In the top photo you are looking at the Blue Ridge Mountains through 3M™ Prestige 40 window tinting. By softening the glare just a little bit, adding our 3M™ window tinting to your current windows will give you more crisp high definition views. Sunlight emits harmful UV & Infrared rays into your home that destroys your hardwood floors, furniture, & artwork. In addition, these rays also cause serious harm to your skin and eyes. The sun also brings in excessive heat & glare making your home inefficient & uncomfortable. Our 3M™ window tinting is a sun filter. We use air & water filters in our homes for our health & quality of life. They keep allergens & chemicals out of the air we breathe & water we drink. If this is so important to us, then why aren’t we filtering the sun coming through our windows? Blinds, curtains, or lowE windows ARE NOT sun filters. They work well for nighttime privacy, insulating, & interior design. 3M™ has invented a new line of window tinting that is the proper sun filter. They filter 99.9% of UV & 97% of infrared rays while allowing an ABUNDANT AMOUNT OF PURIFIED SUNLIGHT into your home. This new tinting is not dark, won’t bubble or fade, and will literally improve the quality of your views. Installed locally by Clear View Window Tinting, they come with a lifetime warranty. thepublishers Poor kids can’t smile for the camera because of that harsh winter sun. Professional photographers have workarounds but since we’re merely two people with a camera and a tripod, there you have it. Cheese! Plus, the Staffords are officially “on holiday.” “Vacation” connotes lost luggage and busy highways. If “holiday” is our mood, then Cloud Cuckoo Land from The Lego Movie is our destination. But I’ll admit, there’s a little Lord Business in most every parent with small children. A little of that emerged the other night when Tommy and I got the fine idea to bake cookies at 10 o’clock at night. The kids were peacefully playing with their Legos when we started making the batter. And by the way, eating raw cookie dough is perfectly acceptable and safe on Cloud Cuckoo Land. Tommy gets out the cookie sheet, a tabula rasa ready to be dotted with a tidy honeycomb pattern of even-sized blobs of dough. But Tommy’s got the spoon and even though he is wired like Unikitty and has always rejected the authority of Lord Business, he did apparently marry one of his micro managers. Thwump goes the first lump of
dough, an asymmetric sugar turd that will most certainly attach itself to its neighbors. Thwump, thwump. “We’re running out of room on the sheet, sweetie,” I tell Tommy. “I’m doing just fine,” Tommy assured, handing me a spoon. You see, when you run out of cookie sheet, you have leftover dough. But since we’re on Cloud Cuckoo Land, nothing goes to waste. In the oven. Ding! Out the oven. “Cookies! Peyton, we’ve got cookies!” Adam squeals. They’ve already brushed their teeth. Oh well. By now, the clock is about to say midnight and it won’t be long before that harsh winter sun rises again. Harsh? That was so 2014. Happy New year!! Yvette and Tommy Stafford

