Top tips on choosing the perfect real Christmas tree - and caring for it as December rolls on...
Buy a tree that’s had the netting removed for display - that way you can
see the shape and be confident the tree has been looked after. Trees left in netting, in the warm climate of a garden centre for example, are more prone to needle drop, which and can shorten their life.
The colour of the needles should be a dark green
colour (rather than pale and washed out) and should feel waxy to touch, not dry. We recommend gently stroking the tree to see if any needles come off easily. If they do, keep looking.
If you’re really concerned about needle-dropping, go for a Nordman Fir, which is known to retain its needles. Some garden centres offer a no-needle drop guarantee on these types of trees.
Keep your tree fresher for longer by chopping or sawing a few centimetres off the bottom and soaking it in a bucket of water outside, either overnight or for as long as possible, before bringing it inside.
Once you’ve brought your tree inside, make sure you fill
the stand with water to continue to feed the needles.
Keep your tree away from direct sunlight, draughts and heat from radiators and fireplaces to avoid drying it out, which will shorten its life. Ideally, try to use LED tree lights which emit less heat. They’re also better for the environment.
The Perfect Christmas Table Whether you are using new festive tableware or the dinner set you keep for special occasions, create a table to be proud of.
Think about your colour scheme. Are you going for sophisticated white and gold, elegant white and silver, festive red and green or something more modern such as purple and turquoise? Are there some handed down family decorations that you want to include or are you going for the fun factor? Crackers and candles are traditional but you could also include Christmas table confetti and seasonal items such as a Santa shaped cruet. For many Christmas Day is one of the few times when three or more courses will be served. If you are
having soup, the spoon for this should be on the far right. A fish knife would be on the inside of the spoon with the main course knife on the inside of that and a dessert knife closest to the plate. On the left side working inwards it would be the fish fork and then the main course fork. The dessert spoon would be above the plate and facing right and closest to the plate. Side plates go to the left and glasses are placed top right. Add candles or fairy lights and you’re good to go.
Which wine with What?
Choosing wine can be a bit of a minefield, and it’s all too easy to get wrong. Follow our guide to creating the perfect match. Fish course Delicate fish dishes call for a delicate wine, such as Pinot Grigio. Rich sauce, however, require well-bodied whites
like Chardonnay. Serving salty seafood? Champagne works surprisingly well. Spicy dishes You’ll want a juicy, spicy wine to complement these dishes. Look for a Malbec or Syrah. Alternatively, a dry Riesling works well with spicy veggie recipes.
Juicy red meat
Bring out a rich red, such as a Bordeaux or Cabernet Sauvignon. Turkey
Choose a full-flavoured white, like a white Cotes du Rhone, or a delicate red, such as a Frappato. Veggie Main
There is a misconception that vegetarian food should only be paired with white wine. In actual fact, medium reds work well with lots of veggie dishes, particularly tomato based recipes. Cheese Course
There’s no easy answer here. Some cheeses go better with red, some with white. Sauternes and Stilton are a perfect match, while Chardonnay works well with brie. A dry Rose is a good all-rounder. In general the main rule is to pair the characteristics of the dish with the characteristics of the wine. Buttery sauces work well with buttery wine, for example. Have fun with your choices and enjoy!

Have a game plan
Decide what you’re going to do with your meat. Do you just want to just pick the meat off for sandwiches? Do you want to make soup or stock with the bones? Do you want to save some of the meat for a future recipe? Think this through, as your plans for the leftover turkey will dictate how you take it a part.

Don’t wait!
Take it apart right after dinner. You probably already have a chopping board and carving knife out that you’ve used for the turkey, so if you take apart the bird now, you only have to wash everything once. Taking it apart straight after your meal also means it will take up less space in your fridge. Put the meat into two separate piles; white meat for sandwiches and brown meat for cooking.

Make stock
Bundle the bird into a pot and let it simmer away with whatever vegetables and herbs you have left over. Pour over cold water to cover the bones by an inch and bring to a gentle simmer. Simmer gently for three hours, skimming the fat out occasionally, strain and remove the bones. The stock can be refrigerated in an airtight container for two or three days, or frozen for up to three months. You can reduce until syrupy to end up with a very strong, gelatinous stock which can be dropped into casseroles or soups.

