Letter from the Editor

Over the past few months I’ve taken up an indoor sport known as duplicate bridge at sunny Indianapolis Bridge Center. For newbies who’ve never gone, here’s a brief overview. Upon arrival you’ll enter a long room, find your partner and choose a table against possibly seasoned players we’ll call ‘bridgers.’ There you’ll play 2-3 hands and then move to the next table. After many hours of rotation, games are scored and results tabulated. The object is to make The Board and thereby acquire Points. Points range from large whole numbers such as ‘1’ or ‘2’ (rare) down to tiny fractions defined as ‘quorks’ in quantum physics. Get enough quorks and you become a Life Master, though by that time you’re barely breathing or able to master anything. Rules are important and I’m happy to pass along a few I’ve learned.

1. Conversation is discouraged during play, as are high fives when it concludes. In fact, if bridgers ‘go down’ against newbies as a random result of senseless bidding, newbies should avert their eyes and quietly shuffle to the next table. 2. Do not snap cards, as cards have spines that can be broken. Plus it’s noisy. 3. Revoking is a serious crime whereby a card hiding behind one of similar color is not played when it should have been and may cause permanent palpitations. 4. Serious crimes necessitate a visit from the Director, who in real life is very pleasant but looks alarming when called to your table. 5. Newbies never understand rulings issued by the Director; nod and ask questions later. 6. Try not to make sudden movements, as tables are wobbly and may dump coffee in your opponent’s lap. Plus it’s noisy.

www.CarmelCityMagazine.com

7. Never under any circumstances touch the Bidding Box until you’re ready to pull the bid. Unnecessary touching is called ‘fondling the cards’ and is disgusting when you consider that minor suits are involved.

Carmel COM PLIM

Avoid my, er, these simple missteps and you’ll be cheerfully on your way to becoming a bridger yourself. And incidentally, take a little time to read our current issue – it’s a winner.

divvy RESTAURANT

GREAT CHEFS: DIVVY RESTAURANT AND BAR INTERVIEW WITH RICHELLE AND KEVIN RIDER

AND BAR Divvy restaurant is a sleek fusion of modern and organic with an energetic environment and a space meant for sharing. Its entire design, including décor, tables and food, was personally crafted by the wife and husband team of Richelle and Kevin Rider. Long time successful restaurant owners, the Rider’s newest venture is as colorful as their outlook. I have to admit, talking with this couple was nothing but FUN. Richelle’s menu is a reflection of her personality, which is imaginative, playful, and adventurous. By Annessa Chumbley, RD

ALMOST 100 ITEMS TO CHOOSE FROM SPECIALTY ITEMS CHANGE EVERY SIX WEEKS

WHAT IS DIVVY?

A:

A restaurant based on small plates. The food is meant to be shared and the restaurant is designed for community. We chose the word “divvy” based on the reference “divvy it up” - in other words, share!

HOW DID YOU DECIDE ON THE CONCEPT?

A:

Really, it was based on how we eat when we travel. We like to experience a variety of foods and order a little bit of everything. Letting the taste buds go on an adventure was our ultimate goal, along with an urban-Chicago or New York setting. We specifically wanted a design that encourages conversation and friendliness. The community table in the middle of the restaurant invites people to talk, with food as one of the main topics.

For those who want something more intimate, we have an area in the back called “lover’s lane.” Tables are extra wide to allow more food to be shared, but shallow between customers, to provide a more intimate experience in each booth. 28

WHEN YOU OPENED THE RESTAURANT WITH THIS UNIQUE EATING CONCEPT, WAS THERE ANYTHING THAT DIDN’T WORK?

A:

We originally felt like we needed to have a few regular entrees on the menu, but theory does not always translate to reality. People were so excited about the small plates experience that the regular entrees did not get ordered. Mission accomplished!

DO YOU CATER TO ALLERGIES AND INTOLERANCES?

A:

Absolutely. I went to school for nutrition & dietetics and fully understand how important this is for people. I believe those with dietary restrictions deserve a culinary adventure too! Our menu notes which items are gluten-free, lactose-free, and vegan. People are also welcome to ask their server, who is well trained (Kevin calls them coaches), but the menu will guide them.

