the basis of the vineyard today, and at a stroke brought California into the world of great wine. The great San Francisco earthquake of 1906 destroyed the winery, but it was restored in 1940, in keeping with the original plan.

The Buena Vista Winery adds another house which has contributed to the history of Californian wine: DeLoach Vineyards, famous for having planted Pinot Noir in the Russian River Valley (Sonoma); Raymond Vineyards, among the first of the Rutherford appellation in Napa Valley; and the Lyeth Estate, founding member of the Bordeaux tradition of meritage with its Alexander Valley varietals.
Change within continuity; that could sum up Boisset’s mission. The Pinot Noir, Chardonnay, Merlot and Syrah grapes that make up the range will continue to be supplied by Ramal Vineyard Estate at the heart of the Carneros appellation. Some 112 plots covering 228 hectares of vine provide a variety soil types, which, when combined with careful selection of clones, helps to make up a palette of high-quality grapes. The daily mists and breeze from the bay bring a freshness to the local climate that is ideal for these varietals to express themselves.
In his book “Grape Culture, Wines and Winemaking” (New York, 1862), Agoston Haraszthy recounts how he was horrified in Burgundy by the sight of naked men in fermentation vats. He thought this practice helped the wine ferment thanks to their body heat, when in fact the reason for it is quite different. Haraszthy spent a fair amount of time in Burgundy and that is where he acquired the plants for his vineyards in California, among the countless varietals that he introduced there.
For Boisset, bringing out the best in the originality of these wineries is second nature on both sides of the Atlantic. Especially since the history of this particular property is intrinsically linked to wider history. The founder of Buena Vista in 1857, Count Agoston Haraszthy was quite a character. It was he who first introduced Vitis vinifera,

THE 2010 HArVEST In Burgundy and the Beaujolais No two years are the same. Whereas 2009 was dazzling, 2010 proved to be a considerable challenge. Nonetheless, the reds are showing intense colors, while the aromatic whites have a distinct vivacity that bodes well for longevity. Overall, however, quantities are significantly down. Carefully monitored harvests; 2010, the exact opposite of 2009 The first cut of the secateurs came on 20 September, just as the temperatures started to drop with the arrival of fall, and after a chaotic growing season. The vines at the end of their cycle were slowly turning brown, the plants clearly having not much left to give. 2010, a cold and damp year A seemingly endless winter, from Chablis all the way down to Beaujolais, and appalling weather conditions right up until harvest. No sign of global warming this
year, but truly topsy-turvy seasons. Spring was chilly, leaving the vines late to burst into life. The cold and rain interfered with the flowers in June, causing irregular fertilization which led to lots of millerandage (large and small berries on the same bunch), and much less fruit per vine. Summer could have been better, but instead only managed three weeks of sunshine, the rest of the season being cold and damp. On the eve of the harvests, the grapes were ripe but fragile and irregular. So 2010 will definitely go down as a “winemaker’s vintage”.
2010 in the North American vineyards In California, in the Russian River region of the Sonoma valley, where the DeLoach terroirs are situated, and in the Napa valley further south where the Raymond vineyards traditionally enjoy
warmer temperatures, poor weather conditions were the main feature of a chilly springtime which slowed vegetative growth. Overall, the climatic conditions led to unusually small yields. Two big heat waves at the end of summer were not enough to alter the quality of the grapes, which was in the end quite impressive, with some very aromatic and concentrated fruit. On this side of the Atlantic too, the role of the winemaker in 2010 was as decisive as ever, both for the date of harvest from plot to plot, and for decisions on vinification, vat by vat. The 2010s currently ageing are showing great elegance and structure, not altogether unlike their European cousins!
Crémants de Bourgogne 2010, delicately fruity! The 2010 vintage was a challenging one, with cold, damp weather, irregular
flowering and low volumes from a fairly late harvest in mid-September, which stretched over a month from the south of Burgundy to the north. Despite all this, the grower striving to meet rigorous specifications was rewarded with good quality grapes with pronounced acidity. The particularity of Louis Bouillot lies in the diversity of its sources of grape supplies, which encompasses a wide range of terroirs. And a range of terroirs means a choice of complementary elements to contribute to the complex and subtle cuvées which characterize the house style. The Beaujolais gave rounded and full-bodied wines, the Côte Chalonnaise and the Côte d’Or provided structure and fruit, the Chablis region and the Côte Châtillonnaise were all about freshness and elegance.
Cuvaison 2010 In Burgundy, the time in vat has to be judged so it is not too long, when excessive extraction of tannins could lead to bitterness, nor too short, in which case the wine would lack body. This intense biological activity promotes the extraction of color and tannins. Overall, the time in vats was a little shorter than last year, with between 20-23 days. The pigeages, or pushing in of the caps, was a tough job because the floating layers of skins contained little juice and were very compact.
Initial tastings reveal wines that are airy, very pleasantly fruity, with notes of apricot and vine peaches for the Chardonnays, with raspberry and blackberry aromas present in the Pinot Noirs.

