After growing up and training as a chef in Switzerland, Jürg Bleiker came to England in 1965 where he met his wife Jane and the quaint tranquillity of the Yorkshire Dales captured their hear ts. D

Together, for over two decades, they ran the renowned Old Deanery restaurant in Ripon where Jürg’s customers would tell him that his smoked salmon was the best they had ever tasted. Rod Adlington For Rod Adlington, Christmas dinner is the most impor tant meal of the year and his turkeys are best known for flavour and succulence.
After finishing university and moving away, Rod returned home one Christmas to help his father on the family turkey farm and it’s been his passion ever since. “Turkeys are such inquisitive creatures and we try to farm them as naturally as possible - after all, a happy turkey is a tasty turkey” says Rod. “Our birds are free range and with the help of my wife and daughter, we put them away each evening - which is sometimes easier said than done! They’re also fed on whole oats and apples which is what gives the meat its unique texture and flavour” explains Rod. “When inside, the birds settle on fresh bedding sourced from the neighbouring farm and we build straw bale structures for them to play in. Believe it or not, their favourite thing to play with are CDs” says Rod. “We hang them up with string, along with sprout tops and the birds love to peck at them.”

PREPARATION IS KEY WITH A HELPING HAND FROM

Since he was five years old, Rober t Caldecott can’t remember a Christmas where he didn’t look after the turkeys. Taking after his father, Rober t orders his day old turkeys in March and by May the sheds are ready for the new flocks. When they arrive Mrs Caldecott puts her name on one so that it can’t be sold. “A turkey farmer without a turkey on Christmas Day would be very sad” says Rober t. The turkeys are farmed as naturally as possible and each day Rober t gives them a fresh bed of barley straw and feeds them a special vegetarian diet to give the meat a delicious, creamy texture. In December, the birds are carefully prepared and when the last turkey leaves the farm thoughts turn to Christmas Day. Rober t takes charge of cooking the turkey and everybody gathers round the old farmhouse table to tuck into Mrs Caldecott’s hand-chosen turkey and all the trimmings. After lunch, Rober t sneaks off into the shed with a brandy and reflects on the festive season and all the hard work that goes into making that once a year meal just perfect. 24

TOP TURKEY TIPS HOW BIG SHOULD MY TURKEY BE? As a rule of thumb, allow 500g of turkey weight per person (not forgetting leftovers!) HOW DO I COOK IT? Remove the turkey from the fridge and bring to room temperature. Put some chopped carrots, onions and a clove of garlic in a large roasting tin. Rub the bird with olive oil and season, and place on top of the veg. Wrap tin foil over the top of the bird and place in the oven, baste regularly. About 30 minutes before cooking is finished remove the foil to allow the skin to get golden and crispy. Leave to rest for 30 minutes before carving. Quinta de la Rosa
Situated in Nor thern Por tugal with breathtaking views across the Douro Valley, Quinta de la Rosa has been in the Bergqvist family for over 100 years. Originally given as a christening gift to Sophia’s grandmother Claire, Sophia and her father Tim restored the family business in 1988, with a dream of becoming a leading Por t producer in one of the world’s finest wine growing regions. Edwin Booth, current Chairman and former wine buyer at Booths was Quinta de la Rosa’s first customer when they launched their vintage 1988 Por t. Immediately impressed, he ordered 20 cases and Quinta de la Rosa have supplied Booths ever since. “The fruit was plum and raspberry but it had a touch of spice, and the finish was long and gently warming” he recalls. The small, family run Por t house are also the creators of our Booths Por t. “Our Finest Reserve Por t is one to enjoy all year round, but even more so with a slice of blue cheese or a touch of dark chocolate” says Edwin. 97

THE PERFECT LANCASHIRE G&T WITH A HELPING HAND FROM
Brindle Distillery
Inspired by the ‘farm to bottle’ process and looking for an alternative to traditional farming, Gerard Singleton had an idea. He would grow barley on the family farm and use fresh water from the spring on his land to make his own alcohol. With the family on board, Gerard and son-in-law Mark began renovating a farm building and thirteen months later, with the support from LEADER funding, bought Maggie - a hand built copper still named after their Great Auntie Margaret. “She was a proud Lancashire lass who enjoyed a good glass of gin, so it only seemed right that we named our still after her” said Gerard. Not long after the duo set to work on creating a hand-crafted gin like no other. “We wanted to make something that we loved and could get excited about, but it also needed to stand up in the market” said Mark. And with that, inspired by the local legend of the Brindle Cuckoo and wonderful tale of old, the newly founded Brindle Distillery became home to Cuckoo Gin. 130