TELL US ABOUT YOUR MENU.

A:

Our menu has almost 100 items to choose from, so there is something for everyone. We divide it into offerings that have proven to be classics, while specialty items change every six weeks. All our chefs have full creative reign, so each designs an item and has the team try it. From there we tweak ingredients and presentation to get it ready for the menu.

WOW – YOUR CUISINE IS SO DIVERSE! WHAT DO YOU SUGGEST FOR A FIRST-TIMER?

A:

A great start would be some of our most popular menu items, like the Whipped Feta, Beer-Cheese Fondue, and Jalapeño-Corn Creme Brûlée.

29

BASED ON INSPIRATION... FLAVOR AND TEXTURE COMBINATIONS

RICHELLE, WITH SUCH A VARIETY OF SELECTIONS, HOW DO YOU COME UP WITH EACH INDIVIDUAL PLATE?

A:

I love dreaming up food! I keep a small notebook with me, so when an idea hits I can write it down. It’s really just based on inspiration – and developing flavor combinations and texture combinations – that people may have never tried. (Kevin laughed at this, saying her brain never stops working when it comes to ‘taste bud adventures’).

FOR THOSE WANTING TO TRY A VEGETABLE SMALL PLATE BUT WHO ARE HESITANT, WHAT VEG PLATES DO YOU SUGGEST THEY TRY FIRST?

A:

Our total meat eaters have loved the Shitake Shrooms (ginger soy, roasted peppers, tuxedo sesames) and the Brussels Sprouts (wine, olive oil, pine nuts, roasted garlic).

Photographed by Cindy Wardlow 30

WHAT DO PEOPLE SAY AFTER THEY’VE EATEN AT YOUR RESTAURANT?

A:

They say they’ve just had an “experience” and that’s what it’s all about.

RICHELLE, WHERE DID YOUR INSPIRATION AND ENTHUSIASM FOR THE EATING EXPERIENCE ORIGINATE?

A:

My mom. Growing up, I would watch her cook and cook with her – we were always in the kitchen. In high school I’d cater my parents’ parties. I enjoy every part of the cooking experience and see it as an opportunity to nourish others. Each specific process has its own beauty, from shopping to prep, to serving, even cleaning up. I love all aspects of it!

DO YOU BOTH TAKE A BREAK FROM COOKING WHEN YOU’RE HOME?

A:

No way! We continue with our favorite passion of cooking and serving and especially enjoy hosting parties to feed friends.

SO, BEING TWO SUCCESSFUL RESTAURANT OWNERS, WHAT ADVICE WOULD YOU GIVE TO CHEF OR RESTAURANT START-UPS?

A:

Listen to your customer. They will tell you what they want. Serve the community well by serving your customer well!

Afterwards I was able to sample the Whipped Feta - so incredible yet so different, it was obvious why it’s a favorite. I also dined on the Iceburg Lettuce Wedgie, Sesame Tuna, Key Lime Square, and Porterhouse Teasers (melt-in-your-mouth delicious) – all of which were amazing! Their passion for this business clearly showed. And I have to say, listening to Richelle talk about how much she loved all aspects of the kitchen and nourishment was not only intriguing, it was inspiring – much like her food! Go to divvy for a food adventure, for sharing and to appreciate how this creative couple brings their best to the community of Carmel. Divvy serves only 21 or over. | Check out their menu online at www.divvycarmel.com 31

SUMMER on Written by Amy Von Eiff : Owner/Executive Chef – A Cut Above Catering

T

raditional cookouts and barbeques are staples for summertime. They’re casual, fun and a great way to bring family and friends together. Events range from outdoor Fourth of July celebrations to potluck picnics with neighbors. Whatever the occasion, you can kick up the party with a few creative touches. Bugs and insects are always unwelcome visitors, so why not stash your salads in a jar? Fruits stay fresher, lettuce stays crispier and the presentation is easy yet pleasing. Add a twist to your barbeque by selecting a simple theme for your menu. Specific spices and sauces can fit Spanish, Asian, Hawaiian Luau or even more typical Texas/ southern flavors. A classic balsamic marinade is a delicious way to tenderize steaks and chicken, while a rich bourbon mushroom sauce can embellish the simplest meats. Here are some chef tips for cooking on the grill:

