FROM THE EDITOR

t’s that time of the year again. It’s time to get back to school, back to the grind, and on the move. While some people dread the coming of those lengthy school days, I somewhat enjoyed those times of getting back into a routine. I think it all boiled down to loving the tradition of going to the store and buying all new school supplies. From selecting the perfect pens to get my year started to organizing binders and folders for each class, I loved getting everything into its assigned place DQG UHDG\ IRU WKH Ă€UVW GD\ ,I , ZHUH OXFN\ , FRXOG WDON P\ PRP into buying a new backpack; and if that were the case, I was more than prepared once the beginning of August rolled around. Mike & Dr. Eddie I

t didn’t start out as a joke, but it set itself up way too easily. And thank goodness the guys that the joke was on took it in VWULGH DOWKRXJK DW Ă€UVW WKH\ ZHUH DJLWDWHG DW EHLQJ ´KDG Âľ Feeding minerals to cows is as much an art as a science. One has to know or at least imagine what those needs are at any given time of the year and then present the product in a fashion that the cows will actually consume. Regulating the quantity consumed is tricky, too. So quite a number of feeding stations may be required for all the animals to get what they need. Besides salt, there are granular minerals and tubs holding molasses-based product. The tubs can get rained on, and the cows will still lick them, but the granular stuff needs to stay dry. Duke had a bunch of plastic culverts about thirty inches in diDPHWHU DQG DERXW WKLUW\ VL[ LQFKHV ORQJ 7KH\ KDG EHHQ WKH ´FRUHVÂľ for rolls of plastic poly pipe and had started to stack up. He had the brainstorm of using them for mineral feeders and set about building a bunch of them. Laid on their sides, they will shed rain; and it is pretty hard to destroy something made out of plastic. So all that is needed is to build a cradle for each culvert and block off the bottoms of both ends so the minerals don’t run out. Cows will reach in and get what they want, and everybody is happy. Mike Piazza saw our feeders and wanted to copy them. No problem. He’d just take the measurements and cut them out. He Page 12 { August 2015 { Bluffs & Bayous

even had some double-walled culvert to use, so he didn’t have to buy that. Dr. Eddie in Port Gibson heard about the feeders and wanted some. He had a bunch of junk lumber. So he and Mike JRW WRJHWKHU SRROHG WKHLU UHVRXUFHV DQG EXLOW Ă€IWHHQ RU WZHQW\ XQLWV ,W WRRN TXLWH D ELW RI VDZLQJ GULOOLQJ Ă€WWLQJ DQG FLSKHULQJ but they knocked it out, and Mike called to let me know when WKH\ KDG Ă€QLVKHG Of course, I knew how much trouble they had gone to, how much wood they had used, how much culvert material had been cut up, and how much time it had taken. So when Mike proudly announced that they were done, I asked if he had talked to Duke lately. “No, why?â€? “Man, they have been having hell with those feeders!â€? “Why? What’s the matter?â€? Mike had an edge of nervousness in his voice. “Well, we noticed that the cattle started to get a skin condition WKDW ZH FRXOGQ¡W Ă€JXUH RXW $OO RI WKHLU QHFNV VWDUWHG WR VORXJK RII skin and get irritated. All the hair was coming off the hide on their necks. We thought it was some kind of insect. It was happening in ALL of the pastures on ALL of the farms. It was happening across ALL breeds, but the calves weren’t being affected. We had to medicate a bunch of cattle, and THAT wasn’t fun or easy. Finally, we Ă€JXUHG RXW WKDW LW ZDV WKRVH IHHGHUV WKDW FDXVHG WKH SUREOHP Âľ

