Brighton Pride serves to remind us that we’re one of the brightest and most accepting communities in the UK. It might seem like we dwell on an island being increasingly divided, but for one weekend at least this city can stand united against intolerance and ignorance. But why does it have to be for just a weekend? Diversity in all of its glorious and esoteric forms is what makes us special as a community. Love will conquer hate eventually. Brighton’s most anticipated new tourist attraction will open within days – and tickets are now on sale. The British Airways i360, the world’s tallest moving observation tower, is already creating a huge buzz as it looms in all its futuristic glory over holiday-makers on the Brighton waterfront. From Thurs 4 Aug, visitors will be able to travel up to 450 feet skywards in the firstever vertical cable car, designed by the London Eye architects, to admire the views across the city to the South Downs and along the stunning Sussex coastline. At night, the attraction will transform into the Nyetimber Sky Bar, the most unique bar in the UK, serving a range of locally sourced drinks, including Nyetimber’s award winning sparkling wine. Priority tickets, including priority entry and a complimentary guidebook, are available online for £25. Online advance tickets for children start from £7.50 (under fours are free) and adults from £15.
There are discounts of up to 50% for off peak tickets available to local residents through a membership scheme. The skyline-busting tower is expected to attract a whopping 700,000 to 750,000 sightseers each year, which will make it the most visited paid for attraction in Brighton & Hove. Brighton & Hove City Council is hopeful that the i360 will draw additional investment and act as a catalyst for further seafront regeneration. “It’s attractions like the British Airways i360 that will keep visitors coming to the city time and time again,” Councillor Warren Morgan, Leader of Brighton & Hove City Council, said. “It will generate destination activity all year round, providing new impetus and support for retail, catering, and hotels by attracting an estimated 27,000 to 49,000 additional overnight visitors to the city.” By Dawn Gibson

Become a ward volunteer at your local NHS hospital and devote one morning a week to brighten up a patient's day. As a ward volunteer you would play a vital role in providing companionship and support for patients, allowing staff more time to focus on clinical tasks. Having to stay in hospital can be an isolating experience for patients and having someone to talk to and laugh with can make a big difference. Brighton and Sussex University Hospitals is the major trauma centre for Sussex and the South East and treat over three quarters of a million patients each year. You would be in best hands, as training is offered to all volunteers and the Voluntary Services team and ward staff would support you. Current volunteers describe volunteering as a very rewarding experience for them. “I enjoy my volunteering immensely. It gets me out of the house and gives me a sense of achievement,” says volunteer John Wells. FATTO A MANO TO OPEN NEW RESTAURANT IN HOVE OPENING MID-AUGUST WWW.FATTOAMANOPIZZA.COM Neapolitan pizzeria Fatto a Mano, which opened last summer on London Road to much acclaim, is expanding to a second neighbourhood restaurant on Hove’s Church Road. Its traditional wood-fired pizzas, made using authentic ingredients, and focus on friendly, welcoming service have established Fatto a Mano’s popularity among locals. It was recently voted one of Brighton’s Top 20 Restaurants - the only pizzeria on the list. The new site on the corner of Church and Wilbury Road fits in perfectly with the restaurant’s ethos: great, fresh food at prices accessible to all, walk-in restaurants that are at the heart of a local area. “We’re a local start up, and are building a culture we’ll always be proud of,” says owner Rupert Davidson. “We won’t compromise on the quality of our product. A lot of thought, love and effort will keep going into making the Fatto a Mano experience great for our customers.”
THE BRUNSWICK FESTIVAL SUN 14 AUG & SAT 20 - SUN 21 AUG WWW.BRUNSWICKFESTIVAL.ORG.UK A lively line-up of bands and DJs, a bustling market place and a world of food will be among the attractions as one of the longest running local community festivals celebrates its 35th year this August. This year the Brunswick Festival, organised by a group of volunteers and local residents living in the area, will be held over two big weekends. Highlights include a Rural Day at St Ann’s Well Gardens on Sun 14 Aug, which will feature the popular Scruffs Dog Show along with creative and nature activities for children, puppet shows, arts and crafts, conservation and charity stalls, craft, strolling players and a brass band. Brunswick Festival in the Square will follow on Sat 20 - Sun 21 Aug, a fun-filled family weekend with a free programme of live music, DJs, dance, a spectacular children’s parade, circus skills, puppetry, arts and crafts and magic. The musical lineup includes blues, jazz, rock ‘n’ roll, soul, psychobilly, folk, indie pop and ska, as well as a showcase of young talent. Be sure to visit the community market and world food area with a tea tent, and the Brunswick Tavern tent will be serving real ales, Pimm’s and more. By Dawn Gibson

FOLKLORE, MAGIC AND MYSTERIES: MODERN WITCHCRAFT AND FOLK CULTURE IN BRITAIN UNTIL FRI 30 SEPT PRESTON MANOR
After Valiente passed away in 1999, her last High Priest and friend John Belham-Payne formed the Doreen Valiente Foundation, a charitable organisation with ambitions to share, celebrate, research and preserve her legacy. In 2013, The Centre For Pagan Studies campaigned successfully for a Heritage Blue Plaque to be erected at Tyson Place in Brighton’s Kemptown, Valiente’s home. She posthumously made history by being the first witch to be awarded a blue plaque on her life and achievements. Preston Manor and its surroundings are the perfect destination for a day trip. Where could you better enjoy an exhibition on witchcraft and Paganism than in what happens to be probably Brighton’s most haunted house? At least so I thought before visiting Folklore, Magic and Mysteries – Modern Witchcraft and Folk Culture in Britain, an exhibition in Brighton’s Preston Manor located on the edge of Preston Park. Preston Manor is a beautiful and charming historic house, dedicated to show the life of landed gentry and its previous owners: the Stanford family, who became one of the biggest landowners in Brighton. Its reputation being Brighton’s most haunted house dates back to its days as a private home and is still attracting visitors as well as shows such as Living TV’s Most Haunted! who hope to spot traces of the Lady in White, who is said to have appeared to several guests staying at the Manor. In 1925, Thomas Stanford gifted the house to Brighton where it has then held numerous exhibitions. The current exhibition is rather small, but all the more fascinating. It shows a collection of artefacts, manuscripts and documents that belonged to Doreen Valiente, who is regarded as both mother of modern witchcraft and the most influential woman in this world. Working together with Gerald Brousseau Gardner, they started a movement that is now internationally known as Wicca. Fascinating features include Valiente’s handwritten book of witchcraft rituals, her ‘Book of Shadows’ and a brief history of the people’s connection to the spiritual world, starting with cave wall drawings and leading up to the fact that today, paganism form the seventh largest faith group in the UK.

