That China’s cheese tea phenomenon is here Move over bubble tea. New at Siam Discovery, Guangzhouborn chain Heekcaa is known for topping its tea-based drinks with frothy whipped cream cheese. Yep, cheese. Odd as that sounds, we’re partial to their take on Thai iced tea (B120), made with tea leaves grown in Southern Thailand and finished off with a pinch of foy thong.

That Japan’s discount megastore Don Quijote is coming to Bangkok The quirky tax-free chain better known as Donki is setting up shop at the start of Ekkamai Soi 5, but don’t get too excited just yet—it’s won’t open till late 2018. With more than 300 branches around Japan, the store is known for its huge range of products, from basic electronics to clothing and all sorts of very-Japanese accessories. Here’s hoping our store will stay open 24 hours like the ones in Asakusa and Roppongi. That Virgin Active is set to open in Chiang Mai According to the latest job ads on the gym chain’s website, that is. So now there are no excuses for skipping your workout on that next “chill-chill” cafe-gallery hopping trip up North. That Australian psych-rockers Pond are heading our way With Phoenix’s gig by now a distant memory, here’s more good indie news. Viji Corp is bringing over the Aussie four-piece to perform at Nakarin Space on Nov 21, supported by experimental producer Koichi Shimizu. With a sound that mixes the heavy riffage and camp touches of ‘70s classic rock with strangely introspective lyrics, the band’s also known for sharing members with Tame Impala. Tickets are B2,000 on Thaiticketmajor.com. That Charoenkrung Soi 28 is ready for take-off The highlight of last weekend’s Creative District Gallery Hopping Night was not a new gallery, but a sneak peek at a new izakaya. Jua comes from the creative powers behind Little Market and serves sake and yakitori from a charmingly minimal shophouse deep inside residential Charoenkrung. It’s got company, too. By the time you read this, Tropic City, a rum bar, should also have thrown open its doors on the same soi.

HOT OR NOT
Hot: Cheese drinks
Not: Chicken drinks
Are abs like the guys from Thunder Down Under (see page 19) worth drinking blended chicken breast milkshakes for? We don’t think so. That’s why we’ll be steering well clear of Phahonyothin’s Muscle-Meal Chicken Shake, and spending our money at the new Heekca cafe from China. Here, the drinks don’t come packed with 38 grams of protein, but they do have a topping of whipped cream cheese.

INTERVIEW Pravit Rojanaphruk, 49, is a senior staff writer at Khaosod English who for over 20 years worked as The Nation’s star reporter. On Aug 1, he received a phone call from the Tech Crime Suppression Police, telling him that they were pressing charges against him for two Facebook posts made in 2015. He now faces 14 years in jail for sedition. Known for his brave journalism and critique of the current military regime, Pravit has twice been put in “attitude adjustment” camp, once in 2014 and again in 2015. Here, he discusses those experiences and the state of freedom of expression in Thailand.
Not: Unicorn cafes
Mermaid Castle has been offering rainbow food and fishtail onesies out on Rangsit for some time now, but since we never go that far, it only came to our attention after arriving in Siam Square last month. We reckon that gives Bangkokians about six more weeks of mermaid photo opps before Insider makes a video and the place gets taken over by backpackers.
Being a journalist wasn’t really on my mind when I was young. My father was a diplomat and would have to read all these magazines, so I just picked them up and read. My first real exposure to covering politics came during Black May 1992 [when General Suchinda Kraprayoon’s crackdown on protesters resulted in 52 official deaths]. For so many years before that I was just doing social issues rather than hardcore politics.

