(Re: “Watching (local) sausage being made,” Cuisine, May 31.) [Michael] Callahan’s article about Don’s and Boulder Sausage had a huge hole in it.

Joe Beeler bought the sleepy place from the original Don and built it into a thriving empire with multiple locations and lines of hungry customers out the door. After quite a few years, he sold at the peak of that, wherein it all crumbled for the new owners. I recall being turned off by the tacky pig motifs they decided to decorate the places with, and awkward changes to the menu.

To not mention Joe Beeler (and his family), who owned the place for many years (if not a couple of decades), is like leaving Henry Ford out of an article about the Ford Motor Company.

Many of us have received several glossy large postcards from Elise Jones, who is Garry Sanfaçon’s opponent for the District 1 county commissioner seat in the June primary. Elise’s experience at the state level as Colorado Environmental Coalition executive director for 10 years and her endorsements are impressive. But her experience has been mainly at the

state level.

On the issue of fracking, Garry and Elise are in sharp contrast. Elise fears that defying state statutes on natural gas drilling will invite litigation from the industry, whereas Garry believes that local governments should not give up their rights to self-determination (statements made at a forum on May 8 sponsored by League of Women Voters of Boulder County).

uncensored Prairie dog poisoning shows need for protection

ccording to a story in the Sunday edition of Brand X paper, Boulder planners are looking for ideas about how to further develop Boulder’s “civic heart” — by which they mean the area bounded by Ninth and 17th Streets on the west and east, and Arapahoe and Canyon on the south and north, with Boulder Creek running through it.

Glad they asked. I have several.

1. Don’t “further develop” the area.

It’s a freaking flood hazard area. If anything, further un-develop it. Turn it into a linear park. That’s what Rapid City, S.D., which has a hydrology similar to Boulder’s, did after a flash flood burst out of the Black Hills and killed 238 people in 1972. After Rapid City see CITY Page 9

olorado Horse Rescue performs an important mission. A nonprofit, CHR provides shelter, veterinary care, rehabilitation and adoption services for horses that have been abused and neglected. Through this compassionate care, CHR saves equine lives. It’s incomprehensible, therefore, that CHR could demonstrate such a callous lack of concern for another four-legged creature — the prairie dog.

No, you can’t ride them, and they won’t haul a sleigh or pull a plow, but prairie dogs are a keystone species upon which a great number of other species depend, from burrowing owls that nest in abandoned holes to the foxes, coyotes, ferrets, bald eagles and other raptors that depend on them for food. Despite the fact that the prairie dog population has been reduced by an estimated 95 percent, human beings seem intent on eradicating them, just as we eradicated the wolf from most of the country. In some places, including Frederick, governments have ordered residents to get rid of prairie dogs on private property or face fines. (Maybe they should be old-school about it and offer a bounty on prairie dog hides.)

The folks at CHR must surely understand what’s at stake. The preservation of prairie dogs, a heated topic on Colorado’s Front Range and across the West, must certainly have caught their attention. Perhaps they discussed it with county officials back in 1999 when they signed an agreement with the county to combat dust issues by revegetating the land, which would include the relocation of prairie dogs.

The county recently issued a violation letter to CHR after neighbors reported that CHR had poisoned prairie dogs on its property on May 21. (The county has not been able to confirm allegations made by neighbors that CHR also poisoned prairie dogs over the Memorial Day weekend.)

Granted, relocating prairie dogs is very hard in this state. Thanks to SB 111, a bill passed in 1999 by lawmakers who view prairie dogs in the same light as cockroaches, people seeking to relocate prairie dogs must get the approval of the county commissioners in the county where they hope to place the animals prior to relocation. Given the demand for land and widespread ignorance about prairie dogs, this makes relocating them almost impossible.

But to see an organization like CHR

resort to poison, rather than seeking some other solution, is distressing.

Poison is not a compassionate way to get rid of prairie dogs. It doesn’t put the little critters to sleep as one might a fatally wounded horse; it burns their eyes and lungs, causing pain and hemorrhaging as the animals slowly die. It can kill other non-target species as well. How can people who care for suffering horses cause such harm to other animals?

It’s possible that CHR exhausted its options for relocation. It’s possible they worked with other organizations in an effort to seek every possible solution.

Regardless, they apparently chose to kill the animals before going through the appropriate process. ( Judy Smetana, CHR’s executive director, declined to answer questions for this column.)

In general, I support the right of private land owners to do what they want on their land. If they want to build a vanity home that shows off their wealth and bad taste, that’s fine with me.

They’re the ones who are stuck paying the tax bill. But killing a keystone species upon which our ecosystem depends is another thing. We all share in the long-term consequences of such actions.

So what’s the county going to do about it beyond writing a letter?

Whether officials choose to invoke civil or criminal penalties or make CHR write “We will not poison prairie dogs” on the blackboard 100 times remains to be seen.

Kim Sanchez, planning division manager with Boulder County’s land use department, says the alleged violations will be taken into consideration at the July 10 county commissioners meeting, where CHR hopes to win approval for additional buildings and other modifications to its property.

Let’s hope so. If people think they can kill prairie dogs in violation of code and get away with it, prairie dogs are doomed.

