thepublishers There’s this idea Elon Musk has been tossing around about the mathematical chances that we are merely actors in a simulation. The internet threw me a curve ball yesterday with a ridiculous audio meme that I can’t seem to shake. If you haven’t heard the Yanny vs. Laurel meme, spare yourself the existential torment because as I type this, I can no longer prove that the keyboard in front of me is real or that the vegan protein ball I consumed is what it claims to be. It’ probably just a sugar pyramid dipped in Round-Up. So certain I was that the digital voice was speaking a word that sounds like “Yanny” (Yammy to my ears, actually), I was horrified when the machine revolted and spoke a different name to me. And it sounded so clearly like “Laurel.” So maybe the unicorns Peyton surrounds herself with aren’t modeled after imaginary beings. Maybe that’s why my children refuse to eat raw carrots because after all, who in their right mind would eat the horn off a horse? And is my dear husband truly responsible for the collection of wine corks that end up in the utensil drawer instead of a bin strategically
placed inches away from it? Surely he isn’t doing that and surely wifey is mistaking untidiness for a different, more advanced, sorting system. That is so Yanny. On a side note, I’ve noticed the worlds my children create in Minecraft are so incredibly tidy. The beds are always made, the pigs are happy, the sheep are sheared. Things are stored in various chests, and – swoon – you have an inventory dashboard that keeps track of your stuff! basicnecessities By Kay Pfaltz www.basicnecessities.com www.kaypfaltz.com Wine Tasting Terms, Terroir The sommelier nods as he brings out your wine and explains it has a “goût de terroir.” You smile enthusiastically, while thinking, “Goot de who? Say what?” Indeed. What exactly does it mean to have a taste of earth in your wine? However you feel about the mention of terroir (that it’s become mere buzz word, rendering it meaningless or that terroir is everything) it’s a term to understand. Very basically, terroir in French means “of the earth,” but the concept when used in relation to wine, or other agriculture, has a wider connotation including not only the soil but the climate, the sun, the vineyard slope and, in biodynamic farming, the entire cosmos. In other words, wines distinctive of their region. It has to do with the relationship between a wine and the specific place from which it comes. Huge operations making massproduced wines sourced from many different vineyards will not have a goût de terroir. Whereas a Sancerre from Gerard Boulay in Chavignol will have that classic flinty taste, or
a Chablis grown on the famed Kimmeridgian limestone. I love these wines and I often speak about their minerality, not to mention the terroir behind them. But let’s get real. Can you really taste dirt in a wine? And would you want to? Randy, a friend of mine, always say, “Kay, give me a wine that tastes like dirt.” And I know exactly what he means because he and I like the same wines: wines with a funky barnyard smell. But if either Randy or I really drank “dirty” wine, we’d probably not be thrilled. In the seventeenth century, goût de terroir was not a compliment. Only recently has it become something some of us seek out. The way I see it is like the French saying, “bien dans sa peau” or at home in one’s skin. To be comfortable with oneself. Same thing with these wines, they reflect the soil on which they’re grown, and are typical of a region unlike a massed-produced wine. In theory, a great Mosel Riesling should taste of its Devon slate, and different from, say, a Finger Lakes Riesling. But that doesn’t mean it tastes like dirt. It means different soils elicit different flavors from the
same grape. I will almost always favor wines with a strong sense of terroir but I also recognize that this goût de terroir that I so like can sometimes have nothing to do with the soil and everything to do with the yeasts. If you think the concept of terroir is confusing, you’re right, it is. But then wine in general is confusing—in a good way. It’s up to you to decide whether or not you taste terroir. Taste the dirt: La Stoppa, Barbera della Stoppa, 2009 (organic) – This is what Randy and I drink when we want to taste the dirt, and winemaker Elena Pantaleoni takes our dirt description as the compliment its meant. Silky and complex with layers of earth then fruit and earth again. It takes a certain someone to let a child fly down Main Street in a soapbox car. “His mom said she felt like she was going to puke,” recalls Jamil Powell who helped Caiden Turner, a friend of his son’s, prepare for the annual Soapbox Derby in Waynesboro. Together under Jamil’s carport, the pair carefully assembled and tested the car over several weeks in anticipation of race day. And aside from making sure Caiden could fit in the car and handle its breaks, the brighteyed 8 year-old went into this race cold. “I really thought he was going to end up in the Porsche dealership.” No practice? No problem. Caiden weaved and bobbed his way down Main Street and lived to tell about it. The Porsche dealership — and his mother’s nerves — were spared from the potential impact of a kid cruising a road downhill at 30 mph. “Growing up on a farm like my kids did, they didn’t have any fear of trying crazy stuff,” says Ben Puckett from behind his desk at an RV dealership in Staunton, where he works. “Once they get used to it, you can’t keep them out of the car.” Not even on prom night. A few weeks before Skylar Puckett placed her hand over her chest for the pre-race National Anthem, Skylar and her dad had to prep the car for inspection. “I got back around 12 and as soon as I got back I changed out of my prom clothes and went to the shop and worked on my car.” Gentlemen, if you want to take Ben’s daughter to a dance, that’s what you’re up against. In fact, with four kids participating, the derby is a big deal to the Puckett family. They got recruited a few years ago when the kids were in for an eye appointment and their doctor was a member of the local Moose lodge, who owns the derby cars. And as American as a slice of apple pie, you can’t turn down an offer to race in the derby. There’s a man in a cherry picker pointing a smartphone at the race crowd below him, clearly an official.