JANUARY 2015
basicnecessities By Kay Pfaltz www.basicnecessities.com www.kaypfaltz.com
Breaking the Rules When the calendar flips to January 1st I know there will be a quite a few new resolutions made…and, in a paradox emblematic of our well intentioned but occasionally undisciplined society, when March rolls around there will be nearly as many vows broken. I’m all for creating good habits, and wouldn’t it be great if our intentions counted equally? But then again there’s always been a case for breaking the rules…sometimes even New Year’s resolutions. Wine rules (drink white with fish, red with meat, etc.) seem to have been around almost as long as wine itself and, in addition to offering us a snapshot of the fashion and fancies of passing eras, evolved to enhance an already harmonic relationship between food and wine. But time as always proves the great leveler, and history shows that as recent as the 19th century, people drank sweet white with steak, and a glance back to Roman times reveals wine, diluted down with water, to be a very different libation indeed. I can only speak to the very loose rules of today and why they’ve
come to be. And, like in school, why not know the rules so that you can then break them when there’s need? Because we seek a sort of crescendo when pairing wine with a meal, common wisdom is to serve lighter wines before heavier ones, white wines before reds, but reds before sweet whites. Some wine gurus will say: no white wine with egg dishes or lemon. No wine with vinaigrette. No reds with mackerel or oily fish, and no wine with chocolate. Audible collective gasp. The logic is that anything sweeter than the wine, chocolate or other, will make the wine taste bitter. The rules can help you understand why you may have noticed off flavours after taking a bite of food. We’ll leave it up to you whether or not to keep quaffing wine as you gobble down chocolate, thereby not only breaking the unofficial wine rules, but also your official New Year’s resolution…again. Mercifully breaking rules…pairings that go against the grain: Domaine aux Moines, Saviennières, 2012 paired with charcuterie – Here’s one of my all-time favourites, a dry
white, but a white with enormous complexity and character: aromas of baking bread, almonds and citrus. The name is appropriate because “Moines” in French means monks and the monks were, after all, behind much of the wine we drink today. The obvious, and excellent, pairing would be river fish or goat’s cheese from the region (Loire Valley) saving the charcuterie for reds like Beaujolais or Valpolicella. But the acidity in the Chenin Blanc actually makes for an incredible pairing with dry cured salamis and rillettes. Perfect for aperitifs. $36 Domaine de Bordenave, Juraçon, “Les Copains d’Abord”, 2012 with green Thai curry. You’ll just have to try it. Juraçon, in France’s southwest corner, is a region underrated in both beauty and wine. In the “Copains,” made from Gros Manseng, look for notes of bittersweet citrus, ginger, spice and pineapple. And both God and Adam hold wine glasses in this great label’s rendition of Michelangelo’s Creation of Adam. $24 My advice is always simple: drink what you like, with what you like, when you like, and don’t worry.

Blue Ridge LIFE
JANUARY 2015
“I did not grow up farming or anything like that,” says Louisiana native Adam Aucoin who never set foot on a farm until college. “I was a sports guy and had the opposite life of a farmer and – probably – if I had grown up farming I might not be doing it right now.” But his customers are sure glad he is. In the 12 years since he started working on the college farm, Adam has worked milking goats, owned a chicken business and has been farming in one way or another since the days he first learned how to cut hay and combine corn. He did a lot of farming in Louisiana - that’s where he had his chicken operation - but ended up moving to Nelson County when he and his fiancee got engaged. “She’s from Nelson and that’s how I ended up here,” said Adam said of his future wife Cassy Kelly and her hometown. “And I’m pretty lucky. I remember the first time I came and saw her in Nelson and I said, ‘Well, I’m a pretty lucky guy to be coming to visit you in a place like this.’ I love it here. We bought this farm last year. I’m here for good.”
The farm he bought is the 75-acre River Oak Farm in Lowesville, just over the county line in Amherst. Cassy works full time in Charlottesville, so farm duties are pretty much up to Adam and his two part-time employees. River Oak Farm raises pastured livestock, which is what Adam really loves. It’s good for the animal and good for the land. He’s got 21 cows (and their calves) grazing in his fields based on a mutually beneficial relationship he has with their owner. Those cows graze and simultaneously fertilize and move along to another field to do the same thing two days later. Then the chickens (about 800 of them) come through in their movable chicken house to scratch up the manure, eat grubs and bugs and lay eggs. And any extra waste produced goes straight to the pigs. “The pigs on the farm, they’re my disposal,” said Adam of his small passel of hogs. He’s got six right now and hopes to strike a deal with a neighbor to get a couple of piglets in the near future. “I don’t have a facility to breed pigs right now, and some people will drive hours and hours away to buy pigs, but I’ve got a neighbor right here that just got into raising pigs.” continued on page 14

The pigs – due to their habit of digging up the land on which they live – stay primarily in the woods surrounding River Oak’s fields and their pastures get moved around from time to time (“there’s a fine line between benefitting the land and tearing it up”), but not nearly as often as the cows or the chickens. Goodness, the chickens. “That’s what I do, basically,” said Adam. “I move chickens.” He’s got about 800 on any given time that need to move every day rain or shine. It’s all for the good of the land and his animals.

