thepublishers Silly me, I thought raising a handful of turkeys for the holidays would be easier than raising dozens of meat chickens. A few mornings this month, I’ve woken up to our handsome Tom strutting around outside of his electrified gated community. But since Toms are driven by food and mating, it wasn’t hard to lure him back to his home with the hens. Then one morning, he was gone. I was feeding the chickens when the other Tom(my) in my life stepped out for his morning run when he noticed the missing bird. After he finished his jog, he reported no Tom sighting. Drat! “They’ve been known to join a flock of wild turkey if they’re around,” I’ve been told. Everything for a hen, I suppose. And so the kids and I held this romantic belief that Tom’s wanderlust led him astray. Sometimes Toms in gated communities succumb to their primal instincts and stray but hey, that’s nature. Predators are also part of nature because that’s the forensic conclusion I came to this morning when I discovered Tom’s remains under a row of wild blackberries. I’d say
about two-thirds of the bird was in tact. Whoever did him in – I’m thinking the fox struck again – liked dark meat. So, I’m now eyeing one of the hens I had hoped would be half of a breeding pair. I need a larger cone for the job but I keep hovering over the “add to cart” button. This means this year’s Thanksgiving turkey won’t be as large as years’ past, which is fine. Tommy and Adam usually get a breast, I go for a leg, and as for Peyton – I think fluffy white dinner rolls were invented for kids like her. We give thanks this year to the food on our table, to the smiles on our children’s’ faces, and to the spirit of Wandering Tom (who should have known better). Please, pass the gravy! In the U.S. we call it cocktail hour, a ritual some people take quite seriously, while others indulge most passionately during festive, food and wine-laced holidays. Like Thanksgiving. Champagne to begin a meal is the perfect ‘gastric stimulator.’ And nothing quite says elegance and good taste like a flute of Blanc de Blancs Champagne. Sure, you can spend $495 on Salon or $130 on Perrier Jouët Belle Epoque (correctly pronounced Jou-et not Jou-A; same for Moët & Chandon) but with an abundance of great grower champagnes, why not get equal if not better quality for a fraction of the price? Our top picks: Diebolt-Vallois, Brut – From the outstanding Cramant terroir, and a perennial favorite. Round, elegant and creamy. Honeysuckle and
chamomile notes that last throughout the complex finish. $58.99 VoirinJumel, Premier Cru, Brut– Also from Cramant, Voirin-Jumel has beautiful floral and mineral characteristic. Good choices for Thanksgiving include fruity, low-alcohol wines. Try: Otella Lugana, 2015, $18.99 – Made from 100% Turbiana grapes, this wine has a lemon curd nose with the minerality to enhance the best of Thanksgiving horrors…I mean sides. Monmousseaux, Clos le Vigneau, Vouvray 2015, $18.99– Near perfect
for pairing with turkey and the fixins. The honeyed notes of pear balance crisp acidity. But if a hint of sugar has you running, try Domaine aux Moines, Savennieres, 2014, $36.99 – Dry Chenin at its apogee. Here you’ll find the body and acidity of one of the great food wines acting as perfect host and harmonizer, smoothing rough edges, so that even Aunt Shirley’s bean casserole’s a hit. ANTIQUES Arriving at this farm gave her the “Ah, ha!” moment that eludes so many. For the past fifteen years that clarity has never been out of reach - it’s as handy as a gallon of milk – and Louella sticks close to the herds. With milk protein as her medium Louella captures the alchemy “of this incredible transformation of grass into exploding flavors of crumbles of aged cheese.” Returning to the states Louella worked on farms steeping in the experiences each unique setting had to offer. She landed back in Providence, Rhode Island and cofounded Narragansett Creamery. What might have been a happy shelf to rest upon was not permanent, the milk truck of destiny pulled up again. This time her choice was between staying at the creamery or moving to San Francisco with her husband Alan, an evolutionary biologist, as he followed his academic career. “San Francisco is not a place of production, land prices are too high,” Louella explains. “So I recreated myself to teach cheese-making. I pitched it to a community college and sold out my first workshop.” And just about every one thereafter. Driving all over the Bay Area, The Milk Maid gave cheese-making lessons “. . . in private homes, apartments, law offices and quirky bridal showers.” As well as some nonprofit educational centers. But back to quirky.

