Welcome It’s hard to keep track of all the incredible events that have taken place down at the new Titanic phenomenon at the docks. However one that sticks in the mind for its cause, participation levels, enthusiasm and the wonderful enduring image on our cover, photographed by Bradly Quinn, is the Titanic Yardmen Cycle and Walk. The 600 walkers and 400 cyclists, many of whom were from East Belfast, followed in the footsteps of the generations of Harland & Wolff yardmen who made their way to the shipyard. The modern equivalent converged at Belfast’s newest visitor attraction before setting off in memory of Rosi Kirker-Miller who, following diagnosis with bowel cancer, was dedicated to raising awareness of and funding for the treatment of bowel cancer, the second biggest cancer killer in the UK with almost 16,000 deaths per year. The event, which Connswater Community Greenway helped organise, reached their target of £20,000 raised for the charity Bowel Cancer UK. The spirit of the event sums up what can be achieved when a community comes together. On to this months edition and it’s a jam packed one with all the regular favourites and a few surprises too. We do hope you enjoy the magazine and we thank you and our advertisers for the support. Plus you can support the advertisers too by shopping local. East Belfast is in Bloom. Anyone still wishing to make a donation to Bowel Cancer UK can do so by visiting www. justgiving.com/yardmen or by texting YARD99 £insert amount to 70070. Groups from the Mountpottinger and Short Strand areas of the city came together for this cross-community project which ran as part of Belfast City Council’s Titanic community engagement programme. East Side Story Acclaimed theatre director in Belfast to tell story of the city’s east in new production.

The Baths is produced by Prime Cut Productions in collaboration with Dee Street Community Centre, Knocknagoney Community Centre and the Polish Association of Northern Ireland. 12 www.bloommagazine.co.uk

A new theatre production, which will give audiences a chance encounter with life in and around the Victorian Templemore Baths in East Belfast, will open to the public for a limited number of exclusive performances on Monday 7th May until Saturday 12th. The Baths is a community-led production involving people from the local area and is being created by leading Belfast theatre company Prime Cut Productions. Acclaimed Director Louise Lowe, who is an artistic associate of the company, will direct the production and is currently working with local community groups to develop the show based on their own experiences, as well as those of their ancestors who have used the Baths over many generations. Audience members are invited to the historic Templemore Baths to watch the immersive performance, incorporating stories from the area from 1912 and 2012. The production will be incredibly intimate with only three audience members moving around the building to watch a variety of performance types including one-to-one theatre, movement and dance pieces, soundscapes and visual installations. Templemore Baths was at the centre of life for most people in East Belfast in the early 1900s when few homes had bathing facilities. When the baths were originally opened in 1893 they were one of four in the city to fulfil a hygienic and sanitary purpose for the Belfast people as well as recreational. Men from the shipyard, including those who worked on the Titanic, were joined by dock and mill workers on a Friday evening for a wash before heading to the dance halls in the city centre. As a result, the Baths were arguably key in helping to turn Belfast into the thriving industrial hub it became in the 19th and 20th centuries. Louise Lowe commented, ‘The Baths will consider how the community around the building has transformed in the past 100 years through the accounts of several generations, both through families who have been part of East Belfast’s rich history and people who have moved into the area from elsewhere bringing a diversity in culture with them.’ Tickets to The Baths are priced at £5 and are extremely limited. For more information on the production visit www.primecutproductions.co.uk To purchase tickets call the box office on 028 9023 5053.

Bridal Season – Make up. Without a doubt, every bride wants to look fabulous and great makeup on the day is one of the keys to looking your bridal best. Mineral Makeup has everything you could want to be picture perfect and have makeup that will last all day and look naturally radiant without blocking pores or feeling heavy on your skin.

Health & Beauty

Tips to prepare for your big day...… • It’s what’s underneath that counts.

Prepare the skin - The foundation of your makeup is everything so you simply cannot go past Primer as your very first important makeup step.

• Always match to your tan

Spray tan is popular for the big day and it’s a must to make sure that your foundation colour blends your tan. Make sure that it is similar in colour but not necessarily as dark as your body tan. After your foundation is applied, using a bronzer will also help to match that golden glow (Youngblood have introduced a new range of beautiful bronzers to match any skin type). These are great for contouring or use on the body as well as the face.

Health & Beauty

Welcome to The Secret Day Spa beauty page. Keeping the good people of East Belfast looking gorgeous & feeling fantastic!

• What you set will stay

Once your foundation and concealer is all applied, it’s important to set it well using a lightweight, translucent powder and Hi-Def Perfecting Powder make for a brilliant finish for the skin, helping the foundation last all day long and also taking away unwanted shine. These are also a must to take along with you for touch ups, to de-shine throughout the day.