Hot: MRT Purple Line Not: Bus routes As a BK reader, we know you never take the bus. But if you did, you would have been outraged last week at the havoc caused by Bangkok’s new bus routes. In other news about transport that goes beyond Sathorn and Sukhumvit, the Purple Line has finally fixed the 1.2 kilometer gap in its service. Excellent news for the people who till now have had to make a 30-minute transfer.
THAT’S WHAT SHE SAID
On the day of the coup [May 22, 2014], The International New York Times happened to quote my column at The Nation criticizing martial law. The following day, I gave a series of interviews regarding it. The international audience wanted to know about Prayuth. This is how I began to gain more attention from the military. Two days after the coup, every television and radio station read out my name alone, saying I was to report to the NCPO at the Royal Army Conference Room. I left my phone with an official at the United Nations [and turned myself in]. During my first attitude adjustment session, I was taken care of quite well, actually, besides the fact that I didn’t have the freedom to leave the camp. They would ask you what you thought of the coup and if you gave them the right answer they would let you go after three days.
I kept on giving them the same answer: that I disagreed with the coup and that it would create more mess for Thailand. They kept me there for seven full days, the maximum allowed under law. Without tweeting for six days, I had gained 6,000 new followers. It became clear that they were very worried about my use of social media. My second session of attitude adjustment [Sep 2015] was a nasty experience. They were polite but there was definitely a sense of hostility. I was taken blindfolded in the middle of the night. I didn’t know if I would survive, my life was at their mercy. No one could have known that the van belonged to the military. I was kept in a 4x4 meter room with no witness to the outside world. I begged them to take me out for fresh air but they wouldn’t do that without me being blindfolded. They didn’t tell me what would happen to me and I was kept there for two nights. This is a society unable to deal with different opinions. We have to learn to sort political disagreement out in a peaceful way that it doesn’t resort to tearing down the constitution or calling in the military.
sion by expressing yourself and taking a stand, and being willing to pay a price for it. I now have to be more careful. There is a gray area. Because nobody knows where the line is, I just have to be a little more conscious when posting something. Chances are you will end up censoring yourself more and more, and that’s the chilling effect. It would be a cowardly act for me to crawl to the military regime. I’ve fought for three years, and many people have given up—“let’s just sit and wait for an election”—but I cannot let myself do that. I cannot allow them to normalize this kind of repression. Journalists cannot defend press freedom if we do not go out of our way to defend freedom of expression to the general public. There is a lot of self-censorship going on, both induced by the military regime as well as initiated by the press themselves, and the public is not aware of this. The struggle will continue, but the military regime will not allow that. They believe they’ve handled the press well enough, but the last frontier that they can’t conquer is social media. SAMUI
Down to Earth Celes Beachfront Resort Samui (www.celesresort.com) draws on its tropical surroundings to create an elegant yet down-to-earth vibe. The hotel sits just 10 minutes from the airport and five minutes from Fisherman’s Village—a former French outpost lined with beautiful old wooden Chinese shop-houses. The design at Celes complements the beautiful natural setting with lightly toned wooden buildings, high ceilings, and white walls and furniture. Deluxe rooms start at a very reasonable B5,500/night. Its beachfront villas, with private sun loungers and an outdoor pool, run about B18,500/night.
Greedy Brits Perched beside Lamai Beach, The Greedy Pig (www.fb.com/greedypigsamui) is all about British classics, like Scotch eggs (B80), baked camembert (B540) and grilled Lincolnshire sausage (B320), which it pairs with a nice selection of draft beers. It’s a gastropub, which means simple, fuss-free food and a relaxed atmosphere. To top things off, there are special events almost every day, like live music and sets from popular local DJs. Swing by on Sunday to catch its weekly roast dinner, packed with English favorites like Yorkshire pudding, pigs in a blanket (small sausages wrapped in streaky bacon) and roasted potatoes, starting at B320.
PATTAYA
Slick Brunch Dripoly (www.fb.com/dripoly) sits in the city's "health lifestyle" community mall, The Commons (hey, that sounds familiar), where it serves up superfood salads, various pastries, cold-pressed juices and drip and espresso coffee (B80 Dripoly for a latte) made from locally sourced beans. The monochrome, polygon-shaped space comes adorned with hanging plants and welcomes lots of natural light, setting the scene for a lazy lunches featuring dishes like the sixhour-roasted pulled pork wrap, waffle with strawberry and banana, or Guss Damn Good ice cream. If you're not an early riser, good news is, they serve brunch till 3pm. Susanne Nilsson

