t’s a very special year for Top Tables. The arrival of L’Atelier de Joel Robuchon, by the man with the most Michelin stars in the world, means Bangkok is now a global fine-dining capital, just like Singapore or Hong Kong. Not that we waited for Robuchon’s arrival to believe this is an awesome city to eat, but L’Atelier has set a standard for service and culinary excellence that is energizing for the scene as a whole. In fact, we’ve also seen a lot more local chefs embrace fine-dining for Thai cuisine of late. And it was about time.

We’ve changed too. The Top Tables panel has doubled in size to a couple dozen foodies and industry experts. They decided which restaurants are in this guide, and which would make the Top 10—sorry, Top 30. With more votes, we got deeper insights into which restaurants are the best in town, and we decided we’d not only unveil our panelists’ 10 favorites, but also who nearly got top honors and where they placed, too. Of course, every restaurant in Top Tables is amazing. This is Bangkok’s most discerning dining guide, after all, with only 109 restaurants, and zero concessions to the lovely advertisers who support us. Put together by the BK Magazine editorial team, it often pains us to leave out a delicious street stall, food truck or grungy shop-house. But there are plenty of other guides for those seeking sidewalk-level experiences. Top Tables celebrates restaurants that successfully combine service, decor and food. And this year, there’s a feeling all three have gone up several notches.

