Breeding for Pork Quality - What should be the focus? Bob Kemp, VP R&D and Genetics Program, Genesus Inc. Pork quality is a critical component driving the consumer’s eating experience and purchase decisions. Unacceptable pork quality is not a new issue for our industry. Tonsor and Schroeder (2013) reported that “The core finding of this study is that the industry has a pork quality dilemma: an economically relevant portion of product is not meeting retail pork quality targets.” Pork quality traits such as, pH, shear force, drip loss and water holding capacity are recognised as important technological factors impacting pork quality. However, from our industry’s perspective what is truly important are the factors that drive purchase decisions and deliver an excellent eating experience for the consumer. The Aaslyng et al. (2007) (200 eferred study reported that all consumers pref onsumers tender meat, and that all the consumers preferred juicy meat almost to the same degree, with the juiciest meat receiving the highest acceptability score. Goddard et al. (2012) reported a strong positive relationship between overall consumer acceptability of pork and each of tenderness, juiciness and flavour. Aaslyng et al. (2007) concluded that “… if consumer acceptance is a high priority for meat product development, one should focus less on meat technological aspects and more on how the consumers respond to variations in sensory quality such as tenderness, flavour, juiciness and colour, thus gaining insight into other drivers of choice behaviour.” “Choice behaviour” in this context refers to what drives the consumer to choose pork. Sensory quality traits (tenderness, flavour, juiciness and colour) are measured using consumer taste panels which themselves are expensive, take a long time to evaluate many pork samples and require specialised tasting centres. Thus, we need to find other tools or ways to focus on improvement of these sensory traits. Obtaining an objective measure of colour is reasonably easy using readily available technology such as a Minolta CR-400 Chroma Meter (https://sensing.konicaminolta. us/us/products/cr-400-chroma-meter-colorimeter). However, tenderness, flavour and juiciness require a different approach.
Although there are limited literature reports, pork sensory traits (tenderness, juiciness and flavour) are reported to have low heritability (<0.13), favourable moderate genetic correlations with IMF (0.37 to 0.54) and low to moderate correlations with pH (.16 to.39) (Lei et al., 2020). Cannata et al. (2010) reported that increasing marbling level gave observed increases in sensory tenderness, and sensory juiciness scores and concluded that “… visual marbling score does influence the sensory qualities of pork. Marbling is one of meat’s visual characteristics that gives the critical first impression and is good instrument to measure pork quality”. Another interesting aspect of consumer purchase decisions is choice based on the visual “lean” versus “marbled” pork and this factor in particular varies across countries, regions within countries and even different segments of society. Font-iFurnols et al. (2012) identified two groups of Spanish consumers, ‘lean loin lovers’ (55.5%) and ‘marbled loin lovers’ lo (44.5%) based on their visual preferences; however, ding to their eating acceptability scores, all the according onsumers preferred loins with higher IMF consumers le levels. Genesus believes that the consumer is “king” and improving their eating experience is an important driver for long-term success of our industry. Pork long-t sensory quality traits are expensive and difficult to measure on a large number of animals and thus are good candidates for genomic evaluation and selection. From within the nucleus herds, Genesus incorporates weekly carcass evaluation for pork quality traits, ultrasound technology on live selection candidates and ultimately combines both together with genotypes. Additionally, we routinely collect pork quality traits on Genesus commercial pigs. This genomic evaluation approach provides the most accurate Genomic Estimated Breeding Values for key pork quality traits; pH, colour and marbling. This approach allows us to indirectly improve pork sensory traits we know drive the consumers eating experience and repeat purchase decisions. The importance of pork quality is being increasingly recognised by our industry. The commitment Genesus has shown for the previous 20+ years will continue, further contributing to the excellent eating experience and purchase decisions of our ultimate customer, the consumers.

