Welcome Easter’s arrival provides most of us with some well earned time off to spend with friends and family. This year in Belfast, there certainly is no shortage of things to do. Just down the road from many of us is the extraordinary Titanic Belfast. The amount of research, planning, creativity and pure hard work that has gone into this project will undoubtedly astonish the community and visitors alike. Already a friendly addition to the skyline, this is set to revolutionize Belfast as a destination but also that area of town, a once derelict landscape into a ‘must do’. But as the city develops and this building takes centre stage this year, behind the scenes the cogs of the city have and will continue to turn, that means us, you and the community as a whole. It’s up to us to harness all that comes from this as we welcome more and more people to our brilliant city. We have certainly got the buzz. And theres plenty to buzz about in this issue too. TITANIC BELFAST FESTIVAL LAUNCH

Organised by Belfast City Council and supported by NITB with funding from DETI, the packed programme of activity will mark the centenary of Titanic’s fateful maiden voyage and will run from 31 March to 22 April. Highlights will include the return of MTV to Belfast with an open air concert featuring Olly Murs, Rizzle Kicks and Sean Paul, the staging of the world’s biggest ever digital projection lighting show and a poignant public commemoration service marking the unveiling of a Titanic Memorial Garden within the grounds of City Hall. Frock Around the Dock

Good News Galore For Baked in Belfast

Sheen seal of approval

Hollywood acting legend Martin Sheen has lent his support to a group of NI walkers who will be trekking Spain’s Camino de Santiago this July on behalf of local charity Action Cancer. The star has sent a personally-signed letter to the trekkers, offering words of wisdom and encouragement. Sheen’s most recent screen appearance was in movie The Way, which tells the story of one man’s pilgrimage along the Camino de Santiago following the death of his son. In his letter Sheen says ‘If you feel the need for added motivation may I suggest you choose someone you love and admire, living or deceased, perhaps someone who battled cancer and dedicate your pilgrimage to them. Baked in Belfast’s award winning range of Jams, chutneys and marmalades are to be stocked by Selfridges in London. This order was facilitated with the help of InvestNI Food division. Baked in Belfast has also just started to supply Titanic Belfast with handpainted pottery and jam packs. And, in what has been a fantastic month for the company the tearoom in Orby Drive won first prize in the Customer Service Awards organised by Belfast City Council. Top marks were awarded for products, customer care, food quality and customer experience. The report, by a secret shopper, concluded ‘I loved my experience and came away enthusiastic about the quirkiness of the cafe and delighted at the hospitable welcome I had been given. A COMMUNITY CUPPA AT OASIS

Oasis Cafe is a little business but one giving back to a community in East Belfast which is affected by social deprivation in a big way. Run by the community organisation, Oasis Caring in Action, the social enterprise provides not just coffee but life changing opportunities. Based in the ground floor of the Oasis Centre in Castlereagh Street it aims to ‘Transform Lives, Transform Communities.’ Business Development Manager Jill Dunlop said the cafe provides an ‘excellent facility’ to connect with the public, volunteers and partners. Training opportunities are offered to volunteers who benefit from on the job experience and formal training opportunities. And Jill explains this for many leads to paid employment within the catering businesses. ‘It gives back by helping to empower the people who live within the community,’ she said. ‘The coffee shop is a great little business that does tremendous work in the community, employing people and giving many a chance to get back into the work environment. SUPPORT FOR DISABLED CHILDREN NEEDS

The Children with Disabilities Strategic Alliance (CDSA) recently published its new manifesto, which identifies the increasing difficulties being faced by local children with disabilities and their families in accessing public services due to the squeeze on public expenditure. Pauline Leeson, Chief Executive Children in Northern Ireland (CiNI), the regional umbrella group for the children’s sector, and co-chair of CDSA, said, 'The Children and Disabilities Strategic Alliance is asking MLAs to give their support to prioritising children with disabilities and their families in the Programme for Government and Budget processes. More transparency is required to show how public monies are being targeted to benefit children with disabilities and their families. We need to see agencies collaborating and co-operating to bring forward innovative solutions and make the best use of the monies available for children and young people with disabilities.' Waste Education

