anya and arthur gordon Good Food, Fine Jazz, and a Little Wisdom BY Linda Kramer
a
rthur gordon was very shy as a child. Little did he know that one day he would become a renowned chef, author, and owner of a landmark restaurant in raleigh that just celebrated its 40th anniversary this year. growing up with an appreciation of (and talent for) cooking with his mother, an awkward and selfconscious young arthur had dreams of attending the Culinary institute of america. When he applied for enrollment in 1974, the institute informed him they preferred their students to have a year of commercial cooking experience before being accepted. Having only home-cooking skills, arthur would have a hard time landing the prerequisite chef job. He decided that it would be easier to open his own restaurant to gain the required year of cooking. While searching in downtown raleigh for available space, he ran across a floundering health food store located in an old laundry building on morgan Street. arthur and his friends did the needed construction themselves and the first vegetarian restaurant in the area was born in 1975, at a time when ‘green’ and ‘sustainable’ weren’t yet buzzwords and no one ever had heard of farm-to-table. ahead of his time, arthur became part of a movement that would later define the entire culinary food scene in the triangle. Skip forward to 1997. While at a Spirituality meditation gathering in Fort Collins, Colorado, arthur met his wife-to-be anya, who was at the time living in Winnipeg, Canada. it was love at first sight. they got to know each other for a while then anya adventurously packed a U-haul and moved to raleigh. When she arrived, she took small jobs in the Cafe as a hostess and cashier. today, she sits by arthur’s side as an integral part of the business functioning as its marketing Director. often more at ease than arthur who enjoyed the anonymity of a behind-the-scenes chef, she involved herself with organizations focusing on the green and sustainable concepts promoted by the restaurant. She is a board member of Center for environmental Food Systems, the City of raleigh’s environmental advisory Board, Capital area Food network, and nC Community garden partners. in 2001, arthur was ahead of his time again, establishing an urban garden nearby called the Well Fed Community garden. named for an old well found on the property, the 1.5 acres was originally given to freed

slaves of the local Jones family after the Civil War. on this abandoned farmland, volunteers use organic practices to grow vegetables, fruits, herbs, and flowers. an on-site manager teaches sustainable gardening and healthy food habits. the produce supply assures that the food at irregardless and its catering business is always fresh and healthy. the garden also donates at least 20% of its produce to the local community.
every open evening since 1975, irregardless becomes a jazz club featuring local and touring musicians sounding off in this intimate atmosphere. its stage has featured over 14,000 shows with the finest local musicians and touring ensembles around, some of who started their careers playing notes for a free meal and a pass of the hat. on the local music scene, arthur notes, “i’m personally blown away by the quality of the local musicians today. We feel like hosting live music has always added value to the overall experience at irregardless. it doesn’t cost our customers any more for the dinner anD a live show than it does to just have dinner at a comparable restaurant.” From the first years of the Cafe, arthur catered weddings and holiday parties for regular customers
and friends. During the 2001 recession, irregardless decided to formalize this friendly service into a division of the business. For the next 14 years, irregardless’ catering division grew to become 30% of their business. on January 1st of this year, irregardless became the exclusive caterer at the Woman’s Club in raleigh off glenwood ave. this beautifully appointed event venue has been re-branded “the glenwood Club” under irregardless’ management. Bringing its ‘farm to table’ cuisine and catering expertise to this charming facility, irregardless Catering can now host weddings, corporate events and social gatherings at its own venue. the glenwood Club is complete with state-of-the-art aV equipment, handicap access throughout, a game room, bride and groom suites, reception rooms, and plenty of onsite parking. the venue can accommodate any event from 20 to 250 guests. When asked about the origins of this new venue, arthur says, “raleigh didn’t have a place for a large facility to bring the collection of forces together...people, great food, and live music. the glenwood Club provides the space and irregardless provides the catering skills to accomplish this. the timing was right.” anya adds, “Serving meals in the Cafe, at an off-site venue or now at the glenwood Club, in many ways is like putting on a theater production. every member of the team plays an important role to ensure that our patrons have a positive experience, delicious healthy meals, attentive service, lively entertainment, and a sense of community. the nature of the restaurant business is intense and as a result, the staff forms strong bonds of connection. this personal connection extends to our patrons who we have gotten to know us very well through their loyalty over the years”. She continues, “We are traveling the ‘journey of our lives’ together with our staff and patrons. these relationships create true meaning in our lives.” arthur and anya practice what they preach by living and promoting a healthy lifestyle. they walk over two miles most mornings and are vegetarian and pescatarian (eating fish). they don’t eat meat themselves but over the years, driven by market demands and a need for diversity, they have added meat, fish and poultry to their vegetarian-based restaurant menu. anya observes, “Yes, arriving in our 60s, it
be a choice of blessing or curse. i want raleigh to be a healthy place to live and eat fresh, nutritious food. my journey is to figure out how to give back to the community and treat people with dignity and respect.” He describes himself as an old hippie. “Hippies say make love, not war...protect the planet,” he says laughingly but with a serious face. people ask him the secret to his success for the last 40 years and he can only say “perSiStenCe, with all caps” and “show up every day.” “Some days you make money and some days you make customers. it’s all good.” B!