Mike and Dr. Eddie were the proud owners of an immense problem that they had constructed. I let the news soak in for a few seconds. Finally, Mike asked, “How are the feeders the problem, now that I have a yard full of them?â€? “Well, it’s like this. When the cow sticks her head in to eat, the rough edge of the culvert rubs on the back of her neck. The more she eats the worse it gets. That’s ZK\ ZH GLGQ¡W QRWLFH LW DW Ă€UVW LW WRRN about a month to show up, and then we had to scratch our heads for another couple months over what the problem was.â€? Mike said something that I’m pretty sure would raise his priest’s eyebrows. Actually, he said it several times! Also, something about a “great big waste of timeâ€? and a few other comments that won’t go on the record. Mike hung up and told Dr. Eddie about the problem they had engineered. After commiserating for an hour, Dr. Eddie jumped in his truck and drove to his clinic and got an electric branding iron. For WKH QH[W IRXU KRXUV KH VDW DW WKH HQGV RI each mineral feeder and melted the rough edges of the plastic so it wouldn’t cut the cows’ necks. He’d say, “It’s so smoothâ€?; and he’d run his hand on it to check for any missed spots. Mike called to report that the problem was solved or resolved and what they’d done about it. I couldn’t help but laugh. I had to confess. There never had been a cow with her hair rubbed off. The plastic was not too URXJK $OO WKH IHHGHUV ZHUH Ă€QH DV WKH\ were. FRESH FOOTBALL FARE

ow! Can you believe that summer is almost over and football season is right around the FRUQHU" 2QFH WKH ÀUVW JDPH GD\ DUULYHV if we are not tailgating at the Grove, we are gathered together watching the game on someone’s TV; and we are always surrounded by good things to eat. Below are some easy, breezy dips to make and a tasty FUDZÀVK DQG JULWV FDVVHUROH WR VHUYH WR guests. The casserole would be perfect for a late morning or early afternoon game. So whichever team you are rooting for, gather your friends, prepare these dishes, and get ready for a good time.

Lari got this salad recipe from www.skinnytaste.com. She made it with her husband and children, and they all loved it. This dish provides a great way to use those fresh tomatoes and cucumbers.

CLASSIC CUCUMBER AND TOMATO SALAD 2 tablespoons fresh dill 2 medium cucumbers, peeled and thinly 2 tablespoons balsamic vinegar sliced 1 tablespoon extra-virgin olive oil 2 cups grape or cherry tomatoes, sliced in 1 teaspoon Dijon Mustard half lengthwise 1 teaspoon honey or pure maple syrup 1/2 red onion, thinly sliced VW[PVUHS 1/4 teaspoon black pepper Kosher or sea salt to taste In a large salad bowl, combine cucumbers, tomatoes, and onions. Whisk together the remaining ingredients, pour over cucumber mix, and toss to coat. Serve immediately.

I got this recipe from my friend Nancy Lambert, who adapted it from an episode of The Today Show. This casserole would be perfect not only for a game but also for a Thanksgiving or Christmas brunch.

CRAWFISH AND GRITS CASSEROLE 4 cups chicken broth 1/2 teaspoon salt 1 cup grits 1 cup sharp cheddar cheese, shredded and divided 1 cup Monterey Jack cheese with peppers, shredded 2 tablespoons butter 6 green onions, chopped 1 green bell pepper, chopped 1 garlic clove, minced WHJRHNL MYVaLU JYH^Ă„ZO [HPSZ 0 \Z\HSS` wash and drain them.) 1 10-ounce can Rotel tomatoes Salt and pepper to taste Boil the chicken broth with 1/2 teaspoon of salt. Add the uncooked grits and reduce heat; simmer until cooked. Stir together grits, 3/4 cup of cheddar cheese, and the Monterey Jack cheese. Pour into lightly greased two-quart casserole dish. Sprinkle top with remaining shredded cheddar cheese. Bake at 350 degrees for 30 to 45 minutes.

This recipe is an alternative to salsa. Nancy Lambert got this recipe from her daughter Amy’s friend Melanie.

Another recipe from my friend Nancy Lambert is this one that she found in Southern Living. It is a refreshingly different dip that is delicious with fresh vegetables.

TOMATO BASIL DIP 1 cup mayonnaise 1/2 cup sour cream 1/2 cup fresh basil, chopped 1 tablespoon tomato paste 1 tablespoon lemon zest Mix all ingredients together and serve with fresh vegetables. This is really good with blanched asparagus.