COMPLEX
Warehouse Welcome After months of anticipation, Charoenkrung’s ambitious art and design complex, Warehouse 30, is now finally open. Taking the same approach as he did with the Jam Factory, starchitect Duangrit Bunnag has teamed up with ex-editor of Elle Decor Rungsima Kasikranund to transform a 4,000-sq-meter space of abandoned World War II-era warehouses into a web of stores, restaurants, art spaces and other creative endeavors. Shop for minimalist everydaywear from Duangrit’s brand Lonely Two-Legged Creature, pick up a bouquet of flowers from Wallflower or browse the gorgeous handmade furniture from P.Tendercool. An indoor market zone showcases wares from local designers, plus vintage WWII military products from Horse Unit. The Doc Club Theater promises open-air daily film screenings at 5pm, while exhibition space-slashwork zone One Big House will fully open soon. Blurring the lines of masculinity and femininity through a “loosened-up” take on British Savile Row tailoring, the collection also makes use of playful details like fringes, colorful plaids, patchwork and cartoon prints. Bangkok’s latest co-working space wants you to sleep on the job. That’s right, aside from office desks and Japanese-style floor seating, there are also bunk bedstyle nooks for a little extra privacy. Split across two levels, the space benefits from exposed ceilings and full-length windows that let in gentle, dappled light owing to the outside trees as tall as the building. For a quick exit, there’s even a slide between the two floors. Internet—and pillows—are included in the package, starting at B150/four hours and B3,500/month. NapLab, Chula Soi 6, 081-734-5147. Building a Better Future Learn the insand-outs of sustainable business at the MICE Sustainability Forum 2017 Taking place Sep 5, 2017 inside the Plaza Athenee Bangkok’s Crystal Hall, the MICE Sustainability Forum 2017 aims to provide guidance on how business event operators can adopt sustainable practices in line with the UN's 17 Sustainable Development Goals. After the success of the previous y e a r ’s f o r u m , w i t h o v e r 3 0 0 attendants from more than 100 different organizations, this year’s MICE Sustainability Forum returns with four key lessons: sustainability marketing, driving sustainability demand, integrating sustainability into events and navigating the UN’s sustainability goals. There will also be a range of additional discussions exploring topics such as cautious planning, smart design, reusable materials, waste management and food waste prevention.
Sustainability Marketing This session aim to educate entrepreneurs about developing effective communication skills to help encourage activities and ideas involving sustainable practices. Key areas of focus will be marketing and branding.
Driving Sustainability Demand Participants will hear from demand drivers of sustainable products and services. There will be a series of talks from experienced event organizers, entrepreneurs and members of government offering insider information on how to make these social and ecofriendly services attractive.
Integrating Sustainability into Your Events This is an opportunity to exchange ideas with other internationally recognized entrepreneurs—people with renowned reputations for providing sustainable products and services. This dialog is intended to help participants plan future strategies for business growth, bounce ideas off one another and gain valuable expert opinions in an engaging setting.
Navigating the SDGs Last year, the MICE Sustainability Forum introduced the concepts and
principles behind the UN’s Sustainable Development Goals. This go around, the conference is offering a series of sessions explaining how these principles can be applied to real-world business practices. Learn how to take your entrepreneurial ideas and build them around a sustainable framework. This year’s forum is not just for Thai MICE members or business people looking to develop ideas. Anyone who is interested in sustainability is encouraged to attend—particularly those interested in sustainable economics, both on a micro and macro level.
For more information: http://www.micecapabilities.com
SPECIAL HIGHLIGHT: Among the many special highlights at this year’s forum is the opportunity to witness what a 90-percent-wasteless and zero-carbon event looks like. These events are achieved through five key initiatives: cautious planning, smart design, reusable materials, waste management and food waste prevention. Attendees at this year’s forum will not only be able to see these principles in action, but also learn how to successfully implement them from leading industry experts.

