George Best Belfast City Airport is celebrating after receiving three prominent awards in just a matter of weeks for its hugely successful community and employee initiatives. The airport has been named winner of the ‘Local Community Impact’ award at the annual Business in the Community ‘Impact Awards’, the winner of the ‘Employer of the Year’ award at the WorkForce Annual Training Awards and Highly Commended in ‘The Right Place to Work’ at the Irish News Workplace and Employment Awards. The success comes just months after the launch of the ‘George Best Belfast City Airport High Fliers Apprenticeship Scheme’, which offers young people in the greater Belfast area the chance to gain expertise and skills in a vast range of disciplines. , Director of HR and Corporate Responsibility at the airport, said: ‘It was an honour to be recognised by three prestigious organisations as a local business that is doing the right thing with, not only our employees, but also within the community in which we operate. The momentum is building for the Holywood public realm works set to begin in 2014. Holywood Chamber of Commerce has two representatives on the public body that meets regularly with the consultants (URS) to discuss aspects of the works. The improvements will extend on two axes - from Coast Holywood restaurant to the former Bokhara Restaurant and from Herrons (Church Road) to Loganberry Deli on Shore Road. The £2m upgrade will include new footpaths and realignment of on street car parking, new lighting and a reduction in on street signage to reduce visual clutter and improve sight lines. Once planning consents have been made it is anticipated the works will begin in January 2014 and be completed in November. Holywood Chamber of Commerce has already noted that May Day 2014 shoudl not be blighted by the works. The Chamber of Commerce has been asked by NDBC to notify local businesses that the scheme has now progressed to the final design stages and NDBC would like to invite all businesses to participate in the Public Realm consultation which will be open until 13th September. The proposals are on display in Town Hall, Bangor, MLA Advice Centre and Holywood Library. You can also view and comment via the NDBC website northdown.gov.uk The public realm is intended to provide the local community with the opportunity to view the plans to find out more about the proposals. Local businesses are invited to attend a meeting on Tuesday 10th September at 6pm, Room 1, Queens Leisure Complex where members of the project team will be available to answer queries and where feedback is welcome on the proposals.
Make up maestro Paddy McGurgan has painted the faces of wellknown models, actresses, singers and TV personalities for almost a decade now; however, this September Paddy is taking his art to the extreme and hosting a series of master classes in the exciting, and at times ghoulish and garish world of special effects make up. Together with seasoned professional Christian Kotey, who has worked extensively in the TV and film industry as well as on live performance projects such as Cirque du Soleil, Paddy’s hugely successful academy, which he runs in conjunction with his commercial work, will train artists in fantastic new creative talents which are in big demand by the burgeoning film industry here. In addition, interested students may be eligible to get funding for the course from Northern Ireland Screen. And the bonus is, they’ll be ready to paint fabulously ghoulish faces just in time for Hallowe’en! The Special Effects course will run on Sundays for ten weeks beginning on 30 September, and will cover areas such as face painting, air brushing and stencilling as well as creating casualty effects – everything from black eyes to bullet holes and surgery wounds to scarring. Students will also learn first hand how to master the mechanical and technical aspects of creating casts, prosthetics & silicone moulds as well as working with these on top of human skin. All students will also take part in a professional portfolio-building photoshoot with live models as well as self-constructed prosthetics. North Down Craft Collective is the idea of 3 crafters who want to showcase local crafts in a central location in North Down on a regular basis. Over the past two years, Jenny (Cameo by Jennifer Brennan), Debbie McCann (Wee Yarn Designs) and William Clendinning (The Local) have been taking their craft to local fayres and are constantly being asked ‘where are you based? What fayre will you be at next?” They decided to look for a base and invite other local craftspeople to get involved... and this was the beginning of North Down Craft Collective! The group will meet on the second Saturday of each month at Holywood Old School on Church Road, Holywood from 10am-4pm. Along with Jenny, Debbie and William there will be another 6 ‘resident’ crafters. Each month 5 ‘guest’ crafters will attend and there will also be a vintage tea room serving tea, coffee and delicious homemade desserts. ‘I have been involved in organising craft fayres for a while now and I am always amazed at the array of talented craftspeople that we have here in Northern Ireland.’ says Jenny, a Textile Design graduate from the University of Ulster. ‘We hope that by showcasing some of this talent, people will have the opportunity to appreciate the new and traditional crafts that have re-emerged in the last few years and that are here on their doorstep!’ The collective is also planning to support local charities by inviting representatives to come along each month and set up a stall. More than 80 restaurants, cafés and gastro-pubs have put their names to this year’s Belfast Restaurant Week – a major city-wide initiative which promises a packed itinerary of food-focused events, special menus and offers to promote and champion Belfast’s vibrant, diverse and award-winning restaurant scene. Now in its second year, Belfast Restaurant Week is part of a dedicated tourism development initiative by Belfast City Council and Visit Belfast. While a key part of Belfast’s Naval defences, it proved of limited value during the German air attacks on the city in 1941. Slimming World are slimming down their fee for young people with a reduced price for 16 and 17 year old members of £3.95 a week instead of the standard fee of £4.95. Slimming World already offers free membership to 11 to 15 year olds who go to a group with a parent or guardian and have the support of their GP or school nurse. Sally Moore, who runs the Ballyhackamore and Holywood Slimming World groups every week, welcomes the new discounted price. She says: ‘Obesity doesn’t just affect adults, it’s a problem for people of all ages, and we’re seeing more young people struggling with their weight. Some are so severely overweight that it’s affecting their health, with young people being diagnosed with conditions like diabetes and high blood pressure that used to affect people much later in life. It has a huge impact on their self-esteem and confidence. It’s very important they get the right support to lose weight so they enjoy good health and feel great as they become adults. Holywood Chamber of Commerce has a new website at www.holywoodchamber.co.uk “Many of our members are small independent firms and our new website lists all our members with direct links to their websites or social media platforms, and our own social media platforms too! Our aim is to make our members businesses as accessible as possible to as wide an audience as possible. We are a not for profit organisation, whose members are as diverse as sole owner-occupiers to multinational companies. The Chamber exists to further improve and secure the trading and commercial interests of Holywood and its environs. . We also endeavour to foster friendship and unity among our members. By subscribing to Holywood Chamber of Commerce you can become part of a member-led organisation which works to support the local business community. Holywood Chamber also plays an active role in the social life of the town and we have representatives on our board from other local organisations such as the Residents Association; Conservation Group; District & Community Council and Transition Town. Our board of directors are all volunteers who give freely of their time and are elected at the Chamber’s AGM each May. This year we have joined with Bangor Chamber of Commerce to deliver the first Borough-wide Bangor Business Awards. Widowed Friends NI are a group of three ladies who have met together after their husband’s passed away. Elaine says, “Physical Arts have the ability to reach people from varied backgrounds, abilities, ages and cultures in ways few other disciplines can. They essentially enhance opportunities and have the power to influence lives for the better. It is our intention that APPA – NI will have a positive influence on our students whilst broadening the diversity of their skills.” Motivated by the APPA – NI vision, specialist facilities constructed at Prince Regent Road in Castlereagh have been carefully designed to allow students and teachers to learn in the most professional, safe and comfortable environment where creativity will thrive. The Dance Studio contains a harlequin sprung dance floor with high ceiling, mirrors, barres, a music centre and piano. The centre also houses a Continental high performance rhythmic floor and an aerial training space consisting of six suspended training units which will include three silks, one rope, a four people trapeze and one hoop or lyra. Approximately 31 primary and secondary schools fall within a two mile radius of the Academy. “As well as offering first class facilities, we wanted to position the Academy close to as many schools as possible, as training and educating children and young people are at the very core of what we want to achieve” says Elaine.