SURPRISE CUPCAKES 1/2 cup granulated sugar 8 ounces cream cheese 1 egg 1 16-ounce package semi-sweet chocolate chips 1 18.25-ounce box chocolate cake mix 1 can pre-made frosting, softened Cream together the sugar and cream cheese. Beat in the egg, stir in chocolate chips, and set aside. Who doesn’t love bacon and tomatoes? My daughter Lari found this recipe several years ago in The Clarion-Ledger; and in the summer, she makes it using fresh tomatoes. It is so yummy and easy.

BLT DIP 1 pound bacon; cooked, drained, and crumbled 1 cup sour cream 1 cup mayonnaise 1 medium tomato, peeled and sliced Mix well and serve with butter crackers or pita chips.

LEGAL NOTES

ike so many other topics that I have written on, the law concerning child custody is also a vast sea of legal precedence with one big twist, its being one of the saddest and most emotional subjects that lawyers address. The reality of child custody has touched almost every person reading this article in some form or fashion, whether it is someone’s own child or a grandchild, niece, or nephew. When a custody battle involves a child of tender years (an inIDQW WKURXJK VL[ \HDUV RI DJH WKH HPRWLRQV DUH SHUKDSV DW WKHLU KHLJKW 7KHUH RIWHQ LV WKH IHDU DOWKRXJK PRVWO\ XQIRXQGHG WKDW should the other parent receive full custody, then the child will somehow suffer at the hands of the custodial parent. 7KHUH DUH EDVLFDOO\ WZR IRUPV RI FXVWRG\ 7KH Ă€UVW RFFXUV ZKHQ one parent or the other receives “full custody,â€? which means that parent has the child the majority of the time and decides health and educational matters on behalf of the child with no input from the noncustodial parent. In most cases, the noncustodial parent has what lawyers call standard-tract visitation, which means overnight visitation every other weekend and maybe a day or two in the middle of the two-week period. In almost all cases, holidays like Christmas, Thanksgiving, and Easter are alternated every year. The other form of child custody is called “joint custody.â€? I believe this is in reality a play on words to make both parents feel better about custody. Even with joint custody, one parent still has primary physical custody, meaning that parent has the child the Page 26 { August 2015 { Bluffs & Bayous

majority of the time with the other parent usually having visitation under the standard-tract schedule described above. Theoretically, both parents have input on education and health matters. The harsh reality of our custody law in Mississippi is that the parent who wins either full custody or primary physical custody under a joint-custody decree may take the child and move to another state far away from the noncustodial parent. I have seen this happen several times. The question becomes how does a court decide which parent gets custody? Hot Weather Tips for Gardening I

t’s pretty easy to grow plants when water is plentiful, and that’s the situation much of the time in Mississippi. But sooner or later, the weather gets hot and dry; and Mississippi gardeners know that we need plants that can thrive in the summer heat. Mississippi gardeners also must know how to keep themselves safe while working in the heat. Working outdoors for any length of time in the hot sun can take a toll on even the hardiest gardener. Anyone working in the garden during the summer months needs to pay attention to the dangers of getting overheated while planting those marigolds. According to data collected by the Centers for Disease Control and Prevention, there have been more than KHDW UHODWHG GHDWKV LQ WKH FRXQWU\ VLQFH 7KHVH GHDWKV RXWQXPEHU IDWDOLties from hurricanes, lightning, tornadoes, and earthquakes combined. When working in the garden during the summer heat, wear sun protection and take water breaks to cool down.

