pril has traditionally been our “gardening issue.â€? During March, as we were preparing for the April and nearing our deadline, the springblossoming azaleas, wisteria, Japanese Magnolias, dogwood trees, iris, Knock-out Roses and Lady Banks Roses all are putting on their best show. The lime greens of the new grass and leaves are all popping RXW FUHDWLQJ DQ DUWLVW¡V SDOOHW RI PDJQLĂ€cent color, especially when Mother Nature shares her backdrop of blue sky and sunshine. The “popcornâ€? trees also are bloomLQJ QRZ DQG ZLOO FRQWLQXH WKHLU Ă DLU IRU a few weeks. They are among my favorLWH Ă RZHUV RI WKH VHDVRQ LQ IDFW , ORYH them so much that our April 2016 Bluffs & Bayous cover showcased their splendor. G’s Fare this month features a Spring Brunch with delicious recipes and images of garden spots to soak up the soft sunshine of these springtime days. Brunches are popular parties to offer for all types RI FHOHEUDWLRQV ,Q DGGLWLRQ WR KHU DPD]ing recipes, all tried, served, and shared, Becky Junkin enjoys bringing the outdoors in with her beautiful arrangements. Some of the touches from the brunch accompany G’s Fare this month. 2K , PXVW VKDUH ZLWK \RX VRPH RI WKH beautiful camellias from the Brookhaven Camellia Society’s Fifty-Fifth Show held recently at the Brookhaven Recreational Center in Brookhaven, Mississippi. These images captured by Bill Perkins tempt all of us to include camellias among our VSULQJ SODQWLQJV , KDYH D IHZ ROG RQHV LQ my yard, and they are beautiful. However,

these newer varieties are enticing me to add a few more to my garden. Our April issue also affords a sneak peek into the 28th Season of The Natchez Festival of Music with its early May, Opening Night Gala performance by Mississippi musician Mac McAnally. Krewe of Blooms arren County Master Gardeners made their debut February 11, 2018, as the Krewe of Blooms in the Seventeenth Vicksburg Mardi Gras Parade. Winning Best-in-Show for a Non-Profit, the Krewe of Blooms threw beads and candy during the procession as well as passed out seeds donated by The Flower Center. Tel Duncan provided the trailer and pulled it with his antique tractor. This Mardi Gras celebration was loads of fun on a very cold day!

Chris Maddox Celebrates Retirement fter twelve years as a student and thirty-five years as school secretary and bookkeeper, Chris Maddox celebrated her retirement from Loyd Star Attendance Center in Brookhaven, Mississippi. Among the guests joining in the commemorative event on February 15, 2018, in the library of the school were principals, teachers, co-workers, students, family, and friends.

NGC Junior Gardeners Tea Party Manners he Junior Gardeners of The Natchez Garden Club held their February meeting at the home of Mr. and Mrs. Michael Rinehart in Natchez, Mississippi. Teapots along with demitasse cups and saucers were set out in the living room, and the girls learned how to pour and serve tea. The Junior Gardeners then were instructed on proper place settings for a tea and overall “Table Tea-Party Manners.” The members arranged their individual place settings; and sponsors Eileen Ball, Michele Skates, and Lynn Janette assisted in serving trays of afternoon tea appetizers.

ne of my favorite parties to give is a brunch, for brunches are are so easy and so economical. Also, there are so many options for the brunch. For the entrée, you could choose from Grits and Grillades, Shrimp and Grits, Egg and Sausage Casserole, Eggs Sardou, Eggs Benedict (my favorite but hard to do for a crowd), KDP DQG ELVFXLWV PXIÀQV« WKH OLVW JRHV RQ DQG RQ 0\ IDYRULWH DSpetizer is a signature drink such as a Mimosa, Bloody Mary, Milk Punch, Mojito, Poinsettias (at Christmas), or French 75, or fruited Page 12 { April 2018 { Bluffs & Bayous

This is the favorite brunch drink of one of my sons-in-law, Brandon. It is different from the usual cocktail served at a brunch and is perfect for the spring. The girls and I put the pomegranate seeds in our champagne, but not everyone is a champagne person. This recipe is one serving. I make several and serve from a pitcher rather than by the glass, so you will need to adjust for the number you think you will need. I found this on Pinterest at cookinglsl.com.

