This year the Flying Doctor’s Brisbane Auxilliary will have been supporting the service for a 50 remarkable years. One woman who has been at the forefront of fundraising with the Auxiliary for over 30 of those years is Val Marlow. She works tirelessly at events all over Brisbane and the South East and has become a wonderful ambassador for the Flying Doctor, conducting tours of the Brisbane base as well as attending functions, clubs and meetings to promote the service and offer people the opportunity to give their support. Val has an encyclopaedic knowledge of the organisation, which is nearly as big as the collection of memorabilia that she has gathered over the years. Her home is a treasure trove of Flying Doctor T-Shirts, glassware, key rings and of course photographs. As if all her hard work and dedication wasn’t enough, Val has even convinced her two daughters to join the Auxiliary alongside her, keeping fundraising firmly in the family!

Two members of the Kowanyama airfield team provide the Royal Flying Doctor Service with an invaluable service in their remote patch of the state. Kowanyama Airfield Reporting Officer David Durst and Refueler Raphael Lansen are a dedicated team who make themselves available to refuel the RFDS aircraft 24 hours a day, seven days a week. Not only do they keep the Doctor flying, but they often help the crew to load patients on board the aircraft too. Always assisting with the utmost care and respect. Most highly prized beyond all their indispensable skills though, is their ability to lift the spirits of the aeromedical team on each and every visit with their warm smiles and friendly banter!

Between them Elizabeth Marchant and Georgie Walker have racked up over 110 years of hard work, fundraising and support for the Royal Flying Doctor Service. Long time buddies, Elizabeth and Georgie tirelessly raise funds by hosting a barbeque every month at the Royal Hotel Eromanga. Their tasty cook outs have garnered quite a following and allow them to make substantial regular donations to the RFDS. This isn’t all they do for the Service though, when they’re not in the kitchen, you’ll find them picking up the Flying Doctor and nurses from the airport when they land, serving them smoko and keeping morale high with their kind nature and friendly demeanor. Alongside this, Elizabeth also remarkably finds the time to manage the care of the local RFDS clinic building and is a member of most local community groups who work together to buy medical supplies providing a lifeline for the remote residents. And best of all, the ladies are as good friends to each other as they are to the RFDS!

Proud Gungarri woman and Winton local, Sandy Gillies works as the Executive Manager for the Western Queensland Primary Health Network, but her work for the local community reaches far beyond her assigned role. During the devastating Queensland floods earlier this year, Sandy lobbied tirelessly for services and ensured they were reaching the people who needed them most. Her local knowledge was instrumental in identifying those community members who were struggling or simply exhausted and in desperate need of help. Her invaluable assistance and strength during the floods is typical of Sandy’s selfless contributions to her local community. She has been dedicated to supporting Aboriginal and Torres Strait Islander Health, social and emotional wellbeing and mental health both throughout the state and nationally for the past 25 years. She is a phenomenal advocate for the wellbeing of her local community and is an invaluable asset to this remote region of the state.

For over a decade Carolyn Saffron has been the backbone of the local RFDS Auxiliary. Joining the service as Treasurer, she’s now the committee’s president and without fail she reliably sizzles sausages, shakes tins, mans market stalls, organises and inspires the group. She is a wonderful ambassador for the Service, travelling far and wide, often on her own, to promote the organisation. Her motivation is the invaluable service that the Flying Doctor provide to rural and remote areas of the state and she gains real satisfaction from being able to give back to the RFDS in support and fundraising donations. It’s safe to say that it’s a shared admiration!

Simon, Jim, Robert and Belinda were the first responders to a boating accident out on Lake Julius on Christmas Eve last year. Their calm, caring and skillful assistance meant that the family involved in the accident were able to receive the best quality care as quickly as possible. On the day of the accident, RFDS Mount Isa crews responded to a boating accident at Lake Julius, around 100 kilometres north east of Mount Isa where a family, who were out on a fishing trip, had collided with a submerged log, causing severe harm to both them their boat. Whilst seriously injured, they manage to send an alarm using an EPERB device which started a mammoth emergency retrieval involving the Local Heroes and emergency services. The family who are now recovering at home in Mount Isa are incredibly grateful to Simon, Jim, Belinda and Robert for the instrumental role they played in their rescue.