“In the 1950’s the race was held in Staunton on Route 11 (North Augusta Street) going south on Route 11 back into town at Terry Court Shopping Center,” recalls Joe Kaminiski of New Hope. He’s been with the derby for roughly 15 years, when his now-grown twin sons raced cars. The race came to Waynesboro in 1962 for a decade-long run before a hiatus that lasted until 1994 when a couple of businessmen hatched a plan to revive the race. Aside from a few years of holding it on 11th street because of repaving and bridgework, the derby — its 25th race — returned to Main Street two years ago. continued on page 14

“Our goal is to have a safe and fun race for the kids and then also to have a family event.” It’s a family event, no doubt. There’s a dad in a Star Wars shirt — hoping the Force is with him — wheeling in a car painted like a soccer ball. There’s another derby dad in a red windbreaker and jeans. His name is Mark Glover and he manages the Little Debbie Outlet store on Route 340. His son is a huge racing fan, coming in 7th place the first year he entered. Thanks to good old fashioned sibling rivalry, little sister, Alexa, wanted a crack at it. “One of the things … to see your child — like our son — to see him with a dream to want to race and then to start seeing that dream come true and being able to assist in some way and watch him grow in the sport,” Mark says, after work on the paved driveway — a perfect place to practice! — steps away from the garage. “And then, if you get out there with your daughter, that’s really exciting to see. The girls out there competing and just being able to work with her and showing her some things on the car, just the thrill of watching her go out there and compete.” The look on Alexa’s eyes have softened significantly a few days after the race. “‘Am I going to wreck and go over the cones again like I did the first time?’” she thought to herself. “I was pretty nervous.” “I don’t know who was more nervous, me or her,” Mark says, finally able to laugh about it. “She was showing me her hands shaking and everything the first time. She kept telling me, ‘I’m scared. I’m scared.’ She went down the hill … “ A father lets go of his little girl. “You think about a dad putting their child in a car for the very first time. Well this car, going down a hill and they reach a speed of about 30 mph, and she’s got a little rubber break on, very minimal steering, no air bags, none of the modern safety features of a car. And to see her go down and her helmet wasn’t tight enough so when she went down the first time her helmet slipped down over her eyes and she couldn’t see and we’re a nervous wreck. She’s ultra competitive so it worked out.” 3rd place in the Super Stock competition. Not bad for year 4. Alexa shows me the teal-colored racer. “It’s pretty crammed in there although this car is pretty big and I’m pretty small. I’ve got to fit in so the aerodynamics go pretty fast … The pedal’s right there so your legs goal the way in front and then you have to scoot back … You put your face as low as you can go down …” This is where the science and practical now-how kick in. It’s why the derby is much more than a race. It’s a science project promising a fantastic finale. There’s a fancy acronym for it these days: STEM (Science, Engineering, Technology, and Math). “Many kids, especially nowadays in the electronic age we’re in, they don’t know what a Phillips screwdriver or a straight slot screwdriver is or how to hit with a hammer,” Joe admits. “Or they don’t know the mechanics of it. When we have the kids in front of us, we’re helping build the cars, we get into friction of the pavement, of the tires, of the bearing, aerodynamics …” continued on page 18

And the derby dads seem to love this part. Figuring out how to shave off seconds — sometimes milliseconds — off the speed of the car. “0.38 of a second, that’s a good tail wind, three hairs blowing out of the wind,” Ben says, noting the time difference between one of Skylar’s runs that threw her into double elimination. “We wiped the axles down … I dried her helmet, we tucked her hair back in her shirt, she put sunglasses on so the wind wouldn’t catch her eyes, all aerodynamic.” Then Alexa crouched into where race positions, her teenage back matching the curve of car, becoming one. “You want the driver to be as flat as possible inside the cockpit,” her dad explains. “When she sits up it creates a parachute effect. Would you rather pay more or less for a product or service? Sounds like a no brainer. Perhaps you look at grocery store ads in the local paper and find that milk is on sale. Do you drive miles out of your way to “get the