thepublishers The “big girl” bed. Peyton’s been ready for it but it took a while before we found the perfect one: an antique four-poster from Covesville. From the very first night, Peyton settled back into her fluffy pale pink pillows drifting off to sleep with a big fat smile on her face. (I’m thinking of Scarlet O’Hara’s morning after smile from Gone With the Wind though the context is severely out of whack.) She did this every night for about three weeks. Go to bed happy, wake up happy. Maybe it was the meteoroid that fell in Russia but something happened during deadline week. After tucking in Adam for bed, we’d start on Peyton and she’d begin throwing the biggest Scarlet O’Hara fit you have ever seen. It even caught her brother by surprise. “Peyton! Hey Peyton! What’s the matter, Peyton?” he asked as he stumbled into her room in his jammies. The crying continued. Finding a plush giraffe (Ashley Wilkes?), Adam stuck it in her face. Peyton wailed even louder. The boys exchanged puzzled looks on their faces as this perpetually happy little girl so unhappily pleaded her case not to turn in for the night. “It’s okay, Adam,” Tommy said. “She’s just unhappy.” But the thought bubble over his
head was blunt: She’s being a woman. I couldn’t help but consider the thought myself. After a series of extra hugs and cuddles over several nights, Miss Peyton eventually would wear herself plum out and climb onto her princess bed and pass out. Yes, such episodes can happen with boys, but since Adam had always been such a sound sleeper, we couldn’t help but slip into the “she’s a girl” reasoning. Well, as a human representing that gender, I can tell you that behind every girl’s cries, there is a mind that is processing how people respond to you. Girls become women. basicnecessities By Kay Pfaltz www.basicnecessities.com www.kaypfaltz.com Wines to Beat the Economy, Best wines for $12 or less Each month I try to pique the public’s interest and write about wine. The goal? To educate, perhaps amuse, and ultimately sell wine. That is after all why we’re still here in business and the only way we will continue to be. Yet I find it harder and harder to rhapsodize poetically about wine, expensive bottles most of all, when around the world people are hungry, out of work, or, my own particular cause, animals are dumped, neglected and abused. I still love wine, what it symbolizes, how it brings people together, but I find my days of buying first growth Bordeaux or Grand Cru Burgundy dwindling, if not downright kaput, and perhaps there’s a balance here too—less on wine means more to those in need. The good news is, wine needn’t be pricy to be good and there are excellent inexpensive bottles, expressive of place and not mass produced. So whether wishing to give a little more to charities or just trying to make ends meet, you
can still enjoy a sip or two…even as you write out those checks. The first two wines are made in cooperatives where growers pool their resources allowing their cost, hence our cost, to stay low. Les Petits Roucas – Limestone and clay soils form the base terroir of this wine made from 100 % Sauvignon Blanc, a grape which is sensitive to limestone. Think of Sancerre in the Loire and you have the picture, except here we’re in the hot and sunny Languedoc. Grapes are harvested at night and kept cool with dry ice between the vineyard and the winery, a strategy that allows this wine its beautiful minerality and acidity. The taste is fresh, with loads of grapefruit, lemon and lime. Pair with seafood, goat cheeses (Crottin de Chavignol or St-Maure), Greek salads, steamed mussels, and dream of spring. $10 Domaine de Grange de Payan, Côtes du Rhône – Good Côtes du Rhône for $10? Yes, and, after gazing at the simple yet beautiful ‘mas,’ or farmhouse, on the label, I’m ready to move in. These hard-working folks are trying to make classic Côtes du
Rhône in the style of fifteen years ago. Blackberry, cherry and a hint of cocoa on the nose and cherry fruit on the palate in addition to tannin as the wine is still young. $10 Franco Serra Barbera, 2010 – Barbera’s hallmark nose is cherry, but this Barbera smells more of strawberry and mild spice. The taste is velvety smooth, with a little acidity. It’s a food friendly red, as any Italian wine is really, but feel free to drink it on its own; there’s no bite. $12 Franco Serra Dolcetto, 2010 – Dolcetto means ‘little sweet one’ in Italian and while most Dolcettos do not live up to their moniker in sweetness they offer much more than mere sugar. This example is soft with bright, fresh fruit, a little underlying complexity, leather and light tannins, it will compliment pasta with cream sauce, marinara, or bolognaise, grilled eggplant and sausages, risotto and rice dishes. $12 th Food-lover’s Paris. “A lot of those things that you pick up from being a biology major in college is keeping everything sanitary. The microscope, the slides, you have to keep sanitary,” Tyler said. Now he gets to apply those habits in the real