A message from Santa Ho! Ho! Ho! Merry Christmas Bangkok from here in snowy Lapland. Can’t imagine how life looks this far north in our winter wonderland? Just imagine your last trip to Niseko only without so many Thais. Oh, and instead of omakase sushi we eat piss-cured reindeer. You should try it some time. Curing and fermentation are all the rage in culinary circles now—in fact if you wanted to go in on a new restaurant venture I’m sure we could charge B5,000 for a 10-course reindeer tasting menu. I know just the Thonglor shop-house. But anyway, I’m not writing just to tell you about new Nordic culinary trends. No. I’m here to give you a little Christmas head’s up. My elves have been scouting around and it’s come to their attention that your city may not have been such a good boy this year. (Excuse the gender binaries—we’re a little behind the times up here.) There’s still over a week till Christmas though, so it’s not too late to put things right. To be sure your moral Christmas compass is pointing at nice not naughty, I’ve put together this little test. What action would you take in the following situations? You’re the director of a local elementary school and you’ve just received your yearly lunch money budget for all the little girls and boys. What do you do? a) Divide the budget by the number of students and then by the number of school days, thus working out your daily cost per student. b) Program a nutritious diet for each child and go back to the education authorities if the amount provided falls short. c) Put in an order for the cheapest rice noodles and fish sauce you can find, then pocket everything you have left. You sit on the board of advisors for the national health bureau. The National Anti Corruption Commission proposes new measures that would require you to publicly declare your assets. What do you do?

Surang Janyam, 52, is the founder of SWING (Service Workers in Group), a foundation that works with sex workers in Thailand. She won the Community Ally Award at APCOM’s latest HERO Awards—an annual gala promoting HIV awareness and LGBT rights in Asia and the Pacific. We spoke to her about the sex work situation in Thailand and her recent victory over cancer.

How did you get involved with sex workers? My teacher-parents expected me to become a teacher too, but I knew I wanted to do social work like my sister, so I intentionally failed my exam. In 1984, Thailand’s first HIV patient was diagnosed and I started volunteering with female sex workers. The women always asked me to read them the daily horoscope—I realized they couldn’t read, so I started teaching them. The women all had dreams of studying but they were scared of judgement, so I asked the Office of Non-formal and Informal Education (ONIE) to hold classes at our foundation. I learned from my gay male friend that many male sex workers lacked rights and education, too. So, after 17 years, I began my own foundation (SWING) that works with both female and male sex workers. I’m proud to say that the first funding I received was from my former students, who now are living much better lives. Tell us about the projects at SWING. We provide both general education and education about HIV. Seven years ago, we opened an HIV clinic, training former sex workers as our consultants. Our clinic has proper standards as recognized by the Thai Red Cross. Our next goal is to open a restaurant so we can fund ourselves. What have you learned from working with sex workers? I’ve learned to be strong. I come from a decent family where everything was easy for me, now I realize that some people have had it way worse, so I don’t complain about small things anymore. Another thing is sharing. The people I work with always bring me gifts, even though they don’t have much money. Another thing is gender equality. Gender is just a make-believe thing.
Tell us about some of the people that you’ve worked with. Back in the day, the majority were from northeast Thailand, but now they are from everywhere. Most Thai sex workers had to leave education early and get into sex work due to their financial situation; they are usually doing it to provide for others—around 60% are single moms. Most of the sex workers usually have three to five people behind them that they need to provide for as well. The government says these people are a burden to society, but they are just trying to work hard not to be. How about admitting that a huge chunk of our tourism economy is actually from this? What’s the situation like in Thailand now with sex work? Stricter laws mean sex work is presented instead as “massage” or “karaoke,” but the number of sex workers hasn’t decreased—it’s just harder for the workers to make money and for us to identify them and educate them about HIV. Should Thailand legalize sex work? I want the government to recognize that sex work is work. Sex workers should be considered as laborers and be under the labor laws. Sex is for everybody, everyone has sex, the difference is just whether it’s free or for sale. Strict laws haven’t decreased the number of workers, they have just pushed them underground. The Thai officers think more people will become sex workers if they legalize it. Are you kidding me? Sleeping with strangers for money is not that appealing of a job. Choltanutkun Tun-atiruj

