Violet Livingstone, known as Vi, celebrates her 100th birthday with family, friends and staff during a special party in Age NI’s Skainos day centre, East Belfast. Giro d’Italia 2014 Be Part of the Big Start On 8 May 2014 over 200 elite cyclists and entourage will descend on Northern Ireland in search of glory. Belfast will host a welcome celebration to remember! The Giro is one of the world’s most prestigious sporting events, and every other year its opening stages are held outside its home country of Italy. The organisers chose Northern Ireland for 2014 because of our magical landscapes, quality roads that are ideal for the race, the iconic architecture of our cities and the warmth and enthusiasm of our people. Giro Facts & Figures • The Giro d’Italia is a long distance, multi-stage bicycle road race for professional cyclists. It is held primarily in Italy, over a three-week period in May and June each year.

• The route of the Giro varies each year, but the most difficult stages are usually the Alpine and Apennine mountain passes. This year the highest point or ‘Cima Coppi’, of the race will be the Passo di Stelvio (2,758m) in the Eastern Alps. • Since 1931, the overall winner of the Giro wears the Maglia Rosa (pink jersey). Pink is the colour of the race’s founding sponsor, Italy’s La Gazzetta della Sport newspaper. Last year’s winner was Italian Vincenzo Nibali.

hen there’s bright sunlight you could be excused for leaving your flashgun at home, but often this is one of the best times to use flash. Direct summer sun is harsh and unflattering and creates shadows across the subject. Using fill-in flash can reduce or remove this by filling the deficient areas with light. Fill-in flash is also useful to illuminate your subject if it is backlit. “Almost all digital cameras have built in flash, and the ability to over-ride auto flash by switching it on even when there’s enough light to shoot without it. With SLRs you can use a separate flashgun – this gives you more light, and the ability to bounce the light for more diffused illumination. You can avoid the harshness of the sun altogether by shooting in the shade – try fill in flash here to brighten the photo up
“dual shoot” mode which will take the same picture twice, both with and without the flash. Once you’ve got the lighting right, you’ll be looking for the perfect portrait. My tip is to get the camera level with the subject (whether it’s the kids or the dog) to give a more natural composition. Focus on the eyes for maximum impact. Photographing silhouettes can be a great way of conveying mystery, drama and emotion in your pictures and the power of the summer sun provides the presents the perfect opportunity to try them. To do this you need to position the subject in front of the light source (most likely the sun or sky) and take your lightmeter reading off the background rather than the subject. To do this with a compact camera, half press the shutter button with the bright

Memory cards are comparatively much cheaper than film, and of course, they’re re-usable! “Now you should be all set to capture all those special memories, but don’t forget, the only truly permanent way

TO FINISH juice of 2 lemons 3 teaspoons cumin seeds, lightly toasted and roughly ground The following is the Moro recipe for roast pork belly, but if you have a tried and trusted method, feel free to use your own. Preheat the oven to 230°C/450°F/ Gas 8. Mix the garlic with the fennel seeds and rub it over the flesh side of the pork belly. Turn the meat over and dry the skin thoroughly – a hair dryer works well. Generously sprinkle the skin with the salt and then leave for 20 minutes, then dust off the excess salt. Place the onion half in a roasting tin and put the pork belly on top to create a convex shape, which will help the crackling form. Place
on the top shelf of the oven. It is important that the oven is really hot to start with, in order to blister the skin and create good crackling. Roast at this high heat for 20-30 minutes or until hard crackling has formed, then reduce the heat to 190°C/375°F/Gas 5. Pour 3 tablespoons of water into the bottom of the pan to prevent the meat juices burning. Continue to cook for about 2 hours or until the meat is soft and tender. Cool completely and remove any bones. Dice the pork into generous bite-sized cubes. Heat a frying pan until hot, but don’t add any oil. Fry the cubes of pork until they have caramelised, crisped up and heated through. Transfer to a plate, squeeze over plenty of lemon juice and sprinkle liberally with the cumin. Add extra salt to taste if needed.

RED PEPPER TORTILLA “Red peppers add sweetness and colour to a tortilla. Perfect with a Gilda and a glass of fino sherry” Serves 6-8 2 medium potatoes (225-250g), peeled, sliced into quarters lengthways and cut into thin triangles 8 tablespoons olive oil 1 large Spanish onion or 2 medium onions, thinly sliced 2 sprigs of thyme 2 bay leaves, preferably fresh 2 red bell peppers or 3 Romano peppers (page 280), deseeded and sliced ¼ teaspoon sweet smoked Spanish paprika (page 280) 8 organic or free-range eggs Toss the potatoes with ½ a teaspoon of salt, transfer to a colander and leave to stand for 15 minutes. Set a large non-stick

frying pan over a medium heat and add 4 tablespoons of the olive oil. When hot, add the onion, thyme, bay leaves and a pinch of salt and cook for 10 minutes, stirring occasionally, until the onion is soft and golden. Add the peppers and paprika and continue to cook for 10 minutes until the peppers start to soften. Now add the potatoes and cook for a further 15 minutes or until tender but not coloured, stirring every now and then. Remove from the heat and transfer the mixture to a dish, discarding any excess oil. Cool for 5 minutes. Crack the eggs into a large bowl and whisk lightly. Remove the thyme and bay leaves and fold the vegetable mixture into the eggs and check the seasoning. Wipe the frying pan clean and return it to a medium to high heat. When hot add 2 more tablespoons of oil and swirl it around the pan and up the sides to coat. As the oil begins to smoke, pour in the mixture, while gently
shaking the pan with the other hand to ensure it is evenly spread. Lower the heat and let the tortilla cook for 3-5 minutes. Using a spatula, gently check whether the underside of the tortilla is golden brown and the runny exposed side has formed a ring of cooked egg around the edge. Remove from the heat, rest for a minute, then take a plate about the same size as the pan and rest it over the pan. Carefully invert the tortilla on to the plate. Return the pan to the heat. When hot, add the remaining 2 tablespoons of oil and gently slide the tortilla back into the pan to cook the other side. Lower the heat and tuck in the edges of the tortilla to neaten. Cook until golden brown underneath and firm to the touch, turning again if the tortilla is still runny in the middle. Remove from the heat and leave for a few minutes to settle, then turn the tortilla out on to a clean plate. Serve slightly warm or at room temperature. bloommagazine.co.uk 31

Most of my everyday clothing comes from local charity shops. In fact, my work wardrobe is almost entirely made up from wonderful ‘capsule’ pieces that I’ve
found on my thrifty travels through East Belfast. This wonderful grey dress from NI Hospice is perfection personified and at £3.95 is one of my best buys ever! Wonderful in winter with a fitted jacket, scarf and knee-high boots, or in the summer with a cardi and court shoes, this tailored dress is versatile and elegant.

JOINING THE DOTS And talking of jackets, my polka-dot purchase from Marie Curie is a modern take on the wide-collared, fitted style of the 1940s. It’s stunning with my grey dress or with a plain white t-shirt and jeans. I bought it with my loyalty card from Marie Curie too which made it even more of a bargain. You can find out about the loyalty scheme in any Marie Curie store.

And finally, I adore the purple and grey plaid skirt I picked up, again from the NI Hospice. It’s a bang-ontrend midi length and just like the dotty jacket, has a hint of 1940s about its fitted shape and length. I love Dotty jacket, £2 (after loyalty card discount) from Marie Curie
to wear it with ankle boots, a plain black v-neck and, yes you guessed it, some statement vintage beads!
