A VERY MERRY BOOTHS CHRISTMAS The Booths family have been making Christmas magical for over 170 years.

Christmas is a time for family and while Edwin Booth may have a small immediate family, his extended family numbers in the thousands. That’s how many people are members of the Booths family. Colleagues with 30 years’ loyal service and suppliers in their third generation; such as Dewlay Cheesemakers who make Garstang Blue, a Christmas cheeseboard must.

celebration. It will mean new traditions forged and old ones kept. “We do the sor ts of things we’ve always done, play terrible card and board games. We make a huge mess of our sitting room on Christmas Day and it remains a mess all day. We’ve always done that. It’s full of wrapping paper and boxes and everything. That’s tradition in our house.”

Each and every one of them is an essential ingredient in making Booths Christmas magical as they have done for 170 years. “I think it stems from the family absolutely adoring food and drink. We love eating and we enjoy sharing with friends” says Edwin Booth.

There will be turkey on Christmas Day which Edwin says they will “then wrestle with for the next few days” alongside lovely wines that have been set aside, waiting for this special occasion. Bottles will be opened and glasses lifted with a toast from everyone at the Booths family to everyone at yours.

He’s all too aware how impor tant Christmas is to customers and that Booths has to get it just right. “We used to say that if people love us at Christmas, the chances are, they’ll continue to love us throughout the year.” This means making sure that all the essentials are ready and waiting, from the Ridgeview fizz you’ll pop open on Christmas morning to the Booths range of flaky pies and sausage rolls so hunger is well and truly held at bay on Boxing Day. It’s also about surprising you and your family - small or large - with unexpected treats so every moment and mouthful is sweet. “Providing that excitement to customers, that desire to come and visit our stores is a very impor tant thing,” he says. Working with a team of experienced colleagues who are passionate about what they do is an essential ingredient and while much has changed since Booths opened in 1847, that’s something that hasn’t. “I think the common strand is something which we have always called the human touch and I think we are quite human in the way we interact with each other as colleagues.” For Edwin Booth, Christmas will mean that his two daughters are at home, which is always a cause for

Why not make... STAR OF THE NORTH LAMB HOTPOT This recipe can be used with either lamb or mutton. The cooking times will be longer for the mutton. Cook until the meat falls off the bone.

METHOD

INGREDIENTS

1. Season the lamb then in a large saucepan over a medium-high heat, with a little olive oil, fry the lamb on all sides until well browned and remove from the pan.

2. Reduce the heat to medium, add the onions and allow to caramelise while stirring regularly. Add the carrots, garlic, celery and cook for 5 minutes. Add the Chinese 5 spice and cook for 1 minute. Add a splash of the sherry vinegar and Worcestershire sauce and cook for a fur ther 1 minute.

3. Add the stock and the meat. If the liquid needs topping up to cover the meat use water. Bring to a simmer, cover with a lid and cook for 4 hours or until the meat falls off the bone. 4. Remove the meat and turn up the heat to reduce the liquid to a sauce consistency. Once the sauce is the correct consistency check for seasoning and adjust using the sherry vinegar, Worcestershire sauce, salt and pepper.

600g lamb neck steaks, on the bone 2ltr of chicken stock 3 carrots, chopped 2 sticks celery, chopped 5 garlic cloves, crushed 3/4tsp Chinese 5 spice 30ml sherry vinegar 20ml Worcestershire sauce 3 large baking potatoes 2 large sweet potatoes 100g melted butter for brushing Olive oil Salt and cracked black pepper Serves 6 to 8

5. Pick the meat off the bone and break down to bite sized pieces. Peel and slice the baking potatoes and cut into discs. Peel and slice the sweet potatoes and cut into stars of different sizes. Place the meat and sauce in an oven dish and top with the potatoes. 6. Brush with butter and season. Bake at 160oC fan/180oC/gas4 until the potatoes are cooked and star ting to crisp, approx 20 minutes.

INGREDIENTS

Why not make... SCALLOPS, AIR-DRIED HAM AND WILD MUSHROOMS An elegant starter that will be sure to impress all guests.