1. L’Atelier de Joel Robuchon The chef: Joel Robuchon is the most important French chef since Escoffier codified haute cuisine. He’s known for being the guy with 25 Michelin stars across 20 restaurants in the world—fancy, expensive restaurants doing Gallic food that’s modern without losing its rusticity. But Robuchon is actually a rather atypical chef: he spent a lot of time doing competitions, traveled as a journeyman learning from France’s best cooks and earned his Meilleur Ouvrier de France title at 31 (the highest honor for an artisan). Here in Bangkok, L’Atelier’s chef is Olivier Limousin, who previously ran Robuchon’s London atelier. The place: Borrowing the same concepts from all L’Atelier branches, this elegant red and black space has diners seated around a large open kitchen, a format more reminiscent of a sushi bar than classic dining a la Francaise. The food remains unmistakably French, though— free-range quail stuffed with foie gras and potato purée—and with all the finesse you’d expect from a chef with so many Michelin stars. 2. Gaggan The chef: This Kolkata native is one of the very few Asians successfully pioneering such contemporary food. And he learned from the best: the Spanish birthplace of what’s now known as molecular gastronomy, El Bulli. But Gaggan Anand is not just challenging our preconceptions about food; he is also tapping into his own memories of India, repackaging humble street food into bite-sized flavor jolts or deconstructing a classic curry to highlight the essence of the dish. The place: The signage says “progressive Indian” but that’s an understatement. Yes, there is an obvious Indian theme, but everything about Gaggan is so un-Indian: not a gold plate or red drape in sight. As for the food, there’s a playfulness in everything served up that’s hard not to like, from freshwater clams in bowl-lickingly good Konkani curry to nitrogen-frozen pina colada. Le Du The chef: Bangkok is not short on young chefs with fancy culinary degrees, but Ton Tassanakajohn is among the few who actually backed up his study with practical experience at the world’s best kitchens. After graduating from the Culinary Institute of America (CIA), he worked at renowned Michelin-star restaurants including Eleven Madison Park, The Modern and Jean Georges in New York. He now does his own thing, producing locally-focused, Asian-flavored dishes the likes of which no one else is doing in Bangkok. The place: Think creative cooking, Asian flavors and artful plating. Seasonality and locality are key here, whether it’s in starters like Thai porcini with pickled oyster mushroom, gourd, extra crispy chicken skin and chlorophyll, or hearty red-meat mains such as the Ratchaburisourced venison. 4. Ginza Sushi Ichi The chef: Masakazu Ishibashi is executive head chef of Ginza Sushi Ichi’s three branches, in Ginza (Tokyo), Bangkok and Singapore. Born into a family of sushi chefs, Masakazu traveled to Southern California, where he refined his taste for dramatic, colorful presentation. His Ginza restaurant earned a Michelin star and owes its success to the superiority of its tuna, which it buys from “a tuna distributer called Hicho which is ranked in the top five at Tsukiji Market.” The place: The Bangkok offshoot claims to fly all its fish straight from Tsukiji Market in Japan within 24 hours of purchase—in fact, they’re so serious about this that they won’t open on the day after Japanese holidays. All the chefs, who trained under Masakazu, prepare the dishes right in front of diners, with the option of ordering omakase, where the chef selects the freshest cuts of the day. 5. Chef Man The chef: Wai Yin Man originates from China, but had a stint at Amari Watergate’s Heichinrou Chinese Restaurant before getting an eponymous restaurant at Eastin Grand Hotel Sathorn. Here, he generated instant buzz as the new go-to guy for dim sum, and Chef Man’s second branch, at the Eastin Hotel Makkasan, repeated the feat. When it opened, diners needed to reserve up to two weeks in advance. The place: Our pick would have to be the Sathorn venue. Chef Wai Yin Man likes to boast of the B2 million kiln there, which was made especially for the Peking duck, and of his Beijing-native cook who prepares the dish. Do be punctual as the duck will be ready on the very minute for which you booked the table. 6. The Water Library Chamchuri The chef: German chef Mirco Keller worked at Tim Raue’s two-Michelin-star restaurant in Berlin as well as one-Michelin-star venues like Adlon Collection’s Uma Restaurant and Swissôtel Berlin’s Restaurant 44. As a result, he has an extensive training in classical European cuisine, but is also keen on incorporating elements that reflect his Asian surroundings, both in terms of terroir and seasonality. The place: The venue is really gorgeous, much more like something you’d find in an elegant boutique hotel than a mall. The use of steel, glass and gray wood is striking without being cold, thanks to cozy corners that conjure a library atmosphere. The kitchen serves up fine European cuisine with discreet Asian twists. 7. Eat Me The chef: A graduate from the venerable Culinary Institute of America, Tim Butler went on to work at Daniel in New York and was pastry chef at Aquavit—both of which have had two Michelin stars. His style is often described as Australian or Pacific Rim cuisine, a comforting blend of Mediterranean flavors with occasional nods to Asia. That makes him one of the most truly globally-inspired cooks in town. The place: Nearly two decades on, Eat Me still has a genuine charisma. The décor is a cool mélange of industrial and natural, and features rotating exhibitions by local artists. The kitchen pulls off bold combinations like Alaskan scallops with avocado, yuzu and pancetta, while a chicken salad is elevated by the addition of red papaya and betel leaf. 8. Appia The chef: For years, Bangkok’s Italian food scene had two options: high-end restaurants or generic pizzerias. Then Paolo Vitaletti arrived, himself a hotel chef fed up with making the type of food he’d never cook back in Italy, and opened this Roman-style trattoria. Its mix of home-style pastas, rotisserie meats, unctuous stews and rustic specials was a revelation for Bangkok, and quickly earned Vitaletti a reputation as one of the city’s favorite chefs. The place: The decor combines a wood paneled ceiling with beams, turn-of-the-century bistro chairs and rustic chandeliers with little lamp shades. On the food side, the homemade pasta is amazing and the beautiful rotisserie, which roasts pork and chicken to a perfect crisp, never disappoints. You can also expect a carefully curated wine selection and stunning desserts. Two years on, Appia is still one of the few places you always need to book in advance. 9. Quince The chef: Not unlike Vitaletti at Appia (see page 20), chef Blair Mathieson has had a long career at some very swanky hotels, such as the Chedi (Chiang Mai) and The Siam (Bangkok) plus some Michelin cred of his own. Before the travel bug bit him, he was senior sous-chef at one-Michelin-star restaurant Leatherne Bottle in Berkshire County. Mathieson’s style reflects his New Zealand origins: fuss-free, equally at ease with French, Mediterranean and Asian flavors, and making use of fresh local produce. The place: Quince serves up casual European food that’s light and bright (meaning local and seasonal) in portions that encourage sharing and eschew the formality of a traditional three-course dinner. Perfectly paired with the Mediterranean flavors, the faux-vintage brasserie meets idyllic country home atmosphere draws a crowd of beautiful people. Thanks to the very solid wine and cocktails menus, Quince is the kind of place that will make you want to stick around until late and come back often—especially for its well-designed events around wine and food. 10. Bo.lan The chefs: Since their restaurant, Bo.lan, opened in 2009, the two David Thompson protégés Duangporn “Bo” Songvisava and Dylan Jones (both trained at his original, Michelinstarred Nahm in London) have been among the city’s most committed chefs to preserving traditional Thai flavors, while serving them in a refined style. Validating their efforts, Bo was named Asia’s Best Female Chef in 2013 by the World’s 50 Best Restaurants. “Many chefs think they can make Thai food more luxurious by separating it into courses like Western cuisine,” she says. “This isn’t right. If you ask a French chef to serve all the dishes at the same time, as in Thai cuisine, they will kick you out. I want the opposite to be the standard for Thai kitchens. Stop making tomyam as an entrée!” The place: Stick to the set menus, which guarantee a communal, Thai style of dining and an authentic experience. The Bo.lan Balance set, which changes every two months, starts with yaa dong (a potent, traditional Thai spirit) served with pandanus juice and sour fruits to shake up your palate, before covering curries and stir-fries all made from scratch using the best ingredients. The Mandarin Oriental’s showcase restaurant needs little introduction. For years it has set the standard for service and cuisine and the breathtaking river views are equally exceptional. The chef, Aranaud Dunand Sauthier, has worked for renowned chefs such as Georges Blanc in Vonnas, Marc Veyrat in L’Auberge de L’Eridan, and Emile Jung at Crocodile. Expect only the best imported produce, such as Challans duck, Brittany langoustine, and French milk-fed lamb. The wine cellar, too, is superlative.