BRIGHTHELM CENTRE FUNDRAISER FRI 12 AUG BRIGHTHELM CHURCH & COMMUNITY CENTRE A new playground is needed at The Brighthelm Centre and you can help to make it happen. For The Record TV, Brighton Unsigned and Street Diner are organising a charity fundraiser to collect as much money as possible toward the creation of the new playground which will not only be for the pre-school group that uses the centre, but will be opened up to children in the wider community for regular ‘fun days’ and other community engagement events. Starting at 1pm, there will be a free programme of live music in the centre's garden, showing bands such as Matt Murphy, Dr Jam & Mr Alex, Christelle, Tagore Chayne and Jack Evans. To ensure that gig-goers are well fed, Street Diner will be on hand, which also operate Brighton’s hottest street food market in the Brighthelm Gardens every Friday. For the small price of £3, head inside to the centre’s auditorium where from 5:45pm until 11:30pm festivities will continue. The line-up is shaping up nicely with even more headliners to be announced. With good food and entertainment, as well as project outcomes in mind such as protecting and improving biodiversity, increasing community safety and improving access to open spaces by under-represented groups, it promises to be a brilliant day.

Its stars, The Chuckle Brothers (AKA Paul and Barry Elliott), became a TV phenomenon with their unique and universal humour. Receiving the Special Award at the Children’s BAFTAs for their work, this pair have become unlikely British icons. Although Brighton’s clubbing credentials are rarely challenged, there hasn’t been a fitting platform for the full range of musical delights it offers. Now Boundary Brighton is set to represent our small but vibrant local scene. Coming to Stanmer Park on Sat 17 Sept, it’s the product of a collaboration between party promoters LWE, a range of local venues and some of the world’s biggest clubbing brands. “We sat down and had a discussion about it,” says The Arch’s owner, Sammy Verghese. “Looking at LWE’s past events, we thought… well we didn’t think. We jumped on it straight away!” One of the city’s most iconic spaces, dance music history is soaked into every brick of his seafront venue. Now 15 months into its current incarnation, the club has established itself with a string of sell out shows regularly attracting DJs like Carl Cox, Fatboy Slim and Eats Everything. Now Boundary sees their forward-leaning curation teamed with vibrant global clubbing brand elrow. A Barcelona-based club brand famous for crazy, hedonistic parties, elrow is the creation of the Arnau family. They produce unique and immersive experiences which put the fun back into clubbing. Now their special type of magic is coming to town. “There will be a lot of production and a lot of décor. It’s just pure craziness… They’re pretty much the frontrunners in doing this stuff. A festival is an immersive experience, it’s a full day out. You’ve got a field to put on a show to thousands of people, so why not add in stuff that nobody’s doing?” Each of their events uses a different and elaborate theme, totally transforming every venue they come to. This full assault on the senses will be further enhanced by the selection of international talent of The Arch stage. Artists like Seth Troxler, Richy Ahmed and Solardo are all set to unleash the perfect, unforgettable party atmosphere.
Launched in 1982 as a monthly magazine, Mixmag have covered every corner of the dance music spectrum. As a brand they’ve always been associated with leading events across the globe, continually pushing the boundaries with their approach to throwing parties. At the forefront of documenting the electronic music phenomenon, Boundary Brighton sees them team up with legendary venue Concorde 2. This revered local clubbing staple has brought some of the biggest DJs and live bands to Brighton over its 21 years. So it’s fitting these two clubbing institutions are to join forces for the festival. “It’s nice to see a refreshing twist on a festival,” says Concorde 2’s Sam Dixon. “It’s a well thought through line-up. I’m really looking forward to it.” With an eclectic approach to programming, the venue continues to support the grassroots local scene, whilst mixing in some massive international acts. “I’ve worked with LWE up in London,” chimes in Adam Flexer, the C2’s Venue Programmer. “They’ve got a great thinking body behind them. They’re really intent on making this a festival about Brighton. I think the line-up really reflects that, it’s broad and eclectic.” The joint area will feature a beautiful façade, and offer a personal feel different from your normal festival arena. Craig David is to bring his TS5 project to the stage, topping a large line-up of genre-pushing artists. Wilkinson’s huge D‘n’B sound, Bondax’s infusion of R&B, down-tempo and house, and DJ set from Groove Armada and Jungle are all set to rock the Boundary Brighton crowds. “LWE come from a clubbing background, so understand what people want,” Flexer continues. “They’re a market leader in that respect. For a big London promoter to come down to Brighton but be in touch with its scene and involve the local promoters, it breaks down a lot of politics. I agree with their ethos – the stronger we are collectively, the stronger the scene will be.”

