thepublishers Back from a blissful stay at the bay (we appreciate the bull sharks and jellyfish avoiding our waters that week), we decided to tackle a new project: hammock assembly. “Can I help?” says my little girl, stepping out onto the front porch in a whimsical summer dress decorated with bugs. I mask any hesitation to relinquish control of the project with one of those wide-eyed, hide-the-teeth, mommy smiles. It’s an involuntary reflex many of us experience whenever we suddenly find ourselves backed into a parenting corner. “Can I pour the flour in the mixing bowl?” Smile. Clean kitchens are overrated. “Can you volunteer an hour or two for our annual ____ ?” Smile. Mommy alone time is overrated. “Daddy got an electric pole saw! Can I help him?” Smile. Consider an adult beverage. “Slide rod with hole facing up until pin pops up and clicks,” Peyton reads before reaching for a metal bar half her weight and twice as long.

Grabbing one end of it to guide it over the connecting rod, my sweet little bug dress girl shoves the other end straight over the fleshy part of my middle finger. Smile. Middle fingers are overrated. Assuring her I’m okay, I dispatch her to the freezer for an ice pack, She comes back with a flexible one meant to be wrapped around a bottle of wine. So holding the ice pack on my middle finger, we finish Project Hammock Assembly. Daddy tries it out. Adam tries it out. Peyton tries it out. My tribe: some assembly required. Enjoy! Just ask any one of my four dogs—or don’t, as they prefer muddy puddle water to fine, aged wine. But I’m sure if someone wants to teach dogs to sniff out corked wine through the bottle, there’s good money to be made. Christie’s, Sotheby’s ... Nose is the word oenophiles use instead of “smell.” Nose can be a verb, as in to nose a wine, or noun, as in the nose of a wine. Smelling a wine is a step many rush through, or skip altogether, yet a wine’s nose is arguably more important than its taste, and many wine connoisseurs need only smell the wine when the sommelier uncorks the bottle. If you consider that human olfactory receptors are capable of detecting over 1 trillion different odors, you begin to see why sense of smell is so important. We perceive taste through sense of smell. Remember the last time you had a cold; you thought your spouse whipped up some cardboard. Taste, which depends on smell, is limited to only five or six flavors: sweet, sour, salty,

bitter and umami, while smell offers hundreds of nuances. Sniff and let your nose tell you if the wine reminds you of something else, be that something else another wine you’ve tried or perhaps something altogether different like green peppers, a wet dog, a stable, or a bowl of cherries. When the wet dog enters the stable, the smell is due less to fermentation than to maturation and aging. Cellaring adds further layers of scent, or what we call the wine’s “bouquet” versus its “aroma.” Bouquet then refers to tertiary aromas developed through aging (think woody scents, truffles, barnyard), while aroma is the more immediate and forward smell you receive, varietal characteristics like cherries or berries. In the perfume business those few people capable of identifying hundreds of different flavors are called “noses.” In Grasse, I remember meeting one particular nose who told us, that you don’t smell with your nose, you smell with your brain. True enough. We need only to think how immediate smell is, how evocative and how

closely allied to memory it is. Proust, madeleines, the smells of childhood ... It’s no wonder that words are poor descriptors when it comes to something as subtle and subjective as smell perceptions, or as exciting and mysterious as a good bottle of wine. Contrary to popular belief you don’t need a large schnoz to smell well. Just practicing helps. One grape that’s easily identifiable by smell, and a good place to start, is new world Sauvignon Blanc. With its hallmark grassiness or grapefruit notes, it leaps from the glass announcing itself. Rubus, Sauvignon Blanc, 2017 (New Zealand) – Our house Sauvignon, and we opt for it over a mineral-driven Sancerre in assuming more customers associate the varietal with the new world. Lean, razor sharp with classic grapefruit and boxwood, it pairs beautifully with appetizers, goat’s milk cheese, shellfish and seafood. $14 Wolfberger, Gewürztraminer, 2017 – Another grape instantly identifiable is Gewürztraminer, from “gewürtz” meaning spicy. Look for its hallmark rose petal and lychee notes. Pair with Asian dishes. $22

Shane Murrow takes an uncommon break to relax and be among a few of his colleagues in Swoope. No one is under the table but some are actually on it, ducks. How was an Oklahoma farm boy attracted to the Shenandoah Valley? Murrow explains, “I was studying to be a nurse or doctor in Oklahoma. Then I saw this movie with a guy sitting in a pasture talking to pigs. So, I got one of his books, Folks, This Ain’t Normal. After reading it, instead of medical school, I figured, why not grow nutritionally dense food for my community and treat people that way?” continued on page 12

With the spirit of a pilgrim, Murrow took to the road to see how the best farms thrived. The 500 acres of his family’s four-generation Oklahoma farm was sold while he was in college. Still, the Dustbowl and Great Depression grit, that literally wore his grandfather’s teeth to nubs, is in every gene of this guy.