The Golden Acres Gala Ball Committee

Alison Hodda is one of the Service’s most hard working and dedicated fundraisers having supported the RFDS for almost 25 years. She continues to raise funds and awareness in equal amount as well as volunteering at events across Biloela & the Banana Shire. Although she lives over two hours away from Rockhampton Alison still manages to attend all the Auxiliary meetings, morning teas and Paradise Lagoon Camp Draft amongst many other fundraising functions. When she’s not tirelessly volunteering for the RFDS, she’s helping her husband, who is also an Auxiliary member, on their family farm or making beautiful cross stitch pieces which she also sells to raise funds.

Andrea Crothers, Tessa Diamond, Annie Jones and Jess Weber joined forces to raise over $55,000 for the Royal Flying Doctor Service. The women organised and hosted the Golden Acres Ball in St George for two consecutive years, donating the proceeds to local charities. The event, which took a phenomenal amount of hard work and preparations, was held on the local football oval and attracted over 500 people from all over rural Queensland and NSW. These enthusiastic women saw a need in the community and got together with their supporters making it a night to remember while raising funds for the RFDS and giving the local economy a muchneeded boost. The committee have now been separated by distance due to work, but they are hopeful that some other motivated and wellmeaning people will take their lead and literally keep the ball rolling!

Richmond Field Days and Turf Club Committee The Richmond Field Days and Turf Club Committee have raised thousands of dollars for the RFDS as well as supporting health checks and raising awareness for the Service in their local community. The Turf Club say you’d be hard pressed to find someone in Richmond who hasn’t been helped by the Flying Doctor and thanks to the Club’s hard work, the community have certainly shown their gratitude. One couple who helped drive the Committee’s success are Club Secretary Patsy Fox and her husband David who are dedicated fundraisers of the RFDS and their local community. They were instrumental in the disaster response when the Queensland floods devastated the region earlier this year. The pair set up a disaster management centre at Richmond Airport and manned it tirelessly providing shelter, safety and peace of mind to those affected in the region. David and Patsy not only demonstrated compassion and humility to their workers, neighbours, family and friends, they demonstrated courage, strength and wisdom which carried them and all those near them through the disaster.

No matter where you take a minutes silence each year on Anzac Day, D-Day or Remembrance Day it can be a powerful reminder of the sacrifices made by the men and women who have fought in wars past and continue to serve in

the armed forces today. This year on Anzac Day, we found ourselves in an incredibly special place. Eighty Mile Beach Caravan Park, which is on the grounds of Wallal Downs

Station, and sits half-way between Karratha and Broome, is just what it’s name suggests. It’s eighty miles of pristine coast nestled amongst the cattle stations and lands managed by the traditional owners.


For most people they come here to fish or just wander along the endless beach, fossicking for shells and enjoying the incredible sunsets as the sun sets across the bay. However, Caravan Park owner Colin Lewis, some years ago ,was approached by a group of his yearly regulars. Grey nomads who spent their winters in the northern sunshine. Men who had fought in Vietnam. They wanted to build a memorial to the fallen. This now sits at the front of the park right near the beach access track so

everyone can see, and a place where everyone can honour the memories of those who fought in the wars. Anzac Day this year we were lucky enough to be here, on what was the first year that the local Pilbara Regiment sent a troop for the Anzac Day ceremony. As the sun rose over the park around 150 people, staff from neighbouring stations, guests in the park and soldiers, joined the commemoration. Lest We Forget

Such a versatile Mother sauce

As a chef, the mother sauces are a go to throughout our career. An essence of so many dishes and ones we must master. Béchamel, veloute, espagnole, hollandaise and tomato are the five mother sauces. As you can see, the base of so many dishes, no wonder we have to master and get them bloody well right. So quick run down of what these sauces are. Béchamel is a white sauce, think Sunday roast and the cauliflower mornay. Veloute, commonly used for chicken and seafood, is made like béchamel but way lighter as stock is used instead of dairy, think one mean chicken gravy or a seafood chowder. Espagnole, as fancy as it sounds is a gravy. Yes, made from scratch, don’t think no packet here. Hollandaise is the beautiful buttery sauce you find with Eggs Benedict. And last of all, tomato, well what can I say. Well, it doesn’t come in a bottle, unless your thinking of the Italian yearly tradition, to harvest their crop and make tomato sauce for the rest of the year. Just love family cooking traditions. The uses for a good tomato sauce are beyond endless. I’ll let your imagination go wild on this one.