add a twist to your ..... BBQ ..... by selecting a

simple theme

38

the GRILL

• When grilling chicken with bones, parboil it first. It speeds up the process and ensures evenly cooked chicken without those nasty pinkcenter surprises. • When preparing burger patties, make a hole in the center. This allows meat to cook evenly AND creates a more level burger for stacking on all those extras. The hole disappears as it grills and traps in the juicy flavor with a fully cooked center. • Just like preheating your oven, take 15 minutes to warm up the grill to the right temperature. This will give your steak a nice sear and lock in the juices your guests are anticipating. • Once you close the grill top, keep it there! Frequent checks increase cooking time and let the heat escape,

..... salads in a jar ..... resulting in undercooked or overcooked food. Avoid moving or flipping the meat around too often; it needs time ON the grill to cook properly. Just remember to adjust time and heat settings according to the cut and type of meat. • Make sure you season your vegetables with salt before grilling. The salt draws out the moisture, leaving the veggies nice and crispy and evenly cooked. And finally, don’t forget dessert. My recipe for Grilled Strawberry Shortcake Skewers is yummy, light and a beautiful way to top off a summer evening. – See next page for recipes. 39

Grilled

... Strawberry ... Shortcake Skewers

directions... FOR THE SKEWERS: Prepare the grill for direct cooking over medium-low heat. Slice the pound cake into slices, then cut each slice into cubes. In a small bowl combine the corn oil and honey until well combined. GRILLED STRAWBERRY SHORTCAKE SKEWERS WITH BLUEBERRY GLAZE SERVES 8 ingredients... SKEWERS: 1 Pound Cake, thawed if frozen Strawberries 32 (2 pds), hulled

Thread cake cubes and strawberries through skewers until they’re all gone. If using wooden skewers, be sure to soak the skewers in water for at least 1 hour before using. Lightly brush the oil and honey mixture all over the skewers. Grill the skewers for about 2 minutes per side, or until the cake is toasted and golden and the strawberries are slightly softened.

Mazola Corn Oil 2 tbsp Honey 2 tbsp CREAM: Whipping Cream 1 cup Granulated Sugar 2 tbsp Zest of ½ lemon GLAZE: Powdered Sugar 1 ½ cups Whipping Cream 1 tbsp Fresh Lemon Juice ½ tbsp Blueberries, thawed if frozen ¼ cup 40

FOR THE CREAM: Beat the cream, sugar and zest in a bowl with an electric mixer until soft peaks form. Cover and chill until ready to use. FOR THE GLAZE: In the pitcher of a blender, combine all of the glaze ingredients. Blend on high until everything is well combined and smooth. Drizzle over the skewers before serving alongside the cream.

Balsamic

... Marinade ...

directions... In a large bowl or food processor, whisk together balsamic, sugar, garlic, and Dijon mustard until sugar is dissolved and ingredients are combined.

BALSAMIC MARINADE YIELD: 1 quart PREP TIME: 5 mins TOTAL TIME: 10 mins + marinade time ingredients... Balsamic Vinegar 1 ½ cups Granulated Sugar ¼ cup Dijon Mustard 1 tsp Garlic 2-3 cloves, minced Basil, dried 3 tsp Parsley, dried 3 tsp Oregano, dried 1 tbsp

Add herbs, salt, pepper, crushed red pepper and whisk again. While whisking, or with food processor running, add the first ½ cup of olive oil VERY SLOWLY… a few drops at a time, working up to a slow steady stream. You can add the rest of the olive oil slowly in a steady stream, slowing down if the emulsion starts to break. You should end up with a nice shimmering, slightly thickened vinaigrette. The garlic and Dijon help this emulsify, while the use of olive oil instead of extra-virgin olive oil will create less smoke on the grill. If you’d like to make this as a salad dressing, use extra virgin olive oil and add ½ cup grated Pecorino Romano cheese.

Crushed Red Pepper 1 tsp Kosher Salt 2 tsp Ground Black Pepper 2 tsp Olive Oil (not extra-virgin) 2 ½ - 3 cups

41

Bourbon

... Mushroom ... Sauce

directions... Remove woody ends of mushrooms and slice thinly.