Michel Roux founded one of the top restaurants in Great Britain. But don’t hold that against him. In the ‘70s, the French culinary legend was responsible for revolutionizing what fine dining meant on the famously culinary-challenged isle. Today, his restaurant, The Waterside Inn, remains a three-Michelin-star gastronomic temple. Book your seat at Le Normandie this Sep 25-30 when he presents a masterclass in old-school French fine dining. A five-course lunch is B4,900 and seven-course dinner is B8,900, featuring dishes like roasted fillet of turbot with a matignon of vegetable and red prawn, and chicken jus flavored with shiitake mushrooms. Other must-reserve dinners come from Cristina Bowerman from Glass Hostaria (Rome, Italy), where he serves high-flying modernist cooking techniques in the rustic Trastavere neighborhood, and Christian and Manue Costardi, aka the Costardi Brothers (Vercelli, Italy), who bring hipster charm to produce-driven tasting menus. OPEN DOOR
Yoong Khao Hom
A Southern food stalwart brings its family recipes to Bangkok from Samui.
The buzz: Koh Samui’s two-decade-old Southern dining institution, Khao Hom, has arrived at I’m Park community mall in Sam Yan. The guy behind the new branch is Teerapat “Bond” Lertsiriprapa (Kouen Sushi, Sushi Niwa), who promises the same tried and trusted family recipes as well as produce like kapi (shrimp paste) and curry paste flown in straight from the island. The decor: Colorful batik-patterned pillows, woven baskets and vintage enamel plates make it very clear you’re dining in a Southern Thai restaurant. Clean and uncluttered, the space feels both homey and yet special enough in a dining-in-amall kind of way.
16
The food: The original restaurant on Samui talks up owner Malai "Lek" Somwong’s house-made kapi and prik gaeng (spicy chili paste with herbs), which appear in many sharing dishes here such as the moo pad kapi (B180), stir-fried kurobuta pork with shrimp paste and a heady mix of sliced shallots, lime and bird’s eye chilies. Other standbys like goong pad kapi sataw (stir-fried prawns with bitter bean, B180), khua kling (minced pork fried in spicy paste with turmeric, B150) and nam prik goong sod (chili paste with kapi and fresh assorted vegetables, B200) reveal slightly sweeter tastes than you might expect in Southern Thai food. Do leave room for rarer picks like the wai kua (octopus cooked in coconut milk, B180) and yum hoi jor (spicy salad with local clams,
B180), too. The likes of kanom jeen namyaa puu (rice vermicelli with spicy crab, B250) and kao pah pla kem (fried rice with salted fish, B120) are only available for lunch (11am-5pm). The drinks: To cool down, there are refreshing, herby drinks like lime butterfly pea juice, bael fruit juice and lemongrass, all at the same price of B80. Why we’d come back: The flavors here aren’t mild as such, but they don’t pack quite the same punch as you find at restaurants dedicated to Phuket and Surat Thani cuisines. Add in the comforting setting and Yoong Khao Hom is a very solid gateway restaurant for Southern Thai food. Wanvida Jiralertpaiboon G/F, I'm Park, Chula Soi 9, 063-465-6565. Open daily 11am-10:30pm

NEW AND NOTED
The Spice is Right Silom's no-frills Kaprow Khun Phor (Silom Soi 20, 065-5099693) serves more varieties of pad kaprao than you could dream of. In fact, the menu does nothing but spicy basil stir-fries (15 types in all), though they shake things up with premium ingredients, whether it's minced kurobuta pork in the kao kaprao moo sub (B79) or Company B’s dry-aged Australian beef in the kao kaprao nuea (B129). Fresh seafood options include shellfish (B179), banana shrimp (B179) and Suratthani oysters (B159). As for the recipe, they say they use only young holy basil leaves and a mix of Thai bird's eye and prik jinda daeng chilies for an authentically fiery kaprao. Top off your dish with an egg (B10) done to your liking. Delivery is free within a 1km radius or B30 for 1-3km, too.
Home Coming Ari's 15-year-old Thai comfort food favorite, Mae Yui (85 Phahon Yothin Soi 5 [Soi Ratchakru], 02-279-9849), has relocated to a more spacious and grown-up location in the same neighbor-

Audrey Cafe Glamour hood. The new spot may lack the greenery and homey charm of the old Aree Samphan dwelling, but it remains warm and welcoming thanks to an abundance of natural light and clean, crisp decor. The menu of classic family recipes remains largely intact, with top picks including kai kluuk pla tuu (fried rice with mackerel, B135), sen mee pad kapi (stir-fried rice noodles with shrimp chili paste, B135), goong wasabi (raw shrimps submerged in wasabi dipping sauce, B220), salted egg chili paste with vegetables (B150), and green curry with beef (B185).
Super Duper Market Bangkok just got a new gourmet grocer. Rama 4’s teeming market-slash-restaurant El Mercado has transformed a little room at its front into The Grocery (490 Soi Phai Singto, 02-258-1385). Here, you’ll find ready-to-go selections of cheese and cold cuts (from B445 for 1 kg of cheddar cheese) alongside a mix of breads from Amantee, croissants (just B17) and desserts (grab a peach tart for B150) made in-house. They also have an oil and vinegar refill station. Wanvida Jiralertpaiboon
5/F, Central Embassy, Phloen Chit Rd., 02-160-5876. Open daily 11am-10pm This cafe and bistro transforms from a daytime tea and cakes place to a proper dinner bistro at night. The decor feels like a zany English tearoom, with wrought-iron light fixtures, white furniture and a sloping ceiling overhead. Western. G/F, 39 Boulevard, Sukhumvit Soi39 092-664-6777. Open daily 11:30am-2:30pm; Sun-Thu 6-10:30pm; Fri-Sat 6-11pm. BBBBBBB. Corkage B500
Since opening in mid-2016, Cocotte found its niche catering to Sukhumvit’s young-and-wealthy crowd. Porsches and BMWs line its parking lot, and you’ll spot fancy watches and designer handbags in the dining room. It’s no surprise that, despite the place recently upping its prices, securing a table can be hard. Inside, farmhouse knickknacks, large wooden tables made of tree trunks, Philippe Starck stools and Chesterfield couches make for an eclectic setting. There’s a large open kitchen at the back , where you can spot head chef Jeriko Van Der Wolf fixing up heaping portions of meat, like the 1.4kg Australian wagyu tomahawk (B3,860) or Barbarie duck (B3,290). There’s also a market-esque deli counter to order custom cheese and charcuterie platters (B490-1,090) made from quality European produce. If you don’t book, you might end up waiting at the bar, which can be less-than comfortable thanks to the orange luminous lights
Wicked Snow specializes in bingsu, Korea’s softest ground snowflakes, in two flavors—milk and chocolate—you can enjoy all year long. Aside from the original red bean, soybean and green tea flavors, you can top your bingsu with mango, berry and choco. And don’t forget our teok-toast with three kinds of delicious toppings. Let’s check in our Wicked Snow-Korean Dessert Café at I’m Park and Baan Rachakru.

