Enterprise, Trade and Investment Minister Arlene Foster has launched a new Skill project at East Belfast Mission, which aims to assist organisations in Northern Ireland and Great Britain to develop their social enterprise ideas. The Skill project will offer master classes and workshops tailored to the needs of visiting groups, who want to find out how to set up and run a successful social enterprise. It is being supported by Invest Northern Ireland’s Social Entrepreneurship Programme. East Belfast Mission is an award-winning social enterprise providing services to the elderly, people on low income, young children, the homeless and the unemployed. Local TinyTalk Baby Signing classes are growing with an all new toddler class coming to Belfast! These classes are for little ones aged 18 months to 3 years and are open to everyone – whether they have been to baby signing classes or not. Fun with well-known action songs, sharing great story books, playing with puppets, props and percussion instruments. As the children are older though, and generally standing, the classes are more physical, with greater interaction, parachute fun and lots of language games. TinyTalk Baby Signing classes have also been nominated for the prestigious What’s On 4 Juniors Awards 2014. Local teacher, Shelley Wilson, has been nominated for Most Outstanding

Harland Youth have announced a partnership with prestigious east Belfast side, Harland & Wolff Welders, with the aim of providing players that will go into the Tillysburn Park first teams of the future. Harland Youth, a cross community and intergender club side, have confirmed the deal which they are optimistic will bear fruit throughout the years allowing a transfer of skills and knowledge and a sharing of ideas. Harland Youth’s links to east Belfast are everlasting and the club are delighted, through this exciting initiative with Harland & Wolff Welders to further strengthen this bond. Harland Youth boast players from Belfast and beyond, but the club’s east Belfast origins are extremely important, and, like this project, they will continue to look at a variety of ways where they can promote, celebrate and enhance such a positive and meaningful connection. The chairman of Harland Youth, William Sale was enthusiastic about the new connection: “Harland Youth is very excited at the prospect of working closely with Harland & Wolff Welders and forging strong links,” he said. “Like ourselves Harland & Wolff Welders has an excellent reputation in identifying, developing and nurturing young footballers to reach their potential. We would like to thank Harland & Wolff Welders for giving us this opportunity and we look forward to pressing ahead with the plans for the future.”

Claire Ferry and Maitri’s team of experienced teachers are delighted to welcome people to practice a range of yoga styles at classes throughout the week, or to experience massage and other complementary therapies. Maitri (pronounced “my-tree”) means loving-kindness or universal friendliness. It was Claire’s dream to create a welcoming, friendly and calm space for yoga and similar activities. The two studios and a separate treatment room are available to hire. Claire explains, “Being part of the community is important to us, so we’ll offer some pay-as-you-go classes, where people donate only what they can afford. A similar class I run at the Skainos centre is really popular. We hope the pregnancy and mother & baby classes will be a great support for women, while we have more active classes for those who want to sweat! Small businesses from Belfast’s Lower Newtownards Road, Albertbridge Road and Templemore Avenue have joined forces to make shopping in the area more riveting for locals and visitors alike. Building on heritage, traditional neighbourhood shopping and boosted with a modest influx of new retailers, local businesses have launched themselves as the Newtownards Road & Inner East Traders’ Association in a bid to build trade and present a positive image for the area they serve. While it remains one of Belfast’s busiest arterial routes into the city centre, traders along the Lower Newtownards Road derive little or no benefit from the thousands of commuters

The famous Strand Cinema in East Belfast is home to the new Strand Arts Centre who have made their first significant investment to upgrade to its overall arts experience with three new state-of-the-art projectors, thanks to a loan secured from the Ulster Community Investment Trust (UCIT). UCIT provides community and social enterprises throughout NI and the ROI with access to affordable loans. As a registered charity, all profits generated by UCIT are recycled for reinvestment into the social sector. The Strand first opened its doors as a movie theatre in 1935 but recently due to a lack of modern projectors the cinema had not been able to show the newest movies. The new projectors mark the start of a wider refurbishment project currently being undertaken. As the only theatre in East Belfast, The Strand is aiming to provide a multi-tiered experience for those interested in the arts. The investment means Strand Arts Centre will be able to undertake unique workshops activities such as a filmmakers club where young people can make their own movies and then showcase them on the big screen through the new projectors.