12 scallops 1 pack of kale 300ml chicken stock 4 slices air-dried ham 1 pack exotic/wild mushrooms 15g pumpkin seeds Sea salt and pepper Olive oil Butter

METHOD 1. Preheat the oven to 180oC fan/200oC/gas 6. Spread the kale over a baking tray, drizzle with a little olive oil and season with sea salt. Place in the oven/grill until the edges of the kale star t to darken. Remove from oven and put to one side. 2. Prep the mushrooms so they are ready for cooking, slicing the larger ones. Toast the pumpkin seeds in a hot pan until slightly browned. 3. Place the chicken stock on the hob and reduce by half (TRUEfoods stocks are perfect for this). Pan-fry the mushrooms in oil and a knob of butter over a medium heat so they get a little colour. Add the chicken stock and bring to a simmer. Add another knob of butter to the simmering stock in order to emulsify the butter and stock into a sauce consistency. Check the seasoning and remove from the heat. 4. Season the scallops with salt and a tiny bit of pepper. On a medium-high heat pan-fry scallops for 2-3 minutes on the flattest side with a little oil until nicely browned. Turn the scallops and reduce the heat to low, add a knob of butter and a squeeze of lemon juice. Serve with air-dried ham, kale, mushrooms and sauce.

PREPARATION IS KEY Christmas arrives early for Booths Fresh Meat and Fish buyer David Simons.

By March, David is already thinking about the boned and rolled sirloin we’ll treat ourselves to on Christmas Eve, the succulent Booths Bronze turkey reared by Paul Kelly that will grace our table on the big day, as well as the French trim rack of venison we’ll tuck into as we get ready to ring in the New Year. For David, Christmas comes with the responsibility of upholding the exceptionally high standards people expect from Booths. “You’re very conscious that there have been generations of meat buyers before you who’ve delivered a great Christmas and it’s incumbent on you to continue that.” Maintaining those standards means knowing his suppliers well, visiting their farms and keeping the supply chain as shor t as possible. There are ethical benefits as well as lots of other positives from working with local suppliers like family-run farm Johnson and Swarbrick, pictured opposite. While customers can count on Booths classics at Christmas, David is constantly on the lookout for something new and different like Forman’s taster pack of salmon and their traditional eels. For the time pressed and stressed, he suggests, “Buy a stuffed bird or crown, so there is one less thing to worry about and it saves space in the oven too.” To make a splash, he says, “Cook two different types of meat. This not only gives theatre but caters for different tastes.” And he swears by a meat thermometer to ensure meat is cooked perfectly. “I’ve found this a really useful gadget.”

HOW BIG SHOULD MY TURKEY BE? As a rule of thumb, you should buy for up to 500g of turkey weight per person - so if you’ve got six people for Christmas, you need a 3kg bird - more, of course, if you want plenty of leftovers. Just make sure it will fit in your oven!

THE BOOTHS TEAM MAKES THE CUT There is a sign hanging on the wall at the Booths butchery in Preston that reads, “If you wouldn’t buy it, don’t expect our customers to buy it.” For Nigel Cokell, Booths Head of Manufacturing, that says it all. He’s worked at Booths for over 17 years and takes those words seriously. “We’ve got a very nice, tight team who absolutely understand that the customer is at the hear t of everything we do. It’s massively impor tant that we get it right. We cut and pack all our own meat. We make all our own sausages and beef burgers.” Nigel feels the responsibility even more at Christmas because it’s a rare time when the whole family gathers together. “You get Christmas wrong for the customer and they’ll never forgive you!”

Nigel sources as much meat as he can locally, including most of our beef and lamb. He also makes sure there is plenty of choice for customers at Christmas. “Not everyone likes turkey. Not everyone likes beef. Some people do a medley of pork, beef and turkey. We also do some Herdwick mutton at Christmas, which is rather different.” For Nigel, born and bred in the Yorkshire Dales, there’s no doubt what will be on his table this Christmas. “I am very traditional. My Christmas dinner would be dry aged sirloin of beef and a nice turkey crown.” But come Boxing Day you’ll find him and his team back at Booths, preparing for the New Year’s rush and making sure his customers are happy no matter what day of the year. Why not make... FESTIVE MAPLE SYRUP SPICED HAM Start a new family tradition and cook a ham together to last you through the festive season.

METHOD

INGREDIENTS

1. Remove the ham from all packaging and place in a pan with the herbs, spices and add enough water to cover. Bring to the boil and skim off any residue that forms on the top. Reduce to the simmer and cook for 15 minutes per kg of ham.

