Steamed purple sprouting with tarragon on a hob less than 30 minutes

COOKING METHOD: TIME NE E DE D:

Quite possibly the side I cook most often. Once tuned in to, the match of irony broccoli and anise-heavy tarragon is hard to turn away from. What’s key, though, is to ensure the purple sprouting is cooked a little beyond al dente, so it’s juicy and floppy, but not yet dulled in colour; and to be liberal with the herb, the oil and the black pepper. Serves 4–6 600g purple sprouting broccoli (or Tenderstem will do) 4–5 tbsp good-quality extra virgin olive oil Leaves from 10 stems of tarragon, roughly chopped Zest and juice of 1/2 a lemon Sea salt and black pepper

Trim any woody ends from the purple sprouting stems. Cut the stems in two, just below where the sprouting parts begin; this should leave you with lengths of approximately 5–6cm. Prepare a pan of boiling water and top with a basket. Once it’s steaming, add the purple sprouting and place a lid on top. Steam for about 6 minutes, deliberately going beyond al denté. Remove the broccoli from the steamer. Put into a serving or mixing bowl, and season with the tarragon, lemon zest, plenty of salt and black pepper. Then pour the lemon juice and olive oil over the top and toss the vegetable thoroughly but gently, so all pieces are well dressed. Serve immediately.

Spiced roast heritage carrots no cooking needed up to an hour*

You could of course use regular orange carrots for this dish. But the heritage versions are both a visual treat, and particularly flavourful when roasted; I’d happily have these as a main course with a spoon or two of curd or ricotta. As is typical of root vegetables, carrots are brilliant when roasted. They blister and contract into a more intense, sweeter version of their raw, steamed or boiled selves. However, it’s the extras in this that make the dish stand out: the roast onions; the spiced salt seasoning; the fresh coriander; and the squeeze of lemon. Little touches that lift the end result. Good with both heavily spiced and plain meals. Serves 6

900g–1kg heritage carrots 3 brown onions 3 tbsp vegetable oil (light rapeseed) 2 tsp cumin seeds 1 tsp coriander seeds 1 tsp fennel seeds 1 tsp sea salt Leaves picked from 12–14 stems of coriander Juice from 1/2 lemon 2 tsp toasted sesame seeds

Whilst waiting for the carrots to cook, pick and roughly chop the coriander leaves. Lightly toast the sesame seeds in a heavy-bottomed saucepan over a low heat (if not already toasted).

Pre-heat your oven to 200C. Peel the carrots, trim their top ends and cut in half lengthways. Put in a suitably sized roasting tray – one that’s not so big that there’s loads of space between the vegetables; nor so tight that they sit on top of each other and steam rather than roast. Put the spice seeds and salt in a pestle and mortar and grind well, but not quite so much that they become fully powdered. Sprinkle half of the spiced salt over the carrots. Mix well, then add the oil. Mix again. Place towards the top of the oven for 30–35 minutes, shuffling the tray after 20 minutes. They’re done when tender, but also blistered and a little charred or 32

When the carrots are ready, remove the tray from the oven. Sprinkle the sesame seeds and squeeze the lemon juice over the top. Mix well and decant to a serving bowl or platter. Check for seasoning and add more of the spiced salt if you think it needs it. Add the coriander leaves and gently mix the carrots one final time. Serve immediately, though this works as a cold side too. Shanghai red-braised pork with eggs shang hai hong shao rou Red-braised pork, in which chunks of belly pork are simmered with soy sauce, rice wine and sugar, is beloved across China, and there are many regional variations. In Jiangnan, and especially Shanghai, they like theirs dark, sleek and seductively sweet. The pork is only cooked for about an hour in total, so the meat and fat retain a little spring in their step. A secondary ingredient is often added, such as bamboo shoot, deep-fried tofu, cuttlefish, salted fish or, as in this recipe, hard-boiled eggs. The dish is a perfect accompaniment to plain white rice; I do recommend that you serve it also with something light and refreshing, such as stir-fried greens. At the Dragon Well Manor restaurant in Hangzhou, they call this dish Motherly Love Pork because of an old local story. Once upon a time, they say, there was a woman whose son had travelled to Beijing to sit the imperial civil service examinations. Eagerly awaiting his return, she cooked up his favourite dish, a slow-simmered stew of pork and eggs. But the road was long and the travelling uncertain, so her son didn’t arrive when expected, and she took the pot off the stove and went to bed. The next day, she warmed up the stew and waited again for him, but he didn’t arrive. By the time her son actually reached home on the third day, the stew had been heated up three times, and the meat was inconceivably tender and unctuous, the sauce dark and profound.