Herve Frerard is one of the rare French chefs to have won the hearts of Bangkokians. He doesn’t shy from hearty, rustic dishes like the baked Morteau sausage served with a rich tomato lentil sauce and terrine de pot au feu alongside bistro classics like bouillabaisse and sole meunière. He also uses many fresh, highquality ingredients imported directly from France, and makes the most of his involvement with the Royal Projects.

David Thompson’s Nahm serves fiery, multicourse set menus that offer devoutly authentic flavors and plenty of choice. We use the word “course” loosely, as this is true communal Thaistyle dining. Try the salad of fresh river prawns with pork and Asian pennywort, and the perfectly balanced coconut and tumeric curry of blue swimmer crab served with kanom jin (traditional Thai rice noodles).

Organic-oriented restaurant Seven Spoons has a retro, bricks and concrete, industrial vibe. The kitchen whips up Mediterranean-inspired dishes that are complex, balanced and fresh: woodfired pizzas, portabello mushroom and tofu with black bean puree, pork chop wrapped in bacon and more. Not only is the food perfectly executed, the service is amicable and genuinely caring. Though far from central Bangkok, this place is a destination unto itself.

This small restaurant takes after New York-style gastro bars, serving New American cuisine and creative cocktails in a 1920s atmosphere. The Culinary Institute of America-trained chef, Rangsima Bunyasaranand, turns out dishes with a nose-to-tail focus like the homemade charcuterie plate (pork rillete, head cheese terrine and pork and veal) and jerk chicken hearts with pineapple salsa. Recommended cocktails include the rum-heavy Smokey Morning and fruity, vodka-based Femme Fatale.

This enoteca (tavern) is cut from a traditional cloth, with its wall of wines and a bar groaning under the weight of various dried meats, cheese wheels and platters of antipasti. It’s a charming little place, especially at night as there are tables set inside overlooking a brightly-lit front yard, through a wall of arched windows. Bold dishes like the risotto with licorice and saffron or ox tail in tomato and red wine sauce with celery and raisin are testament to Enoteca’s ambitions as one of the city’s top Italian restaurants.