Louella is a native of Bisbee, Arizona, as she allows, “A place for rebels, mystics and old hippies.” That scores you an instant ten points on the eccentric scale. Neighborhood in this city of 5000 or so? The old terraced mining houses that glow in south facing light. Her house? An adobe supplemented with salvaged materials from the closed copper mines. “I was born in my parents’ living room. My father, an artist blacksmith, had his forge with anvils and trip hammers just below our home. You looked down on the roof of it.” The scoreboard just shorted out. Louella laughs, “I wish I had gone into blacksmithing, or my father had been a cheesemaker. We’re very parallel, we both like this molten form of something that gets shaped. He works in bronze, steel, brass. I work in milk protein. Blacksmithing and whitesmithing. I love kitchens. The forge is a kitchen, transformation through heat.” Another professional move about a year ago has brought Louella and Alan to Virginia. Never having been they came here on a wave of good faith. Keen to the landscape Louella notes the great difference between western landscapes and the Shenandoah Valley. Vastness versus a patchwork quilt of forest, cropland, pasture, orchard and vineyard with cozy living spaces tucked in the seams, much more akin to the European landscape that captivated her. Having taught extensively Louella did what many accomplished teachers do, she created a textbook, or in her case a cookbook. Published in 2015 Kitchen Creamery is a solid and aesthetic guide to home cheese-making. “What’s next for me?”, The Milk Maid wonders. The concept is like a cheese not yet mature, a wine still tannic but showing its potential, or dough rising. Something good will come of this musing time of hers. From the crumbs she’s tossing out, something remarkably enhancing and delicious. “I can see this as a place where a creamery could exist. The grass is here, the milk is here.” Relying on her shares in cows at Creambrook Farm Services in Middlebrook, Louella extols the availability of cream-line milk that Ben and Kristen Beichler offer. She has a gallon in hand as the water comes to a boil. continued on page 14

The hot water feels good on cold fingers this chilly morning. We’re sharing a bowl kneading curd into what will become mozzarella. The laughter starts. It’s much more fun than Play Dough. Hey, growing up isn’t so bad after all. We’re spinning and twisting the cheese into puffballs and blonde Wagnerian braids, immersing them in cold water to set, then to table. Apples, pears, late tomatoes and pesto (the height of summer preserved) to stack and smear on homemade bread. “Broken Jack” flecked with spicy peppers, sour cream and an earthy cheese that has a beautiful grained skin and a whiff of barnyard. We discuss “farm to table” as an experience rather than the fact of life it once was. How to bring it back? How to make it no longer an elitist overworked dinner party contortion? The joy of creating what we are eating in a few short magical moments later yields to Louella’s thoughtful revelry, “I’d like to have a creamery that doubles as a work training program. Something that uses the production of food as a medium for social change and community empowerment. I want that. I don’t want just a fussy, bourgey little cheese stand that only fussy people go to. Food is unbearably humble. It’s scrubbing the pot.” Louella the Milk Maid continues, “How do we feed people beyond food? We feed them with community.” “What if we could create a space that was a big beautiful table and in the morning that space was used to teach preschoolers to roll out pie dough? At noon people came in and got the lunch item that was offered that day? Later it becomes a happy hour site with an evening workshop?” Louella’s time-lapse table is intriguing. It bows to seasons, expertise and the support of a community that wants something more than to be a pretty place. The first table we will build will be a round one where the discussion begins. BRL

Hard at work renovating an old produce stand that will soon house Blue Ridge Bucha’s new production and tasting space, Ethan Zuckerman’s hands are probably dirtier than his kids,’ now ages three and five. “We came across this way to finish our interior raw wood with tannins from the tea followed by a vinegar wash where we’ve soaked steel wool and vinegar.” After all, kombucha is fermented tea. Ethan dips a rag into a 5-gallon bucket and begins wiping it over a pine board. Little by little, the future indoor tasting area is being accented with these wooden panels. Shooting for a November production house opening, the Zuckermans join a list of mom-and-pop merchants breathing new life down Route 250, which pours motorists into downtown Waynesboro as they come over Afton Mountain. It’s also heavily trafficked by Appalachian Trail thru-hikers heading to town to refuel and recharge.