As London’s biggest underground event organisers, LWE have made their name by producing parties in unique and unusual locations across the capital. Constantly working to create diverse and immersive experiences, they work with some of the world’s most influential artists and labels. Now their mission is to create something memorable for Brighton & Hove. “It’s not been as simple as coming to town and slapping up a few posters,” says Dixon. “The amount of communication between the venues and the Boundary team is great. We’ve been creating an experience leading up to the event.” Known for great sound, attention to detail, big lighting rigs and impressive special effects, LWE has become a byword for exceptional parties. For next month’s event they’re collaborating with Brighton’s cutting edge venue, Patterns. Regenerated by London’s Mothership Group, this club continues to honour its site’s longstanding musical heritage. Working with promoters and artists on a local and international scale, it has hosted a cutting edge series of events for Brighton. To keep things suitably eclectic, the festival will also see the erection of the Boundary Bandstand overlooking the site on the hillside. It’ll feature a joyful mashup of styles, from reggae and jungle to breaks and turntablism. Here there’ll be a grassroots DIY mentality, featuring artists like the wonderfully eccentric jazz outfit Bob Kerr & His Whoopee Band, or Mr Wilson’s Second Liners – where New Orleans meets 90s rave classics. Bursting with colour and sound, the stage will also host winners from local busker and DJ competitions, with a few international heavyweights popping up in between. Brighton’s defining venues have been brought together, each creating a list of artists which perfectly reflects their distinctiveness. The aim is to create a community-focused, boutique-style festival, which can stand its ground on an international scale. “Conceptually, I can’t believe no one else has done it before,” confides Verghese. “LWE have done it the right way. phantom runners FUTURE POP STARTS HERE Brighton-based Phantom Runners is the latest project from future-pop producer ADAL (Adam Al-Hilali). With influences from Caribou, Years & Years as well as more old-school groove-makers like Michael Jackson, the collaborative project is gaining increasing support from some of today’s leading tastemakers including Radio 1, Balcony TV, Wonderland and Q Magazine. Phantom Runners are back with their new track First Time after a move from an indie-pop band towards more of an alternative-pop collaborative project. Co-produced by John Beck (Delilah, Corinne Bailey Rae, Izzy Bizu), the threeminute track effectively fuses together 80s nostalgia with refreshing electronic beats and Brooke Bailey’s soulful vocals. The song is reminiscent of early Janet Jackson as well as Blood Orange and has rightfully been described by The Line Of Best Fit as “a true pop gem” and by Nylon as boasting “smooth melodies” and “infectious choruses”. Having already played The Great Escape, Blissfields, Berlin, Sound City and Sofar Sounds London this summer, we chatted to Adam Al-Hilali (ADAL) about the inspiration behind the track and plans for the rest of the summer plans. Tell us a bit about the song. What was the inspiration behind it? First Time is about chasing that first feeling you get with someone, that initial rush. It came from a lonely room up in my dad’s old house, on a knackered acoustic. I just put down a really rough idea and five years later we dug it up and laid it over on an electronic 808-drum machine. Brooke Bailey
came in later when we were finishing a late session at the studio. We asked her to vibe out to see what happens, within three minutes she had the vocals nailed, it was pretty cool. What can we expect from the album? The rest of the album will have some 80s and 90s nostalgia in it, but mixed with fresh beats, modern production and some world music influences too. Kind of a soundtrack feel. We will be collaborating with several different female pop artists too, to keep people on ice. Any highlights from the summer so far? Blissfields went off - the bass coming through those speakers was unreal! We streamed it live - it was blowing up on the socials. It got cut short which was a shame, but the response from everyone was awesome. Felt really blessed. What are your plans for the rest of the summer? The rest of the summer we’re going to be hidden away writing in various studios dotted around Berlin, London and Wales, depending where we need to meet to collab, really. We like to switch it up being in different places with new vibes. BIMM START WEEKEND ACADEMIES FOR SEVEN - SIXTEEN YEAR OLDS Music is everywhere in Brighton. It’s the city where The British and Irish Modern Music Institute (BIMM) was founded and continues to offer diplomas and degrees in all manner of courses related to the music industry. The on-going success of BIMM led to the idea that it was time to provide something for Brighton’s younger inhabitants. Aimed at anyone between seven and 16 years, BIMM Academy could take you one step closer to a career in the music industry. Heading up the new academy is former BIMM Brighton student, Alix Penfold. Originally from Middlesbrough, Penfold studied vocals back in 2005. She’s since carved herself a professional career: gigging every week as a vocalist with her band, whilst also creating voice-overs for TV and radio. “If your child would like to learn music in a fun and engaging way - and also to be in a band - then BIMM Academy is the place to be!” she said. “Every week students will learn modern songs taught by experienced tutors using the very latest gear and equipment. Like me, the tutors are all graduates from BIMM, with many years of playing experience as well as industry expertise.” The BIMM Academy is a fun way for a young aspiring musician to spend their Saturday - learning guitar, bass, drums or vocals, practising new skills and meeting interesting likeminded young people. The workshops will be two hours long. For the first hour, students will breakout into groups and learn a chosen song. During the second hour, students come together and take part in a band workshop, putting what they have just learnt, and they perform as a band. During the whole term, academy students will learn between two to three songs. They will also
be taught music theory as well as practical playing skills. The songs are a combination of current rock and pop chart hits, as well as classic tracks which represent all the key genres, including blues, soul and funk. The BIMM tutors are dedicated to ensuring students master their instrument, while also developing performance skills. The workshops will take place on the top floor of the recently renovated Brighton Electric studios, to give a real music and gig sense to the students. Class sizes are kept small, so the emphasis is placed on working at a tailored pace for each student. The BIMM Academy will run 30 weeks of the year, with three 10-week terms. There will be two groups, seven-12 and 13-16 year-olds. At the end of each term, students perform the songs they’ve learnt in front of an audience of fellow students, family, friends and tutors, at the end-of-term showcase. “The central ethos for BIMM Academy is making music fun! Musical learning is a joy in itself. Like learning a language, it unlocks a vocabulary that enables creative expression. Performing music takes musical learning to a whole new level. It brings like-minded people together and creates lasting friendships, develops confidence and increases self-esteem.” Workshops will cater for vocals, guitar, bass and drums. Course fees are £240 per term and the autumn term takes place on Saturdays, from 17 Sept - 3 Dec. One of the greatest uptown-soul acts of the 80s is back on the road. Placing themselves at the classier end of the disco spectrum, these New Yorkers effortlessly swing between up front funkiness and blissedout grooves. Perfectly capturing the vibrant atmosphere of their hometown, the band’s breakthrough single Native New Yorker became one of disco’s most enduring tracks and a floor-filler at the legendary Studio 54. Following that, they built up a strong UK following with singles like Use It Up And Wear It Out, Going Back To My Roots and Inside Out. This band’s contribution to dance music cannot be overstated. Four decades on, their journey continues.
Formed in early 2010, this meditative and explorative Scottish quartet are space cadets of the highest order. This year’s album Rainbowhead offered a master-class in psychedelic experimentation. Their sound is a throbbing vortex of odd noises and drones, the occasional melody surging into the blissed-out chaos. Unafraid to contrast 20-minute long swirling kaleidoscopic sounds, they’re euphorically rewriting the rules for the British psych scene. It’s a hypnotic morass of shamanic weirdness, loaded with effect-laden guitar work and throbbing basslines. Where we are being taken is unclear, but the journey will be packed full of colour.

Two decades after they split, this legendary Connecticut outfit has reunited to celebrate the run up to the 20th anniversary of their final studio album, Portrait of a Damaged Family. With some melodic, beautiful and poignant songwriting, they became US radio darlings during the pre-grunge 90s. Although generally overlooked by the annals of music history, their influence has been felt throughout modern rock. An evershifting personnel situation and terrible luck with record companies both did their bit in shattering the ambitions of this countrytinged four-piece. But now they’re back, with some reissues on the horizon and a will to shine once more. Perhaps this reinvigorated band will find a new chapter starting in their story. Lord knows they deserve it.
Growing up in rural Louisiana and Missouri, preacher’s daughter Barwick developed a fascination for the human voice. Now Brooklyn-based, her studio recordings are patchworks of ethereal and largely wordless soundscapes. Using multiple loops and layers of her angelic voice, she creates a range of emotionally complex and experimental works. The technique might be simple, but the power and beauty of her music almost has the ability to make time stand still. Strings drone, pads soar and her vocals drift in an dout, as each crescendo builds with an eerie sense of longing. Her unique lush production brings a sense of blissful drama to what is essentially modest. Never tied to a specific point in space or time, she is ambient music’s face for the 21st Century.
One of the most acclaimed disco, soul and funk groups to have ever emerged from America, The Fatback Band remain hugely influential. This groovy New York City ensemble have released more than 35 albums and produced countless hits. Their early single King Tim III (Personality Jock) is widely regarded as one of the first-ever commercial rap singles, whilst cuts like (Are You Ready) Do the Bus Stop are believed to have played a part in the furthering of line dancing. As disco pioneers, their numerous dance floor smashes merge New Orleans jazz beats with a touch of Caribbean style. Propelled by a watertight rhythm section, group vocals, pounding horns, scratchy guitars and squelchy synth lines, they create the ultimate good-time groove. Originally featuring early members of Agent Orange and Social Distortion, they’ve undergone a series of breakups, reunions, and line-up changes. Their first break up came in 1981, the same year their self-titled debut LP was released. Packed with raucous energy and quintessential teenage angst, they had an instant connection with a legion of disaffected Californian kids. While the majority of their limited discography was recorded during their first reunion, they still created the blueprint for West-Coast hardcore punk. Now the band’s line-up seems relatively stable, after reforming to celebrate the 20th anniversary of their debut album. But you never know with these punk types…