becomes quite obvious that if our bodies are healthy, our quality of life is significantly impacted. i like to refer to our bodies as our ‘chariots’ for life.” it’s been 40 years since arthur introduced green and sustainable concepts to raleigh and even longer since his russian grandmother taught him how to cook and mispronounced ‘regardless’ giving him the name for his restaurant. arthur’s goal then and now is to create harmony and abundance. He says, “We’re all going to die. What you do while you are here can

eptember is here, bringing with it a return to regular routines after our summer adventures. people have mixed feeling about routines. they can feel boring and stifling to some, but others relish routines and depend on them to get things done. i personally depend on routines to help me organize my life and to remember everything i’m supposed to do. i can only imagine what
helpful for later: cleaning, cutting, and chopping vegetables; dividing food into portions; and putting ingredients together will be very helpful when you want to make a meal or snack later. it’s easier to make an omelet in the morning if you’ve already chopped veggies and herbs to throw in. it’s easy to cook stir-fry if you’ve peeled all the garlic cloves ahead of time and put them in a plastic bag. Cutting up carrot and celery sticks with some hummus for a
little would be done if i had to design my schedule every day from scratch. routines are like auto-pilot, you don’t have to think or make decisions constantly. this month, i’ll talk about three areas to work on where having a routine can simplify your life, and assure that you’re following the routines that work for you, not against you. routines around buying, preparing, cooking, and eating meals can be very helpful for keeping you on track when it comes to healthy eating. impulse eating and poor choices can be avoided with the right routines. always eat your meals around the same time, and never skip a meal, especially breakfast. Finish your meal planning once a week, then do your grocery shopping accordingly. Before putting the groceries away, do simple preps that are
snack can prevent you from reaching for the chips or cookies. it is helpful to have 2-3 different breakfast meals that you can rotate, so you don’t have to think about what to prepare. i love oatmeal with cinnamon, nuts, and honey; eggs with veggies; or a fresh smoothie for breakfast, and i usually rotate according to how hungry i feel. the same goes for lunch. i rotate between a fresh salad with a protein (my restaurant go-to), a smoothie, or left-overs. For dinner, i like more variety and i love to experiment, but planning ahead helps avoid those starving impulse decisions. When going out to dinner, i usually look up the menu on-line and decide on my menu choice before i arrive hungry. another helpful routine is to get up from the table and brush my teeth to signal my body that the meal is over.