Chef Luca Appino’s deli-cum-restaurant sticks to traditional recipes but stands out thanks to its distinct emphasis on fresh and, when possible, homemade ingredients. The friendly and wellversed staff will tell you all you need to know, from the daily specials (which rotate based on the available ingredients) to what region of Italy the dishes come from. The results are both delicious and beautifully plated.

Sra Bua is the Bangkokian sister of Copenhagen’s Kiin Kiin, which, after David Thompson’s London restaurant Nahm (now in Bangkok, see page 28), became the second restaurant in the world to receive a Michelin star for Thai food. But this is modern gastronomy, making it very different from the traditional Thai cooking at Nahm. A curry might come with the texture and temperature of ice cream, and bites of lobster can be locked into gelatinous pearls that melt in your mouth with a sip of tom yam broth.

Wanting to make the most authentic Neapolitan pizza in Bangkok, chef Paolo Vitaletti (of the highly esteemed Appia, which is just around the corner, see page 20) ordered his massive pizza oven directly from Italy, along with a Neapolitan baker with five years’ experience just to make the dough. The result is simply some of the best Italian pizza in town. But Peppina also serves a variety of fresh salads, specialty cold cuts and hearty grilled meats.

The three-story building’s facade is a tangle of concrete beams, steel cables and ferns, achieving an effect that manages to be both beautiful and slightly post-apocalyptic. Chef Zra Jirarath’s large open kitchen at the center of the dining room uses only the best produce: its oysters hail from Ireland, the artisanal cheese from France, while the vegetables are locally sourced. The chef’s table menu (seven courses) changes regularly, or stick to the bar downstairs for some light tapas.

Australian chef Jess Barnes’s food draws on both Mediterranean and Asian influences while focusing on local produce. The fuss-free nature of the place means dishes like the gua bao (steamed Chinese bun) are often best eaten with your fingers or shared with friends (there’s a big emphasis on large cuts). The decor is almost entirely bare except for tactile wooden furniture and a long bar in front of the narrow kitchen. The flavor-packed veggie dishes also have to be tried.

“Gianni’s,” as it’s referred to by most, has earned this affection with consistently oustanding food, an elegant opera-house atmosphere and polished service. The fritto misto, with baby squid, tiny shrimp and fish fillets on a bed of polenta is head-and-shoulders above the mundane deep-fried starters served elsewhere, and the slow-cooked wagyu beef cheeks served with an Amarone wine are also wonderful. The ever-changing specials frequently knock it out of the ballpark.

California-born Nikolas Ramirez helms the kitchen, bringing with him influences from his Hawaiian and Latin roots. The menu focuses on Pacific coastal cuisine like the fresh and simple scallop carpaccio with corn and avocado salsa as well as Nikkei (Peruvian-Japanese fusion) dishes like grilled Maine lobster with “ramen gnocchi” and miso tea. Opened in 1988, Aoi is one of the granddaddies of the Japanese dining scene in Bangkok, and one of the most authentic Japanese experiences in Bangkok. The service is impeccable, the decor of exposed beams and rustic plaster, while slightly looking its age, is homey and authentic, the menu is utterly devoid of concessions to trends or bizarre fusion, and the kaiseki sets are appropriately elaborate. Founded by a group of moneyed Japanophile friends, Mugendai was one of the first restaurants to claim it flies its fish in from Tsukiji Market, in Tokyo, five times a week, back when twice a week was still the norm. Its signature sushi dish, the Aburi 7, is an assortment of seven blow-torched slabs of fatty bluefin tuna, snapper, halibut fin and Matsuzaka beef (among others) topped by dabs of shredded garlic, crab eggs, ponzu or miso. Or go for the sashimi—the slices are gargantuan and bursting with flavor. The 7th-floor views of Thonglor are a nice touch, too. Chef Egidio Latorraca has accrued more than 15 years’ experience at fine-dining establishments in luxury hotels in Australia, Europe and Macau. Here, he’s doing a more ItalianAmerican style of dining, befitting the clandestine feel of Scalini’s 1920s prohibition-era decor. The brightlylit open kitchen dishes out paccheri pasta with duck ragout, oven-baked black cod fillet with Sicilian couscous and its signature Scalini Tiramisu—all of them excellent and served with polished high-end hotel service.

