MASTERING THE ART Cathy McAleer is General Manager of Virgin Active, Holywood and has worked in the club for 12 years. She started karate when she was 9 and has since competed and trained all over the world to improve her knowledge and skills in Wado Ryu. We meet the inspirational founder of Holywood Karate Club.

“I also train in Kickboxing,’ says Cathy, ‘with Mr Billy Murray in Pro Kick. I have trained competitively in the both sports and achieved a Celtic title in kickboxing and a World title in Karate along with three European medals and many local and international titles over the years.’ Cathy was an assistant coach form the age of 16 and then achieved her 1st Dan (black belt) at 19. She set up her own club after returning from University in 2004 in Esporta health club, Holywood. The club grew in numbers and strength over the years and now they have a second club in Stormont Pavilion and cater for children and adults ranging from 5 up. ‘Recently I set up our own association “Northern Ireland Karate Academy”, as I believed we could offer many with the opportunity to learn the Martial Art and improve on fitness, confidence, bullying and more importantly fun. I have also taught many students who have had autism or asbergers

and it has had a big impact on their lives. I went on to form the “Northern Ireland Karate Association”, which is affiliated member of the World Karate Confederation and in turn entitles the association to have world recognition on our grading syllabus and access into all WKC European, World Championships and international championships.’ The club and the Northern Ireland National Team Cathy coaches, compete in local, national and international events. In January they travelled to Munich and competed in the world championships and their next big international event is Argentina in October for the team. ‘The club have a number of outstanding students and champions at a world and international level like Tom O’Neill under 15 World Champion, Steven Quantrill under 18 World Kata champion, Stephen Corbett senior men’s World Bronze medallist; Sol Boyles, Charlie Roberts, Effie Ellis O’Neil all under 16 years of age and Silver medallists at World and European level with excellent potential in future. Not to forget our juniors Christian Boyles undefeated Irish and Northern Ireland Champion for past four years along with Club mate Luca Lavery current under 9 Northern Ireland Champion and Scott McClean under 21 Champion.’ Many students Cathy has taught from 5 are now are turning 16 and 17. Roan Ellis O’Neill who has been member of the club from 5, has been assistant coach for past four years and will sit his black belt in June this year. ‘Roan is a credit to the club and a great role model. He has just recently been accepted onto a scholarship in Holland to study and will set up his own club while away for two years. Recently I achieved coach of the year at the Belfast Sports Council Awards and also was presented my 3rd Dan by the WKC in Munich this January for all my achievements and success.’

Giro d’Italia 2014 Be Part of the Big Start On 8 May 2014 over 200 elite cyclists and entourage will descend on Northern Ireland in search of glory. Belfast will host a welcome celebration to remember! The Giro is one of the world’s most prestigious sporting events, and every other year its opening stages are held outside its home country of Italy. The organisers chose Northern Ireland for 2014 because of our magical landscapes, quality roads that are ideal for the race, the iconic architecture of our cities and the warmth and enthusiasm of our people. Giro Facts & Figures • The Giro d’Italia is a long distance, multi-stage bicycle road race for professional cyclists. It is held primarily in Italy, over a three-week period in May and June each year.

This year the highest point or ‘Cima Coppi’, of the race will be the Passo di Stelvio (2,758m) in the Eastern Alps. • Since 1931, the overall winner of the Giro wears the Maglia Rosa (pink jersey). Pink is the colour of the race’s founding sponsor, Italy’s La Gazzetta della Sport newspaper. Last year’s winner was Italian Vincenzo Nibali.

Local creative Robin McFarland has an extraordinary background which tells the tale as to how he launched Little i Design; a unique and creatively limitless interior design service that can capture the

imagination and quite simply take it to the next level.