A delicate lacework of Pinot Noir With only 2,000 bottles produced annually, this emblematic wine of the maison Jean-Claude Boisset is a truly hand-stitched cuvée, the embodiment of sophistication and delicacy, and this ninth vintage confirms the exceptional nature of this climat. A delicate lacework of ruby red Pinot Noir with sweet floral notes enhanced by vinification of whole bunches when the year calls for it. Its fine length competes with a silky sensation that delights the palate. This is Pinot Noir at its most delicate. The effect of the terroir is undeniable, although it is rendered more subtle by the vintage. Bare, chalky soil and an easterly aspect perfect for catching the rising sun, the grapes here take their time to mature like a rose warmed by the sun’s rays that opens its petals one by one. The two plots of vines aged 60 years and 20 are currently in the process of being certified organic and are vinified with no artifice to allow them to fully express their potential. That is all that is needed to ensure that the Chambolle-Musigny Premier Cru Les Charmes has figured among the estate’s flagship wines since the 2002, winemaker Grégory Patriat’s first vintage.

But not everybody knows that the region is made up of a patchwork of winegrowing plots or climats, over 1,000 at the last count. Bees as a symbol of life itself Not far from Les Ruchottes-Chambertin, which gives its name to one of Burgundy’s most prestigious appellations, the Domaine de la Vougeraie has returned to traditional practices, last year installing beehives in its biggest plot of almost three hectares at Gevrey-Chambertin Les Evocelles.

WELCOME TO BâTArd-MONTrACHET the Domaine de la Vougeraie has just added one of the most prestigious white Burgundies to its existing five white wines*: Bâtard-Montrachet. Bâtard-Montrachet is located just below the road that separates it from Montrachet, at an elevation of 240-250 meters, similar to ClosVougeot. There’s nothing elaborate to mark the spot, it all happens in the soil. A soil which is quite a deep brown enriched with clay and silts carried down from the hilltops with many little limestone pebbles that prove so beneficial to our Chardonnay. Bâtard-Montrachet covers just under 12 hectares spread among 16 owners – in other words, a very fragmented area. We managed to acquire two plots which cover a total of 19.88 ares (almost one-fifth of a hectare), which should produce three or four barrels annually, equivalent to around 1,000-1,200 bottles.
The upper plot, below the famous route to Montrachet, numbers just 15 rows. It is a plantation comprised mainly of magnificent knotty old vines. One very noticeable particularity in this area is the pruning using the so-called Cordon de Royat system, which opens out on either side of the wire in wide arms. The vines grow quite high here and are densely planted, as is usual among the great whites, with around 12,000 vines/hectare. The competition between the vines encourages a low number of bunches per plant, resulting in the sought-after concentration. The lower plot, just a few yards distant from the first, is made up of 10 rows. Planted more recently on slightly deeper, well-tended soil, it seems to have more energy.
The wines of Bâtard-Montrachet are generally very opulent, and are carefully cultivated to avoid heaviness in the tradition of the Cistercian monks who were once a major influence here, according to wine writer and Burgundy specialist Jacky Rigaux. In his opinion, the best years can rival Montrachet.
Six hives now look down from the hillside over these vines en foule, far from any houses and protected by the forest. This is where our bees have now made their home, and from where they forage, busily buzzing around, a symbol of life itself. Of the three swarms, one is thriving and we have already harvested the first 100 pots of honey. The idea of this small-scale initiative is to establish a virtuous dynamic, promoting pollination thanks to the bees and thereby contributing to biodiversity. A second harvest is keenly anticipated for this summer.

