3 Tips To Planning Efficient Home-Cooked Meals A few generations ago, dining out was an experience reserved for special occasions. However, until recently, when restaurants were shuttered in the wake of the public health crisis prompted by the spread of COVID-19, many people were dining out multiple times a week.

Hospitality solutions provider, Fourth surveyed 1,000 American adults in 2019 & 56% reported dining out at least 2-3 times per week. Ten percent said they ate out 4-6 times each week, while 6% said they dined out every day.

People accustomed to relying on restaurants for meals multiple times per week may be unaccustomed to cooking many meals at home, which has become the norm thanks to restrictions placed on restaurants as part of COVID-19 social distancing precautions. Learning how to shop for food & prepare items by maximizing available ingredients can reduce trips to the store & help people reduce food waste at a time when food is not as readily available as it once was.

1. Plan meals/browse circulars: Meal planning & shopping lists are vital tools for people preparing meals at home. Without doing so, individuals can be left floundering in the supermarket, spending more money than necessary & making impulse purchases. Use sales circulars to browse weekly discounted items at stores. Build a week’s worth of meals off of these sale items, then fill in any extra ingredients or staples needed on a shopping list. Leave a day or two for leftovers. Try organizing the list to follow the natural layout in the store.

2. Shop smart: With paper & pen in hand or a digital list compiled on your phone, go aisle by aisle & check off items as they are added to the cart. If you are shopping for food you hope will last a week or more, consider substituting canned & frozen foods & other nonperishables for fresh items because they can be stored longer.

3. Minimize waste: Cook only as much as is needed for the household. Generally speaking, a meat or poultry serving of 3-4 ounces per person is adequate. That means a roast or steak of 1.5-2 lbs is fine for a family of four.

Use up older frozen or perishable foods first. Store foods properly & use them before the use-by date. Wrap up leftovers & turn them into new meals.

When visiting the grocery store, be sure to wear a mask & follow all recommended safety precautions. Take advantage of senior hours offered by many stores. With proper planning & smart thinking, homecooking can be more efficient & less wasteful

This Month’s Healthy Recipe Provided By The U of I Extension Office Strawberry Chocolate Pretzel Frozen Yogurt Bark Recipe

Ingredients 2 cups vanilla yogurt 1 cup fresh strawberries, sliced 30 -40 small pretzel sticks, broken into smaller pieces

1/8 cup (2 T.) mini chocolate chips 1 T. honey or maple syrup

Directions 1. Line a baking pan or chookie sheet with aluminum foil. Spread yogurt onto foil to about 1/4” thick.

2 Sprinkle sliced strawberries, pretzel stick pieces & mini chocolate chips on yogurt.

Drizzle honey or syrup on top.

3. Freeze for 2-3 hours or until completely frozen solid.

4. Remove from freezer & break bark into smaller pieces with sharp knife. Eat immediately or place back in freezer before park begins to thaw. Store in a freezer-safe container or bag.

Gardening is beneficial in various ways. The AARP states that some health perks associated with gardening include improved mood, increased vitamin D levels (which benefits bones & immune system) & reduced risk of dementia. In addition, if gardening efforts include growing herbs, fruits & vegetables, it can be a cost-effective way to eat healthy.

For gardeners without sufficient space or for those with mobility issues, container gardening can be an ideal way to grow everything from flowers to vegetables. Better Homes & Gardens says most plants are not fussy about the containers in which they grow so long as some of their basic needs are met. This means watering correctly for the type of plant, & ensuring sufficient drainage.

The following are some other ways container gardening efforts can prove successful.

• Watch water. Planet Natural Research Center says plants with thin leaves typically need ample water, & plants with thick leaves need less. Use this as a guideline to gauge water needs.

• Size correctly. Plants should be sized to the container. Consider dwarf varieties of certain plants if your containers are small.

• Choose the right soil. Fill containers with a commercial potting soil rather than soil from the garden. Garden soil can dry into a solid mass, while commercial mixtures have amendments like peat moss, vermiculite, compost, & other ingredients to help with soil texture & moisture retention.

• Mix it up. When planting containers of flowers & other greenery, Good Housekeeping says to include “a thriller, a spiller & a filler” as a good rule of thumb. The thriller is the focal point, the spiller a trailing plant, & a filler has smaller leaves or flowers to add bulk & color.

• Poke holes. Drainage holes are essential so that soil will not become waterlogged. Holes don’t need to be large, but there should be enough of them so that excess water can drain out readily.

• Select the right container material. Container materials may be affected by gardeners’ budgets, personal taste & other factors. For those who live in hot climates, selecting a light-colored container can help prevent further soil heat absorption.

Container gardening is a healthy & enjoyable activity that can pay dividends in various ways.

Why Is The Poppy A Symbol Of Memorial Day?

In the war-torn battlefields of Europe, the common red field poppy was one of the first plants to reappear. Its seeds scattered in the wind & sat dormant in the ground, only germinating when the ground was disturbed-as it was by the very brutal fighting of World War 1.

John McCrae, a Canadian soldier & physician, witnessed the war first hand & was inspired to write the nowfamous poem “In Flanders Fields” in 1915. (See below for the poem.) He saw the poppies scattered throughout the battlefield surrounding his artillery position in Belgium.

How To Find The Right Bike Helmet Cycling is a great way to get necessary exercise in an environmentally friendly way, all while enjoying the great outdoors. Safety should be a priority when cycling, and helmets are an essential component of cycling safety.

The American Assoc. of Neurological Surgeons says cycling is the single largest contributor to head injuries treated in American hospital emergency rooms. The Bicycle Helmet Safety Institute advises that almost three-quarters of fatal crashes in 2018 involved a head injury. Nearly all cyclists who died were not wearing a helmet.