“We’re excited about being in a corridor where we feel the community is growing and shifting and we can ideally be in on the ground floor of some unique changes where there’s some actual tourism interest coming into the city,” explains Kate, Ethan’s wife. As you pass Blue Ridge Bucha, Rockfish Gap Outfitters is on the right, and Basic City Brewing Company – located at the old Virginia Metal Crafters site – is on the left. “Obviously Rockfish Gap Outfitters has been here for years, and now with Basic City Beer up and running – which is a phenomenal little spot – we’re hoping to be part of a new entryway,” Ethan adds. It’s an opportunity for the kombucha brewery to offer Waynesboro and its visitors some trail magic, off the trail. Started in 2010 from their home in Afton, the company recently rebranded from Barefoot Bucha to Blue Ridge Bucha. Though renovating an old building isn’t easy, Ethan says it’s a refreshing move in the right direction. “It’s nice to have a little pause between work and home. A brief commute. It’s kind of pleasant, actually.” By spring, he hopes to open up the roll-up door and have the tasting room up and running. “So the hope is to kind of create this outdoor courtyard where we can have tables, potentially in time plug in a food truck, kind of a nice outdoor scene, and the roll up door is open, merges seamlessly with the bar inside.” BRL

What’s Happening in Nelson ? 2017 Third Quarter Residential Real Estate Summary

The outlook continues to get better for sellers within the Nelson County real estate market. Improvements were noted from the midyear report and this third quarter further strengthens the selling position. Of course a gain for sellers, can be a loss for buyers. Hence, if you are looking to make a purchase, NOW is the time to move forward before inventory dwindles and prices and rates become less favorable for a purchase. Here is a quick market summary. *Data was extracted from the Charlottesville Area Association of Realtors (CAAR) Multiple Listing Service (MLS). Q1-Q3 Countywide Overview; 187 residential properties sold in Q1Q3 of 2017 which represents a 13% increase from the same time period in 2016 when 166 properties sold. Q1-Q3 Statistical Comparisons; Q1-Q3 2016 recap: 166 sales, median $206,000, average price $236,184, average price per sq ft $127.71,
Days on Market (DOM) 189, median DOM 122. Q1-Q3 2017: 187 sales, median $250,000, average price $297,361, Average price per sq ft $134.55, DOM 186, median DOM 83. All market indicators favor sellers. Increases were achieved across the board in number of sales and in price (median and average), and properties took 32% fewer days to sell when comparing the median DOM. Inventory has also been dwindling. There are currently 251 properties for sale at an average price per sq ft of 166.52 compared to 293 this time last year at a price per sq ft of $166.55; this is a 14.3% reduction in inventory. The current asking price per sq ft ($166.52) is 24% higher than the sold price per sq ft ($134.55); I often refer to this difference as the gap between “wish for” pricing compared to true market value. If you plan to put your property on the market, make sure that you set your asking price based on sold

comps and NOT on inflated, unsold properties. Setting a market driven price can make the difference in being SOLD and not just FOR SALE. The properties currently for sale have been lingering on the market at an average of 257 days and counting. Q1-Q3 Sales Summary by Locality; Nelson County sales encompass 3 main markets, Wintergreen (mountain) with 91 sales, Stoney Creek (valley) with 25 sales, and all other non-resort or county properties with 71 sales. When comparing Q1-Q3 2017 sales with Q1-Q3 2016 sales, two markets had a significant gain in sales and the third market held steady. Stoney Creek had the greatest increase at 56.3% followed by Wintergreen at a 16.7%. The county market held steady with 71 sales compared to 72 in Q1-Q3 2016. Another notable statistic is within Wintergreen (mountain) and the distribution of sales; 91 properties sold representing 37 detached homes and

High school seniors Ruth Fitzgerald and Aeri Armstrong may be in a brewery kitchen on a Thursday afternoon, but they’re not playing hooky. They’re participating in an internship program that’s the first of its kind in the area. Nelson County High School is collaborating with Wild Wolf Brewery to introduce two students each semester to the B.O.H. – in the industry, that stands for “Back of House.” This is great practice for Aeri, who wants to see if she can handle the heat of the kitchen after she graduates high school. “I think culinary arts is something I want to pursue in the future, so this was a nice opportunity for me to see what it’s like,” she said. Brewery owner/operator and orchestrator of the program, Mary Wolf adds, “It was fun for me to see two young ladies as our first interns. The culinary field needs more women. This will give them a chance to see firsthand that they can be an asset in this field and that they can advance just as easily and quickly as their male counterparts. It’s fun watching them progress and advance their skills each week!” I was able to catch them during day four of their semester long program, so the girls were still pretty green – Unlike the carrots, which were purple! New Executive Chef, Andrew Hunter, (whose culinary background is even more impressive than his positive attitude), has only been with Wild Wolf for a little over a month, but couldn’t be a bigger advocate for the program. continued on page 31