Turn bird into brunch
Christmas dinner with all the trimmings might be heavy and full of fat, but turkey meat in itself is really good for you - high in protein and incredibly low in saturated fat. So why not give some lighter style dishes a try instead of the usual heavy curry, or turkey pie? A fresh turkey salad with juicy pomegranate seeds, or an Asian salad with fresh Clementine slices and a honey and soy dressing, would be the perfect antidote to all that gravy and stodge. Or, try pairing it with some Moroccan flavours, like aubergine and spicy harissa, for some winter warming flavour.

Love them or loathe them, Christmas wouldn’t be the same without Christmas pudding. But do you know how to make a cracker? Here are our top tips on creating your most perfect pud yet... Go for quality
Make sure your ingredients are the highest quality. That means fresh and sustainably - sourced - it’ll make the world of difference in terms of flavour and finish.
Choose your booze
High-grade alcohol should be used. If you wouldn’t drink it, don’t put it in your pud!
Think ahead
Try and macerate the fruit and alcohol as early as possible (normally no later than July) and bake your pudding a week in advance. Store in a dark room to help develop the flavours, ready for Christmas Day.
Garnish the beer
Make sure your citrus fruits are at room temperature before juicing to get a much better
yield. The same goes for your eggs - they should be at room temperature when mixing to prevent curdling.
Stay suet-savvy
Use dried suet, rather than fresh, as it’ll make the pudding less greasy.
Be adventurous
Don’t be afraid to experiment with flavours - there are so many different varieties to try when it comes to spices and fruit. Sometimes it’s nice to break from tradition!
Get hands-on
Always mix your ingredients by hand. Using a food processor, mixer or blender will jeopardise the pudding’s texture and make it too smooth.

The first hand-written Christmas Pudding recipe is believed to date back to the Middle Ages when they were known as mince pies - or ‘plum puddings’ and filled with pheasant, partridge, rabbit and other poultry. Later, people began adding apples, candied fruits, raisins and sugar, and the sweet, traditional ‘pudding’ was born. Traditionally, puddings were made on, or immediately after, the Sunday before Advent - known as ‘Stir-up Sunday’ - and everyone in the household would stir from east to west, while making a Christmas wish.

A CHANGE FROM CHEDDAR
Manchego is a sensational Spanish cheese from the south of Madrid. Traditionally made with unpasteurised ewe’s milk, the artisan cheeses have ridged rind made from espar to grass. Industrial versions are shaped with plastic moulds. Manchego ranges from ivory to a pale yellow colour and, depending on the age, from ‘curado’ (young and creamy) to ‘viejo’ - mature with a fine blend of richness and lemon highlights, lovely with quince paste, often available at the cheese counter. Alternatively, track down the Italian Testun Al Barolo, a seasonal hard cheese made from Alpine milk, matured in barrels enriched with the grapes from Barola.
BEAUTIFUL BRIE
Brie’s mildness and spreadability (once it’s been out of the fridge a bit), plus its affinity with everything from apples to chutney, makes it a regular crowd pleaser. Unfortunately that mildness can too often mean unripe tastelessness. For a taste revelation, order an unpasteurised Brie de Meaux or Brie de Melun (Melun is slightly thicker and more flavourful than Meaux). Discover the hint of mushroom, the creamy texture and the refreshing tang. For something smaller, track down a Fourgerus, a charming little Brie decorated with a fern.
FRESH FLAVOUR
Every cheeseboard needs the lift of a young goats cheese. The fresh, almost lemony bite cuts through the richness of the season. Choose from a range of English and Welsh cheeses. If you have any goats cheese left over the next day, don’t let it go to waste! Either crumble it over a salad or grill on toasted baguette slices - it’s delicious.
RIPE AND CREAMY
Vacherin Mont d’Or, as befits its golden name, does not share space on the cheeseboard - it has to be served alone. There is nothing more tempting than a ripe Vacherin it is bark box, which adds to the cheese’s flavour. A properly ripe Vacherin will have a slight pink bloom on its billowing bumpy top and a suggestion of ripping underneath. This is definitely a cheese worth ordering from a specialist, who will be able to ensure it is ripe for the day you need it. Simply open the top and scoop out the filling.