Andrew Foster, our photographic expert continues his series of tips and advice to help you get the most out of your photography. This month he touches on how to use your flash to best effect, and how to create the perfect composition.

M

ost cameras will have a flash which can be set to ON, OFF, AUTO & RED-EYE REDUCTION. Learn how to use the flash, and whether you need to switch it off, or on. Don’t just rely on the automatic flash as sometimes it can produce better pictures by turning it off or on. For example, when outdoors, it can be good to turn the flash on to light up your subject if it is in the shade, even though the automatic flash would be off, due to the rest of the scene being brightly lit. Red-eye is caused by the light reflecting off the subjects’ retina in dim or dark settings. Look for the red-eye reduction setting and, if possible, ask your subject not to look directly into the camera lens. Red-eye reduction flash can often cause blinking - from experience, the absolute best method of preventing red eye in compact cameras, is to NOT use the zoom,

indoors with flash. Red-eye can be removed when you review your photos on our kiosks prior to printing, but best try and avoid it in the first place. “When it comes to composing the best possible picture it’s worth remembering that today’s industry standard print sizes may be a slightly different shape to the pictures that your camera takes. You can change the aspect ratio on your camera to suit normal printing preferences. (Use 2:3 for 4x6, 6x9 & 8x12 prints, and 3:4 for 5x7, 6x8 & 8x10) Alternatively, you’ll give yourself more flexibility by zooming out slightly to leave a little room around the edges of your picture. When printing you can crop it depending on the shape you want without losing any of your subject. Cropping may also produce a more interesting layout or give the option to bring more attention to your subject.

My other top tips on composition would be: • Try and keep the camera level with your subject • Don’t take the photo too far away, making your subject too small to be the obvious focal point, and don’t try to fit too much into one picture. • Focus your attention on the background as well as the subject…… do you really want that telegraph pole sticking out of someone’s head? • When taking a picture, make sure the main subject is dominant, and not lost amongst the background. • Try turning the camera around, would a photo look more interesting if it was taken vertically rather than horizontally, or even at an angle?! • Move the subject around inside the frame, don’t always keep them in the middle of the shot. • Your photos can be cropped when printed to produce a more interesting layout.

There were a lot of new measures announced in George Osborne’s 2014 Budget. So did the Budget bring anything exciting for you? Are you in the Winners Enclosure or are you grouped with the Losers in the Chancellors Annual Day Out ? Richard Graham from Cloud Accounting NI digs deep.

• Isa savers. The Chancellor’s first magic trick was a rise in the amount we can save tax-free, which was raised from £11,520 to £15,000 from July 1 this year. They can also save the full amount in cash, rather than only half, as at present. • Pensioners. A whole range of changes to the pensions system, including more flexibility over taking an income from a pension and a pledge that no one would be forced to buy an annuity. Also, anyone 65 or over will be allowed to put up to £10,000 in a new type of “Pensioner bond”, from January next year paying a whopping 4pc. • Around 1.9m parents will be eligible for a new system of “20pc off” child care tax breaks to replace the current voucher system. It has now decided to increase the eligible total to £10,000, meaning a benefit worth £2,000 for each child. • Socially-aware investors will be able to take advantage of new social investment tax relief with a 30pc tax break. • Small Businesses Investment allowances doubled to £500,000 and extended to the end of 2015. For small, loss-making businesses there was extra help with the Research & Development credit payable increasing from 11% to 14.5%. Under-21s are taken out of employers’ national insurance contributions which should lower wage bills.

