Combine all ingredients for the dry rub and divide evenly in two separate bowls. Set one bowl aside. Prepare the chicken by blotting dry with paper towels. Rub one bowl of seasoning under the skin and all over chicken pieces. Cover and refrigerate seasoned chicken pieces for at least 30 minutes or up to an hour. Preheat your grill. Place the chicken skin side down and grill until the skin is crisp and well browned, turning occasionally. This should take about 15 to 20 minutes. Dredge the skin side of the chicken pieces in the second bowl of seasoning and return to the grill, skin side up. Grill, covered. The rub should melt and turn into a deeply colored glaze on the chicken. Remove, tent with foil for about 5 minutes, and serve.

Happy September LL&L Legends,

It is so true the older you get the quicker time just gets away. Here we are already into September, where has the first part of the year gone? I can’t answer that, but what I can say is how incredible it has been. Busy? Yes, Stressful? Sure, Fun? Absolutely! And every bit worth it! We have welcomed many new clients to our community of providers and our community of Life stylers has grown, thank you to all of you that support us. We are growing very quickly and this is because of all of you. September has some great events around so be sure to check out the Events page, and have a good read of our feature story on Travel and Lifestyle Shows and the benefits of frequenting them. It is so important to support these shows and get involved; it really does keep our industry alive and healthy. Some of September will have us on the road and experiencing firsthand venues and destinations, and we look forward to meeting all these great people during our travels and bringing you stories and experiences in our next Month’s edition. In the meantime read up on Cairns Coconut Holiday Resort (see page 28 & 29) which is where we are heading, and we are very much looking forward to meeting the team up there and enjoying so much the Holiday Resort has to offer, together with activities in the region. We look forward to sending you updates from the road, so stay tuned here and also in the meantime on our Facebook page. Road trips are one of my favourite things to do and have loved them since I was a kid, I am very thankful to my parents for making this a huge part of my upbringing. It has contributed to being able to take our kids away now and teach them from a young age what we were taught, and let tradition do Its thing, it is so much fun making memories and giving the kids the skill set that will allow them to carry on the traditions and fill their memory bank with good times and experiences. So on that note I am packing my swimmers, my paddle board, grabbing my now hubby (married this month) and the kids and we are heading north for an incredible action packed family holiday. Toowoomba’s Camping and Leisure Expo is combined with a Spring Home Show on the 7th - 9th October and finally, Sunny Coast residents will have their own Home Show, Caravan and Boating Expo on the 21st 23rd October. And the best bit? All of the events are held over multiple days (check out their calendar for one near you), so whether you’re a local, a day tripper or keen to spend a weekend out of the city enjoying the state’s stunning spring weather, finding an expo to spend some of your hard-earned cash on is just a leisurely drive away.

Head out for breakfast at the popular Kitchen to Table, where you will walk through their funky kitchen shop, taking a browse on the way to their delicious gourmet cafe. Start at the Yamba Museum, where you can grab a copy of the Walks Guide Tour booklet and take your pick of a 3km walk. You have the ‘Hill Walk’ and the ‘Flat Walk’ to choose from. Lunch: Head back to your new home for the week ‘Blue Dolphin Holiday Resort’ and grab your tongs for the Barbie & swimmers for the pool! You’re cooking up a feast on the BBQ’s by the pool; relax with the family, after all that walking, you guys deserve it!!! Dinner: Barbaresco – Yamba’s yummy Italian restaurant. The owners have just returned from Italy, bringing along with them a fresh menu inspired by the trip. You are in for a treat!

What was that? You don’t feel like cooking breakfast? That’s handy because today, breakfast is on Reel Time Charters! Leaving at 6am from the Yamba Marina or Iluka Ferry Wharf be prepared to catch dinner tonight. How fun?!! A day on the boat with the family, alongside fishing experts from the Reel Time Charters team for only $150pp with all fishing gear, bait and food provided. Perhaps you just wanted to have a self guided fishing day out with the family? Head down to Yamba’s leading tackle store, ‘Yamba Bait & Tackle’ for all your fishing needs. Mick and Kelly Leavey are the owners of the store and are experts on everything to do with fishing. You will not only get the best lures around but some great advice on where the hot spots are. Mick and Kelly opened up Yamba Bait & Tackle over 8 years ago now and have got some really cool stories and pictures of some of the best catches around. Regularly competing in fishing competitions with great success, you really can count on this team for the best fishing gear in town. What’s for dinner? Check your buckets and esky. That’s right, its seafood night and you can’t get fresher than that now can you?! If you didn’t make a good catch, don’t fret. Wato’s Little Fish Bistro & Takeaway have got you covered!