You’d think with all the excitement, gifts galore and general enthusiasm for the festive season, that there wouldn’t need to be a thought for entertainment. But once the thrill of Christmas morning dies down, and the dinner has been served, you are left with a sea of couch potatoes, watching yet another Christmas special on the television, and eagerly awaiting the next round of turkey sandwiches. You may think this sounds like bliss, but we wait 365 days to get everyone together, so it seems sad to waste the opportunity of quality time! “We should always make time for a good Christmas film”
The trouble is we have so many different generations to think about, and trying to entertain everybody is going to be a tough challenge, especially as what is considered “fun” for one generation could be a nightmare for the next.
Taking time to consider the needs of all your guests will win you some serious brownie points, and make you one of the best Christmas hosts in the family. Here’s some ideas to keep everyone happy.
The grandparents
We tend to focus so much on children at Christmas that we can forget to think about the comfort and pleasure of our own parents
and grandparents. The older generations want to feel just as involved in the festivities as anyone else, and, while there may be quite an age gap between the eldest and the youngest guest, everyone is just a big kid at Christmas. One of the biggest joys they will have at Christmas is having uninterrupted playtime with the grandchildren, so when you are planning your gifts, try and include something they can play with together. If you have older children, it could be a memory game on a tablet, or for younger children it could be crafts. Make time for the Queen’s speech. It’s not normally Something that little ones will enjoy but older generations do, so give them the option for a cup of tea, mince pie and the Queen, and they will be smiling with glee. There’s nothing worse than feeling useless, so giving your older guests a job in the kitchen or asking them to lay the table will give them a boost. It’ll take the pressure off you a little and keep them busy at the same time. Perhaps they could make some pies with the children, once the dinner is all done and dusted. This will give you a well-deserved break, and a chance for a sit down and a cup of tea yourself! And finally, do they want a rest? A full tummy, one-too-many Sherries, and a cosy fire could send us all off to the land of nod, but we know how much Grandad like a snooze! Plus an afternoon nap will have them fully-charged for the evening’s games.
The teenagers
We were all a grumpy teenager once, and sometimes even Christmas can’t pull them out of their misery. But for you, having to tiptoe around hormones at Christmas is no fun at all, especially when you have 15 people coming around for dinner, and nowhere enough chairs! But a little careful planning and you’ll avoid that blazing row on the landing. Talk to your teenager before the big day and let them know what you expect of them. What time you would like them to be up and dressed, and the jobs you’ll like them to help out with. They’ll be happy to have something to do, and to avoid another awkward conversation about their ‘love life’ with Granny. Once the novelty of new gifts has blown over, why not suggest to start a game of Charades, but rather than go with the traditional rules, let them come up with a new game, whether that’s playing with only Christmas references or only being able to choose an answer from a particular genre. It makes it a little more contemporary for them and gives everyone a fun game to play together. In fact, why not make your teenager entertainment chief for the day! Let them come up with a schedule of games, films, and music,

and work with them to keep it flowing throughout the day. They’ll love the challenge and it’s an important job you need doing.

The little ones
While your older kids might be the happiest lounging around and watching films, younger children are not. They crave attention and want to be entertained. There are never enough toys to play with, so you can expect to be jumping up and down at your feet, demanding you play a game with them, instead of chopping vegetables, and preparing your stuffing. And just because they are just too cute not to partake, you will always give in. Pretend to be elves for the day, so they can help you tidy up the discarded wrapping paper, build a den in the living room to house all their new toys in; and get crafty by starting to make thank you cards (at least this way you won’t forget who gave what). But when you absolutely must dive out the fun for fear of burning your broccolli, there are a few go-to tactics to keep them busy, at least for a few minutes anyway! Get a kid-friendly board game, a puzzle or new games on the tablet, and when even these exhaust their bursting minds, on goes their new Paw Patrol Christmas DVD or Netflix cartoons. “All work and no play makes for a very dull Christmas”