You’re fertilizing your land, the cows are eating more efficiently,” he said, adding that the chickens come behind to help fertilize and eat (they get about 30% of their food from the wild). “The animal’s benefitting and the land’s being benefitted as well. SCHUYLER
[ nelson county ]
STORY by ELIZABETH UPSHUR PHOTOGRAPHY by SHAY MUNROE
Bought as a weekend getaway, Bernice and Armand Thieblot are turning a portion of their old quarry land into gardens that would showcase, instead of obscure, the natural beauty of the abandoned soapstone pits.
QUARRY GARDENS grow in between a rock and a hard place.
16
Blue Ridge LIFE
JANUARY 2015
Soapstone exists in only a few places in the world, among them Alaska, Brazil, Finland―and central Virginia. The stone has unique properties, being dense, easy to cut, heat-retaining, impervious to both acids and bases, and non-conductive of electricity. From the late 1800s until the mid 1900s, the stone was a livelihood for the community of Schuyler. In the 1920s―when no modern housewife would be without her soapstone laundry tub―the Alberene Soapstone Company employed more than 2,000 people. The company manufactured kitchen sinks, griddles, foot warmers, laboratory counter tops, electrical backboards, and ornamental objects. Over the years, some 90 holes were quarried, most of them in Nelson County, with around a dozen pits in and around Schuyler proper. Two of these quarry pits are on the 580 acres of land owned by Bernice and Armand Thieblot. As quarrying was finished, many of these pits were partially filled with rejected and cut-off stone, then abandoned. Some filled with water to the level of the water table, and some the stone company allowed local residents to use as trash dumps. Eventually, trees grew up through the rock piles and formed a shade canopy. In 1991, the Thieblots bought the property as a weekend getaway, intending it as a retirement place. For two decades they commuted from Baltimore, staying for longer and longer periods until permanently settling in 2013. When they first arrived, they found the quarries lined with old washers and dryers, refrigerators, junk, and trash. The timber had been cut in an irresponsible way with no thought for conservation, and the remnants of several fallen-down company houses were scattered about on the land. Says Bernice,
“We were looking for a project, and we found one.” As part of the initial clean up, the Thieblots, with their son A.J. Louis, paddled a small boat around the quarries, scooping out floating plastic bottles. Over the years, Armand has continued the job, removing brush, trash, and deadfall trees. Today, a backhoe rumbles along the upper edge, winching up appliances, bedsprings, and such. Fish swim in the clear, fortyfoot-deep water below. The plan for a garden dates from the summer of 2013, when the Thieblots took a cross-country road trip that ended at Butchart Gardens, on Victoria Island in British Columbia. Built in the early 1900s to restore cement quarries, the gardens attract nearly a million visitors each year. The Thieblots were inspired to do something with their own quarries, which they felt had “better bones”―but their inspiration took a different direction.
LAND PLANNING & DESIGN ASSOC. OF CHARLOTTESVILLE
Once completed, the quarry gardens will encompass 40 acres, complete with trails and event space.
Rather than designing to obscure the quarries, they would have gardens that showed the beauty of the rocks and the quarry walls reflected in the water. And rather than planting showy, exotic species, they would concentrate on re-establishing the most desirable native plants that could grow on the site. As the idea began to take shape, they engaged Land Planning and Design Associates of Charlottesville to devise a master plan for the site. Contour surveying and soil-testing ensued.

