The Gold Coast International Marine Expo smashes both sales and attendance targets!

As Event & Marketing Manager, Emma Brown explains, “The Expo has really come of age this year. Our marine industry leaders, in growing numbers, can see the massive benefits of creating an Expo experience that is truly unique to anything in the world”.

Over 20,000 boating enthusiasts streamed through the Expo gates from Thursday 19th to Sunday 22nd May to experience what is touted as ‘the boat show with so much more’. Emma forecasts the direct sales activity generated at the Expo will easily surpass last’s year’s figure of in excess of $50 million, based on exhibitor feedback at the conclusion of the Expo.

Her crew includes a few Kiwis, such as Gavin Brady, who has been Kwok’s righthand man for years. Boat captain, Cameron Ward, says: “Karl wants to come and support another great Australian event and thinks Airlie Beach Race Week is a great event to come and tune-up for the Australian IRC Championship ahead. “The boat is already in Mackay and we’ve booked the accommodation

and marina berth. We’re ready to go.” Airlie Beach Race Week reigning champion, Matt Allen (Ichi Ban), is unable to defend his title. “It’s with deep regret I will not be there, but this year it clashes with the Olympic Games. Allen, the president of Yachting Australia, will spend the first half of the Games at Rio in Brazil with the Australian Sailing Team. Thai based Tasmanian Phil Turner (owner of the RP66 Alive), is among the contenders currently entered in the IRC Racing division. Skippered by Duncan Hine, the canting keeled former Black Jack won the 2014 Brisbane Gladstone race overall and took line honours in the 1850 nautical mile Melbourne Vanuatu race, setting a new race record.

In March this year, Alive claimed line honours in the Rolex China Sea Race and broke the 16 year-old record held by one of Kwok’s former Beau Gestes. The entry list so far represents interests from Hong Kong, Queensland, Victoria, Western Australia, Tasmania, NSW and South Australia.

MEXICAN SLOW COOKER STUFFED PEPPERS INGREDIENTS

DIRECTIONS

• 5-6 (depending on size) tri-color capsicums

1. Spray the bottom of a slow cooker with nonstick cooking spray. Place the peppers inside. 2. In a large bowl combine ground beef or turkey, rice, black beans, corn, enchilada sauce, cheese, seasoning and a sprinkle of salt and pepper. 3. Place the filling into the cavity of each pepper. 4. Cook on high for 2-3 hours or on low for 4-6 hours or until the meat is cooked through. 5. Serve immediately with some of the optional toppings, if desired. Goes great with a side salad!

Hobo Dinners INGREDIENTS

DIRECTIONS

• 500g lean beef mince • 1 large potato - sliced thin • 3 carrots, peeled and cut into sticks • 1 small onion, cut anyway you want • garlic powder • salt & pepper • butter

1. Divide the ground beef into four equal portions (or smaller if you have kids). 2. Place them each onto their own sheet of aluminum foil. Shake a bit of salt over the meat. 3. Add some sliced or diced onion. 4. Lay on some slices of potato. 5. Sprinkle with a bit of salt and some garlic powder. 6. Add carrot sticks and place a knob or two of butter on top. 7. Carefully bring up two of the sides of foil and fold-over to seal, leaving a pocket of air if possible. 8. Seal the ends and place on the grill over low or medium low heat. 9. Close the grill and let cook for 15-20 minutes, or until the meat is cooked through. Alternatively, bake the meal packets in a 350F degree oven. Note: The butter helps everything get nice and brown. If the grill heat is too high it might burn, so adjust the heat if you need to.

DIRECTIONS

• 1 Tbsp olive oil • 2 boneless, skinless chicken breasts

1. Heat oil in a large skillet over medium high heat. 2. Add chicken pieces to the pan and season with salt and pepper. 3. Cook, flipping once until chicken is cooked through and golden brown. Remove pan from heat. 4. Add barbecue sauce to the pan and toss chicken to coat. 5. Place tortilla on a plate. Layer with a spoonful of barbecue chicken, cheese, pineapple, onion, chopped romaine and cilantro. 6. Roll, burrito style and secure with a toothpick. Serve immediately.