A ham joint of your choosing 2 bay leaves 1 onion 1 garlic 1tsp coriander seeds 1 bunch fresh thyme 2 star anise 1 cinnamon stick 6 cloves

2. While the ham is boiling, preheat the oven to 180oC fan/200oC/gas 6. Add all of the glaze ingredients in to a pan, bring to the boil and take off the heat. 3. Once the ham is cooked remove from the water and allow to cool for 5 minutes. With a sharp knife remove any skin and most of the fat, leaving around a 1cm of fat, and score. 4. Place the ham, onion and garlic on a baking tray and put in the oven until the fat star ts to crisp. Brush the glaze over the ham covering all sides and allow to cook for another 5 minutes. Repeat for another 3-4 times or until you are happy with the glaze.

For the glaze 150 maple syrup 80 sugar 1/2 cinnamon stick 1/2 star anise 1/4 coriander cloves

Serve warm or cold.

INGREDIENTS 500g baby onions, peeled 75g butter 30g sugar 1 sprig thyme Pinch of salt

METHOD 1. Place all the ingredients in a thick bottomed pan and just cover with water. Bring to a simmer. 2. When the water has all evaporated, reduce to a low-medium heat and allow the onions to caramelise, moving them regularly to create an even colour. Chef ’s Tip We highly recommend using pickled onions to save time, just follow the same steps without the water.

Why not make... BEETROOT WELLINGTON Try this tasty centrepiece as a vegetarian alternative.

METHOD

INGREDIENTS

Stages 1, 2 and 3 can be done in advance to save time. Cover and store in your fridge until required.

1. For the stuffing, create breadcrumbs by placing the sourdough bread in a food processor. Add the pistachios and pulse to break them up. Add the eggs and salt, blend to bring together, add the veg stock gradually to ensure the mix doesn’t get too wet. Remove from the bowl and fold in the cheese and figs taking care to leave chunks of cheese. 2. To create the cooking liquor, on a medium heat sweat the sliced shallot in the olive oil in a large saucepan, don’t let it colour. Add the five spice, garlic, thyme and bay leaf and continue to sweat for 1 minute. Add the honey, white wine vinegar and the water and bring to the boil. Add the purple beetroot and cook for 30 minutes or until the beetroot is almost cooked. Allow the liquor to cool with the beetroot in it. For best flavour allow to marinade overnight in the fridge. 3. To prepare the golden beetroot preheat the oven to 180 degrees. Wash the golden beetroot and place on a foil lined baking tray with 2 crushed garlic cloves and a sprig of thyme. Season with salt. Cover with foil to make an envelope. Bake for 3040 minutes or until the beetroot is softening and almost cooked, then peel it.

4. To build and cook the Wellington, preheat the oven to 180 degrees. Lay the sheet of puff pastry out. Spread the stuffing out evenly on the sheet leaving a 2cm border around the edges. Scatter the spinach evenly over the stuffing. Place the beetroot in a line along the sheet and fold the pastry over to cover. Press the pastry together to form a seal. Brush with egg wash. Bake for 45 minutes or until the pastry is cooked. 75

THE CHERRY ON TOP AT LATHAMS Lathams mission is to bake “something that you make room for even though you don’t have any room.”

A lot has changed in the past for ty years but thankfully, when it comes to Lathams cakes, a lot hasn’t. Today, the Lancashire-based bakery makes cakes just the way Mrs Latham made them for her own family. “Lathams is based on the fact that the ingredients are just like you’d use at home,” says her daughter Catherine, who works at Lathams with her brother Richard, who now run the business. “We don’t use anything ar tificial. We still use the local farmers for the milk, the cream and the eggs. We still crack eggs by hand, which I don’t think many bakers do.“ The result is handmade in the best sense of the word. “Our cakes might not be perfect to look at. There might be a bit of buttercream coming out here or fresh cream oozing out there, but people can really see that it’s not come off the production line. They know that it’s been handmade and I think that’s the beauty of it.” “I think when businesses grow, they do resor t to ready-made mixes and things. We’ve just never done that.” says Catherine. She credits the staff – some of whom have worked at Lathams for twenty years – with keeping this vision strong and maintaining the standards that Mrs Latham set.

Carla Mills, who is lucky enough to select which creamy frozen cakes we bring to you year round, says, “It’s hard to choose. The new banoffee roulade is impressive and very good value but the boozy desser ts are a firm favourite of our customers. Personally though, I always go back to a trusty cheesecake. Lathams just create flavours and textures that you won’t experience in other retailers.”