When completed, the project will encompass 40 acres. Footpaths will wind around the water-filled quarries and woods, with signs along the way to tell the soapstone story, how it was mined, and what it meant to the community. The master plan includes a flat, open area overlooking the quarries, and suitable for events. An adjacent hiking trail about a half-mile in length will lead through magnolia and fern woods. An administration building will contain equipment, visitor services, and exhibits relating to Schuyler’s history and the plants and animals native to the property. “First comes the infrastructure,” says Armand, “roads, water, electricity.” This winter the last of the trash will be removed from the sides of the quarries and the last unwanted trees cleared. Earth is being moved to improve access and create points for viewing, as well as to provide for parking In the spring, the Thieblots hope to begin hardscaping―building roads, pathways, retaining walls, and bridges. They will establish planting beds, modify the soil in some areas to bring down the alkalinity caused by years of soapstone dust Next fall, they hope to begin the actual planting.. Besides being active in the Nelson County Garden Club, Bernice is a president of Piedmont Master Gardeners in Charlottesville. When the project is completed, the gardens will be open to the public. However―quarries and rock piles being inherently dangerous― access will need to be monitored. Bernice and Armand, without outside funding, are in the process of creating a garden park on a grand scale. They bought a run down, abused and neglected tract of land, and are transforming it into what may someday be a special place for all of us. BRL
Once a swimming pool, the Thieblots have converted this space into a sweet little courtyard. Perhaps a taste of what’s to come?

“I love the name,” said Barefoot Bucha’s Ethan Zuckerman. “Once [Matt’s] assistant brewers landed on it they would not let him not do that, which we’re completely fine with!” A beer-kombucha combo, Nucci Buchi is named for the collaboration between Blue Mountain Brewery’s Matt Nucci (one of the owners and founders) and Ethan of Barefoot Bucha. It’s only available on top at the brewpub and is made of 2/3 of Steel Wheels E.S.B. (a heavier Blue Mountain beer) and 1/3 Barefoot Bucha Base, a tea-based fermented drink. Matt and Ethan have been working on this marriage for a while now, and they finally just had to sit down and figure it out. continued on page 22

“We just kind of sat down one morning and drank a bunch of beer,” said Matt. “Kombucha is a living thing, so once you blend it you never know what it’s going to do with the beer. We thought it was something really cool to do because it’s another fermented product.”
Each loves the other’s products and they were excited to see how the two products mixed together. Kombucha lends itself to different flavors (Ethan’s currently selling a ginger flavor and a coffee blend that uses Trager Brother’s coffee) but not too many people are mixing the non-alcoholic beverage with beer. But Ethan and Matt have been trying to get it going for a while. Originally they were going for a darker flavor for the winter, but what resulted actually has a lighter taste - akin almost to a sangria or a shandy - that people are really digging. “Not lighter in texture, but lighter in air. It just feels airier,” said Ethan, “We started playing with these things and it came out really tasty. It takes the bitterness of beer and ties it with the fruitiness of kombucha and it creates a really enjoyable beverage.” With a little bit of the tea, a little bit of the beer and 4.5% alcohol, Ethan says “It just dances, really.” BRL

Tender loving care beats costly home repairs
withMarlo
By Marlo Allen Marlo Allen is a licensed Realtor residing in Nelson County
During home-buying mode it was location, location, location. Now in home-owning mode, the name of the game is maintain, maintain, maintain. Your home may be the largest investment of your lifetime. Besides providing a safe place to live, you may aspire to one day sell the house with the hope of making money. Hence, it makes good sense (cents) to keep your home in tip-top shape. Here are a few maintenance tips that should be performed routinely: • Check water purification and water softener filters. Excessive levels of calcium and magnesium in hard water can lead to buildup in water heaters and eventually clog pipes and diminish plumbing efficiency. • Test the pressure and temperature relief valve for proper operation. A temperature setting of 120 to 130 can economize utility bills.
An operable temperature relief valve (TPR) can prevent a possible explosion by releasing pressure buildup in the water heater. • Clean and freshen your drains. To keep sinks running freely, throw a handful of baking soda into the drain and follow it with hot water OR pour in 1 cup of vinegar and let it sit for 30 minutes; chase down with very hot water. • Degrease and freshen your garbage disposal. Turn on the disposal and throw in ice cubes made from equal portions of water and vinegar. • Clean and replace furnace and air conditioner filters. Filters are cheaper by the dozen. Label each filter by month to serve as your monthly installation reminder. • Clean range hood filter. Remove and clean the metal mesh filter that keeps grease from getting into the ductwork. Soak in hot water and liquid dish detergent and rinse clean