• Don’t be scared of a little more colour

If you want your make up to look just as good in photos as it does on the day, don’t be scared to wear a little more colour on your cheeks and lips than you usually would. Make up will look less intense in photos than face to face so pick a shade with just a little more intensity of colour. Perfect bridal cheek colours are peaches & soft pinks. This doesn’t mean going colour crazy, but just remembering that what looks “natural” face to will often fade out in photos. The Secret Day Spa, 30 Belmont Road, Belfast. We tailor garden services to fit your requirements, for domestic and commercial customers.’ Phone 028 9079 4294 or 07710 744 821. www.belmontgardenservices-belfast.co.uk

Alan Hill from Braeside Nurseries gives us his insider gardening tips and tell us what he can offer.

‘I’ve been doing this for 49 years now and it’s working nursery which means its all grown here on the premises. We have vegetable plants, bedding, shrubs, trees, conifers, alpines, heathers, you name it. We do a lot of basket plants and also sell filled hanging baskets all planted and ready for around £14-15. They’ll last through till around October from now. For a low maintenance garden, I’d recommend using a ground cover fabric on the planting areas, planting your shrubs and cover with bark or decorative stone etc keep the weeds at bay. There’s a range of plants for that use of various heights and colour. Anyone can call in and tell me their requirements and we’ll be able to advise what would work best. We also do window boxes and containers for people who don’t have the larger garden space. The main veg planting tip this time of year is to wait until all threat of frost has passed then do your planting. Don’t start too early. In May there are types of cabbage, lettuce, celery and leeks and herbs that would suit to go in now. Tomato plants, peppers and cucumbers will be ready for May planting too and courgettes end of May, all ready to harvest in July and August. We have everything here you would need and we’re only a short distance out of Belfast so you can be up here in 10 minutes.’ 25 School Road Crossnacreevy. ReFound piece by VictorBranco

Rising Star

History in the Making

ReFound is a group of creative individuals with an ever changing collection of reclaimed furniture, led by (Re)Founder Jill O’Neill.

Founded in 2010, ReFound works with local artists, designers and makers who use various disciplines and techniques to restyle used furniture. They add their creative skill to produce pieces that are bespoke, hand-crafted and appeal to the personality of the purchaser. ‘Born and raised in Belfast I first moved to Glasgow to complete a degree in Art History,’ says Jill. ‘I took a bold leap to New York in 1999 to work in the publishing industry. I worked for two years in advertising and promotions at SPIN Magazine. My magazine career continued to San Francisco, working at Readymade Magazine and then London in 2002 with Emap.’ Jill found herself back in Belfast in 2007, along with the many furniture and nick-naks she’d picked up along the way. ‘I had developed a passion for other people’s unwanted objects! I was attracted by the journey of ordinary objects, I was inspired to create a space where these objects gained new life as part of the next stage of their journey. This was also influenced by the many ‘stoop sales’ I frequented while in NYC and San Francisco where people empty out the contents of their apartments to sell when they are moving on to a new city. I loved hearing the back-story to their furniture and thought that this journey of pieces would make a great feature. And that’s what you get with a ReFound piece – a certificate that describes who restyled it and what inspired them.’ In buying ReFound pieces people are not only investing in a more sustainable option for home furniture but also in local creative talent. Since the first Refound pop-up store they have developed a cult following for upcycled, unique feature pieces of furniture. ‘We have fabulous customers who really care about both the creative and sustainable ethos. I have also had huge support from some inspiring business people whose enthusiasm for entrepreneurial activity and advice for my business have helped me enormously. Producing my own brand, seeing it develop and being able to generate growth not only for my business, but for the artists and designers that work with ReFound is fantastic. When someone first said to me ‘oh you are behind ReFound, that’s amazing, I’m such a fan of your stuff,’ it filled me with a huge sense of pride.’ 20 www.bloommagazine.co.uk

Red Hot Chilli Cookbook

In this amazing book published by Ryland Peters & Small, chilli guru Dan May shares more than 70 recipes celebrating chillies in all their varieties and strengths. Featuring photography by Peter Cassidy, acquaint yourself with the history of chillies, how to grow them at home and how to identify the key varieties. Discover ideas for every kind of dish from soups and salads, main meals, salsas and marinades to sweet things and drinks. This extract features just three of the tongue tingling array available in the book which is available now. www.bloommagazine.co.uk 23