Perhaps this unhappy incident will reboot efforts to eliminate the state law that hinders prairie dog relocation and to win state and federal protection for the remaining prairie dog population.

The time to do this is now — while there are still prairie dogs to protect.

On the same day we found out that fired professor Ward Churchill had his appeal heard by the state Supreme Court, we learned that a Republican regent candidate committed academic misconduct that was at least as bad as anything old Ward ever did, if not moreso.

According to media reports, candidate Matt Arnold has been telling people he has a master’s degree in international economics from Johns Hopkins. Talk about fabrication and falsification.

But the best was when he was called on the lie and said he did everything for the degree except the thesis.

“I was more interested in getting on with my Matt Arnold life than trying to, quite frankly, waste more time in pursuit of academic B.S. that no one cares about,” he told The Denver Post in a story that was dutifully carried by its various clone publications.

This guy wants to be on the governing board of a university? Why? So he can eliminate “academic B.S.?”

Oh, and the week before, Arnold was accused of sending out messages misleading voters into thinking he was being endorsed by the Arapahoe County Republican Party.

Looks like this race will be a shoo-in for his opponent, Brian Davidson.

CU ATHLETICS WINS AGAIN Hold the phone.

First we find out that University of Colorado administrators have had to loan the athletics department millions of dollars — again — to bail them out of another deficit. This time, it was $10 million. The department hasn’t even finished paying off its $8 million loan from 2006 (part of which was needed to pay disgraced former football coach Gary Barnett millions to go away).

Then we find out a few days later that the athletics department is installing new video scoreboards at Folsom Field for a cool $7 million.

Hmmm. Does this strike anyone else as odd? The department can’t pay its bills but finds the cash to replace its video screens? Oh, we’re sure there’s a logical explanation like last time, no tuition funds used, paid for with advertising revenues, blah, blah, blah.

After all, this is just par for the course. Can’t make the payments on that 2003 expansion of the stadium that cost $42 million and was completed just before the fit hit the shan in a football rape and recruiting scandal? Don’t worry, athletics, the rest of the university will bail you out.

Kind of reminds us of something former CU Regent Bob Sievers said in 1998 when a similar proposal to replace the scoreboards came before the board.

The more things change, the more they stay the same.

I TOLD YOU THE “DINGO ATE MY BABY” From Seinfeld’s Elaine Benes ( Julia Louise-Dreyfus) uttering the phrase for comic relief to Meryl Streep’s more dramatic rendition in the 1988 film A Cry in the Dark, the odd phrase “dingo ate my baby” has been floating around for nearly a quarter of a century.

But for Lindy ChamberlainCreighton it has been 32 years since she first uttered the phrase in all sincerity and sparked a bitter debate that divided Australians into two camps and landed Chamberlin-Creighton in prison for being suspected of killing her 9-week-old infant daughter Azaria while on a camping trip in the Outback. Lindy was later freed on new evidence supporting her story, but it was only this week that the coroner finally changed Azaria’s death certificate to reflect that she had, indeed, been killed and eaten by a dingo.

cleaned up the mess, it turned the land along Rapid Creek into a linear park.

That’s what Boulder ought to do preemptively.

2. Before doing anything, define a flood plain that more realistically defines the flood hazard area than the one Boulder has now. Boulder bases its flood planning on a putative “100-year flood,” a flood that has a 1 percent chance of happening in any given year.

On Boulder Creek, peak flow from a flood that size would be about 11,500 cubic feet per second. But in 1976 there was a flood with a peak flow three times that size 30 miles north of Boulder (31,200 cubic feet per second in Big Thompson Canyon, 144 dead).

And in 1965 there was one with peak flows about 15 times that size 40 miles south of Boulder (154,000 cubic feet a second on Plum Creek; that one sent a six-foot wall of water down the South Platte River that trashed the Denver rail yards and homes and businesses from Denver to Nebraska). Common sense says that Boulder’s flood risk is a lot bigger than the city assumes. The peak flow of the Rapid City flood was 50,000 cubic feet per second. That’s probably closer to the sort of flood Boulder should be planning for.

3. Don’t expand the library in its current location. Move it to higher ground. Leaving it at its present location will sooner or later give a whole new meaning to the phrase “circulating library.”

4. For that matter, Boulder should give some serious thought as to whether it needs a new or expanded library at all. Within five years, probably everyone in town will have a tablet computer and access to millions of books online.

There may not be much point in putting tens of millions of dollars into a building that fewer and fewer people will bother using. Buying the lending rights to digital books may be a better use for the money than spending it on bricks and mortar.

5. Assuming the city remains in denial about the flood danger in its civic heart and sets out to build stuff in harm’s way regardless, it should spend as little on it as possible. It shouldn’t try to build for the ages. If the flood doesn’t get its handiwork, chances are that within 20 or 30 years the next generation of Boulderites will conclude that the current generation of Boulderites didn’t have any taste and tear it down and build something new anyway. This is a good thing. A city that’s constantly reinventing itself can be a cool place to live.

6. Don’t build a “municipal campus.”

That’s a great way to screw up the civic Boulder Weekly

heart of Boulder. Government workers go home at 4:30 p.m. and the municipal campus turns into a no-man’s land.