Board games: Nothing beats a family game of Monopoly, Trivial Pursuit or Cluedo on Christmas Day night, so dust off those boxes and rack them up. While single malts continue to be a firm favourites with connoisseurs, blended variants are set to come of age - so to speak. The day before, fill a large container that will fit into your punch bowl with water. Reserve 6 raspberries. Divide remaining raspberries, and add half to container, along with half the blackberries. Freeze until solid. Just before serving, run the bottom of fruited ice under warm water until it releases from container. Place ice in punch bowl.
In a cocktail shaker, muddle 6 raspberries, 3 strawberries, lemon peel and sugar. Add sloe gin, elderflower, liqueur and cassis. Fill shaker with ice and shake. Strain over fruited ice in punch bowl. Add rose Champagne. Garnish with strawberry slices and remaining raspberries and blackberries. To make mincemeat syrup, put 100ml water, the golden caster sugar and mincemeat in a pan and bring to the boil. Cool and strain through a muslin into a sieve. Separately, mix the caster sugar and mixed spice, then dampen the rim of your Martini glass and dip in the sugar and spice mixture. Muddle the mincemeat in a cocktail shaker (you may need to make in 2 batches), then add the gin, sweet red vermouth, dark rum, 80ml mincemeat syrup and ice. Shake well and strain into your prepared glass. Muddle four of the cranberries and one of the rosemary sprigs with the maple syrup in a shaker. Add the gin, cranberry juice and vermouth and vigorously shake with ice, Strain into a chilled glass. Top with a splash of Champagne. To garnish, place the remaining two rosemary springs into the marshmallow to create antlers, pushing one in far enough to come out of the opposite side. Attach the remaining cranberry to the end that is sticking out of the nose, and then place the two cloves between the nose and antlers to create eyes.
Fill the shaker with ice and pour the vodka, coffee liqueur and Espresso into the bottom half of a cocktail shaker. Give the ingredients a good shake, you want the ice to smash up while chilling the liquid down; it’s what creates the frothy top.
50ml vodka 35ml coffee liqueur 1 shot (25ml) of Espresso Once shaken, place a strainer on top of the Ground cinnamon shaker and pour the contents through a sieve 1 cinnamon stick, cloves, and coffee beans to garnish directly into your glass. Garnish with a cinnamon stick, ground cinnamon, small clove and coffee beans.

Winter Wonderla Get into the spirit of the season with family visits to venues around the UK. Here’s our pick of 2018’s Christmas Events For many of us, Christmas is the heart of our childhood memories. From lovingly filled stockings and homemade mince pies to wonkily hand made trees decorations and finding the perfect carrot for the snowman’s nose, it’s all precious stuff. Reliving treasured experiences while creating new traditions is a huge part of contemporary life - we’re always looking at ways to make the season special. As well as the big day itself, there are many more festive events to enjoy from November, even October, onwards. At home, there’s stirring the Christmas pudding and making cards for family and friends to, while out in the community there will be numerous fairs to visit and enjoy. If your family tradition is to have a real Christmas tree, the whole experience of visiting a farm or grower, picking ‘the one’ and bringing it home to be lovingly
decorated is wonderfully festive. Meanwhile a trip to town might reveal stalls with stocking filler presents and roast chestnuts, or if you’re fortunately placed, a full-on festive market packed with stalls selling local food, gifts and crafts. GETTING OUT AND ABOUT For a truly memorable family outing, however, forget the shopping and find a full-on festive excursion. The choice of experiences is amazing and you’re bound to find one to suit your family’s interests as well as that all important budget. While a light dusting of snow would undoubtedly enhance the festive feel of our surroundings, we’ve long since realised that, in the UK, white Christmasses are few and far between. But all is not lost - there are many opportunities around the country to
embrace the midwinter atmosphere a range of venues, from theme parks and aquariums to stately homes and museums. Theatres will have planned a wonderful Christmas schedule of productions too, for everyone from toddlers to grandparents - every good panto includes jokes for all ages! Look in your local papers, magazines or parenting bulletins for more ideas close to home (and often discount vouchers), but there are also some venues making a journey for. Here’s a look at what’s coming up for Christmas 2018 and picked out some events up and down the UK that will be worth a visit. So plan your day out and enjoy making those treasured memories.