At the tender age of 14, Annabella Lwin was one of the most photographed, talked about and popular vocalists in the early 80s. Along with her band, Bow Wow Wow, she enjoyed success with massive hits like I Want Candy, Do U Wanna Hold Me?, Go Wild in the Country and C30, C60, C90, Go. Once again performing shows on both sides of the Atlantic, Lwin has also been expanding and employing her talents as a songwriter in commercial, as well as spiritual, directions. She’s worked behind the scenes for global charities like UNICEF and Save the Children Fund, through Buddhist organisation SGI. Her spirituality continues to enhance the celebration of life in her music.
The vehicle for Matt Howden’s mesmeric mix of live loops, searing violin and passionate songs, Sieben is anarchic, singular and thoroughly brilliant. Building percussion layers from odd little noises, then adding repetitive elements and poetic lyrics, his songs quickly take on a sense of the epic. Imagine Nick Cave and Velvet Underground jamming in a downtown Berlin nightclub. That’s a close approximation of this experimental, hypnotic and completely compelling sound. Whilst his composition’s rhythmic beauty is virtually unknown in this country, across Europe he’s becoming increasingly popular. His recordings only tell half the story though. It’s in the live environment where his music truly gets to soar.

There’s a distinctly retro edge to this Minnesota resident’s music. It’s driving, impatient and doom-laden. Although certainly a product of this century, this is a breathtaking and authentic taste of what the blues really are. It all might be a little bewildering to aficionados more obsessed with electric guitars or decipherable lyrics, but you can’t deny the authenticity of his majestic body of work. His world conjures steam-powered visions of long evenings on the front porch; roadhouse shows and being wronged by loved ones. So get ready for a visit to the darkside with Mr Parr, because he’s going to burn this whole town down.

With a fresh, innovative and distinctive sound, perfectly encapsulated by his bangers Battle, Back Up and Scrappy, Wookie is one of the most talented DJ/producers to emerge from the UK underground scene. After a sabbatical from it all, he’s back with renewed inspiration and ready to rock. He’s joined by DJproduction duo Double 99. Formed in 1994, they were among the pioneers of UK Garage. They created a sound that would form the foundations of the scene. Their bass-driven anthems still form an essential part of many a club night - now they’re coming to Patterns to turn up the heat.
SAT 13 AUG PATTERNS WWW.PATTERNSBRIGHTON.COM This veteran Italian has been DJing longer than most of us have been walking. Busy as ever, he’s still smashing it at clubs around Europe and America. During the 70s, he platformed his love of imported disco records during a residency at Baia Degli Angeli (now Baia Imperiale). From punk pioneers to the most exciting alternative bands, Undercover Festival is bringing the cream of underground rock music to the city. It gathers two days of the finest punk, ska, dub, reggae, post punk, alt and ska punk at Brighton Racecourse on Fri 9 – Sat 10 Sept. The unique nature of this venue will lend itself perfectly to the diverse range of music being showcased. “You haven’t seen what we’ve got planned for this festival,” says Undercover’s main man, Mick Moriarty. “The line-up is a really strong blend of established bands from back in the day and a lot of young thriving talent. If you want to see the old stuff or if you want to see a bit of new music, then come along. We think we’ve got something viable and important to show people.” The event’s concept was born out of the ashes of Surrey’s legendary festival, Guilfest. “I was asked to run the Vive Le Rock stage, which was buzzing. We had some great stories, like The Buzzcocks being piggybacked through the mud so they didn’t get their white shoes dirty. But then the festival went belly up, so we decided to do something ourselves.” Undercover found its first home in the unlikely location of the National Shooting Centre at Bisley. Surrounded by gun ranges, the site made for an interesting culture clash between the music fans and gun enthusiasts. “The first year I was walking through the campsite at about 8am. A horn goes off and all this shooting started. We had a lot of punk and ska fans climbing out their tents, screaming: ‘What the hell is that?’ Most of them had only gone to bed at half five that morning,” he laughs.
Looking for a new home, they decided to move Undercover to the south coast. “It feels good that we’re coming to Brighton. We’ve got a very DIY ethos, and we’ve got loads of local people involved in it. We’re going to make it something special.” The event’s new expansion to three stages means they’re able to showcase even more new music amidst the classic acts. This fits perfectly with their ambitions to offer younger bands a platform, help them reach new audiences away from their own scene. Now BN1 Magazine is taking on one of the stages, bringing a range of vibrant new ska and punk bands to the event’s large enthusiastic following. Growing up near Hersham, Moriarty quickly fell in love with punk music and it’s ‘cando’ attitude. Without hesitation, his biggest influence has always been The Clash. “They were political, but they just used to play fucking good music. You’d be pissed off and put one of their CDs on, and your heart would start racing and you’d wake up.” Despite the bad press and a boisterous appearance during its formative years, punk offered a welcoming sense of community. To the fans and musicians, it was more a way of life than a fleeting fashion statement. This original spirit is something Moriarty values dearly. “What we’ve achieved before with Undercover is that a lot of people arrive as strangers and leave as friends. We’re trying to spread that love into Brighton.” He’s proud that few of his bands just pack up and leave after their sets, choosing to get amongst the crowd for a drink and a dance. “You don’t get this with a lot of modern bands. Some of them even treat their fans with contempt.”
There’s an eagerness for both fans and his artists to understand what this festival aims to achieve – create a family of people with shared interests. The impact punk had on modern day music is undeniable. Both the alternative and rave movements owe a massive debt to its DIY spirit. The latter particularly, in its defiance of the establishment and creation of a youth culture away from the mainstream media. And the ‘spirit of 77’ lives on in British music. With music as diverse as the dub fusion of Dreadzone, a boundary-smashing The Selecter and the irrepressible Spizzenergi, Undercover’s busy line-up will be heady riot of sound and flavour. But Moriarty is equally as excited about some of the younger bands on offer. “You’ve got bands like A-M-I, Skaciety and Riskee And The Ridicule from Kent, or from Brighton - Plutonian Fire Brigade. They’re all under 18 and mad as a box of frogs. What they’ve all got is shit-loads of energy and enthusiasm and they want to do it their way, or not at all. That’s why I wanted to bring some of these young bands in. They’re not part of a big machine, but they’re having a go - and they’re brilliant.” If anything the event stands in opposition to certain elements of the ‘independent’ scene, which now seem controlled and anodyne. It offers something a bit more personal, unique and spirited. “We think we’re bringing a special alternative festival to town. Keying into a tradition of challenging pop, Hiatus Kaiyote are following artists like David Bowie, Prince, Pharrell Williams and Stevie Wonder by making intelligent music that remains accessible. “If you listen to Single Ladies, it’s the pinnacle of pop, but if you break it down it’s pretty heavy shit,” says the band’s vocalist and guitarist, Nai Palm. “People have always been exposed to heady stuff, but just not aware they were into it.” She’s having a full on day of press stuff, whizzing across New York in an Uber before grabbing some time to talk to me. Then tonight she has another solo show. It’s just a week before Hiatus Kaiyote’s North American tour begins, which will take them from Lollapalooza to San Francisco and Baltimore. There’s more touring through to late September as well, at which point they’ll head home to Australia and think about working on a third album. “We have a lot of material which hasn’t been recorded, so we’ll be documenting that and coming up with new shit, it’s a combination, but we do have a back catalogue to
tap into and try and execute in the studio. It should be cool.” The rest of the band - bassist Paul Bender, keyboardist Simon Mavin, and drummer Perrin Moss - also keep themselves occupied with a side project called Swooping Duck. Their live improvisational shows throw up a goldmine of ideas. “I do a lot of song-writing when I’m on the road, I can write a whole song and bring it to the boys, or it might be a piece of piano that Simon is working on, or Pez might be working on beat. It’s kind of like anything goes.” Although band members will often write individually, Hiatus Kaiyote is very much a four-way collaboration. Hailing from Melbourne, they were the first ever Australian act to be nominated for an R&B Grammy. They’ve created a progressive and richly varied approach to making modern fusion music. The one thing they can’t be accused of is a lack of ideas or influences. Formed from hundreds of intricate pieces, their sound is like a beautiful and expansive collage. Packed with polyrhythmic time structures, smooth 70s soul experimentation and a healthy helping of funk, it’s a true fission of styles and moods. Their second album, Choose Your Weapon, is mesmerisingly inter-woven with melodies and harmonics. It’s a

