INTERVIEW From thousands of initial applicants, Nawamin Pinpathomrat, 27, from Songkhla province, cooked his way to final of the UK’s televised MasterChef competition, ending joint second and coming within a hand-pressed parmesan wafer of winning outright. A Ph.D research student at Oxford University, Nawamin vowed from the outset that his creations would be Thai. Here, he discusses the experiences—and shares a few thoughts on Bangkok’s best restaurants. You’re currently working to develop a cure for tuberculosis. Has winning MasterChef tempted you to abandon medicine and become a chef? No, I love my job. You know, there are 10 million people affected by TB every year and two million die. I can’t leave. But ultimately I want to do both. I want to open a restaurant too. Maybe do a chef’s table thing and cook on Saturdays. And I’d donate the money to a TB charity. You had a lot of compliments and praise from John and Gregg [the MasterChef judges] and the guest chefs who came to try the food. Do any of those compliments really stand out for you? I made a red curry three ways— gurnard with red curry sauce, a fish cake, hot pickles and a fish mousse—for Nathan Outlaw [of the two-Michelin-star Restaurant Nathan Outlaw, Cornwall, UK]. He called it “bang on” and said, “today I’ve learned something from you. Thank you.” He’s a two-star Michelin chef, so hearing that comment from him was absolutely incredible. I was like, are you serious?
The dish that got you into the finals from the semis—pork satay with the sauce in a savory profiterole. We can follow that thought process, no problem, but then you added white chocolate to it! Well satay sauce usually has some sweetness in it, from palm sugar. So I thought, yeah, add white chocolate. It’s a competition, if you don’t take a risk you won’t get that far.
You know Thai people can be quite humble and shy, but Gregg would come over with a funny joke and it would help you relax a bit. And John knows a lot about Southeast Asian food so he gave me tips and techniques. I learned a lot from him.
We have to ask about the time when the judges criticized a Malaysian lady’s chicken rendang because the skin wasn’t crispy. It caused quite a stir. Any comment? Yes, I want to make a point. She didn’t go home because of her rendang, she went home because other cooks were better. That was why I didn’t cook just traditional Thai food. Like, a bowl of green curry with rice on the side—am I going to make it to the final? If you don’t up your game, you’re going home. I’m so sorry for her, but she would have probably done better if she’d added her own twist to the dish.
What are your favorite chefs and restaurants here? One of my favourite chefs would have to be Chumpol Jangprai, the Iron Chef Thailand guy. Very inspiring. He does traditional Thai food so it’s local and authentic, but he adds his own twists and takes it to another level, which is what I try to do. I can see his passion.
How about John and Gregg, how did you get on with them? They’re absolutely amazing. I wouldn’t have got to the final without them.
How well do you know Bangkok and the restaurant scene here? My family lives in Bangkok! We moved there about 10 years ago.
And what about restaurants? I love Prai Raya in Sukhumvit Soi 8. Amazing food from Phuket. Their yellow curry with crab meat—incredible. It inspired me to make one of the dishes on MasterChef—rice noodles with crab claw and crab bonbon. Paddy Maclachlan

Bangkok Publishing Residence Stay here because: It’s a genuine slice of Bangkok history restored with care. Tucked away on Lan Luang Road, Bangkok Publishing Residence is a museum-slash-hotel that harks back to Thailand’s publishing heyday of the mid-20th century. This six-block shop-house on Lan Luang Road belongs to the Rojamaprapa family, former publishers of Bangkok Magazine, which launched in 1958. Panida “Oum” Tosnaitada, 36, whose grandfather, Vichit Rojamaprapa, founded Bangkok Publishing, recruited a team of architects led by Saran Suntornsuk of Habita Architect firm, who spent six years restoring the building to its original charm. The cafe also serves Thai food, but it’s quarantined in another section.

