Although I am a focused person in general this year is the first year I really knew without having to think about it what I wanted to achieve. Many believe in New Year’s resolution and others like my husband think it is a big crock. I believe in being focused, I believe in setting goals and I definitely believe in being better than I was the year before. For me this year though my goals were screaming at me, they were very clear and defined. The fact that these goals were so clear to me, makes me realise that my life has shifted to being one that no longer has me wondering if this is where I am meant to be, to knowing this is exactly where I am supposed to be. At Gourmet Meals we celebrate multiculturalism and Australia Day by incorporating a wide range of dishes in our menu which represent our customers’ different cultural, religious and ethnic backgrounds. We proudly supply delicious and nutritious dishes which have originated from all over the globe and showcase a diversity of flavours. Some of the many multicultural dishes we supply from around the world are listed below together with their countries of origin.
Spaghetti Bolognaise Rich and wholesome, Spaghetti Bolognaise originated from Imola, near Bologna, in 18th century Italy. A popular dish on our menu and in Australian homes, it is customarily prepared in Italy by sautĂŠing onions, celery and carrot with minced or finely chopped beef and pork with tomatoes or, a tomato concentrate, added before being simmered to produce a thick sauce. Traditionally, the pasta used in the preparation was fettucine or pappardelle.
At Gourmet Meals, in order to add a bit of extra goodness, we add eggplant and zucchini, and top it off with a mixture of grated parmesan and cheddar cheeses. Beef Stroganoff Creamy and fragrant, Beef Stroganoff was a dish originally prepared during the mid-18th century in Russia by the wealthy Stroganoff family whose cooks were trained in France. The recipe generally involved sautĂŠing lightly floured, very tender thin strips
of beef, then adding a pinch of dry mustard and bouillon, before being finished off with some sour cream. It was served with crisp potato straws. In later years, the cooking method involved adding lots of thinly sliced mushrooms, onions and tomato paste to the beef recipe. We serve the dish with either mash or rice. Cottage Pie Hearty and full flavoured, Cottage Pie was created in late 18th century Ireland. The name was derived from it’s humble heritage of being a dish served by the poorer Irish community who resided in cottages. When first cooked, it was initially prepared with a layer of beef mince in a gravy that was topped with mashed potato, then baked. Onions, peas and carrots were added to the beef mince in later recipes, and Gourmet Meals, again to make this dish even healthier, has added zucchini, increasing the fibre, vitamin and mineral content. These are some of the many healthy and delicious dishes we create at Gourmet Meals which we individually customise to cater for our customers’ cultural, religious and ethnic preferences. family gap year: to free or not to free Our time on the road was mind blowing! Almost 600 days, looking back now it feels a little surreal, but it always brings a smile to our faces and will forever be the most fond memories of our lives. We set out to enjoy the time on the road, we didn’t have a plan, which is hard to believe, because we’re traditionally a VERY planned family. The freedom of not knowing where, when or how each day was uplifting and in a strange way, made us feel lighter and more fluid. When it came to knowing where to stay, we winged it. No plan, No worries!! For the first 5 months, we free-camped, meaning we kept clear of caravan parks, choosing to stay in places less mainstream along the way. Using the WikiCamps app made it much easier. Our routine was simple. Drive, choose loosely where we wanted to go, find somewhere that wasn’t a caravan park to stay at. When we say ‘free camp’, it doesn’t necessarily mean FREE, but it does mean a VERY low cost. Tasmania was our first port of call, and we ended up spending 2 months in Tassie, in January and February 2016. It wasn’t too cold, not too hot, with the temperatures being manageable for newbie travellers. Tasmania provided a HUB of free camps, so much so, that we didn’t spend one single night in a caravan park. It was brilliant!! In the end, over the 2 month period, we spent around $400 in camping fees. We were armed with a Parks Pass, meaning we could
camp in the National Parks along the way. Travelling in a 21 foot family van meant that we couldn’t just pitch a tent anywhere we liked, but the WikiCamp app lets you define your category, showing us camp spots that suited our rig. It’s a MUST if you’re on the road. As we returned to the mainland and travelled North, we ended up in Jindabyne in WINTER. It was here that we decided to ‘pop our cherry’ so we could turn on air-conditioning on HEAT!!! It was zero degrees and we felt justified!! We continued to travel, switching between caravan parks and free camps along the way, using our new found love of caravan parks as an excuse to get power and convenience. Caravan Parks usually offer more ‘kids’ for the girls
to socialise with, and by the time we reached the North, we craved the cool air-conditioning. In the end, we probably stayed in more caravan parks than we expected, but we have no regrets at all. Our advice to other travellers is to keep it flexible, have no rules, let the sun and wind take you where it leads. No rules, No expectations, No worries! Life’s too short to be too planned. Make decisions that suit your moment, your family and your lifestyle. We have zero regrets and would do it all over again if we had the chance.

