BOI’S LIFE My name is Rick and I’m a shopaholic. It’s been 48 hours since my last purchase and I’m jonesing for a fix. As addictions go, I keep mine under control. I never buy anything I won’t use, but my closet has turned from a walk-in to a reach-in. My husband says that the only reason I do drag is to justify my purchases in the women’s department. You mean everybody doesn’t have a size 18 leopard print evening gown with matching stilettos in their closet? With the first of two issues focused on holiday shopping (Hey, Hanukkah is early this year) we take a look at the etiquette of regifting (you know you’ve all done it). We also offer up some gift suggestions for all the folks on your list from your teen niece to the drag queen next door. Our pop culture diva, Gregg Shapiro, takes a look at DVD collections featuring entire seasons of some of your favorite television shows, from Glee to Mary Tyler Moore. Elsewhere in the issue, I give you a peek inside my recipe box and share a few of my favorite holiday dishes. My mother’s sweet potato dish gets raves from everyone who tries it, and you won’t believe her secret ingredient. Finally, for those who don’t cook, our holiday dining guide offers suggestions for places around town where you can dine in comfort and let someone else worry about the cooking and cleaning. Now that’s something to be thankful for. Enjoy your holiday and remember to take a brisk walk after your Thanksgiving feast or the tryptophan will put you in that post-meal coma. Rick Karlin

t’s holiday shopping season. It used to be that folks fell into one of two categories when it came to holiday shopping. They either loved it or hated it. Now there’s the third category, those that shop on the Internet. I’ve always been among those that enjoy perusing items in the store, finding just the right present for someone. However, when the weather is lousy or I just can’t deal with the crowds, I’m not opposed to web browsing. While it may lack that tactile sensation I get from feeling fabrics, the flip side is that I don’t have to cart the crap around and, in many cases, I don’t have to pay sales tax. In Chicago that’s a significant chunk of change. Whether you choose to hit the pavement or the keyboard here are some suggestions for gifts your loved ones will cherish.

used to think that making a Thanksgiving meal was a big deal. My mother would be running back and forth in the kitchen for days. Turns out, Mom was not very efficient in the kitchen. Preparaing a nholiday meal isn’t all that hard, all it takes is some planning. Flip ‘em the Bird Making a turkey is easier than most people think. If you can afford it buy a fresh, kosher turkey, the flavor is much better. If only a frozen turkey fits your budget, allow it to defrost 3-4 days in the refrigerator .

Trailer Trash Sweet Potatoes After tasting this dish, you’ll be a Pepper, too.

There are three secrets to a moist and flavorful turkey. Brining the turkey before roasting it assures a good moist bird to start with. The basic ratio for turkey brine is two cups of kosher salt to two gallons of liquid. Dissolve salt in two cups of hot water. Stir in remaining liquid. The remaining liquid may be water, or for more flavor, replace all or part of the water with apple, cranberry or orange juice or a combination of the three.

Peel and chop sweet potatoes into slices about half an inch thick. Place in a large saucepan and cover with Dr. Pepper. Bring to a boil and simmer for 20-30 minutes or until soft. Drain the pot, reserving the liquid. At this point you can mash the potatoes or leave them in chunks. Simmer the remaining soda and reduce until it has a syrup-like consistency. Either add it to the mashed potatoes or pour over the chunks., salt and pepper to taste. This can be done a day ahead and reheated in the oven or microwave. Before serving, sprinkle with chopped pecans.

Immerse the turkey in brine and refrigerate for at least eight hours but no longer than 24 hours.

Deconstructed Green Bean Casserole An elegant take on the classic.

Pour off the brine. Rinse the turkey well with cool tap water, and pat dry with paper towels. Tuck the wing tips behind the back. Preheat oven to 350°. Stuff the turkey cavity with 1 onion, 1 to 2 the carrots, 3 stalks of celery, 1 sprig of rosemary, and a bay leaf. Rub ½ cup of olive oil onto the turkey skin and sprinkle lightly with kosher or sea salt.

Prep 2 pounds of fresh green beans (or use one bag of Costco’s frozen haricot vert). Blanch in boiling salted water (if using frozen beans, just defrost and drain). Slice and sauté mushrooms and combine with 1-2 jars of prepared al fredo sauce. Place the green beans in a lightly buttered baking dish and top with the sauce mixture. Bake in a pre-heated 350° oven for 20-30 minutes (or microwave for 8 minutes). Top with canned fried onions and bake 10 minutes longer.

The second secret to a moist bird is to place the bird, breast-side down, on a rack in the roasting pan. Add an equal amount of the ingredients placed inside the turkey around the bottom of the roasting pan. Add 1 cup of white wine to the pan. Roast uncovered in the preheated oven. A good rule of thumb for cooking an unstuffed turkey is 20 minutes per pound, or until the internal temperature of the thigh reaches 180°. Carefully turn the turkey breast side up about 2/3 through the roasting time, and brush with additional olive oil. The final secret to a moist turkey is to tent loosely with aluminum foil after it is cooked and allowing to rest 20-30 minutes before carving. This allows the bird to reabsorb moisture released during the cooking process and you to kick back and have a cocktail. 14 boi

Corn Pudding This dish can take the place of a vegetable or stuffing. Place two boxes of cornbread mix into a large bowl. Add 1 cup of milk, 1 cup of shredded cheese (your choice, I use pepper-jack), 2 beaten eggs and a large bag of frozen corn. Mix well and place in a buttered baking dish. Bake at 350° for 30 minutes or until a knife inserted in the middle comes out clean. Round out the meal with some cranberry sauce (make your own if you like, but I’ve never found anything better than Treasure Island’s brandy pecan cranberry sauce).

The four DVD set also includes a wardrobe full of bonus material.

The term regift was first coined by comedian Jerry Seinfeld a decade ago and the word (and practice) have become so commonplace that the term is now listed in dictionaries. Even the etiquette experts at the Emily Post Institute approve of the practice in some circumstances. As with many practices, the acceptability depends on how it is implemented. If you don’t plan to announce the gift as a regift, ask yourself if you can keep the secret. Never feel guilty about regifting once you’ve done it. Some gifts that are good candidates for regifting include good bottles of wine, boxed candy or food gift baskets (need I mention that they all should be unopened?), new household items and inexpensive jewelry. If you are thinking about regifting this holiday season, take note of the following guidelines: Regifts are not hand-me-downs. Whatever you are regifting should never have been used or worn. A regift should be just that: a gift you’ve never used that you’re giving away as though it were a… real gift! = Keep your yap shut. Don’t mention it, please. =

= =

Update the wrapping and make certain the original gift tag has been removed = Never regift handmade or one-of-a-kind items. = No promotional items that you got for free or have a company insignia. = Never give partially used gift cards. = Don’t give items that you have owned for a long time. A general rule of thumb: if you have to dust it off, it is not regiftable. = The gift should be appropriate for the person. Does your teenage niece really want a power drill? = Certain items are a total, dead, instant giveaway that you not only are regifting, but you’re also too lame to put any effort into it: candles, soap, random books, cheesy jewelry, scarves, cologne and any weird appliances or electronic gear. =

Finally, keep track of who gave the gift to you first. If you have a store of things that you plan to regift, attach a Post-It note with name of the person who gave you the gift. Of course, you don’t want to regive the person who gave you the gift, but you also don’t want to regift it when they might be present.