A new winery for Ropiteau
like a cathedral
Ropiteau’s new vinification cellar is cathedral-like in its volume and inspiration, but don’t look for Romanesque or Gothic art on the outside. It is inside that one encounters the spirit of the place – an almost sacred spirit that contributes to the creation of a wine. For it is here that a wine is born and where, during its very first moments of life, it reveals itself to the world and sketches out its first characteristics that will be refined. This winery, to be inaugurated with the 2011 vintage, will house 57 stainless-steel vats of varying volumes to accommodate the production of the various climats which range from 4-50hl, for a total capacity of 2,000hl – almost double the capacity Ropiteau had before. These state-of-the-art vats are temperature-controlled to the nearest degree thanks to thermal belts. This facilitates the winemaker’s work and frees him up in his vinification choices which can now be determined solely by the needs of the wine and not by technical constraints.
Good equipment opens up a winemaker’s options and Ropiteau’s self-effacing man at the helm, Nicolas Burnez, whose gentle hands have guided the hand-stitched cuvées at Ropiteau Frères since 2003, is smiling because he is now able to give free range to their nature and – we hope – capture their very soul. The freshly-picked grapes will come into the winery and be pressed using two pneumatic presses. The must is usually left to settle for 24 hours to remove the heavier matter that could have a negative effect on the future wine’s aromatic profile. The winemaker likes fermentations to follow their own natural rhythm in the vat, at least three days before they will be put into barrels in the cellar using gravity and no pumps. Between 650-800 pièces are produced every year which will be aged in the now temperature-controlled
cellars. Although the oldest dates back to the 15th century, Ropiteau’s cellars are still sometimes subject to temperature variations. The wines will complete their second fermentation – the malolactic fermentation – before being perfected through an ageing process that lasts between 8-14 months depending on the climat and the vintage. Finally, the wines are brought back up one more time to the winery to be blended and will finish their marriage in stainless-steel vats for around three months before the final bottling stage. The courtyard has even been redesigned to better manage the arrival of the grapes. Fluidity now and always for pure and airy wines that reflect the luminous spirit of Ropiteau Frères.

Meursault climats 2008 – the revelation! The 2008 vintage was a tricky one with some harsh and unpredictable weather that played havoc with the vines. Yields were low but the grapes were in nice little bunches with good millerandage, foretelling good concentration and acidity, the signs of a long life. From the outset, Nicolas Burnez, winemaker at Ropiteau Frères, had an inkling of the potential for these future wines. The vinification was fairly technical with strict sorting of the harvest, fermentations
that were slow to start but which were steady-paced thanks to the ambient cold temperatures, revealing intensity and freshness that indicated the first tangible signs of quality. This was followed by a long ageing process with some exceptional batonnages or stirring of the lees to underscore this nascent wine which has proved to be exceptional. The vintage was a Burgundian one par excellence which needed time to find the right balance. The wines, which
were bottled after 18 months, today confirm their promise, their ageing potential and the talent of the winemaker. On tasting, their nervosity is a delight even if the wines are still rather reserved, but they offer fine minerality and a very well-structured framework on drinking now. Alternatively, one could always wait a few years for that perfect harmony that is the supreme reward for the collector! Presented in a limited-edition wooden case of three or
six bottles* with a booklet detailing each wine, this selection among the 11 Meursault climats that is made each year demonstrates to what extent a village may have so many different sides to its nature, just like Burgundy with its infinite nuances. Chablis Premier Cru Le Mont de Milieu
The Mont de Milieu climat stretches across 34 hectares in the communes of Fleys and Fyé on the right bank of the Serein river. This premier cru enjoys a geographical situation that is comparable to those of the grand crus and a south-southeasterly aspect that guarantees the best of the sunshine. The Chablis Premier Cru Mont de Milieu from J. Moreau & Fils comes from three plots with a total surface area of 2.3 hectares. The first plot lies at the top of the slope, the second in the middle and the third at the bottom. The slope becomes less steep the further down one goes. These moderately-deep soils are very rocky and lie on a bed of Kimmeridgian marly chalk. Often, the grapes from the lower plot are very expressive and offer a perfect balance of sugar and acidity, resulting in a highlyaromatic must with hints of roasted almond. For the 2010 vintage, the concentration of sugar was exceptionally high with potential alcohol measuring almost 14°. Moreover, after vinification and a slightly capricious malolactic fermentation, the acidity levels indicated a very powerful wine. Given its intense aromas, the wine was vinified in stainless steel vats to allow all the complexity of the terroir to come through.