BOURBON MUSHROOM SAUCE YIELD: 4 PREP TIME: 15 mins TOTAL TIME: 30 mins ingredients... Baby Portobello Mushrooms 2 cups, thinly sliced Butter, salted 1 tbsp Olive Oil 1 tbsp Garlic 3-4 cloves, minced Bourbon 1 ½ cups, [we suggest Jim Beam] Heavy Cream 1 ½ - 2 cups Parsley 1 tbsp, freshly chopped Rosemary 1 tbsp freshly chopped Kosher Salt to taste Ground Black Pepper to taste

42

Over medium heat, melt the butter and olive oil in a large skillet. Add mushrooms and stir well to quickly coat the mushrooms. Arrange in a single layer, and bring the heat to medium-high. Sauté 5-7 minutes until mushrooms are golden. Add salt and sauté 5 more minutes. Add bourbon (off the heat) and increase heat to high. If using a gas flame, sauce will ignite, so use caution. Simmer until the alcohol is burned off, about 10 minutes. Add pepper, herbs, and cream. Simmer until cream has reduced by half and thickened, about 10-15 minutes. Serve immediately or cool before refrigerating. Sauce will keep in the fridge up to 5 days. Reheat on the stove, not in microwave and add a bit of cream when reheating. Serve over chicken, beef or vegetables.

Live From THE WAREHOUSE Written by Jackie Holloway

It’s been a remarkable first year for The Warehouse. “You mean the converted machine shop off the Monon near Main Street?” you might ask. “What’s that all about?”

52

Wake up, Carmel people, there’s a musical revolution in your backyard! The Warehouse is a hip, multi-use performance venue designed primarily for live music but that can also be rented for private parties and other events. And did you know it houses an art gallery as well? So much is going on that simple descriptions don’t suffice. To give us a handle on their enterprises, owners Heather Ramsey Clark and Blair Clark agreed to sit down and discuss where they’ve been, how they’ve done and where they’re going.

First and foremost is The Warehouse itself. “Both Blair and I have been long-time professional vocalists / songwriters / producers / arrangers,” Heather says, “and it’s always been a challenge to find places to perform. They’re either small, like the local bar, or large, like a concert hall or amphitheater. We wanted to create an intimate forum for touring and local artists where music is the focus.” “I remember playing in the proverbial smoky room,” she continued,” and watching one of the guests approach the piano. ‘Ah,’ I thought, ‘a request.’ No, she wanted me to turn down the volume so they could talk. It’s not easy to

hone your craft as a musician when people are more interested in eating and drinking, which is understandable when they’re dining out. Thus the genesis for The Warehouse concept was born.” “Keep in mind there is a bar,”

Heather adds, “it’s just located outside the auditorium door. During a show you can enjoy a great local craft beer or a few glasses of better-than-good wine. The Warehouse is a venue with a bar, not a bar with a stage. That difference results in an entirely different vibe.” One of the latest introductions at The Warehouse is the First Avenue Folk Concert series in collaboration with Indy staple Flying Cat Concerts. Quality folk, Americana and bluegrass music will be highlighted in the listening room environment the Clarks have developed. “The intimacy between audience and artist personalizes the experience,“Blair notes, “and makes it memorable for both. So many touring folk and bluegrass performers pass through our American crossroads that we wanted to provide an additional performance opportunity for them. Some of our shows will be mid-week to accommodate travel schedules, and some will be on weekends, so check our online calendar to stay posted.” Blair and Heather’s considerable talents as performers add exceptional dimension to one of their other ventures

called Midwest School of Voice. The two have more than 30 years combined experience as vocal coaches. Their school primarily focuses on modern techniques for voice and performance, as well as guitar and piano. “We encourage students of all ages to explore and define their musical style,” Blair says. “In the past, it was difficult to find venues for our students and experienced artists to perform. Through our Modern Vocal Performer (MVP) Program for kids