Following some simple advice can help gardeners avoid heat-related problems. Here are some of my tips for summer-season gardening. If you must work during the heat of the day, try one of the new cooling towels. My wife has used one for a while, and she recently bought me one. You wet the towel and snap it, and it magically provides cooling relief. Repeat as needed. They can be worn in GLIIHUHQW FRQÀJXUDWLRQV DQG DOVR SURYLGH VNLQ protection from the sun’s rays. Summer garden chores make me sweat profusely, a condition which is the body’s attempt to cool down. To combat this water loss, I drink plenty of cool—not cold—water, and I don’t wait until I’m thirsty to start. You also need to replace minerals and salts lost through sweat. There are many sports drinks on the market to help with this. Working in the garden also means you need to protect your skin from the sun. In my younger years, like many gardeners, I didn’t pay much attention to the harmful effects of the sun. In the past few years, I’ve had to deal with some skin cancer, so now I wear sunscreen. Another tip is to pace yourself and not work outside during the hottest part of the day. More than a few times, I’ve found myself getting overheated and breathing heavier than I should. Find shade or head into the air conditioning to alleviate these symptoms. Prevention is even better. Restrict garden and landscape activities to the cooler portions of the day, mornings before the sun gets too high and evenings during the setting sun. Just remember to accept the fact that, when gardening in the summer heat, you can’t work as fast or get as much done as you can in cooler seasons. Columnist Dr. Gary R. Bachman is an assistant extension professor of horticulture at Mississippi State University’s Coastal Research and Extension Center in Biloxi, Mississippi.

These games and others added over the years still attract those who want to try their luck or skill at the colorful booths.

Some rides were carefully constructed by members, and others were donated or purchased from carnivals. The beautiful carousel with its ornate, hand-carved horses was the centerpiece of the fairgrounds. Club members were responsible for repairing and repainting the regal horses, and they considered it an honor and a labor of love to do so. Some bids reached over eight thousand dollars; enough money was raised to purchase a more up-to-date aluminum carousel, which is still used today. With the help of volunteer artisans, sand blasters, and dedicated club members, the carousel used now is as beautiful as the original one. Other rides that have passed the test of time are the roller coaster, the twirling swings, the train, the kiddie cars, the Ferris wheel, and the Tilt-a-Whirl. Newer rides have been added to round out the numerous activities for children and adults. Wildlife Sightings Around the World

A

s I have indicated in some of my previous writings, some of the things that are most special to me are the things of nature, especially wildlife. I was thinking about some sightings throughout my travels that stand out in my memory. I have certainly always enjoyed seeing the wildlife that is specially adapted to our area, but I recall the viewing of one animal that you would never see here. When I was visiting Twillingate, Newfoundland, we were told that from the cliff there we could view a pod of whales below. When we arrived at the cliff, it was too foggy to be able to see anything. :H ZHUH YHU\ GLVDSSRLQWHG KRZHYHU ZH ZHQW EDFN WKH QH[W PRUQing and what a beautiful sight awaited us! Three huge icebergs were making their way down south, and the water directly below the cliff seemed to be boiling with the movements of huge grey whales that were submerging, surfacing, and blowing! We also sighted a huge killer whale that cleared the water with his beautiful black and white body silhouetted against the blue skies of the Bering Sea. This sight I was treated to from the ship on my trip to Alaska. Recently, I saw on television that a protest against the war in Iraq was being staged in London in Trafalgar Square. I wondered KRZ RQ HDUWK WKH SURWHVWHUV FRXOG ÀQG URRP WR KDYH LW VLQFH ZKHQ I was there, the pigeons looked as if they had taken the place over. They were everywhere! Once, when I was in Yellowstone National Park, I witnessed a huge grizzly bear, which to my surprise was sort of a blondish FRORU +H VHHPHG WR NQRZ H[DFWO\ ZKHUH KH ZDV JRLQJ DQG KH ZDV paying absolutely no attention to anyone that seemed to be in his way! Before that, while we were on a high plateau there, we saw a huge bull moose. My husband got out of the car to get a picture of him; and since Salvo was on crutches at the time, I couldn’t enjoy watching the moose for fear that if he were to charge, Salvo would not be able to get out of his way! Page 70 { August 2015 { Bluffs & Bayous

