Welcome It literally is a warm welcome judging by the pic above and I think we all need the cockles warmed at this time of year. Sometimes we don’t mind the winter when Christmas is on its way, but that’s done and dusted and it’s onwards and upwards into 2012. We have had such a wonderful response to our first issue so thank you so much to everyone who got in touch with their good wishes. At the heart of what we are trying to do is to promote the community and that means you, your neighbours, your local businesses and the breadth of talent on our doorstep. We have been astonished as to how much of a heartbeat there is in the East with so many new ventures opening or launching in our streets. But crucially, we all must do what we can to support them. No doubt 2012 is going to be a tough one for small businesses, so the best thing we can do to weather it is to simply shop local. What you need may be just a few streets away rather than a few miles away. By shopping around the corner, you’ll be doing your bit for the community. Free Parent Childcare and Benefits Advice
Employers For Childcare Charitable Group provides parents of dependent children with a helping hand by offering a range of free services. These include a freephone advice and information helpline, a childcare search facility and the Childcare Benefits Advisory Service. The Childcare Benefits Advisors provide free, impartial and confidential advice and information to parents on social security benefits, tax credits, Childcare Vouchers and other benefits which may be applicable to your circumstances. The advisors carry out personalised benefit assessments for parents who are considering entering employment or changing working hours. Through these assessments, the advisors take into consideration potential hours of work, rates of pay and childcare costs to ensure that it pays to work. Also, through the HMRC Childcare Indicator Calculator, the advisors work out whether Childcare Vouchers or tax credits are best suited to meet your household’s childcare costs. The service is free and confidential and parents are given a copy of the information discussed. A special project which saw young people act out their views on public transport in the form of a play at Stormont has secured a top award for the Consumer Council, Youth Action NI and Translink. The young people who participated also helped to shape the recommendations in the report and produced a play to demonstrate the findings for government and transport operators at Stormont’s Parliament Buildings. They also gave evidence at a special sitting of the Regional Development Committee.
Tall Ships Return to Belfast
The Tall Ships are returning to Belfast in July 2015. The city is to act as the starting point for The Tall Ships Races 2015, an annual race series organised by Sail Training International. The hugely popular event last visited Belfast in August 2009, when it attracted 800,000 visitors in just four days. A further 250,000 people lined the shores of Belfast Lough to watch the 40 ships depart the city, leaving behind them a benefit of an estimated £16 million to the local economy. Sail Training International’s Head of Race Directorate, Paul Bishop, said: ‘Belfast previously hosted The Tall Ships Races in 1991 and 2009 and the city, port authority and council events team have built up an excellent reputation for looking after sail training Tall Ships and their trainees during these events. They also run a regional annual sail training programme which is at the heart of Sail Training International’s objectives: the development and education of young people through the adventure of being at sea.’ 6 www.bloommagazine.co.uk

Titanic Yardmen Cycle and Walk 1st April 2012
The Connswater Community Greenway (CCG) team presents the Titanic Yardmen Cycle and Walk where participants will walk or cycle the route that 1000s of yardmen took to work each day. On completion of the route cyclists and walkers will tuck into a ‘piece’ on the Titanic slipways before recreating this iconic image of the original yardmen. You can help raise money for, and awareness of Bowel Cancer UK, promote healthy living through walking and cycling and support the use of greenways. This is also an opportunity to be part of the Titanic centenary celebrations and visit Belfast’s newest attraction Titanic Belfast. There are a number of ways you can become involved: ·Cycle: Departing 12 noon from the Billy Neill Centre along the Comber Greenway to Titanic Belfast ·Walk: Departing 12.30 from Pitt Park to Titanic Belfast.·Volunteer to help on the day in various roles. Volunteers register by emailing their name and their contact details to info@pioneer-group.co.uk. Cyclists and Walkers must register for the event by purchasing a Registration Yardmen Ticket through the CCG facebook page www.facebook.com/connswatercommunitygreenway or through our website www.communitygreenway.co.uk. Consumer Council Shows You How to ‘Weather The Winter’
What to do and who to call if snow affects your flight, there’s a sudden power cut, or your pipes freeze or burst, are just three of the topics covered in the Consumer Council’s new ‘Weather the Winter’ leaflet, as part of the Council’s Winter Campaign. Antoinette McKeown, Chief Executive of the Consumer Council said: ‘Last winter was one of the coldest on record, resulting in disrupted water supplies for thousands, and affecting people’s travel plans at one of the busiest times in the year. This year, we are advising consumers to be as prepared as possible and our handy leaflet provides tips as well as telephone numbers and website addresses should bad weather cause problems.’ The wallet-sized resource also includes your rights when shopping online, as well as tips for saving money on your Christmas shopping, oil, electricity and gas bills. Computer headaches? Head to the Clinic