“the weather’s fine, and it’s been fine all the way. We’ve got summer ahead of time!” “This very warm, bright, dry spring with plenty of wind is highly favorable for the development of the vegetation without any stops and starts. By the third week of May, we’re ahead by around three weeks compared to a typical year. “The vines are in tip-top condition and bud-burst was very early, with exceptionally warm temperatures up to 30°C. We noticed the first flowering on the sunniest plots in mid-May. The vinegrowers have had to get their skates on with lifting up and attaching the rapid growth and
removing the unwanted shoots lower down the vine. Some have already even started cutting back the tips. It’s all going very fast this year. “The conditions here reminds us of 2003 or 2007, with harvests expected to start at the end of August or early September if things carry on in the same vein. It’s crazy! In Chablis, the best exposed premier crus and grand crus are the vines that are most advanced. We’re keeping our fingers crossed that the flowering, which extends over three weeks or so, is not hit by storms
or hail in this heavy, threatening weather. If we avoid that, on top of the quality due to this sunny spring, we will have good yields thanks to weather conditions which until now have been ideal. Vines are very resistant to heat and drought, so with a little luck we’re, on for a great year. In any case, it is nature that will decide. The jury is out until September, since the coming months will, as always, be decisive.”
After six months of ageing, the wine is already showing itself as extremely promising with exceptional keeping potential. On the nose, hints of roasted almond mingle with grapefruit zest, passion fruit and cinnamon. On the tongue it is both fresh and rich, with hazelnut and toast aromas. WINES, fALL fLAVOrS ANd gAME since 1998, the November wine auctions have been the occasion for the Maison Bouchard Aîné & Fils to offer an exceptional tasting in the sumptuous setting of the Hôtel du Conseiller du Roy in Beaune. Old vintages, wine from the barrel, red, white and sparkling; all the variations of Burgundy brought together in one place for the duration of a weekend.
The “Seafood and Shellfish” theme for 2010 provided a highly-original tasting experience.
Staying true to its pioneering spirit since 1750, more than 250 years later the maison is adding a sensorial dimension to its prestige tastings with enticing wine and food combinations. Harmonious or clashing flavors and textures, but always emotion and the pleasure of tasting – this is the promise extended to guests during the Hospices de Beaune wine auctions. The winemaker at Bouchard Aîné & Fils has put together this event based on combinations that are sometimes unexpected but always delightful. The choices are guided
more by feeling than intellect, in keeping with the spirit of the tasting experience “Parcours des 5 Sens ®”*. Burgundy cheeses were centrestage for the first such tasting, followed by cheeses from elsewhere. In 2009, it was the turn of chocolate, giving some luxuriant and provocative marriages between sensuality and passion. In 2010 came the bold combinations of shellfish and seafood, a briny plunge into some combinations that shattered received ideas, thanks to the variety of Burgundy
appellations which offer infinite sensorial possibilities. This year, pride of place goes to the seasonal delights offered from the region’s forests that were once so appreciated by the Dukes of Burgundy. A return to grassroots Miss Mommessin is returning to her roots and calling an end to her hectic lifestyle and world travels. Now it’s time to enjoy the pleasures of sharing and conviviality. She’s putting down her suitcases and celebrating the arrival of Beaujolais Nouveau with her close friends. After all the excitement of her youth, it’s time for a more indulgent and serene maturity. It’s also a return to one’s roots for the maison Mommessin which, in 2004, called upon a street artist to illustrate its primeur labels. This year, it’s the turn of Christophe Renoux, a painter from the Beaujolais, who will be bringing his personal vision to Mommessin’s 2011 primeurs. The result is a vividly colorful label for a Beaujolais Primeur that is the perfect accompaniment for a simple yet joyful Sunday lunch in the country.

and Muscat’fizz? It is the fact that they are created using the “ancestral method” in vats, which captures all their fruity freshness in a bubble, whilst keeping the alcohol degree at 7.5°. Gamay’fizz and Muscat’fizz are simple pleasures to enjoy and to share, at the very sweet RRP of €5.90.
Ancestral method The sparkle is obtained from pure grape juice rather than from wine. Alcoholic fermentation is triggered naturally at low temperature and is interrupted when the desired degree of alcohol is reached. The prise de mousse occurs thanks to the natural fruit sugars present. The wine is cooled and then filtered before being bottled. There is between 40-60g/l of natural sugar in the bottle, depending on the vintage which gives the wine its characteristic sweetness and requires that it is enjoyed well-chilled. Another particularity is its low degree of alcohol, at around 7.5°. This method is particularly suited to wines from more aromatic varietals such as Gamay because they allow for a full expression of the fruit.

After the perfect 2009 vintage, it’s time to discover the 2010 version... Maybe because it was made by a woman. Or maybe because her vines were pampered. Or perhaps it’s because the Brouilly terroir is made up of pink granite, schist and silica which encourage smooth, powerful wines. Indeed, the answer lies in the
questions, because it is a combination of all these things that mean the 2010 Brouilly from the Château de Pierreux is a wine bursting with fruity blueberry and blackcurrant flavors, which evoke the sensuality of the slopes of Mont Brouilly.