As personal coach for the 2009/10 Junior Rhythmic Disability champion and the 2011/13 Senior Level 2 Rhythmic Disability Champion, Elaine has been involved in coaching the Great Britain National Disability Squad. Therefore improving access to physical arts for the disabled is something she is very passionate about and an area in which APPA-NI hopes to take the lead. Furthermore, once a registered charity, the Academy aims to initiate outreach programmes with youth and community groups in areas that otherwise have limited opportunities in physical arts training. APPA-NI’s activity and learning structures are carefully designed appropriate to the age, maturity and proficiency of each student, allowing for progression as and when each individual is ready. Its timetable structure means students welcome to enrol for classes in one discipline or in a number of disciplines simultaneously.
Dance specialist physiotherapy APPA-NI will also offer full-time, on-site physiotherapy services. Katy Chambers is a dance specialist physiotherapist, advanced level Pilates instructor and Royal Academy of Dance trained teacher. Having undertaken a great deal of training in the field of therapy and injury management for dancers since graduating from the University of Ulster in 2009, Katy is now completing a Masters Degree in Dance Science at Trinity Laban, London and is teaching at The Urdang Academy, London. Katy has been teaching classical ballet, modern jazz and Pilates since 2005 and this year will be teaching the body conditioning module for full time vocational students at the Urdang Academy in London. Alongside this, her private physiotherapy practice will now extend to working with Move Physiotherapy in West London, offering therapy treatments, Pilates and on call services to Rambert Dance Company. Katy will be returning to work at APPA-NI on completion of her Masters Degree in July 2014.

Fire Dancers, Choirs, Rock Bands, Dance Groups, Free Runners… It must be Holywood Culture Night 2013! Last year Holywood’s first ever Culture Night was a huge success. Seventy Five businesses took part; supporting, sponsoring or having activities take place on their premises. One hundred performers; free runners, stilt-walkers, the Art and Home Cow Parade, dance groups, singer songwriters, jugglers and jazz bands, there was a variety of talent from one end of the town to the other. And the people of Holywood supported it in their droves. It’s worth remembering that all the entertainment on Culture Night was, and will be, provided free of charge. This year’s Culture Night has certainly captured both the public imagination and the enthusiasm of artists and cultural organisations. Holywood is again throwing open it’s arms and laying on an evening of entertainment and culture. The list or performers continues to grow and highlights this year will include musical performances by Phoenix 23, Jazz Manouche, Celtic Lyres, the Classical Guitar Society of Northern Ireland and many more. There will be dancing in the streets with the Ballroom Blitz Ballroom Dancers and Argentinean Tango. The Rathgael Gymnastics Free Runners will also be there, as will the Art & Home Cow Parade and the Belfast Steam Punk group will be hosting their very own Mad Hatter’s Tea Party. And you certainly won’t go hungry! If there’s one think there’s no shortage of in Holywood it’s good cuisine and many of the local eateries including Coast and The Bay Tree will be laying on their own entertainment and events throughout the night. Some businesses have chosen to coincide their celebrations with the 75th anniversary of the Wizard of Oz and are hoping to put together a night more eclectic than even Dorothy could imagine. Their technicolored activities include a “No place like home…” exhibition of artwork at Art & Home. The exhibition will which feature local scenes and landmarks by artists including Tom Kerr, Cupar Pilson, Colin Gibson and Jim McDonald. The Men’s Shed, a group based at Redburn Loughview Community Forum are also creating Aunty Em’s Farm and will be encouraging young people to plant their own seeds and experience farmyard life. So put on your ruby slippers, follow the yellow brick road and bring your little munchkins – young and old to Holywood Culture Night, Friday 20th September 5pm onwards. A night of free entertainment that’s right up your street!