We have primarily worked with other charities and community based groups but have had a lot or queries from local people looking for somewhere local and reliable they can take their home PC to have it fixed. Typical problems nowadays are that your PC maybe gets infected with a virus or you can’t get connected to the Internet, so thers’s no Facebook or homework gets done. We deal with these a lot, removing viruses and backing up pictures etc. Many of the viruses we see now show themselves on the computer as a virus cleaner but in fact are part of the problem. You may buy them on line only for the problem to continue with the addition that they have your card details. News East Belfast’s Catwalk Queen
Local girl Ashleigh O’Brien has reached the final of Top Model UK. Now in its sixth year, Top Model has established itself as the leading fashion industry model search event. It has been a whirlwind experience for Ashleigh, as she explains, ‘I applied for the competition in September, then heard back that I had made it to the interview stages. I had to travel seven hours down to London which was stressful as it was my first visit. There were around 100 people or so and we had to walk in front of everyone and the judges, including Geoff Cox (London fashion week casting director). This was terrifying! I heard back at the end of the week that I was successful, shed a tear then jumped up and down screaming for a while!’ The Top Model search campaigns culminate in an exciting weekend of professionally produced and choreographed Grand Final runway shows at the Hilton Metropole Hotel, London, March 16th and 17th 2012 so we wish Ashleigh all the best in the competition. FROM THE ARCHES TO AUSTRALIA
Deirdre Robb is a resident artist at Creative Exchange Studios at Portview trade Centre Newtownards Road and a member of the East Belfast Artist Collective which manages the Engine Room Gallery. She has something quite special lined up for 2012, as she explains. ‘I have been selected to take part in a sculpture competition in Scenic World, Katoomba, Australia from Feb-Mar 2012. I am the only international artist selected which is a real honour and for that reason they have indicated that they will focus much of the media attention on me! I will be an ambassador for the organisations that I am associated with as well as representing myself as an East Belfast artist. The work for this proposal is a site-specific sculptural installation; ‘Flight or Flight’ in the Blue Mountain world heritage site at Katoomba, Australia. The concept behind the work is about my own experiences of being female and observations of other women in my work and home life. I have harnessed the symbolic nature of the butterfly as a representation for ‘change’ and linked it to iconic superwomen that are familiar to society. The works will vary in size but in general are 180cm x122cm butterflies. I am now trying to do some fundraising to obtain a contribution or sponsorship for the costs. Hats Off ! Belfast born designer Gráinne Maher has had a remarkable year and has even bigger plans for 2012.
K
nown primarily as a couture milliner, Gráinne Maher produces sophisticated pieces using classic shapes, hand-dyed feathers, Swarovski crystals and antique embellishments. She also experiments with avantgarde styling and modern materials including leathers, sheepskin and Perspex to achieve statement pieces that are not for the fainthearted. After studying Music at Queen’s, Gráinne moved to Devon for her PhD researching the effect of corsetry and other body manipulating costume on the voice. This led to an increasing interest in fashion and ultimately to a period of study in Dublin and London under world class milliner Ian Bennett. Most recently Gráinne has sent a statement headpiece to Washington DC to participate in a fashion salon. Her perspex MEDUSA is a mass of intertwining snakes with forked wire and Swarovski tongues. Pluck & Devour is Grainne’s acrylic jewellery and accessories label. The first collection was launched at Belfast Fashionweek featuring a series of laser cut perspex Pegasus and Griffin pendants embellished with a wire mounted Swarovski teardrop crystal hanging from one hoof. These are now stocked in several boutiques across NI and ROI. The range won first place in the West Coast Cooler Citra Showcase competition which offered the opportunity to sell in Urban Outfitters. Selena Gomez host of this years MTV EMA’s wore two separate jewellery pieces by Gráinne. The P&D ‘Bark at the Moon’ pendant in black glitter acrylic, and a second statement neckpiece heavily sequined and hand-beaded with swarovksi, with long cascading gold chains. This has brought Gráinne’s work to a global audience! Gráinne’s most recent venture is setting up a pop-up designer boutique called Proof. Its mission is to be Proof of the wonderful array of fashion design talent here in NI. It offers independent and upcoming designers that window without having to sell wholesale or incur vast overheads. Phase One of Proof opened on 22nd October 2011 running till Christmas Eve 2011, selling a range of fashion and accessories collections including some fashion photography and illustration work. Gráinne is currently in preparation to open a Gráinne Maher concession at House of Fraser in Belfast’s Victoria Square. This will include a range of both her millinery and jewellery lines.