Boulder would be better off putting an amusement park or a skating rink in the area than a bunch of public buildings.

7. If you want mixed-use development in the civic heart, make sure the commercial space is built first. If the residential space is built first, the new occupants will turn into instant NIMBYs and prevent the commercial

space from ever being built.

8. The most useful thing Boulder could build in its civic heart is more parking lots, starting with the area around the Farmers’ Market, which would help keep the Farmers’ Market downtown. Yeah, I know a lot of preening greens think parking lots are the work of Satan and Dick Cheney, but the truth is that apart from being really useful, parking lots function as urban open space. They prevent the

construction of big office and apartment buildings that blot out the view of the mountains and turn streets into sunless canyons in the winter.

Having lived in Boulder when Walnut Street was a strip of parking lots from 9th to 15th street, and when it was a strip of 55-foot buildings, I’d go back to the parking in a heartbeat — for urban quality of life reasons.

etting a definitive answer as to whether hydraulic fracturing of gas wells, better known these days as fracking, is contaminating the air and the water in Erie is a pretty tall order. For instance, one study says the air is more polluted than Los Angeles’ brown cloud on a smothering summer day, and then the next two reports claim the air is perfectly safe to breathe. It’s understandably a bit confusing for most people.

Too often these days in Erie, caring smiles have turned into downcast eyes.

Friendly waves have become fists in the air. Yard signs once reserved for the casual political endorsement or a garage

sale now carry messages like “Keep the frack out of my water” or “Frack no.” Even laughing children have been converted into warriors with painted faces, leading the anti-fracking cheers for protest marches. Erie is embroiled.

Longmont resident Rod Brueske remembers down to the hour when fracking became an issue in his life and the lives of his family members.

“My wife was out here pruning the trees on Jan. 9, probably around 8 in the morning, and there were a bunch of trucks across the street,” Brueske says.

“They told us they were building an oil well, and it went up in just a couple of days. It was like an army of trucks. And every time they would start drilling, our entire house would shake.”

Brueske, his wife and their two children live on a farm at the border between Weld County and Boulder County. Within view of his front porch are four different well sites. oulder County Commissioner Will Toor says someone has been attempting to mar his well-earned liberal reputation by sending right-wing groups money in his name.

Toor, former mayor of Boulder, says he and his wife started receiving letters from conservative organizations in late March regarding donations they never made.

First there was a letter from the John Birch Society on March 28, thanking Toor’s wife for her $20 gift.

Then came a letter from the Tea Party Patriots thanking the couple for their “very generous and much-needed special gift of $20,” Toor says, laughing. “I’m pretty sure we’ve never given anything to the Tea Party Patriots.”

The unknown person tried to send a contribution in Toor’s name to FreedomWorks, but the mailing address was incorrect, and since the return address was Toor’s, it arrived in his mailbox. He says the envelope contained a $20 bill wrapped in a yellow sheet of paper with the handwritten sentiment: See WILL TOOR Page 14

Brueske admits that there were wells around his house even before he and his family moved in, although he says they were “regular” wells, not fracking wells.

“These regular wells were fine, but once they started fracking, all our problems started,” Brueske says. “I came out here on the night of my son’s sixth birthday, and there was a slight breeze out of the southeast. You know when you touch a nine-volt battery to your tongue and you get that metallic feeling? Well that was how the air tasted that night.”

Brueske immediately called Encana, the gas company with wells around Erie, Longmont and Hadley Vandiver Boulder, as well as the Colorado Oil and Gas Conservation Commission (COGCC), to ask what the metallic taste was. He was told that it was probably from benzene, a chemical byproduct of fracking.

“And I was scared when they told me that,” Brueske says. “I asked if I should get my family out of here, if that benzene is dangerous, and they said that was up to me. But how am I supposed to know if being exposed to this is really dangerous? This is my family and this is our home.

We’re exposed to this every day, inundated with it 24/7, and they won’t even tell me if I should try to get away from it or not.”

One night after the wells across the street from his house went online, Brueske says his son sustained a nosebleed “that just wouldn’t stop,” for no apparent reason.

Leonard and her family have plans to move to Louisville to escape the fracking wells. Thankfully, she and her husband had not yet bought their house in Erie, so they will not have to worry about trying to sell the house before they can move.

“We were waiting to buy a house until we found a place that we wanted to settle,” Leonard says. “And we were ready to settle in Erie. But then this came about, and we decided we couldn’t anymore. I would so much rather stay in Erie, but I can’t risk the health of my kids, and I won’t buy a house in Erie

while all this drilling is going on.”

Others, however, have not had such an easy time moving.

Leonard’s neighbors also decided to move because of the drilling rigs springing up around them, but were unable to sell their home.

They relocated to Niwot, but their Erie home now sits empty, unwanted by the owners and without any prospects for new buyers, Leonard says.

Two of the other Erie Rising mothers, April Beach and Angie Nordstrum, are also looking into moving their families out of Erie at the earliest opportunity. It seems that an exodus of people from Erie might be on the horizon.

