INTERVIEW It’s official: there are no more fakes at MBK The impossible has happened: you can no longer find fake designer goods at MBK— almost. For some time now, we’d been hearing complaints from tourist friends saying that they couldn’t find fake watches and designer bags at MBK, so went down to the home of cheap knock-off gear to see if it was true. After an hour scouring the familiar, strip-lit hallways on the G/F, 3/F and 6/F—always the best floors for an affordable Gucci—the only outright fake we came across was one B390 Supreme hoodie (pictured).

“There are no more copied goods in MBK,” one store manager (name withheld) at a Thai designer brand told us. “There are police officers walking around every day, sometimes even sitting around and waiting for the shops to take out their fake products.” The staff in another store specializing in leather goods confirmed this. “The police officers have been

checking almost every day for a little while now. You won’t be able to find any of the fake designer bags anymore,” she said. Though we couldn’t find any direct designer bag copies, we spotted a few designer bag-look-a-likes. Some followed the look of signature Hermes bags, while another, designed to look like Gucci, carried the name “Gocci.” “You will still see those kind of products around, as long as they don’t have the actual brand put on the product, it’s fine,” said the Thai brand store manager.

MBK has long been the epicenter of Bangkok’s counterfeit culture. Despite intellectual property laws in Thailand that stipulate up to four years in prison and a B400,000 fine for selling fake goods, a vast number of vendors at MBK have always openly sold products directly copying the look of big international brands. The species is quite rare and expensive, at especially this time of year, and is lauded for its delicate texture and flavor—it’s also a rich source of vitamins A through E and has a low fat-to-protein ratio. Along with this arrival, the company's corporate chef Pepe Lopez, who has experience working at Michelinstar restaurants in his native Barcelona, is preparing the rare crustacean three different ways—sashimi plates, classic lobster thermidor and char-grilled—is available at The Dock. Found living on the rocky ground across most of the North Atlantic coast in the Channel Islands. They are a deep blue color when found hiding under rocks on the sea floor and can live to be 80-100 years old. Fishermen catch the lobsters using 12-meter lobster pots (curved wooden cages left at the bottom of the sea floor). This time of year, between Sep and Dec when the water in the North Atlantic coast becomes colder, the lobsters are much more difficult to find—but their flavors are at its best during this time of year—but as a direct importer, we are able to keep the price to a minimum at B2,590 (with free cooking). When buying fresh from the counter, judge the quality and freshness of the lobster by the tail folds under its thorax (the space between its neck and tail) after it has been straightened. If they are thick and hard, it’s fresh— and the heavier the lobster the better.

Park Life As the temperature drops, grab the chance to check out these new green spaces blooming across the city. By Kasidit Srivilai

PTT Forest Station

The Forest Station is a natural green space unnaturally conceived. It’s 12 rai of wasteland off Sukhaphiban 2 Rd. have been rehabilitated, a human corrective to the man-made problem of environmental degradation. This is especially significant given that the patron of Forest Station is PTT, Thailand’s state-owned oil and gas behemoth. PTT commissioned Japanese botanist and plant ecologist Akira Miyawaki to return the land to Bangkok's original lushy forested state. To this end, Miyawaki brought in 270 varieties of plants native to the ecosystem such as teak, Siamese rosewood and ormosia. The result is a self-sustaining, flourishing and dense jungle—a far cry from the picnic-ready lawns of Lumphini Park. The main attraction is a floating wooden walkway that snakes through the property and offers a canopy view of the beautiful forest.

