Welcome to another edition... Welcome LL & L readers, What an issue ahead of us this month, Anzac Day, Mother’s Day, long weekend, boat shows, events and so much more (see our What’s On page!) I hope you all took some time out to share Anzac Day, I was lucky enough to spend my Anzac long weekend with my 93 year old grandfather who served in WWII. Having our kids join him on stage, in front of the entire school while he read his poem “Upon Gallipoli”, as the kids sat proud and listening intently to the service, I must say how proud I was as a mother, a daughter, a business woman and granddaughter to my grandad Arthur Rosbrook, serviceman Australian army, to have the opportunity to continue to educate the younger generation of this special day and to understand as much as possible what these great people did to allow us the freedom and life we have today was such an honour. The service held at AB Paterson College on Friday 22nd April, coordinated by the school will hold a special place in our hearts for an eternity. Not only sharing the service with the kids and their great grandfather and family but the efforts people went to from the school including principal Brian Grimes, his PA Kathy and their team such efforts being a reminded that good people doing random acts of kindness is still present in our community and for that it instils faith back in humanity. The poem read “Upon Gallipoli” was the work of 93 year old father of 3, grandfather of 7, Great Grandfather to 11, Serviceman of Army, WWII Veteran, loving husband, business man, and as it is an offense to show the Rising Sun on any work unless approved by the Australian Army, the Team at AB Paterson sort this, for this poem and was approved. A gesture that was over and above expectation but made a difference to our family. What an inspiration. In a busy life of deadlines, meetings, agendas we all seem to be too busy for these acts of kindness and to reflect our true everyday heroes. This month take time to focus, reflect and to be grateful for all the things we have, don’t always be on the hunt for what we don’t - take pride and focus on what you have achieved and what you have got done in a day, a week a month and not what you didn’t and do a good thing for someone, and know that when your 93 you could look back and be proud of the life you have lived. Life is to be well lived and what a country we live, so this month when you have the chance to spend it with family, take out the boat, the kayak, the paddle board or you get the time to go for a walk.. be there, be in it and be mindful of your surroundings and just be. Take the time to celebrate mum this Mother’s Day and if you are a mum then sit back relax and be fussed over because every Mum deserves it. We have had a blast bringing you our mag this month and hope you love the read :) Love Life,

Grilled Coconut, Pineapple & Sweet Chilli Prawn Skewers INGREDIENTS

DIRECTIONS

FOR THE COCONUT AND PINEAPPLE SWEET CHILI SAUCE: 3 tablespoons coconut cream 3 tablespoons pineapple sweet chili sauce 1 teaspoon sriracha, or to taste

FOR THE COCONUT AND PINEAPPLE SWEET CHILI SAUCE: Mix everything.

FOR THE GRILLED SHRIMP: 1 pound (20-25 or 16-20) shrimp, peeled and deveined 2 slices pineapple, cut into 1/2 inch pieces

FOR THE GRILLED SHRIMP: Skewer the shrimp and pineapple and grill over medium-high heat until cooked, about 2-3 minutes per side. Brush the sauce onto the shrimp and enjoy!

BARBECUED SEAFOOD SALAD WITH GARLICKY GREEK YOGURT DRESSING INGREDIENTS

DIRECTIONS

Seafood: 3 tablespoons olive oil 1 clove garlic, crushed 2 tablespoons parsley, chopped finely Salt to season 1x 120g | 4.2oz fresh Atlantic salmon fillets 100g | 3.5oz Calamari Rings 200g | 7oz King Prawns (or shrimp), peeled (tails intact) and deveined (frozen or fresh) 4 cups mixed lettuce leaves (I used one with Rocket/Arugula and Cos lettuce for extra crunch) 2 lemons, cut into wedges

1. Combine olive oil, garlic, parsley and salt in a large shallow bowl. Add the pre-washed, patted dry seafood to the oil mixture to coat evenly. Cover and refrigerate for 15 minutes to marinate. 2. While the seafood is marinading, prepare the salad and dressing; wash and dry lettuce mix ad place into serving bowl/s. Whisk the yogurt, garlic, parsley and lemon juice in a small jug/bowl. Season with salt to your tastes. 3. Preheat the barbecue (or grill). Cook the salmon first; both sides until seared and cooked to your liking (about 4 minutes either side). Set aside onto a warmed plate. Add the prawns and calamari rings; cook for 2-3 minutes, turning occasionally or until just cooked. Transfer to plate. 4. Top the salad leaves with the seafood; drizzle with dressing and lemon juice; serve with lemon wedges.