CREATING BEAUTIFUL BLOOMS WITH A HELPING HAND FROM
Arden Lea For Stuar t at Arden Lea, June marks the star t of the festive season as our poinsettias arrive in Hesketh Bank, their leaves completely green. As soon as the clocks change and the days shor ten their star-shaped bracts turn a deep, brilliant red and at Arden Lea Nurseries it’s a sign Christmas is coming. Much-loved for their longevity, Stuar t says the secret to the perfect poinsettia is giving the plant just the right amount of time and space it needs to grow. He likens their care to a game of chess - constantly nudging and adjusting the growing parameters for a plant guaranteed to last long past Christmas if it’s looked after properly. Stuart says “Taking care of your poinsettia is much easier than people think. There are a few simple tricks to make sure your plant puts on an impressive display. The main thing is that, despite being a winter favourite, poinsettias don’t like the cold. Once you get your plant home, carefully remove the plastic sleeve - ideally by cutting it off. Place it in a room with plenty of light and keep it away from cold draughts. Water the plant from the bottom, but make sure you don’t leave it standing in water. By following these tips your poinsettia could last you well into March”. 140

PARSNIP & HAZELNUT SOUP WITH BLUE CHEESE TOASTS Serves: 6

FOR THE SOUP 75g hazelnuts 25g butter 500g parsnips, peeled and chopped 2 cloves of garlic 250ml whipping cream 500ml whole milk 500ml vegetable stock Salt and pepper
1. Place a large saucepan over a medium heat, add the hazelnuts and toast for 5 minutes.
FOR THE BLUE CHEESE TOASTS 6 slices fruit bread 75g blue cheese TO GARNISH 20g hazelnuts, chopped 6 sprigs of thyme A drizzle of truffle oil 148

2. Add the butter, parsnips and garlic to the pan and sautĂŠ for 5 minutes. 3. Add the cream, milk and vegetable stock. Bring to the boil then reduce to a simmer for 15 minutes. 4. Remove from the heat and blend to a smooth consistency. Season to taste with salt and pepper. 5. Lightly toast the fruit bread slices on each side. Crumble the blue cheese over each slice and return to the grill to melt. 6. To serve, ladle the soup into warm serving bowls, garnish with chopped hazelnuts, sprigs of thyme and a drizzle of truffle oil. Serve with the warm blue cheese toasts.

PINK GRAPEFRUIT, CANDIED PECAN & AVOCADO SALAD Serves: 6

FOR THE CANDIED PECANS 2 tbsp caster sugar 1 tbsp butter 100g pecans
1. To make the candied pecans, heat the butter and sugar in a small pan over a medium heat for 3 minutes. Add the pecans and cook for a fur ther 3-4 minutes or until caramelised. Tip the candied pecans onto a baking tray lined with baking paper and allow to cool.
FOR THE DRESSING 2 tbsp olive oil 1 tbsp honey 1 tbsp red wine vinegar 1 tsp wholegrain mustard Salt and pepper FOR THE SALAD 4 pink grapefruits 2 avocados 2 heads of chicory 20g rocket leaves
2. To make the dressing, place all of the ingredients into a small bowl, whisk to combine and season with salt and pepper. Set to one side. 3. Peel the grapefruits, slice into rounds approximately ½ cm thick and arrange on a serving platter. 4. Peel the avocados, remove the stone and slice into chunks, scatter on top of the grapefruit. 5. Separate the chicory leaves and arrange over the grapefruit. Scatter over the rocket leaves. 6. Spoon over the dressing and garnish with the candied pecans.

ROASTED & STUFFED BUTTERNUT SQUASH Serves: 4

2 tbsp olive oil 1 butternut squash 1 red onion, peeled and chopped 2 garlic cloves, sliced 75g dried cranberries 8 sundried tomatoes, chopped 35g fresh thyme leaves 50g fresh sage, chopped 75g walnuts 75g wild basmati rice, cooked Pinch ground allspice
1. Pre-heat the oven to 180°C (fan) / 400°F / gas mark 6. 2. Carefully cut the squash in half lengthways, scoop out the seeds and discard. With a spoon, score the flesh on each half, then scoop most of it out leaving 1cm border of squash. Dice the squash you’ve just removed, this will create par t of the stuffing. 3. Slice the red onion and garlic and add to a non-stick frying pan with 1 tbsp of the oil. Gently fry until they star t to soften. Add the chopped squash flesh, dried cranberries, sundried tomatoes, sage, thyme and walnuts then cook for 5 minutes, stirring occasionally. Add a pinch of allspice followed by the cooked wild basmati rice. 4. Carefully spoon the mixture into the prepared butternut squash and pack in tightly. Close the two halves together and lightly oil the skin before wrapping tightly in foil. 5. Bake in the oven for approximately 2 hours until soft, then slice and serve with your favourite veggies.