• Those trying to avoid stamp duty on homes worth more than £500,000 who will now be charged 15%. • Families where one parent stays at home to take care of the children will not qualify for the new child care subsidy worth up to £2,000 per child. The scheme, which covers children up to the age of 12, will come in from September next year. • Investors who use tax-efficient schemes such as VCTs and EISs. The Chancellor said he would take action to curb abuse of these schemes, meaning more investors losing tax breaks they expected. • Those earning around £40,000. The 40pc tax rate threshold of £41,450 will only go up 1pc higher next year and the year after meaning millions more people will be dragged into the band as their salaries rise. • Those who were planning to retire at 55 who are currently 40 or under… will now have to wait until they 57 before they can access their pension, either the 25pc tax-free lump sum or the remainder, which is taxed.

So it’s time to give the house a much needed deep-clean after the long, dark days of winter. A spring clean is always a good excuse to hit the charity shops with bags of much-loved but unwanted clothes, toys, entertainment and

MARVELLOUS MIXING & MATCHING As readers of my blog know, blue is my favourite colour and I am a huge fan of ‘Blue Nordic’ china by J&G Meakin. You can pick up bits and pieces of the range from as little as 50p-I found these pretty scalloped plates for under £2 from the Cancer Research store. There’s a resurgence of interest in vintage dinner and tea sets at the moment and it’s fun to mix and match plates and cups in a particular colour from different makers. Charity shops are great places to build Nordic blue plates, from 50p at Cancer Research, Cregagh Rd

your collection. So if you’re bored of buying bits and pieces for your home in the same places all the time, visit your local charity shop for a change. You may well find something old and interesting that becomes a talking point over dinner!

Smoked Salmon Blini with Healthier Hollandaise “If you could do one thing to improve your health this year, swap your nasty margarine and commercial salad dressing for this incredibly sumptuous mayonnaise. When made with warm coconut oil, it rivals the most heavenly hollandaise to ever kiss a blini.” For the ‘hollandaise’: 2 egg yolks 1/4 cup flaxseed oil or Udo’s Oil 1/4 cup extra virgin coconut oil, melted 2 big garlic cloves, crushed 1–2 tablespoons unpasteurised cider vinegar 1/2 cup extra virgin olive oil 30 bloommagazine.co.uk

6–8 anchovies, chopped For the buckwheat blini: 1 cup buckwheat flour 1 teaspoon baking powder salt and freshly ground black pepper 1 egg 2/3 cup almond/hemp/oat milk Extra virgin coconut oil, to fry 8–10 slices of smoked salmon Makes 8–10 big blinis To make the ‘hollandaise’, run the motor of your food processor with the egg yolks. Keeping the motor on low, gradually add a steady stream of flaxseed oil and watch it thicken ever so gradually. Add it drop by drop – don’t rush or you will end up curdling it, as I have done through impatience and overexcitement many a time. This can take up to 4 minutes. Repeat with

the coconut oil. When it gets very thick, it’s time to add the crushed garlic and cider vinegar to thin it out and give it an edge. Keep the motor running. Next, slowly add the olive oil, watching the mayo thicken again. Always add the olive oil after the coconut oil and not the other way around. Olive oil can turn bitter if overly whisked. Finally, add the anchovies and pulse briefly – you don’t want to pulverise the anchovies. Taste and adjust the sharpness of the cider vinegar to your preference. If it’s too sharp, turn on the motor again and add a little more olive oil. Scoop into a screw-top jar and refrigerate for up to 3 weeks. A jar is approximately 12 portions. To make the blini, sieve the flour, baking powder and a generous amount of seasoning into a bowl. In a separate cup, beat the egg with the milk and gradually pour

into the dry ingredients, whisking all the while to prevent lumps. The batter lasts for 2 days in the fridge, so advance preparation is easy. Heat some extra virgin coconut oil in a large non-stick frying pan on a medium to high heat. Drop enough of the blini batter to form a drop scone and fry for 20–30 seconds, until set.