routines around working out can be life savers and exactly what you need on days that you don’t feel like exercising. if you make a decision to go to the gym on mondays, Wednesdays and Fridays at noon, it helps you go to the gym on mondays, Wednesdays and Fridays at noon! the decision is already made, you are less likely to plan conflicting appointments, and you are more likely to go even if you don’t feel like it. an exercise routine doesn’t mean that you have to do the same boring thing again and again. on the contrary, it can help your body work through barriers and achieve goals that take persistence and determination. as you improve, your workout changes accordingly, and it becomes a dynamic process of change and growth. our bodies like routines, but they’re good for the mind as well. the trick to making routines work for you instead of against you is to make sure your routines are authentically about who you are and who you want to become. this month, take some time to deconstruct your routines to see if they really reflect what you want your life to be about. Do you hate the gym? then maybe you should create routines that involve methods to move your body in ways that motivate you. maybe sign up for a dance class or join a biking group. Do you hate meal planning or preparation? maybe you should take a healthy cooking class for inspiration, or check out one of the online food delivery services that deliver weekly fresh food created by skilled chefs and nutritionists, portioned and ready to cook in 30 minutes. Look into services by Hello Fresh or Blue apron. Do you attend meetings and functions regularly that make you frazzled and fatigued? then create new routines that involve something that feeds your authentic self. think about what you like/love and create new routines around that. make sure your routines reflect self-nurture and self-respect instead of chasing goals that are motivated by society standards or pressure from others. routines can feel like a chain around your ankle, or a timesaving, sanity-saving rescue from chaos. By making your routines fit your true preferences, your day will feel more authentic, and you will feel more in control of your habits and actions. Have a great September! B! The History (and Preservation) of OUR STATE CAPITOL BUILDING BY EDWARD T. DAVIS • PHOTOS BY CRASH GREGG
t
he north Carolina State Capitol built in 1840 is a national Landmark. When completed, it was among the most architecturally sophisticated buildings in the america. the Building Commissioners who served to oversee the project from 1833 to 1840 ultimately spent $533,000.00 on the structure—more than three times the nC State government’s yearly revenue. the State Capitol is the second building to be constructed on Union Square. the initial State House, completed in 1796, was a plain two story georgian structure. the building housed all functions of the state government. From 1822 to 1824, the building was enlarged by the addition of a third floor and the exterior was redesigned in a simple neoclassical style. the center of the building had a large domed rotunda which displayed the famous statue of george Washington by antonio Canova. this building was accidently destroyed by fire in 1831. the general assembly decided to rebuild on the same site a larger State Capitol that would be the finest in the nation. this would call for the country’s most skilled designers and craftsmen. the Capitol was designed by a series of architects. William nichols and his son William nichols, Jr. provided the initial plan for the Capitol. nichols had provided the plan for the remodeling of the first state house ten years prior to the building being destroyed and the new plan was essentially a larger version of the previous state house. the nichols’s were, however, replaced with the major new York firm of ithiel

town and alexander Jackson Davis. north Carolina native robert Donaldson, who lived in new York and had previously employed town and Davis for several projects, certainly affected this decision. the building was already several feet off of the ground when town and Davis were employed. town and Davis’s initial designs for the new Capitol were temple form structures (one with a dome and one without) but the current cruciform-shaped plan is a result of the nichols design. this bold greek revival building is the only one of three state capitol buildings designed by town and Davis to survive to this day. the Capitols in new Haven, Connecticut and indianapolis, indiana have both been demolished. alexander Jackson Davis’s chief biographer, the late Jane Davies, has stated that the north Carolina State Capitol building and the new York (City) Customs House are Davis’s two masterworks. this is very high praise indeed for one of the finest and most prolific
architects to practice in the United States in the second quarter of the nineteenth century. Construction of the Capitol required over 300 free and enslaved men. Carpenters were hired locally, however stonemasons and stonecutters were mostly brought from the north. many of them had come originally from Scotland providing skills not available here. the interior plaster crew came from philadelphia and Baltimore artisans laid the copper roof. the marble fireplace mantles, cast iron railings and all lighting equipment were imported from philadelphia. the building stone is a form of granite called “gneiss” and it was taken from the state quarry located one mile away and transported to the site by a temporary railroad whose cars were drawn by oxen. the western and eastern fronts of the Capitol are identical. each features a central bold greek Doric portico with heroic columns resting on a rusticated base. the copper-clad exterior dome is crowned by a masonry curb featuring a metal crown of linked anthemions, a design used widely by the greeks and romans to embellish various parts of their buildings. the north and south elevations are also identical and feature a row of bold engaged pilasters—a favorite devise of Davis’s. the “perspective and plan of the north Carolina State Capitol,” which was drawn by Davis and resides at the metropolitan museum of art in new York City, indicates that the exterior was constructed largely as Davis designed it and has not been altered since it was constructed. the first floor contains offices, which originally
housed the entire executive branch of government. the governor and staff currently use these offices. the rotunda rises almost 100 feet from the first floor to the top of the interior dome. the second floor housed the House and Senate chambers. the Senate Chamber is located on the north wing and is executed in the greek ionic style. public viewing galleries are supported by four colonnades. the House of representative’s chamber occupies the south wing. this two-story space forms a greek amphitheater. the semi-circular half dome is supported by greek Corinthian columns. the public galleries on the third floor were added to the design by paton. the third floor is accessed by the unique “pen check” stairs. one large room is behind each portico and is designed in a modified gothic revival style— a style that was becoming popular by the time the building was being completed. the rooms were originally intended to be the Supreme Court and the State library. the Supreme Court moved to the first floor in 1842 and that space is currently interpreted as the Cabinet of minerals. the Capitol is remarkably intact and appears largely as it did when it opened in 1840, with the exception of the addition of several bathrooms and the elevator shaft, all rooms remain as originally designed. the north Carolina State Capitol is among the most architecturally sophisticated american buildings constructed in the first half of the nineteenth century. as completed, this greek revival building was of a scale and refinement previously unknown in the state. the Commissioners charged with the design of the
new Capitol had grand visions for the new structure. they determined to construct a monument that “will vie with the finest specimens of european architecture; and designed it with the principles of architecture… and rules of architectural taste.” Preserving the Capitol the north Carolina State
Capitol Foundation, inc., a nonprofit organization, was founded in 1976. the Foundation was established