coffin bay oysters Coffin Bay founded by Matthew Flinders in 1802 and named after Sir Isaac is a town at the southern extremity of the Eyre Peninsula, South Australia. Home to one of the most stunning estuaries in Australia, Coffin Bay is a popular holiday spot. The clear calm waters surrounding Coffin Bay are perfect for swimming, water-skiing, sailing and fishing. Take the winding roads to the pristine beaches of the National Park, learn about the history of the town on the 8km Oyster Walk or experience the ultimate day out on the water on a fishing charter.
Coffin Bay is renowned for its world famous oysters. Farming oysters in Coffin Bay dates back to the 1800’s. The oysters were dredged and shipped to Adelaide (via Port Lincoln) to be kept in beds adjacent to hotels, and then sold to the public. In 1890 over-fishing caused a decline in catches meaning the fishery had all but ceased. During this time attempts were made to farm the Angasi Oyster but due to its high mortality and slow growth a decision was made to grow Sydney rock oysters, however this also was unsuccessful. In 1969 Pacific Oysters were trialled with spat coming from Japan and Tasmania. Due to the success of the trial they still use the same spat to this day. The oysters are graded on shore every 2 to 4 months depending on the season and generally reach market size after 18 months. Pure Coffin Bay Oysters have played a big part in reviving the Native Angasi Oyster that was fished to near extinction over 100 years ago. Pure Coffin Bay Oysters also do Farm Crew Tours where u will be a part of the action with the crew on a workday
morning on the water. This gives you a chance to chat with the crew and gain an understanding of what makes coffin bay oysters so good. We were greeted at the Shellar Door by Chris Hank the owner of Pure Coffin Bay Oysters. The 1 hour tour started with Chris doing a presentation explaining to us about how they grow the oysters and the history of oyster farming in Coffin Bay. We also watched a short film about what the oyster farmers get up to out on the water. Chris demonstrated how the equipment worked in the sorting shed and how they grade the oysters into sizes ready for sale. The world class oysters are then transported to buyers domestically or internationally. The best part of the tour was the end where Chris demonstrated how to shuck an oyster and we were lucky enough to taste them! Have to say they were the best we have ever had!! towing your caravan in crusie control Can you tow your caravan and use cruise control? Yes, there are certain times you can use cruise control and times you definitely should not. If in doubt, always refer to your vehicle owners handbook. What is cruise control, and how does it work? According to a Dictionary, Cruise Control is a device in a motor vehicle which can be switched on to maintain a selected constant speed without the use of the accelerator pedal. What does it do? So in a nutshell you set your cruise control at Required speed (100km/h), and it will try to keep that speed. When going up a hill, your speed decreases. And when it drops below a certain speed you will notice your car accelerating, and a fair chance it will shift into a lower gear, while trying to keep the required speed that was set. When going down a hill your vehicle tends to gain speed (momentum). It wont hold your speed from going over. Some cruise control unites will try to slow your vehicle down to the required speed set by downshifting or by braking. Can you use Cruise Control while Towing? Yes, but there are factors to consider.
The conditions of the road (sealed, dirt, flat, windy, hilly etc); the conditions of the traffic (light, heavy, traffic lights, city, country etc); the tow vehicle has enough power, and how well it handles corners, hills; the conditions of the weather (rain, wind, night etc); the weight/stability of the trailer/van being towed,
While the cruise control system has its advantages it has its disadvantages as well and the fact you are just sitting there can make you tired.
Cruise control is NOT designed for all road conditions, especially when towing caution needs to be taken. It would probably be best to use cruise control on flat open highway in good weather, and drive normally as you would anywhere else.
So when thinking of towing with cruise control remember all the above is a lot harder when you have any extra weight behind you .
Cruise control should never be used by a driver who is feeling tired. Your reaction times could be too slow to take any corrective action needed.