The bravado a strapping 24-year-old might swagger is replaced with intelligence and gentleness sand-polished by the highs and lows of an agrarian supported lifestyle. Murrow finds the farmer, chatting it up with his hogs, in a field at Polyface Farm in Swoope: Joel Salatin. Quick at identifying quality in livestock, pasture, and character, Salatin took Murrow into the fold in 2016 initially as a five-month intern, then as a longer-term apprentice with management responsibilities. Of Salatin, Murrow says, “Joel has really been a great mentor; he’s been farming 45-years full-time. That has substantially shortened my learning curve.”

Two years later Murrow has negotiated a most serendipitous turn. He now farms on land that the first Polyface intern, Tai Lopez, graduate from a couple of decades ago, has returned to Swoope to own. Meadowood Farm (technically in Staunton, Augusta County) is Murrow’s farm where he is producing his first run of ducks, the Pekin, or Long Island variety brought to the U.S. from China in the nineteenth century. Murrow says, “I developed a soft spot for ducks.” This may explain why the one lame duck was transitioned to the pond (physical therapy) at Meadowood, unlikely to be seen on a table near you while it splashes and paddles in delight. The ducks blossom on the new grass they are moved on daily. Their grain diet is organic, local, and of non-genetically modified organisms. Working in batches of about 125, Murrow rotates the ducks every seven weeks, a slightly faster turn-around than the average broiler chicken. continued on page 14

It’s difficult to imagine that in one so youthful and fit there could have been any darkness. At ten-years-old Murrow experienced a rapid growth tumor in his right lung. One half of his lung was removed requiring splitting his ribs. The agile kid that hung from the monkey bars now hung perilously from life. At that boyish age Murrow grasped that recovery was not in French fries but in more elemental foods. He leans in and quietly confides to me, “I love Velveeta.” The highest climbers have curiously low pitfalls, depending on how you judge them. Murrow says, “I would like to spend more time in the kitchen preparing my own food because I love it. That’s one of the biggest reasons I’m doing what I’m doing, because I want that medicine.”

A duck tale: the account Alice B. Toklas committed to her Cookbook, published in 1954. To summarize, Gertrude Stein left their home, in France, with gates open. “Dianne” the dubious bird dog from next door intrudes and mercilessly chases the duck, Blanchette, to exhaustion. Cook rescues Blanchette as she takes her last gasps while Toklas closes the gates that should have protected the duck. Cook approaches Toklas as she works the garden for poor Blanchette is no more. Her final ministrations were to pour the spirituous Eau de Vie down her throat to ease her passing. “What do I do now?” inquires cook. Toklas replies feebly, “With orange sauce?”

We take to the kitchen with a little less drama. The common lament regarding duck is that it is “so oily, so greasy.” The easy solution to this requires one simple step. The duck is placed in boiling water and simmered for 5-7 minutes. This opens the pores and allows heavy fat under the skin to be released. Marcella Hazen, the grande dame of Italian cooking, holds a hair dryer on high for five minutes to the bird to dry the skin and keep the pores open. At this point the sky’s the limit, classic French orange seasoning, Chinese five-spice powder redolent of cinnamon, fennel and star anise, an infinity of glazes.

Murrow tucks into a sticky spice-veneered leg as plates are being passed among the guys just out of the field. He says, “I want people to appreciate the food, to understand the nutritional good of it. The reason I’m alive and around: I just want to fix what’s broken.” A solitary duck glides and dives in the Meadowood pond, no longer lame, just busy being a duck. BRL

When comparing midyear 2018 with the same time period in 2017, the Nelson County real estate market is gaining in sales and waning in days on market. Here is a midyear overview with historical references. Data was extracted from the Charlottesville Area Association of Realtors Multiple Listing Service. Midyear Countywide Overview. 133 residential properties sold Q1/ Q2 2018 which represents a 16.67% increase from the same midyear period in 2017 when 114 properties sold. Note: The year started off strong with 68 properties sold in Q1. Q2 2018 with 65 sales is up from Q2 2017, but is slightly lower than Q1 of 2018. Midyear Statistical Comparison. Q1/Q2 2017 recap: 114 sales, median $250,000, average price $303,538, average price per sq ft $131.56, average days on market (DOM) 197, median DOM of 108. Q1/Q2 2018: 133 sales, median $235,000, average price $279,535, average