B

efore setting up Little i Design, says Robin, ‘I worked for nearly fifteen years in the television and film industry as senior model-maker in an animation company, sculpting miniature characters, props and sets, full scale raised sets for puppetry, as well as making the muppetstyle puppets themselves. Unfortunately due to the harsh financial climate, I was made redundant and after the initial period of blind panic, I decided to try my luck as a free-lance production designer. I have been continuing to do so for nearly five years now. However, I have always had a passion for interior design so decided that I would establish Little i.’ Since Robin was a child, he can recall looking around houses and making mental notes of things he thought were of interest. ‘I love the fact that one can add real character to a room by choosing an appropriate colour palette, wallpaper or furniture. I draw from my back-ground in TV and film, to bring a sense of drama to my designs.’ One of the principles that Little i Design is based on is that interior design should not be exclusively for the ultra-rich. Robin wants the average family to be able to afford his help. ‘There is no good reason why interior design should not be available to anyone who feels they would benefit from the skills offered by a designer. As such, my daily rate is akin to that of a handy-man.’ Robin sees his job as a quest to find out what, if anything, the client specifically requires from their space. ‘I meet with the clients and find out as much as possible about their requirements. Then, I would start researching on-line for inspiration. Create a mood-board: this allows both myself and the client to see my intentions design-wise. I also tend to prepare a few rough sketches. Then, if I get their blessing, start work or further discuss their requirements and repeat the process with more clearly defined parameters.’ As well as the design part, Robin also undertakes the manual labour, painting, papering, laying wood and laminate flooring etc. He has certainly taken on some dramatic and theatrical projects which he has been seemingly born to do. ‘I loved doing the Tim Burton inspired bedroom. It was an interesting challenge to transform quite a small, awkwardly shaped room into a pleasing space. Some hard graft and thought from my side, and I have given the client something really special that they continue to enjoy long after I’m off the scene.’ @LittleiDesign

10 Points to Consider in Your Workstation Set-up • The screen should be directly in front of you, arms distance away and the top of the screen should be at eye height. If you use a document holder it should be at the same distance and close to the screen. • Sitting close to the desk allows your arms to hang in a non-effortful position. If your armrests stop you getting this close adjust them down if possible to shorter stocks, or take them off. • Your keyboard should be about 6-8 inches from the edge of the desk so that you can get support through your forearms. The keyboard should be on an angle that allows your wrists to be a straight plane, i.e. not ‘cocked’ of bent. • Adjust the back of the seat down so that you have the lumbar support at about belt level. Have the • backrest angled back marginally and where possible the base tilted slightly forward, opening up the angle of the spine. You shouldn’t be sitting as straight as 90 degrees. When not typing change position and relieve loading on spinal discs. • Drive the mouse with the largest muscles, i.e. shoulder and upper arm not hand and fingers. Avoid the use of wrist supports that dissuade any joints closer to the body than the wrist from moving. • Adjust your seat height so that your forearms are at the same level as the desk. If you have armrests they should also be at the level of desk, but shouldn’t preclude you from getting close enough to the desk so that your belly almost touches it. • If your feet don’t touch the floor you need a footrest. The only other reason to have a footrest is if you have excessive pressure on the back of your thighs or knees from the base of the seat. Ideally, you should have at least a fist width between the edge of the seat and the back of your knees. • Ensure lighting is adequate so you avoid squinting or poking your chin forward on your neck to see the task in front. Also, avoid glare on your screen from ambient light by adjusting curtains and blinds. • Arrange your desktop keeping the items you need often within easy hands reach, and those you use less often further away. Also, try to schedule breaks, like going to make a coffee. Vary your tasks to avoid sustained sitting throughout the day. • Use a laptop stand so that the top of the display screen is as close to eye level as possible. As the little sister of Moro, Morito has been serving delicious and innovative tapas and mezze in the heart of London’s Exmouth Market for over three years. Sam and Sam Clark’s little gem of a tapas bar packs a big culinary punch, attracting critical acclaim and constant queues. Now, with the publication of the cookbook of this hugely successful restaurant, Morito’s small plates can be cooked, eaten and shared at home.