shifting, evolving back-catalogue of gifted pop. Being a die-hard music fan certainly helps developing and driving forward such a dynamic sound. “My influences have always been changing. I’ve always been pretty curious about the different contributions of beauty to culture around the world.” With its meticulous detailing and playful atmospheric layers, the band’s trippy funk-soul has courted a global audience and widespread critical acclaim. The band are about to make their second visit to Brighton this year, after comfortably selling out The Old Market back in April.
“As far as the UK goes, it’s always a highlight for us. There are dope record shops, vintage markets and the audiences are always really beautiful.” They return as part of Together The People Festival this month. Taking over Brighton’s Preston Park for a second year, the
event’s amazing line-up welcomes acts like the legendary Brian Wilson, Britpoppers Suede, The Horrors, Peter Hook & The Light, Turin Brakes and Songhoy Blues. Palm is adamant that people are exposed to a lot more music these days, primarily because of the Internet’s unparalleled possibilities as a platform. “Gone are the days when you needed loads of DJs to play your stuff. We definitely owe our connectivity with the rest of the world to the Internet. There’s always been dope music, you don’t have to be so obsessive to disprove it anymore.” It seems they’re touring overseas more than they spend time at home now. From Japan to New York, they’re part of a maturing and progressing international music landscape. The world is increasingly more discerning when choosing music pleasure. “People are less spoon-fed the same generic shit. The world and its inhabitants are fairly confusing, so the jokes come thick and fast. Joining him for the evening is Matt Richardson. He’s a master of storytelling. With witty anecdotes whittled down to a most efficient core and some clever wordplay, he has a skill which belies his relative youth. Ninia Benjamin might seem larger than life, but she’s willing to embrace the most base of all human experience. Proudly unpretentious, she makes even the grubbiest of gags simply hilarious.

He’ll bring a satirical spin on the craziness of British life in these austere times. The best comedian in Milton Keynes, Mark Cram has spent the last few years acquiring a reputation for being clever, fearless and occasionally unpredictable. He sprang to fame on cutting edge TV shows like Not the Nine O’Clock News and Alas Smith and Jones, which attracted massive audiences. With comedy partner Mel Smith, he then went on to form the legendary television company Talkback Productions. This work in progress now sees Jones reflecting on a long career with his much-missed colleague. It’s a ramble through a relationship, packed with musings, anecdotes, reminiscences, half-remembered events previously unseen footage. It’ll tell the story (at least in part) of one of the greatest double acts in British comedy.

Audiences in Worthing have recently been introduced to a new genre of live entertainment, as the theatres have become a home for contemporary circus in their razor sharp Summer of Circus extravaganza. So far the season has taken off with productions that accommodate for all ages, with lots of families experiencing the genre for the first time. They’ve had international circus companies visit especially for the festival, including Australian troupe Trash Test Dummies. Circus giants Jacksons Lane co-produced their opening show The Hogwallops at the Pavilion Theatre, with the company’s Artistic Director Adrian Berry commenting “It’s an astonishing place to be, there’s such a range of great circus companies in one of the most beautiful touring venues we’ve visited.” Now halfway through the season, there’s a lot more in store for people who haven’t had a chance to experience it yet. A wonderful story great for younger audience members, it follows Penguin Blue on his adventure to find his kite, told through a beautiful tale of song and circus. What will really have audiences on the edge of their seats though is Ockham’s Razor who will be presenting their triple bill Arc, Every Action and Memento Mori. Ranked in Time Out’s top five circus shows at the Edinburgh Fringe, this triple bill will exhibit aerial and physical theatre, with completely original pieces of equipment. Stories unfold from the vulnerability, trust and reliance that exist between people in the air. The name Ockham’s Razor comes from a logical principle attributed to the medieval philosopher William of Ockham. It states that between two plausible theories, the simpler is preferable. It is called a razor because it cuts out unnecessary elements. As a company, they work with this simple
approach. “It’s been brilliant to be able to dedicate a season to such an exciting, nontraditional form of theatre,” said Worthing Theatre’s Head of Culture, Amanda O’Reilly. “The reaction has been really great and Worthing is now being recognised as the leading location in Sussex for contemporary circus.” Ockham’s Razor will close the Summer of Circus on Fri 16 – Sat 17 Sept at Worthing’s Pavilion Theatre. baRclays Eagle labs You may have seen the ad campaigns on TV or online featuring the Barclays Digital Eagles saving the day for the digitally challenged users... and old people. Well, now Barclays have gone one step further and rolled out the Barclays Eagle Labs across the country in some of its redundant bank premises. One of the five has landed in Brighton at Preston Circus. This future thinking, community focused set-up is to create a ‘maker space’ for anyone to use, to help generate project ideas, implement creativity and help grow your business and offer advice. The typical equipment you can find in an Eagle Lab comprises of a laser cutter (one of the amazing new devices we got to use), a vinyl cutting and heat press machine, and a 3D printer. There are also on-site experts, workspaces for hire, presentation areas, meeting rooms and other facilities. The use of a 3D printing machine, vinyl cutting and laser cutting devices all on our doorstep massively appealed to us, so we ventured down to the Eagle Labs to meet Jon Paterson to see how it all works and seize the opportunity to craft some of our own promo products. 3D printing can be useful for all sorts of project samples, helping to create intricate parts or small models. If you have an idea for a product and want to make a prototype, booking is easy, though requires an induction on your first visit. The price is pretty reasonable too, setting you back just £17.50 per 30 minutes. Other uses include making moulds for products, parts for robots or other devices, or simply creating a cool figurine/toy. The level of detail is immense. One suggested idea was to make scans of your work colleagues (head to toe) then print out miniature versions to display in the office or on the mantel piece... pointless but fun!
Have you ever wanted to create your own branded clothing range or put stupid slogans on t-shirts? We thought this would be a good opportunity to make some of our own branded wear using the vinyl cutting machine and heat press. This was fiddly at first but ultimately great fun, with our own BN1 branded promo tops to boot. Although we had fun making BN1 clothing, there’s lots of other uses for vinyl, including signage on buildings and/ or vehicles, preparing stencils for artwork or make maps for other intricate work. A turn on the cutter costs £15 per 30 minutes and you have to provide your own clothing as a base for your design. Primark is a good suggestion! Lastly we tried out the laser-cutting machine. We decided to cut thousands of branded BN1 etched keyrings (as seen above), cut out of a piece of transparent orange acrylic, that also doubles up as a shopping trolley release (instead of using a pound coin). Something everyone needs once in a while, all at a reasonable cost. Equipment hire on this beast will set you back £27.50 per 30 minutes. The process took several hours but the end product was worth it, looking cool and slightly retro. So if you see someone handing out orange BN1 keyrings at events, be sure to grab them while you can, they’ll no doubt become collector items in no time! There are plenty of imaginative opportunities and ideas that anyone can do, so pop on down to the Eagle Labs at Preston Circus and see what creative direction you take next! There’s a whole raft of citywide shenanigans. With the Pride Pleasure Gardens, Street Diner food village, and some of the biggest Pride parties to grace the city, it promises to be a glorious, life-affirming weekend spectacular of flamboyance and ostentatiousness. Fuelled by pride, love and campaigning for LGBT+ (and others’) rights - it’s no wonder this Pride event is the UK’s most loved.