kids in kalgoorlie
Kalgoorlie is the main town in the West Australian Goldfields. It’s most famous for its mining heritage and being the location of the Super Pit, the largest open cut gold mine in Australia. In 1893, Paddy Hannan struck gold, sparking a gold rush which uncovered one of the richest goldfields in the
world. Hannon’s presence is strong through the town, which leans heavily on this history. Kalgoorlie doesn’t really conjure up images of a kid friendly town. If fact, with the red dirt and the prospecting history, the image is more wild west than wild at heart. It’s an image of the
once visible sordid nightlife, now a little more discreet but still a big part of the town’s identity. But alongside this exists a family friendly town with a heap of activities for kids. We have been in Kalgoorlie now for close to five months. About two months longer than planned but, as someone

You really can’t visit Kalgoorlie without seeing the Super Pit. There are several ways to do this. You can go up the lookout anytime and watch the activity below, check out the information line to see what time they are doing blasting each day.
Whether you are in town for a short or longer stay there is enough to keep the kids happy. For a short stay my must visit tips are Hannons North Tourist Mine, Museum of the Goldfields and the Super Pit. Hannons North Tourist Mine is on the edge of town. You can do a self-guided walking tour around what was a working mine until 1968. This is an excellent look into the history of gold mining in Kalgoorlie, as well as many exhibitions that show how mining is currently done. Hannans North Tourist Mine is a great for kids. They can climb up onto one of the enormous mining trucks and have a go at panning for gold. Bring a picnic and spend the whole day exploring the exhibitions at your own pace. The Museum of the Goldfields is another must see for entertaining the kids. At one of the least expensive places you can visit anywhere (just a donation at the front desk) you can explore three levels of exhibitions which include the town’s history, a very impressive display of gold bars and nuggets and the opportunity to go up the Ivahoe Headframe for one of the best views of Kalgoorlie. If you are in Kalgoorlie over school holidays make sure you check out their
You can also do a tour of the Super Pit. We weren’t able to do this because of the strict rules around the ages of children. If you have children under four years you won’t be able to go into the mine. If you are in town for a bit longer, there are many playgrounds to choose from. Hammond Park has a native bird and animal collection, which will keep the kids entertained, a great playground and bbq facilities. Make sure you say hi to Macca and Joe the cockatoos. The LoopLine Railway Museum, located in the old Boulder Railway Station, is a great collection of the history around the railways and how this worked with the mining industry. The Royal Flying Doctor Service Base Tour is run from the RFDS base at Kalgoorlie airport. This is a great tour and really shows the importance of the RFDS for people living outside cities and metropolitan areas of Australia. The kids will love the opportunity to climb up into one of the planes and have a look. Kalgoorlie’s image of a hard working, hard drinking town is counter to the fact that it is actually a very active town. There are trails and bike paths through the whole town that you can ride, walk
or run. There are shorter trails around and to the lookouts just out of town at Mount Charlotte and the lesser known Nanny Goat Hill where you will see great views from the top, and it has one of the best Park Run courses at the amazing Karlkurla Bushland Park.

back to school for libby and layla Going back to mainstream school after over 600 days on the road!! We feel really lucky to have gone on a Family Gap Year. We left Brisbane in December 2015 and didn’t come home until July 2017. It was the BEST thing we have EVER done in our whole lives. I (Libby) was in Year 2 when we left, so it means that I did Year 3 and most of Year 4 on the road, being homeschooled mostly by Dad. Mummy worked while we travelled, her job back at home let her be flexible and full-time, which was AWESOME!! Mummy would do her work in the morning, at the same time we did our school work. I was always happy to get our homeschool done as quickly as possible, because it would mean more time to explore and have fun. School on the road didn’t take as long as school in the classroom, which I think is because there are less people. Teachers need to teach 20 or more kids, but Dad only needed to teach 2 of us. When we got back, Daddy rang the school and they said we were allowed to come back straight away, instead of waiting for Term 4. Layla and I were SO excited about this and we literally went to school the very next day!! Going back to school wasn’t that hard at all. Seeing our friends again was
great, I didn’t find the school work hard and actually was surprised when I saw that I had done more of the workbook in some areas than the class. I noticed that I wasn’t as good as swimming in PE as my friends anymore, so I asked mummy and daddy to let me start swimming training, which I did straight away. I really loved being back at school and before too long, I didn’t even feel like I had been away from my friends. I continued to swim all the time to get
faster and I was also really excited to learn that my grades were good too. My teacher sent mummy and daddy a summary of my grades, which were all A’s and B’s. feel really excited about doing the whole of Year 5 at school. In Year 5 this year we get to do Australian Geography, which I am sure I’m going to get an A+ in. I miss the road and travelling, but I also love being back at school with my friends.