Belfast City Council’s Recycling Education and Promotions Team offer free educational talks, quizzes and other activities to community groups of all ages throughout the year. They are particularly keen to come along to adult groups who may have questions regarding recycling and waste issues, or who have an interest in how waste is dealt with. They can tackle issues such as: Waste prevention, Consumer issues and packaging, Saving money through food waste reduction, landfill, the environment and recycling, Recycling schemes, which rubbish can go in which bin etc. They can come out any time during the day, as well as evening and weekend work. Sessions normally last one hour but are flexible and can devise sessions to suit your needs. The Game Show

Pupils from an East Belfast school have tapped into their local community to keep alive the street-games, songs and rhymes that once rang through the city streets on a daily basis. Nettlefield Primary School and Willowfield Seniors Group in East Belfast have bridged the generation gap to produce a DVD, website (www.belfaststreetgames.co.uk) and book which will ensure that the games and pastimes of yesteryear are not lost to future generations. The project was the idea of Judith Acheson, Extended Schools Coordinator. As well as demonstrations of the games and songs, the 48-minute DVD also features interviews with four remarkable ladies who have lived in the area their entire lives, 87-year-old Madge Taggart, Sally Lowry, Phil Mussen and Edna Rowan. The book ‘Are Ye Comin’ Out to Play? – Songs, Rhymes and Games from an East Belfast Childhood’ features photographs spanning 10 decades of life in East Belfast. Barnardo’s opens first Donation Centre at Connswater Retail Park

Barnardo’s has opened its first Donation Centre and Discount Shop in Northern Ireland at Connswater Retail Park . Goods donated to the Donation Centre will be sorted and sent out to Barnardo’s network of 21 stores across Northern Ireland and any vintage goods will be sent direct to the store in Coleraine which specialises in vintage donations and high quality baby goods will be directed to their speciality Baby Shop in Derry. Once they reach the right age they’re slaughtered, hung for three weeks then it hits the counter ready for the customers. The simplest thing for a steak is salt and pepper, no sauces and you’ll get the full taste. Personally in a steak I’m looking for a nice cover of fat and a dark colour. The darker the colour the better the steak. Straight in the frying pan and a bit of blood in the middle and it doesn’t get any better. If someone wants it hung longer then we can do that. Higher end is sirloin, rib eyes, fillets. The best money can by. Then there’s chump, frying steak, shin and roasts. If you’re wanting to spend a few pounds sirloin and rib eye. Fillet is very lean but for me you need fat for the flavour. On a budget, chump is good as its very versatile, the best would be fajitas. Fry it up with onions, peppers, mushrooms, a bit of soy sauce, into the fajita wraps, grated cheese and under the oven, you cant beat it. It’s tender but sirloin is the winner as a treat. Heads You Win Milliner Nicola McKee’s incredible artistic flair and creativity has made My Little Hatbox a big success.