Downtown’s little-known secret is now out: the breezy, treelined lanes of Thailand’s oldest university are open to the public. Stroll through the 595-rai campus that’s boxed between Henri Dunant and Phayathai Roads, read in the shade of a hundredyear-old rain tree (also the university’s symbol) or walk the large lawn in front of the Faculty of Architecture. During March and April, the blossoming bauhinias color the campus pink, an Instagram-worthy phenomenon in itself, but wait for the flowers to drop and you’ll find stretches of walkway briefly carpeted in petals. Architecture enthusiasts will love the hundred-year-old Thai buildings, registered by the Department of Fine Arts as national assets. All the walking should whet your appetite, so head toward the university’s canteen, housed in the Faculty of Arts, where you’ll find decently portioned and delicious food-court fare under B40, such as fried chicken with sticky rice or a bowl of noodles. The iced lattes at True Coffee are also student prices (B70-80 compared to the usual B100+). As a bonus, the university also owns the nearby Park at Siam in the heart of Siam Square. The fun-sized (i.e. miniature) park’s perfect for a brief back-to-nature break if you’ve spent the last hour elbowing out of the crowds thronging Paragon. It has a beautiful, hundred-year-old banyan tree, and beside the gate is a cute greenhouse occupied by Amazon Cafe, should you need a caffeine boost to go with your park-sit. Arrive at the cafe early on weekends or you’ll likely find yourself boxed out by industrious students wielding hefty textbooks.

CU Centenary Park Chulalongkorn University’s CU Centenary Park officially opened in March under the auspices of HRH Princess Maha Chakri Sirindhorn. The 30-rai split-story green space celebrates the university’s 100-year anniversary, and is the centerpiece for a huge redevelopment of the 290-rai Samyan neighborhood, stretching from National Stadium to Rama IV Road, which aims to create Bangkok’s very own mini Silicon Valley—a “smart city” home to innovation and startup businesses. In the details, the park has a specially designed wetland with a rain garden, big pond and underground water drainage system. Also, there’s a green bike lane flanked by tropical trees on Chula Soi 5 that links two thoroughfares—Rama 1 Rd. and Rama 4 Rd. Bantad Thong Rd. MRT Sam Yan

cover story Kasetsart University A 15-minute taxi ride from BTS Mo Chit will land you at one of Bangkok’s largest green spaces, Kasetsart University. Originally founded in 1943 to promote the study of agriculture and natural resources in Thailand, Kasetsart University has held true to its nature-loving mission by cultivating a dense and lush landscape that’s open to outsiders. The 846-rai campus stretches from Vibhavadi-Rangsit Rd. to Ngam Womgwan Rd., and also has a recreational bike lane and a beautiful pond. In the spirit of the university’s founding mission, new students are welcomed with an annual, nonsi tree planting ceremony. Vibhavadi-Rangsit Rd. BTS Mo Chit.

Suan Pa Benjakitti (Benjakitti Forest Park)

Phumirak Park Nonthaburi Not far from the Phra Nangklao Bridge station of the MRT’s Purple Line is this large, airy park. Funded by the Thai Treasury Department and PTT, it was one of five developments planned 19 years ago in celebration of the sixtieth anniversary of the late King Bhumibol’s reign. The park covers 10 rai on the west bank of the Chao Phraya River and houses the Chalerm Phrakiat Worraviharn Temple, an iconic white pagoda built during the reign of King Rama III. Keep an eye out for the ostentatious, roving peacocks, the pets of the temple’s resident monks. For a more scenic, hour-long journey, take a northbound express Chao Phraya boat from Saphan Taksin pier to Nonthaburi Pibul 3. The picturesque green space and lake next to Queen Sirikit Convention Center welcomes scores of runners, bikers and picnicers daily. But unknown to many is the second, huge park secreted away in the back. Dubbed Suan Pa Benjakitti (Benjakitti Forest Park), this extension of the original park has been unofficially open since August 2016. Visitors can access the park by walking through the carpark of Benjakitti Park and through Gate 2, where you'll find a metal fence guarding another massive (but empty) car park. Keep walking and you'll find a huge sign marking the entrance of Suan Pa Benjakitti. Much as its name suggests, the 61-rai space is home to clusters of trees organized in blocks to create small forests. Around these blocks, a concrete path provides space for runners and bikers. There is also a space dedicated to representative trees from every city in Thailand, with informative signage about their origin and importance. The vast area, owned by the Thailand Tobacco Monopoly, totals 450 rai and had been earmarked to become a public park since the company agreed to move its headquarters to Rojana Industrial Park in Ayutthaya back in 1991. In 1992, 130 rai of the land (though now mostly water) was turned into the current Benjakitti Park. The introduction of the 61-rai Benjakitti Forest Park is the beginning of a threephase plan to further transform the remaining land. Phase 2 will see the addition of another 170 rai of greenery, and Phase 3 a further 89 rai anicipated to open by 2020. Ratchadapisek Rd. MRT Queen Sirikit Convention Center

The route is most scenic at dusk.