price per sq ft $132.93, average DOM 145, median DOM of 90. As you may recall the 2017 year ended with an increase in the number of sales and price with fewer days on market. This year continues to show improvement especially in the number of sales (16.67% increase) achieved in much fewer days on market (26% decrease in average DOM). While positive strides are being made, the selling price did not reflect the same encouraging numbers. Price per sq ft basically held steady with a marginal increase of 1%. However, the median and average price are both down when comparing midyear 2018 with midyear 2017. In the long run price appears to be headed in the right direction. Midyear 2018 median of $235,000 is still above the 2017 year end median of $233,000. Projections: Based on historical figures, I would anticipate the number of sales to continue to rise in 2018. The second half of the year consistently outperforms the first half.

Review of sales history comparing first half of year with second half of year with percentage increase: 2012 – 71/110, +55%; 2013 – 99/131, +32%; 2014 – 86/108, +26%; 2015 – 109/139, +28%; 2016 – 105/134, +28%; 2017 – 114/136, +19%. Price is not as easy to predict. As long as inventory (available properties for sale) diminishes, then price may improve. Historical data regarding inventory at the beginning of each year: 2014 – 328, 2015 – 318, 2016 – 280, 2017 – 265, 2018 – 225. Inventory tends to be a little higher midyear in the warmer months; there are currently 262 homes for sale. Midyear Sales Summary by Locality. Nelson County sales encompass 3 main markets, Wintergreen (mountain) with 65 sales, Stoney Creek (valley) with 22 sales, and all other non-resort or county properties with 46 sales. When comparing midyear 2018 with 2017 sales, market improvement occurred across the board. The greatest increase was

Countywide 37 parcels of land sold in midyear 2018 compared to 42 in midyear 2017, which is a 12% reduction. Wintergreen only had 3 sales and the county had 27 sales; sales were down for both. … or go raucously, with friends. Either way, a hike at The Nature Conservancy’s Fortune’s Cove Preserve in Nelson County is a tonic for the troubled mind. Nestled at the end of Fortune’s Cove Lane, this over 1000-acre forest preserve forms a horseshoe around the cove, named after the Fortune family, generations of whom lived in the farmhouse that still stands (now privately owned). The late Jane Heyward donated the property to The Nature Conservancy in 2006. A lifelong conservationist, hiker and John Muir enthusiast, she made the gift when Conservancy staff agreed to protect the unique natural communities on the land and make the property available to the public for hiking. She personally worked with staff members and volunteers to lay out the first trail, a 5.5-mile loop that starts at the parking lot then climbs steeply through the oak-hickory forest and along rock palisades, gaining nearly 1500 feet before reaching the top. If the trail takes an unexpected jog along the way, that’s Jane’s doing, to include a favorite tree, or unique rock formation. Later, Conservancy stewardship crews constructed a shorter, gentler 3.9-mile loop that guides the hiker along the lower slopes of the mountain, crossing creeks and wetlands along footbridges. After periods of rain, small waterfalls gurgle from otherwise peaceful seepage slopes. Visitors routinely encounter deer and wild turkey, sometimes sign of coyotes, bobcats or bear. One might hear the hammering of a pileated woodpecker, the shrill cry of a circling hawk, and always birdsong, varying with the season. At times the trail leaves the shade of trees and mountain laurel and pops out into a rocky glade with views of the bucolic valley below. Here grow lichens, mosses and a grass – little bluestem – more commonly found in prairies. In early May, when a subtle perfume floats in the air, look for fringetrees and wild azaleas that bloom that time of year. Maybe catch a glimpse of newborn fawn, its spots providing camouflage on the dappled forest floor. Come autumn, the cove is ablaze with splashes of orange, yellow and burgundy that make eastern deciduous forests famous the world over. continued on page 26

Most of the trees here are only about 50 years old. You might notice boulders the size of cars scattered throughout the woods and streams. That in itself makes this an interesting place if you understand the recent natural history here. In August of 1969, what remained of Hurricane Camille, a Category 5 storm, stalled over this small part of Nelson County where it joined up with 2 other weather systems and dumped over 31 inches of rain in a several hour period. Now recognized by the National Weather Service as one of the Top 10 Storms of the Twentieth Century, more rain fell that night than meteorologists previously thought was possible in an event that some scientists estimate will occur only once every thousand years. In addition to the lives that were lost in the county that night, thousands of years of soil and decades-old orchards and forests washed down the mountains. Thanks to generosity of Jane Heyward, this property will never be developed and future generations will have a chance to study what happens after nature strips everything down to bedrock and starts over. Another type of natural disaster intrigues Lorber. The mighty American chestnut once dominated the forests here; some estimates say that one in every four trees in the Appalachians was a chestnut. The demise of this species in the first half of the twentieth century was swift and expansive as the chestnut blight, its spores spread by wind, rain, insects and birds such as woodpeckers, killed off these mammoths. Partnering with the American Chestnut Foundation and volunteers, the Conservancy planted a chestnut orchard of hybridized seedlings in some of the former pasture on the preserve. After six years of management and evaluation, most of the young trees succumbed to the blight. But all is not lost. A dozen trial chestnuts remain of the original acre and a half that were planted. These will be used to breed the next generation of hybrids with the hope that someday, chestnut trees will regain their former status as giants of the eastern forest.