“I think this program is amazing and I wish I had something like this when I was younger, it would have been so fun!” Andrew said. “The girls always have huge smiles when they come in. I remember when they came in for the first time, their knife skills were just starting. I’ve had them cut items that we’ve used on specials and in our soups. They have improved in leaps and bounds! Their base skills have improved a lot in the time they’ve been coming. They seem to really enjoy what they’re doing too. They can get their work done and have a fun time doing it.” Ruth lives more on the southern side of the county, but admits it’s worth the trip to attend the twice a week class in Nellysford. “It’s a little bit of a drive for me, but I still like it a lot,” she explains. “I really like working in the kitchen a lot at home. If my mom’s not home I’ll cook dinner, or if she is there I usually help her out some. So, I thought it’d be neat to get experience with actual culinary arts, working in a restaurant”. And although this class may seem pretty cut and dry, these girls are learning much more than just how to peel vegetables. “Being in the kitchen, you have to have trust, no matter what you’re doing, where you’re doing it, or what time – time being when you’re busy,” explained Chris Jack, the previous Executive Chef who helped instruct the class at its inception. “I trust the guy on this side of me as much as the guy on that side of me. You don’t have to like each other, but you’re gonna end up trusting each other”. It turns out the participants in this program have the opportunity to learn much more than just kitchen skills. “Wild Wolf is very excited to be collaborating with Nelson County High School on this new internship program,” said Mary. “It’s a great opportunity for high school students to be able to experience their potential career choice before they graduate. If they choose to go into Culinary Arts after 1-2 semesters in the program, they will have some great starting knowledge and will be able to advance more quickly in their career.” BRL

A carpenter by day, Clayton Witte is a drummer by night. And apparently a media hustler on the weekends in between gigs with his band, Nefarious Characters, which has been around since 2012. “Yeah, I’m ready now ...” reads his text. For some reason iMessage isn’t working and I’m left wondering if he’s about to lose service driving through one of the hollows. Switching over to riding shotgun to shoot me texts is a good move. So in between the silence, I sift through the band’s bio. Nef Char is made up of three guys: vocalist/electric guitarist James Del Priore from Afton, Jamie McClean of Stuarts Draft on bass, and drummer Clayton from Nellysford. Then my phone beeps. “This is our first album called Aight Den.” That should auto correct to Alrighty Then but if you’ve ever seen Billy Bob Thornton’s Sling Blade, you know Siri meant Aight Den. “We’ve been working on it for about a year,” Clayton texts, explaining the group laid down the tracks at The Ante Room in Charlottesville with Terry Martin. Terry Martin. That name sounds familiar. “He does sound at all the major festivals,” Clayton texts. “You may know of him from the detailing service at the car wash by The Blue Ridge Pig.”
That’s right. Terry details my truck about twice a year. I had heard he was some sort of local sound god worshipped by area musicians. But you can find him near the BBQ joint detailing cars. Aight Den. Nefarious Characters started meeting up at James’ small cabin in Afton playing strictly instrumentals but soon learned that their bar crowd likes a few words here and there. Well up in the treetops, they’re running wild Semi-deadly plot with that devious smile They’re up next to the mountain like a voodoo chile Coming to your house now, in single file That’s from a single called “Voodoo Squirrel Gravy.” Aight Den. Listeners describe the group as a rowdy mountain funk band that dabbles in funk, hip-hop, jam and rock. But surely the soul of the group’s debut CD derives from that Billy Bob Thorntonesque philosophy. More Clayton texts: “A bird takes a dump on your shoulder.” Aight Den. “It’s gonna rain today.” Aight Den. “It’s gonna rain tomorrow.” Aight Den. And on November 18 at Basic City Brewing in Waynesboro, the band is throwing a CD release party for its fans and anyone else who happens to stumble in for a brew. So as you clutch your pint and feel the pounding beat from the drummer, know that it comes from a man whose heavily-inked body wields a large hammer by day. A man whose heros are Buddy Miles and Dave Lombardo of Slayer. A man whose beard is soaked with fresh sarcasm. “The reason they should worship me is because you can put any rhythm in front of me: funk, metal, country, you name it. And I’ll make that (naughty word for feces) sound good and I’m just a cool dude once you get to know me!” Alrighty then. BRL NOVEMBER 2017