WHOLE ROASTED CAULIFLOWER WITH SPINACH, CRANBERRIES & CHESTNUTS Serves: 6

METHOD
1 large cauliflower A drizzle of olive oil 2 shallots, chopped 3 garlic cloves, sliced 10g sage, chopped 100g spinach leaves 50g breadcrumbs 1 egg 50g cooked chestnuts, chopped 25g dried cranberries 2 lemons, zest only Salt and pepper
1. Pre-heat the oven to 180°C (fan) / 400°F / gas mark 6. 2. Trim away the leaves from the cauliflower. Bring a pan of salted water to the boil. Place the cauliflower in the pan stem side down and boil for 5 minutes. Remove and allow to cool. 3. Heat the oil in a frying pan. Sauté the shallots for 5 minutes. Add the garlic and sauté for 1 minute. Add the sage, spinach and 25g of the breadcrumbs, cook for 3 minutes. Place the mix into a blender, add the egg and blitz to a smooth paste. Add the chestnuts, cranberries and zest from one lemon, mix well and season with salt and pepper. Spoon into a piping bag. 4. Remove the core from the cauliflower to create a hollow. Pipe the filling into the hollow. Place the filled cauliflower onto a baking tray lined with baking paper and cook in the oven for 20 minutes. 5. Mix the remaining breadcrumbs and lemon zest together. After 20 minutes drizzle the cauliflower with olive oil and scatter over the breadcrumbs. Return to the oven for 10 minutes or until golden brown and crisp. To serve, slice into wedges and serve with all the Christmas trimmings.

2 tbsp olive oil 1.5kg beef brisket, cut into 4 pieces 2 red onions, sliced 3 cloves garlic, sliced 135g tomato puree 1 tbsp plain flour 750ml mulled wine 500ml beef stock 2 tbsp redcurrant jelly 5 star anise 5 cloves 2 cinnamon sticks Salt and pepper
1. Pre-heat the oven to 180°C (fan) / 400°F / gas mark 6.
TO SERVE Pappardelle pasta Beetroot salad leaves
2. Heat one tablespoon of oil in a large oven proof casserole dish over a medium heat. Brown the beef for 5 minutes on each side. Remove and set to one side. You may need to do this in batches. 3. Add the remaining tablespoon of oil to the casserole. Add the sliced onions and sauté for 5 minutes. 4. Add the garlic and cook for 1 minute. Add the tomato puree and flour, cook for a fur ther minute. 5. Add the mulled wine and bring to the boil. 6. Add the beef stock, redcurrant jelly and spices. Return the browned beef to the casserole, reduce to a simmer, place a lid on the casserole dish and cook in a pre-heated oven for 3 hours. 7. Once cooked, remove the whole spices and season with salt and pepper. Using two forks shred the beef into the sauce. 8. Serve with pappardelle pasta and garnish with beetroot leaves.

ROAST PORK LOIN WITH SLOE GIN & CINNAMON Serves: 6-8

INGREDIENTS
METHOD
454g sausage meat 2 tsp cinnamon 2 tbsp sloe gin 75g pistachio nuts 1.5kg pork loin joint, skin removed 20g sage leaves 400g smoked streaky bacon
1. Pre-heat the oven to 160°C (fan) / 350°F / gas mark 4. 2. Place the sausage meat, cinnamon, sloe gin and pistachio nuts in a bowl, mix well to combine. 3. If tied, untie the pork loin joint, place skin side down on a board and cut a slit along the length of the meat to open it out like a book. 4. Arrange the sage leaves along the loin in one layer. 5. Spread the sausage meat stuffing along the length of the loin. Tightly roll the loin and tie with butcher’s string to secure. 6. Wrap the pork loin with streaky bacon overlapping as you go. Reserve 8 rashers of bacon, use these to criss-cross over the bacon layer to decorate. 7. Roast in a pre-heated oven for 1 hour 30 minutes or until cooked through. Allow to rest for 10 minutes before carving.