A white and blue color scheme runs throughout, and the expansive views make for a peaceful, airy vibe. Tucked out of sight of town, the resort is in a perfect location for families with the nearby attractions of the Cartoon Network Water Park, the Nong Nooch Botanical Garden and the Pattaya Floating Market. Meena Cafe’s (www.fb.com/meenacafe2017) view is the stuff of oil paintings. The entire glass-walled front faces out onto lush rice fields with the pagodas of Wat Tham Sua in the distance. With this view in hand, the owners clearly decided that any decor would be secondary, and the bare industrial decor is fittingly casual. Take a cold coco (B60) out to the mesh seats outside that sit level with the fields. For a snack, orange cakes and blueberry cheese pies go from B70 a piece. The cafe’s best hour is sundown. Set across five spruced-up barns looking out over green expanses, The Village Farm to Cafe (www.fb.com/TheVillageFarmToCafe) has Kanchanaburi day-trippers in a spin. Inside is just as lush as the mountainous surrounds, with dangling ferns, cacti and dried flowers. The kitchen spotlights locally sourced ingredients in photogenic forms like a turtle-shaped bun that comes with a fresh melon wedge and melon soft-serve (B185). Before heading back to Bangkok, chow down on the barbecue ribs served with a huge salad portion, French fries and garlic bread (B650).
Shrouded in the lush green countryside of Phetburi are the eight cabins of Riverbed Cabin Resort (riverbedcabins.com). The cabins, which are built with Russian teakwood, have a Scandinavian minimalism to them and start at B3,600 for the studio room. Naughty by Nature Naughty Nuri (www.naughtynurisseminyak.com) started life in Ubud, Bali, as a small restaurant serving martinis (“the best in the world,” Anthony Bourdain supposedly scribbled in their guestbook) and good ol’ American barbecue spruced up with Balinese-inflected spice rubs. The American-Indonesian couple behind the venture have since taken the show on the road to Australia, Malaysia, China and, now, Thailand. Arriving in bustling Patong, the huge, 500-person-capacity venue ticks all those Balinese beach-shack boxes: wooden accents, open-air seating, rhythmic live bands and fleet-of-foot waitstaff. Aside from a succulent racks of ribs (B450), you’ll find Indonesian dishes like satay lilit (minced pork on sugarcane sticks, B230) and babi guling (B1,600), golden-brown suckling pig with crisp-like skin to go with those potent drinks.

Colonial Remnants Away Resorts might just be the busiest hotel brand in Thailand right now. Not weeks after launching the health-obsessed Away Chiang Mai Thapae, they've opened their first property in Kanchanaburi. Chunky, Exaggerated Soles
Thanks to the Triple S, which first debuted on the runway at Balenciaga’s fall/winter 2017, the exaggerated, thick-soled sneaker trend has spread like wildfire in the fashion world, with luxury brands like Gucci, Louis Vuitton, Dior Homme and high-street brands like Zara, Adidas and Topshop all puting their own spin on this wacky, overblown silhouette. The ridiculous long-sole styling (uh, Louis Vuitton Archlight, B39,600) is very much a love/hate thing, but you can’t deny that these chunky sneakers are the hottest trend this year. Ugly, stylish or just plain weird? We say they're a mix of everything. Our favorite pair: We have to hand it to Balenciaga’s Triple S (B39,000). There’s just something about the piled together, three separate soles that we can’t take our eyes off. But for a more affordable alternative, pick Zara’s B2,290 white chunky sole sneaker, or the new Adidas Originals Arkyn (B5,300).

Ugly “Dad” Sneakers
Speaking of ugly, the chunky sole has lead to another trend that sneakerheads are going ga-ga for: the ugly “dad” sneakers. White, clean-cut sports shoes a la Adidas Stan Smith and Common Projects Original Achilles are so 2015. Think of bulky, trainer silhouettes like Steve Job’s New Balance 992, or other favorites of your dad back in the ‘90s—the fuglier the better. That’s why you should search out New Balance 608v4 (B2,318) and Nike Air Monarch IV (B2,160). Our favorite pair: The Yeezy Boost 700 “Wave Runner” (around B9,370) and the rose-colored Nike Air Max 95 OG (B5,800).