We speak to local fitness expert Chris Davidson to get his advice on how we can all make 2012 that little bit healthier.
‘Like many people in East Belfast, maybe you’re planning on finally making 2012 THE year you get back in shape. Maybe Santa has been good to you and got you all the right kit for your new fitness regime, and you’re raring to go? Well, we all start off with grand plans in January of sticking to a diet and exercising more, to drop a dress size or ‘lose the belly’, and yet, come February the majority of us have given up, trainers discarded under the stairs for another year, old eating habits back with a vengeance. The major mistake most people make is trying to do too much too soon. Going from zero or intermittent exercise and having a rich, indulgent diet, to trying to exercise intensively every day while following a strict, boring diet is a recipe for failure. So here are some tips on how to structure your exercise and diet regime, and stick to your plan, so that you are one of the few who succeeds in 2012:
DIET
•A diet shouldn’t feel like a prison sentence - base it on healthy foods you enjoy; minimise the unhealthy foods you maybe enjoy even more! •Don’t kid yourself you can ‘burn off ’ your takeaway meal through exercise - The average Chinese takeaway contains 1,000 kcals, jogging burns 350-400 kcals per hour, so you don’t need to be Einstein to figure out that’s a lot of exercise to balance out one meal! •Portion control and meal timing will be key to your success. TORTILLA SOUP
Tortilla soup is as traditional to Mexico as French onion soup is to France. It never fails to delight newcomers with its beautiful presentation and wonderfully gently, warming spicy, tomato-ey flavours. Serves 6 Cooking time: 40 minutes 3 tablespoons lard or olive oil 2 onions, sliced 3 cloves of garlic, sliced 100g fine polenta 1 heaped tablespoon Chipotles en adobo 2 x 400g tins plum tomatoes 1 tablespoon brown sugar 1 teaspoon dried oregano or 1 tablespoon fresh sea salt and black pepper 1.5 litres chicken or vegetable stock (fresh or from a cube) For the garnishes 1 ripe Hass avocado lemon or lime juice 300ml vegetable oil (which can be reused) 2 corn tortillas or 2 chapattis 2 ancho chillies, deseeded and stems removed 100g feta cheese, crumbled a small handful of coriander leaves, chopped 100ml sour cream Heat the lard or oil in a large pan, add the onions and sweat over a medium heat for 10 to 15 minutes until the onion is completely soft before adding the garlic. Add the polenta and continue cooking for 5 minutes before adding the Chipotles, the tomatoes, sugar, oregano and seasoning. Cook for another 5 minutes, add the stock and simmer for a further 10 minutes. Blitz in a food processor until the soup is smooth. Leave over a low heat for at least 5 minutes before you eat.

This only takes a few seconds, so watch them like a hawk and try not to burn them or you will lose their lovely sweetness. Serve the soup in bowls with all the garnishes laid out in small bowls or on plates so that people can help themselves at the table.

(the Mexican club sandwich) Mention the word ‘torta’ to any chilango (someone who comes from Mexico City) and you will see a faraway look come over them as they are transported back to the torta stands that line the streets of the capital. This sandwich is not for the faint-hearted, but it is exceedingly good.
Makes 4 Meanwhile, assemble all the garnishes for the soup. Test the oil and, when 4 ciabatta buns it is shimmering hot (and makes a tortilla strip sizzle), 1 tablespoon lard or olive oil (optional) add the strips and cook until crisp and golden. 8 large tablespoons refried beans 1 avocado, mashed with the juice of ½ lime ½ red onion, sliced very thinly 1–2 baby gem lettuces 4 very generous tablespoons Chipotle mayonnaise or ordinary mayonnaise Slice the tomatoes and dress them in salt and pepper, the chilli and a drizzle of olive oil.