But some Erie residents believe that the departure of these outspoken individuals might be just what the town needs. And if there is anyone who knows how things work in Erie, it is Alan Wise. His family has had a home and farm in Erie for more than 140 years, and in his 70 years, Wise has seen many an industry and many a family come and go.

“If you go back far enough, we used to have coal mines here, that’s what started Erie,” Wise says. “And then after that there were oil wells. People want to complain about something. They complained about the oil wells before and now fracking comes along and that’s just another new thing they can jump on.”

After first hearing about fracking last year, Wise began doing some research of his own to see what all the fuss was about. Wise says he found a lot of people loudly speaking out against fracking, but that their concerns were based on feelings and not hard facts.

“It’s a perfectly good way to get natural gas, it seems to me,” Wise says. “I don’t believe that fracking is making people sick. I think that kids can get sick from several different things.

There’s lots of kids around and they’re gonna get sick, but it’s more or less a coincidence. I can’t believe that the drilling has anything at all to do with it.”

In the past few months, Wise has seen rising tensions in the community as people become angrier and more divided over the issue. For him though, the solution to the problem is fairly simple.

news “It’s been a part of life here forever, and it’s a natural thing,” Wise says.

“This is where all the coal and natural gas is, so if you want to be here, you just deal with it. If you don’t like it, move somewhere else.”

There are others in Erie besides Wise who think that all the fuss festering around gas development in the town is causing some of the biggest problems.

“I’m afraid Erie Rising is just going to cost Erie money and not do any good,” says Richard Lesser, an Erie resident for the past 12 years. “There have been local communities that have tried to fight drilling in their neighborhoods without cause, and its cost them hundreds of thousands of dollars in legal fees, and in the end they did not win. They did not win because they didn’t have a good case. They just went to court thinking that they could pull something off, that they might get something because of all this community pressure, but the rules in place are sound, and all they did was collect their community’s money.”

As demonstrated by the plight of Pavillion, Wyo., where fracking has been a divisive issue for more than a decade, there are still more problems that can come from the loud nature of the protests in Erie, Lesser says.

“There’s no correlation between property values dropping and nearby drilling,” Lesser says. “However, with lots of headlines about it, and with lots of people pushing out inaccurate information, we could start to see that.”

Lesser echoes Wise’s sentiment that most of the concerns around fracking are unproven and based on fear rather than fact. The leaders of Erie Rising are utterly distraught, he says, and there is no test, no measurement and no facts that will prove to them that the air in Erie is safe to breathe.

“Nothing will convince them that this can be safely done,” Lesser says.

“And if that’s the case, then how can you have a discussion with these people? Their minds are made up.”

That their minds are made up is certainly true. Leonard, Brueske and the rest of the Erie Rising members are bound and determined to see fracking removed from their communities. But they would counter the arguments of Lesser and Wise by saying that oil companies should prove fracking is safe before drilling begins, not after.

Because of the conflicting science, the concerns and the arguments on both sides are legitimate and impassioned. But whatever the truth might Boulder Weekly

be about the safety of fracking in the Erie area, one thing is certain: Erie is changing. And if both sides can’t find a way to work together on the fracking issue, then both sides will suffer the same fate, as Erie’s quality of life declines and its economy, including its housing market, are put at risk.

Like it or not, Pandora is out of her box, and it will likely take all of the residents of Erie to put her back in.

Lorenz wrote a memo to BW on May 23 saying the DA’s office “does not make or maintain records of phone calls” and that “there are no such records available for disclosure.”

After BW replied in a May 25 letter that Colorado case law requires custodians of records to produce files even if they only have access to them through a third-party contractor like a phone company, Lorenz responded on June 4 by saying that the DA’s office is not the “custodian” of such records. She suggested that BW direct its request to the county information technology department, but an employee there referred the Weekly to County Attorney Ben Pearlman.

After filing an open records request with Pearlman’s office on June 5, Garnett’s phone log for that period was provided to BW on June 6. The log confirms that Carr called Garnett at 10:40 a.m. on May 16, just six minutes before Garnett told BW that he had not talked to Carr or Karakehian that morning. Garnett then called Carr at 10:51 a.m., after speaking with BW. None of the three phone numbers that BW has for Karakehian showed up on Garnett’s phone records for that morning.

t took nearly three weeks, but Boulder Weekly finally obtained the phone records of District Attorney Stan Garnett for the morning of May 16, when Garnett discussed financial disclosure allegations against Boulder City Councilmember George Karakehian with City Attorney Tom Carr.

State open records laws say disclosures should normally be made within three business days of such requests.

The Weekly was following up on claims against Karakehian made by local political gadfly Seth Brigham, who was slapped with a restraining order by the city after claiming, among other things, that the councilmember did not fully disclose his financial interests in a required campaign form before his re-election last fall. Garnett abruptly closed an investigation into the claims after speaking to Carr by phone, shortly after telling BW the inquiry would take about two weeks.

Carr’s office produced his phone records within three days of a BW request.

Finally, on May 9 he got a very nice brochure and letter from the Heartland Institute thanking him for his donation of $100.

“So it’s gone up,” Toor says. “They said my generosity is greatly appreciated and much needed.”