Baked chilli eggs ‘This is a version of ‘chiles con huevos’ – long associated with the long, hot days and frosty nights of the flat plains of the Texas Panhandle. This dish originated in the Mexican border country but is now fairly commonly found throughout the United States. Although often cooked in a single casserole dish, in this version the mixture is divided into individual ramekins before the eggs are added, and served as a light meal. It is ideal for breakfast or as a supper treat.’ 25 g butter 1 garlic clove, crushed 125 g smoked ham, chopped 225 g mushrooms, diced 2 hot green chillies, finely chopped 225 ml sour cream 2 teaspoons dried parsley 1⁄2 teaspoon dried oregano 6 eggs 200 g grated mature cheddar sea salt and freshly ground black pepper toast, rubbed with a garlic clove, to serve hot sauce, to serve 6 individual ovenproof ramekins Serves 6 for a light meal or breakfast Preheat the oven to 190˚C (375˚F) Gas 5. • Melt the butter in a heavy-based frying pan over medium heat and fry the garlic and ham for about 2 minutes, stirring regularly. Add the mushrooms and chillies and continue to cook for about 5–10 minutes until the mushrooms start to brown and the chillies begin to soften. Remove from the heat and stir in the sour cream, parsley and oregano. Season lightly. Divide the mixture equally between the ramekins and let stand for about 10 minutes to allow the flavours to blend. • Make a shallow hollow in each mixture and carefully break an egg into each. Season the eggs with salt and pepper. Bake in the preheated oven for about 20–25 minutes or until the egg whites have set. Remove the ramekins from the oven and sprinkle the grated cheese over 24 www.bloommagazine.co.uk

all of them. Return to the oven for about 5 minutes, or until the cheese is bubbling. Serve immediately with garlicky toast and a bottle of hot sauce to splash on the eggs. • My Tips: If it is very warm in your kitchen, place the mixture in the fridge to set a little before making the hollows and adding the eggs. For an even more luxurious (and meat-free) alternative, substitute the smoked ham for smoked salmon. Serve with a lightly dressed baby leaf salad. Recommended Chillies: Serrano, Mirasol or Espanola; Anaheim if you want it a bit milder.

Spanish potato, garlic & chorizo soup ‘This is a marvellously rustic and enjoyable soup to both make and eat. The chorizo sausage adds a lovely warm background flavour to the dish and the toasted almonds put a delicate sweet crunch into every mouthful. Serve it with the best, freshest bread.’

3 tablespoons olive oil, plus extra to drizzle 250 g chorizo sausage, sliced into 1.5-cm pieces 1 large onion, chopped 4 large garlic cloves, thinly sliced 1 hot red chilli, deseeded and finely chopped 125 ml white wine 1 kg potatoes, peeled and cut into 2.5-cm cubes 500 ml hot chicken or vegetable stock 1 tablespoon sweet smoked paprika (pimentón dulce) 1⁄2–1 teaspoon celery salt 1 teaspoon dried tarragon 50 g blanched almonds, toasted and coarsely ground with a pestle and mortar, to garnish chopped fresh flat leaf parsley, to garnish Serves 4–5 • Heat the oil in a heavy-based saucepan over medium heat and fry the chorizo for 2 minutes. Reduce the heat and add the onion, garlic and chilli. Fry gently for 10 minutes, or until the onion has softened.

• Pour the white wine into the pan and gently simmer for another minute to evaporate the alcohol. Add the potatoes and stock and mix well. Add the paprika, celery salt and tarragon, stir thoroughly and bring back to the boil. Reduce the heat to low and gently simmer until the potatoes are cooked. Add a little boiling water to the pan if it looks like there’s not enough liquid. Season with salt and pepper to taste. • Garnish with a scattering of the almonds, a little parsley and a fine drizzle of olive oil. My Tip: I recommend that you use sweet smoked paprika (Spanish pimentón dulce) for this recipe, but stick to the unsmoked, sweet variety if you don’t like smoky flavours. Recommended Chillies: Guindilla or any hot Cayenne variety.

Dealer’s Choice Ace restaurant, the new addition to East Belfast’s food ‘hall of fame’ evidently holds a winning hand.