Hard-boil the eggs in a pan of boiling water, then cool and shell them. In each egg, make 6–8 shallow slashes lengthways to allow the flavours of the stew to enter. Smack the ginger and spring onion gently with the flat side of a Chinese cleaver or a rolling pin to loosen their fibres. Put the pork in a pan, cover with cold water, bring to the boil over a high flame and boil for 5 minutes. Drain and rinse it under the cold tap. When cool enough to handle, cut the meat through the skin into 2–3 cm cubes (if your piece of belly is thick, you may want to cut each piece in half so they end up more cube-like).

Heat the oil in a seasoned wok over a high flame. Add the ginger, spring onion, star anise and cassia and stir-fry briefly until they smell wonderful. Add the pork and fry for another 1–2 minutes until the meat is faintly golden and some of the oil is running out of the fat. Splash the Shaoxing wine around the edges of the pan. Add the hard-boiled eggs and stock or hot water, along with the light soy sauce, 1½ tablespoons dark soy sauce and the sugar. Bring to the boil, then cover and simmer for 45 minutes, stirring occasionally.

Pour into a pot or a bowl, allow to cool, then chill overnight. In the morning, remove the layer of pale fat that has settled on the surface. Tip the meat and jellied liquid back into a wok, reheat gently, then boil over a high flame to reduce the sauce, stirring constantly. Remove and discard the ginger, spring onion and whole spices. After 10–15 minutes, when the liquid has reduced by about half, stir in the remaining dark soy sauce.

Persimmon, goat’s cheese and rocket salad

My family have dozens of persimmon trees on their farm in Iran but as a child I had a real aversion to the fruit, hating the way it tickled my tongue, making it feel dry and fuzzy. It was only as an adult that I learnt that the trick to enjoying persimmons is to hold off until they are so ripe they look like they will burst from their skins. Now, when the fruit is in season, I love to simply chop off the stalks and scoop out the soft, wobbly orange flesh with a teaspoon. Paired here with walnuts and peppery rocket, persimmons give a sweet, spicy edge to this easy summer salad. If the fruit you buy from the shops isn’t quite there yet, let it sit in your fruit bowl until deliciously ripe.

Borani-ye laboo Somewhere between a dip and a salad, this vibrant, fuchsiacoloured mezze dish is a wonderfully cheerful addition to any Persian spread. As the small pieces of cooked beetroot are folded through the yoghurt their purple juices streak through it, leaving behind bright magenta swirls. The longer you leave the flavours to infuse, the deeper the colour of the final dish (and the more enchanted your guests will be). To make a more substantial starter, add some lightly toasted walnuts and feta to top. Serve with flatbread or on the side of a rice dish.

In a large mixing bowl, combine the yoghurt and garlic, and season with the salt and pepper. Add the beetroot and dried mint and stir well. Taste and adjust the seasoning. Crumble over the feta and the walnuts (if you are using them) then finish with a final sprinkle of dried mint, if you like. Serves 4–6

Toast the sunflower seeds and the walnuts in a small pan over a medium heat for a few minutes, until they start to look glossy. For the dressing, whisk together the pomegranate molasses, olive oil, salt and a generous grind of pepper in a small bowl. To assemble the salad, start with the rocket, followed by the persimmon, top with the goat’s cheese and then add the nuts and seeds. Drizzle over the dressing so it evenly coats the salad and serve immediately. Serves 2 as a main or 4 as a side

The yoghurt cake is also known in Italian as the ‘seven pots cake’, because the empty yoghurt pot is used as a measuring cup. Our children love to make this cake on their own. I arrange all the ingredients on the table and leave the kitchen, telling them: ‘Just make sure you don’t put a pot of salt in it.’ These days, this elicits rolling eyes rather than a laugh – they have heard that joke many times before. When they have finished, I am summoned back in to put the cake in the oven. For tasting and eating it, however, they never require any assistance.