and Adult Vocal Performer (AVP) Series for adults, they now get an opportunity to sing on a stage, accompanied by a live band with great acoustics in front of an audience. The Warehouse has provided a wonderful space that’s right for developing artists as they learn to entertain and interact with an audience.” A disclaimer: My granddaughter takes lessons from Blair and participated in her first Modern Vocal Performer showcase last fall. The Warehouse hosts two of these events a year with another in the spring, and a larger summer performance on the lawn by the Monon Trail in Carmel. She’s only 14, and I was a wreck. No worries! What a blast, and we were all blown away

by the performances. American Idol has nothing on the talent that the Clarks are nurturing here in Carmel. As for the future, the Clarks look forward to increasing their repertoire of shows with events like their Singer / Songwriter Showcase. According to Heather, “The past year has been an adventure. Our focus for the coming year is to continue to build the sense of community in this area I like to call ‘Quarter Town,’ and to develop strong relationships with our friends involved in the Midtown development as construction begins. By integrating with the community through performing and fine arts, we plan to grow right along with Carmel, while maintaining the homegrown flavor here in the Arts District. We’re proud to play our part in all that Carmel is building.” For information about upcoming shows and events, as well as hosting your own parties and receptions with catering at The Warehouse, visit liveforthemusic.com.

A Lifetime of Beautiful Smiles, in Just Six Months. (The smile you’ve always wanted)

WAYNE KINNEY, DDS DENTIST KEYSTONE DENTISTRY

I’m Wayne. I have a different idea. As a Dentist, I’ve found that many teens and adults spend their entire lives covering their mouths when they laugh, smile or talk—when they just don’t have to. People tell me they feel stuck because they don’t want to wear metal braces for years, or they’re concerned that other corrective teeth straightening procedures could be too invasive or too expensive. I’m always looking into the the best technologies and procedures to give my patients the smile they’ve always dreamed about, and I’ve finally found an effective, safe and affordable cosmetic braces solution that can give you the smile you’ve always wanted—Six Month Smiles®. Great results in less time than you ever thought possible. Finding cosmetic solutions that fit your lifestyle. Now that’s a different idea. And a better one.

INDIANA FARMERS COLISEUM The tale of a company; the tail of a cat Interviewed by Dan McFeely Photos courtesy of Indiana Farmers

©PAWS

Carmel’s impressive corporate corridor is striking to anyone who drives up U.S. 31 and notes the corporate headquarters, office complexes and hospitals. But back in 1970, it wasn’t quite so corporate when Indiana Farmers Mutual Insurance moved in to the neighborhood. “We were pretty much alone in our corner of the city for a while,” said Kimberly O. Smith, president and CEO. “Our building is a replica of the Wren Building on the campus of William and Mary, so perhaps we started the Williamsburg theme that emerged in downtown Carmel a couple of decades later.”

Last year, the company made big headlines again when it became the primary name sponsor for the newly remodeled Indiana State Fair coliseum – now appropriately called the Indiana Farmers Coliseum. The building originally opened in 1939 as part of President Franklin D. Roosevelt’s Works Progress Administration (part of the New Deal). In addition to animal events during the fair itself, the coliseum became known for hosting a number of major events, including the only performances ever held in Indiana by the Beatles. 81

www.CarmelCityMagazine.com

The trend-setting company was not making big news. Two years ago, in what could be described as a purrrrrfect marketing ploy, Indiana Farmers joined forces with Garfield the Cat, who became the corporate kitty – one of the most recognized characters in America, helping Indiana Farmers to stand out.

O. SMITH KIMBERLY

Today you can watch concerts, hockey and the home basketball games for the IUPUI Jaguars, among other events. We recently chatted with Smith about the company’s move to add its name to the top of one of the most recognized facilities in the state, along with a few other things.