Billy’s Smokehouse You might know Billy Bautista from Osito Unique Spanish and La Monita. For his new venture, he’s taken on barbecue. Here, guests sit around one long communal table to feast on a menu of local ingredients that changes every 1-2 weeks. Don’t call it authentic Thai, although the flavors of dishes like a yam pla slid (snake skin fish spicy salad, B240) and ped pa lo (five spices duck, B140) served like duck confit with kombucha dipping sauce are unmistakably from the kingdom. This tempura omakase—a chef’s selection of premium deep-fried produce served around a sushi-style counter—restaurant is here thanks to the one-Michelinstar Ginza Sushi Ichi team, and like that restaurant, this one also hails from a seriously fancy mother branch in Tokyo. Enormous Hokkaido scallops, decadently rich Kobe beef and pockets of nori stuffed with creamy sea urchin get delicately fried in sunflower oil in head chef Kawaguchi Daiki’s B4,500-6,500 menus.
From local aromatherapy brand to cute cafe purveyor to full-blown diner, Karmakamet’s latest opening at the Lhong 1919 riverside Chinese complex comes with yet another new concept. Karmakamet Conveyance goes for fine dining: minimal whites, gold accents, tables adorned with single white orchids, and head chef Jutamas Theantae’s seven-course menu (B2,500). Jutamas’ food journeys through Asia, from the Philippinesinspired pulled pork adobo in a light rice cake bun topped with roasted coconut and galangal, to the southern Thai spiced coconut crab with fried cempedak fruit.

Hummus Boutique The people behind Mama Dolores Pizza on leafy Yen Akat have opened this allMediterranean, all-vegetarian venture. The signature chickpea dip is elevated with tons of toppings and styles. Head chef Sujira “Aom” Pongmorn reinvents fermented beef salads, crab fat dips, grilled pork neck and spicy-sour soups as delicate tasting portions that compete with the top tier of Bangkok fine dining. For the fixed price of B1,950, the moodily-lit, glamorously appointed restaurant serves only tasting menus, best augmented with the superb wine pairing (B2,350).
Perched 25 floors above Siam, this ambitious Thai restaurant bills itself as “hyper-local” in reference to the seasonal ingredients it sources from independent farmers around the country. Monthep Kamolsilp, the 29-yearold executive chef, offers both a nine-course tasting menu (B1,800) and a la carte. Firm, juicy brackish prawns from Ranong and their roe star in the choo chee curry (B390) with basil-wrapped grilled eggplant. The pad kaprao (B410) is made with organic pork from Nan, as well as long beans, torchginger and southern budu fish sauce.
Sukhumvit Soi 31’s Thaan is all about Thai natural charcoal and meat from farms in Korat, Surin and Surat Thani. The Crying Tiger’s (B300) thinly sliced Thai wagyu is served with an addictively spicy jaew, while select imports like the Australian wagyu tomahawk (B500/100g) paired with a decadent foie gras mac and cheese (B390) make for the main event.

Sonny’s A new and more central incarnation of Changchui’s popular Raan Nye Sohn, Sonny’s is making a stir on Charoenkrung Road for its well-executed and affordable French cuisine. Tsukiji Aozora Sandaime Owner Ishikawa Motonobu is a thirdgeneration fish wholesaler who runs a restaurant in the outer market of Tokyo’s Tsukiji Fish Market. This Bangkok operation is a 12-seat bar where chefs work with a quiet confidence that disguises the sophistication of the sushi, which comes in the form of omakase sets and a la carte pieces. If you’ve ever been to Jua in Charoenkrung, you’ll know what this is – their bar counter is made with it. Extremely popular in the 1920s, Terrazzo is making a comeback. That catch? Replacing your entre countertop or floor with this mixture of marble, quartz, granite and glass is expensive. You can still get a taste of that old ‘20s charm though, through tasteful decor items that use Terrazzo in civilian quantities. Try small terrazzo items like the Sindri lamp or Ilo soap dispenser that will add a touch of old-school glam to any room.
Retro decor items are always going to be “in” in one way or another, what changes is the era that people fawn over each year. For 2019, look for ‘50s era American to take the hot seat, with bold, curvy furniture at center stage. These elements add a bit of warmth and coziness to a space without appearing overly exuberant like 1940s furniture sometimes feels. There is also a much wider range of colors available when compared to older “cruvy” furniture. We recommend the velvet Bold armchair—a movable fun piece to make your house more lively, or go big with the Balthasar II sofa in light grey.
Unlike Terrazzo, stone items are always in fashion to some degree, but in 2019 we expect to see a lot more of them popping up around more stylish homes. These pieces are timeless, eco-friendly, and best of all, easy to clean. Try to add some classic, luxury hints with items like the Gogol marble candlestick, the Duomo grey marble lamp—perfect for your bedroom. For a more modern-ish touch, go with Iba candle platter in black.
Next year, trend will move away from tribal patterns (thank god) and more into asymmetrical shapes. Geometric designs will always have that modern, almost tech-like look to them. They can also add a soothing feel to a home by create patterns that evoke a sense of balance. Try adding this with the Galindo wool rug in dark blue and orange, or Eskyss a walnut sideboard with an edgy look from graphic lines at front.