In one of my earlier articles, I mentioned seeing a herd of camels in Cairo, Egypt, being driven down the busy streets of the city to the slaughter house. They had been branded and numbered, I was told, to show that they had been inspected, and they were being driven in a herd of about forty. Somewhat different from Rodney, Mississippi! Hanes, Alaska, is known for having the largest concentration of bald eagles in the world. However, having spotted one perched in the top of a snag in our “Fatland Lake,â€? I decided that, when it came to eagles, Alaska didn’t have too much on Rodney! Just more of them! This year, my son, Michael, saw one several times on the grounds behind my home. 7KH 3XIĂ€Q ELUG LV WKH QDWLRQDO ELUG RI 1RYD 6FRWLD 7KHVH ELUGV were very numerous and a most interesting sight to witness. When I visited Australia, I saw kangaroos, kiwi birds, a Tasmanian devil, koala bears, and red deer which are raised for commercial purposes. I, also, saw the rams of the nineteen different species of sheep that are raised there. Of course, these were in a show at the Agridome. There was a girl who wanted her picture taken in front of the stall which held one with an unusually large set of horns. Just as she posed for the picture, the ram took a mouthful of her long, black hair from the back of her head! , KDYH WROG \RX EHIRUH DERXW WKH H[RGXV RI WKRXVDQGV XSRQ WKRXVDQGV RI WKH 0H[LFDQ )UHHWDLO EDWV IURP &DUOVEDG &DYHUQ What a sight! When I was in Gibraltar, we traveled to the top of a very high hill, or mountain, to visit the apes there. It is my understanding that it is not known how the apes made their way from Africa to the Rock of Gibraltar, but there is speculation that it was possibly through a tunnel under the Straight. My memory does not serve me well on what we were told about them; but because of some legend, they are protected there, and the Queen and government of England provide the

funds for their upkeep. We were cautioned that they were wild and not to feed them or attempt to pet them; but there is always one, and this woman was bitten, although not badly, by one of them. Until they are about a year or so old, they do not acquire a sense of balance, are very unsteady, and cannot hold themselves erect. They just wobble and fall all over the place. We spent quite some time watching them and were completely fascinated. Many years ago, I remember seeing a huge snake that, I believe, was in the San Antonio zoo. As I remember it, the snake was about thirty or more feet long and about a foot in diameter. It was coiled up and lying very still. I can’t recall the name of it, but it very likely was an Anaconda. I certainly was impressed with it to be able to remember it after such a long time. Dear Friends: This is my last article for Bluffs & Bayous, and I wish to thank you all for the kind remarks and support that you have given me throughout the years. Because of these, you have encouraged me to continue writing since the publication’s beginning over ten years ago. My good friend Joe Eidt was just beginning the venture when he came to me and asked me to write about the area. I WROG KLP ´-RH , DP QRW TXDOLĂ€HG WR GR ZKDW \RX DUH DVNLQJ me to do.â€? He answered, “Oh, yes, you are. I know you can write because you have written a book. This book he mentioned is, basically, a history of my life and family, primarily written for my children. After a couple of articles about the Rodney area, I told Joe, “You know, when you write two articles about Rodney, you have said about all there is to be said about the area; and if you want me to continue writing, it will have to be about personal experiences. Therefore, in my inept way, I have hung in there. However, I am running the risk of becoming repetitious. I don’t mean that I have even come close to relating all of my life’s events, just the ones that I am permitted to publish! I wish to express my appreciation to Cheryl and Jean, the staff of Bluffs & Bayous, and my readers for their support once again and to wish you all the very best. Sincerely, Freda