Jek Pea Occupying the ground floor of an old wood building, this 70-year-old cafe brews coffee (B25) the traditional Thai way—in a tea filter. No-name Somtam Nothing says lunchtime like somtam, and nothing screams somtam like this no-name spot on Hua Hin Soi 101. Tucked away in Seenspace seaside mall, the restaurant now specializes in seasonal produce plucked fresh from local gardens, and in food that manages to be both tasty and nutritious. To this end, they’re employing punchy herbs, homemade chili pastes in their curries and mushroom sauce in place of the MSG injection that is oyster sauce. Try the signature mhee gati (rice noodles with coconut curry, B195), or the sweet and tangy shellfish mixed with fruit salad (B195)—a twist on a traditional Hua Hin dish that uses only papaya. The restaurant’s half-mint, half-black painted walls, and large, airy windows give the space a comforting feel.

ment the ISO 20121 business framework standard for MICE operators.

Rather than a checklist of things organizations need to do, ISO 20121 is more of a guide to developing the management systems required for certification.

ISO 20121 is all about clarifying the management processes needed to achieve certification in the events and exhibitions industry. This means that it is the management system, not the event itself, which receives the certification.

Very few event companies will have these practices in place already, so most will need to change their internal management systems. The official ISO 20121 organization states that most companies are around 70 percent compliant with standard requirements.

There are no guidelines for exactly what sustainability issues to manage or what performance targets to reach. Instead, organizations need transparent practices that accurately identify the needs in their specific industry.

ISO 20121 is a complex document, and is best understood with the help of various ISO 20121 resources and guides available online.

Don’t be intimidated by the unmarked door (for bearings, look for the neighboring Hanakaruta); within you’ll find a beautiful bar showcasing the best of Bacchus Global. You can see the vestige of the bar’s previous life in the dramatic lighting and parade of labels. The walls are adorned with bold Japanese “art,” which on second glance reveals itself to be alcohol labels. Salon du Japonisant has forgone barstools for cushioned, wicker armchairs (they work wonders on your back) that complement the flowing, natural wood bar. Take a trip through a stone corridor reminiscent of an old castle to find bathrooms equipped with a Japanese novelty, the automatic toilet. Head upstairs for more private seating or a smoke break. The drinks: The classics with a twist. And if that gives you pause, think classics made with Japanese precision and delicacy by the head (indeed, only) bartender, Kei Sawada. The gin and tonic (B380) uses Ki No Bi Kyoto Dry Gin (combined in distillation with botanicals such as matcha and yuzu), a drop of elderflower syrup, Fever Tree elderflower tonic, soda water and

an olfactory bouquet of six herbs as the garnish. Kei begins his G&Ts with a “Japanese style of cooling the glass”—essentially, ice and water first and a quick stir before any of the heavy-duty stuff is added. Next, try the Old Fashioned (B380), made with Suntory Chita, Kuro Mitsu (Japanese brown sugar syrup), homemade green tea bitters and a garnish of apple, orange, grape, rose and a spear of cinnamon. The Japanese Mojito is a great way to wash it all down. In place of rum, Kei uses shochu infused with mint and Japanese brown sugar, sake infused with orange peel and thyme, Calvados (apple rum) syrup, and a crown of mint leaves. Salon du Japonisant is also one of the few Bangkok establishments with a fancy (and secret) wine bottle-tapping machine, which here means high-end Japanese wines are available by the glass. Try the Rubaiyat Koshu Lur Lie 2014 (B290/glass; B1,600/ bottle) for its fresh, crisp flavor. The crowd: Overworked professionals uncoiling with a quiet drink to a soft jazz accompaniment. Why we’d come back: Classic cocktails done right. Plus, the bartender will follow your night’s drinking with a refreshing glass of cold-dripped Earl Grey with crushed ice, topped with orange peel. Hair of the Dog’s aptly-named Liquid Lobotomy IPA ties in nicely with the bar’s spooky, asylum theme and flavor-wise is as bold and adventurous as the decor. The dark, amber-colored IPA has just enough fruity, hoppy sweetness to balance its bitterness. A small 330ml glass costs B250, but at 7.7% ABV you won’t need more than a couple to get you going. Available exclusively at both Hair of the Dog branches (Phloen Chit, 02-650-7589; Phrom Phong, 02-030-2538).