Grease the base and the sides of a 23cm diameter cake tin with sunflower oil, and dust it with flour. Preheat the oven to 180°C/Gas 4.

Crack the eggs into a mixing bowl and stir to combine with the peach yoghurt. Now use the empty yoghurt pot as a measuring cup. Measure the sunflower oil, sugar and flour into the bowl. Add the baking powder, the vanilla extract and a pinch of fine salt. Mix until smooth.

Among the ingredients that should always be available in a busy mum’s kitchen are the ones used for this simple recipe: chicken, milk – and frozen peas, which are unjustly regarded as the kitchen’s enemy of promise. Children, babies and toddlers adore this dish, and its taste is so delicate that even the most exacting husband will eat it ungrudgingly. This is a very versatile recipe, and you can replace the peas with any other vegetable you can dig out from your fridge, such as asparagus, courgettes or carrots.

4 x skinned chickenbreast fillets (300g) 2 tbsp white flour Olive oil ¼ onion, finely sliced 250g frozen peas ½ vegetable stock cube Sea salt 150ml milk

Cut the chicken breasts into slices about 1cm thick and toss them in flour, shaking off any excess. Heat some olive oil in a saucepan and sauté the onion until it becomes translucent. Add the frozen peas and stir with a wooden spoon.

Meanwhile, heat up 2 tablespoons more olive oil in a frying pan and add the chicken fillets coated in flour. Cook them on both sides until they start to turn golden. Check that the chicken is cooked, then sprinkle some salt and pour in the milk. Let it simmer for a few minutes, until the milk has almost totally evaporated.

Pour the mixture into the cake tin and put it in the oven for about 30–35 minutes, or until a skewer or cocktail stick slid into the centre of the cake comes out clean. Leave the cake to cool, then dust with icing sugar before serving.

At this point add the peas to the chicken in the pan and leave to cook for another 2–3 minutes, so that all the flavours can blend together. Serve hot.

Once the cake has cooled, you could cut it in half and fill it with a layer of jam. Alternatively, top the cake with sliced peaches for dramatic effect, as shown opposite. For extra flavour, include the zest of 1 lemon in the mixture along with the other ingredients.

Now add a glass of water (about 150ml), the half vegetable stock cube and a pinch of sea salt. Cover with a lid and leave to cook for about 7–8 minutes, checking now and then that the water has not totally evaporated, otherwise the peas will get burnt.

Bordered by Europe in the north, Asia in the east, and in the south by Africa, the Med is 969,100 square miles, so lots to explore. Western civilisation can be traced right back here. It has been overrun by different cultures over the centuries, which is indelibly linked to its food and drink.

I could happily live on a desert island with nothing more than bread, wine and olives. This classic Provençal spread is useful to the point of essential on board. Always have a jar to hand stashed in your boat larder. It keeps for weeks under a thick layer of olive oil and can be turned into a pasta sauce, used to top potatoes, made into vinaigrette, great as an instant crust on fish fillets, or made into a sandwich. It’s best though slathered on slices of toasted baguette and washed down with a well-chilled drink – the ultimate boat nibble.

That’s why we have such an affinity to it. We understand that much of our language and most of our culture comes from here – but we are especially drawn to the cuisine. The Mediterranean table is all about sparseness – using a small number of ingredients and making do. There’s a respect for ingredients, a simplicity of flavour and a level of quality that says it all, with wines that are sought after – and emulated – all over the globe.

It’s brilliant with a delicate, pale, pink rosé, unimpeachable with a gin & tonic and a fine accompaniment to pastis. If you have access to fresh basil, use it, but a pinch of dried thyme will suffice. It’s usually blitzed in a food processor but I love this chunky version chopped finely by hand. Traditionally it’s made from the small black olives so beloved in Provence, but I also like the addition of an astringent kick of green. I sometimes add 3 or 4 chopped sun-dried tomatoes when I have them, and a teaspoon of sailor’s favourite rum, which adds a balancing sweetness. Avoid rubbery pitted olives in brine if you can, instead prize out the stones with a sharp knife.

There is an essential dignity to the cuisine here, too. It uses produce that has a sense of place, that imbues the character of each region – a particularly intense black olive, say, or a difficult-to-pronounce grape variety that you won’t find anywhere else. Not to mention mountain herb-laced spirits that both settle the stomach and make the party swing in a way that never quite works back at home. Discover and enjoy.