HOW SUSTAINABLE INTENSIFICATION
feeds the world THE RISE OF BIOLOGICALS Produce. Reduce. Protect. Restore. This is the challenge farmers are facing as they continue their quest to produce food while meeting the demands of an increasingly disconnected consumer base while at the same time addressing growing environmental pressures and regulations. Farmers strive to raise their livestock or grow their crops to meet world demand while ensuring the profitability of their operations. This profitability is a balance of production x market price minus input costs and operational and financing expenses. Today I want to focus on the input side of the equation and how that world is changing. Inputs whether fertilizer, chemicals or antibiotics are a significant cost driver for farmers and are part of sustaining food supplies for our global population. In my last column I spoke of the importance nitrogen fertilizers play in providing protein necessary to sustain about one half of humans on our planet. In my career the use of synthetic chemistry in agriculture has become far more precise however, a common point of agreement is a reduction in synthetic inputs while maintaining food production levels and quality would be a desirable outcome for farmers, consumers and the environment. In my entire career of working with farmers I have NEVER met one farmer who wants to spend more money on fertilizer, herbicide, fungicide, insecticide, antibiotics, etc. Never…not one.
Ingredients • 1 ½ Cups pasta • 6 pork rib chops ½ inch thick • 2 tablespoons of canola cooking oil • 1 15oz can of tomato sauce • ¼ cup of chopped white onion • 1 teaspoon of Worcestershire sauce • Dash of pepper
• ½ teaspoon of dried basil • ¼ teaspoon of sugar • ¼ teaspoon of salt • ¼ teaspoon of garlic powder • ¼ teaspoon of crushed oregano • ¼ cup of grated parmesan cheese
Method Cook pasta in boiling salted water according to way you like your pasta done. Drain and place pasta in a baking dish. In a skillet or large pan brown the chops in hot cooking oil, drain off excess cooking fat, season chops with salt and pepper. Arrange chops over the cooked pasta in baking dish. Combine tomato sauce with onions, Worcestershire sauce basil, sugar and salt with garlic powder, oregano and pepper and mix well and pour over chops and pasta in baking dish. Cover and bake in a preheated oven at 350 degrees Fahrenheit for 1 to 1 ¼ hours or until meat is done and then sprinkle parmesan cheese over the top and bake until golden brown.

EU farmers experimenting with these new products. In North America we are witnessing the rapid introduction of all kinds of new biologicals onto the market. Everything from root enhancements to nitrogen fixation to pest control to stress tolerance products. Companies like Kimitec will be licencing their technology for commercialization to large agriculture multinationals to increase adoption at farm level so we can look for profound changes in crop science in the coming decade. I was personally witness to such an advancement. Jerry Stoller, founder of The Stoller Group based in Houston, TX, was a mentor of mine for several decades. He worked tirelessly to teach farmers, agronomists and retailers about plant physiology, plant nutrition and plant hormone technology. While we drove around visiting farms and walking fields, Jerry would share his thoughts about how we could harness the power of plants to help crops reach their maximum genetic potential. He would go on about the impact his company would make and he constantly taught me to speak “the language of the plant”. I think history will judge him as one of the godfathers of the biological revolution and while Jerry passed away in June of 2019, I know his influence will continue to grow. In November of 2022 The Stoller Group was acquired by Corteva for $1.2 billion dollars. Why? Because they recognize the potential of this sea-change in how we influence crop growth, reduce our environmental footprint while simultaneously increasing farm productivity and profitability.

In fact, if farmers could reduce the cheques they stroke for inputs, they would. And if farmers could reduce their environmental footprint, while increasing the viability of the farming operation so it can be passed to the next generation, they will. And this is where the new science of “biologicals” comes into play.
Broadly speaking, biologicals can be grouped into three categories; Biocontrols, Biostimulants and Biofertilizer (or Bionutrition) and on a recent trip to Europe, I had the opportunity to see all these areas being studied by a company called Kimitec in Almeria, Spain. This rapidly expanding company will be “source code” for many of the biological compounds hitting the marketplace. At their impressive Spanish headquarters, the company is isolating extracts from plants and then screening these extracts for herbicidal, fungicidal, miticidal and insecticidal activity. They are then using genomic sequencing to drill down to the molecular level and then working to determine exactly where in the plant processes there is positive or negative activity. By doing this they will be able mix and match plant molecules to help farmers reduce the use of synthetic products. This area of biological science is exploding with between 25% to 55% of Brazilian and

Overall, the use of biologicals and biotechnology advancements is crucial for the future of agriculture. These technologies have the potential to improve crop yields, protect crops from pests and diseases, and promote soil health, all while reducing the environmental impact of farming. By embracing these technologies, farmers can produce more food with less inputs, making agriculture more sustainable, efficient, and profitable.