Phuket-made Chalong Bay rum’s launch of two new flavors—lime and kaffir lime—means mojitos just got even more delicious. The kaffir lime-infused alcohol won bronze at the International Wine and Spirits Competition, thanks to its organic, Thai ingredients. Expect bottles to crop up behind the bar at various Bangkok drinking holes, as well as restaurants such as Crying Thaiger. It should also hit the supermarket shelves by the end of month, priced at around B850.

The local craft brewery has two new beers: King of Coins Double IPA and Yaowarat Pale Ale. At a whopping 8.5% ABV, King of Coins hides its strength under a medium body and lightly bitter taste. For the Yaowarat Pale Ale, Golden Coins wants to create a pale ale that hits drinkers hard with bitterness and a full body—the answer, they reckon, to pairing Thai-Chinese food with craft beer. However, there are a few hidden gems. One of my favorites is El Tapeo, with its homely and cozy decoration. Staff are very helpful and sweet. I like especially going there for lunch super-good deals. At other times of the day, some of my favorite dishes are gazpacho and broken eggs with serrano ham, and garlic-sauteed fish surimi [Similar to crab sticks]. The place is also perfect for enjoying “sobremesa,” the Spanish habit of sitting and talking for hours over drinks and coffee. On top of wine and organic coffee from Doi Saket, try the delicious chupito de la casa [a shot of rum, coffee, cacao and condensed milk].”

I’m a big fan of the huevos rotos [broken eggs] that give the place its name and the eggplant with honey and miso. They also cook a really good paella on weekends. For something more fancy, though, try Islero, where they also throw some more casual events with pintxos, the kind of tapas popular in Basque country. I also recommend going all the way through Chinatown to try the tortilla de patatas at El Chiringuito.”

“For me personally, the best Spanish traditional tapas is at Barcelona Gaudi, a little jewel that really reminds you of being in Barcelona. The way they cook and present the tapas is very simple, but the most authentic I have found here in Asia. Their croquetas are amazing, and they have Spanish beers and good sangria. The price is also pretty cheap! I also like Thyme Eatery & Bar: a different style and price, but overall the flavors are very good. I think Spanish food’s reputation increased a few years ago with chef Ferran Adria [of El Bulli], and from there the world has started looking at us. It’s good to be known for more than paella and sangria, but at the end of the day our tapas style of sharing is what makes Spanish cuisine so well accepted in Asia.”

“The Spanish community in Bangkok is so fortunate to have so many excellent Spanish restaurants like Jamon Jamon, Barcelona Gaudi and Arroz. When I eat at these places I feel like I’m at home. When you are 11,000km away from your hometown and you find a restaurant with the food that you love, it makes you feel a lot closer. If I had to pick a favorite dish I would say the eggs Serrano from Barcelona Gaudi. In fact, the Spanish ham is amazing, so any of the dishes with it are delicious. I eat at these Spanish restaurants probably 4-5 times a week—and delivery just makes it so easy.”

“To understand why Spain is at the forefront of world gastronomy, try Islero, which mixes traditional recipes with premium products and modern cooking techniques. My two favorite dishes are red tuna marmitako [fish stew] and carrilleras guisadas [braised beef cheeks]. At Arroz, the art of eating rice goes well beyond ordering just a paella. Go for the black creamy rice, monkfish cheek or the seafood arroz caldoso [brothy rice]—your taste buds will be blown away. For somewhere to meet for a glass of wine and tapas, I recommend Broken Eggs. The original trailblazer of Soi Nana’s regeneration, El Chiringuito feels like I’m popping into a tapas bar in La Latina. Although I’m very proud of my Spanish omelet-making skills, [owner] Sudaporn “Pupe“ Sae-ia’s tortilla de patatas with caramelized onion is a must-try.”