Pork pork home, unwrap it and dab away any moisture from the skin with kitchen paper. Then keep it, uncovered, in the fridge for 24–48 hours before cooking. Using a very sharp knife or a Stanley knife, cut through the skin and well into the fat, but not as far as the meat at 1–2cm intervals. Often, butchers will do this for you. Leaving your joint untied helps the skin curl upwards and crackle better. Oil the skin lightly, then sprinkle liberally with fine salt. Give the joint an initial sizzle at a very high temperature for the first half hour or so, to get the blistering going nicely on the skin, then turn the oven down. If you find that your pork is beautifully cooked but the crackling is only partway there, you can either whack up the heat again at the end (but only if it’s one of the fattier roasting cuts such as shoulder) or slice the crackling off completely and grill it until blistered and beautiful… keeping a close eye, as it can burn easily.

Few wild foods occur in as great abundance as wild garlic. From late winter until early June, this prolific plant dominates shady roadsides, dark areas of the garden, and D woodland. The strong smell of garlic will ensure that you do not confuse the plant with any poisonous look-alike, such as Lily of the Valley. It is easy to pick an entire E bin-bag full with no damage to the local population, should you have use for such a large amount. All of the plant is edible, from its narrow root (which of course you F should not dig up without the permission of the landowner), through the leaves, flowers and immature seed heads. The leaves are the part most used and they are, in effect, G garlic in salad form. The flavour is very much that of the garlic bulb with which we H are all familiar – though less concentrated and tenacious. Shredded or chopped, wild garlic leaves can be used instead of ordinary garlic – I though they are best cooked only lightly. But their leafy nature opens up many new possibilities. Chief among these is as a shredded addition to a green salad. But a great J favourite of mine is wild garlic pesto; you can use any part of the plant for it but the immature seedheads work particularly well. This delicious preparation is great on K pasta, with mushrooms, or as a finishing flourish for soups. The broad leaves are also useful in the making of dolmas or, more properly, sarmas L – the leaves wrapped around anything you like and the parcels baked with a light sprinkle of olive oil. One or two wild, shelled mussels (see page 000), cooked with a M little wild garlic, make an excellent and thoroughly wild accompaniment to pretty N much any fish. As with ordinary garlic, the flavour softens after cooking and will not overwhelm the senses. Late in the season, the pretty, white, star-shaped flowers appear O and can be used to garnish this or any other suitable dish. Not to be confused with wild garlic, but very good in its own right, is hedge garlic P (Alliaria petiolata), also known as garlic mustard or Jack-in-the-hedge. It is very common (except in Northwest Scotland and Northern Ireland) and easy to spot – its Q tall stalk encompassed by deeply veined, heart-shaped leaves, with little white flowers in the spring. The leaves are good at any point before these flowers are fully out, but R the rosettes of basal leaves that form early in the year before the stalk shoots up are particularly tasty. The leaves, which have both garlicky and mustardy overtones, are S good in salads, pesto-style sauces, stuffings or in the recipe below.

Irresistibly crisp and garlicky, these are a fantastic way to celebrate one of the first wild harvests of the year. Hand them around, hot and salty, as a nibble. Serves 6

Gently wash the garlic leaves and pat dry. Trim the coarser stalks back to the base of the leaf. Cut any larger leaves down to size – you want pieces roughly the size of a bay leaf.

In a large bowl, combine the flour with a pinch of salt and the baking powder. Add just enough iced water to create a batter with a consistency slightly thinner than double cream. Heat a 3–4cm depth of oil in a heavy-based medium saucepan to 170°C (a little of the batter dropped into the hot oil should fizz and turn golden in about 30 seconds).

Cut between the bones to release the individual ribs. Place these in a stockpot with the spring onion tops, garlic, ginger, chilli, coriander stems and lime zest. Pour over 1 litre water and bring to a gentle simmer over a medium heat. Cook for 1½ hours. Meanwhile, preheat the oven to 220°C/Fan 200°C/Gas 7. Place the boned pork, skin side up, in a suitably sized roasting tin. Season it well with salt and pepper and cook in the middle of the oven for about 30 minutes, or until the skin starts to blister. This is the beginning of your crackling – don’t be afraid to give the joint another 5–10 minutes at this high heat to get that blistering going (though do watch that the juices aren’t burning). Now turn the heat down to 150°C/Fan 130°C/Gas 2 and add ½ glass of water to the roasting tin. Cook the pork for a further 3 hours. Add a little more water if you need to during cooking to stop the lovely juices from the pork burning.