So the 5 mother sauces of French Cusine were recorded by Escoffier, the God of chefs if you will, in the early 20th century. Carved in stone, as they say, base master sauces not to be messed with. No packet, no bottle, no jar, just a whole lot of love, squeezed with a twist of knowledge and finished with a sprinkle of passion. But one, in my option can be made, yes, with the exact ingredients required but a couple of my little short cuts. One quickie sauce to knock up. The mother sauce, béchamel. Classically, one makes a roux in one pot, a paste of butter and plain flour and in a separate pot, warms the milk with what’s called a studded onion. Peeled onion with a bay leave attached studded by whole cloves. Now this is all very good and not hard but in my opinion too many pots to wash already. So here goes my version, my recipe, (well not really) but my method. Nice and easy. The basis for the béchamel sauce is so easy to remember. Say you want ½ a litre. Then it’s 500 ml milk to 50g butter and equal quantity of plain flour, 50 g. You want two litres, it’s 2 litres milk to 200g butter and yep, you guessed it, 200g plain flour.


That’s a hell of a lot of béchamel though and very much doubt, unless you are opening a restaurant in the back yard, you will never need more than 1 litre. For ½ a litre, as the photos show, I’ve used ¼ of an onion, if making more, use more onion. For the one pot version, a good idea is to pop the onion in the milk way earlier than you plan to make the sauce, to let it infuse. So there are the ingredients, so let’s hit the method. In a saucepan, yes only one, melt the butter then add the plain flour, cook this out for about 30 seconds on a medium heat. You don’t want the butter to colour in any way, if by chance it does, start again. Now this is

what is known as a roux, a base thickening agent. Now adding the milk, remove the studded onion first. It is supposed to be added slowly but I go half, mix till no lumps and then the other half. First timers, maybe go a bit slowly with the milk, just stir and cook till combined then add some more milk. They main key here though, is to stir like crazy. I use a whisk, a lot of elbow grease and a wooden spoon. The spoon is essential for getting into the corners of the pot, if you don’t it will thicken quicker, catch and burn. Ok, when all the milk is added, cook and stir till all the lumps are out. Got lumps? Don’t stress, just strain it. Now bring the sauce to a gentle boil. It should now be creamy and glossy.


This means all the roux is cooked out and the sauce won’t be floury. Season with salt and ground white pepper, just take into account what the sauce is for. So for example spinach and feta crepe filling, you wont need a lot of salt. And that’s pretty much it, now you have a blank canvas, let’s play. Last month I gave you a recipe for buckwheat crepes, well this sauce makes a fantastic filling. The options are endless but I wouldn’t think sweetie sweets. Stick with savoury and think flavour combos.

Tiptoe through the tulips

Sunday – day of rest; family day; recovery day. It means something different to everyone but over the next few months I’m going to give you some ideas for making the most of your Sunday Funday.

For much of Australia spring is when you begin to think about searching out the wonders of the thousands of wildflowers that can be found, however in Western Australia, June is when it all begins.

They are scattered across almost 2.5 million square kilometres of Western Australia and can be seen from anywhere from the side of the highway through to the densest of bush.

Sunday’s in June are for getting outside and enjoying the winter sunshine when you can.

Western Australia is home to more than 12,000 wildflower species, the largest collection of wildflowers in the world.

The first time I spotted a Sturt Desert Pea was on the side of the highway in Karratha in the North West and I had to pull the car over to take a photo.


Western Australia takes full advantage of its vast array of wildflowers each year and offers guided tours and information for self-guided tours to find the best places to see the flowers.

Western Australia’s wildflowers can be spotted anywhere from the South through the Goldfields and the Wheatbelt, right up to the North West in the Pilbara and the Kimberly regions.