world, cleaning cooked grain to prepare for the next batch of beer. Because of the size of their fermenters, the brothers are double batching at this stage. “Adam will come in and do the first batch, I will come in, take over, make way through his batch and then finish that one, then do the second batch,” Tyler explained. Though both Tyler and Adam brew beer, Adam focuses a bit more on the management side of the business. Jason, a third brother, is out doing sales. And so far, they’ve been well-received locally. “As far as Harrisonburg goes, most every restaurant that isn’t a chain we’re in. Any locally owned type of restaurant, we’ve been in most of them since December 21st when we released.” The brothers began brewing as a company December 1 but the planning process had begun a year before that. They began work on their building in October, and their goal is to have their tasting room up and running this spring. Though several breweries along the Brew Ridge Trail offer on-site meals (think Blue Mountain, Devils Backbone and Wild Wolf in Nelson County), don’t expect Three Brothers to open up as an eatery. “But we are trying to interface with a lot of restaurants and food trucks and things like that to have food available here,” Adam explained.

When it comes to forming those local food relationships, the brothers are ahead of the game. Sourcing local ingredients, which isn’t easy, represents only a portion of the brewing cycle. Adam says Three Brothers wants to do more than donate grain to local farmers. “We try to go a little beyond that. Our yeast, we’re working on getting it to a trout farm. That way the yeast is going to good use.” Furthermore, it would keep it out of the city’s waste water treatment facility. The hops, he says, might end up going to local chicken farmers since its nutritional content is about “the equivalent of alfalfa.” Three Brothers is hoping to add a brew every season that uses a local ingredient. “Right now, we’re doing a Coffee brown and a Southern English Brown blended with locally roasted beans [from] Lucas Roasting out of Broadway.” Also on tap is an 8.4% IPA called The Admiral (he’s in charge). Then there’s Elementary – Robust Porter (big and bold). The brewery’s Hoptimization IPA is an American-styled IPA boasting a “citrusy aroma and serious bite.” After a long day, the brothers can enjoy the reward of drinking the fruits of their labor. “We are specifically trying to keep it as natural as we can without having additional filtration, chemicals, pasteurization,” Adam said. Your muscles ache. Your wallet is thin. If only you could barter your way to a massage. Done. “Life is more than just money. It’s about creating relationships. Special relationships are non-money based,” said hOUR Economy member Gerry Stowers, owner of Stauntonbased Meditation in Motion Massage. Gerry traded an hour of massage for an hour of nutrition research from colleague and hOUR Economy member Joy Boardman. “The people that are part of it have a different mentality,” Joy explained. “It’s not all about money. It’s not all about what can I get from this. It’s not monetary. What can I give? What are my talents? What are my strengths?” And for many small businesses starting out, access to cash through traditional lending channels can be tough. Bartering services is a way around it. “As small business owners, they need to get started, but they can’t get that financing from a bank and it may be the kind of services where they don’t want to be borrowing money,” explains hOUR Economy founder Meghan Williamson. “There may be other much more exciting relationship-based ways for them to get those services. That’s what the hOUR Economy is about.” The project, which got some seed money from the Staunton Creative Community Fund, is essentially a webbased time bank where members provide services within the network and transactions are kept online. Instead of money, the currency used for payment are hOURs. “When I explored hOUR Economy, the basic massage price for anything is about 70 dollars. Who can afford that?” said Gerry. “ That’s a lot. Confessions of a DUMPSTER QUEEN by LYNN COFFEY
The old adage, “One man’s junk is another man’s treasure” was never wasted on me. I’ve always had a strange compulsion to root through junk, salvaging cast-offs to put to good use. While others refer to it as scrounging I like to think of it as the ultimate recycling effort. It began as a child when accompanying my dad to the local dump when he’d let me poke around with a stick, uncovering all sorts of “good junk.” Sometimes Daddy would let me take an object d’art home if I promised to keep it out of sight of my mother. The habit continued through adulthood and to my delight, yard sales and flea markets took off, making my obsession somewhat more socially acceptable. The ten years I lived in Richmond before moving to the mountains were dry years as far as junk was concerned. The garbage man came twice weekly and hauled off our trash to some unknown destination. But I discovered Caravatti’s; a family-owned wrecking yard containing acres of old claw foot bathtubs, stained glass church windows, brass door knobs and the like. I spent many Saturday mornings plundering through vintage salvage there. Moving to Love, I was introduced to the Sherando dumpster, so-