The Conservancy’s website advises that hikers should be in good physical condition and should plan to spend four hours to complete the upper loop. The lower loop takes around 2.5 hours. LIGHTFEATHER Annie Jacobs channels her Gypsy British grandmother into each and every bake.

The dough is rising inside the shiny commercial-grade Samsung oven and a little white dog releases a protective growl. “Oh, its okay Sophie Jean,” assures Annie Jacobs, a retired art teacher turned baker. It’s the kind of bickering you hear between companions who’ve spent dog years sharing the same space. In a few minutes, the dough will be carved out into smaller pieces to be made into Annie’s Signature Breakfast Braid. On the counter rests a fruit and nut filling, getting sweeter as it sits. “This particular filling is fresh cut peaches, apricots, cranberries, blueberries, sunflower seeds and usually I put almonds or walnuts … I soak it in a little bit of butter, brown sugar and maple syrup and it sits for about an hour.” And aside from the filling, there’s a healthy serving of Grandma Lena going into that loaf. All but perhaps a hint of what could have been a British brogue has been teased out thanks to schooling in the States. Even so, Annie’s years on that farm in the south of England made an impact. “My fondest memories were the daily routine of being in the garden. You didn’t eat, you didn’t do anything until the animals were fed and everything was pulled in from the garden. Had our break then went back out.” We step out to the late Lena Dabner’s granddaughter’s garden where cinder blocks form an herb garden against a horse fence – chives will be used later in a savory bun bake. The cherries she used for another recipe were picked down the road at her neighbor’s home. We are in the dog days of summer and even though the tree canopy has shaved off a few degrees on the thermometer, we are still weeks away from weather reminiscent of that early fall day on Grandma Lena’s farm that forever seared a memory into Annie’s heart. It happened under a grand apple tree, flush with winesaps. “She met me out there and there were apples all over the place and I was hungry. I had come up from school and I wanted a snack. So we sat on two stumps.”

There was something brown on Grandma’s apple. “Grandma, look at your apple. What is that?” cried Annie. Grandma looked at it and said, “Oh, not to worry! I’ve got a little extra protein in my apple,” before taking another bite. “He’s gone now. He’s in my belly!” That was Grandma Lena, very much a Brit, but very much a Gypsy. A few pictures survive of those early days, including one that shows a grinning woman at the seat of a horse drawn carriage hitched to a covered wagon. The file name of the image Annie emails me reads “making baking deliveries.jpg.” There’s another one of Grandma Lena and her chickens, all Australorps. After all, a baker needs eggs. Not to mention a sharp knife. Annie takes the risen dough out of the oven and dumps it on a floured marble slab, dividing it into thirds. Each will be a Challah loaf stuffed with the fruit and nut filling, a staple in Grandma Lena’s kitchen that Annie has adapted. “I formed a real love for it. It’s almost a need. It’s a therapy for me,” Annie says as she turns the dough over in her hands. “My grandmother used to say ‘Its a kindness that you can do for your family, taking a good meal, taking care.’ It’s kindness you can do for others to give a gift of something you have made of something that you’ve taken care of.” After scooping in the filling and braiding the loaf – its perfectly okay if that filling oozes out – Annie brushes the braids with a slightly watered egg wash to give it that characteristic Challah shine and color. “You learn that there is not only an art but there is a chemistry and a mathematic component,” Annie explains to me across the counter as she applies a few finishing strokes of the egg wash. “And when you want to alter it, you know you have to alter everything else.” Art, chemistry, math and dare we say some magic. After all, Grandma Lena was a Gypsy and there’s a little bit of magic in every loaf she baked. Picture this woman on her farm with a fire going. “She’d sit there and she’d go, ‘Well, this is what we’re going to do.’ We would do ‘Spirit of the glass’ if we had glasses that were filled and she’d say, ‘Make this apple sauce!’” And Grandma Lena had a knack for predicting the future, Annie says (even if it meant feeling the loss of a soul while England was at war). But those same sensitivities tethered her to nature and to things like the bugs that shine their magic glow over fields on late summer nights. “I’ll do that with my grandchildren, they’ll say, ‘Can we go under the veil and hold hands?’ and ‘Can we say, ‘Let’s go out and see a firefly. Let’s see if a firefly will light on us!’ We do these little magic spells and they’ll want to do it again and I’ll say ‘We can’t do too much magic in one night.’” The shiny Samsung goes ding! signaling that the braids are ready. And as Annie slides them over the counter, the smell of maple syrup-soaked peaches and blueberries hits you, a little too much magic oozing out of a braid. BRL