deal?” Reflect for a moment and think about your past or current home purchase process. Did you, or will you, pick up the phone or drive across town to get a better rate or loan product? Mortgage products vary, and thus comparisons are not always apples to apples, so you may need to rely on a mortgage professional to interpret and guide you through the process. (Selecting the right mortgage professional is just as important as selecting the right real estate agent.) A true mortgage professional should be able to listen to your goals and plans, analyze your broader financial picture, and incorporate those into a loan product that is tailored to your specific needs. When shopping for a loan, here are

Staunton embraces its small-town charm the way one turns a lucky coin in hand; it’s solid and comforting, it’s about cheerful waves and hugs on the sidewalk. It bespeaks a friendly innocence like the smile of a business owner passing you a whimsically frosted cupcake across the counter. Erinn Paris, of Paris Cake Company, says, “Ken (her husband) and I aren’t out front so much anymore, but we get messages from customers that they miss us. We don’t want to lose that connection.” Starting in 2015, in a tiny space on a back street in Staunton, Erinn would answer the doorbell to help cupcake customers choose from a diminutive display in the front room. She would turn to the kitchen to fill the orders. The baking business boomed and the Paris’s moved to their much-expanded location at 300 Church Street in December 2017. With indoor and outdoor seating accommodating more than 60 people (not counting dogs, on the patio) it’s a pleasant, unhurried location. This little cupcake that could has soul to spare. When Erinn and Ken moved to the new space they had the room, and vision, to include their restaurant, “Table 44.” Erinn’s sister, Jeanine Reilly, died of lupus in 2015, Erinn and Ken struggled with a way to memorialize her enthusiastic spirit. They chose her Syracuse U basketball number, “44” to label their new venture. Ken says, “It’s not a wreath,” it’s anything but a bereavement token, it is vital.

The food whiz behind the open kitchen counter, Tyler Canon, says, “I wanted the menu to be approachable for everyone. The space has dictated so much about what we have done here. We wanted it to be really comfortable, so the food needs to be really comfortable.” That it is. Vintage Formica-topped tables run parallel to the kitchen space. A bright sofa-seating area in the front of the shop is perfect for coffee klatch catch-up, or an off-hour, get-down-to-business meeting complete with refreshments. Tyler continues, “Food is as much about the people you’re with as about what it is you’re eating,” So it is as outside on the patio Lois and I toast our chilly glasses of prosecco over the fig, goat cheese, arugula, balsamic glazed tart. At the table next to us, with her people, the Black Lab Maxie, is dozing. The menus come from a heartfelt place. Tyler’s background won’t leave him alone, “I was born in North Carolina, my mother was from Alabama, and my father from Memphis, Tennessee,” that’s pure BBQ blood. It’s little wonder he brines pork and turkey in sweet tea. Having been a VA Tech student of Geography may help him keep his bearings, even on the culinary map. Nicole Brock runs the front of the house. She has a bright smile and quiet way. Perhaps it comes from the demands of selling well over 300 cupcakes a week, and 20 cheesecakes by the slice. In addition to opening the doors at 11 AM and staying open, without break, until 9 PM Wednesday through Saturday, brunch Sundays 11-3. The brunch menu changes weekly. Table 44 does not accept reservations but that is the roll of the space and the delight of having a place to pop into on an off-hour in Staunton for a glass of wine and tasty morsel or more. It doesn’t feel so much as walking into a restaurant/bakery as into the home of some good friends who will feed you well, even in the middle of the afternoon. This foursome has crossed paths personally and professionally over the years. The strength of friendships is to create and recreate. So, amid fresh baked English muffins, house-cured sausage and bacon, home-made mayonnaise, grandmother’s pickle recipe and a willingness to please the customers there’s a positive exchange going on. There’s fun about the place, consider the engineering to create iced unicorn cookies who toot sparkling sprinkles when their tails are pulled? That’s the goodnatured joy of being a little bit quirky to a community who’s sweet on you. BRL