Now 88 years old, Mrs Latham is still active in the business and likes to pop round to the bakery with her husband. She knows all of the staff by name and loves to stop and have a little chat. Why not make... POMEGRANATE AND CLEMENTINE PAVLOVA A festive pavlova with a citrusy twist that makes a sensational centrepiece that your guests won’t be able to resist.

METHOD 1. Zest, peel and segment 9 clementines. Squeeze the juice out of the last clementine and save for step 2. Bring 100g sugar to a light caramel, add the rum and cook off the alcohol. 2. Add the juice and zest from the clementines and the coriander seeds then reduce down to a thick syrup. Place the clementine segments in a Kilner jar (or something similar) and pour over the warm syrup. Once cooled place in the fridge. This can be done a day or two in advance.

7. Whip the cream with the sugar and syrup made earlier until it forms stiff peaks. Build up the pavlova adding the cream, pomegranate, clementine segments and pistachios between each layer.

INGREDIENTS 200g egg whites, should be 6 large eggs 250g sugar Small bag pistachios

3. Use a food processor or hand chop all of the pistachios, they don’t need to be all the same size. Separate out 50g for the meringue and keep the rest for garnishing.

4. On three sheets of baking paper trace around a cake tin (we used an 8 inch tin). Line three baking trays with the paper so that the trace is on the underside of the paper. Whisk the egg whites slowly for two minutes then at high speed until they star t to form soft peaks. Add the sugar slowly, a tablespoon at a time. Continue to whisk until the whites feel smooth when rubbed between fingers. Gently fold in the pistachios.

5. Use a little of the meringue to stick the paper to the trays. Spread the meringue evenly over the three trays. Make two of them fairly flat on top but with the third make some peaks and interesting shapes as this will be the lid. 6. Bake at 90oC fan / 110oC / ¼ gas for 2 hours or until the meringue star ts to set and is easy to lift off the paper. Once cooked, turn off the heat and allow to cool in the oven with the door closed, this helps prevent the meringue from cracking. 105

LISA AND HER GINGER BAKERS Nestled in the Lake District you’ll find the wonderful Ginger Bakers and Lisa Smith, ‘head ginger’.

Lisa and her team of seven, bake goodies for Booths all year round and at this time of year, spoil us with specialist Christmas cakes including her Damson Brandy Fruit Cake made with local Lyth Valley damsons. Everything is made with fresh ingredients, locally sourced whenever possible and they only use free range eggs.

Lisa star ted Ginger Bakers eleven years ago out of her home kitchen, selling to local farmers markets and food festivals. Her business was going strong until Storm Desmond struck in 2015, destroying her bakery and all her stock in the run up to Christmas. She star ted over, built a new bakery and is now doing better than ever.

But there is something else in her cakes - a bit of extra love that Lisa likens to the feeling you get from a cosy blanket, a love poem or a hear t-felt thank you. “I really enjoy making something great for someone to eat and seeing their pleasure and the gratitude that you’ve done something like that for them,” she says.

300ml milk

A tasty treat that’s simple to make, using cheese sourced from some of our favourite suppliers who are based in the four Booths counties. We love to serve it with a fresh salad containing British pears.

50g butter 1 bay leaf 1 clove garlic, crushed 4 eggs, separated Breadcrumbs and butter to line the soufflé dishes 75g Wensleydale cheese, break into chunks 50g Appleby’s cheese, break into chunks 50g Kidder ton Ash cheese, break into chunks 75g Blacksticks Blue cheese, break into chunks

METHOD 1. Take 4-6 soufflé dishes (depending on size) line them with butter then breadcrumbs and tap upside down to remove excess crumbs. Pre-heat the oven to 200oC / 180oC fan / gas 6. Gently warm the milk, bay leaf and garlic in a saucepan. 2. While the milk is warming, over a low heat melt the butter in a saucepan. Once melted add the flour and cook for 2 minutes to form a roux. 3. Add the warm milk to the roux slowly while whisking to make a smooth béchamel sauce. Remove from the heat and add the cheese into the pan, leaving a couple of chunks for later. If you want, add a dash of Worcestershire sauce to the mi for a little e tra flavour. 4. Once the mix has cooled to almost room temperature add the egg yolks. In a separate bowl, beat the egg whites to form firm peaks. Fold in a third of the whites to the cheese, then add the rest of the whites. Split the mix equally in the soufflé dishes, cook for 12 minutes and serve immediately.