If the legendary Brian Wilson performing The Beach Boys’ Pet Sounds on its 50th anniversary isn’t enough to get you down to Preston Park, the lineup is adorned with great acts, from the hugely underrated 90s Britpop legends Suede to folk-rock heroes Turin Brakes. Brighton’s own - Fickle Friends also make an appearance, along with lit/rap battles by Poets vs MCs. In its inaugural year, the festival was powered by renewable technology and generated over £2,000 for Housing Trust. In a world striving for a bit more social awareness, there’s really no better way to do it this September weekend.

Long before my Galaxy S6 resided in my pocket, there was something different. Something much more pixilated and adored by (almost) an entire generation. That was my Nintendo Gameboy. I had a pretty turquoise one, always with fresh batteries and Pokémon Blue slotted in its shoulders. The year was 1999, and as a fresh-faced tomboy looking for adventure, I positioned my baseball cap backwards and swiftly plonked myself down on the sofa to play. Fast-forward to 2016: my face could be fresher and my cap has been hung up for good, but now we’re being forced out into the world to ‘catch ‘em all’. For anyone that might somehow have missed it (under a rock?), Pokémon is one of those crazes that refuses to die. Throw a ball, catch a monster. Sounds simple, right? Now it’s one of the biggest apps in the world, suddenly more popular than Tinder, Twitter and porn. Shocking. Starting with 150(ish) little bastards to catch, this number has now increased to over 700 (which frankly, is a bit much for me… I struggled with the originals). Using GPS technology, your avatar can run along the street and catch the ever-exciting Venonats (fluff balls that are meant to be some sort of insect) and Zubats (bats… go figure) that frequent this side of town. And if you think these names are ridiculous, Google ‘Lampent’ or ‘Nosepass’ (it has a magnetic nose…) and see how desperate the makers really got. So walking down the road, eyes glued to phone, I felt quite at home. It was when I kept stopping off at various venues (88
London Road/Emporium and The Hare & Hounds are both ‘Pokéstops’ FYI - basically places to get more random items) and looked around shiftily, not even going in for a drink. Weird. A bit of aimless wandering later, I managed to get myself to level five: gym-worthy. This experience was one of stress and defeat unfortunately. This being said, one of my fellow BN1ers managed to hit the gym and come out triumphant. Joining one team out of three, the idea is to battle your monsters to the death. Well until the ‘faint’ at least, we don’t want the kids getting upset after all. So anyway, join your team, battle away and you’ll come away from it feeling like a champion (unless you’re me). Choose from yellow (Team Instinct), blue (Team Mystic) or red (Team Valour) and knock out the others - your choice can affect options across different gyms. Primarily for battling other trainers’ Pokémon, you can battle friendly and rival gyms to up your and your team’s points. This is a good thing, I hear.
Players are given the choice of creating their own avatar with different clothing, hair and skin tone options. The makers of the game have been praised for giving ‘style’ options, rather than confining people to female or male genders, broadening the inclusivity of the experience. The ability to use augmented reality when catching Pokémon continues to litter our social media feeds, as everyone under the sun seems to be posing with a creature. It looks very cool at first but what will you do with that profile
picture of you and Drowzee when the hype dies down? To be frank, I actually found that the excitement of Pokémon Go wore off pretty fast. It was great to come back to the game after nearly ten years and see its progression, but I think it’s a little dull at times. When sneaking out for a cheeky break at work, I don’t have time to hike around Brighton. On my way home, I just want to get home. The repetitive nature of the game makes it suitable for all ages but I find I want a bit more from it if I’m going to commit to it properly. It also does lag A LOT and becomes tedious when you’ve wasted all your Pokéballs on something crap like a Caterpie. Initially excited to find a Pokémon sitting at the desk in front of me, it eventually became annoying to progress as my battery stayed below 50% for most of my playing time. Not something I like happening. Keeping many people old and young entertained nonetheless, the game has also proven to be a great tool for those with some kinds of anxiety and depression. Users have reportedly praised the game for getting them up and out of the house, chatting to other users and getting some exercise. Is this the future of gaming? One of his funniest plays, it looks at life behind the theatrical curtain and reveals a world of glittering wits, dashing dressing gowns and ostentatious personalities. Actor, charmer and diva, Garry Essendine is determined to disregard his advancing years and receding hairline by revelling in his endless tantrums and casual affairs. But just as he’s about to depart for Africa, he finds himself besieged by a bevy of would-be seductresses, not to mention his long-suffering secretary, his estranged wife and an obsessed young playwright. As he attempts to disentangle himself from their clutches and demands, the precariousness of his situation escalates.
Fresh from the success of their recent productions of #RandJ and The Crucible (as well as three full-scale musicals) Apollo Productions return with arguably Tennessee Williams’ finest work. It tells the story of Stella and Stanley Kowalski, a couple living in New Orleans, whose lives change irreparably when Stella’s sister comes to stay with them. BRIGHTON SHAKESPEARE COMPANY ALL THE WORLD’S A STAGE By Stuart Rolt
Although William Shakespeare’s work was written around four centuries ago, his uncanny ability to reflect human nature still resonates today. With his graceful use of language, he continues to show the world how we all love, hate, conspire and dream. So it’s only a small leap for the creator of Brighton’s favourite satirical show to turn his attention to the work of England’s greatest writer. “The politics of the day are riven through all of his shows,” The Treason Show’s Mark Brailsford tells me. “Just look at Henry V, it was only 100 years after Agincourt that the play was performed. So there’s this element of rousing the British spirit, referendum and all that…” Robust and hilarious, The Treason Show has lit up venues around Brighton for 16 years with its fast-paced irreverent look at British life. “We’re still here, that’s our motto,” he jokes. Set up in June 2000, with the intention of doing one performance per month for three months, the show is now more popular than ever. To maintain relevance, all of the material is written just two weeks before performances. “Although we’ll never run out of tasty news stories, right now there are particularly rich pickings amongst Brexit and its resulting political fallout. “But how do you satirise people who are satirising themselves?” With this as a background Brailsford’s creation of the Brighton Shakespeare Company perfectly keys into the Bard’s original staging of his plays. We’re sitting in his Western Road office. It’s the day of the EU referendum, and he’s animated, well-humoured and clearly excited about further developing this new project. It seems comedy actors can add gravitas and new levels to even the most demanding of roles. “Pinter said Max Wall was one of the best interpreters of the theatre he’d ever seen. Charlie Drake even did it. Comic actors, when they go straight… Well it’s dark!” A case in question is Will Kemp, one of the original performers in the Bard’s early plays, a kind of lively Tudor cross between Stephen Fry and Oscar Wilde. “To get the language over it would have been pretty full-on,” Brailsford elaborates. “How much the audience would have heard, whilst being drunk in the pit and fornicating on the balconies, is another matter. So it was very vibrant and alive.” It all seems at odds with the more formal modern presentations of Shakespeare.