“To keep it at 1890’s, we have to consider the types of fertilizer — they didn’t go to the Walmart and Lowe’s to buy fertilizer — they were able to use maybe some fish pieces ... chicken poop.” Sandy Gallagher is devouring this project like her group will devour the Krispy Kreme cake she brought for a snack. There’s not much 1890’s about that but you need sustenance when you’re working underneath a hot sun. And though Gallagher has the spirit of a kindergarten teacher on her class’ first field trip, it’s been decades since anyone here has been a student. That’s wrong, actually. Teachers are fond of saying learning never
stops and they’re correct. One of them just retired from the Nelson County Public School system and there she is, raking dirt. I approach Connie Harvey and ask her why she’s here. “Because I’m married to a Master Gardener!” That’s part of it. The other part is she knows what she’s doing. “We have potatoes and onions and cabbage and broccoli coming up. My lettuce looks great. Beets are coming up. Haven’t planted my beans and corn yet.” She pauses. “I sat many an hour on the rock pile.” continued on page 34

That’s an important clue. You see sometimes she and her sister would get into trouble and “Dad would make us get in the garden and pick up rocks. Of course he was smart, I realized later, because he would say, ‘Who can hit that tree by the creek?’ And then we’d throw our little arms off.” Today, the gardening is a hobby and a sizable supplement to what Connie puts on her table. But in the 1890’s, keeping a garden was a must. “They had to. There was no super market to go to,” Connie adds. “And even when I was growing up, my grandparents on both sides gardened and they were poor. So that was how they survived a lot of times in addition to the work they had by preserving the vegetables that they could grow then that was less money that they would have to spend at the store.” And you wouldn’t be spending $6 for a green plastic stake with which to trellis your cucumbers. You’d grab some sticks and twine and craft one yourself, like Kirk Barley is doing. Or, you’d let nature do some of that work for you. “One of the interesting crops is called the Three Sisters,” Sandy says. “They would plant corn and as the corn started to grow, they would put the pole beans in so the pole beans could grow up the corn and put squash around the bottom so that the weeds wouldn’t grow and they call that the Three Sisters.” It was practical and downright old-timey, which fits Humpback Rocks Farm, a National Park attraction at milepost 5.8 along the Blue Ridge Parkway “It’s interesting how many older people will come by, stand here at the fence and day, ‘Is that the Three Sisters? Ma used to do that too on my farm.’ It’s something the older generations definitely understand.” The farm has a root cellar, which is where you’d store the carrots, potatoes, radishes, and onions. The squash would be canned and put up. High in protein, beans were easy to grow and store. The terrain is mountainous and rocky — not the prime bottomland you’d see along the James River — so a combination of Native know-how and European tools made it possible to survive the Blue Ridge Mountains’ limited growing season. And if you’re lucky like Connie, who lives off the mountain, down off the Parkway, you carry the burden of having a green thumb. “There are times when you get into the garden and you just, you know, have some choice words for all those green beans that keep coming in.” Which is why Sandy brought the cake. Free Range Stone Step Living in rural Virginia, surrounded by picturesque mountains, streams, vineyards and farms, has a way of letting the suburban beat fade to a distant echo. However, the unlevel terrain that is typically associated with this area can sometimes be a bit challenging around the home for getting from point A to point B, especially in moist grass. An uneven approach to an outdoor entertainment area could benefit from a more stable and rhythmic walking medium, like steps, to move up and down these grades. Not all steps are equal though. Free range stone steps are dry (no mortar or footers) and are placed in the lawn only where the terrain calls for them. Better yet, the process is easily a “do-it-yourself” type of project and could last just over a weekend. Just so we are on the same page, the horizontal part where you put your foot is called the “tread” and the vertical lift between each step is called the “rise.” The planning process involves measuring the horizontal distance from the start of the slope to the end. In this example let’s say its 130 inches. We then divide that number by 16 inches to see how long the treads are. 16 inches is just a comfortable outside tread. 130 divided by 16 is very close to 8, 16-inch treads. Then we estimate the grade change from the top to the bottom. A long straight board with a level attached to the top and a tape measure will suffice. Here we will call it 62 inches. Divide that number by the number of steps, 8, to get the rise of each step. Our number is 7 ¾ inches per rise. The ¾ inch extra on each step can be lost by installing each step on a ¾ inch incline, which will also help to move water down the steps. Since we need 8 steps, we typically order one more since we would