The Art of the Move The last three months have been the hardest, non-medical related jaunt I have ever experienced in my life. I moved. Along with a wife, two children, four dogs, six cats, three horses, eighteen chickens, two ducks, 15,900 plants … Okay, you get it. Aside from the usual keep it/throw it away/ clean up associated with a move, this move really tested every ounce of design in my soul since time was critical. A Design/Architecture degree couldn’t have even begun to prepare me for what was to follow. It takes a lifetime of association with antiques, plants and rural terrain to really prepare the mind for what arose in the next 90 days. The plan was simple: assess, plan, clear and recover. Arriving with a real estate agent to view an uninhabited property for the first time can be challenging – so much to explore and document in a limited time. My digital Canon and laser were relied on to document that first trip so that I would remember angles, distances, colors, views, layout, issues, etc. The house is a brick ranch, not exactly the house of my dreams, but the foundation and roof were solid. The driveway arrived on the side of the house and ended as a tight, circular drive that only a VW could negotiate. Large fragile trees, some with split leaders, flanked the house on the front and back. The surrounding grades near the structure moved water towards the foundation. Lastly, vines and trash trees were overgrown around all of the surrounding out buildings, concentrating high humidity and debris on roofs and siding. The house and surrounding area were in CAD within 48 hours of the first visit – well ahead of any offer to purchase the house. The plan was to spend money on issues that presented the maximum impact for the money. Transforming the classic brick ranch involved adding multiple oppos-
ing gables contradicting the typical 1-dimensional layout of the structure. A second floor master bedroom was added to pick up the views from the surrounding mountain range. The drive shifted, starting about 200 feet from the structure to slowly move away from the residence and ultimately arrive at the front, with a classic 20+ foot parking area dovetailed with a stone walk. All grades near the residence were cut so water moved effortlessly away. Poorly placed trees and those that had structural issues were removed to both enhance views and protect the newly renovated residence. The tree clearing process is much more than releasing an operator on a bulldozer. Buried in a Virginia pine and paradise forest was a nice collection of hardwoods, including Persimmons and a small orchard, all just needing a little elbow room. All large trees were limbed up with a pole saw to allow for maintenance and enhance the overall shape of the tree. Finally, a selective cut of large deciduous trees that blocked mountain views would be harvested. Old lumber and associated building materials under a dry roof are only created once. The patina they offer is breathtaking. On the property were over a dozen dilapidated structures that were recovered for flooring, exposed beams, shiplap and wainscoting in the renovated residence. Pieces of old rusted tin roofs were laid vertical between old oak siding to create large doors for the barn and constructed shed. Since most of the structures were built at least 75 years ago, all of the nails used in the construction were cut nails – long tapered, rectangular nails popular in early construction. These nails were saved during the demolition process so they could be added back as decoration to the boards from which they were removed.

I was motivated by a friend whose wife had leukemia and needed hundreds of transfusions of blood and blood components before she died from the disease. In the US more than 41,000 blood donations are needed every day – that’s one every 2 seconds! There are many reasons why people need blood. Many people with cancer will need transfusions during their treatment. Sickle cell disease patients can require frequent blood transfusions throughout their lives. A single car accident victim can require many units of blood. This blood cannot be manufactured – it can only come from generous donors. There are four types of transfusable products that can be derived from blood: red cells, platelets, plasma and cryoprecipitate. Typically, two or three of these are produced from a pint of donated whole blood so each donation can help save up to three lives. Donors can give either whole blood or specific blood components only.
Discover Why Donating blood is a simple process. You must be at least 16 years old and weigh at least 110 pounds. Every potential donor is given a miniphysical, checking their temperature, blood pressure, pulse and hemoglobin to ensure it is safe for the donor to give blood. A sterile needle is used only once for each donor and then discarded. The actual blood donation typically takes about 10-15 minutes. The entire process, from the time you arrive to the time you leave, takes about an hour and 15 minutes. A healthy donor may donate red blood cells every 8 weeks. All donated blood is tested for infectious diseases before it can be released to hospitals. Your gift of a blood donation will save lives. Someday another person’s blood donation might save your life. Blood can be donated locally through Virginia Blood Services or the Red Cross. Consider donating blood, you will be glad you did.