POMEGRANATE MOJITO COCKTAIL 1 lime, juiced 8 fresh mint leaves Âź cup pomegranate seeds 2 ounces simple syrup 3 ounces Bacardi white rum 1 cup ice ZVKH ^H[LY VY SPTL Ă…H]VYLK 7LYYPLY VY La Croix) Garnish: pomegranate seeds, mint leaves, or lime wedges In a sturdy glass, add lime juice, mint leaves, pomegranate seeds, simple syrup, and rum. With a muddler or a wooden spoon, muddle to extract juices from mint leaves and pomegranate seeds. Add ice to the glass and top with soda water. Garnish with more pomegranate seed, mint leaves, or lime wedges.

This is one of Clara Nell Brown’s favorite appetizers, and she has shared it with PDQ\ <RX FDQ EX\ WKH FDWÀVK VPRNHG RU even better smoke them yourself. If you do LW \RXUVHOI à DNH WKH ÀVK ZKLOH ZDUP

CATFISH DIP WV\UK ZTVRLK JH[ÄZO ÅHRLK 1 cup good mayonnaise such as Duke’s or Hellman’s /HUKM\S VM ÄULS` JOVWWLK 0[HSPHU WHYZSL` 1 bunch green onions, thinly chopped *H`LUUL WLWWLY HUK 3LH 7LYYPUZ [V taste 1 lemon, juiced (If you like lemon, add more.) In a bowl, mix together mayonnaise, parsley, green onion, seasonings, and lemon juice. Add the mixture to the warm, ÅHRLK ÄZO *OPSS >OLU YLHK` [V ZLY]L put in a pretty bowl and serve with Wheat Thins.

GRITS 1½ cups stone ground grits 3½ cups whole milk 3¼ cups water 1½ teaspoons salt ½ teaspoon white pepper 4 tablespoons butter ½ pound shredded Gouda cheese, NOT smoked In a 1 gallon stockpot, combine milk, water, salt, pepper, and butter. Bring to a low boil over medium-high heat. Add grits and stir well into liquid. Reduce heat to medium low and cover. Cook for 12-14 minutes, stirring occasionally until thickened. Remove from heat and blend in cheese. Adjust seasonings if necessary. Serve a generous portion of grits along with the shrimp.

This recipe has been on the back or side of the Bisquick box for years and is still a favorite. Diane Laird adds cheese to hers which “kicks them up.” These are perfect to serve at a brunch since you add the butter to the biscuits before cooking.

EASY MINI CHEESE MUFFINS 2 cups Bisquick 1 stick butter 1 cup sour cream 1 cup grated cheese (more or less as you want; I use cheddar.) 7YLOLH[ V]LU [V KLNYLLZ >LSS NYLHZL TPUP T\ɉU WHUZ 0U H SHYNL bowl, mix all ingredients just until moist. +YVW L]LUS` PU[V WYLWHYLK T\ɉU [PUZ HSmost to the top. Bake 25 minutes or until lightly brown. Remove from pan and serve immediately.

This recipe found below is so much easier than grillades and much quicker. The only problem is, if you are feeding a crowd, this can get expensive due to the shrimp. It is still one of my favorites for a springtime brunch. If you are feeding a large crowd, you might choose to have someone serve the shrimp because if my family were there, the shrimp would be gone quickly. My daughter-in-law came to us with this recipe, and we have been using it for years. Where it originated has been lost over time, and it has become known simply as Stacey’s Shrimp and Grits.