Good news for those who miss sundowners on Hemingway’s breezy terrace: the bar-restaurant is about to make a comeback. According to GM Damian Mackay, the team is painstakingly building a replica of their beloved venue—now to be called simply Hemingway—recreating the lush garden and two-story wood-clad setup with balcony, right down to using the same floor tiles, which were discontinued but have been sourced from Spain—now that’s dedication. The new digs are going up smack bang in the middle of Sukhumvit Soi 11, slated to open in January 2019.

They’re making a stand for sustainability, too, with all of their takeaway cups, straws and napkins made up of biodegradable materials.

With Charoenkrung’s latest spot, it’s all in the name: About White (1326 Charoenkrung Rd., 095-949-7867) is, well, white, from the tiles on the walls (with obligatory black grouting), to the tables and chairs, to the white neon sign on the wall, to the counter (though splashes of duck egg green, plants and concrete flooring do get a look in, too). Spot it from the giant sleeping cat mural painted on the outside. The slim cafe is awash with natural light thanks to expansive windows, creating a Zen setting for a hearty plate of carbonara (B120) or an indulgent slab of banoffee pie (B85). Sip on a matcha latte (B80) as you while away the afternoon playing card games.

Ocken is the grown-up fine-dining cousin of Roast, a daytime-friendly spot with an unchallenged reputation for brunch on Thonglor. Here on Sathorn, the same team headed by chef Johnny Liu goes in for cross-continental small plates that are built for sharing and unafraid of creative flavor combinations. The space is a confluence of green and terracotta tiles, tactile woods, lashings of stainless steel and the kind of good taste and limitless budget that makes you ashamed of your own apartment. The crowd seems to love it and the dining room always feels buzzy and full. You’d do well to make reservations and there are many reasons why we’d recommend you should. At its best, Ocken’s five-course a la carte menu can be sublime. Take the grilled eggplant (B320), in which oily, tender, salty eggplant sits amid a masterclass of rich, varied flavors—layers of mint, hits of acidity, an umami depth, some lingering heat. It’s all just delicious. Likewise, the beef tartare (B420) with its nduja aioli and oyster mushrooms is exactly how you reinvent

If location is everything, we’re not sure why the owners of Steakhouse Co. opened what looks like a legitimate restaurant in the middle of Bangkok’s dying go-go bar district, Patpong —for decades, Silom’s seediest area. Steakhouse Co., with its exposed brick walls, scarlet cushions and dark-wood furniture, sticks out like a sore thumb and is the fanciest thing on the soi by a mile. You can certainly get some quality boozing done here thanks to a decent selection of whiskies (like Ardbeg 10, B310/ glass, and Yamazaki, B490/glass), a wine cellar filled with Italian labels (house reds and whites from B295) and 41 different beers by the bottle and on tap (B125-270). They obviously went to great lengths to import a range of options, but we were disappointed to find Singha is the only Thai beer here—these days bars can do a lot better. Fancy beef is where Steakhouse Co. is at its best. The restaurant’s selection of premium meats (displayed in a dry-aging fridge at the back) stacks up well against its Silom competitors—think USDA
a classic without destroying what’s special about the original. We’d rate it one of our top plates of the year. But our praise for Ocken ends precisely when creative and flavor-laden small plates make way for an ungainly half-roast duck (B750), its carcass scattered in fennel seeds that serve only to get stuck in your teeth. Layers of flavor are here replaced by one-dimensional, dry meat that we struggled to make a dent in. From brilliant to bad and onto boring, Ocken’s two miniature Cubano sandwiches (B220) are simply high-quality deli food scaled down for fine-dining effect—we’d rather have the full-size thing for near enough the same price, thanks. And have you ever ordered a lemon tart and been happy when a sorbet, some shards of meringue and a scattering of biscuit crumbs turns up? We thought not. For all its culinary competence, “What a Tart” (B280) cannot improve on the simple pleasure of fruit and pastry. Save the money and treat yourself to a liquid dessert instead. The cocktail team here can do excellent things with Campari, rum, pineapple and sea salt. It’s called a Salty Pineapple and costs B320. We’d also recommend a bottle of the Cava at B1,200. We’re sure that you could navigate your way to a wonderful meal at Ocken—just be prepared to eat a few duds before you get there.
Prime striploin (250g, B1,075) and Australian Black Angus sirloin (400g, B2,075) aged up to a powerful 120 days. We can hardly complain about the perfectly seared, well-rested piece of Argentinian striploin (400g, B1,275) we had recently—fantastically tender and juicy, but a smidge under-seasoned. Other than this, the kitchen won’t wow you with panache. The tragic baked potato our steak came with, still wrapped in tinfoil like a backyard barbecue, is not worth talking about. The gambas garlic shrimp starter (B350) is springy, overcooked and pretty bland for something marinated in garlic and chili. Other dishes, like the creamy burrata bowl (with oven-dried tomatoes, mixed olives and drizzle of vinaigrette, B320) come well prepared but seem ill-conceived—a baseball-sized pile of cheese vs. a spoonful of veg? In an ideal world, we like what Steakhouse Co. is trying to do. Patpong is a dump, and the streets would be better served with cool restaurants and venues. Sadly, it’s still sexpat central and that’s largely the crowd at Steakhouse Co: old men with very young counterparts, or groups of tourists looking to get a meal before heading to Bada Bing for a lap dance from a girl named “GiGi,” really, how could we expect any different? With better options like The Meatchop a few minutes away, we don’t see many serious foodies going here.