Success with Hydrangea I wonder what the Latin/Greek root of the name Hydrangea is. In my mind it must be some word meaning ‘frustration’, ‘waste of time’ or better yet ‘good luck’ considering the lack of blooms right now in my landscape. I guess the best way to achieve success and truly experience the beauty of a Hydrangea is to know the plants and the latest cultivars. Here’s my take. Panicle Hydrangea If there was a book entitled ‘Hydrangeas for Dummies’ Hydrangea paniculata would be in the first chapter in bold type. Success is practically guaranteed being that it is an aggressive species, blooms on new growth and can take a mixture of practically any type of exposure including full sun. Here are some quick bullets: Pruning – March. Prune as much as 1/2 to 1/3 the plant if you like – the harder you prune, the larger the blooms. Bloom – White, lime-green, rose Exposure – Full sun to shade Watering – Medium Cultivars – Limelight, Little Lamb, Tardiva Smooth Hydrangea This is perhaps one of my most dependable Hydrangeas in my personal garden. Each year it ushers in summer with large white blooms that turn to green in the fall, seemingly lasting forever. Again, here are some quick notes on Hydrangea arborescens: Pruning – March. Can be cut back to 10-18 inches from the ground. Bloom - White Exposure – Full sun to shade Watering - Medium to high, depending on exposure Cultivars – Annabelle

Oak Leaf Hydrangea If there was a Hydrangea that I would plant for fall & winter interest it would be this species. The bark rivals the heralded birch for exfoliation while the leaf color can give any red maple a run for its money. The bloom however, is much less showy than other species listed here. Here are some notes on Hydrangea quercifolia: Pruning – March. Bloom – White, rose Exposure – Full sun but best in partial shade to shade Watering – Medium Cultivars – Snowflake, Alice Smooth, Mophead or Old Fashioned Hydrangea In case you are wondering, I planned to put this one at the end feeling that any other place would have readers flipping quickly away to other articles before they gained a little confidence with the former species. But as this article is entitled, there can be ‘Success with Hydrangeas’ and this species is no exception. Key words: choose varieties that bloom on new wood. The list is short but the bounty can be the envy of the neighborhood. Hydrangea macrophylla in short: Pruning – Mid-July to Mid-August (this is the only one that I will prune this time of year) Bloom – Rich pink, blue Exposure – Best in partial shade to shade Watering – High. This can truly make a difference between bloom and bust! Cultivars – Endless Summer, Penny Mac

Dear Dr. Steve, Tell me what you can about chiggers. All I know is that I hate the way they make me itch! Ah yes, one of the true signs of summer. Like swimming and lemonade, chigger bites seem to be a regular part of the summer for those of us that venture outside. Have you ever been on a walk through tall grass, only to wake up 12 hours later with intense itching around your waist band or sock rim? Red spots there as well? Yes, you have met the chigger. Chiggers are the larvae of a mite that must feed on the fluid in an animal’s skin cells. To do this, it sits ready on tall grass or other vegetation waiting for us or other animals to pass by. When we do, it jumps on us and begins the search for some good cells. It will stop moving around when it hits a barrier like a waist or sock band. When it stops, it cuts a hole into the skin cells, puts a chemical out to keep the hole open and digest the fluid in the cell, and starts to feed. This process is highly irritating to our skin.

One important point is that the chigger does not actually burrow into the skin as so many people believe. It simply sits on the skin to feed. So, a scratch or a bath will quickly get rid of the chigger, but not before the damage is done. The red, itchy spot it leaves can last for days. To treat a chigger bite, first of all keep it clean with soap and water. Use any sort of over-the-counter anti-itch cream such as hydrocortisone. Watch for signs of infection like surrounding redness or sores that don’t go away within a couple of weeks. Certainly there are prescription medicines your doctor can give to help as well if needed. You might consider wearing long pants and socks to avoid getting bit in the first place. But, above all, don’t let the chigger keep you inside this summer!