cial hub of the community. You saw nearly everyone you knew at the dumpster, especially on the weekends when people met to get rid of their week’s trash. I found out early that the good stuff was stashed alongside the left side of the dumpster, making it easier to look through, for anyone clearly interested. The first week we lived here I salvaged four years of National Geographic and an album of old 78 records. Thanks to dumpster shopping, my daughter and I spent the first winter reading quality material and listening to Patsy Cline, Gene Autrey, and Hank Williams’ greatest hits. My second foray was after dark when I heard a scuffling, scraping noise coming from the depths of the metal waste container. Peering over the side, a large blue tick hound was trying his best to climb up the side to freedom, without success. I leaned way over, grabbed hold of his collar and gave one mighty tug. Up he came, slightly soiled but triumphant with a huge ham bone clamped firmly in his jaw. He shook off and wagged his tail a few times before gathering his dignity and his bone and heading off into the night. Probably the oddest object I carted home was someone’s amateur attempt at home-taxidermy. It was a pretty sad looking 8-point buck with its head cavity filled with plaster of Paris. I wanted the horns to make bone buttons but had no way to cut them off so I took the entire deer head home and hung it on a tree by our barn. After I had cut the antlers off I left the rest of the animal hanging on the tree and over a period of time the plaster in the head softened and it began a slow descent down the tree. The glass eyes popped out and it began to have a grim, sideways smile that bothered me the more I looked at it. Like the movie, Psycho. Ultimately I ended up taking the whole thing back to the dumpster but was richer in bone buttons for years to come. Being a scrounger isn’t really what you’d like the entire free world to know as one of your character traits, especially if you are dating a nice, traditional man. The first time Billy and I went to the dumpster together before we married, I stopped to throw a bag of household trash in the container. On my way back to his truck, a shiny object caught my eye. There on the left side of the dumpster was a decorative medicine cabinet, complete with beveled mirror. I pretended to look at it for a second or two, very nonchalant-like, but in my heart I wanted that cabinet. Dilemma time: Did I want to take the chance of revealing to my beloved I had this garbage-picker flaw or simply forget the cabinet in the name of love? I looked back at Billy and a wide grin began to spread across his face as he said, “Why don’t you just get the thing and put it in the back of the pickup?” At that moment I knew I had found the right man to marry and scrounge happily ever after with ... Oh where, oh where, is that home buyer? Sellers can do a lot of things right and still miss the boat when it comes to attracting a buyer for their home. You can properly price the home. You can get it in pristine condition. You can even “primp and fluff” it so that any home stager would be proud. However, if you don’t get your home in front of the actual buyers, all that hard work will not necessarily generate a SOLD sign. I constantly preach the three key elements of selling a home… price, condition, and marketing. When you place the home on the “market”, make sure that you have a “marketing” plan. This is not a novel concept, yet it does not get the due diligence it needs. When selecting the right agent, don’t just hire based on relationships (family member, friend, or acquaintance), hire based on a marketing plan. If you want to get your home in front of buyers, consider these buyer

facts as reported by The 2012 National Association of Realtors Profile of Home Buyers and Sellers. Home purchasing resources; Buyers use a wide variety of resources in searching for a home: 90 percent use the Internet, 87 percent rely on real estate agents, 53 percent yard signs, 45 percent attend open houses and 27 percent look at print or newspaper ads. Although buyers also use other resources, they generally start the search process online and then contact an agent. First point of contact; When asked where buyers first learned about the home that they actually purchased, 42 percent of buyers said the Internet; 34 percent from a real estate agent; 10 percent from a yard sign or open house; 6 percent from a friend, neighbor or relative; 5 percent from a home builder; 2 percent directly from the seller; 1 percent