with hot water. • Clean appliances. Use an allpurpose, handy dandy cleaner made from 1 teaspoon borax, ½ teaspoon washing or baking soda, 2 teaspoons white vinegar, ¼ teaspoon dishwashing liquid, and 2 cups hot water. • Remove and clean range burners and keep range top clean as spills occur. Immediately sprinkle food spills with table salt. This will absorb the moisture and make the spill easier to clean up when the range top cools. • Clean and brighten tile and grout. Try hydrogen peroxide OR a solution of 1 part water and 1 part vinegar along with a new hard toothbrush. • Test fire extinguisher pressure gauges. If the pressure is low, recharge or dispose of it and get a new one. • Test smoke detector sensors and alarms. Batteries should be changed

If you have only one detector, place it in a hallway outside the bedroom mounted 14 inches off the floor to face height on the wall, but never where there is a draft. • Test auto reverse safety feature on garage door openers. ADVERTORIAL
Do I Need a Trust? Hugh Gildea leads a workshop on brain tanning, a 10-12,000 year old method for tanning animal furs.
By Shad C. Derozier Rutherford Law Group, PC
A trust is a unique estate planning tool which can provide benefits not ordinarily available when using other instruments like a Last Will & Testament. Trusts are commonly used for reducing or eliminating taxes, avoiding probate, charitable planning, asset protection for your beneficiaries, protection of assets for yourself or spouse if there is a nursing home stay, or maintaining continuity of a family owned business. Some of the most common reasons for making a trust are: 1) Trusts are private documents. When property passes through a trust, the beneficiary normally receives the bequest without public knowledge. The opposite happens when using a Last Will & Testament. Property passing through a Will becomes part of the public record that anyone can see. This is because Wills have to go through a legal process known as probate. If you have assets or property that you would like to give someone without the knowledge of other family or friends, a trust may be right for you. 2) Trusts can be used to build asset protection for your beneficiaries after your death. You may be concerned about a child’s marriage, creditor issues, or maybe a child is selfemployed and could be sued. In all of these situations, a trust can be structured in such a manner that the assets or property you leave them are safe from divorce, creditors, or lawsuits. Not all trusts provide this kind of protection, but a properly drafted trust can. One of the greatest gifts you can leave your beneficiaries is an asset-protected inheritance.
Adrienne Young-Ramsey started Backyard Revolution seven years ago with the idea that we have the responsibility to preserve tradition and reclaim the strength that our ancestors had. Since then, the group has been very successful, education and sharing their stories with people everywhere from Monticello to Lockn’. “There’s so much wisdom you can derive … all part of that self-sufficiency of our ancestors who grew what they and to grow,” said Adrienne. “And not just the colonial peoples, but obviously the indigenous as well. And that’s where the brain tanning comes in.” Hugh Gildea led a workshop on brain tanning, one class in a six-part series with the Louisa Historical Society that explores cultural traditions inspired by the practical skills and wisdom of both the colonial and indigenous peoples that are no in danger of being forgotten. Hugh, who started tanning animal skins years ago, enjoys teaching others the skills he’s honed over the years. “I decided that if you live in the country a lot of hunters don’t have anything to do with skins so they’re delighted to pass them on to someone who’s making buckskin,” said Hugh of his craft, which was once practiced using the brains of the animal (hence the name) but today he tans using a variety of animal substances - anything from homemade lye soap to bacon grease. Hugh says there isn’t too much a person can do nowadays and know for certain that he’s doing it the same way his ancestors did hundreds of years ago. But he loves brain tanning because, for a period of at least 10 or 12 thousand years, people have tanned skins in the way he does. “I think the idea of the alchemical transformation as you’re working with the life - changing this raw material into something that then becomes part of your life,” is the reason to try brain tanning, said Adrienne. “You keep the spirit of the animal with you and it instills a deeper respect for the natural world and for the harmonious utilization of our natural resources and Mother Earth.” BRL
3) Trusts can help protect assets from long-term care costs. If you are concerned about losing your property or assets because of a nursing home stay, a properly drafted irrevocable trust may offer protection for a significant portion of your property. It is very important to remember when making an irrevocable trust to protect property, the law requires the property or assets to be in the irrevocable trust for at least 5 years before those assets are safe. Oppositely, I sometimes see people giving property directly to children in an attempt to protect their property, but doing so may cause some unintended problems. There is still a 5 year waiting period, and by giving the property directly to a child, you not only lose control over the property or assets, but you will also subject the property to the child’s creditors, lawsuits, or child’s divorce settlement. With an irrevocable trust, you can maintain control of the property without subjecting it to the liabilities of the children. 4) Trusts can help transfer the family business from one generation to the next. Family businesses often pose the greatest challenge in estate planning. Unaddressed issues can jeopardize the life of the business if the current owners (often Mom & Dad) have not planned properly. A trust can often bring solid answers to the issues of who will continue to operate the business or who will own the business after you. If you own a business, a trust will likely best answer your needs. Trusts can provide a wide array of benefits. But, not all trusts are created the same. Depending upon your particular goals, a trust can be drafted to suit your personalized needs. The type of trust and whether a trust is suitable for you can be determined by seeking the assistance of an estate planning attorney you trust.

