coffee, fresh fruit juices or some smoothies. Do expect a queue, though, just like in Chiang Mai. 426/2-4 Siam Square Soi 7, 063-093-8388. BTS Siam

Coffee roaster Coffeas has expanded to a full-time cafe, complete with coffee school. Run by certified Q Grader and SCAA-certified instructor Nisakorn Sinsawat, the cafe showcases specialty Thai coffee through rotating house-roasted beans, mainly from Chiang Rai. Here, she only serves local single origins (from B80 for espresso and B120 for drip coffee) and a few imported beans. At the back of the shop, there’s also a space for coffee classes, ranging from basic brewing (B8,500/1 day) to professional Specialty Coffee Association of America (SCAA)-certified and Q grader (coffee grader) courses (B88,000/6 days). Forget “Thai-inspired” cocktails all about cheap local booze, lime, basil and some chilies—Eat Me’s newest concoctions are on a whole other level. Mixologist Buntanes Direkrittikul uses ingredients such as actual green chili paste, toasted rice, roasted chili and shallots to create flavors so powerful they can be almost too real: the gaeng kaew wan (B320) even comes fully loaded with garlic. One of our favorites would have to be the Laab Moo (a spicy, herbal Isaan dish made with minced pork, B320), which comes topped by a crispy strip of Serrano ham, its rim flecked with a crunchy mix of cilantro, rice and mint flakes. Saep! Drop by on Mar 24 when they officially launch the new drinks. 1/6 Soi Phiphat 2, Convent Rd., 02-238-0931

This Sunday (Mar 26), Sukhumvit Soi 47's Australian restaurant Freebird opens up its backyard for the second edition of its garden party (B1,250 per person). Starting from noon and continuing till 9pm, the laid-back barbecue will feature dishes like grilled chicken, prawns, chicken wings, squid and roast pork belly, all cooked up by chef Dallas Cuddy. What’s more, Australian chef Jess Barnes (Opposite Mess Hall) will be joining the resident chef at the event. Do expect special cocktails as well as beer and wine packages, too. 28 Sukhumvit Soi 47, 02-662-4936

JOKE GAO MOR

This place has a more-than 60-year reputation for serving authentic Teochew-style Chinese food at really friendly prices. The aromatic tom chub chai (soy sauce vegetable soup), for example, is only B30 for small bowl and B60 for the bigger bowl. Other must-try dishes include the bamboo shoot soup (B60/100) and minced pork steamed with salted egg (B20).

Hot soup is the perfect thing to calm your stomach after a heavy night of drinking—especially joke (rice congee). Joke Gao Mor has been in business for 25 years thanks to its unctuous rice porridge and pocket-friendly prices. Every dish ranges from B30-75. For B30 you get just rice and egg, no pork, while for B75 you get three types of egg—normal egg and salted egg and century egg.

From first serving congee 20 years ago, this restaurant has since developed into a sukiyaki specialist where late-night crowds flock to try their bubbling veggie soup doused in homemade suki sauce. For chicken or pork it’s B60 while seafood is B70.

TIP SAMAI PAD THAI PRATU PHEE This is probably the most famous Pad Thai place in Bangkok. Its reputation lies in the charcoal stove, which imparts every serving of stir-fried noodles with a smoky intensity that Khao San’s ubiquitous pad Thai stands can only dream of. Prices start at B60 for regular pad Thai and go up to B300, for which you get king-sized prawn, minced squid meat, crab meat and chopped mango.

PERFECT PAIRING When pairing Thai food with drink, beer is your best bet: it’s cooling, its flavors somehow survive the numbing effect chili has on your tongue, and you can drink more of it than wine. Don’t go for very strong ales or dark beers, though, which can clash with the subtle flavors or aromatics of Thai cuisine. Singha was Thailand’s first beer, and has developed a reputation among food lovers for its premium-quality taste that marries perfectly with the profile of spicy dishes.

WINE

Seeing Red

LATTE AT BRAVE ROASTERS (B110)

We put made-in-Thailand red wines to a blind taste test. By BK Staff VILLAGE FARM

Chateau des Brumes Le Prestige (80% Shiraz, 20% Cabernet Sauvignon) 2013 (B1,900)

Brave Roasters adapts its rich flavor into a latte soft-serve. Turn it into an affogato for B140.