• 3 cups (360g) gluten free plain flour* • 1 tbsp baking powder • Pinch of salt • 80g butter, chilled and cut into cubes • 1/2-3/4 cup water

1. Preheat your oven to 200C/390F. 2. Line a baking sheet with baking paper and set aside. 3. In a food processor, pulse your flour, baking powder, salt and butter until your mixture resembles fine breadcrumbs and all of your chunks of butter have mixed through. 4. Add in 1/2 cup of water, pulsing until your mixture comes together. 5. If you damper mix is still too dry, slowly add the remaining 1/4 cup of water, using just as much as needed to form a dough. 6. Take your mix out of your food processor and knead until combined and then shape into mini dampers or into one round loaf. 7. If desired, score the top of your damper(s) with a sharp knife. 8. Bake for 8-10 minutes (for mini dampers) or 20-30 minutes (for a full sized loaf) or until golden and the damper sounds hollow when tapped on the bottom. Serve warm on its own or with butter, maple syrup, honey, jam etc.

Top 10 super-foods for Winter

With winter fast approaching, many of us may be starting to feel the effects of the cold, particularly in terms of joint pain, energy levels and the appearance of the odd sniffle or two. So now’s the time to up the immunity-boosting super-foods in your diet and ward off that (gasp) dreaded flu. You’ll have a spring back in your winter step in no time!

Used for thousands of years to combat disease and illness, experts recommend eating one to two cloves a day to fight off winter colds. Top tip: Don’t like the stinky breath that comes with it? Substitute with an odourless supplement.

Did you know that the humble kiwi fruit has more vitamin C than an orange? It also contains other immune-boosting antioxidant compounds and aids digestion. Top tip: Leave the skin on when juicing for a super-blast of fibre.

Sustainable Lifestyle Holidays The advantages of solar panelling on your ‘home away from home’

You’ve finally decked out your dream rig and you’re ready to hit the road for a spot of R&R in the great Australian outdoors. But does your power source measure up? If you’ve lots of gadgets to power (glampers unite!) or you’re considering off-road adventuring, then an alternative power source is a must.

Why do I need an alternative source?

Most modern motorhomes and caravans these days include 12 or 24-volt battery systems that are charged by your vehicle’s alternator, either by a battery charger (when connected to 240V) or while the engine is running. If you’re on the grid (at a caravan park, for example) you’ll be fine and dandy,

however if you’re considering a layover in a remote spot, particular for an extended period, then you’ll need to consider other alternatives. Generators are one option, however if you’re a bit of a greenie and prefer to enjoy the dulcet sounds of nature without an annoying electrical hum in the background and you also support the creation of zero carbon emissions, then solar is the way to go. Most tow vehicles already have their own alternator charging systems and in fact, most 4WDs these days are fitted with DC auxiliary batteries that recharge as you drive. This allows to you to run a portable fridge (for example) for a number of days, even when the vehicle is idle.

Similarly, many motorhomes, camper trailers and caravans have DC auxiliary batteries, which are recharged via the tow vehicle. But even if you run your built-ins off gas, your power will eventually dwindle unless you can return some of it to the RV’s battery.

So how does solar power work?

In simple terms, solar power works by collecting energy from the sun (via solar panels), which is turned into electricity and stored (in batteries), where it’s used as either 12-volt power or converted into 240-volt power (which some appliances need) via an inverter. Typically, solar panels deliver more voltage than the battery can accept, so that’s when a regulator comes into the equation – it controls the power your battery needs to recharge. The battery system, in a nutshell, allows electricity to be stored and used at

a later time when there’s no sunlight available. Hello self-sufficiency!

What are the advantages?

If you’re after a sustainable camping experience, solar panels are not only quiet (ah, the serenity) and an environmentally conscious choice, they’re mechanically sound (often lasting 20 years or more) and require no fuel. They are, in essence, a one-off investment that have low running costs and involve minimal maintenance.

How do I get them fitted?

OK, so there are DIY kits out there that may help you to have a go at fitting your own. But the process can be tricky (not to mention unsafe) and with the bewildering choice of models and sizes, your best bet is to engage a professional to get the job done properly. Plus, it will minimise the shock value!
