Holiday Recipes That are worth every bite! Roast duck with pancetta and potatoes The point of this recipe is that the potatoes absorb some of the duck fat, you can then balance the richness with some peas with lemon and mint. serves 2-3 1 large duckling, weighing about 2.5kg 150g pancetta 5 or 6 little thyme sprigs, leaves stripped 6 medium sized potatoes, such as Maris Piper a wine glass of Marsala olive oil, mild, not fruity 2 medium onions, roughly chopped Preheat the oven to 200 c/gas 6. Remove the giblets from the duck, rinse the bird inside and out and pat it dry. Peel the potatoes and cut them into finger-thick slices, dropping them into cold water as you go. Cut the pancetta into cubes, then put it into a large roasting tin with a tablespoon of oil, over a low heat. Let the pancetta flavor the oil, but don't let it color. Introduce the slices of potato, shaken dry, and let them cook slowly. Add the onion and the thyme leaves to the potatoes. Turn everything gently as it cooks, letting the potatoes and onions color slightly. Season and remove from heat. Prick the skin of the duck with a fork then season it inside and out with salt. Lay the duck on top of the potatoes then put in the oven and roast for around an hour, until the potatoes are soft and both they and the duck are golden. From time to time, push the spuds, particularly those that are browning quickly to one side, and spoon any cooking juices over any that appear dry. During the cooking, carefully tip off most of the fat that has not been absorbed by the potatoes. Test to see that the duck is done. There should be no blood in the juices and the skin should be crisp and singeing. Remove the potatoes to a warm dish. Turn the oven up to 220 c/gas 7. Put the duck back in the oven and let it crisp up for 5 minutes or so then move to a warm dish. Quickly pour the Marsala into the roasting tin and place it over a moderately high heat (you don't want it to boil away), scraping at any stuck bits in the pan. The idea is to get any pan stickings and sediment to dissolve into the gravy. While the sauce is bubbling, carve the duck and serve with the potatoes. Check the pan juices for seasoning , then spoon over the duck. Any fat left over shouldn't go to waste - it is one of the most delicious of all cooking mediums. Chocolate Cherry Trifle Ingredients 2 (approximately 12 ounces each) chocolate pound cakes 1/2 cup black cherry jam 1/2 cup cherry brandy 2 cups drained bottled sour cherries (recommended: Morello) Custard: 4 ounces bittersweet chocolate, minimum 7 0 percent cocoa solids, chopped 1 1/3 cups plus 1 tablespoon milk 1 1/3 cups plus 1 tablespoon heavy cream 8 egg yolks 1/2 cup plus 1 tablespoon sugar 1/3 cup cocoa Topping: 3 cups heavy cream 1-ounce bittersweet chocolate Special Equipment: Large wide trifle bowl Directions Slice the chocolate pound cake and make jam sandwiches with the cherry jam, and layer the bottom of a large wide trifle bowl. Pour over the cherry brandy so that the cake soaks it up, and then top with the drained cherries. Cover with cling wrap and leave to macerate while you make the custard. Melt the chocolate on low to medium heat in the microwave, checking after 2 minutes, though it will probably need 4 minutes. Or you can place it in a bowl over a pan of simmering water. Once the chocolate is melted, ser aside while you get on with the custard. In a saucepan warm the milk and cream. Whisk the egg yolks, sugar, and cocoa in a large bowl. Pour the warm milk and cream into the bowl whisking it into the yolks and sugar mixture. Stir in the melted chocolate, scraping the sides well with a rubber spatula to get all of it in, and pour the custard back into the rinsed saucepan. Cook over a medium heat until the custard thickens, stirring all the time. Make sure it doesn't boil, as it will split and curdle. Keep a sink full of cold water so that if you get scared you can plunge the bottom of the custard pan into the cold water and whisk like mad, which will avert possible crisis. The custard will get darker as it cooks and the flecks of chocolate will melt once the custard has thickened. And you do need this thick, so don't panic so much that you stop cooking while it is still runny. Admittedly, it continues to thicken as it cools and also when it's chilling in the refrigerator. Once it is ready, pour into a bowl to cool and cover the top of the custard with cling wrap to prevent a skin from forming. When the custard is cold, pour and spread it over the chocolate cake layer in the trifle bowl, and leave in the refrigerator to set, covered in cling wrap overnight. When you are ready to decorate, softly whip the cream for the topping and spread it gently over the layer of custard. Grate the chocolate over the top. Note: You can be creative by making mini trifles and using your favorite wine glasses.