MONSOON VALLEY BK PICK!

They say: “This wine has the complex aroma of wild flowers and layers of forest berry flavors. Rich character of blackberry, violet and subtle spice are slowly and pleasantly released over time.” We say: This is good wine––nice, strong fruity character. Verdict: This is really like no other Thai wine we’ve ever tasted— well-balanced, lacking any acidic kick and with a smoky depth— but at a price. For almost B2,000, this bottle competes with some heavyweight Italian and French stuff. And there’s another big “but”… Thailand’s winemaking community dispute the vineyard owner Viravat Cholvanich’s claims that it’s made with 100-percent Thai grapes. In fact GranMonte even refused to supply their bottle for this test (it’s the only one we bought ourselves) because it would be competing against Village Farm. Our sommelier taster also said he was certain he wasn’t tasting Thai grapes. Nonetheless, Viravat Cholvanich assures us he makes this bottle with nothing but 100-percent Thai grown grapes. Whether you take their word or his (and after some lengthy conversations, we take his), the flavors and intensity in this bottle shone compared to its competition.

GRANMONTE

Heritage Syrah Viognier (95% Shiraz, 5% Viognier) 2013 (B960) They say: “Full bodied with aromatic nose of red berries, cassis, red gummi bears and distinctive black pepper. The palate shows arrays of red berries, dark cherries and lifted floral notes, vanilla and freshly cracked pepper with great acid backbone… smooth with full yet velvety tannins.”

Shiraz 2014 (B1,200)

RUNNER UP!

They say: “Sweet notes of dark plum and cherries, and chocolate aromas supported by subtle spices and toasty oak. Medium body in style with juicy texture complemented by fine grain tannin and an enticing fruit flavor profile.” We say: Very light—sort of like rose. This makes a perfect wine for Thailand because it’s light and just slightly sweet. Verdict: Our second favorite bottle comes from one of the biggest vineyards in the country (and the company responsible for Spy Wine Coolers), Siam Winery. Like most of the wines in this taste test, it’s also made from shiraz grapes, whose reputation for being dark and full-bodied was quite the opposite from the light, summery red flavor profile we picked up.

ISSARA ESTATES KHAO YAI

Shiraz 2012 (B1,350)

CHARCOAL YOGURT AT EMPTY TASTY (STARTING AT B55)

Curling black-toned charcoal flavored yogurt in a cup has to be one of the best ways to wallow in your never-ending ice cream addiction. Ari Soi 1, 086 696 2405

They say: “Driven by the complexities of black fruits, red berries, raisins and tobacco. This wine exhibits hints of pepper, roasted coconuts and complemented with mild wood smoke finish from the barrel segment.” We say: The sweetest out of the lot, this one really didn’t go down well. Our visiting wine pro was most dismissive, calling it overripe and bearing the hallmarks of lazy winemaking and cheap production owing to the jammy, candied flavor. Still, one other taster marked it as their second favorite. Verdict: Issara Estates are not selling this stuff cheaply, and we can’t quite see why. Research into the business shows that it’s actually a real estate project whose key selling point is that it overlooks a vineyard. Tasting this wine, we can’t help but feel it works better as a marketing gimmick than something you should put on your dinner table.

PB VALLEY KHAO YAI

THAI TEA AT CHA TRA MUE (B45)

The recent soft-serve craze began with Cha Tra Mue’s momentous decision to step into the softserve game. Join the hype. Terminal 21 (LG/F) and Don Mueang Airport

Reserve Shiraz 2012 (B790)

We say: It smells very sweet but tastes the complete opposite— there’s a touch too much sourness at the expense of any discernible fruit flavor, but it’s not bad.

They say: “Intense aromas of hay, plum with a hint of smoke. The palate is bold and medium bodied with refreshing natural acidity. Lovely savory licorice comes through as well as some fruits.”

Verdict: You could turn up to a dinner party with this and not be too embarrassed. The second cheapest wine in this test, we’d also take it over the more steeply priced Issara Estate.

We say: The very strong, slightly metallic aftertaste is matched by what feels like a high alcohol content. Much like Issara Estates, the taste is sharp and also quite jammy. Verdict: Khao Yai’s largest vineyard produces some predictably drinkable but non-remarkable plonk. In its defense, this is the cheapest bottle in the whole test, tasting very much like Issara Estates’ wine and for almost B600 less.