from a print or newspaper ad. This is worth recapping... 42 percent of buyers first learned of the home that they purchased from the internet, while only 1 percent of buyers first learned about their home from a print publication. Print advertising should not be ignored, but it should not be the primary focus of your agent’s marketing efforts. Most popular internet resources; Since so many buyers rely on the internet as a primary source of information, where exactly are they going online? Local multiple listing service web sites, such as Charlottesville Area Association of Realtors, were the most popular Internet resource, used by 54 percent of buyers; followed by Realtor.com at 45 percent; real estate agent websites at 47 percent; real estate company sites at 39 percent; other websites with real estate listings at 27 percent; search engine sites at 19 percent and other

when in PINEY RIVER, eat like the FRENCH Celebrating its 55th Annual Chitterlings Dinner with a packed (fire) house, the Piney River Volunteer Fire Department advertised the event with these words: “Come help support the Fire Department. You don’t have to eat Chitlins”. In France, “Tricandilles,” more commonly and slightly less eloquently known as pig intestines, are boiled and grilled and considered a pricey dish. Here in Nelson County, “Chitterlings,” frequently pronounced, “Chitlins,” are battered and fried and smothered in hot sauce. Originally from Wingina, Jack Robertson drove three hours from his current home in Tappahanock for a plate piled high with chitlins. “I started at about eight or ten years old,” said Jack, “I didn’t back off a nothin’.” 26

Slightly less adventurous was volunteer Ronnie Wood, who was found manning the water, sweet tea, and lemonade coolers located a few yards away from the fried foods. Born and raised in Piney River, this event is a tradition. “I been down here parking cars [for the Fire Dept.] since, god I don’t even know how many years ago. Been a long time, but I can’t tell you exactly what age it was”.
It was only after a little gabbing around the water coolers that Ronnie Wood and a Mr. A.D. Massie convinced me to try my first bites of this swanky dish. I eventually, but reluctantly, handed over my camera, knowing the potential for capturing a priceless facial expression outweighed my fear of actually eating a couple bites of fried pig intestines. Stephanie White had been shuttling her daughter, now 19, from doctor to doctor for about 5 to 6 years before stumbling into the owner of an herb shop in Charlottesville who told her, ‘You know what, you should really take her off gluten.’ Bingo. Gluten, the protein composite that gives dough its elasticity, was wreaking havoc on Stephanie’s daughter’s body. As fortunate as they were in finding the trigger for her brain fog and gut issues, until recently, living in a gluten-dominant world was pretty much a bummer if you were a kid. Think about it. Every time Stephanie’s daughter was invited to a birthday party, she’d have to bring along something gluten-free. It got to the point that

Stephanie began volunteering to bake the treats and little did people know, the gluten was gone but the flavor remained. “I just started tinkering and fell in love with baking gluten free, which is like kitchen chemistry,” Stephanie said. As a show of support, Stephanie immediately went gluten-free once she figured out that’s what was ailing her daughter. “Then I had all kind of self issues clear up. I said, ‘Oh my God, I’m allergic to it too!’” It took a while for Stephanie’s sister, Sue Gass, to come around. But once the sisters decided to turn this hobby into a business, Sue took the plunge. “I was having a lot of pain in my joints and
she convinced me to try it,” Sue said. “I always thought it would be so hard to do. But it’s not really hard at all. Then when you feel better, it’s really not hard to stay.” Sue has been off of gluten for nine months. As is the case with many businesses, this one started from home. Sue has a dedicated gluten-free kitchen. Though she has a day job, she and Stephanie, a neurofeedback practitioner with a more flexible schedule, come together in their free time to cook. Their granola, brownies and coffee cake are some of their best sellers. Not to mention they have four flavors of ice cream cookie sandwiches. The sisters have plans to introduce a line of gluten-free,
dairy-free and sugar-free products, as well. Stevie G’s baked goods are distributed to about ten different locations in and around Crozet. And there’s word Whole Foods – which already stocks their items in Charlottesville and Richmond – wants them in Virginia Beach. No matter how big they might get, for now, the business is still very much in the family. Stephanie’s daughter, who likes chocolate cake, had bitten into a cupcake and said, “Awww ... it doesn’t get any better than this!” It made for a great slogan, but it’s more than that, Stephanie said. “I wanted it to be that experience for people who can’t eat gluten.” BRL