I

‘ n school and college I was an artist with keen interest in photography but my main love was in textiles,’ says Nicola McKee, the creator of My Little Hat Box. ‘With textiles I could bring my 2D ideas to life in a 3D form, so with a life long love of vintage clothing, accessories and years making many things paved the way to the natural progression into millinery. I feel they are not just hats or fascinators but little pieces of art for your head.’ Around eight years ago a family friend asked Nicola if she would make a fascinator and she said yes, she saw it as a new outlet for creativity and she really enjoyed the experience. ‘I had been making pieces on recommendation but more as a hobby as it was something I really enjoyed. Early in 2011 I had finished work to go on maternity leave. One morning about 3am with time to myself I kept thinking then was the perfect opportunity to launch My Little Hat Box and before I knew it I was writing down ideas and making a Facebook page! I knew that I was going to be busy especially being a mum for the second time, but I love a challenge and have never looked back as MLHB has gone from strength to strength.’ My Little Hat Box designs and hand makes bespoke head pieces and fascinators with a vintage twist, from the ‘blushing bride’ to the ‘burlesque beauty’ and everything in between. My Little Hat Box creates pieces that are individual and completely one of a kind and can be seen at the popular shows promoting local design like Quirky Wedding Fair, Platform Belfast and The Style Fair. Most recently collection was showcased in a new store Pin Up Creative Laboratory in Belfast City Centre. So as the business grows and word of Nicola’s incredible work spreads, what has been the highlight of the journey so far? ‘Watching my small business grow so much in such a short period of time, it is beyond anything I could have imagined my first year and I have been able to work with some incredible and creative clients which has allowed my own creativity to flow and I feel that I have created some of my best pieces of work to date. I love the creative freedom and being able to express myself and my loves through the pieces that I make. It is a brilliant feeling watching my business grow and still being able to watch my family grow too. The addition of coconut milk and sesame oil gives an unusual nutty flavour to the dressing for this colourful noodle salad. Serves 4–6 350g/12oz somen noodles 1 large carrot, cut into thin strips 1 bunch asparagus, trimmed and cut into 4cm/11/2 in lengths 1 red pepper, seeded and cut into fine strips 115g/4oz mangetouts, topped, tailed and halved 115g/4oz baby corn cobs, halved lengthways 115g/4oz beansprouts 115g/4oz can water chestnuts, drained and finely sliced For the dressing 45ml/3 tbsp roughly torn basil 75ml/5 tbsp roughly chopped mint 250ml/8fl oz/1 cup coconut milk 30ml/2 tbsp dark sesame oil 15ml/1 tbsp grated fresh root ginger 2 garlic cloves, finely chopped juice of 1 lime 2 spring onions, finely chopped salt and cayenne pepper To garnish 1 lime, cut into wedges 50g/2oz/ 1/2 cup roasted peanuts, roughly chopped fresh coriander leaves Make the dressing. Spanish Style Hake juice and spring onions in a bowl and mix well. Season to taste with salt and cayenne pepper. Cook the noodles in a large saucepan of boiling water until just tender, following the directions on the packet.

Cod and haddock steaks or cutlets will work just as well as hake.

Serves 4 30ml/2 tbsp olive oil Meanwhile, cook the vegetables 25g/1oz/2 tbsp butter in separate pans of boiling 1 onion, chopped salted water until crisp-tender. 3 garlic cloves, crushed Drain, plunge them into cold 15ml/1 tbsp plain flour water and drain again. Drain 2.5ml/ 1/2 tsp paprika and refresh the noodles in the 4 hake cutlets, about same way. 175g/6oz each 250g/8oz fine green beans, Toss the noodles, vegetables chopped and dressing together. Arrange 350ml/12fl oz/11/2 cups on serving plates, garnish with fish stock lime, peanuts and coriander. 150ml/ 1/4 pint/ 2/3 cup dry


white wine 30ml/2 tbsp dry sherry 16–20 live mussels, cleaned 45ml/3 tbsp chopped fresh parsley salt and ground black pepper crusty bread, to serve

15ml/1 tbsp sunflower oil 175g/6oz/11/2 cups soft fruits, such as redcurrants, strawberries and raspberries 250ml/8fl oz/1 cup Greek yogurt 5ml/1 tsp icing sugar.

Heat the oil and butter in a sauté or frying pan, add the onion and cook for 5 minutes, until softened, but not browned. Add the garlic and cook for 1 minute more.

Preheat the oven to 200ºC/400ºF/Gas 6. Cut the sheets of filo pastry into 18 squares with sides about 10cm/4in long. Cover the filo with clear film to stop it from drying out.

Lift the baskets out carefully and leave them to cool for 5–10 minutes on a wire rack. Reserve a few sprigs of redcurrants on their stems for decoration and string the rest. Stir into the yogurt with the strawberries and raspberries. Spoon the yogurt mixture into the filo baskets. Decorate them with the reserved sprigs of redcurrants and sprinkle them with icing sugar to serve.