After 25 years in the FBI and another 20 on the screens of major news networks, Clint Van Zandt needed a change of pace. “After big city, big rush hurry, Wintergreen had everything good,” said the TV analyst, author, and retired law enforcement officer. “It’s the perfect location for me.” After commuting to D.C. for more than a decade, the drive (which could take more than two hours each way) got to be a bit too much for Clint, who spends most of his time in his Fredericksburg home. So NBC News offered to put a studio inside his home office - complete with lights, camera, and the action! - and when his family began spending more and more time in their Wintergreen home, it wasn’t a huge step to put a studio in the new house as well.

If you are ready for a faster internet connection, you are ready for Exede Broadband. Clint Van Zandt and wife, Dianne, enjoy a hike along the Appalachian Trail, which is just a short walk from their Wintergreen home.
“I’d get calls with fast breaking situations and there’s nothing fast breaking about news in Wintergreen,” he said, adding that he’d often have to make the long drive into D.C. on a moment’s notice if he was needed. “But now what the studio in my house in Wintergreen lets me do is take a phone call, get a little bit of information about what’s going on, throw a coat and tie on, drop myself in front of a camera, flip the lights on and I am live from 3,500 feet at Wintergreen all the way to 30 Rock in New York.” Clint spent many of his FBI years as a hostage negotiator and got into his second career as an analyst by helping discover the Unabomber’s identity, so he’s seen a lot of stuff - from hostage negotiations in the middle of the Amazon to reporting live for Al Jazeera just after the shootings at Virginia Tech. Today he’s just glad for the people he’s been able to help in both careers. “This is really the chance to speak positively of the men and women of law enforcement and the great job they do,” he said. “I guess when there’s a real human life on the line, the idea that you’re part of a team that saves a life and gives somebody the chance to breathe tomorrow… I think those are the significant things we do in law enforcement.” BRL

