So here we are in April already. Incredibly this is issue 5 of Bloom in Holywood. Every month we meet more and more new people and see new businesses coming on board to advertise. It’s inspirational to see people undertaking new ventures and channelling their skills and attributes to launch or develop their particular project. As a platform for Holywood, we simply want to share their stories and inspire you to pay them a visit. It’s amazing what some community spirit can do for a town. The Holywood Buy Local campaign continues at full force. Take it on board and make it a way of life. It’s interesting that at one point there were 22 regional stock exchanges in the UK. Eleven remained open until the 1970s, when they amalgamated with the London Stock Exchange. Recently there have been calls to bring back this localised function and encourage investment and economic development in the regions. This is just one example of a current change in mindset. People want to bring back the ‘old school’ way of doing things to a local level. And while not many of us will be bothering the FTSE 100, there are plenty of businesses and community initiatives out there to create the kind of foundation we need to make a difference. Some of NI’s emerging fashion and musical talent will showcase their skills at a fashion and music extravaganza in Parliament buildings at Stormont on Saturday 4th May. The chic black tie event organised by Unify Collective Fashion Studio and sponsored by Aston Martin, Belfast, will provide a unique platform for both graduate and student designers to showcase their collections whilst also introducing the NI audience to musical entertainment from local bands. All profits from the evening will go towards Cinemagic, a charity supporting young people wishing to enter the film industry. Unify Fashion Studio provides local designers with a professionally fitted design studio including the best equipment and materials available, enabling young Northern Irish designers to hone their talents. BBC Radio Ulster presenter Alan Simpson will host the evening. CONTINUED SUCCESS AT HOLYWOOD YACHT CLUB On 2nd March 2013 members of Holywood Yacht Club were entertained to lunch at Alexandra Palace for the RYA Club of the Year awards. The Club were finalists and runner up in the award which encompassed all yacht clubs in the UK including Scotland and Wales. After the banquet the award was presented by RYA CEO Sarah Treseder to HYC top sailor Jessica Rutherford and Commodore, Dermot Johnson. Dermot said, ‘Holywood are delighted to receive this recognition of the standard or sailing and fun for all ethos that exists at HYC. This can put enormous strain on people and their relationships and most are completely unaware that there is a service that can help them. New Holywood Music Festival To Launch This Month A brand new music festival in Holywood will be hosting a fantastic array of bands and artists. Organised by Neil Kearney and Vincent Gilbert from The Guitar Rooms, it features a wide cross section of music but with quality at its core.

T

he Holywood festival is a three day musical event aimed at promoting live music in Holywood and surrounding areas. This is the first year of the festival and organisers Neil and Vincent at The Guitar Rooms have some great acts performing at the two venues (the Dirty Duck and the Holywood Yacht Club main hall). The acts include; Flash Harry (the widely acclaimed Queen tribute band) their last big Belfast show was to a sell out audience at the Belfast Odyssey. Bap Kennedy, internationally acclaimed singer song writer Bap has been touring the USA and Europe promoting his new album, which was produced by Mark Knopfler (Dire Straits). Mark also plays on the album. Celtic Soul (Van Morrison tribute act) who have been selling out to audiences all over the province of late, playing Vans hits from all era’s. Mercy Lounge (blues and soul) local boy Billy Miskimmin (ex Yardbirds), Irelands top harmonica player knocking out a fierce set of original blues and soul songs with blistering harmonica solo’s. The Sabre Jets (rockabilly), with a strong following these guys bring you back to the 50’s with heart warming ease. Other acts include, Kenny Mcdowell, Rab McCollough, The Farriers, The Broken String Band, Amanda St John, Somewhere St, The Hard Jets, The Empires, CQD and many more. ‘Every main act will be supported by a young local act,’ say the organisers, ‘as we think it important to give the young bands of Holywood a chance at the big stage. F

ounded in 2010, ReFound works with over  50 local artists, designers and makers who  use various disciplines and techniques to push  boundaries in the art of reclaimed furniture. The lines between art and furniture are creatively blurred with this group as they inspire you  with their range of up-styled, re-purposed and  re-found furniture and home accessories. Leading the Collective is founder Jill O’Neill who  lives in Holywood with boyfriend Justin and  their dog Hobo. ‘I was born and raised in Belfast  and first moved to Glasgow to complete a degree  in Art History,’ says Jill. ‘I took a bold leap to  New York in 1999 to work in the publishing  industry. My magazine career continued to San  Francisco and then London in 2002.’      Jill returned to Belfast in 2007, along with  the many furniture and nick-naks she’d picked  up along the way. ‘I had developed a passion for  other people’s unwanted objects! I was attracted  by the journey of furniture and objects. So when  I moved back home I was inspired to create a  space where these objects gained new life as part  of the next stage of their journey. Influenced by ‘stoop sales’ in NYC and San  Francisco, where people offload their unwanted  items when they move to pastures new. ‘I loved  hearing the back-story to their furniture- where  they bought it, why -  and thought that this  journey would make a great feature. And that’s  what you get with a ReFound piece – a story  of the piece and the artist  that restyled it.’  Originally hosting ‘pop-up shops’ since 2010  ReFound has developed a somewhat cult follow18 www.bloommagazine.co.uk