‘90s nostalgia remains the big influence for designers this season, including sneaker design. The most successful comebacks this year are sneakers with bulky silhouettes and thick, borderline-platform soles (think

A good example is the Nike Air Max 97 Ultra’17 (B5,800) with tons of colorways, while other '90s favorites like Reebok, New Balance, and Fila are all currently at the top of their game. Moving away from the full-blown chunky, ugly sneaker trend, another big sneaker trend dominating the fashion scene this year is the sock sneakers. While this style has been around for a while now (think 2016’s Adidas Originals “NMD City Sock”), Balenciaga has reinvigorated the sock-sneaker hybrid with their “Speed Trainers” (around B20,000). Worn wither with a pair of cropped jeans and a white T-shirt or with your athleisure getup, these minimal slip-ons will help you channel that chic and effortless look. Our favorite pair: We’ll definitely swap our classic high-tops with Zara’s black, one-piece upper hightop sneakers (B2,990), or the Adidas Originals Tubular Doom Sock Primeknit (B5,000).

Pastel Colors
While bulky “dad” sneakers and chunky soles dominate the sneaker silhouettes this year, colorways get a more feminine twist with cotton candy pink, baby blues and minty greens. If your closet mainly consists of monochrome and neutral pieces, pastel sneakers are a great way to inject a pop of color into your outfit without being too over the top. The New Balance 996 in suede (around B3,745) is currently gaining momentum, with a ton of pastel colorways to choose from. The same goes for the street-style staple Adidas Originals NMD_R1 STLT Primeknit (B6,500) that also comes in striking multicolor pastel colorways. Gum Soles
Long-underrated gum-soled sneakers are also pretty much an It-shoe this year, but if you ask us, the fugly, exaggerated soled sneakers really outshine these guys. That’s not to say these gum-soled sneakers are out of the game, because thanks to Rihanna’s Puma x Fenty collection, the tanned, ridged platform rubber outsole of the Creeper has revived these retro, skater-style kicks big time. Even Adidas and Nike have their own versions, with Adidas Stan Smith Gum Sole (around B2,656), Adidas Originals Campus Black Suede Gum Sole Trainers (around B4,680), and the Nike Air Force 1 Low Black Gum Sole (around B2,810). Our favorite pair: While the J.Crew x Nike Killshot 2 (around B2,810) will look smart on everyone, we really like the edgy, rebel vibe of Rihanna’s Creeper from her Fenty Puma collection (B5,999).

ON THE BAR Frank Mansion The buzz: Ari finally has a proper cocktail bar that’s not also a beer bar-slash-cafe. Frank Mansion comes from the same team as common Ari names like Sousaku, Porcupine Cafe, Landhaus, Sasori Izakaya and O’Glee. The decor: The good thing about opening a bar out of busy (and expensive) areas like Thonglor and Sathorn is the space. The drinks: There's just seven signature cocktails, created by the team at Bootleggers spirit importer and distributor. Our favorite is Dorothy (B320), a pretty-looking drink that packs a strong punch of vodka mixed with rose water and thyme. Gin lovers need to go straight to the Phantom Punch (B320), made with homemade dried chili syrup. To match the masculine vibe of the place, get the JFK (B320), a spirit-forward, strong cocktail with rye whiskey as the main ingredient.
The food: You can’t sell alcohol and not serve any food in Ari, and thankfully the food here is up to the standard of the drinks. The Pasta Kak Kak (B340) features fettuccine and beef stewed with red wine , topped with deep-fried crispy beef—good enough for a main course. Chalermpon “Van” Rohitratana of Phra Athit’s Rarb has contributed some special dishes as well. Get the one named after him, Chef Van (B170), which sees pork neck stir-fried with coconut milk and a seaweed-like leaf called bai cha kram , which brings a slightly salty taste to the dish, served with rice.
The music: Grown-up soul, R&B and jazz—think Al Green, Frank Sinatra and Irvin Mayfield, often played live. The crowd: Older, more sophisticated Ari residents and even Thonglor’s cocktail-nomads. Mikkeller, the Danish microbrewery that opened a bar in Ekkamai in 2014, also runs this Mexican restaurant in Ari specializing in tacos. It’s a rainbow-colored, fun-loving kind of a place—all Latino music, airy vibes and beer swilling (a glass of Mikkeller Double Leaf Pale Ale [B220], recommended by friendly staff, has this light aroma of tea that goes great with the spicy food). With a well-done bowl of guacamole at hand—big chunks of avocado left unmashed and bursting with zesty flavors—you can sample 20 beers on tap. That should give you plenty of time to work your way through some 12 different tacos on your choice of corn or flour tortilla. Be sure to order the grilled shrimp (B280/three tacos), which are all refreshing pineapple, zingy lime and juicy seafood. The chicken tinga (spiced, shredded chicken, B220/ Three) carries full, Mexican flavors and is topped with that lovely guac’—