All wines were tasted blind at room temperature by BK staff and one professional sommelier.

Sushi Masato HHHH Japanese. 3/22 Sukhumvit 31 Soi 1, 02-040-0015. Open Tue-Sun 5:30-10pm BBBB H

While working at New York’s Jewel Bako, Japan-native Masato Shimizu became the youngest chef in NYC ever to win a Michelin star at just 29. After moving to Bangkok, he opened this omakase (chef’s selections) sushi restaurant in Jan 2016. Serving just 20 diners a night in two sittings (5:30pm and 8:30pm), Sushi Masato incurred three-week waits upon opening—and it’s still no sure thing to snag a seat. Online reservations open up 28 days in advance and you’re advised to plan your meal that far ahead. For B4,000 per person you get roughly 20 courses of sashimi, nigiri (fish atop rice) and other pretty little creations which defy the simplicity of their ingredients (delivered daily from Tsukiji Market, naturally). Hidden just off Sukhumvit Soi 31, this restaurant differentiates itself from mall- or hotel-dwelling competition like Ginza Sushi Ichi (Central Embassy) and Sushi Zo (Plaza Athenee) to summon the feel of a backstreet Tokyo sushi-ya. There, from behind a beautiful L-shaped counter (made from Hinoki wood for that extra Zen touch), the chef and his sidekicks sculpt a meal that’s incredibly refined

Islero HHHH Spanish. Athenee Tower, 63 Wireless Rd., 0 2-1 6 8 - 8 1 0 1 . O p e n d a i l y 1 1 a m -2 p m , 5pm-midnight. BTS Phloen Chit. BBBB. F . Corkage B600

Islero takes on the traditional end of Spanish cuisine and presents it in a contemporary style. This goes for the decor—warm and bistro-referencing yet sophisticated—and the menu, which does hearty classics alongside some El Bulli-worthy tweaks. The connection to the defunct restaurant, for many years considered the world’s best one, is real. Eduard Bosch, a former chef de cuisine there, consulted on Islero’s menu: hence the “spherical olives” (a burst of olive flavor that explodes in your mouth, B80) and idiazobal foam cheese

yet dispels the idea of omakase as an awkward, drawn-out affair. It helps that Masato is warm, conversational and informative—happily breaking out a book mid-meal to educate you on a single piece of fish. In New York , Masato’s tricks for coaxing better texture and taste became the stuff of legend, whether it was shocking snapper in an ice bath or massaging octopus for no less than 20 minutes. In Bangkok, he’s just as meticulous, and he’ll happily explain, for example, why otoro (fatty tuna) aged for two weeks can result in just the right chewiness. Our meal opens with edamame, before moving onto a delicately plated monkfish liver (which lives up to its nickname, “foie gras of the sea”), hotaru-ika (a spring special of smoky, grilled firefly squid on a skewer) and a perfectly round Japanese tomato (grown in Petchabun in a rare nod to local produce) that’s been boiled, peeled and finished with fleur de sel. That sets you up for a dozen or so different nigiri (otoro, unagi, shrimp, baby snapper, though it’s up Masato), where to pick highlights is to do a d i ss e r v i ce. A s eve r, t h e l eve l of showmanship is dazzling, from the precision knifework to the use of hot charcoal (taking the place of blowtorch). We also can’t get enough of the uni sushi, combining the creamier murazaki and stronger bafun varieties of sea urchin, or the spongy, cake-like tamago. For dessert, a yuzu granita serves as palate-cleanser, followed by what resembles a Japanese panna cotta: smooth and milky tofu in black sugar syrup. With food so exquisite and service so friendly, the Sushi Masato experience totally exceeds its price tag.