Remove the pork from the oven and allow it to rest while you cook the noodles according to the packet instructions. Drain, refresh under cold water, then drain again and toss with the tiniest drop of oil, just to stop them sticking together. To serve, reheat the pork stock. Remove the crackling from the pork and snap it into pieces (you can give it a final blast under the grill if it’s not quite crisp enough). Cut a good slice of pork per person. Halve the tomatoes and slice the spring onions thinly. Place a slice of pork in each large warmed bowl and divide the noodles, tomatoes and spring onions between the bowls. Ladle the hot stock equally into the bowls, and finish with some shards of crackling and a generous scattering of coriander leaves.

Drop a small handful of garlic leaves into the batter, stir around, then lift out little clumps and carefully drop into the hot oil. Fry for 45–60 seconds, until golden and crisp, turning once or twice. Transfer to a plate lined with kitchen paper to drain; keep warm. Repeat to cook the rest. Season the fritters with salt and serve immediately, with lemon wedges.

First remove the bones from the pork: starting in the thickest corner, use a sharp meat filleting knife to make a cut immediately under the ribs. Keeping the knife tight to the underside of the bones, work carefully and slowly down from the corner, gradually releasing the ribs from the meat until you can remove them, all in one piece.

Once the stock has simmered for long enough, pass it through a fine sieve into a clean pan. Season with salt, a good pinch of sugar, soy and lime juice to taste.

The belly is slow-roasted, then sliced and served in the tasty broth with noodles, tomatoes and crunchy spring onions. You can use the method here for a simple pork belly roast to be served just as it comes. Serves 4–6

Pre-exercise static stretching Holding deep, static stretches prior to a workout is now thought to actually impede, rather than improve, performance. Numerous studies have shown that it can make particularly decrease performance in speed, strength and power-based sports. This includes any sport that requires explosive bursts of power and strength such as sprinting, long jump as well as shorter swims and weightlifting. This is why we save long-held stretching for the post-sport cool down. This reduction in soreness will depend a lot on the intensity and duration of exercise. Remember: only perform light stretches if the muscles are very sore.

To practice movement patterns Warm ups that focus on mimicking the movement patterns of the athlete’s sport will allow them to practice skills such as coordination, balance, speed and agility as well as improving range of motion in the muscle groups used for that sport. We all love the Med. The glittering, deep blue sea; the hidden coves; the white-washed villas tumbling down hillsides; the warm smell of pine drifting on the breeze; chattering cicadas, fragrant markets; languorous squares, bustling ports.

I could happily live on a desert island with nothing more than bread, wine and olives. This classic Provençal spread is useful to the point of essential on board. Always have a jar to hand stashed in your boat larder. It keeps for weeks under a thick layer of olive oil and can be turned into a pasta sauce, used to top potatoes, made into vinaigrette, great as an instant crust on fish fillets, or made into a sandwich. It’s best though slathered on slices of toasted baguette and washed down with a well-chilled drink – the ultimate boat nibble.

That’s why we have such an affinity to it. We understand that much of our language and most of our culture comes from here – but we are especially drawn to the cuisine. The Mediterranean table is all about sparseness – using a small number of ingredients and making do. There’s a respect for ingredients, a simplicity of flavour and a level of quality that says it all, with wines that are sought after – and emulated – all over the globe.

It’s brilliant with a delicate, pale, pink rosé, unimpeachable with a gin & tonic and a fine accompaniment to pastis. If you have access to fresh basil, use it, but a pinch of dried thyme will suffice. It’s usually blitzed in a food processor but I love this chunky version chopped finely by hand. Traditionally it’s made from the small black olives so beloved in Provence, but I also like the addition of an astringent kick of green. I sometimes add 3 or 4 chopped sun-dried tomatoes when I have them, and a teaspoon of sailor’s favourite rum, which adds a balancing sweetness. Avoid rubbery pitted olives in brine if you can, instead prize out the stones with a sharp knife.