Asked, invariably, at about the same point your butt hits the seat, and always before any menus make an appearance. And you know that what they’re really saying is, “San Pellegrino or Acqua Panna?” when you’d really be quite happy with a B7 bottle of Singha soda. We have one message for any restaurateur out there who trains their staff to ask this: f*ck you!

CHEWING GUM CHEESE

We don’t know its real name, we don’t know where it comes from, and we don’t know why you think it deserves to be near food, but this has got to stop. Usually found on the local “specials” menu of Siam Square Korean joints, or melted over a mound of river prawns and spaghetti, this vicious slur on the good name of cheese is one ingredient that Bangkok could do without. That and truffle oil. And foie gras. And butterfly pea.

CLARIFIED TOMATO JUICE

We’re sure it’s very tricky to make. We believe you when you tell us that your chef is a genius. But is it just us, or doesn’t clarified tomato taste kind of… well… gross? Replacing the delicious, piquant charm of tomato you get a clawing sweetness and the consistency of a well-hocked loogie. No thanks.

CRAPPY PORTIONS

Small is beautiful. We get it. You spent a lot of time selecting the perfect microherb and using those tweezers in your top pocket to place it exactly two degrees to the left of the artful dusting of onion ash. But there’s one big problem with these miniscule portion tasting menus: when you get to a rare dish you actually like, it’s gone in one bite and your once more being confronted with a clarified-tomato something-or-other (see above).

Most restaurants open with good intentions—dreams of full dining rooms, clinking plates and the buzz of satisfied diners. Anyone familiar with Soi Saladaeng will be aware of the restaurant space underneath the Saladaeng Inn just a few meters away from Som Tum Der. This is where good intentions go to die. Over the past three years it’s housed a beleaguered burger restaurant, a ghost town wholefoods grocery and, most recently, Thaithyme, a Thai-European fusion restaurant. First, the good intentions. The new owners obviously invested some cash into the place—remodeling the interior with wood paneling, comfy cushions and warm lighting—and paid a decent food photographer to give their dishes social media appeal. But, just like the last two businesses to occupy the space, Thaithyme is empty most days, and it’s not hard to understand why. The menu isn’t fusion so much as standard Thai and Italian dishes crammed together. The only com-

Birds does one thing and does it beautifully: chicken. Wherever you turn on the concise menu of Nanglinchee Road’s industrial, French-run bistro, there’s no escaping its rotisserie-roasted whole, locally reared birds. Without a compromising salmon steak or kurobuta pork chop in sight, it’s the kind of single-minded dedication that good restaurants are made of. Jeremy Tourret (formerly of El Mercado and L’Appart) is a permanent fixture behind the corrugated iron kitchen bar, where he presides over the roasting of chicken so moist and soft that we had forgotten it could be this good. Each bird spends three days marinating before being shown the oven, he’ll tell you, and the fragrant taste of thyme powers through the deliciously tender flesh—white and brown meat alike. The skin: that’s as crisp as you’d hope for, and begs to be ripped clean and eaten alone. To go with, you’ll be needing a side of the rotisserie chicken jus (B40)—no match

monality that “fuses” them is how poorly they’re prepared. We appreciate the al dente noodles in the spaghetti meatball pasta (B259), but the watery tomato sauce crammed with half-raw onions and dry, lukewarm “signature” meatballs would make Italians cry. The strange playlist of melancholy ballads blasting through a Bluetooth speaker doesn’t help either. Much of the menu follows this theme— completely void of personality, pride or care. Even can’t-screw-up dishes like the tomato and mozzarella tartar (B155) bungle the basics with poor seasoning and stodgy supermarket sauces. Need Instagram fodder? Try the pad kaprao (B149). On our last visit, the fried egg yolk was solid and smeared into oblivion, the minced pork was swimming in a pool of its own fat and there were at least fourto-five chopped chilies crammed into a single serving—enough to make even the most ambitious Thai heatheads sweat. Even the few things Thaithyme does well don’t warrant a return visit. Yes, there are craft beers (B145), like Chalawan and Chiang Mai Weizen, but Mash down the street has a better selection. Sure, the pineapple crumble with ice cream (B165) is tasty, but with After You Dessert Cafe in Silom Complex why walk all the way down here for a dessert? Thaithyme seems destined to go the way of the space’s predecessors. That’s too bad, but maybe the place really is cursed.