by a group of forward-thinking individuals who envisioned the State Capitol as not just a symbol of the state, but also a vibrant historic site. to that end, the Foundation supports north Carolina in its mission to further educational opportunities at the Capitol and to encourage the ongoing restoration and interpretation of this important national Landmark. the north Carolina State Capitol Foundation sponsors a variety of educational and entertainment events both in the Capitol and on Union Square each year. these include the annual lighting of the State Christmas tree by the governor, which is viewed across the state on live television and the annual Fourth of July festivities on Union Square. additional changing exhibitions and lectures occur throughout the year. Funds raised by the Foundation have repaved the sidewalks to make them handicapped accessible, repaired historic furniture, preserved the monuments and illuminated the important historic portrait of george Washington. most recently the Foundation has completed the first of a three-phase masterplan for the Capitol and the Square. their biggest fundraiser event of the year, the Shuckin’ and Shaggin’ oyster roast with the embers, takes place on Friday, october 16. please consider taking part in this important event to help us preserve our state’s amazing Capitol Building. refer to the donated ad below for more information on this event and how to buy tickets. For many of us, nothing is more relaxing than a long, luxurious bath. Unfortunately, because of safety concerns, many people, particularly older people, have to forego this simple pleasure. Sure, you can spend big bucks to remodel your bathroom to provide a bathtub you can use, but who wants to do that? Now there’s a better way, and it lets you use the bath that’s in your home today.

The Luray Caverns of Virginia BY BarBara peTTY
o
ur visit to Luray, Virginia and the Luray Caverns was a happy accident. our daughter erika, who lives in California, was traveling east to take part in a wedding in Luray. Since we don’t get a chance to see her as often as we like, we took this opportunity to drive up to meet her. We thoroughly enjoyed the lovely five-hour drive from Cary, nC. Luray is located in the Shenandoah Valley between the Blue ridge mountains on the east and the massanutten mountain on the west. We arrived mid-afternoon and, as it was too late to sightsee, we headed directly to the mimslyn inn, where the wedding was being hosted. this is by far the best place to stay in Luray. Since opening in may 1931, the mimslyn inn has been family owned and operated. the mims brothers had extensive hotel management experience and translated that experience and vision into a grand, luxurious inn. it sits atop a high knoll and was constructed using exotic materials: the brick is made in glasgow, the joints are from riverton, the slate for the roof was quarried in Buckingham, and the bathroom tile was brought up from roanoke. the doors of red gum