STACEY’S SHRIMP AND GRITS 2 dozen (21-25 count) shrimp, peeled and deveined ½ cup butter ë J\W YLK ILSS WLWWLY ÄULS` KPJLK ë J\W `LSSV^ ILSS WLWWLY ÄULS` KPJLK ë J\W NYLLU ILSS WLWWLY ÄULS` KPJLK ñ J\W YLK VUPVU ÄULS` KPJLK ñ J\W JLSLY` ÄULS` KPJLK 1 tablespoon garlic, minced ½ cup Andouille sausage, minced ë J\W ÅV\Y 4 cups shrimp stock (I have used seafood stock or clam juice.) ½ cup cream ¼ cup green onions, sliced Salt and pepper to taste (I also add Cajun Seasoning to taste.) In a large sauté pan, heat butter over medium-high heat. Add all vegetables and AndouPSSL :H\[t HIV\[ TPU\[LZ Z[PYYPUN VJJHZPVUHSS` (KK ÅV\Y HUK Z[PY \U[PS ZSPNO[S` NVSKLU minutes. Add shrimp stock one cup at a time, stirring until mixture achieves a sauce-like consistency. Continue adding as much stock as necessary. Add cream, blend well, and bring to a low boil. Add green onions and shrimp, and cook until shrimp curl and turn pink, 3-5 minutes. Season to taste, using salt and pepper. Serve a generous portion of sauce and 4 large shrimp over each portion of grits.


SALAD WITH ASPARAGUS AND CREAMY GARLIC DRESSING Creamy Garlic Dressing 4 cloves garlic 1 teaspoon salt 1 teaspoon freshly ground black pepper ½ teaspoon dry mustard 1 teaspoon Dijon mustard 1 large egg 1 tablespoon fresh lemon juice ¼ cup balsamic vinegar ¼ cup extra virgin olive oil ½ cup vegetable oil Thoroughly blend garlic, salt, pepper, mustards, egg, lemon juice, vinegar and oils. Refrigerate until ready to assemble salad. Salad 3 heads fresh salad greens, washed and dried 1 pound fresh asparagus, blanched, in 1½” pieces 1 medium zucchini, grated 3 red or yellow bell peppers, roasted, peeled, seeded, and chopped ñ J\W Z\UÅV^LY ZLLKZ ^P[OV\[ O\SSZ *VTIPUL SL[[\JL HZWHYHN\Z a\JJOPUP WLWWLYZ HUK Z\UÅV^LY ZLLKZ ;VZZ ^P[O KYLZZPUN

This is a super easy lemon pound cake that I got from Jackie Adams Young. Anything that is easy is right down my alley. I love any recipe WKDW VWDUWV ZLWK D ER[ PL[ DQG ÀQG WKDW LQ VRPH instances it is better than a from-scratch recipe. This would be perfect topped with whipped cream, strawberries, and mint.

LEMON GLAZE 1/3 cup lemon juice 2 cups confectioners powdered sugar 2 tablespoons butter, melted 1 tablespoon water In a medium bowl, combine lemon juice and confectioners sugar. Beat in the melted but[LY HUK [HISLZWVVU VM ^H[LY 7V\Y NSHaL V]LY warm cake. You can poke holes in the cake if you want the glaze down in the cake. Audubon Pilgrimage 2018 Chairman, Homeand-Garden Owners Honored uests gathered at the home of Betsy and Irv Daniel on the evening of Thursday, January 25, to honor 47th Annual Audubon Pilgrimage Chairman, Willia Lemoine Parkerson. Also honored were this year’s home-and-garden owners: Cammie and David Norwood of Woodland; Kelle and Andrew Grezaffi of The Cedars; Julie and Hal Pilcher of Greenwood Plantation; Kora, Grezaffi & Levasseur Capital Management of The Law Office; James K. Dart and David A. Parker II of Ms. Lise’s Cottage; Trish Aleshire of Rosedown Plantation; John House of Oakley Plantation; and Mrs. Morrell Trimble of Afton Villa Gardens. All were recognized for their significant contribution to the annual event recently held on March 16, 17, and 18, 2018. One plant that doesn’t disappoint is sun coleus, and these belong in every garden. These ornamental plants have moved out of the shadows to take their rightful place in the full sun. They thrive in our Mississippi summers. Sun coleus’ colors are rich and diverse with a long-lasting growing season. The foliage is the main focus of each plant, featuring bright colors in many shades of red and purple. Another must-have for the garden and landscape is Cajun hibiscus. These tropical plants have exciting colors with fantastic color selections that range from bright yellows to pink, red, and white. The foliage is dark green and glossy, and it provides a nice background to display the colorful blooms. Respondent Superior: Is the Boss Liable?