MOORISH SKEWERS Serves 4 Preparation time: 10 minutes, plus marinating Cooking time: 5 minutes 500g pork fillet (or chicken, beef , lamb*) 1 teaspoon hot or sweet pimentón 1 teaspoon ground cumin 1 teaspoon dried oregano 1 tablespoon fresh thyme leaves 1 garlic clove, finely chopped drizzle of olive oil salt and pepper For the mojo picón 1 slice white bread 4–5 tablespoons Spanish olive oil, plus extra 2 garlic cloves 5 dried cayenne chillies 1 teaspoon cumin seeds 1 teaspoon sweet pimentón 2 teaspoons sherry vinegar Salt 1 Trim the pork fillet of any excess fat and cut into 2cm cubes. Place the meat in a large mixing bowl and add the pimentón, cumin, black pepper, oregano, thyme and garlic. Mix well, drizzle over the olive oil, leave to marinate for at least an hour, but anything up to 2 days is fine. 2 Meanwhile, make the mojo picón. Start by frying the bread in a little olive oil, drain on kitchen paper and tear into pieces. Using a pestle and mortar, mash together the garlic, cayenne chillies, cumin seeds, pimentón, fried bread, vinegar and salt until 24

or flank; lamb use the leg. you have a smooth paste. You could also use a food processor for this bit. Start adding the olive oil in a thin drizzle while you are still mixing. 3 When you are ready to cook the pinchos, thread the meat on to skewers (if you are using wooden skewers it’s a good idea to soak them in water for 30 minutes to stop them burning). Pinchos morunos can be cooked over charcoal (the best way, in my opinion), under a hot grill or in a griddle pan over a very high heat. Cook for about 2 minutes on each side – you want them to be cooked through but still juicy on the inside. Season with salt and pepper and serve with the mojo picón. *For chicken, use the thigh; beef use the skirt
Fideua PAELLA WITH PASTA Serves 2 Preparation time: 20 minutes Cooking time: 30 minutes 200 g fideos (thin, short angel hair pasta) broken into 2-cm lengths 1 fresh squid (about 350 g), cleaned and chopped into 1-cm pieces 10 peeled prawns, 2 garlic cloves finely chopped 1/4 onion nfinely chopped 1 tomato, finely chopped pinch of saffron 1/2 teaspoon sweet pimentón 1/2 teaspoon fish stock powder or cube 1 teaspoon salt
1 Heat about one-third of the olive oil in a wide frying pan over a medium heat. Add the dried pasta and fry for about 5 minutes until it turns golden. Remove from pan, set aside. 2 Add the rest of the olive oil to the pan, increase the heat and add the chopped squid and salt. Squid can be very temperamental as it releases a lot of water when you start cooking it so it tends to explode in the pan. It’s fair to say this bit is a tiny bit dangerous. I recommend you hold a pan lid over the pan, so that the steam can still escape, and stand back. Give it a quick stir, half cover with the lid and leave to cook for a couple more minutes. Don’t scrape the bottom of the pan, the sticky layer on the bottom is essential to make a rich stock. 3 When the squid has browned, add the peeled prawns, garlic and onion and cook for another 5 minutes until everything is dark golden (this will happen fairly quickly because of the high heat). Add the chopped tomato, saffron and pimentón and stir constantly to dissolve the sticky bits on the bottom. N o longer than 2 minutes. 4 Add the fish stock powder or cube and 1 litre of water. Bring to the boil and simmer for around 10 minutes before adding the fried pasta. You need just enough water left in the pan for the pasta to cook and absorb all the remaining liquid. A good thin fideo pasta should cook in about 3 minutes. Stir in the pasta, cover the pan and cook until the liquid has been absorbed. 5 Remove from heat, leave for 1 more minute, uncovered, to create a toasted layer of pasta on the bottom of the pan – it will taste like heaven.