He adds that he has no idea who would be trying to link him to such groups. At one point he thought it was a practical joke.

“I tried to think if it was the sort of thing my brother would do, but he would never give money to those groups,” Toor says.

He has discussed the situation with District Attorney Stan Garnett and Cynthia Taylor in the community protection division of the DA’s office, and on their advice he plans to write a letter to each organization informing them that his name was used fraudulently and asking them to remove him from their lists. Toor also plans to report the matter to the postal inspector in case it qualifies as mail fraud.

“My biggest concern is that I don’t

want my name associated with these groups,” says the term-limited commissioner, whose tenure ends this year. “I don’t know whether I’ll run for anything in the future, but if I do, I sure wouldn’t want somebody looking up that I’m a member of the John Birch Society. It made me wonder if they’re doing this to other people.”

Boulder County Democratic Party Chair Dan Gould told Boulder Weekly that he has not heard of any other similar cases. Garnett said Tuesday that his office is still looking into whether there is legally any criminal charge to pursue, but most likely, Toor’s remedies would fall under civil law — assuming the person is identified, that is.

Toor says he wanted to go on record exposing the fraud before the perpetrator tries to use the fabricated ties against him.

And he’s got plans for the money that was in the envelope.

“The $20 that was returned is going directly to the Obama campaign,” he says with a laugh.

And think about the plastic bottles that you’ve tossed in the trash ending up in the ocean, where they collect in gyres and slowly break down to microparticles that can no longer be separated from the phytoplankton around them. That stuff making the air we breathe? It’s fighting for real estate with plastic we threw away.

And then the plastic gets eaten by the little fish, which are eaten by bigger fish, which are eaten by us. The mercury and the PCBs all those organisms up the food chain have eaten — that ends up in us.

That’s stressful, right? So just think about the ocean. The waves, the lap-

ping water, the endless blue. Feeling calmer? More creative? There’s some science on that connection, too.

Even landlocked Colorado residents are connected to the ocean — but making people here more aware of how we’re connected to the watery 70 percent of our planet and what we can do to protect the ocean from here, on land, is the mission of Vicki Goldstein, founder of the Colorado Ocean Coalition. It’s the only ocean conservation organization in a land-locked state in the country, she says. And she looked.

Before Goldstein moved inland, she spent a career teaching people about the oceans on either coast, working for the College of the Atlantic and the National Oceanic and Atmospheric Administration, and running Save Our Shores, an ocean conservation organization in California. Then she took some time off to raise her kids before her husband’s career brought the family

to Boulder.

“By the time I got here, I honestly felt like a crustacean ready to molt, bursting with the need to get back to my career,” she says.

So Goldstein went back to it — ocean or no ocean.

“I launched the Colorado Ocean Coalition a year and a half ago with the idea that you don’t have to see oceans to take care of them,” she says.

Oceans don’t just belong to coastal nations. And neither is it possible to care for them only from the states around the edges of the continent.

“No matter where you live on this planet, it all flows to the ocean and the animals there consume it,” she says.

Raising awareness and political will leads to more of both of the methods oceans need to protect them: Day-today choices by consumers that keep our waters in mind, and legislation to better protect them.

health of our oceans, and all of them can come from anywhere in the country: problems with fish, plastics and ocean acidification.

“We’ve depleted about 90 percent of big fish species since about 1950,” says Synte Peacock, an ocean and climate research scientist at the National Center for Atmospheric Research. “The question is, can we preserve those, or are those going to go the way of the dinosaur and become extinct?”

What’s left of these fish are becoming increasingly toxic, Peacock says. Fish are bioaccumulating toxins like mercury that have run into the ocean, and the bigger the fish, like a mackerel, marlin or orange roughy, the bigger the dose of mercury.

“If we put toxins into the ocean, it comes back into us if we eat fish,” Peacock says.

There’s also the issue of garbage, and most of the garbage in the ocean is plastic. Plastics don’t biodegrade, they only break down to pieces small enough to be consumed by fish and other organisms — and can eventually end up being consumed by humans as they eat fish.

“If we throw our plastic into the ocean, it’s not gone forever,” Peacock says. “It’s a cycle. It doesn’t go away, so as we pollute the ocean with plastic it comes back to haunt us.”

known of these, the Great Pacific Garbage Patch, is estimated to be the size of Texas.

It sounds like the job for a big net and some garbage barges, but it’s not that easy.

“Much of it you can’t even see because plastic breaks into little pieces. …

It’s this soup of plastic and plankton that you cannot separate,” Goldstein says.

“You can never really clean up these gyres. You have to stop it at the source, and the source in all of this is on land.”

A ban on single-use plastic bags shouldn’t even be a question.

Another issue facing the ocean is acidification. Carbon dioxide in the atmosphere — emissions from cars and coal power plants — also ends up in the ocean. Though the ocean has often been viewed as endless, the chemical composition of the ocean shifts as it intakes more carbon dioxide, and the water becomes more corrosive.

“It’s bad news for anything with a shell,” Peacock says. More acidic waters can dissolve shells and corals, which has implications that work their way up the food chain.