,

have always been sympathetic to business owners when an employee who is on the job or conducting company business does something foolish or commits a thoughtless act toward a third party, thereby subjecting the employer to liability. How does one know, as an employer, if the actions of an employee subject the employer to liability when an accident or incident occurs that causes injury? The short answer is that the black letter of the law states, if an employee has an accident while acting in the course and scope of employment, then an employer may be held liable. 7KH DQVZHU WR WKLV TXHVWLRQ FDQ VRPHWLPHV be obvious. For example, if an employee is driving a company vehicle on company time, is engaged in company business, and has an accident causing damage and injury,

liability is a given. Most business owners understand this scenario, and this is why companies carry automobile insurance coverage on their company vehicles. However, what about situations when the actions of an employee are vague as to whether or not the employee is conducting his employer’s business? A case came out in February in which a truck driver pulled into a business to pick up a trailer at the business. An employee of the business knew the driver, and the two started wrestling. The trucker swore he did not start anything with the employee. The employee managed to get the trucker in a bear hug and thereafter threw him onto a set of pallets, injuring the trucker’s back. The trucker claimed permanent disability and sued the business. The court found in this matter that the employer was not liable for its employee’s actions and said the employee was acting outside of the scope of employment. The court also found that, for an employee to be within the scope of employment, four factors in conduct must be shown as follows: ,W LV WKH NLQG RI FRQGXFW KH LV HPSOR\HG WR SHUIRUP ,W RFFXUV VXEVWDQWLDOO\ ZLWKLQ WKH DXWKRUL]HG WLPH DQG VSDFH OLPLWV ,W LV DFWXDWHG DW OHDVW LQ SDUW E\ D SXUSRVH WR VHUYH WKH PDVWHU DQG ,I IRUFH LV LQWHQWLRQDOO\ XVHG E\ WKH VHUvant against another, the use of force is not unexpected by the master. The above horseplay scenario is easy to see under these factors, but let’s look at another type of job that could involve force and harm and could subject an employer to OLDELOLW\ , DP UHIHUULQJ WR VHFXULW\ JXDUGV More and more businesses these days are employing security guards to protect their businesses and patrons. We see security guards at shopping malls, airports, resWDXUDQWV VSHFLDO IXQFWLRQV DQG HYHQWV DQG we will probably be seeing a lot more security guards at schools. However, just so we are clear, the whole purpose of a security guard is to provide protection and to use force, if needed, to stop “bad guys� from

doing “bad things.â€? You often see security guards with guns, mace, batons, and tasers. So, what happens when a person comes into a restaurant/bar and has too much to drink and then becomes disorderly so that a security guard has to intervene? The security guard’s job is to keep the peace and remove unruly patrons. Often times, this reTXLUHV D FHUWDLQ GHJUHH RI IRUFH +RZHYHU WKH TXHVWLRQ DULVHV ZKHUH GRHV DQ HPSOR\er’s liability fall when the drunken patron is injured by the security guard removing him from the premises? Most people’s reaction is, “Well, he should not have been drunk and giving the security guard a hard time.â€? Under this set of circumstances, keeping in mind the four (4) factors, these are QRZ WKH TXHVWLRQV :DV WKH IRUFH XVHG E\ the guard/employee expected or unexpected by the employer? Did the guard just wrestle with the drunken patron causing him to KLW KLV KHDG RQ WKH Ă RRU IUDFWXULQJ KLV VNXOO" Did the guard use too much force? Was the guard, in using his baton on the drunken patron, using too much force? These are tough TXHVWLRQV DQG PD\ UHVXOW LQ LPSRVHG OLDELOity on the part of an employer. What about guns being used at a business by a hired security guard? What does WKDW HPSOR\HU UHTXLUH DQG H[SHFW IURP WKLV JXDUG HPSOR\HH" ,I DQ LQFLGHQW DULVHV DQG force is used by the guard, was this foreseeable by the employer and within the realm of possibilities that the security guard would have to use force? The four factors mentioned above will certainly come into SOD\ , NQRZÂł, KDYH OHIW PRUH TXHVWLRQV than answers. My Thoughts , DP DOO IRU KLULQJ VHFXULW\ guards to protect a business and its patrons. ,I \RX DUH FRQVLGHULQJ WKLV RSWLRQ EH VXUH WR WDON ZLWK DQ DWWRUQH\ DQG ZKDWHYHU \RX GR KDYH D ORW RI LQVXUDQFH