Blue Ridge LIFE JANUARY 2015
Lydia Holman’s life goal is to have a show on HGTV. Her classes at the Savannah College of Art and Design (SCAD) will certainly help her get there, but her modeling pays some of the bills in the meantime. The 2014 Nelson County High School graduate is just a freshman at SCAD (studying Interior Design with a minor in Acting in Front of the Camera), but has already been a favorite of the fashion students. SCAD is a university full of people who study the arts - from fashion to photography and everything in between - so many of them need models to display their work. Lydia has been doing modeling and pageants since she was a teenager so attending the open call earlier this fall was a no-brainer. “Modeling is something I would like to do, but education is really important to me as well,” said Lydia, who also models for bridal magazines and works part time at Wild Wolf. “So it’s kind of hard to balance both, but with going to SCAD, it’s made it so much easier to model while I’m getting my education because of everything they offer to students.” She started taking modeling classes as a young teen to help build her confidence, but eventually realized that she likes modeling and is good at it. In fact, ne of her favorite things about modeling is that she gets to be herself. “When I’m acting, I’m playing a character,” said Lydia. “But when I’m modeling it’s me.” But after her first semester at school, Lydia’s excited to be able to spend some time at home. Even in a place as creative as SCAD, many of her classmates are jealous of where she gets to come home to. “I tell everybody at school about Nelson whenever I can and every time I get a chance to, I show a picture,” she said. “Everybody thinks it’s really cool that I work at a brewery and live in the mountains. It’s really a unique place and I didn’t realize that until I lived somewhere else.” BRL

Bold Rock Cider Maker Brian Shanks will do just about anything to make the best drink he can for his cidery. Even if that means traveling to the other side of the world to find the best pears for Bold Rock’s new Pear Cider. And it probably doesn’t hurt that the other side of the world (New Zealand) is actually his hometown. Pears contain a natural fruit sugar called sorbitol, which doesn’t ferment in the cider-making process so it has a little residual sweetness that the more traditional apple cider’s can’t quite get. But unlike apples, pears don’t grow in abundance up and down the Mid Atlantic. “So, fortunately being a New Zealander, I know a lot of apple growers in my home country and we were able to track down some really good pears,” said Brian. “We get sea breezes there and the pears get relatively dry early springs and warm summers so [the growers] are able to produce pears really well.” Shanks says Bold Rock has made it a point to make their ciders out of local apples (they’ve even gone so far as to use Carolina apples for their ciders distributed in the Carolinas instead of the Virginia apples they use for ciders in Virginia, Maryland, DC, and Pennsylvania), there just wasn’t a way to do that with pears on a constant, large scale so the pears are custom crushed in New Zealand and the juice is imported. But the pear pomace goes to local farmers here, just like the leftover bits of apples go to local farmers here in Virginia.
Brian Shanks and some of his staff take a break from work to sample the newly released pear cider. Meanwhile, Meg Emerson of Nellysford and Sean Connoly of Crozet sling cider in the tasting room (below). Work hard. Play hard.
Bold Rock is growing quickly and recently moved all tastings into the new building, which not only offers visitors a chance to see more of the process while learning about cider-making, but also give Bold Rock the chance to expand their storage facilities to meet up with the higher demand - they’re now producing up to 200,000 cases of cider a year. Those cases include the Virginia Draft and Virginia Apple (and their Carolinian counterparts) as well as the Crimson Ridge dry ciders in addition to the new pear-y addition, which Brian says is becoming a fast fan favorite. The pear cider - which is already available on draft in places around town and (obviously) up for tasting at Bold Rock - is getting quite popular. “Anything with pear has a nice little bit of residual sweetness, but we felt that having too much pear might be overbearing so we took the crisp refreshness of the green apple tastes in the Virginia Apple and married the two,” he said, adding that the product is about 60% pear and 40% apple. “We think it gives a nice balanced drink. Most of the people who drink it say they love it and, to me, that’s the epitome of what makes a good cider: people enjoy it and want to drink more of it.” BRL