OLYHV LQ IDLUO\ FORVH SUR[LPLW\ HYHQ WKRXJK our visiting is limited to just a few times a year. The boat ride is our number one occasion to visit. We lucked out this year since Francis Pugh, the owner of the party barge, decided we should go out in June instead of July or August. June is generally more pleasant, a prime consideration when you’re going to be on a boat in the sunshine. Our chosen day was perfect, weather-wise. Pleasant temperature, blue skies, and gentle breezes were the order of the day. Jan McLain and I picked up our friend, Carolyn Huffman, and drove on down to Francis’s beautiful home on Black River Lake, just a few miles below where I live. To go to her house is a longish trip even though she is only a few miles to the south of me. There just happens to be beautiful Black River between us; so I have to go up to Jonesville, cross the river, then drive back down the other side of Black River to come out about a half mile from my house. Last year, when we were going down to load the boat, we had an incident. The rather steep steps down to the boat were a bit slippery when we started down the walkway. Carolyn slid a bit, but caught KHUVHOI -DQ ZDV QH[W DQG VKH VOLSSHG DV LI she’d stepped on a banana peel. She caught herself to keep from falling in the water, ZKLFK ZRXOG KDYH EHHQ D SDLQ , ZDV QH[W and I held on and walked like Tim Conway going down the slope to the boat, trying not to fall over Jan, who was picking herself XS RII WKH Ă RRU 6RPHKRZ ZH PDQDJHG WR JHW RQ WKH ERDW WKDW GD\ URGH IRU DERXW minutes, and got run back to the bank by a thunderstorm. Not the best of rides. This year, the steps were dry; we were cautious anyway, but we loaded up fairly well. Francis handles the big boat like its D OLWWOH Ă€VKLQJ ERDW VR LW ZDVQ¡W EXW MXVW D little bit before we were out in Black River Lake to begin our journey. We started down the lake, admiring all the camps and homes that have made Black River Lake a very populated area. I can remember when there were practically QR KRXVHV GRZQ WKHUH H[FHSW IRU WKH IDUPers who lived there. Now, there’s barely an open spot between the properties. Just amazing to me. Francis knows everyone down there, who lives where, who is selling out, who

just moved in, etc. I cannot remember the KRXVHV IURP RQH \HDU WR WKH QH[W EXW , don’t have to, for Francis always knows all the pertinent information. In between identifying houses, the talk turns to our families, our troubles, our good times in high school, and the wondering of what ever happened to someone we hadn’t thought of in years. We have been friends for so long that we are more like family than just friends. Well, actually, Francis is my cousin; and Carolyn is, too. $QG , ÀJXUH LI , JR EDFN IDU HQRXJK -DQ and I will have a common ancestor, so we are kin friends. In high school, I was nearsighted with no glasses, and Jan was hard of hearing. We had to cover for each other. If I couldn’t see the classroom chalk board, Jan would read the information to me. If someone asked her a question, I’d let her know that she was being addressed. She couldn’t hear people speaking to her sometimes, and I couldn’t see if someone was trying to get my attention. But she could see, and I could hear, so we had a good team. Now, our Carolyn has vision problems; and Francis’s hearing is sometimes compromised. Jan wears a hearing aid, and I wear strong glasses, and we all make out MXVW ÀQH VLQFH WZR FDQ VHH ZHOO DQG WZR FDQ hear well. Our ride led us down to Cross Bayou, which connects to Horseshoe Lake. We journeyed that way, stopping at a place on Horseshoe to get lunch. After refueling, we headed back to Black River Lake and more sightseeing of beautiful properties. Usually our day ends on Francis’s enclosed porch

where we drink tea and have dessert and keep talking until it’s time to load up the truck and head home. This year, we left Francis’s home early so that we could go to view the traveling Vietnam Memorial Wall in Vidalia, Louisiana. We have four high school friends on that wall, boys whom we had JRQH WR VFKRRO ZLWK IURP WKH ÀUVW JUDGH to graduation, and then they were sent to war. It was a special and emotional time for us to view the Wall and to honor all those many young men and women who gave their lives for a just cause. Our four were

We have gone through high school and college together, married, reared children, taken care of our parents and other loved ones through the years. We have had careers, been faithful church members, contributed to society in many ways. We have had our bad times, too, and suffered tragedies and defeats. But when we are together, we focus on the fun times that we had as girls and the fun that we are still having as a group. We are Jan White McLain, Carolyn Thompson Huffman, Francis Spinks Pugh, and Alma McClure Womack, absolutely and always, friends forever.