If you’re venturing out on a “burger and beer” night, we can make this review nice and quick for you: Cast Iron Burgerhaus does fine at both. Although we wouldn’t rank them on par with the city’s elite burger joints like Daniel Thaiger, this place still knows how to handle cow. After biting into the juicy, perfectly medium-rare Swiss Mushroom burger (B280)—oozing with gooey cheese and truffle aioli—you might not even care that half the list of nine burgers will probably be crossed out, or that the seating is cramped and uncomfortable. We also recommend pairing that burger with one of the restaurant’s cool, creamy hand-spun milkshakes (B180). They’re delicious and satisfying—especially on a hot day. So why not a higher rating? As solid as Cast Iron’s burgers and
but we could do without the mayonnaise. All the fillings are aided by tortilla bases that, whether corn or flour, are soft and never too tough. It’s a shame then that the slow-roasted pulled pork (B240) with its too-sweet chipotle sauce doesn’t really do them justice. The chorizo enchiladas don’t quite nail the flavors, either—sour and also watery. You have a tray of four dips and onion pickles to go with everything, which is a good thing. The cashew sauce—thick , sweet and creamy—helps to paper over the flavor cracks in some of the tacos. For dessert, Tacochela’s idea of a churro (B185) is more like a cake: not as crispy as typical churro but still very comforting, especially when dipped in cajeta —a Mexican goat milk and caramel sauce that here tastes wonderful. We’d also advise you get a fat scoop of the Mexican-spiced ice cream sprinkled with honey-coconut crumble (B80). For anyone living north of BTS Siam hankering after Mexican food, you could do a lot worse than this easygoing little spot. But when next asked, “Best-tacos-in-Bangkok?” we won’t be swapping our answer from Missing Burro any time soon.
milkshakes are, it kind of falls apart everywhere else. On our last visit, the currywurst (fried smoked sausages, curry ketchup, fries and mayo, B240) tasted like mushy old spam that had spent days sitting on a counter before being microwaved into oblivion—yes, that bad. The Alaskan pollock fish and chips (B300) fare better with a crispy first bite and tangy tartar sauce, but end up turning into a pile of mush just a few bites in. Disappointments like these make Cast Iron Burgerhaus a very niche dining experience. If you’re in Ari and want a decent burger and a beer—Chalawan (B180), Hamer & Sikkel (B240), Hopwired (B240)—amid the usual industrial-standard decor (the loud hum of the central air-conditioner fits the vibe, though drowns out the near-silent pop-rock playlist), then it makes a solid bet. But name us a Bangkok neighborhood and we can probably give you a restaurant whose offerings are pretty much the same as these ones.