SAUTÉED SPROUTS WITH CHILLI, CHORIZO & GARLIC Serves: 6-8

TURKEY, STUFFING & CRANBERRY SAUCE SAUSAGE ROLLS Serves: 8

METHOD
200g cooked turkey meat, shredded 150g cooked stuffing 100g cranberry sauce 454g sausage meat 2 x 320g ready-rolled puff pastry sheets 1 egg, beaten 1 tbsp poppy seeds 1 tbsp caraway seeds
1. Pre-heat the oven to 200°C (fan) / 425°F / gas mark 7. 2. Place the turkey meat, stuffing, cranberry sauce and sausage meat into a bowl. Mix well to combine. 3. Place the puff pastry sheets on a lightly floured work surface. 4. Divide the sausage mix in two. Spread half of the mix down the middle of one pastry sheet. Brush the bottom edge of the pastry with beaten egg and fold the pastry over the sausage meat filling. Press the edges of the pastry together to seal. Trim the excess pastry from the ends and along the sealed edge. Press down gently with a fork to seal the edge. Brush with beaten egg and scatter over half of the seeds. Repeat to make a second roll. Cut each roll into 4 and place on two baking trays lined with baking paper. 5. Bake in a pre-heated oven for 25-30 minutes until golden brown and cooked through. 6. Serve with a dollop of cranberry sauce. CHEF’S TIP This is a great way of using leftovers, swap the stuffing for black pudding and serve as a giant sausage roll for an easy Boxing Day lunch.

FESTIVE GINGERBREAD HOUSE Serves: 8

INGREDIENTS

FOR THE GINGERBREAD 250g unsalted butter 200g dark muscovado sugar 7 tbsp golden syrup 600g plain flour 2 tsp bicarbonate of soda 4 tsp ground ginger 3 boiled sweets
1. For the gingerbread, heat oven to 200°C (fan) / 425°F / gas mark 7. Melt the butter, sugar and syrup in a pan. Mix the flour, bicarbonate of soda and ground ginger together, then stir in the butter mixture to make a stiff dough.
FOR THE CARAMEL GLUE 200g caster sugar 60ml water FOR THE DECORATION 100g hard pretzel sticks 50g unsalted butter 100g granulated sugar 1 tsp cinnamon 100g bitesize Shredded Wheat 1 tub Renshaw Royal Icing Sprig of thyme CHEF’S TIP Sprinkle the house with icing sugar to create a soft snowy effect.

2. On a sheet of baking paper, roll 1/4 of the dough to 50mm. Cut out the front of the house, then slide the gingerbread, still on its baking paper, onto a baking sheet. Repeat with remaining dough, re-rolling the trimmings, until you have two side walls, a front and back wall and two roof panels. 3. Cut a window into each side panel, and a window and door into the front piece. Place a boiled sweet inside each window. The sweets will melt to form the glass! Bake the sections for 12 minutes or until firm. Leave to cool for a few minutes, trim the sides to give clean edges. Leave to cool completely. 4. To make the sugar glue, put 200g caster sugar and 60ml water in a low-sided pan over a mediumhigh heat. The syrup is ready when the sugar has dissolved and it turns a light golden colour. 5. Take the pan off the heat and leave to cool to the consistency of honey. Using a paintbrush, coat the edges of the gingerbread and glue together. This will set quickly, so be careful to get everything in the correct position before leaving it to dry. If the syrup begins to harden, put it back over the heat until it returns to a honey consistency. 6. To decorate the house, pre-heat the oven to 125°C / gas mark 1. Melt the butter, add the sugar and cinnamon and stir. Spread the pretzels out onto a lined baking sheet and pour the cinnamon mixture over. Bake in the oven for 20 minutes. Leave to cool completely before use. 7. Spread a thin layer of icing over the front panel of the house, add the pretzels to create a log cabin effect, repeat with the sides. Spread the icing over the top of the house and add rows of Shredded Wheat to create a thatched roof. Pipe dots of icing around the window frames and edges of the house. Pipe a circle on the door and stick on a little thyme to create a wreath. 159