Brailsford’s Shakespearean company sprang into existence with a production of The Merry Wives of Windsor during Brighton Open Air Theatre’s opening season last summer. It was the realisation of an idea Brailsford had whilst working with the late great Ron Moody in a production of Kafka In Love. “Moody always had this dream to create a Shakespeare company with comedy actors, because they can make dramatic interpretive forms. There’s almost a different layer.” So this August he’ll be turning his attention to Much Ado About Nothing. One of the most popular comedies in the English language, this timeless piece sees two young lovers, Claudio and Hero, about to be married. But a resentful prince’s scheme looks set to thwart the impending nuptials. A wedding seems distant for Beatrice and Benedick though, as their squabbling sees no end. Yet the answers to everyone’s woes are a little more complex than at first appearance. Once again the company returns to BOAT. Situated on Dyke Road, the amphitheatre hosts shows from May to September each year and provides a large performance space for local artists, schools and national touring productions. “What I love about BOAT is the mixture of shows and companies going in there. The atmosphere in Brighton generally is that all the venues support each other, which is really important.” What Brighton Shakespeare Company seeks to do is develop a different emotional depth to some of the Bard’s greatest work. While our contemporary world encourages new interpretations of his writings, there’s often little need to overcomplicate everything. The stories and themes are all there already. “I’ve been called a radical for setting it in period. But it’s all valid, because Shakespeare speaks to different generations in different ways.” After a successful Kickstarter campaign, there are now plans to tour the company to places like the terraces at Rottingdean Beach. This evokes the tradition for performers to roam the country, taking their productions to wherever there was an audience. Brailsford does concede that performing theatre outside in Britain presents a certain risk. “I might have to design a concept with brollies involved,” he chuckles. FILLING SOME BIG SHOES By Holly Cozens “Paying attention to the past is so important. You need to look at the old films,” states director Steven Spielberg as he sits amongst the cast from his new film The BFG. Questions about this, and the decades of his previous work, set the tone of this particular London press conference. As he jokes with the audience about having to pay his children $10 just to watch an old black and white movie, it surprises me how Disney have somehow managed to separate themselves from this stigma. With traditional cartoon tales like Snow White and the Seven Dwarfs, Cinderella and The Jungle Book, children have already willingly experienced Golden Age animation. They are almost ignorant to the fact these are born out of the same era as other films they might be much more reluctant to watch - as Spielberg says - simply because they are not in colour. So with this said, what is the appeal of live action adaptations of animated films? While acknowledging there are positives and negatives to this process, Spielberg’s objective with The BFG was clear. “The biggest change in how films are made today is back then, you needed to use your imagination to craft an illusion. With the digital revolution today, you can literally put anything on the screen.” As I listen to him talk, I feel this certainly rings true with the recent success of Jon Favreau’s remake of The Jungle Book. Advanced CGI and one physical actor made this childhood favourite really come alive - not only for a new generation of young filmgoers but older cinema audiences reminiscing about the original. Just a couple of weeks ago, The BFG came to the big screen and was greeted with a similar reception. With themes of childhood isolation and the normal colliding with the extraordinary, this famous story was definitely Spielberg’s bag. Not only does he manage to create the most magical environment with his use of modern CGI but – like so many of his films – he injects that suspension of disbelief through the development of the character’s relationships. Both Mark Rylance as the Big Friendly Giant and Ruby Barnhill as Sophie thrive at cultivating this incredibly heartwarming friendship – despite one being a big-eared CGI giant and the other an actual
small human bean. When asked about his choices with these roles, Spielberg simply puts it down to an “intuitive tickle”. He continued to explain, “I met Mark in the 1980s and known him for a long time. He can do practically anything. The first time I thought he was right for The BFG was actually the first day of shooting on Bridge of Spies I just got that intuition.” As the rest of the cast talk about working with Spielberg, it is easy to see how this live action retelling of The BFG was a real labour of love and how much this was reflected in their performances, “Steven risks things and doesn’t feel frightened to make a mistake.” Mark Rylance is so matter-of-fact in his response that this is then echoed by Penelope Wilton who plays The Queen: “He [Steven] casts you in the part and trusts you as an actor so you feel very free to do your best work.” Quietly modest in the face of his cast’s compliments and various comments from audience members about his legacy in the film world, Spielberg shows no sign of arrogance. “I’m just really happy that I get to keep working. I don’t get tired, I love telling stories and working with actors. I don’t wanna sit back on my tush,” he says. The vast experience and enthusiasm he brings to this project makes it easy to see the appeal of this modern adaptation and how just because it’s new, doesn’t mean it has to be absent of traditional cinematic value. “I continue to learn - not just from the films that are made today but those made 70 or 80 years ago.” The BFG also has an extra-special place in people’s hearts as this year marks 100 years since the birth of author Roald Dahl. SUICIDE SQUAD FRI 5 AUG Here’s some more nylon-clad action for the summer holidays. David Ayer, after successes with Fury and End of Watch, brings his keen eye for an action sequence to this off-beat superhero romp. It sees a secret government agency recruiting imprisoned supervillains for dangerous black ops missions. Diehard Batman fans will already be familiar with this motley crew of individuals, but there are a few surprises for even the biggest aficionado. Deadshot, The Joker, Harley Quinn and Killer Croc are amongst those saving the world in exchange for clemency. With colleagues like these, who needs a mysterious and powerful enemy?

DAVID BRENT: LIFE ON THE ROAD FRI 19 AUG After bringing global success to his creator, Ricky Gervais’ odious example of middle-management nonsense gets a big screen outing. No longer a regional manager for a mid-level paper company, Brent is now working as a salesman shifting cleaning and personal hygiene products. But he hasn’t given up on his ambitions of becoming a music icon. A ‘where are they now’ documentary finds him using his holiday days and pension fund to assemble his band - Foregone Conclusion. With this group of mercenary session musicians, a slightly rubbish manager and a talented sidekick, he sets off to conquer the world. It’s a lesson in following your dreams, no matter how unrealistic and embarrassing they might be.