There is an essential dignity to the cuisine here, too. It uses produce that has a sense of place, that imbues the character of each region – a particularly intense black olive, say, or a difficult-to-pronounce grape variety that you won’t find anywhere else. Not to mention mountain herb-laced spirits that both settle the stomach and make the party swing in a way that never quite works back at home. Discover and enjoy.

So far so good, but we still haven’t answered the question as to why the boat is not simply sucked into the direction of the lift of her sail. The reason lies in her keel, which supplies the vital element of lateral resistance. A well-designed sailing craft has absolutely no interest in going sideways. When the diagonal force from the rig arrives at the keel, it undergoes a process of resolution into two basic components. One pulls athwartships; the other forwards (Fig 2.2). Depending on the set of the sail, the forward component is frequently much smaller than its athwartships counterpart, but because the capacity of the keel for resisting this is so great, and any reluctance to move ahead is diminutive, the vessel slides forward through the water.

You should resist the temptation to oversheet the main in order to ‘keep it clear of the shrouds’. It isn’t doing itself any measurable damage. So long as it is vanged well down, the small amount of chafe will be an acceptable trade-off for not spoiling the trim of the boat. As you steer her further downwind, there comes a time when the breeze will be aft. The boat is now on a dead run. No vessel has ever enjoyed this point of sail, not even one with a single squaresail, because there is now no aerofoil effect left at all. Unless there is a lot of breeze, this leaves the rig feeling sloppy and makes for slow progress with heavy, unrestrained rolling thrown in as a bonus. In spite of the negative features of running, there are times when it is unavoidable. Techniques for surviving it are discussed in Chapter 4. In a fore-and-aft-rigged craft such as a modern yacht, the danger of an accidental gybe must be appended to the list of miseries endured on a run. Even with the boat dead before the wind, her main boom must be over one side or the other. Nominally it must be to leeward, except that there is no lee side on a run. If the boom is to starboard and you allow the wind to creep around towards the starboard quarter, the boom will then be on the weather, or windward, side. This is an unstable state, and unless the boom is restrained by a preventer it may slam violently across the boat, settling the Fig 2.3 account for the treatment you have given it.

As the wind picks up, keep hardening the luff until your efforts to maintain a good camber become fruitless. The sail should now be overpowering the boat if the sailmaker and the designer got their sums right. Change it for a smaller one, which should also be flatter cut, or roll some away. The converse of keeping your sails reasonably flat as the wind hardens is that a sail can sometimes be set up to be too shallow-cambered. It will then lack the power to drive the boat in light airs. If the sail seems lifeless, ease the halyard, and the sheet too if necessary, so as to power up the canvas. Attention to the luff of the sail may cause the leech to require service. The leechline, if fitted, is a light piece of small stuff sewn into the trailing edge of the sail. It should be gently ‘tweaked’ just far enough to stop the leech beating, and no further. Too much tension causes a hooked leech, which is hateful to behold. If the leech is already hooked, slack away the line as far as the sail will let you. The twist of a headsail is determined mainly by the position of the sheet leads. Most boats have these on sliders. If yours doesn’t, the sail must be cut to the position of the fixed leads. Sheet-lead positions are crucial (Fig 3.2). When the helmsman brings the sail a little too close to the wind from closehauled or a close reach, the luff should lift evenly all the way up. If the bottom of the luff lifts first, the genoa sheet-lead car lead is too far forward on its track, making the leech too tight so that the sail is not twisting enough. If the top goes first, there is too much twist, caused by the sliding car lead being too far aft. The best position can only be found by experiment, but luff ‘telltales’ are a tremendous help. If you don’t have any, install them now. All you need are three 8-inch (20-cm) lengths of wool pushed through the sail with a sail needle, about 6 inches (15 cm) abaft the luff (in a 35-footer) and knotted on both sides. The windward ones will always flick up just before the sail lifts. If the leeward ones go dancing they tell you without room for argument that the sail has stalled either from oversheeting on a reach, or because the person steering the boat to windward is driving her to leeward of her best course. It’s critical to inspect the position of the sheet lead after you’ve pulled a reef or three into a roller genoa. Chances are the car will need to be moved forward. Failure to take this simple step will depower the genoa by letting the top twist away. The sail