CHICHARRONES DE CÁDIZ “Chicharrones are a meatier and classier variation of pork scratchings. This Cádiz version is made by slow-roasting belly of pork, chopping it up and serving it with lots of freshly squeezed lemon juice and ground cumin.” Serves 4-6 2 garlic cloves, crushed to a paste with 1 teaspoon salt 1 tablespoon ground fennel seeds 1kg piece of organic or freerange pork belly, skin scored 2 teaspoons fine sea salt ½ medium onion, peeled ½ lemon, cut into wedges, 24 bloommagazine.co.uk

TO FINISH juice of 2 lemons 3 teaspoons cumin seeds, lightly toasted and roughly ground The following is the Moro recipe for roast pork belly, but if you have a tried and trusted method, feel free to use your own. Preheat the oven to 230°C/450°F/ Gas 8. Mix the garlic with the fennel seeds and rub it over the flesh side of the pork belly. Turn the meat over and dry the skin thoroughly – a hair dryer works well. Generously sprinkle the skin with the salt and then leave for 20 minutes, then dust off the excess salt. Place the onion half in a roasting tin and put the pork belly on top to create a convex shape, which will help the crackling form. Place

on the top shelf of the oven. It is important that the oven is really hot to start with, in order to blister the skin and create good crackling. Roast at this high heat for 20-30 minutes or until hard crackling has formed, then reduce the heat to 190°C/375°F/Gas 5. Pour 3 tablespoons of water into the bottom of the pan to prevent the meat juices burning. Continue to cook for about 2 hours or until the meat is soft and tender. Cool completely and remove any bones. Dice the pork into generous bite-sized cubes. Heat a frying pan until hot, but don’t add any oil. Fry the cubes of pork until they have caramelised, crisped up and heated through. Transfer to a plate, squeeze over plenty of lemon juice and sprinkle liberally with the cumin. Add extra salt to taste if needed.

RED PEPPER TORTILLA “Red peppers add sweetness and colour to a tortilla. Perfect with a Gilda and a glass of fino sherry” Serves 6-8 2 medium potatoes (225-250g), peeled, sliced into quarters lengthways and cut into thin triangles 8 tablespoons olive oil 1 large Spanish onion or 2 medium onions, thinly sliced 2 sprigs of thyme 2 bay leaves, preferably fresh 2 red bell peppers or 3 Romano peppers (page 280), deseeded and sliced ¼ teaspoon sweet smoked Spanish paprika (page 280) 8 organic or free-range eggs Toss the potatoes with ½ a teaspoon of salt, transfer to a colander and leave to stand for 15 minutes. Set a large non-stick

frying pan over a medium heat and add 4 tablespoons of the olive oil. When hot, add the onion, thyme, bay leaves and a pinch of salt and cook for 10 minutes, stirring occasionally, until the onion is soft and golden. Add the peppers and paprika and continue to cook for 10 minutes until the peppers start to soften. Now add the potatoes and cook for a further 15 minutes or until tender but not coloured, stirring every now and then. Remove from the heat and transfer the mixture to a dish, discarding any excess oil. Cool for 5 minutes. Crack the eggs into a large bowl and whisk lightly. Remove the thyme and bay leaves and fold the vegetable mixture into the eggs and check the seasoning. Wipe the frying pan clean and return it to a medium to high heat. When hot add 2 more tablespoons of oil and swirl it around the pan and up the sides to coat. As the oil begins to smoke, pour in the mixture, while gently

shaking the pan with the other hand to ensure it is evenly spread. Lower the heat and let the tortilla cook for 3-5 minutes. Using a spatula, gently check whether the underside of the tortilla is golden brown and the runny exposed side has formed a ring of cooked egg around the edge. Remove from the heat, rest for a minute, then take a plate about the same size as the pan and rest it over the pan. Carefully invert the tortilla on to the plate. Return the pan to the heat. When hot, add the remaining 2 tablespoons of oil and gently slide the tortilla back into the pan to cook the other side. Lower the heat and tuck in the edges of the tortilla to neaten. Cook until golden brown underneath and firm to the touch, turning again if the tortilla is still runny in the middle. Remove from the heat and leave for a few minutes to settle, then turn the tortilla out on to a clean plate. Serve slightly warm or at room temperature. bloommagazine.co.uk 25
