Instructions
Inasmallfoodprocessorcombinethegarlic,anchovies,rosemary, saltandpepper.Addtheoliveoilandprocessuntilitformsapaste, scrapingdownthesides.Removethebladeanduseaforkorspoon tostirinthemustard.Rubthepasteallovertheporkshoulder, looselycoveritwithplasticwrap,andrefrigeratefrom2to24hours. Preheattheovento450°Fandbringtheporktoroomtemperature whiletheovenheats.Placetheporkinashallowroastingpanand roast,uncovered,for30minutes,untilthetopstartstobrowna bit.Turntheheatdownto250°Fandcontinuetocook,uncovered, for6to8hoursuntilthemiddleoftheroastregisters175°F.onan internalthermometer,andasyouslidethethermometerinyoucan feelthatthemeatisverytenderthroughout.Iftherearejuicesin thepan(andIhavefoundthatsometimesthereareandsometimes none)pouroffthejuicesfromthepanintoaheatproofcontainer, likeaPyrexmeasuringcup.Placethisinthefridge,wherethefat willrisetothetop,whilethemeatrests.
Whenthemeatiscooked,ifyouthinkthattheoutsideoftheroast coulduseabitmorecrust/brownness,turntheheatbackupto 450°Fandletitcookforanother15to20minutes,togivethe outsideabitmoreofacrunchytexture.
Removefromtheovenandletsitforabout20minutes.Spoonthe fatoffthereservedjuicesinthefridgeandpourthecookingjuices intoaservingpitcherorbowl(warmitabitinthemicrowaveorin asmallpotifyoulike).Slicetheporkasthinlyorthicklyasyoulike, knowingthemeatwillfallapartatleastslightly.Sprinklethesliced meatwithabitofsaltbeforeserving,andpassthepanjuiceson thesidetodrizzleover.