The Pilbara wildflower trail weaves its way from Broome right down to the Pilbara and into Karijini National Park. The flowers, which include the beautiful Sturt Desert Pea, Bluebells, Sticky Cassia, and the gorgeous Mulla Mulla carpet the ground in spots. While WA is the wildflower hotspot, most of Australia has its own wildflower season, usually starting in the Spring. Some places to find wildflowers around the country include:

• Outback South Australia, around Maree, is also well known for its outback flowers, especially if there has been rain around or water in Lake Eyre. • In Victoria, the Grampians is home to one third of the States flowers which include anything from wattles to orchids and purple pea flowers. • In Tasmania the incredible Cradle Mountain area and Wineglass Bay are the perfect places to explore wildflowers.

• In Queensland, the Granite Belt region south-west of Brisbane, particularly in the Girraween National Park is the hotspot. You can find wattles, daisies, orchids and more here. • In NSW the Mountains are the place to go – the Snowy Mountains, the Blue Mountains and Barrington Tops; but also in the outback especially after rain in Bourke where you can find Darling peas and Darling Lilies.

Top Five Places To Explore On The Eyre Peninsula We were fortunate enough to spend a few weeks experiencing a lot of what the Eyre Peninsula has on offer earlier this year, finding some of the most beautiful beaches we’ve seen so far on our travels of Australia.

For those who are short on time, we’ve listed five of our favourite places that are definitely worth a look while you’re on the Eyre. We hope you enjoy them as much as we did!

Clear water in varying blue hues.

A plethora of hikes and walking trails to explore – some inland, some coastal, and just a whole lot of fun to be had!


1 – Port Gibbon

2 - Lincoln National Park

The road into the camps can be quite corrugated in areas, especially as we chose to stay at the last campground before the vehicle access to the beach. Be prepared for lots of fun on the dunes! Take your 4wd for a cruise around on the dunes and give dune boarding a go! Our boys used their boogie boards on the dunes for hours. If you choose to camp you’ll need to stay alert for snakes and scorpions. We saw a few when we were there in March.

Park fees do apply for both day trips and camping, and there are some fantastic camps to choose from with varying facilities if you want to stay inside the National Park and have more time exploring.

In the morning you can head round to the point to flick your rod - or go for a morning stroll. You might be lucky enough to spot some of the resident sea lions frolicking in the shallows, or even sunbaking up on the sand. There are some facilities located at the main camp area (dump point, toilets, drinking water), but most of the camps require you to be self-contained.

We camped at a sheltered bay called Richardsons Shack inside the National Park. Kangaroos and emus strolled around camp and down on the beach, and the water was perfect for paddle boarding, snorkelling and searching for razor fish. Donnington Loop walking trail is a fantastic way to see the sights of the National Park on foot, taking you up to the lighthouse and out to explore some of the other beach fronts like the well- known September Beach. We saw sea lions and a pod of dolphins frolicking in close to the coastline as we completed the loop.

Accessible by a long 4WD trip through Seven Mile Beach (leaving Coffin Bay National Park), we were pleasantly surprised by the stunning beach that awaited. Bright white sand which can be quite soft (with a decent sized dune to conquer) close to the entrance of the beach, we’d recommend you have some recovery gear with you - especially if you’re tackling the drive alone.

Located in Elliston on the Eyre Peninsula, we’d advise ensuring you have at least a good half day to explore this strip, as there are three main points of interest to check out.

Crashing waves entertained the kids, and there are a few rocky areas to climb and explore, particularly on the nearby wilderness walks that showcase the dramatic cliffs and coves. You do need a national parks permit to camp, whether you camp here or take a day trip in like we did from the Coffin Bay National Park. Be aware that high tide closes access to the beach as it voids the area to get in and out, so be sure to check tide times when you do your planning.

‘The Woolshed’ is a large cave carved into the granite cliff by wave action, ‘The Tub’ is a Crater with a tunnel connection to the ocean, and The Rock pools which are just that – rock pools that can be found on low tide along the coastline. Out of the three stops, our favourite was definitely ‘The Tub’. You can climb down into the crater via a man–made staircase cut into a tree trunk at the road end of the crater, through a thin trail in the scrub down into the tunnel that meets the ocean. Be mindful, however, that you will need to take tide times into consideration here as well - as the water could rise high enough to trap you in the tunnel if you’re not careful.