Natchez Festival of Music Opening Night Gala Headliner

Mac McAnally 9-Xs Winner of Country Music Award’s

Musician of the Year erforming artist and musician Mac McAnally will be The Natchez Festival of Music’s Opening Night Gala entertainment on May 5 at the Margaret Martin Performing Arts Center in Natchez, Mississippi. Composer, performer, and master of multiple instruments, McAnally is a nine-time’s winner of Country Music Award’s Musician of the Year and is an active member of Jimmy Buffett’s Coral Reefer Band. Already inducted into the Mississippi Musicians Hall of Fame and the Nashville Songwriters Hall of Fame, he recently was inducted into the Alabama Music Hall of Fame on February 6, 2018. McAnally has written chart-topping songs for Jimmy Buffett, Alabama, Kenny Chesney, Sawyer Brown, Shenandoah. and many others.

Bluffs & Bayous recently enjoyed a phone conversation with Mac McAnally and found him to be an artist who loves what he does, does not feel as if his music writing, traveling, and performing are work, and enjoys sharing his talent with others. McAnally grew up in Tishomingo County in the small town of Belmont, Mississippi, that straddles the Mississippi-Alabama state line. He was born into a music-oriented family. His father, a school teacher, and his mother, a Page 36 { April 2018 { Bluffs & Bayous

gospel piano player, were always hosting several musicians at the house throughout the week. “My mom always instilled in me to “make use of myself� that has always been my outlook on life and in my music,� states McAnally. One example of McAnally’s putting himself to good use occurred in his collaboration with FestivalSouth Symphony Orchestra in Hattiesburg, Mississippi. The project began when Hattiesburg restaurateur and author Robert St. John called him

and asked if he would perform in a charLW\ SURMHFW IRU ([WUD 7DEOH D QRQ SURĂ€W organization committed to ending hunger by providing food pantries and soup kitchens with new and healthy food to feed the hungry in their community. McAnally accepted and the orchestra collaborated for a performance that was so successful that Conductor Jay Dean approached McAnally about making a CD. “The joy of standing in the middle of the orchestra was one of the highlights of

His schedule during March, took him to New York City for the opening of the Jimmy Buffett premier performance of Escape to Margaritaville, and he continues on tour with Jimmy Buffett and the Coral Reefer Band until his early May appearance in Natchez for the opening performance of the month-long Natchez Festival of Music. His performance will include some of the members of the band.

KH %URRNKDYHQ &DPHOOLD 6RFLHW\ D ORFDO RUJDQL]DWLRQ DIÀOLDWHG ZLWK WKH $PHULFDQ Camellia Society, recently held their 55th Annual Camellia Show on February 3, 2018, at the Brookhaven Recreational Center. Show chairmen Homer Richardson and wife Lynn have orchestrated the show, one of the largest in the Southern region, for eighteen years. This year’s event showcased an impressive 791 camellia-bloom entries, up from the average show of around four-hundred entries and despite the adverse effects of two snows and frigid cold weather. Society President Bill Perkins explained that their September and December holiday gatherings were at Woodleigh, the family home, which once belonged to his Uncle Thomas Perkins, who lived there from 1920 to 2000, and now is the home of his mother, Betty Ann Perkins.