RAISE A GLASS TO RIDGEVIEW In 1995, Mike and Chris Rober ts had a dream. They wanted to grow grapes in Sussex and make a sparkling wine that could rival champagne. Impossible? Fifteen years later Ridgeview was named the world’s best sparkling wine by Decanter Magazine, beating many well-known Champagnes. “Their belief was that we had the right terroir, the right land and the right climate to make the highest quality version of this wine since we’re so similar to the Champagne region,” says their daughter Tamara. Today, Tamara, her brother, and their spouses all work at the vineyard making it truly a family business. While the relatively cool climate of England makes it a challenge to grow grapes for still wine, however varieties for sparkling wines thrive, she says, because of the high acidity and low sugars. Also because the

vines are younger, they have natural youth with fresher fruit, and a zestiness, for a refreshing alternative to Champagne. For Booths own brand, Ridgeview blend Chardonnay, Pinot Noir and Pinot Meunier in equal measure. “We’ve also added in some reserve wines because it gives it a little bit more richness on the palate.” While many kick off Christmas festivities with a glass of fizz, Tamara says we shouldn’t stop there. “Sparkling wines are very underrated and always seem to be the apéritif. Actually they go brilliantly with a bit of Christmas dinner. Have a little glass at the beginning of the day but don’t forget to pour yourself one as the turkey’s served.”

PETE’S PERFECT PINT Pete Newton is on a mission: he’d like to see more people choosing beer as their tipple of choice this Christmas.

Pete is Booths Beer and Spirits Buyer and has been par t of the Booths team for 11 years. He says there’s never been a better time to drink beer thanks to the rise in craft beers, including some interesting local brews that he’s proud to suppor t.

The craft movement allowed people to star t making small amounts, really good quality, interesting, quirky products that people have just star ted to enjoy.” Booths has over 150 craft beers in our range as well as 300 premium ales. “Suddenly, wine isn’t the be all and end all and beer isn’t just something for a guy to drink down the pub on a Friday and a Saturday,” he says. “Beer is something that everyone can appreciate, the whole new flavour profile of beers in the UK with the hoppiness and the different styles, means it’s accessible for all.” While people might think of drinking wine with their Christmas dinner, Pete says there are great beers to pair with all kinds of foods. “There is a smoked por ter that works nicely with game and charcuterie. It also works well with a creamy brie. Salmon works with some of the lighter styles of beer. For Christmas dinner itself, an IPA, India pale ale style beer works quite well because it’s quite a sound, robust beer.” Introducing new beers to the Booths range is one of the things Pete likes most about his job. But whether a new beer stays or goes isn’t up to him. “I always say that I don’t keep a product in our stores, our customers do. If they’re buying it and they’re enjoying it, we keep it there.” So what’s in his glass this Christmas? “I think when it comes down to the style of beer, the type of beer, my beer changes on what my mood is, depending on what the weather is like.” At the end of the day

THE SPIRIT OF THE LAKES Savour a long, slow sip of Lakes Distillery gin or vodka and you’ll taste a bit of the Lake District itself. They are deeply connected to the land and waters that surround them and actually distill lake waters to create their spirits. Take akes in. t star ts with fifteen otanicals many of which are foraged in the Cumbrian wildlife reserve. “The biggest ingredient is our Cumbrian juniper but you’ve got hawthorn, heather and bilberry in there as well,” says Katie Read from the distillery. “So it’s connected to the fell. It couldn’t be from anywhere else.” The same is true of their vodka. “It’s that closeness to Bassenthwaite Lake. It’s the surrounding, majestic Lakeland peaks. It’s that countryside that envelopes the distillery that actually gives us our inspiration.”

Creating something that is such a par t of the land, brings with it responsibilities and stewardship which Katie says they’ve embraced eagerly. “We’ve built our own waste plant on site that processes all our waste and returns it to the environment, 100% clean.” The salvage from the barley goes into high protein animal feed for local farmers and water used in production is returned to the river in pristine condition. “We’re nur turing the distillery. And we’re nur turing it for a future generation. Because our stills will be distilling for many, many years. We really want to create a legacy.”