La Cuvée Perle Rare 2007 from Louis Bouillot offers all the qualities of an exceptional sparkling wine. A powerful and sophisticated cuvée, it offers a perfect balance that highlights the painstaking work of the sparkling wines team.
Louis Bouillot was awarded the bestin-class Trophée for the sparkling wines with Perle Rare 2007. It was selected from 409 sparkling wines tasted, 122 of which had been awarded medals in the competition. Of the festive wines in competition, 91 were French, mainly hailing from Champagne and Limoux with retail prices of between €5-80.
Its equilibrium stems from Perle Rare’s Burgundian origins with their highly complementary terroirs From north to south: Yonne, Chatillonnais, Côte d’Or, Couchois, Mâconnais. It also comes from the blend of varietals used, dominated by the powerful Pinot Noir at 60%, softened by the freshness of Chardonnay with 35% and the fruitiness of Gamay providing the remaining 5%. Lengthy ageing sur lattes for two and a half years and a medium dosage of 10g/l help bring
The bright and golden color of Perle Rare goes on to reveal lightly toasted spicy notes which in turn open onto the delicate aromas of apricot and white acacia and peony blossom, ending up with a zesty citrus finish. In the mouth, the attack is fresh thanks to an ideally cool vintage. It offers tension, yet breadth and is a full wine with interesting relief and a long, powerful finish.

From 25 June until 31 August, 13 artists – painters, sculptors, ceramicists, jewelry designers and glass-blowers – will show their works in the prestigious surroundings of this ancient medieval fortress, a registered historical monument. Art and wine lovers will enjoy the exhibition to discover works normally found in art galleries. Among the internationallyrenowned artists selected by the Sara Sarras gallery are
the guests of honor, sculptor Agnès Rispal and painter André Deymonaz. Grapes on the estate come from vines protected from fertilizer and treated dynamically. Hens and sheep are part of the landscape and the source of energy for the winery is exclusively green. Rainwater is collected and naturally purified in a further step to ensure that the environment here is protected to the highest degree. Plants and animals grown and reared following biodynamic principles offer a pristine showcase in the heart of the vast and imposing Californian landscape. DeLoach and Kingsborough College Event The first step in the best kitchen garden competition was taken on 3 November 2010 at the New York university of Kingsborough Community College. A unique project to foreground the kind of organic cultivation that is so dear to DeLoach. The operation was publicized across the state via paper collars containing seeds that were put around the necks of 5,000 bottles. The money raised from these sales will go to the first organic city garden in Brooklyn.

Raymond adopts the “Barrel to Barrel” approach After DeLoach, who successfully invented the barrel to barrel concept in 2009, now it is the turn of Raymond Vineyard to adopt these little barrels as an original way for restaurants to sell wine by the glass which is both environmentally friendly and economical. The refills are much lighter to transport than traditional solutions and can be stored very easily without wasting space. There is less packaging, the risk of ending up with a “corked” wine is removed, there is no breakage and it is much easier to both fill up and empty! Moreover, the freshness of the wine bag is guaranteed for four months and bottle, label, cork and carton costs are removed. This “eco-bag” provides a simple way to offer quality wines at reasonable prices, which in turn ensures substantial profits for the restaurant. Small “Quarteau” threeliter barrels are also available from the boutique to enjoy at home. Blended with a little Merlot and Syrah, this Cabernet Sauvignon has a silky texture without any harsh tannins and remains Raymond Vineyards wine par excellence.

Across the Atlantic
BACCArAT ANd BOISSET UNITEd IN BEAUTy Two venerable French companies, Boisset and Baccarat, chose the other side of the Atlantic as the place to bring together their centuries of craftsmanship in wine and crystalware respectively. Already in 2008, Bouchard Aîné & Fils, Boisset’s signature for Beaune wines, used the celebrated crystal-maker’s glasses as part of its interactive sensory exhibition, the Parcours des Cinq Sens®. Since the start of the year, the two partners have embarked on a fresh adventure on a wholly different scale, in which the sparkle of the purest glass perfectly reflects the
ruby and gold of the wines. The scintillating combination took its bow at the Healdsburg boutique “Taste of Terroir”, which opened last summer as fabulous theater in which Baccarat chandeliers, its jewelry, its carafes and glasses all sparkle as part of hedonistic tastings.