SPANISH DOUGHNUTS WITH CHOCOLATE Serves 2 Preparation time: 30 minutes Cooking time: 10 minutes 400 ml water 400 g strong white flour pinch of salt 1 tablespoon olive oil 750 ml vegetable oil for deep-frying caster sugar and ground cinnamon (optional) for dusting For the chocolate 1 small bag of Spanish chocolate powder for hot dipping chocolate 1 pint milk 50 g dark chocolate, roughly chopped 1 Bring the water to the boil. Meanwhile place the flour and salt in a large pan and place over a very low heat. Stir lightly for 3–4 minutes so that the flour dries out and becomes fluffy. 2 As soon as the water has boiled, pour it over the flour and mix it with a wooden
spoon for about 1 minute until a dough starts to form. Don’t over-mix and don’t worry if there are some lumps, you can always finish it by hand once it has cooled down slightly. Halfway through mixing add the olive oil. 3 When the dough is still warm, knead for 1 minute. Place in a piping bag (not plastic) with a 8-point starshaped nozzle and spread out a sheet of baking parchment. Start squeezing the batter on to the parchment. At this point you could freeze the churros to cook later straight from the freezer). 4 Heat the vegetable oil in a large deep pan – ideally you want it to be 230–240°C to get that delicious crispy outside and soft interior. To test whether the oil is hot enough, drop a small piece of the dough into the oil – if it immediately floats to the surface and starts fizzing away then the oil is hot enough. If it sinks, wait a little longer. 5 Once the oil is hot enough carefully slide your churros, a few at a time, into the pan. Cook them for 40 seconds on one side and 30 seconds on the other. Remove and drain on kitchen paper and repeat. They should be very crispy on the outside and moist on the inside. Dust liberally with sugar mixed with a little ground cinnamon (optional) while they are still warm. 6 For the chocolate, bring the milk to the boil in a pot and just before boiling point add the chocolate powder while whisking. Stir constantly for 10 minutes so the chocolate doesn’t burn. Stir in the dark chocolate at the end to give nice body and intensify the flavour. Serve the chocolate in a cup and dip your churros in it. www.bloommagazine.co.uk

Local School Project Goes Global A wonderful project undertaken by local pupils looks set to hit TV screens right across the world. A P7 project by pupils at Glencraig Integrated Primary School, Holywood is being used by award winning television company, Sixteen South, in the first animated children’s series of its kind to be produced in Northern Ireland. Creative Director at Sixteen South, Colin Williams, visited the school in his role as a STEM Ambassador to talk about creativity and television and challenged the pupils to produce some art from things they found on a beach in the style of their new show, Driftwood Bay. Colin said: ‘The quality of the children’s artwork showed that they had really put their heart and soul into the project. We were so impressed by their imaginative creations that we decided to choose one of their pieces, a lovely Bear called ‘Brian’ made from basalt pebbles to use in a scene in our new animation series, Driftwood Bay. Along with my team at Sixteen South, I became a STEM Ambassador because I’m passionate about seeing the creative industries in Belfast continue to grow and bring prosperity to the city. STEM allows us to volunteer our skills and expertise with our future leaders. We’ve been engaging with primary schools, not only sharing our knowledge and experience, but stressing to children that there are great careers in Science, Technology, Engineering and Maths.’ 30

Mr Beattie, P7 teacher at Glencraig Integrated Primary School, said: ‘Colin is so inspirational. When he spoke to the class he set them a project of going to their local forest or beach to gather driftwood and pebbles and they were very enthusiastic about it. He has introduced the children to a whole new career idea and it was great that they were given the chance to source local materials.’ ‘Brian the Bear’ was created by David Ditty, Seany McMahon and Robbie Turner. It will be incorporated into Driftwood Bay which is part funded by Northern Ireland Screen and it is anticipated that, when it begins to air in Spring 2014, the series will be seen in most countries in the world. It has already been acquired in the UK by Nickelodeon, RTE, Sprout/NBC in the US, ABC Australia, and the leading broadcasters in Sweden, Norway, Finland and Israel. The show is represented and distributed by The Jim Henson Company. W5 STEMNET works with schools and Northern Ireland businesses to assist with the curriculum and career activities. Volunteers from local companies act as role models for students and help to inspire them through engagement about the value of STEM in their lives.