Ever wondered how anyone becomes lucky enough to make the bar their office and cocktails a full-time career? We spoke to Bangkok’s up-and-coming bartenders to find out how they got to be where they are. By Choltanutkun Tun-atiruj Suchada “Fahbeer” Sopajaree, 33, Find The Locker Room How did you become a bartender? The movie Cocktail was the biggest inspiration for me, thanks to Tom Cruise. My mom would always lament that I would never find a job because I always woke up late, so this is my proof to her that I could find a job. I got my first job when I was 26, on Koh Lanta, where I had to figure my way around a bar during the busy high-season. I fell in love with the bartending art, the human interaction and satisfaction on the customer’s face after the first sip. What were the struggles at the beginning? Knowledge was a big problem for me, with customers asking me all sorts of questions. Working as part of a team was also something new. What are the struggles now? As head bartender at Find The Locker Room, my struggles now are different. I’ve been torn both ways on many occasions having to say “no” to staff to maintain the standard of the bar, which is very important. What’s your biggest achievement? Winning the La Maison Cointreau Thailand 2018. It’s my first-ever win in any competi-
tion—I always end up being a finalist but never the winner. What tips do you have for anyone wanting to become a bartender? Patience, humility and listening. Patience because it doesn’t take you days, weeks or months to reach the top, it takes years to hone your skill and then some. Humility because superstars are overrated, true bartenders work to convert frowns to smiles and strangers to friends, not for fame or money. Listening because you never know what you might learn or pick up from a veteran in the industry or even a green horn trying to break boundaries. Bar-backs also take on the most underrated role in the bar—if you can do it right, you will earn the respect of the whole team, but hell is it a tough role. My best memories were peeling coconuts and digging flesh out of pineapples, 40 pieces a day.
Arron Apimuk Grendon, 22, Tropic City How did you become a bartender? I started off as a trainee in F&B at Trisara hotel in Phuket. One night the guys from 28 Hong Kong Street did a guest shift at our bar and the day after I immediately asked my boss if I
could start training as a bartender. What were the struggles in the beginning? I wouldn’t say that there were struggles but like any other job you have to learn how to be good at what you do. What are the struggles now? The biggest struggle for most bartenders I think would be the long hours and late nights, but in the end it’s part of the job we chose so we kind of have to deal with it. What’s your biggest achievement? Winning the Chivas Masters 2018 Global Competition. What tips do you have for anyone wanting to become a bartender? Be eager to learn, gain more experience and just be yourself! Rather than trying to follow what the other bartenders are doing, do what you feel is right and have fun with it. Show your love and hospitality to the people around you. And make awesome cocktails!

on Sukhumvit Soi 33 when I was 19. A friend of a friend who was bartending came to eat there and thought I was good at my job, so they approached me but I too young to work behind the bar at 19, so I worked as a barback. This was at Hyde & Seek Peekaboo at CentralWorld. What were the struggles at the beginning? Everything was new to me, so I had to learn all about being a bartender, whether it was different types of alcohol, recipes, or how to approach customers. What are the struggles now? Improvement. Constant improvement, to make sure that our cocktails fit with the trends, but still have your own signature style. What’s your biggest achievement? I was part of the opening team at ABar and ABar Rooftop, and I had the chance to work on all the details from the very beginning—the design, the glassware, and which cocktails to put on the menu. What tips do you have for anyone wanting to become a bartender? Bartenders aren’t always shaking cocktails— there’s so much more to learn on top of that. You have to pay attention to all the details as well as the practical process of it.