As the sail is trimmed progressively further from the fore and aft line of the yacht, the forward component of its lift increases. It is therefore easier to sail fast while reaching than it is closehauled. The system only works properly, however, so long as the sail is cutting the wind cleanly. Fig 2.3 indicates that a sail that has been let out too far is backwinded. If it is sheeted in too hard, it stalls. The trick of setting a sail correctly on a reach is, therefore, to ease the sheet until the luff shows signs of backwinding, then pull the sail in just far enough to put it to sleep, and no further. You’ll know then that it is not stalled, and that it is delivering as much forward drive as it is able.

Not even the best will set as well with six rolls in, so you can help it give its best by making sure it’s led properly. A well-found yacht will have a small tackle led aft to the cockpit on either side to control the car’s movements. A non-sailor’s boat may well see you stumbling down a heavily heeled side deck after dark to fiddle around with a nasty fitting under substantial load – the very thing a roller sail is meant to avoid – so don’t spare the pennies. Rig a tackle and give the boat and her crew their best chance.

l SHAPING THE MAINSAIL As in a headsail, mainsail camber is largely controlled by luff tension. However, sails on boats with any pretension to performance generally also offer a clew outhaul. The effects of this will extend approximately to the lower third of the sail. Haul it out to flatten the sail as the breeze fills in. A mainsail that is set behind a genoa will emphatically not require a hard entry. Such a form will often result in the backwinding of the main luff when the boat is closehauled. Instead, a gentle curve aft to a maximum camber virtually in the centre of the sail will work well if the boat is masthead rigged. The more powerful sail of a fractional rigger should carry its maximum camber somewhat further forward, but still with a flat, gentle entry. Mainsail twist is highly controllable on a modern yacht. Leech tension, the essential element, is determined by the mainsheet when closehauled. With the kicking strap (or kicker, or centre boom vang) let off, juggle the sheet tension until the top batten of the sail lines up with the boom when viewed from directly underneath. There is no need to lie in the bottom of the cockpit, a glance will suffice. Once you have the twist you are after – and if the sails are well cut, the leech of the main will now sweetly follow that of a well-trimmed genoa – the mainsail’s angle

riting in his journal on October 21st, 1492, Christopher Columbus described ‘little birds … so different from ours it is a marvel’. Minute in size and with brilliant plumage, these captivating creatures, which are native to the New World and not known in Europe, have given rise to many colourful legends. Huitzilopochtli, the ‘hummingbird of the south’ was, to the Aztecs, a god of sun and war. All warriors slain in battle, according to Aztec tradition, rise to the sky and orbit the sun for four years. They then become hummingbirds, feeding on flowers in paradise. In Mojave Indian lore, the bird was sent from the Underworld to find the sunlit world where men could live. In Pueblo Indian legend, after losing his bet with the sun a demon is blinded and in anger spews out lava from the earth. As the earth catches fire the hummingbird saves it by gathering the clouds and producing rain. According to Mayan tradition, the hummingbird is the sun in disguise; he is constantly trying to seduce a beautiful woman (the Moon). In one Navajo tale, the hummingbird – once as large as a crow – was shrunk to its tiny form by the Great Spirit as a punishment for its destruction of flowers; its bright colours were the only consolation granted. The birds appear to evoke universally positive human emotions – a tribute to their beauty and dainty agility. In a flash of colour, they fly as fast as 34 mph, their wings beating more than 50 times per second, creating an audible hum. Watching the Ruby-throated Hummingbird (Archilochus colubris), which he later illustrated (right), the 19th-century French-American ornithologist, naturalist and painter John James Audubon wrote of ‘this glittering fragment of a rainbow … advancing on fairy wings, carefully visiting every opening flower-cup and, like a curious florist, removing from each the injurious insects that otherwise would ere long cause their beauteous petals to droop and decay’.