Mix together the plain flour and paprika, then lightly dust over the hake cutlets. Push the onion and garlic to one side of the pan.

Brush each filo square very thinly with oil, and then arrange the squares overlapping in six small patty tins, layering them in threes. Bake for 6–8 Add the hake cutlets to the pan minutes, until crisp and golden. and fry until golden on both sides. Stir in the beans, stock, wine, sherry and seasoning. Bring to the boil and cook for about 2 minutes.

We speak to June, the wonderful host at Cafe Mocha who tells us how passionate she is about fresh food and her customers.

T

he business has been on the road 15 years,’ says June ‘And we’ve been here since 2007. We came from a fast food background and I have always been a baker. My mum was a pastry cook and my dad was a chef so I grew up with it and always wanted a coffee shop. We bought it as a going concern and a lot of the menu was already established. The previous owner taught me all the recipes and I then added my own twist. We do a breakfast special, bagels, American French toast, with maple syrup, homemade toffee sauce, blueberry and white chocolate scones to name a few. The Ulster rugby being based across the way a while back was an influence and we created chicken burgers for them and we get the odd player still coming in for one of those.’ Everything in Cafe Mocha is made fresh every single day so the likes of the stews, lasagne and broccoli bake are very popular but when it comes to a favourite, soup leads the way. ‘The Cregagh Road is mad for soup!’ says June. ‘I do chicken and vegetable, tomato and pepper and broccoli and stilton. Sometimes the customers give us recipes such as sweet potato recently so we do that one day and sometimes people give us old family recipes that we try. We do a big take away menu too and the elderly love the soups and stews.’ And with the incredible selection comes a very loyal customer base and they know and love their food and the freshness and quality is of

course a huge appeal. But the customers are also connoisseurs when it comes to other things. ‘We’re the only shop on the road that does the ground coffee and we do Matthew Algie coffee. We have the Italian machine that grounds it fresh to order. It can be a bit slower but it’s very popular. If you’re a connoisseur you’ll know the difference and if I changed it, they’d know right away!’ The regular custom and buzz about the place is testament to June’s belief in good quality food, made fresh and served with a smile. ‘I have a big personality so I enjoy the interaction with the customers and you may even hear me singing in the background if there’s a Dolly Parton record on, the entertainment is free! We love it and we really have made some great friends and regular customers over the years we have been here.’ Big favourites are the breakfast special, the Ulster fry which is of course hard to beat, french toast with homemade toffee sauce and bananas, fresh cream, butter and brown sugar dusted with cinnamon. The club sandwich is very popular as is the chicken burger and all food is available for take away at £1 reduction. You can call and collect too so just leave your name and time you want it and they’ll have it ready to go.

It almost seems as if its part of the community such is the importance of Wyse Byse in so many of our lives. Whether you called in last week to pick up something for the house or have memories as a child being there with parents or grandparents, amazed by the selection of things to poke at that age, we have all made use of this one stop shop at some point. In fact, such was the varied cross section of items in store, it basically came down to; if they don’t have it, you don’t need it. Wyse Byse is a family owned independent store founded in 1972 by two brothers who are still actively involved in the day to day running of the business and are now joined by two of the next generation. Wyse Byse actually have three branches in total; Newtownards Road and Cregagh Road Belfast and Church Street Ballymena. The Ballymena branch opened in 1972 followed by Cregagh Road in 1974 and then the Newtownards Road branch in 1984. Wyse Byse motto was always to provide a quality product at an affordable price. The range of merchandise extended quality over the years and all the branches grew in size from a 2,000 sq ft store to now three of approx 18,000 sq ft each. ‘Wyse Byse employ around 100 staff many of whom have been with us for over 30 years. Wyse Byse have always endeavoured to find stock that our customers like and are always keen to introduce new lines as all the loyal customers know, our furniture dept has grown greatly over the past number of years and we source stock from all over the world to bring value for money to our customers.