Bowling for Color Seasonal color does not have to be back breaking work. We often think of seasonal color as hours of digging, planting, watering, re-mulching and cleaning up several times a year as we keep up with plants that will thrive in current season. However, color in the garden does not have to be planted in the ground. Strategically placed containers with an ensemble of color can be just as impacting with half the work. I always think large when I get into color bowls. Look at it this way, the larger the bowl, the less frequently you are dragging out the hose to water AND the greater the impact on your garden, porch, deck or patio area. My minimum size is 15 inches in diameter with at least an equal height or greater - I prefer greater. I like the bowls that have the more simple lines – no animals or other complex inscriptions on the sides. In the end, I want the plants to talk and not the bowl. Be certain that the bowl you choose has adequate drainage since some manufacturers require you to drill the container before planting. What goes in before the plants is equally important as the plants themselves. Before any soil or plants go in, I typically add in a layer of large gravel (#57 is the size that I use) – about 2 inches deep. After I put in the gravel, I add in a piece of weed fabric on top of the gravel to keep the soil from mixing with the stone. This will ensure that your bowl has adequate drainage. Aside from drainage, gravel also acts a counterweight to aid in keeping the bowl upright during high winds. For taller bowls, add more gravel. At the local garden center you may either buy a potting soil that already has a gel in it for retaining moisture or buy raw potting soil and decide whether or not to add your own gel.
Gel is not necessary but it cuts down on watering. Miracle Gro offers one called Moisture Control Potting Mix. If you can’t find this one, get your potting soil and then look for a product called Quench – a starch based (natural) additive that aids in moisture retention in bowls and garden beds. There will be instructions on the soil to gel ratio. Although I have read some mixed reviews on this material, we have had excellent success here at the greenhouses with similar products, reducing watering by as much as 50%. Now for the plants. The only rule of thumb that we use here and with our clients is to use layers – high, medium and low/cascading. We typically go for height in the back (or middle of the pot depending on placement in the landscape) then a medium height surrounding the high one and then the cascading plants to the front. Although color is color, we try to use complimentary colors so that all of the plants in the bowl have foliage or blooms that work well with each other. Adding green or colored foliage plants that never bloom like tall ferns, Persian Shield Strobilanthes or even a small woody shrub like Variegated Aucuba is always a bonus since their impact is long lasting. Look for blooming plants that provide continuous color such as self cleaning petunias or colorful lantana. Again, think seasonal. Plants that thrive in the cool spring may not work in 85 degree summer heat. Plant your spring bowl and plan on possibly changing out the plants for summer and fall. Lastly, fertilize with a slow release fertilizer such as osmocote which is a pellet applied on top of the soil at planting and then liquid feed at least twice a week (Miracle Gro). Proper planting and feeding of plants makes for a healthy plant and that is the best pesticide on the market.

It removes harmful substances and processes what you eat and drink into energy and nutrients. It is normal for the liver to contain some fat, but the liver can contain too much fat. This is referred to as a fatty liver. Sometimes this is caused by alcohol and the treatment is to stop drinking. More often it is not related to alcohol and is called Non-Alcoholic Fatty Liver Disease (NAFLD.) NAFLD tends to be seen in people who are overweight or obese, or who have diabetes, high cholesterol or high triglycerides. However, it can be seen in people without these conditions. Up to 25% of Americans have NAFLD. Usually there are no symptoms related to fatty liver. It is usually suspected when liver blood tests are abnormal. Often an ultrasound can show fatty liver. It is important that other serious liver diseases are
ruled out. Sometimes the fat in the liver will cause liver cells to swell and may cause scarring of the liver and cirrhosis. This is known as NonAlcoholic SteatoHepatitis (NASH.) This occurs most often in people between 40 and 60 years old and is more common in women. It is one of the leading causes of cirrhosis in the US. The number of people diagnosed with NAFLD and NASH is increasing. This is due to the worsening obesity epidemic in this country. As with many other illnesses, the main prevention and treatment are related to a healthy lifestyle. It is important to eat a well balanced diet and exercise regularly. Excessive alcohol intake should be avoided. If your doctor finds that you have a fatty liver be sure to take it seriously to decrease the risk of serious complications.