Individually, people can only change so much. Consumers always have the option to make smarter choices when buying seafood, and can look to the apps and pocket guides available to help. Single-use plastics are also a daily decision.

Acidification is where legislation, and international cooperation, come into play. The U.S. isn’t even the top emitter for carbon dioxide anymore, and while every little reduction from a new bike or bus rider helps, global changes can only come through changes to industry, likely mandated by legislation here and in other countries around the world.

“It’s truly global,” Peacock says.

“The plastics is too, but that’s something that we can really be conscious, you can really start making a difference instantly, like, today. ... The CO2 problem, the acidification problem, that’s going to require international policy to make difference.”

Because everything eventually washes downstream, many of the choices we make for a healthier planet have repercussions in our oceans.

protecting the environment by going to the farmers’ market,” Goldstein says.

But what’s on our farms and lawns makes a huge affect. Nitrogen-based fertilizers pouring into the oceans create dead zones. Phytoplankton bloom in response to the fertilizer, but then die in massive quanities, and when they decompose, they remove oxygen from the water, creating low oxygen or zero oxygen areas. Anything that swims into one of those areas can suffocate. Divers who pass through a zero oxygen area might see belly up dead crabs, schools of dead fish and water thick with sediment.

The dead zone at the mouth of the Mississippi River is 3,000 to 5,000 square miles. At 3,000 square miles, both Delaware and Rhode Island could fit inside it. There are an estimated 400 dead zones in the world, and they’re expected to increase in count and size as population and subsequently food production increase. But dead zones often depend on that supply of fertilizer.

“If you stopped putting the fertilizer in … you’d see an immediate response in the ocean,” Peacock says.

As soon as those waters are reoxygenated, they come back to life.

It’s not impossible. It’s not even unlikely that, once people understand these issues, they’ll take action. The documentary Ocean Frontiers tells stories of collaborations among fishermen and conservationists, shipping lanes and whale researchers, to work toward greater ocean health. One of the stories they tell is of a group of Iowa farmers who went to the Gulf of Mexico. They boarded the boats of local fishermen.

They fished. They talked with those fishermen about their shared depen-

dency on the whims of Mother Nature to provide. They heard about those dead zones. And they went home and created wetlands near their fields, natural water filters that would remove almost half the nitrogen from the water they sent downstream.

“For many of them it was the first time they’d been to the Gulf of Mexico, and they really were just blown away by what they saw, and they realized immediately how important of a resource it was and how important the fishing economy was to the area,” says Karen Meyer, producer of Ocean Frontiers. “They felt an enormous sense of responsibility to do whatever they could to help out their counterparts, basically, in the Gulf.”

The consistent doses of news that show our oceans are in trouble and facing increasing demands caused Meyer to look for what answers people were coming up with to handle the issues.

She and co-producer Ralf Meyer spent two years working to record those stories of collaboration among biologists, global shipping companies and energy executives, fishermen and conservationists. Their film will be shown at the Dairy Center on June 21 in an event hosted by the Colorado Ocean Coalition.

The stories in Ocean Frontiers illustrate the point that Goldstein and Peacock have argued.

“What we do, wherever we are in the country, makes a huge difference and is of huge importance as we work to turn the tide of ocean health,” Meyer says. “Whether you’re a farmer in Iowa or in Colorado or you’re just a homeowner, there’s concerns about over-fertilizing our lawns and the runoff that comes from our parking lots

and our cities. All of that makes its way into our oceans.”

Connecting the pieces to collaborate and apply an ecosystem-based approach is key to protecting oceans and the life they support, including us.

“It doesn’t matter what the state of Mississippi does in terms of cleaning up the runoff and what goes into the river — it does help, but they have 36 other states that are draining into the Mississippi as well,” Meyer says. “That’s why they realized all of the Gulf states need to work together because we all depend on this same body of water, the Gulf of Mexico.

Then they took it a step further and said we need to bring the Mississippi River basin states into this. … In terms of how all of this relates back in to Colorado and the Midwest, the Mississippi River basin, what that example shows clearly is that there are issues that are so big that not one state can address them.”

What Ocean Frontiers tries to do by film is what projects led by Wallace J. Nichols, Ph.D., like The Blue Marbles Project, have tried to do between people. BlueMarbles.org collects photos of people with blue marbles, a symbol of our blue planet, as a gesture of gratitude. Nichols, research associate at the California Academy of Sciences, has done the hard science and the research, and his questions have led back from sea turtles to people. Why do humans respond to the ocean the way they do?

He’s come back to an emotional core, skipping the scare tactics, to get people talking about the blue portion of our planet.

“Getting people to care about the ocean when they’re in Los Angeles or Colorado, for that matter, is hard,” he says. “Just out of sight, out of mind, if you’re not a scuba diver you kind of go, what does it matter, and that’s the base state of most people in the world.”

Confronting the past ‘Jarhead’ author discusses new memoir

It’s

difficult to imagine that Anthony Swofford, who once had sex with a girl in the same room as his dying brother and dined on greasy Waffle House food with a crack dealer and a couple of prostitutes, could become such a family man.