or certain tribes in New Guinea, the cassowary is a female ancestor who has come back to life in avian form; for others, the strange, ostrich-like bird is the primal mother from which they were once created. One local legend explaining this genealogy tells of a hunter who watched in amazement as five cassowaries shed their feathers to reveal themselves as beautiful sisters. He took the feathers of the youngest as she bathed, then seized her, carried her to his home and married her. In time, his wife bore him a son but one day she found the hidden feathers and escaped – never more to be seen, except in her original feathered form. Another curious tale from the Kewa people of the island relates how the birds got their red-and-blue neck feathers – a reward from an old woman whose stomach they kicked to release the large ‘taro’ (root vegetable) she had eaten, which was causing her great pain. Cassowaries do indeed have a powerful kick and can be dangerous; though attacks are rare, at least one person has been killed and others seriously injured. The birds are big, weighing around 58kg (128lb) with a mop of black/brown coarse feathers, brightly coloured neck and throat, and a large, bony protuberance on their heads which may help them to penetrate dense vegetation. Their strong legs enable them to run at up to 30 miles an hour and jump 1.5m (5ft) in the air, and their claws are long and extremely sharp. Besides New Guinea, the Southern Cassowary (Casuarius casuarius) can also be found in Indonesia and Queensland, Australia – and probably reached there as a result of trading; live cassowaries, and their meat and feathers, have been used in ceremonial exchange, and bought and sold throughout Asia for at least 500 years. Dorsolateral folds can be conspicuous in southern males only. Tail flat, ending in a point. Males are characterised by a large cloaca and horizontal black stripes on the head. Dorsal colour yellowish to dark brown, in males interspersed with a pattern of black dots. Chin, throat, lower flanks and underside white. Mid-underside orange. Underside mottled with large black spots in males, smaller black spots in females. Males develop a crest during the reproductive phase, as well as fringes on the hind feet. Best distinguished from the often sympatric Palmate Newt L. helveticus by (1) male reproductive characters, (2) the pattern and colour of the throat and underside (usually spotted and more intense coloration vs. usually unspotted and pale coloured in Palmate Newt), and (3) a shallow hollow between the eye and nostril, which is absent in Palmate Newt. Underside yellow to light orange, with a pattern of irregular grey, bluish or black spots. Variation B. variegata pachypus occurs in peninsular Italy. While this subspecies is morphologically similar to the nominate one, the extent of yellow on the venter and legs is generally more extensive. B. variegata scabra occurs on the Balkan Peninsula southwards from extreme S Croatia, Bosnia Herzegovina and Bulgaria. This subspecies is characterised by extensive grey and black coloration on the belly and the presence of hardened, black tubercles on the back. The Yellow-bellied Toad hybridises with the Fire-bellied Toad in several areas in C Europe; hybrids display a mix of characteristics from the parental species. Habitat Occurs mostly in temporary, sunny and disturbed habitats such as car ruts, cattle troughs, drainage ditches or quarries, but towards the south it is typical of small slow-flowing (mountain) streams or ponds. Characteristic pioneer of newly established or little-vegetated water bodies in hilly landscapes. Can occur up to 2000m in the southern part of its range. Behaviour Typical diurnal species, which can occur in high densities. Remarks Upon disturbance, individuals can display the so-called ‘unkenreflex’; the front feet are positioned in front of the eyes while the hind legs are positioned upwards, revealing the warning colours of the underside.

Description Carapace >38 cm, the largest tortoise in our area. Adult carapace clearly longer than wide with rear scutes upturned; background colour black with an ochre to cinnamon flare in the centre of each scute; one supracaudal scute; plastron ochre to cinnamon with a triangular dark blotch on every scute; juvenile carapaces have the silhouette of that of Spur-thighed Tortoise but do not have large spurs on the thighs. Distribution Greek mainland, more dispersed towards the N and absent in the NE; also S Albania and some Aegaen islands (Euboa, Salamis, some of the Sporades, Paros and Argosaronikos). Introduced to NE Sardinia in ancient times. Variation Animals from the Taygetos Mountains (Peloponnese) tend to be smaller and have a less contrasting carapace. They have been described as Testudo (marginata) weissingeri, but this taxon has been rejected. Habitat Typically occupies Greek phrygana: sun-exposed, scrub-covered hillsides with rocky outcrops, normally up to 800m, sometimes up to 1300m. On Sardinia in karstic meadows in hilly country. Behaviour Contrasting with their otherwise tranquil lifestyle, male combat in the mating season and courtship between the partners are very vigorous in tortoises and the calling of the males and the sound of the carapaces bumping can be heard from quite a distance.