for your mom’s best gravy, but a good close second—as well as the smoky “Angry Birds” chili dip (B35). All this comes served up on chopping boards in your choice of whole (B790), half (B430) or quarter (280) chicken. Up it to a set (half/+B120, whole/+B260) and you get the sauces thrown in as well as a healthy portion of skin-on roasted new potatoes—glistening brown clouds of fat-roasted tastiness. The caesar salad (B270) with its huge strips of succulent breast meat and sharp hits of pickled cauliflower is just as good, and likewise the chicken burger—ultra plump and sandwiched in an oatmeal bun from neighbor Amantee. It’s just a shame that, at B480, the price has jumped up a whole lot from the B290 written in the menu. The service staff can’t really tell you why, either—other than that it comes with potatoes. And while there’s nothing painful about the service, they could definitely do with an extra pair of eyes working the room—especially when, most nights, the bar seats are the only ones not booked. We also have to take issue with what Birds calls an apple crumble (B220), which is really just a portion of neatly plated stewed apple. To drink, pick between local craft beers (from around B175) and cheap but perfectly drinkable table wine (from B140). That makes Birds one of the rarest of things in 2017 Bangkok: an excellent restaurant that you can do for B1,000 a head including booze. We can feel a list coming on...

Charoenkrung’s new izakaya makes a case for upmarket, hip Japanese bar food.

The buzz: Chef Chet Adkins was among the team who made the old Ku De Ta’s Signature restaurant among the most creative—and delicious—Japanese restaurants in Bangkok. His new Charoenkrung space deals in wallet-friendly but impeccably prepared izakaya-style skewers, served alongside an impressive sake collection. His business partner, photographer Jason Lang, knows his stuff when it comes to sake, having shot the images for author Hayato Hishinuma’s slate-blue bible on the stuff, Sake. The decor: Up till a few years ago, this corner of a Charoenkrung back street ran as a widely-known illegal casino (the name, Jua, translates to something like “hit me” in Thai). While the downstairs terrazzo bar (so smooth you’ll spend dinner just stroking it) has a look of refined cool, the upstairs holds onto the space’s wayward past, with

crumbly exposed walls and rickety passages. The imposing posters of wizened sake producers come from Lang’s book. The Food: Adkins’ Japanese-style bar grub is about two things: charcoal and produce. The concise menu charts just half a page, offering luscious banana prawns grilled to that medium sweet spot on aromatic longan wood and smeared with durian butter (B200). The house-cured bacon-wrapped asparagus (B100) earns an equally pleasant smokiness from tamarind wood, as do the tender chicken wings (B80) spiked with kampot pepper powder. That same cured bacon reappears in the simple dish of corn tossed in butter and bacon cubes (B180). The drinks: Suntory highballs garnished with lemon peel set you back standard izakaya money at B180. But if you’re

looking for something fancy, go for the rising sun (B280), a concoction of shochu, dry vermouth, wasabi, Worcestershire sauce and tomato juice. The more refreshing Namba Sour (B250) features Jameson whiskey, lemon juice, yuzu and egg white. Sake by the 100ml glass starts at B140 for Ozeki Silver Label from Hyoho, and Masumi Type-1 from Nagano at B280. Why we’d be back: By matching the prices of nearby izakaya heavyweights on Surawong-Silom, Jua makes a seriously strong proposition. The food’s exceptional, the space attracts an easygoing, fun-having crowd, and the buzzing nearby Talad Noi bars let you make a night of it.