In his new book, Hotels, Hospitals and Jails, a memoir taking place after the success of his New York Times bestselling military memoir, Jarhead, Swofford finds himself at an impasse in his life. Despite the slew of women he sleeps with on a regular basis — oftentimes cheating on multiple “girlfriends” in the same night — and living in a plush Manhattan apartment with a window view of jutting skyscrapers and seemingly endless possibilities, Swofford quickly turns to drugs and drinking as he deals with his family issues and the toll of his war experience.

“I certainly wasn’t proud of that behavior,” Swofford says. “I was a 30-year-old ex-Marine

in New York City with money and time on my hands, and I was also recently divorced. I wasn’t married to any of these women. I chalked it up to all is fair is love and war.”

Without the backdrop of war taking center stage, Hotels, Hospitals and Jails is a more intimate memoir, focusing on the dichotomy between Swofford and his estranged father. A Vietnam veteran once exposed to Agent Orange and now suffering from chronic obstructive pulmonary disease (COPD) from years of smoking cigarettes, Swofford’s father, John, is perceived as being less of a father and more of a military buddy to his son.

Understated guitar god Richard Thompson thrives in the shade

R

ichard Thompson is the guitar player’s guitar player, one of those described with hushed reverence by those who know. Some years ago, Bob Mould (Hüsker Dü, Sugar) commented that watching Thompson play made him want to mothball his instrument.

For 45 years, Thompson has made music in various formations, never achieving more than modest commercial success, while critics have greeted his work with near-universal, bendedkneed genuflection. He uses a hybrid of pick and finger plucking, forging warm, rich folk tones abetted by a sinewy baritone.

In an interview we had several years back, he commented puckishly, “The secret to my success is my continued failure.” He’s famously self-deprecating, but the point remains that for Thompson, success has always been inwardly defined, going all the way back to the influential British folk group Fairport Convention, for which he played guitar from 1967 to 1971.

“Very early on I realized we might skate the margins of the charts, but we were never going to be up there as contenders. So we had to have a different attitude and view success differently,” Thompson says from his Los Angeles home. “You have to have success on your own terms, as opposed to other people’s terms. You might make a record that’s commercially a flop but you feel

ersistence has a way of sponsoring tenure, and tenure has a funny way of growing some awkward extremities. Bruce Kaufman carries one of them around with him regarding his two-decade journey fronting My Evil Twin (MET).

“My Evil Twin has played a lot of places that were, like, the last time they were ever open,” he reflects with a hint of sideways and bemused pride. “We closed the place. … It used to be the Hoffbrau, whatever it Bruce Ka was before then. Up in Table and Laneufman D’Crago Mesa. I can’t remember. I think it’s a hardware store now [Liberty Hardware]. And there was a place down the road from there, near the Tantra Apartments, it used to be a pizza place. And The Cricket. I think we closed that one, too.

Re-learning them all because Kaufman’s wife and songwriting partner, and the band’s lead singer, Lane D’Crago, passed away a little more than a year ago at age 54.

was successful artistically. In a sense that’s what you should be pursuing, though the persuasion of the marketplace tends to dictate otherwise.”

Though he was in Fairport Convention and continues to be a major folk circuit draw, Thompson is also a terrific blues-psych guitarist (just witness his nine-minute breakdown of Donovan’s “Season of the Witch”). Since the millennium he’s been on a particular hot streak — from 1999’s electric suburban slam Mock Tudor to 2003’s spare, understated pastoral folk The Old Kit Bag to 2005’s acoustic release Front Porch Ballads and the witty, textured rock of 2007’s Sweet Warrior. Though they haven’t created much stir, they’re among the finest adult rock you’re likely to hear.

For a long time Thompson was a major label prestige act, the kind trotted out to impressionable young bands as a sign they support “real artists.” He was the kind of low-selling/highrespect artist that labels could afford to keep just for the points it won them from other artists and critics. That came to an end when the business’s economics changed after the millennium, and Thompson’s taken advantage of his newfound indie freedom to tackle a wide variety of projects.

Aside from the aforementioned studio albums, Thompson also recorded the 2005 soundtrack to Werner Herzog’s Grizzly Man, explored old orchestral and folk music on the appropriately titled “cover” album Boulder Weekly

1000 Years of Popular Music, and recently premiered a three-song cycle for orchestra titled Interviews with Ghosts.

Thompson — who says he witnessed the ghost of Anne Boleyn while touring the palace of Henry VIII — became intrigued by alleged transcriptions of conversations with ghosts. It’s part of a forthcoming album of the same name — though not all of it’s about ghosts.

Besides chasing apparitions, Thompson has also cornered a local rhythm section for a “commando raid kind of band.” He saw them as perfect for situations like festivals or short jaunts where flying in his far-flung backing band wouldn’t make economic sense. After he began composing he took a shine to the format.

“You lack some harmonic definition that you get from a rhythm guitar or a keyboard,” he says. “But because of the musicians I have in the trio, it works because they’re able to fill in some of the missing parts.”

They recorded the album in Nashville at Buddy Miller’s (Emmylou Harris, Robert Plant) home studio, cutting 16 tracks in four days. They’ll finish mixing it when he returns from tour. He’s excited about it.