DAY FI VE

Wow what a week it has bee n! A day of chilling out is in order. Pack your picnic baskets you ’re heading to the beach! A light breakfast with fresh fruit and some yummy wraps for lunch should do the trick. Time to stroll down to the bea ch, but which one? Yamba has 11 amazing beaches to pick from. You can’t go wrong really, the y are all beautiful. Main Beach has rock pools which are great fun for the kids to explore in. Either way basking in the sun, surf and san d is never a bad idea (unless it’s raining of course...fingers crossed!) Don’t forget your surfboards too because Yam ba has some great surf on offer. Dinner: We’ve lost track of wh at day it is, that’s what holidays are all about though, right? Well let’s just hope its Tuesday becaus e Taco Tuesdays are not to be missed at ‘The Mexican’. Wit h $4 Taco’s and $4 Tequila shots, my mouth is watering!

DAY SIX

You’re leaving tomorrow, so let’s end it with a bang (and a splash). After breakfast at the Yamba Cafe Marina, you will have to make your way to the Angourie Blue and Green Pools; you just can’t leave Yamba without doing this! Referred to as an aquatic haven, located just 10kms from Yamba, this swimming spot offers a great day out. For the daredevils looking for a thrill, jump from the 6m & 10-15m cliffs into the deep waters, or simply take a dip and walk around the rocky shores to check out the marine life that exists here (Contact council to make sure algae levels are safe before swimming). Lunch: Why not head back for a great feed at the ‘Dunes Cafe’, another popular local spot! Stop the processor to scrape down its sides and press down the mixture as needed. Grab about 1 tablespoon of the mixture and roll it into a ball. Press the ball into the coconut, coating all sides. Place the ball on a baking sheet lined with parchment paper. Repeat with the remaining raspberry mixture, making 16 balls. Place the baking sheet in the refrigerator for 2 hours before serving. Store in a sealed container in the refrigerator.

How to avoid Burn Out as a Small Business owner

Establish a time to be done with work. When you own your own business, it can definitely be difficult to really be done with work for the day. And there will be times that you’ll have to break your own rules.

But establish “closing time” as often as you can. We have a certain time that we put away our computers and spend time together, without focusing on the business. The couple of hours at the end of the day when we eat dinner and watch television together are like a breath of fresh air.

This is why I turn off my business phone and close down my email after a certain time. If a client wants to schedule a phone call after that time, I’ll typically oblige, but, otherwise, I’m not available. Of course, true emergencies are an exception to this, but don’t be afraid to set boundaries with your clients. If they don’t respect reasonable boundaries, then you probably shouldn’t be working with them anyway.

Turn off your business phone, close your email, and don’t think about work. You deserve a mental break! And this will help you avoid burnout.

Make time to exercise. This is a tricky one for me personally. It seems like this should be at the bottom of my list when I’m swamped with work! But I’ve found that exercise keeps me awake, makes me more productive and fuels my creativity.

Have a designated workspace. Instead of working at the kitchen table, establish a designated “work area”. If you don’t have space in your house for an office (assuming you work from home), even finding a place for a desk is a great idea. Try to keep your paperwork, etc. confined to that area.

Even if you don’t have time to go on a run or make it to the gym, just go for a walk around the block! Luke and I try to take walks together several times a week. It’s a calming, refreshing way to spend time together and break up the stress of the workday.

And make your workspace inspiring! Flowers and colorful artwork can do wonders for your creativity. Adding prints of your favorite quotes are a great way to stay inspired and motivated.

Get sleep! This may seem like an obvious one, but both my husband and I struggle with it. It sometimes seems as though I could work for days straight and still not be done with everything! And there are definitely some nights when I have to get very little sleep to meet an important deadline.

Establish boundaries with your clients. This can be a hard one. After all, you want your clients to feel as though they’re your number one priority! However, you can’t do this at the expense of your own sanity. If you’re burned out, they won’t receive high-quality work anyway.

Start the day off with a daily affirmation: Making a commitment to having a positive day will go far. Starting off your day with a prayer, scripture or positive readings will prepare you for whatever is ahead. Reassess your focus and tackle your day with a positive perspective. 5. Stick to your alarm clock: Make a commitment to yourself to avoid the snooze button the usual ten times per morning. That extra sleep between “snoozes” is only making you more tired. Hop out of bed and just take a few minutes to allow yourself to wake up.