Slice the chorizo up into bite-size pieces that can easily be grilled, unless you are cooking them outside on the barbecue, in which case grill the sausages first and then slice them so you don’t lose precious pieces in the fire. Heat a griddle or frying pan until smoking hot, add the chorizo and cook for a few minutes a side until it is looking good and crispy.
Heat a large frying pan big enough to hold the flat breads or a flat griddle pan. Put one flat bread in the pan and sprinkle with a tiny bit of water to gently heat it.
Wash the spinach and shake dry. Heat a large pan, add the butter to it, then add the spinach and cook for a few minutes until the spinach has wilted down. Remove from the pan, squeeze dry and season with salt, pepper and a drizzle of olive oil.
Once slightly crisp, turn it over. Spread a layer of guacamole on first, followed by some grated mozzarella and a quarter of the rest of the ingredients. When the outer side of the bread is crisp and the mozzarella has begun to melt, fold the pizza over so it looks a little like an open calzone. Slide on to a plate and slice into pieces.
Remove to a plate and cut the buns in half. Brush both sides of the buns with the chorizo fat and a little extra lard or oil if you think they need it. Toast on the grill pan on both sides. Serve the tlayuda with the a habanaro salsa or a roast tomato sauce, with or without chipotles. Smear one half of the buns with refried beans and top with the avocado, red onion, tomato, chorizo and lettuce. Smear the other half in the mayonnaise and press down firmly. Eat at once, preferably doused with healthy amounts of the blow-your-head-off habanero salsa.
TLAYUDAS
(Oaxacan pizzas) Tlayudas [clae-yoo-das] are wonderfully messy openpizzas, sold at night on the streets of Oaxaca. Try them grilled, fried or baked in the oven. Serves 4 Cooking time: 15 minutes 1 large bag of baby spinach small knob of butter sea salt and black pepper olive oil 4 large flat breads (large Middle Eastern pittas, Turkish or Italian flat breads) 4 heaped tablespoons Guacamole or the flesh of a ripe avocado 2 balls of mozzarella, grated 80g Pecorino or mature Cheddar cheese, grated 300g leftover chicken or 2 chicken breasts, poached and shredded (see page 140) 8 sun blushed tomatoes or very ripe fresh tomatoes, sliced www.bloommagazine.co.uk 25
For the caramel a large knob of butter 200g fresh pineapple, peeled, cored and chopped into small pieces. a pinch of sea salt 225g caster sugar Preheat the oven to 150ºC/300ºF/gas 2. Lightly grease a 26cm springform cake tin and line the base and sides with baking paper. To make the base, melt the butter and whiz the biscuits in a food processor. Mix together and gently flatten on to the base of the tin. Put in the fridge to chill. Meanwhile, mix the sugar and cornflour together. Beat in the cream cheese, egg yolks and vanilla extract with an electric whisk. Gradually add the creams, whisking as you do so. Finally add the salt and lime zest. In a separate bowl, whisk the egg whites to stiff peaks, then fold them carefully into the cheese mixture with a large metal spoon (you want to keep all the air and lightness in the cake). Pour on to the chilled base and bake in the oven for 1 hour 15 minutes, or until the cheesecake is golden on top, trying not to open the oven door! Turn off the oven and leave the cheesecake to completely cool in the oven and only then remove the baking paper.