American. 1/F, The Commons, Thonglor Soi 17, 02-185-2472. Open Mon-Fri 11am-midnight; Sat-Sun 10am-midnight. BB-BBB F
With Stax, the creative forces behind Brew Beer & Ciders bar and Daniel Thaiger food truck team up to give The Commons mall the burger specialist it was previously missing. Taking over the glass-fronted shop that was once Jona Waffle, the restaurant gets a fun, slightly fratty feel thanks to an eye-popping 7/6/2560 BE 11:22 AM mural of what looks like a burger-ified Where’s Wally? scene and a rigged-up Famicom console that lets you play games like Super Mario or Contra while you eat and drink. The onus here is on the kind of straight-up, flat-patty burgers you’d find at old-school American fast-food diners. The beef options let you choose from two to four patties, which come bursting with juicy Australian wagyu goodness on a bun that tastes sweet, and is not too dense but not too light in texture. It makes for a winning
combo in the no-frills Classic Stax burger (from B260), packed with oozing cheese and zesty pickles, and the chilli cheese burger (B295/2 patties), in which chili con carne adds a pungent kick. This is evidently a formula you can rely on, even if the Hot Stax burger’s (B295) nduja (spicy salami spread) and jalapenos don’t offer quite the fieriness the name suggests. We must give a special mention to the fries, too, which are extra-crisp and golden but perfectly soft in the center. Away from the burgers, there is room for improvement. While we love the buffalo wings’ (B180) heavy coating of cayenne sauce, we could do without the pond of oil they sit in. The vanilla shake (B160), which we thought would really elevate the meal, turns out to be one-dimensional sweetness without any of the creaminess. Worse are the waffles. Forget Jona’s yeast-raised, crisp yet fluffy creations; the new plain waffle (B200) in comparison comes out thin and sad (they use the same batter, but a different, faster machine), and just tastes altogether cheaper. None of this detracts from the burgers, which are excellent and the real reason to visit here, or the attentive staff, including a manager who knows his stuff when it comes to the sourcing of ingredients.

protruding from the bar wall. But it’s a good moment to try one of the restaurant’s signature cocktails (from B340), like the slightly bitter and fruity Chalong Bay sour (B360), or down a few of the sweet and satisfying crispy fried duck patties (B280)— both good choices. Chef Van Der Wolf’s signature dishes showcase his more creative side. The tartare “au couteau” (B690) has a flavorsome balance of tender Angus beef, salty capers and pickled onions, but comes in a portion that won’t have you holding your stomach after. Same with the Crispy Pig 2.0 (B680), which is sweet and juicy, but unfortunately isn’t actually very crispy and comes swimming in way too much potato foam for our liking. Cocotte’s menu gives the occasional nod to ingredients from local suppliers like Sloane’s Butcher Shop and the Royal Projects in Chiang Mai. But we wish they were put to better use in the beetroot salad (B360), which is drenched in too much walnut dressing and has overbearing stabs of pickled sourness. The desserts make up for it, though. Don’t leave without trying the sticky toffee cookie (B320), which is soft, creamy and delicious thanks to a generous dollop of vanilla ice cream and salted butter caramel, or the lovely sweet-and-sour apple and yuzu tart (B340). We can’t say that Cocotte has much soul to it, but its casual vibe, comforting food and attentive service make for good gatherings with friends right after payday.