(B220). The overall tone though is much less esoteric: Iberico ham croquettes (B480), grilled octopus tentacles (B460) served with beans in Castilian stew, baked fish fillet with potatoes and almonds (B680) and the highlight Josper-grilled, Segovian-style, crispyskinned suckling pig (B3,900 for a half pig). Execution is consistently excellent. The shrimp carpaccio (B480) may boggle the mind (it’s not the easiest critter to turn into razor thin slices), but the flavors are bright and clear, the avocado vinaigrette bringing a Mexican touch. The tomato salad (B320) sees a handful of ripe, flavorful varieties diced and plated under a cloud of cumin foam, with an olive juice (yes, juice) dressing to die for. Service, however friendly, leads to way too much waving, cluelessness and unavailable wines (despite a lovely menu). We could live with that if the cheapest “from the land” main weren’t B650, the others B 1, 1 5 0 -1, 3 0 0 . T h o s e p r i ces a l s o contribute to the expectaition that Islero is out to reinvent fine dining in Bangkok. It isn’t. Instead, it is a highly competent bistro with real personality.

OPEN DOOR

Bangkok Bold Kitchen The Old Town chef’s table-only restaurant branches out into a new Thai bistro. The buzz: Opened on Phra Athit Road as a cooking school and chef’s table restaurant in 2015, Bangkok Bold has forged a name for solid Thai offerings thanks to its team of prominent chefs Supanut “Ann” Kanarak, Chortip “Nhoi” Ouypornchaisakul and Piya "Tapooh" Chayapum. Now with this spin-off, you don’t have to gather as a party of at least four people to enjoy the food as they offer an a la carte menu. The decor: The casual dining room carries the original venue’s crumbling, minty walls into a mall setting, complete with rustic Thai touches like threshing baskets and old-school tiffin cases. You don’t get the intimacy of the Old Town shop-house location, but there is a private room earmarked for chef’s table dinners and private, two-person cooking classes.

20

The food: Serving dishes sharing style, the chefs present madefrom-scratch, home-style Thai food without shying away from the occasional twist. At its core, though, remain bold Thai flavors drawn from their families’ recipes. Outstanding creations include a flavorful gaeng tai pla (fish entrail curry, B190) lifted by the different textures of mackerel, shrimp, stink beans, pumpkin and sweet potato, as well as a version of yam nuea (spicy beef salad, B220) made with braised beef shank and young eggplant. The stir-fried Thai mackerel with chili pepper, climbing wattle and pork crackling (B170) is another delicious reflection of a free-form home recipe that, to us, looks like something our mom would do to optimize ingredients from a nam prik pla too (shrimp paste relish, B150). If you're not

there with a group of people to share food, opt for one of the rice or noodle dishes (from B165 for a fermented rice noodles with green curry). Don't miss their coconut cake (B150)—layers of pandan chiffon cake and coconut cream with fresh young coconut meat. The drinks: You’ll find all the Thai favorites, including roselle drink (B50), Thai milk tea (B65), black coffee (B50) and nom yen (B50)—“Hales Blue Boy” syrup with sweet condensed milk. Why you should care: This is home cuisine at its best, with creative combinations and recipes in the hands of some of Thai food's masters. Le Cochon Blanc

TABLE TALK

NEW AND NOTED

Big Smoke Taking over what used to be modern Thai restaurant Baa Ga Din, new barbecue specialist Le Cochon Blanc (26 Sukhumvit Soi 31, 02-662-3814) replaces rustic Thai with a flamboyant mix of black paint, beautiful flamingo wallpaper, chandeliers and stylish collectibles. This latest endeavor from restaurateur Fred Meyer (Issaya, Pizza Massilia and Kom-Ba-Wa) sees chef Chandler Schultz smoking pork ribs (B580-890), steaks (from B350/100g) and even lobsters (B1,750) over a massive grill pit. Don't miss the potato side dishes, including the delicious thick-cut fries (B180) that are cooked in dry-aged beef fat (a new contender for the best in town).

New Heights Asoke’s Continent hotel has given its rooftop a makeover in the form of Bangkok Heightz (The Continent Hotel, 413 Sukhumvit Rd., 02-686-7000. BTS Asok), a 39-story-high under-cover lounge bar with a local flavor. Their aim to bring Thai “street food” up to a rooftop bar results in fancified versions of Thai clas-

sics like lamb shank in massaman curry (B690) and deep-fried lobster served with rich and creamy panang sauce (B1,400). Signature cocktails also play around with a lot of local flavors. In the Cha Yen (B320), you get three kinds of Thai whiskey—Sangsom, Mekhong and Regency—along with Thai tea, sweet cream, Bailey’s and milk.