VANILLA CHEESECAKE WITH PINEAPPLE CARAMEL
This is no ordinary cheesecake. The Mexican cheesecake is light, fluffy and volcanic-looking, cracked across the top to reveal an irresistibly delicate middle. A delicious pudding, with or without the wicked pineapple caramel sauce. Feeds 8–10 Cooking time: 1½ hours 40g butter 140g HobNobs 225g caster sugar 2 tablespoons cornflour 750g cream cheese 6 large eggs, separated ½ teaspoon vanilla extract 150ml double cream 150ml sour cream pinch of sea salt zest of 1 lime 26 www.bloommagazine.co.uk
For the caramel, first melt the butter in a hot pan and fry the pineapple until it is caramelized and golden, seasoning it with the salt and 1 teaspoon of the sugar. Remove from the pan and add the rest of the sugar in its place together with 100ml water. When the sugar has dissolved, turn the heat right up until the sugar has turned a deep, dark golden colour. Turn the heat down, add another 140ml water, watching for the caramel’s spitting, and let it bubble for a few minutes so that the sugar dissolves again and the syrup thickens. Add the pineapple and serve drizzled over the cheesecake or, if it is summer, have the cheesecake with heaps of raspberries. ennett’s was conceived in 2003 by Stephen McAuley and Colleen Bennett (whose family name was taken for naming Bennett’s) – this was following a successful opening and running of Fontana Restaurant in Holywood for five years, during which time it was awarded a Michelin BibGourmand. However Stephen & Colleen wanted to open a more casual establishment. The opportunity presented itself when premises at the corner of Belmont/Holywood Road became available in 2003. 'Although a slightly smaller space than what we had been looking for,' says Stephen, 'there was great character about the building with lots of history. All too many old buildings were/are being knocked down to make way for the new, but this leads to a lot of character buildings disappearing from our community. We heard many stories from the locals about the history of the building, one of which was that in the war years the room was used as a dance hall.' Inspiration came from trips to London, Barcelona and Vancouver. With influences dictating a philosophy (adhered to in Fontana) of good wholesome food, locally sourced, (and as far as practical organic) freshly cooked and good front of house service. maintain this philosophy, offering good food, locally sourced, from 8am each morning. Colleen oversees the menus that are put together by the chefs relative to the seasons. Additionally, there are specials offered on a daily basis depending on what is fresh and available.' In the morning, a Bennett’s Fry is a speciality (or a bowl of porridge for the more health conscious), lunch is casual and quick, served after breakfast from 12.00 – 3.00pm. After this, the hard worked chefs are given a break until 5.00pm when dinner starts which is a relaxed affair with drinks offered before and after your meal. During the week the kitchen closes at 9pm but on Friday and Saturday stays open until 10pm. Approaching their eighth birthday, Bennet’s are pleased they made the commitment to the Belmont area. 'We feel we have added in a small way to the regeneration of the area, which, because of a lot of hard work by a lot of local people, is making the Belmont area both a desirable place to live and pleasant place to spend some time in. A Recipe for Success Warwick’s Butchers on the Holywood Road has been a vital member of the East Belfast Community for almost 25 years. We ask Sid Warwick about the history of the business.

firm favourite on the Holywood Road for almost 25 years now, Warwicks Quality Family Butchers put their enduring business down to what they offer; quality products and a personal service. So where did it all begin, Sid Warwick explains, ‘We started here back June 1987. I’d worked for several people, managed a shop for seven years and then had the opportunity to look at this place and all it happened from there. I still love the business as much as I did then. We have built up many relationships and the loyalty has passed down through generations so we see the kids grown up coming in now. Suppliers wise we pride ourselves on local produce that is fully traceable and we support local farmers. We specialise in dry aged beef. All our beef is bought in the ring and we have it slaughtered and matured for a minimum of 21 days. Some request it hung for slightly longer and we can arrange that for them no problem. For our poultry we do a lot of business with a small family firm, Rockvale Poultry.They’re not mass produced so it’s all very much about animal welfare and good quality.’ Warwick’s have won several awards including one from the The Elite Butchers Association of Northern Ireland and their sausages have won awards too over the last number of years. Eating habits have changed of late and they have met that demand so busy families love the ready made products for quick cooking but they also have their roast on a Sunday too. ‘The stir frys and marinated products we do are relatively new to some butchers. We were one of the first to do them. I used to

supply meat to Froggity’s restaurant in Bradbury Place and that inspired us to try recipes and offer those products. We also offer fruit and veg, some groceries, free range eggs and a small range of deli products too. We also do family packs so that retails at £20 saving around £6. They are very popular plus there are plenty of options and ideas for a week of meals.’ The local community is very important to Warwick’s and over the years they partake in various things such as providing the food for some primary school BBQs and helping out local junior football teams. But the staff are crucial to the winning combination of the business too. ‘The staff are very important to me too. Mark my son is a great asset has been working behind the scenes from he was about eight and has been with us here for a good few years now. One member Bill has been with me over 11 years now. We do everything to the best of our ability and pride ourselves on our quality. We have a lot of loyal customers, they’re like family plus the health centre brings a lot of people over here. Personal service goes a long way. We cut meat to people’s requirements and meet their budget where we can. We wish all our customers a happy new year and thank them for their support and loyalty.’ A recipe for success it seems and with the 25th birthday in June of this year, there will be some special events and offers coming up then to celebrate. 24 Holywood Road.