Chef Peter Pitakwong’s cooking is full of big, natural flavors drawing from the best locally-sourced, fresh ingredients. The industrial decor befits his rustic, nose-to-tail philosophy. Among the must-try dishes are slow-roasted lamb ribs with coffee spice rub and the tuna with braised pig’s tail. You can also find craft beers, wines and solid cocktails.

Kiin Kiin, in Copenhagen, is one of the world’s only Michelin-starred Thai restaurants. Its Bangkokian offspring, Sra Bua, is equally exciting. By reinterpreting Thai food, and applying the most modern techniques to traditonal Thai dishes, Sra Bua challenges expectations and delights the palate. A curry might come with the texture and temperature of ice cream, and bites of lobster can be locked into gelatinous pearls that melt in your mouth with a sip of tom yam broth.

The interior is rather masculine with lots of leather couches, dark wood and rows of chandeliers, while the terrace zone is slightly more laidback thanks to its chic garden furniture. The drinks list is extensive and you can order light nibbles, too.

It aims to serve up familiar classics done well: Boston lobster bisque, beef steak tartar and duck liver terrine. The wine selection is equally impressive.

The food is unabashedly fusion, but with some very unusual combinations such as the soft shell crab s erved with chopped lychees and shallots. Wash it all down with a fruit shake or Beerlao, as you rub shoulders with the neighborhood’s cool cats.

It’s very difficult to get in this popular Japanese tavern. The izakaya mood is perfect: lanterns hanging from ropes, Nippon kitsch plastered all over the wooden bar/kitchen, thunderous bellows from the all-male kitchen as patrons come and go, steam rising from the yakitori grill. The menu has two pages of sochu by the glass and some bottles, too, but Nagiya’s nabe, hot pots that come in a variety of flavors and ingredients, are no afterthought.

By regularly inviting Michelin-starred chefs, VIE Hotel has shown its dedication to fine European cuisine. At La Vie, chef Supat Chinsangtip cooks up French classics, such as housesmoked duck breast with parsnip puree, lobster bisque and lamb chops with aubergine caviar. You also get 11th-story views, high-end hotel service and an all-you-can-eat a-la-carte brunch on Sundays.

A wine store, a tapas bar and full-on bistro are here combined, meaning you can purchase some vino at retail prices and enjoy it in the restaurant at no extra charge. Comforting and affordable, the menu spans pastas, pizzas and large, grilled entrees like sea bass fillet, pork chops and lamb cutlets. There are also a lot of wineappropriate nibbles (pickles, cheeses, cold cuts).

The Yamazato here is an even more luxurious contemporary dining space than its sister in Amsterdam, but it still draws inspiration from classic Japanese design and the art of origami. Offering both a traditional a la carte menu and dedicated teppanyaki and sushi bars, Yamazato is the real deal in terms of Japanese fine-dining. Dinner is a grand affair, serving refined 6-8 course kaiseki menus.

The elegance of the decor and the sweeping views of the Chao Phraya are reason alone to visit. But this refined Cantonese restaurant’s bustling open kitchen delivers, too. The best deal is the all-you-can-eat dim sum lunch, which comes with such delicacies as snow fish stuffed with shrimp, steamed crab legs, and deep-fried creamy custard buns. On top of the dim sum, you’ll get to sample delicious soups and meats, such as the roasted duck.

The Anantara Sathorn’s 40th floor has a 360-degree cityscape view, complete with a DJ and dance floor and spacious wooden patios. The restaurant serves French Mediterranean cuisine along with Asian options: think seared sea bream with artichoke, leek and vanilla sabayon or duck breast with duck leg samosa and carrot and ginger puree with dark cherry jus. The drinks menu is vast, offering everything from cocktails to Champagne.