Suan Phlu's hidden seafood shack and wine bar. The buzz: Thai-French cuisine meets beach-bohemian vibes at Suan Phlu’s new restaurant and bar. The decor: It’s an island bar without the beach. The bric-abrac within emcompasses vintage drink ads, rainbow bunting, faux palms—what elsewhere might be tacky here creates an easygoing charm, an effect of the old Thai house setting. Take a breezy (the work of many fans) outdoor table, or sit in the air-conditioned, candle-lit dining room. Upstairs is a lounge with low-table and beanbag seating that’s perfect for a digestif.

The food: Kutai is Maori for mussels, but doubles as Thai slang for “I’m Thai,” a call that’s echoed by the seafood-heavy menu with Thai undercurrents. Start on a half dozen juicy Fines de Claire No 3 oysters, which are B85 per half shell except on “oyster party” Tuesdays, when the price drops the more you order (six for B75/piece, nine at B70/piece, etc.). Mussels get their own page; have them glazed in butter and white wine (French style), submerged in cream or steamed with Belgian beer—every style coming with options of fries, rice or salad (B390). Meat eaters fear not, there’s duck breast with orange sauce (B530) among other turf options.
The drinks: You’ll find seaside standards like cuba libres (B230) and mai tais (B230), but pop open a bottle of Fashion Prosecco Brut (B1,090) if you’re getting the oysters. Meanwhile the mussels pair excellently with a bottle of Grillo (B1,290) or Muscadet (B1,250). Back to School To please BTS Chong Nonsi’s caffeine-thirsty office hordes, School Coffee x Warm Batch Roasters (Silom Connect, Narathiwat Rd., 084-652-1346) is a grab-and-go coffee shop with a lot to offer. Forget mass-market coffee, here they focus on small-batch, alternative beans from Thai farmers that rotate according to the seasons—try the Anusorn Juepa honey process beans (B70) from Ban Mae Jan-Tai, which leave a slightly sour aftertaste. They also offer Kyoto matcha (B70) and milk tea Hojicha (B70).
Thaiger in Thonglor As promised, Bangkok’s most-loved burger truck, Daniel Thaiger, is opening a new home at The Commons (Thonglor Soi 17) after shutting down their Crying Thaiger home on Sukhumvit Soi 51. Set to open on May 30, the kiosk will join the likes of Birds Rotisserie and The Beer Cap in a new drink-friendly zone on the mall’s second-floor. Expect classic
burger names like Steve, Thaiger and Cowboy, though the pork patty option will be replaced with salmon. There will be a vegetarian burger, too. Prices will start around B260.
Market Fresh The dead-end Thonglor soi that’s home to Black Amber has gotten even livelier thanks to low-key speakeasy TaladNath (Thonglor Soi 6, 084-553-7706). Manning the bar is Nath Arjhan, formerly beverage director for Hyde & Seek Group and one-time head bartender at Singapore’s Tippling Club, who whips up “ethnic” concoctions using spirits that don’t get too much love around these parts. Eau de Vie from France and Pisco from Peru make appearances in cocktails that Nath creates from your base-spirit preference. There’s no menu, and all drinks cost B280-350. In the future, expect a full list of ice-cream cocktails, slushies and punches, and a kitchen serving street food-inspired bites (opening around mid-May). BK staff

Through Jun 19, abstract Thai artist Somboon Hormtientong presents his latest exhibition, "A Painting Exhibition with No Title," at PT Gallery, the exhibition space of P.Tendercool furniture company. One of Thailand's most well-recognized living artists, Somboon represented Thailand at the 57th International Art Exhibition – La Biennale di Venezia with his pieces in “Krung Thep Bangkok.” Educated in Munich, Germany, the artist now resides in Bangkok, where he continues to produce paintings in his expressive, organic and minimal style. On display at PT Gallery will be 13 works of art dated between 2012-2017 that were specifically selected by Somboon, including three charcoal drawings shown at the last Venice Biennale.