and redwood were finished in hot linseed oil. J.r. mims, Sr. designed the winding staircase, the inn’s most renowned feature and an architectural masterpiece. the erwin asam family purchased the inn in 2005, and spent millions on an elaborate restoration in 2008. today, the mimslyn inn maintains the feel of a grand Virginia estate with its huge Doric columns and beautiful environs—acres of lawn and formal

gardens. there are dining options right inside the inn: Circa ’31 specializes in upscale Southern cuisine in an elegantly appointed room; or enjoy and unwind in the Speakeasy Bar and restaurant with comfort food and drinks. if you’re there on a weekend, be sure and enjoy the Sunday Champaign Brunch! (mimslyninn.com) all settled in, we were ready to be awed! Luray Caverns is listed as number Four by Fox news on their website article, “eight most amazing Caverns in the U.S.” it is also the third most visited. i have been to three of the eight caverns mentioned, with the first and second being Carlsbad Caverns in new mexico and meramec Caverns in missouri. the Luray Caverns stand out in my mind due to the size of the rooms, spectacular stalactite and stalagmite formations, unsurpassed natural colors, crystal clear pools, and a one-of-a-kind Stalacpipe organ recital (more on that to follow). (luraycaverns.com) Before we delve further into Luray, a brief explanation of the difference between caves and caverns is in order. Luray Caverns were originally called Luray Cave, but that was inaccurate. Caves and

caverns are often used interchangeably, however some distinct characteristics distinguish the two. a cave simply refers to a hollow in the earth. the opening is generally into a hill or mountain, and can be naturally occurring or man-made. a cavern is a type of a cave, but is always naturally occurring. a cave becomes a cavern if it is quite large and underground. in addition, the word cavern implies that there are a series of caves and cave chambers connected by various passages. more than four million centuries old (i’m not exaggerating; this is right off their website), Luray Caverns are the largest caverns in the eastern United States and the most popular. they were accidentally discovered in august of 1878, when a rush of cold air blowing out of a limestone sinkhole extinguished a candle held by town tinsmith, andrew Campbell. in a matter of hours, Campbell and a handful of others had cleared an opening big enough for a man, and Campbell and his nephew slid down a rope into the caverns. there is archeological evidence that people in the past occupied or at least visited the caves, but not much is known about them. popular interest in the caverns was immediate and has grown more or less steadily ever since. a correspondent for the new York Herald called it “the most magnificent cave he had ever seen.” Scientists from the Smithsonian felt compelled to proclaim, “there is probably no other cave in the world more completely and profusely decorated with stalactite and stalagmite ornamentation.” Since being discovered, Luray Caverns have had

more than 30 million visitors and are particularly popular with international travelers. We visited the Caverns with the wedding party and, although crowded, it never felt uncomfortably oppressive. even greg, who is somewhat claustrophobic, was never anxious because of the sheer openness inside. a few of the highlights include: the room of the Double Column—the stalactite and the stalagmite connect in the center; the giants Hall—a cavern filled with enormous shapes and formations straight out of a science fiction movie; and the world-famous Stalacpipe organ room. mr. Leland Sprinkle of Springfield, Virginia invented the great Stalacpipe organ in 1954. He was a mathematician and electronic scientist at the pentagon. While taking a tour of Luray Caverns he observed a tour guide make an unusual tone by tapping the stone formations with a small mallet. mr. Sprinkle was inspired to create an electronic rendition of this sound. He went from chamber to chamber with various tuning forks, tapping potential formations. Stalactites were selected and painstakingly altered to precisely match a musical scale that would eventually become the world’s largest musical instrument. electronic mallets were wired throughout the caverns and connected to a large console. When a key was played, a rubber-tipped plunger would strike the stalactite, and a note was produced. today the organ is played by an automated system, which works similarly to a child’s music box. it can also be played manually, as mr. Sprinkle did for many years. if you want to hear the magic of this musical instrument, you can hear moonlight Sonata here: http://bitly.com/Lurayorgan. in addition to underground attractions, the Caverns offer several aboveground amusements. the Historic Car and Carriage Caravan museum was particularly delightful for greg and i as we are classic car buffs. in this collection there are over 140 artifacts related to transportation including restored cars, carriages, coaches, and costumes dating from 1725. Some of the highlights include rudolph Valentino’s 1925 rolls royce, a 1911 Hupmobile roadster and other rare, old-fashioned manufacturers including a pierce-arrow, a Hudson, and a Cord. Don’t miss the 1892 Benz, the oldest operating car in america. access is included with your general admission ticket. the newest addition to the grounds is the Luray
Valley museum, dedicated to celebrating the region’s Shenandoah culture with artifacts dating from the 1750s to 1920s. the centerpiece of the collection is a Swiss Bible dating from 1536 that connects the history of the early Shenandoah Valley settlers to their european roots. other attractions include the Luray Singing tower, containing 47 bells ranging in size from 12.5 to 7,640 pounds. regularly scheduled recitals are held free of charge from spring to fall. the Caverns Country Club resort features a 72 par regulation golf course. enjoy the view of the Blue ridge and massanutten mountains while playing a round. also onsite is the gem Sluice, toy town Junction, garden maze, and rope adventure park. there is an additional entrance fee for the garden maze and rope adventure park (and of course, golf is extra). Just ten minutes away is the Shenandoah national park in the Blue ridge mountains, one of the most popular and scenic areas in the national park system. Hike, camp, or simply drive and sightsee. the Skyline Drive traverses the mountains and runs the entire length of the park. it also parallels over 100 miles of the appalachian trail.