100g soda bread flour 100g self raising flour 10g melted butter 1 tablespoon sugar 200ml buttermilk

50mls Crème Fraiche Half spoon grated horseradish Lemon juice Salt & pepper

1 mackerel fillet pin boned Pre cook beetroot by baking whole, wrapped in foil for 1 hour in oven, when cooked peel whole. Prepare smoking ingredients in wok – cover bottom with tin foil and heat over a low heat. Place beetroot on wire tray on top and cover with tin foil. Allow to smoke for 20 minutes. Pan Roasted Chicken Breast, Ham Hock & Sweetcorn Risotto Croquette "simple, delicious and a feast on the eye.” ” 4 x 200grams Chicken Breasts 100grams Shredded Ham Hock 100grams Sweetcorn 200grams Cooked Risotto 200g Diced Leeks 25gs Butter 100mls Double Cream Salt & Pepper to taste

Prepare croquettes by mixing ham hock and sweetcorn into chilled, cooked risotto, season well and form into 4 cylindrical shapes. Flour, egg wash and dip into fine breadcrumbs. Then leave to chill in the refrigerator for 20 minutes Prepare leeks by cooking in butter until soft- add cream and season, cook until reduced. Pan Fry Chicken breasts skin side down until browned then turn over. Finish cooking in 160 degree oven for 10 minutes until fully cooked. Deep Fry the croquettes until they are golden, Assemble creamed leeks on serving plate, place chicken breast on top and risotto on side. To finish, spoon around red wine jus.

120grams of Venison Loin

Celeriac Puree

200gs celeriac 1 tea spoon lemon juice 1 tablespoon double cream 10 grams butter

Cabbage

100grams red cabbage Half diced apple 1 tablespoon honey 1 tablespoon red wine vinegar 25mls red wine 50mls chicken stock

Jus

50mls veal stock 50mls port 3 juniper berries 1 diced shallot 2 teaspoon redcurrant jelly Braise red cabbage slowly over a low heat for 45 minutes until it has a syrup-like texture. Cook the celeriac in water and lemon juice until soft. Strain and puree in blender with butter, cream and salt & pepper. For jus, sweat shallot in butter and veal stock, port and juniper berry, reduce by half and add redcurrant jelly and pass through a sieve. Season venison and fry in olive oil and butter for 10 mins over a medium heat – turning once. Remove from the pan and rest. Slice and assemble venison on plate with the red cabbage and a swipe of celeriac puree – spoon jus around the plate.

2 large eggs 2 large egg yolks 6 tablespoon lemon juice 2oz sugar 2oz unsalted butter 2 teaspoon grated lemon peel

Meringue

4 large egg whites Teaspoon of cream of tartar 4oz caster sugar

Crust

4oz finely chopped pecans 1oz icing sugar 1oz melted butter

Melt butter for lemon curd in a bowl over hot water and whisk in sugar, lemon juice and lemon peel. Whisk in eggs until thick and then chill. Mix crust ingredients together and then press into flat pie dish. Bake until crust is slightly toasted. Chill crust and spread ice cream over base. Spread curd on top. Whisk egg whites and sugar together until peaked, add cream of tartar. Pipe meringue onto pie. Freeze and before service finish the meringue with kitchen butane torch – if at home finish under a hot grill!

hether you’re a green-fingered garden guru or just an appreciative admirer of beautiful places, the chance to spend an afternoon exploring the arboretum and gardens at the Clandeboye Estate, one of the most historic and picturesque private country estates in Ireland, is definitely an opportunity not to be missed. The Clandeboye Estate is famed not only for its fascinating social history but also for a very unique horticultural heritage spanning three centuries. From the days of the 1st Marquess of Dufferin and Ava in the 1850s, Clandeboye’s gardens have been enthusiastically cultivated by generations of the family and are still passionately nurtured by Lady Dufferin. ‘In 1850, Lord Dufferin enlisted the help of James Fraser, a Scottish landscape gardener to advise on the creation of the parkland, Arboretum, and walks to Helen’s Tower and Helen’s Bay. ‘One of the first additions to Clandeboye was a collection of trees shipped in from the Americas,’ explains Lady Dufferin. ‘Since then, every generation has left their own legacy in the gardens and importantly continued to grow the catalogue of species. Today, Clandeboye boasts one of the most extensive and eclectic collections in Ireland with over 3.000 catalogued shrubs and trees in the gardens. This is a lovely opportunity for everyone to come along and enjoy spring in full bloom.’ For the first time in a decade, the public is invited to share in the seasonal splendour of Clandeboye’s private gardens on three dates in spring, summer and again in the autumn. Visitors will be able to wander through acres of woodland and informal gardens, chat to gardeners and learn more about Clandeboye’s colourful horticultural past. All visitors will all be given a map of the garden with some of the most special plants marked on it for them to find. The map will also provide a guide to different walks around the arboretum and the gardens. Refreshments may be purchased in the Courtyard; including yoghurt from the Estate’s award winning herd of dairy cows. There will also be a chance to try your hand at some woodland craft. rising star : peter strain

A Journey From Reel to Real Peter Strain’s takes influence from film and music with a distinctive hand lettering style, bold imagery and humour that is majestic, immersive and truly compelling.