Snow Yes & Snow No Few words can cause both as much panic and preparation as the word ‘snow.’ Although it is seen by some as a form of entertainment, others view it as the embodiment of misery as it moves from slip to slop – sometimes in the same day. From your landscapes’ point of view, the white stuff is typically regarded as an asset mostly for its insulating and moisture laden properties that slowly move into the root zone and replenish water tables – aside from the fact that it can take a weedy, poorly planted and landscaped home and turn it into pure Better Homes & Gardens cover page material (picture time!). However, deep heavy snows can spell doom for a landscape mostly due to the weight of the white stuff. Here are a few tricks to minimize the damage. At the drip line of the house is where most of the carnage can be found. The easiest way to rectify this is to avoid planting in this zone – in particular weak wooded plants with broad vase shaped canopies and/ or evergreens with broad foliage and weak wood (i.e. azaleas). In the event that you are working with an established landscape or consider my warning futile, many homeowners of historic houses tie their plants up so that the plant cannot open up and break. Any twine will work where the user would tie off to a lower, thicker branch and then begin to wrap from the bottom up – with each loop around the plant tightening more and more. The plant is then tied off at the top. It must be remembered that it is best to not allow plants to remain in this tight canopy for extended periods due to disease, insect and other issues (I would not leave them for more than 4 weeks in the aforementioned manner). This whole process goes really fast and is extremely effective. Another common spot to look for
plants that may have issues with a deep snow will be alongside your drive. More often than not, your average snow pusher has one thing in mind: get in, clean up the snow for foot and automobile traffic and quickly move on to the next client. This mentality typically leaves little regard to the plants alongside the drive which can be engulfed by a plow’s wave of heavy snow that crashes into anything that is captured in its wake – sometimes accumulating to 6-8 feet of snow by the time he is done. Some of the better solutions are to always mark your drive with snow sticks so it can be easily ascertained as to the location of the drive, mark fragile plants and structures with snow sticks (different colors than driveway markers) to prevent snow piles from accumulating in these areas and/or to keep shrubs at a minimum of 8-10 feet from the drive. Other ideas are to keep tall deciduous plants in closer proximity to the drive (as a sort of living marker, if you will) than their evergreen counterparts. Proper pruning tactics also aid in minimizing damage from heavy snows. By allowing evergreens to grow gangly and unkept, you are effectively increasing the surface area where snow can hit and, since the limbs are long, branch strength is low thereby greatly increasing the chances of some serious pruning in a snow storm. Proper annual pruning helps to prevent this – sometimes even when it is required of you to wield the pruners just before a forecasted deep snow. It should also be noted that trees with acute (or tight) ‘crotch angles’ are prone to breakage in snow or ice. In order to prevent this, prune some or all branches that leave the tree on hard angles going straight up. Care should be taken since some trees innately grow with these tight angles – when in doubt, call a professional.

asktheDr. By Dr. Charles Cole Afton Family Medicine I was running the Charlottesville Marathon several years ago and 25 miles into the race I passed a woman who was running the half marathon that started at the same time. The back of her shirt said: “The miracle isn’t that I finished, the miracle is that I has the courage to start.” I have given this much thought over the last few years. This is a quote from John ‘the Penguin’ Bingham who in his mid 40’s changed his lifestyle from sedentary to active. He is now an avid runner and a writer and motivational speaker. Dictionary.com defines courage as the quality of mind or spirit that enables a person to face difficulty, danger or pain without fear. The same website defines change as making the future course different from what it is or from what it would be if left alone. So what does this have to do with health? Many of us would like to change the future course of our health but change is difficult and can be frightening. It is much easier to be resigned to the current course. So what if I don’t
exercise today? Who cares if I overeat tonight, or if I drink too much? Every time I try to quit smoking I fail, so why bother? Most of us have asked these or similar questions in the past. To make change we need to understand ourselves, and why we do the things we do. Understanding what causes our behaviors can allow us to make plans for change. We also need motivation. Maybe you want to see your grand kids graduate. Maybe you want to play ball with the kids or hike to the good fishing holes or deer stands. Maybe you just want to feel better. Change is hard and making long term changes takes courage. Where does this courage come from? That’s tough, because the answer will be different for each of us. The New Year is approaching – as you think about choices and resolutions, be brave. Believe in miracles and have the courage to start! Dr. Charles Cole is a licensed medical doctor based in Afton. The sales of books, DVDs, videos, exercise equipment and gadgets (abs toning belt!) have totaled millions of dollars.