if you are trying to decide what time of year to visit the Luray Caverns, you may be surprised to learn that they remain a constant 54 degrees but with very high humidity, it feels like 65 degrees. We were there in august and it was most pleasant inside. if you go in the winter, you may need to worry about traveling in snow. although Luray Caverns is not handicap accessible, if you can manage, i recommend you visit this fascinating U.S. Landmark. it’s less expensive than a trip to the moon, but it’s still out of this world. Are you on fire?
Inflammation: Five ways to cool the flames BY anne BarringTon, regisTered nUrse and CerTified HealTh CoaCh
W
e all know the symptoms of acute inflammation: sudden pain, redness, heat, swelling, and tenderness. this is the body’s way to protect itself from harmful attacks, whether from pathogens, irritants, or harmful cells, and to heal itself via the immune system by sending in a cascade of white blood cells and chemical messengers called cytokines to calm the fire. in fact, by attempting to reduce this type of inflammation, you could actually delay the healing response. Chronic inflammation, on the other hand, does not have such benefits. When your immune system gets out of balance it can cause inflammation to run rampant, causing a simmering, chronic, often
learn to live with the pain.” that was my wake-up call. i read everything i could find on degenerative disc disease and arthritis and i started an elimination diet, eliminating any food that could cause food sensitivity: gluten, dairy, sugar, nuts, citrus, nightshade vegetables, alcohol, and processed foods. i was left eating a restricted, whole foods, mostly plant diet. to my surprise, in three days i was pain free, and as i slowly added the different foods back into my diet, i found several that i reacted to with painful joint flair-ups. i eliminated those from my diet and i have been pain free since. today, at two years away from turning 60, i feel better than i did in my 20s. i no longer take my health for granted and i eat an anti-inflammatory diet.
strongest anti-inflammatory properties, followed by red and orange. grains should be whole and minimally processed, like brown rice, quinoa, and bulgur. Herbs and spices are full of anti-inflammatory compounds. i personally love to cook with turmeric, garlic, and ginger. recently when my husband had a flair-up of inflammation in his shoulder, his doctor recommended taking turmeric and black pepper supplements, which solved the problem in just a few weeks. green tea is also a powerhouse of anti-oxidants.

Reduce stress by getting some exercise every day, getting 7-9 hours of sleep and taking time to relax and enjoy yourself. also reduce environmental stress on your body by eliminating toxins in your surroundings. Use non-toxic, natural cleaning products, clothing, and limit dry-cleaning and air fresheners. Keep houseplants to clean the air, and filter your water if possible.