Q. Take us back to the day you signed Garfield, every Hoosier’s favorite fat cat. How did that come about? The insurance marketplace is crowded and a lot of companies have very similar names. I can’t tell you how many times we have been complimented for an ad that belonged to one of our competitors. Knowing that building a brand is an expensive and long term proposition, we needed a jump start. Enter Garfield, a brand recognized by 96 percent of the people on the planet. Indiana Farmers and Paws, Inc., the parent company of everything Garfield, began working together in 2013. Since then, we have used Garfield as a key brand element in everything from letterhead to the sign atop the Indiana Farmers Coliseum. Garfield is a great ambassador for our company and Paws is a fantastic business partner. Q. It was very exciting when the announcement was made regarding the Coliseum naming rights. Can you tell me why this was important to you as a company?

www.CarmelCityMagazine.com

Adding the Indiana Farmers name to the Coliseum was a continuation of our branding strategy that began with Garfield. If you look at it only from an advertising perspective, it is a great value. In addition to the name on the roof, the exponential advertising from that single sponsorship has been amazing. For example, our brand is seen by thousands of consumers each day through social media posts and advertising associated with Coliseum events; the Indy Fuel and IUPUI bring great crowds to the Coliseum; and, there will likely be approximately one million people at the fairgrounds in August. 82

Q. Was there also some connection between your name “Indiana Farmers” and the fact that the coliseum would be at the Indiana State Fairgrounds? We like to think of it as a perfect match. While the State Fair and Indiana Farmers both share an agricultural heritage, both have evolved a great deal since the 1800s. The State Fairgrounds hosted the Beatles, the Pacers, and it continues to add a variety of new events. Indiana Farmers has also evolved and today we insure more homes, cars, and businesses than we do farms. Q. Other than the big sign, are there other ways that visitors to the coliseum will know that Indiana Farmers now plays a big role in that venue? Indiana Farmers has a big presence at the Coliseum other than our name on the roof. There are signs in the concourses, videos which play on the scoreboard, and some great graphics on the venue’s ribbon board. We also have a couple of surprises planned for this summer that will increase our visibility even further. Q. How does Garfield play into the coliseum? www.CarmelCityMagazine.com

Garfield does make an occasional appearance at the Coliseum and plans to be a part of more events there and around town. Garfield was on hand at the Indy Fuel’s mascot mania night and 2,000 fans took home a very special Garfield souvenir. Q. Since you are in Carmel, we have to wonder if we will see you and the big cat around our city as well? You’ll see Indiana Farmers and Garfield around Carmel this summer as we plan to be an active participant here in our hometown. We’ve made commitments to be a part of the Jazz on the Monon series, Art of Wine, and are evaluating other opportunities to connect with customers and potential customers. 83

DIVORCE

The Benefits of Collaborative Divorce The collaborative divorce process is an alternative to traditionally-litigated divorce, and is much more time and cost effective than litigation. Collaborative divorce is a way to effectively and efficiently move a couple through the divorce process while maintaining a high level of dignity and respect – in even the most contentious cases!

TIME In litigation cases, divorce cases take several months or even a few years; however, in collaborative cases, the parties schedule their meetings at times that suit their schedules. They produce documents and records, and respond to inquiries informally during 4-way meetings (parties and counsel) with open dialogue. There are no time restraints, and the parties are free to work through the dissolution or post-dissolution issues on their timetable.

A VIEW OF THE WHOLE PICTURE In a litigation-track divorce, parties work independently of one another, and his/her case is developed from information that a client knows or has specifically requested from the other party. This process often takes several months. In collaborative cases, the parties meet in 4-way meetings, with open dialogue and free exchange of necessary documentation and information. This process significantly saves time and attorney fees.

COMMAND YOUR OWN DESTINY

Whether the litigation case is tried in court or resolved via mediation, the destiny of the divorcing couple is in the hands of the judge, attorney, or, potentially, the mediator. In collaborative cases, however, parties begin 4-way meetings right away and decisions can be made during the process after presentation of and collaboration on the 85

facts and issues. The collaborative process allows the parties to have a say in their future and the future of their children from the very beginning of the divorce process.

MAINTAIN RESPECT AND CIVILITY

Parents who are divorced are forever linked to the ex-spouse. They will see each other at times such as sporting events, graduations, weddings and grandchildren’s birthday parties. Parents who are respectful and civil are often welcomed by the children at these events, while parents who are bitter and angry are not. The collaborative process is multi-disciplinary team approach which is designed to help the couple move through the process efficiently. The collaborative team of professionals works with the couple to assist them in making good decisions about custody, parenting time and division of debts and assets. In addition to the “here and now issues,” the collaborative team develops communication techniques and “rules of the game,” that will help the couple and children move successfully into the next season of their lives.

www.CarmelCityMagazine.com

SAVE MONEY

Last, but certainly not least, is the savings of attorney fees and litigation costs. Collaborative practice typically costs 30% less than traditional divorce.