like to land on a stone and not sod at the bottom. The length of each tread needs to be the 16 inches, plus an overhang of at least 1 inch plus an additional 2-3 inches for the rise stones to sit on. So in our example from above, we need 19-20 inch deep treads. These treads can be purchased as rectangles or irregular in shape. When using irregular, you may be forced to straighten the front and/or the back with a circular saw with a diamond blade. The easiest method would be to score the stone to half the thickness of it and then peck at it with a hammer to finish the cut/break. The rise material are flat stackable stones and the estimate should involve the width, 30 inches, by the rise, 7 inches, multiplied by 8 steps. Order extra of these stackable rise stones as it can be frustrating to not have the right thicknesses to make a good, flat union to the bottom of the tread. Lastly, be sure to have about a 3-gallon pot of stone dust per tread so that you will have a good solid & level base for the stones to sit. With everything on site, we start at the bottom of the hill and work our way back up. The first tread is excavated by removing all sod and about 1 more inch of soil. The stone dust is then put in and packed. We then add the tread and hit the stone with a rubber mallet to seat it in the stone dust. The rise is then stacked on the back of the tread (soil side) in a straight line being sure that the end grade of these is level (remember to deduct the thickness of the stone from the 7-inch rise). Another sod/ soil cut for the following tread and then the process is repeated. This next tread, and the ensuing ones, will be placed on both the stone dust and the rise material, exposing about 1 inch of tread in front of the stacked rise stones.
Dear Dr. Steve, Doc, what’s the big deal about a tetanus shot? I thought I got that when I was a kid. The big deal is a disease called tetanus, also known as lockjaw. There is a mean bacterium (called Clostridium tetani) that lives in soil, plants, and in the gut of animals that can really mess you up if it infects you. C. tetani usually enters the body through a wound, particularly a dirty one. Yes, the old “stepped on a rusty nail” or any sort of wound that could be contaminated with soil, plant matter, or animal matter will do. The infection travels up nerves, or through the blood and then to nerves, all the way to the central nervous system (brain and spine). Then it goes to work, blocking nerve paths and leading to involuntary tensing of the muscles; thus the term “lockjaw.” Unfortunately, there is about a 50% chance of dying from tetanus if you get it. The best protection we have against this disease is prevention. As kids we get a series of shots to
help us build immunity to tetanus, ending usually with one at age 10 or 11. This is good for initial immunity to the disease, but the protection doesn’t last. After 5 years the effects from the immunizations have faded, and after 10 years they are not very effective at all. That’s why we recommend booster shots every 10 years. If you are an adult and think you don’t need to worry about this, realize that over 70% of cases of tetanus are in people over 50. So, practically, here’s what you should do: Every 10 years see your doctor for a tetanus booster shot. If you get a worrisome wound or burn and it has been 5 years since your last booster, you don’t need to worry. If it has been over 5 years, you should get the shot immediately. Time does matter as the disease takes an average of 8 days to affect you, and the shot takes 4 days to work. So, get your tetanus booster! ANTIQUES Vintage Cast Iron Farmhouse Well Pump Rare vintage cast iron windmill well pump by Goulds Pumps Inc., Seneca Falls, N.Y. This item was salvaged from my godfather’s former homestead and farm in Buckingham Co. I believe it is in working condition as I used to play with it as a child when it was plumbed to a well. All mechanical parts of the handle linkages and valve move freely. There is one crack on the flange underneath the spout assembly. Local pick up is preferred but delivery options may be negotiable.