silent fire that can last for years and is the underlying cause of many of today’s common ailments. Heart disease, arthritis, diabetes, autoimmune disorders, periodontitis, dementia, obesity, premature aging, and even some cancers all have one thing in common: inflammation. So what drives chronic inflammation? many of today’s medical doctors on the forefront of nutrition and healing, like Dr. mark Hyman and Dr. David perlmutter, emphasize that chronic inflammation is linked to our immune system, two thirds of which resides in the gut, so a healthy gut promotes a healthy immune system. What causes the immune system to trigger the inflammatory response? Basically our modern life-style: stress, poor sleep, lack of exercise, poor diet, and obesity. in my 30s, i started having issues with inflammation, and in my early 40s, after painful neck surgery for a ruptured disc, my doctor shocked me by saying, “You have osteoarthritis and degenerative disc disease. there is nothing you can do except take nSaiDS and maybe steroids, and

Here are five suggestions i have found helpful in my fight against inflammation.
1
Add essential fatty acids to your diet
by taking an eFa fish-oil supplement daily (certified mercury-free), eating wild oily fish like salmon, mackerel, or sardines, and adding a handful of nuts and seeds. Walnuts and flax seeds are excellent choices as they are especially high in omega-3 fatty acids. Use olive oil, which contains oleic acid, an omega-9, and the compound oleocanthal, which has been shown to have a similar effect as nSaiD in the body.
2
Eat an anti-inflammatory diet with lots
of colorful vegetables, berries, and fruits. the stronger the color, the more inflammation fighting anti-oxidants and other phytochemicals are in the plant. each colorful plant has specific compounds that protect and combat inflammation in different ways. purple and deep green plants have the
Avoid a pro-inflammatory diet. processed
sugars and refined carbohydrates found in processed foods trigger the release of inflammatory messengers. also avoid saturated and trans fats, and omega-6 fatty acids found in most vegetable oils, mayonnaise, and salad dressings (omega-6 are inflammatory when in excess). avoid monosodium glutamate (mSg), a flavor-enhancer most commonly found in fast foods, prepared food, salad dressing, soy sauce, and deli meats. it can trigger important pathways of inflammation and affect liver health. excess alcohol and caffeine also trigger inflammation. Hidden food sensitivities and allergies to food you eat every day can also trigger the immune response. Common offenders are dairy, gluten, and aspartame. try an elimination diet to catch any food sensitivities.
5
Get a yearly test of your C-reactive protein (CRP) and Homocysteine blood levels. they are today’s most common measures
of pro-inflammation markers. Changing bad lifestyle habits into good ones can be scary and overwhelming at first, but the good news is, it puts you in the driver’s seat for your health. research shows you can often calm the fire of inflammation with lifestyle changes, and nothing tastes better than great health. take my word for it; i’ve tasted the other side. Stewart Theater Reopens with Fiddler on the Roof BY BoB ChaPman | phoTos BY ron Foreman

or the first time since 2012, north Carolina State University audiences will be able to enjoy full-scale musical theater productions. on September 30th a new production of the hit Broadway musical Fiddler on the roof will kick off University theatre’s 2015-16 season. the refurbished 759-seat Stewart theater is located on the second floor of the recently renovated talley Student Union on Cates avenue. Drywall and fresh paint cover the old cinder-block walls, and there’s a new carpet and ceiling. to keep out unwanted noise, acoustic panels were added to the vestibules. the new seats offer more padding and legroom, and the upgraded, curved handrails are easier to grip. there are new dressing rooms, stage floor, green room, and draperies throughout the theater. About the Production
With music by Jerry Bock, lyrics by Sheldon Harnick, and book by Joseph Stein, this old-fashioned musical tells the tale of tevye, a poor Jewish dairyman in Czarist russia. aided by a sharp-tongued wife and a colorful and tightly knit religious community, tevye tries to protect his five daughters while instilling traditional values in the face of changing social mores and growing anti-Semitism. Based on stories of Sholom aleichem, Fiddler was a blockbuster success when it opened on September 22, 1964 at the imperial theatre in new York City, smashing all box office records. “as the first work of american popular culture to recall life in a shtetl —the eastern european market towns with large