A

fter Art College at Ulster University Belfast, I needed to focus on a self initiated project to help develop my style of working,’ says Peter, ‘and I just started doing these film illustrations as a way to do that. Throughout my time at college I started to get more into illustrators such as Paul Davis, David Shrigley, Steven Forbes, Oliver Jeffers and various street artists. I really loved the grubby yet elegant way these artists used lettering and humour in their work. I was also captivated by the the composition of their works - generally opting for great use of white space and juxtaposition between larger and smaller elements.’ The catalyst for the film direction came from the film Eternal Sunshine of the Spotless Mind. An incredible, dream like film of fragmented memories, surroundings and experiences but with a wonderful story of love at its heart. ‘It’s one of my favourites so it was the first film illustration design I did to try and kick start this project. Films are precious to people and most want to see new and exciting interpretations of their favourites, I know I do.’ Peter’s latest collection; Admit One looks to reinterpret classic and cult films and create artwork that reflects the skill, artistry 28 www.bloommagazine.co.uk

and importance of cinema. ‘There is a lot of movie ‘Artwork’ that has no soul - just depicts the main actors/actresses head shots over the past few years spliced together with little care. It appears that these movies have posters as an after thought, just as a necessary graphic to help advertise as opposed to actually trying to convey a sense of the film or excite the viewer.’ It was the launch of his collection in London that has been just one of the highlights of Peter’s career so far. ‘The opening night at the Coningsby Gallery for the show was amazing. But I think getting to work with great people and magazines and newspapers like The Guardian, Empire and Esquire is really fun and exciting. It would be great to work on a live film poster for an exciting project. I’ll continue to do this kind of work but I’m also trying to get more into doing animations and satirical drawings. local legend : hannah's Local Legend

Forever in Bloom A family business for decades and one that never stops growing. Florist Hannah’s is now run by Leslie Waite but the family connections go way way back. We find out more about the history and the future.

‘ It has always been a family business,’ says Leslie. ‘It has been a flower business for 40 years

now and it was fruit and veg before that when my mum worked in it. I think I must have started helping out when i was about eight or nine. Its always been here. The fruit shop was next door and my mum opened this one in the late 70s. I did some part time work in it then and went off to college where I studied horticulture before heading off and working for Belfast City Council for a few years then came here 28 years ago to work full time.’ Just before this the premises were expanded and the business was growing, in more ways than one. With Leslie on board, and following his degree in horticulture, it really was a natural progression for his career to take. ‘I never had anything else in my head to do! This is what I wanted to do.’ But of course the business changed in the last 15 years or so with the rise of the supermarkets. ‘It was straightforward for a while but then in terms of over the counter sales, it all changed. Plus of course the recession in the middle of that too. But weddings have been constant and are great to work on. We also look after flowers for funerals, memorials and we’re an eflorist so we can send flowers anywhere round the world. We also do local deliveries too.’ Inside there is a spring plant sale and in fact the garden side of things is about half the business at this time of year and such is Hannah’s reputation, people make the effort to come and check out the range. ‘People come from all over; East Belfast, Carrick, Ballymena. We are one of the biggest single florists in NI. We also do a range of hardware too which is handy for people and saves people going to the big chains. We do screws, nails, hammers, saws, silicone, the usual essentials that people need. We always have a lot of seasonal things so Christmas, Valentines, Mothers Day, Easter, things like that.’ Leslie’s family roots are firmly in Holywood and at one point there were five generations alive! He has seen the town change a lot over the years. People and businesses have come and gone. New buildings have gone up, old ones have come down but feels the town has always had a good buzz about it. So what is it that has maintained Hannah’s presence in the town for so long? ‘We are a friendly bunch and we offer the best, fresh products at a very competitive price. We bring in fresh products five times a week whereas it used to be twice a week years before. All our staff are all local. My son and daughter work here too; Richard and Gillian. They’re both at Queens at the minute so I’m not sure what they’ll do afterwards. All our staff are very experienced. My mother’s retired now but my grandmother was working here until she was 92, you couldn’t get her out of the place! We would like to thank all of our loyal customers for sticking with us over the years and look forward to hopefully welcoming many more.’