With the holiday season comes rejoicing with friends, family and co workers at parties, luncheons and lavish dinners. Unfortunately the parties don't come without a price to our waistlines. The average weight gain most of us endure between Thanksgiving and New Year's is 7 lbs. The holiday months can be extremely challenging for those trying to watch their weight. Don't fret! You can enjoy all the extras that the holidays bring without paying that price. The secret to achieving a fun, but healthy holiday season is moderation. A moderate approach to what you eat at the parties you enjoy and the exercise you do (or don't do) will be the key to a great season and a good start to those New Year's resolutions you make for yourself. I know the cooler temperatures and shorter days can make it difficult to stay on your exercise schedule. And I know our bodies crave carbohydrates now more than ever. But, let’s put a plan in place before you jump head first into an extreme fad diet or the latest celebrity detox program.

Use these tips to plan your attack: - Create a fitness and nutrition plan now! Get ahead of your hectic routine and set realistic weekly goals. - Don't wait until New Year's to set your fitness goals, if you can't exercise as much as you normally do, adjust your schedule - workout in the morning, at lunch or at home with DVDs to get it in. - Try to eat before heading to a holiday party. Keep your day nutritious throughout and you'll be less likely to over indulge. - Pace yourself, don’t eat everything the half hour you arrive at your party. Put the fork down between bites, this will keep you in control. - When at parties, skip the gravies, dressings and high calorie condiments. - Fill up on the healthy options first! Seek out the fruits, veggies and chicken for the best choices. - Limit alcohol, it’s not just about the calories; it’s also about staying in control. When you drink a lot, you tend to be more likely to eat more. Sipping water or club soda between cocktails will help keep you in check.

-Be choosy about sweets. Limit indulgences to small portions and things that are special to you. My personal rule, if it’s going to have calories, it has to be chocolate! If you know you’re the type who can’t stop with just a taste, you’re better off taking a sample of a smaller portion of just one treat than sampling several. -Consider bringing your own sides. Make a healthy dish or dessert to bring and the others won’t be so tempting. -Plan ahead for your busy day/week. Pack a small cooler with everything you need, bottled water, whole fruits and veggies and 3-4 ounces of lean protein like skinless chicken and turkey. -Drink your water! You need at least 64 ounces daily to feel full and keep hunger at bay. And finally, remember what the parties are all about to begin with! Enjoy your friends and family; engage in conversations, laughter and dancing and you'll be distracted from the food.

Many people fear the holidays for various reasons, but overeating and gaining weight are at the top of the list. There is no reason you can’t remain in control of your healthy eating habits and workout routines using these easy tips. With these few tips you will hopefully find balance between staying fit, enjoying your holiday season and warding off that holiday weight gain. The key to this: everything in moderation!

Don’t leave the house without your camel- Hands down the color of winter is surprisingly not winter white. Although winter white is a cold weather staple, the color that you need this season is camel. Men and women can both follow this trend.

Christian Lacroix , born May 16, 1951, is one of the influential couture designers of our age. Born in Arles, France, surrounded by the richest history and the near by spicy ambiance that is Spain, these would serve as a catalyst for his future interests. His passion for Gypsy culture as well as folklore is echoed in what would become an extremely famous and fabulous line of couture.

As a young man, Lacroix sketched historical costumes that were the prophetic demonstration of his Art History studies and future dissertation on dress in French 18th Century paintings while at the University of Montpellier. He also studied at the Sorbonne and l’Ecole de Louvre. He wanted to become a museum curator. His favorite pastimes included attending bullfights, the opera, the ballet, and theater, which all served to feed his passion for dramatic design. Eventually, Lacroix answered his call to fashion and changed the world of couture as we knew it.

Before launching out on his own, he first served as a design assistant for Hermes. Once on his own, he eventually suffered some heavy blows to his lines. The 1987 winner of the CFDA’s Most Influential Designer for foreign designers became bankrupt. Yet he could not be kept down. With his gem-like colors, puff-ball skirts, and fantastical luxury incorporated into all his designs, Lacroix began to surface again serving as Creative Director for Emilio Pucci from 2002-2005, which was the step he needed to rejoin the game. He took pleasure in designing everything from theater and ballet costumes to hotel and train interiors, always maintaining the opulence that is Lacroix. He is a man of rich taste and savory inclinations. He is one of the greatest couturiers and I dare say that we have not seen the best of Christian Lacroix yet.