Jewish populations—Fiddler felt tender, elegiac, even holy,” alisa Solomon wrote in The New York Times. With hit songs like “matchmaker, matchmaker,” “if i Were a rich man,” “to Life,” and “Sunrise, Sunset,” it won nine of the ten tony awards it was nominated for, including Best musical. the original tevye, zero mostel, won Best actor. areon mobasher, who sings tevye in Fiddler, is a rising junior studying communications and marketing. a 2013 recipient of the Best actor award for his performance as Jean Valjean in Charlotte Latin School’s production of Les Misérables, mobasher won the Best Leading actor prize for his portrayal of mushnik in last spring’s University theatre production of Little Shop of Horrors. During theatreFest 2015, he was a member of the ensemble of Side By Side with Sondheim. “[Fiddler on the Roof] is such a big iconic show,” mobasher noted, adding that it’s a pleasure to perform “in a theater that’s been a home to so many people over the past few decades.”
raleigh in 1986, figuring to stay only a few years. For over two decades he’s headed University theatre, directing plays while designing sets and costumes. John and wife nancy grew up in the same town, went to school together, and got married because “she’s the only woman crazy enough to put up with my eccentricities.” the current production began with open auditions during the first week of the semester. “i can never be sure who’s going to be auditioning,” mcilwee confesses, although he knows which of the veteran actors are likely to try out, and he and his professional staff have a good idea which roles are suitable for them. “But i’m always surprised. every year someone auditions who wasn’t on our radar screen,” mcilwee laughs. “Sometimes it’s a freshman, sometimes it’s an upper-classman who hasn’t auditioned before. and sometimes an actor will read for a part we’d never anticipated they’d be right for.” Fiddler on the roof can be seen Wednesday, September 30-Saturday, october 3 (7:30 p.m.); Sunday, october 4 (2:00 p.m.). About the Director
For over thirty years director John mcilwee has been turning out polished theatrical productions at University theatre, a company composed almost entirely of nCSU students--none of whom is a theater major. “that’s because we don’t offer a theater major,” mcilwee explains. “We have a theater minor, but our actors come from across campus, from all academic disciplines.” a West Virginia native, John mcilwee moved to

pening your mailbox, you sift through the junk mail and utility bills and notice the letter from the internal revenue Service, and your heart stops. tearing it open and frantically scanning the first paragraph, the irS informs you that your return has been selected for an audit. You start thinking about the return you filed. Did you forget to report some income or maybe the deductions you claimed looked suspicious? You joked with your spouse about claiming the family dog as a dependent, and now you are trying to remember if you actually did claim the dog! no matter how scrupulously honest you are and regardless of the painstaking accuracy used to gather your tax records and prepare your tax return, an audit letter from the irS makes knees go wobbly. What should you do? How should you respond? First of all, take a deep breath. You are not being accused of doing anything wrong, but you will have to provide the irS with some information. pay close attention to the irS letter. Which year is being examined? it may not be the return you most recently filed, but could be a return from a year or two before. also, note how long you have to respond to the letter, and make sure you respond before any deadlines. normally, an irS audit will be within three years of the time you filed your return. For example: Your return for 2011 was due by april 15, 2012. Let’s suppose you extended the return and did not actually file it until october 15, 2012. three years from the filing date would be october 15, 2015, so after that date, your 2011 return would not normally be subject to an audit. today, those clever irS computers review documents sent to them by employers, investment firms, etc. and match them with what you report on your tax return. if there is a discrepancy, it may be what triggered the irS letter. Sometimes it is a simple fix and may not result in you owing additional taxes, and could even result in a refund to you. For example: You sell an investment for $10,000 that originally cost you $12,000, resulting in a $2,000 loss. if this is not reported on your tax return, the irS may simply assume that your cost was zero, resulting in a $10,000 profit.

Self-employed individuals and those who claim higherthan-average deductions for medical expenses, charitable contributions or miscellaneous items are also at a higher risk of being audited. provide complete information and documents for the items the irS is questioning, but if they are not asking about your charitable contributions, then don’t respond with information about them.
there are three types of audits: • a correspondence audit is for more minor items, such as forgetting to attach a particular schedule to your tax return. You just have to mail the requested information back to the irS. • an office audit requires having to bring your tax-related documents to an irS office. • a field audit is when the irS auditor actually visits your home or business. • You can certainly respond directly to the irS, but using an attorney, enrolled agent, or Cpa may be a wiser choice. a representative will be familiar with the audit process and less emotional.