There is always a building sense of anticipation for New Year’s Eve - here are our tips for hosting the ultimate bash this year
After the frivolities of Christmas have subsided, the fast approach of New Year’s Eve celebrations pose a substantial consolation. Hosting a New Year’s Eve party may seem like a cinch but, in fact, it requires thoughtful planning. To avoid the bustling crowds, overpriced drinks and excessive queuing, most people opt for a gathering at home. Discover our guide to throwing the best party imaginable to usher in the new year with a bang. DECOR Whether you decide on a low-key get together or a formal soiree, start by planning the decor for your event. New Year’s Eve is a time to pull out all the stops; be bold in your decorative choices. If you are feeling especially creative, try your hand at origami - fold your own shapes to hang from the ceiling in vibrant colours. These can also be used as place setting ornaments on your dining table. Consider your lighting scheme carefully - try to select light sources that aren’t too imposing. Spiral fairy lights around pillars, across the ceiling or over the feature of the room you wish to emphasise. Position vibrant tassels, bunting or glowing lanterns across the doorways for a magical effect. You may want to create a feature wall; this could be covered with gold streamers, polka dots or a welcome message. If your location involves a nook or secluded area, convert it into a point of interest with a memory board.

THE COUNTDOWN The defining moment of very New Year’s Eve party is the countdown. Be wary of this as the evening progresses and prepare something extra special for when the clock strikes 12. Fill boxes with confetti and supply them to your guests to toss in the air in celebration. Or if you are feeling particularly whimsical, set off a glitter cannon to flood the room with colour when the clock strikes midnight. You could even make your own countdown clock with gold numbers and glittered details. Alternatively, keep it simple and pop open your best bottle of Champagne to make a toast. While the majority of people enjoy New Year’s Eve celebrations, there are still some who dread them. As a refreshing alternative, try something a little out of the ordinary this year. Seek the stars - seek out nature and find a quiet spot in the wilderness with your closest friends. Pitch up a tent and spend the evening stargazing and roasting marshmallows by a campfire. Host a cook off - Instead of a glitzy party, try hosting your own cook off. Everyone can bring a course for a sit down dinner and rate one another with voting cards. Organise a prize for the winner. Create a home cinema - build a comfy zone in your home with beanbags and lounging furniture. Dim the lights, grab the popcorn, invite your closest friends and settle in for a movie marathon.

Strengthening pelvic floor muscles It has been proven that exercise has many health and wellbeing benefits. Sadly, women often have to stop exercising as a result of bladder leakage, also called incontinence, which many of us accept as a part of ageing. Although it is common, it is not something that we should have to suffer in silence - there are simple, low-cost, non-surgical solutions.
Starting the conversation
Many of us don’t talk about incontinence, so we may not fully understand it. Stress incontinence is a small ‘spurt’ of urine that occurs when you cough, laugh, sneeze or do physical activity (such as running). Urge incontinence (also referred to as overactive bladder syndrome) is a loss of bladder control just after an overwhelming urge to go pee. Mixed incontinence is the term for when women suffer from both
The pelvic floor
American gynecologist Dr. Arnold Kegel brought the world’s attention to the group of muscles called the pelvic floor, which support the bladder, uterus, prostate and rectum. These muscles are often weakened by childbirth, which can result in incontinence. Dr Kegel’s famous exercises are used as a non-surgical way to strengthen these
muscles and reduce those annoying leaks. Research shows that Kegels can have an effectiveness rate of 80%, but many of us are put off by lack of results and uncertainty of how to do them.
Guidelines for Kegels
A structured program is the best way to use Kegel exercises - start with 3 sets of 10 repetitions daily. It’s also vital that you use the correct technique. Vibrance is a medical grade vaginal probe that can help. Once inserted, a beeping system tells you when to contract and for how long, and the probe vibrates when you contract your pelvic floor muscles correctly. Resistance sleeves can also be added to increase difficulty, just like you would with weights in the gym. Remember that consistency is key - it will take a few weeks, or even months to achieve a leak-free pelvic floor! And always consult a doctor or a pelvic health physiotherapist to confirm that you’re performing the exercises correctly, or for further advice.