We go behind the scenes as singer/rapper Conner4Real faces a crisis of popularity. OPPORTUNITY IS EVERYWHERE By Stuart Rolt
Food waste is fast becoming a hot topic in Britain. A recent survey commissioned by Love Food Hate Waste also found that 18% of participating adults admitted to throwing away a forgotten loaf before opening it, while a quarter of them said they often discarded bread before reaching the end of the loaf. In a city that increasingly promotes sustainability, two well-known local businesses have teamed up tackle food waste and create something unique - The Optimist Beer Co. Each known for their own specialty products, Bagelman and Franklins Brewery have created a craft beer that uses waste bread products in the brewing process. “It adds to the malt, which is used to extract the starch and certain enzymes turn it into sugar,” says Franklins Brewery’s Andrew Cooper. “It eventually becomes alcohol. The bread enhances that and means that these guys are wasting a little less bread. The malt has a kind of sweet toffee flavour to it, and the bagels enhance that.” Dubbed Optimist Number One, the brew is made using leftover bagels from Bagelman’s five shops across Brighton & Hove. A good well-balanced brew, the toffee-like sweetness of the malt and bagel shines through, with German Northern Brewer hops giving a crisp and bitter balance at the end. Bagelman came onto Brighton’s food scene in 1996. Starting as a one-man delivery service, it’s grown to become an iconic local brand. No matter how careful any fresh food business is, there will always be some stock left over by the end of the day. According to figures from Wrap, the UK wastes 15 million tonnes of food each year – a huge portion of this being bread. Shocked by these figures, Bagelman’s managing director, Anthony Prior, set out to do something positive from their leftover bagels. This led to a conversation with Franklins Brewery about adopting the wastage into the brewing process. “It’s great that we’re using our leftover bread,” Prior tells me. “But if we could start using the bread from other bakers, it’ll have a real impact on food waste.” Produced by a collaborative beer company with a difference, the Optimist crew are enthusiastic about creating great products and doing things differently. Starting last March, this pairing has produced an amber ale which is both delicious and minimises food waste. Already Optimist Number One is proving immensely popular, with bottles available in a range of stockists across Brighton & Hove, as well as a few in London. So now it’s being viewed as a growing venture. “For us it’s a good meeting, as we’re quite mindful of our waste as well,” says Cooper. “All of our spent malt goes into cattle feeds for local farmers. But in the future we’re going to explore drying our yeast out and using it to make bread with.” Nestled on the beautiful, sunny Sussex coast, Franklins micro-brewery is the site of this new venture in sustainable brewing. Fun, outgoing and community-minded, everyone at the brewery is passionate about creating craft beer with a twist.
So Optimist Number One is now available in some of Brighton’s best public houses, including The Great Eastern, The Watchmaker’s Arms and The Ginger Dog. Its name comes from a popular phrase (at least within the bagel community…) “The optimist sees the bagel, the pessimist sees the hole.” It’s a fitting moniker for a product that takes advantage of every possibility. The ambition is to create a range of different Optimist beers, each offering its own style and taste, perhaps even a porter or stout with a Beachwood smoked malt and Bagelman’s leftover jalapeno bagels. It’s hoped other suppliers will also be able to get involved, further cutting food waste in the city. “Every bakery selling fresh products is going to have some leftovers,” says Prior. “So what we want to do next is go and talk to them about them about using that.” www.franklinsbrewery.co.uk www.bagelman.co.uk

SHAKING IT UP

Wednesdays are so often dull. ‘Hump day’ is an understatement most weeks, the weekend out of reach and the one previous dissolving into just a faint memory. This particular one was not only a beautiful summers day but also the day I got to drink cocktails at Har Bar. Not bad for print week. Entering the immaculate reception area/bar we were greeted instantly by their friendly and experienced staff. Their infectious moods perking up customers, we made our way to the bar to meet Alex Palumbo. Barman to the stars, and one of the most well reputed in town, he’s comfortably managing the bar with a personable and graceful authority. Welcoming us with a couple of gin and tonics, we felt comfortable from the off. The beautifully finished bar, marble with sparkling utensils dotted along it, is lined with some of the nicest bar stools I’ve ever had the pleasure of sitting on. As the first point of call for most customers, these stools were almost like raised armchairs – comfortable, beautifully upholstered and with back support. Slipping in to these, we admired the rest of the interior. The neutral colours lend a versatility to the bar area. Quite a blank canvas, the walls have been punctuated by vibrant prints. I’ll use this opportunity to link back to our G&Ts: Alex made the base drink of Bombay Sapphire mixed in with ice and Fever Tree tonic water. The garnishes were worlds apart as mine was flavoured with cucumber and mint giving it a refreshing lift. My partner’s had fresh orange, strawberries and juniper berries. The latter being a key component of many gins, it intensified the taste and gave a fragrant twist to the drink. Swiftly finishing these, it was time for something a bit fancier. Alex recreated the Caribbean’s oldest drink: the mojito (£7.50). Bruising mint, lime juice and sugar syrup are added to the glass, followed by Bacardi white rum and soda water. Topped with a few dashes of Angostura bitters – the salt and pepper of the bar industry - its perfect. The Har Bar menu has helpful history lessons next to some
of their drinks. For the Cuban mojito, it explains that originally, the drink was served on a wooden spoon embellished by a cock’s tail. Nice… The next is actually a favourite of mine – the espresso martini (£8.50). A great drink to start any evening with a bang (and massive caffeine hit). A shaken cocktail for aeration, Alex mixed Finlandia vodka, Kahlúa, espresso, ice and sugar syrup. Shaking the cocktail, along with the temperature change of the espresso, creates the foam on the top of the beverage. It was one of the smoothest I’ve had. Next, the All Day Bloody Mary (£7.95). The classic is altered somewhat with fresh cherry tomatoes adding to the base. This gave a sweeter taste than the sub-standard pub versions, that’s for sure! Finally, it became our turn to mix. Given the choice of the menu, we selected one each: Dark ‘N’ Stormy (£7.50), Apples & Bees (£7.95) and the Daiquiri Frappe (£6.95). The former and latter being quite well known, they were perfectly made by our little gang of bar novices. I selected the Apples & Bees, probably the most exciting and unexpected thing on the menu. Hopping behind the swanky bar, I sliced up some cucumber to muddle down to almost a paste. Adding 50ml of Calvados, 25ml of lime juice and 15ml of honey, it was topped with apple juice. Filling the shaker with ice, I stuck out like a sore thumb behind the bar while attempting to mix the concoction. Setting up my glass with ice and more cucumber, I double strained the liquid and topped with crushed ice, dried apple and some bee pollen. One of the most interesting drinks I’ve had the pleasure of consuming, I’ll be going back for more definitely! The sweetness of the apple juice almost contrasted with the more delicate natural sweetness of the honey and bee pollen. Calvados giving it a kick, it went down all too easily.