BLACKBERRY & AMARETTI TRIFLES Serves: 6

150g amaretti biscuits 300ml prosecco 135g blackcurrant jelly cubes 200g blackberries, halved 500g Booths proper thick custard 250ml whipping cream 250g mascarpone 2 tbsp icing sugar 1 tsp vanilla extract 1 tbsp pistachio nuts, crushed 285ml boiling water
1. Lightly crush the amaretti biscuits and divide between 6 individual trifle dishes. 2. Pour 100ml of prosecco evenly between the glasses. 3. Place the jelly cubes into a measuring jug. Pour over 285ml of boiling water and stir to dissolve. Add 200ml of prosecco and stir. Divide the jelly evenly between the glasses. Place the glasses in the fridge and allow to set for a minimum of 2 hours. 4. Once the jelly has set, divide the blackberries between the glasses. 5. Spoon the custard over the blackberries to create the next layer. 6. Place the cream, mascarpone, icing sugar and vanilla extract into a mixing bowl, whisk to soft peaks. Spoon into a piping bag and pipe rosettes of mascarpone cream over the custard. 7. Decorate with crushed pistachio nuts and enjoy! CHEF’S TIP For an extra boozy treat soak the blackberries in a little amaretto liqueur. Swap the blackberries for raspberries and use strawberry jelly during the summer months.

CHRISTMAS CAKE CUPCAKES Serves: 4

INGREDIENTS
METHOD
800g mixed dried fruits, such as mixed peel, glacĂŠ cherries, currants and figs 200g muscovado sugar 175g butter, cubed Zest and juice of 1 orange and lemon 100ml orange juice 3 large eggs, beaten 85g ground almonds 200g plain flour 1/2 tsp baking powder 1 tsp mixed spice 1 tsp cinnamon 1/4 tsp allspice 50g whole almonds 50g walnuts
1. Pre-heat your oven to 150°C (fan) / 300oF / gas mark 2. 2. Place the butter, sugar, dried fruits, zest and juice from the orange and lemon, and the orange juice into a saucepan and gently heat through until the butter has melted. Cook for a fur ther 5 minutes then remove from the heat and leave to cool. 3. Meanwhile place the whole almonds and walnuts into a frying pan and lightly toast, then cool and roughly chop. 4. In a large bowl sieve the flour, baking powder and spices. Stir in the ground almonds, toasted chopped nuts and finally add the fruit mixture and mix well. Then add the eggs and bind together. 5. Divide the mixture between a 12 hole cupcake tin and bake in the oven until a skewer comes out clean. Keep an eye on them from 30 minutes onwards, they should take approximately 45 minutes to bake. 6. To make the Christmas tree cupcake, use 1 tub of buttercream, a pack of chocolate stars and a pack of sprinkles. Pipe the buttercream onto each cupcake. Place a white chocolate star onto the top. FOR THE SPONGE 6 eggs 300g caster sugar 300g butter 300g self raising flour 1 tsp baking powder 2 tbsp elderflower cordial 2 conference pears, peeled and finely chopped
1. It would be best to prepare the decorative pear slices the day before you need them. Thinly slice the pear, coat both sides of each slice in caster sugar, then place onto a parchment paper lined baking tray. Place in an oven set to 180oC (fan) / 400oF / gas mark 6 and bake for 12 minutes on each side until dry, then leave to cool and harden. Sprinkle with glitter shor tly before use.
FOR THE BUTTERCREAM 250g butter 500g icing sugar 2 tbsp prosecco FOR THE DECORATION 12 thin slices of dried pear 50g caster sugar Gold edible glitter Sprigs of thyme Fine lemon zest Tin of Carnation Caramel
2. To make the sponge pre-heat your oven to 140°C (fan) / 275°F / gas mark 1 and line an 18cm round cake tin with baking paper. 3. Add all the sponge ingredients except the pear into a mixing bowl and mix well until pale and creamy. Gently fold in the chopped pear using a spatula. 4. Pour the cake batter into the prepared tin and smooth the top with the back of a spoon. 5. Place in the oven and bake for 80 minutes or until cooked. Test by inser ting a skewer or cocktail stick, when it comes out clean it’s cooked. 6. While the cake is cooking, make the buttercream. Star t by whisking the butter until light and fluffy. Then gradually add the icing sugar until it’s all incorporated. Then gradually add the prosecco. 7. Remove the cake and allow to cool completely. Carefully cut the cake into three layers and fill with buttercream. Pipe any remaining buttercream on top.

8. Decorate with the prepared pear slices, sprigs of thyme and a sprinkling of lemon zest. 9. Pipe the caramel around the edge of the cake, letting it drizzle down.