Chocolate Chilli con Carne with Coconut Yoghurt and Jazzy Onions “Here’s a good way of introducing more beans and veg to your diet without feeling oppressed. It doesn’t actually taste of chocolate, but rather, utilises cacao powder as another spice in the mix. Serve with great big dollops of cultured coconut yoghurt, macerated red onions and exceptional company.” 1 1/2 cups dried kidney beans, soaked overnight 2 onions diced 2 red peppers 1 large carrot 4 garlic cloves extra virgin olive or coconut oil, for sautéing 2 tablespoons tomato purée (optional) 1 tablespoon dried oregano 1 tablespoon raw cacao powder 1 tablespoon sweet or hot paprika (optional) 1 cinnamon stick good pinch of dried chilli flakes pinch of coconut sugar (optional) 500g minced beef 2 x 400g tins chopped tomatoes just over 300ml veg or beef stock

Blinis salt and pepper 1 tablespoon ground cumin 2–4 squares dark or raw chocolate (optional) To serve: 1 small red onion 1 really juicy lime 1 tablespoon nam pla (optional) fresh coriander (optional) natural coconut yoghurt, eg CoYo Soak the dried kidney beans overnight. Dice the onions and roughly chop the peppers and carrot into bitesized chunks, discarding the pepper seeds and stalks. Slice your garlic. Heat a little oil in your largest sauté pan or frying pan (I have 2 going at the same time to speed things up). Sweat the onions first, stirring regularly for 10 minutes, until they become glassy. Put them aside, then sauté the peppers and carrot until soft but not browned. Add the garlic towards the end, along with the tomato purée, spices and coconut sugar (if using). Cook for a good 5 minutes. Remove from the heat and pile on top of the resting onions Now

whack up the heat and brown the mince all over. Mince needs to be browned or the end result will be disappointingly insipid. You may need to do this in 2 batches. Tip in the soaked kidney beans (tinned is okay in an emergency), tinned tomatoes and stock. Don’t worry if it looks a little icky. The pot will transform in a few hours. Stir in the veg, pop a lid on and let it paddle on a low heat for 2–3 hours. It’s done as soon as the beans are soft, but not mushy. Taste, tickle with salt and pepper and add the cumin and dark chocolate to liven it up. If you feel it needs more pungency, add some yeast extract, blackstrap molasses or chopped anchovies. To serve, cut the red onion in half and finely slice into semi-circles. Squeeze the lime over the onions, Top each bowl of chilli con carne with a little macerated red onion, fresh coriander (if using) and a great big dollop of cultured coconut yoghurt in place of sour cream. It’s the holy trinity to a good con carne!

Can you dig it? It’s National Gardening Week this month from 14-20th April. Have you been mulling over whether to grow your own? What better time to give it a rattle. Here’s our handy guide.

Using the Plot Before you start digging holes, thinking about where the best place is in your garden to grow fruit and vegetables. To do this, you need to consider a number of options:

• Don’t expect to be chilling on a deck chair supping a cold one in the hazy sunshine every evening. Fruit and veg plots require lots of work

Try to find a sunny spot with good drainage. A south-facing aspect is ideal.

• Secondly, ensure paths between your beds are wide enough to take the wheelbarrow, and ideally have a hard surface. For example paving slabs will stop your feet getting too muddy.

An outdoor tap even better. On hot, sunny days you’ll prefer drizzling your parsnips with a hose than carry heavy watering cans back and forward. • You don’t have to have a dedicated fruit and veg plot. Don’t be afraid to mix them in with your flowering plants such as red flowered beans, crinkly leaved lettuce, black French beans and yellow tomatoes. Or you can use vertical shelving in your yard as shown above. Or what about creating a temporary ‘hedge’ of runner beans over a net, or maybe willow teepees in a small bed growing beans or cucumbers. Or of course you can use containers. Salad leaves, herbs, courgettes and climbing beans all grow perfectly well in containers. If your yard is a heat trap, add