Greek Yogurt Dressing: ½ cup Greek Yogurt 1 garlic clove crushed (or 1 teaspoon garlic powder) 2 tablespoons freshly chopped parsley 1 teaspoon squeezed lemon juice Salt to season (about ½ teaspoon)

DIY Watermelon Keg YOU WILL NEED...

Large seedless watermelon Sharp knife • Big spoon Sieve • Power drill 3/4 inch hose bibb threaded faucet O-ring (that fits the back of the faucet) Drink-dispenser stand

DIRECTIONS

1. Cut a hole at the top of your watermelon, jack o’ lantern style. Using a large spoon, scoop out the flesh of the watermelon and put some directly into your blender. Put the rest in a large bowl, and set aside. 2. Drill a hole about 4 inches from the bottom of your watermelon, using a knife to slightly widen the hole so it’s just slightly smaller than your faucet. 3. Place your O-ring on the back of your faucet and gently screw the faucet into the hole. Next, test your keg by filling it with water and using the faucet. NOTE: Our keg worked great with just the O-ring and faucet, but if you’re having trouble with the flow, we recommend adding an additional PVC faucet adapter that will screw into the back of the spout.

Grilled Barbecue Chicken and Vegetables in Foil

INGREDIENTS DIRECTIONS 8 aluminum foil sheets large enough to wrap 1. Preheat the grill to medium-high heat. around one chicken breast 2. For each foil pack, prepare two sheets of aluminum foil; 4 (4-ounces each) boneless, skinless chicken breasts place the sheets one on top of the other for durability. ½-cup barbecue sauce (use your favorite) 3. Place one chicken breast on each stacked pair of foil 1 zucchini, sliced into thin rounds sheets; season with salt and fresh ground pepper. 1 red, green or yellow bell pepper, cut into thin strips 4. Brush each chicken breast with 1 to 2 tablespoons barbecue sauce. 8 asparagus spears salt and fresh ground pepper, to taste 5. Divide equally and arrange vegetables around each extra virgin olive oil chicken breast; season with salt and pepper. 6. Drizzle chicken and vegetables with little olive oil. 7. Fold the sides of the foil over the chicken, covering completely; seal the packets closed. 8. Transfer foil packets to the preheated grill rack and cook for 20 to 25 minutes, or until done, turning once. 9. Chicken is done when thermometer reads 165 F. 10. Allow the chicken to rest for a few minutes. 11. Serve.


Anzac Biscuits INGREDIENTS

DIRECTIONS

1 cup plain flour 1 cup rolled oats 1 cup brown sugar 1/2 cup coconut 125 g butter 2 tbs golden syrup 1 tbs water 1/2 tsp bicarbonate of soda

1. Sift the flour into a bowl. Add the sugar, rolled oats and coconut. 2. Melt the butter in a saucepan and add the golden syrup and water. 3. Stir the bicarbonate of soda into the liquid mixture. 4. Add the liquid to the dry ingredients and mix thoroughly. 5. Place walnut-sized balls of mixture on a greased tray and bake at 175C for 15-20 minutes. 6. Biscuits will harden when cool.

Beating a Cold Naturally

Drink Up - For your body to heal and flush out toxins it needs water to do this. If your body is dehydrated, the waste becomes stagnant in the body and can’t move anywhere. Drink at least 2-3 litres of water each day to ensure your body is getting all that it needs.