5 – Perlubie Beach A fantastic ‘all-rounder’ beach. You can camp right up on the sand, even in a caravan and there are a few shacks for day use that you can grab some shade under if needed. Perlubie is renowned for its fishing, and you’ll find people launching their boats at high tide to try bag some squid, crabs and king george whiting. At times the locals will even bring their tractors down to help bring some of the boats back in if the sand is too soft while the tide is out. There is a toilet block for public use, however no water or power available at the camp area. Fires

are permitted on the beach (outside of fire ban season), and you can swim, snorkel and explore the water fairly safely at Perlubie. We promise you’ll see some of the most amazing sunsets on this coastline.. Happy Exploring!! Kakadu It’s that time of year where everyone starts to head north and chase the much-needed sun! There are SO MANY amazing spots in the top end, but Kakadu is up there with our favourites! When we visited Kakadu we spent 5 days exploring the national park which we feel was the perfect amount of time for us, although you could easily spend a lot longer and check out some of the lesser known spots. A parks pass for Kakadu costs $40 per adult and as our kids are under 4 they were FREE, entry is also FREE if you’re a Northern Territory resident – winner!, the passes are valid for 7 days but you can extend for another 7 days for free if needed. Home to Aboriginal people for more than 65,000 years and being the largest national park in Australia - Kakadu has a lot to offer, here’s what we checked out and LOVED when we were there -


Maguk (Barramundi gorge) Maguk is magical! The track in to Maguk is a 14km 4WD track but very easy (just unsealed). To reach Maguk you do a beautiful walk along emerald green waters towards the falls. The walk is about 1km one way and fairly easy but is not wheelchair or pram accessible, about half of the walk to the falls is scrambling over rocks but this makes it all the more fun. Maguk was the perfect place to cool down on a hot day and is classed as a safe spot to swim.

Gunlom Gunlom was the hardest of all the walks we did but still totally fine and definitely worth it! Even our little one (just turned 3) did the whole walk himself. It is a steep, rocky climb up and took us about an hour to reach the top but WOW this place is beautiful! We got there early which I highly recommend and spent a couple of hours up the top soaking in the magical views and taking a dip in the natural infinity pools.

Cahills Crossing Cahill’s crossing was the first place we saw a croc (or seven) in their natural habitat! Cahills crossing was pretty amazing! It was brilliant to see how these beasts operate and it also showed how stealth they really are. Kakadu is home to more than 10,000 crocs so you’re bound to see one! Cahill’s crossing is also the entry point to Arnhem Land.


Nawurlandja Nawurlandja is not one of the typical tourist spots and we didn’t know about this place and just stumbled across it and we’re glad we did. Just a quick 100m uphill climb gave us stunning views of ‘stone country’.

Burrungkuy (Nourlangie) WOW you’re really taken back in time at Burrungkuy! The 1km walk through sheltered rock formations showcased some of the AMAZING world heritage listed Aboriginal artwork of the Bininj people. Some of the paintings are up to 20,000 years old! The rangers do guided walks and talks through Burrungkuy so definitely check what times they are happening to find out extra information around the interesting artwork.

Ubirr This place is SPECTACULAR! The views are to die for. There is more amazing Aboriginal artwork to check out on a easy 1km loop walk. Ubirr is also the perfect spot for a beautiful sunset so make sure you try and get there for that, there is also a guide that will do a talk up there just before the sun sets.


I also highly recommend stopping at the Bowali visitors centre and Warradijan Aboriginal cultural centre to learn more about why Kakadu is so special and about its importance to the Aboriginal people. Unfortunately, when we visited Jim Jim falls were not flowing and Twin falls were closed but these are also meant to be some of the best spots to visit on Kakad. As Kakadu is MASSIVE we did move camps during our stay which I would highly recommend doing. We based ourselves at Mary River Roadhouse for two nights to check out the southern part of the park (Maguk,Gunlom) then at Cooinda for 2 nights and then at Jabiru for our last night to do Ubirr at sunset.