‘W

e had planned to revamp and renovate the Gourmet Burger Bank but wanted to make sure we got the formula correct before we proceeded.’ That was the thinking from the team behind the latest addition to East Belfast’s burgeoning restaurant scene. Having already launched Il Pirata with great success, every new venture is a challenge, but even more so when replacing a firm favourite. Again they worked with Oscar and Oscar on the fit out, who have been nominated for the restaurant and bar design awards for their work on Il Pirata. ‘In many ways launching an existing restaurant is more difficult than opening a new venture, especially when the old restaurant was as established and successful as the Gourmet Burger Bank was. We wanted to provide something different and more exciting for our loyal customers who have given us so much support over the last six years, whilst remaining a part of the local community. Plus we also wanted to give something back to our hardworking staff many of whom have been with us from the early days of the Gourmet Burger Bank.’ The kitchen team at Ace is headed by Levi Deakin, a well-travelled Aussie, who has created some super dishes. The front of house team is led by Adam Shaw, ably supported by the familiar faces of the previous waiting staff. So with the strong team in place, now the challenge began to create something special. ‘We serve all day brunch with an American slant offering up pancakes with bacon and maple syrup, fresh homemade granola and French toast with cinnamon sugar. We have gorgeous New York deli style sandwiches, hot dogs and sliders as well as a range of tasty suppers and healthy salads. Never fear we still serve our classic beef and chicken burgers!’ Expect a brand new, NYC loft style interior and a great selection of food all served with a sublime soundtrack and friendly staff. The team have expanded the drinks list to include a lovely range of wines, cocktails, floats and shakes (both alcoholic and non). ‘We will also have a range of daily specials so there always something new and fresh to try on the menu. Our goulash with spiced pork sausage is truly special, the BBQ pork slider is fantastic as is our Reuben Sandwich, of pastrami, Swiss cheese and sauerkraut. We also have some great healthy options like our quinoa super food salad with fresh pomegranate seeds and a preserved lemon dressing or our prawn avocado and crayfish taco. We are inspired by a relaxed informal dining experience and we wanted Above left: The ultra cool to continue to offer great value for money, as we always have done, whilst dining room. Local Legend

Fryar Tuck proprietor Gavin Keown at the helm ready for another busy day ahead.

50 Years Of Frying

Almost half a century in business, we speak to Fryar Tuck’s Gavin Keown.

I

t all started in June 1963.’ says Gavin, ‘so it’ll be 50 years next year. It was my father that started it, he was working in Shorts at the time and wanted to get out of the desk job. My grandfather had been in the food business before that, a self taught baker. He spent his younger days in the central library during the depression reading up on baking and made his career from there owNing bakeries and fish and chip shops. In the 60’s you had to get tourist board approval to open any sort of food premises, so I recently found the certificate for our ‘fish and chip supper saloon’ from 1963. I started working here in 1984, initially for 6 months, when my father was ill and I ended up staying on.’ But things have certainly progressed over the years, and that means dealing with changing eating habits and a demand for variety, as Gavin explains. ‘In the 60s and 70s we had a very small menu; Fish, chips, pasties and sausages and that was it. The burgers started in the 80s and now we have a number of chicken variations these days too. In the old days fish was a cheap commodity, but its a little more expensive these days. The core of our trade is people buying a family meal and we do try and keep our prices as competitive as possible. Fish supplies are harder to get and prices have risen but we always try and keep it down as low as we can. We also do kids meals, meal deals and people expect those kind of things now. The menu has certainly broadened out but at the core of the business is an incredible skill and level of judgement that makes the battered items on the menu so special. ‘Only my father, myself, an aunt who worked here 20 years and three managers in the last 20 years whom I have trained myself have fried fish in here in 50 years. Occasionally if I’m on a break someone else might dip the fish but they’re frying in batter I’ve prepared. So being responsible for the making of the batter and frying the fish, there have only been six people in 50 years. It’s all about proportions and we have to vary our batter depending on heat, humidity and the product we’re working with whereas if you use one standard batter from a packet, you don’t have that kind of control. Also some fish and chip shops might buy their chips in ready to go, but we have our potatoes delivered by a farmer in paper sacks and they are peeled and chipped here on the premises. We now sell a number of different burgers including a special steakburger where we bring in steak pieces, marinate them, mince them and that gives you a completely different tasting burger. We’ve also started doing deliveries in the last month and it has gone so well we’re now extending it to Saturdays.’ So with an incredible history and 50 years in the business at the Bloomfield roundabout, what’s the secret to being here so long? ‘You have to keep worrying about it. Once you get too comfortable, it can go off track. You’re dealing with fresh products so nothing is the same day to day. For example last year because of the temperatures in winter, a lot of the potatoes were exposed to frost which actually affects their ability to fry. If the temperature drops just a few degrees the starch turns to sugar and they turn dark brown so you have to deal with situations like that. The market is changing, they’re experimenting farming methods and cod is a fish which naturally lives in large shoals, unlike salmon. So perhaps there is possibly of the prospect of locally produced fish becoming available again, which could be amazing for the likes of us.’