Collaborative divorce is a viable, costsavings, effective, and efficient way to move forward to a new beginning. If you would like more information, call us or check out our website at www.collaboralaw.com

RAIL EPICUREAN market A VISIT WITH CHEFS

Toby and Melanie Miles

AT RAIL EPICUREAN MARKET Interview by Jamie Fisher

If you’re looking for homegrown food delivered with modern day flair, discover Rail Epicurean Market in Westfield. Local chefs Toby and Melanie Miles have created a Westfield hot spot whose food and beverage menu caters to Midwestern palettes. They also showcase the very best Indiana artisan products in a charmingly rustic interior where guests feel right at home.

Here you’ll find your favorite dishes made with local ingredients and an upscale twist. We recently sat down with

TUESDAY-THURSDAY & SATURDAY 10AM-7PM FRIDAY 10AM-8PM

Toby and Melanie to learn a little bit more about them and their restaurant. HOW LONG HAVE YOU BEEN IN THE AREA? TELL US ABOUT YOUR FAMILY. We opened Rail Epicurean Market on April 1, 2014 so we recently celebrated our one year anniversary. The restaurant is our home away from home and it’s not unusual to find our three kids here. Our kids are 14, 12, and we have a 10 month old baby. The older ones love to help out in the kitchen or just hang out in the dining room to do their homework.

TELL US A LITTLE ABOUT YOUR BACKGROUND. WHAT LED TO YOU TWO BECOMING RESTAURATEURS? We had both been in the industry for a while before we met at Kelties (the location that Grand Junction Brewery Company took over) in Westfield in 2008. We worked side by side at Kelties for four years in many different positions. That experience helped us tremendously by introducing us to all facets of the restaurant business. That’s where we also got the idea to open a restaurant of our own. HOW WOULD YOU DESCRIBE YOUR PARTICULAR STYLE OF FOOD PREPARATION? I would say ninety percent of our food supplies come from central Indiana. Our goal has always been to serve and sell locally grown products. Not everything we do is local, but whenever it’s possible that’s what we choose. We have farmers that are constantly stopping by the restaurant to drop off their seasonal goods. Even during the

109

RAIL EPICUREAN market winter we have greenhouse and hydroponic foods that are grown in Indiana. WHAT DO YOU LIKE MOST ABOUT YOUR RESTAURANT? It’s a point of pride to be involved in the Central Indiana Artisan Organization. We are a tightly knit community and we all rally together to support each other. If we’re successful here at Rail, it’s not just because of us but because of the local artisan vendor products we offer. Some customer favorites are B. Happy peanut butter, 4 Birds Bakery cookies, Tulip Tree Creamery cheese and Smoking Goose meats. In addition we have developed our own jams called Preservation. WHAT DO YOU THINK HAS MADE RAIL SO SUCCESSFUL SO QUICKLY? HOW HAS THE WESTFIELD COMMUNITY PLAYED A PART TO YOUR SUCCESS? We make food that we want to eat and look at cooking as a creative outlet. We love preparing local, high-quality menus. 110

The Westfield community has been friendly, supportive and neighborly. We have listened to what Westfielders want as well, by adding a dinner menu and opening a little later in the day. Rail Epicurean Market is now open Tuesday, Wednesday, Thursday and Saturday 10am7pm and Friday 10am-8pm. DO YOU HAVE ANY PLANS FOR EXPANSION? WHAT ARE YOUR FUTURE GOALS FOR RAIL? We are continuously growing as a company. We are always pulling in more ideas for our market and discovering local artisans with specialties to add to our menu. Our food

selections change seasonally, as do options for wine and beer. We keep having fun with it. Rail Epicurean Market has some exciting plans for the future. When trying the Lobster Roll, our photographer Cindy and I were astounded by how extremely flavorful it was. Cindy thought it was better than any she’d had in Maine. The Lobster Roll has consistently remained on the menu and is served on a fresh sub roll with large chunks of lobster and spiced with locally made mustard. It’s the perfect summertime lunch dish.