“We did it ridiculously quickly,” he says. “It was just stupid. But it sounds great. It turned out surprisingly funky, sort of a new genre — folk-funk. It’s quite snappy, somewhere between Judy Collins and Bootsy Collins.”

or a film that starts with an innocent schoolchild finding his teacher dangling from the classroom rafters by a scarf-turned-noose tied around her neck, Monsieur Lahzar is surprisingly upbeat.

And not just for sickos who find schoolteacher suicide to be a great punch line. This Canadian nominee for Best Foreign Film at last year’s Oscars is a light-handed, wisely simple contemplation of grief, with a take-home message that could be summed up on a scrap of paper crammed into a fortune cookie: “Let it go.”

Bachir Lazhar (Mohamed Fellag) is an Algerian immigrant. Well, not really an immigrant so much as a refugee, seeking asylum after his wife and children were killed in an act of terrorism.

This seems like another good place to point out how surprisingly sweet and chipper the film is. Moving on.

After the teacher mentioned in the first paragraph decided to play human pendulum, Lazhar wanders in off the street and instantly asks to take over her class, convincing the flustered principal to give him a chance. After all, who else would want to inherit elementary school kids who have been traumatized in a way Charlotte’s Web hadn’t yet achieved? Forced to teach in the same room, Lazhar begins slowly inching closer in particular to two students: Marie-Frédérique (Marie-Ève Beauregard) and Simon (Émilien Néron). The former is eloquent and reflective about the events, whereas the latter is all prepubescent rage.

Writer-director Philippe Falardeau’s obvious plot, namely that by Lazhar helping the kids with their grief he is helping himself as well, is aided by his nuanced cast. Fellag is the epitome of deft understatement, choosing to do with a lip tremor or wayward glance what lesser actors would do with tears or balled-up fists. Even the children are

realistically guarded. When Simon’s confession is finally revealed, it feels so non-melodramatic that it is utterly and fantastically dramatic.

Unquestionably, an understanding of Algerian history would influence and enhance the themes of the film. Having absolutely no appreciation for it whatsoever certainly doesn’t hurt though, as the message of releasing one’s selfblame for an inexplicable death is a theme spoken in a universal language.

Scenes of Lazhar grilled about why he chose to “abandon his wife” if she was in such danger are no less poignant without an education in the politics of Algeria.

If Falardeau’s film has a weakness, it lies within the supporting cast. If there is an argument being made about the handling of schoolchildren, it is both incomplete and incoherent. Half of Lazhar’s peers come off as puritanical fools and the other as simply daffy and confused. Even the conflict that hampers Lazhar’s employment isn’t handled with the same delicate efficacy that is given to his refugee hearings.

But those few foibles aside, Monsieur Lazhar is a pleasant, kindhearted look at the saddest subject matter in the world. Although the film concludes with a decadently sweet and richly deserved shot, it almost felt like Lazhar had earned the right to simply walk out the door, open an umbrella and find Julie Andrews wherever she may be. This is a man who earned the right to be merry, or at least with Mary.

his May, local mountaineer Mike Moniz successfully summited Mount Everest (29,029 feet) and Lhotse (27,940 feet) only 24 hours apart. After consecutively climbing the word’s tallest and fourth-tallest mountains with the International Mountain Guide (IMG) Classic team, Moniz headed for home with an extremely rare contribution. Extreme for his plan to gather millions of data points from the highest peaks on earth, and rare because he plans to keep all the data in his head.

In addition to completing personal mountaineering goals this climbing season, Moniz says he hopes to gain a deeper grasp of the impacts his mountain travels have had on his brain, and he is working with a team of brain scientists to study his brain.

Medical studies have found that high-altitude mountaineering may affect the structure of the human brain, but researchers continue to investigate the function of mountaineers’ brains at high altitude.

Climbers often describe their recovery as a delayed and lethargic thought process, clinically defined as bradypsychia.

“Climbers that I’ve spoken to experience almost a fog, like a fog of war, after being off the big mountain, and it’s typically transient,” Moniz says. “And I think it may come out over time here in studies — that a lot of the cognitive issues that climbers face are almost like a hangover from being at high altitude. It could take a couple of

weeks or a month or so before you start to feel more crisp and articulate and capable of carrying on a coherent conversation.”

The concern is that each summit attempt causes a person to essentially kill areas of their brain. Is climbing mountains causing brain damage?

While the effect is common among high-altitude athletes, who, in severe cases, can experience hallucinations, the cause and extent of any lasting effects are not as well-known. Even with low oxygen and physical exertion virtually promising adverse health effects, a tribe of athletes makes its migration to Nepal every spring, willing to subject themselves to one of the most severe envi-

ronments on earth. Moniz says he welcomed the physical challenge and joined the clans as they ventured to base camp. Given the potential health risks and recent medical studies, Moniz says he wondered whether he, too, would lose part of his mind on his ascent of the highest peaks on earth, or if previous research missed the crux of the issue.

oxygen on the human brain by stating that mountain climbing kills brain cells.

Fayed and his team’s research set out to measure brain damage using magnetic resonance imaging (MRI) to discover whether irreversible lesions affected high-altitude mountaineers. MR imaging provided non-invasive, high-resolution structural imaging of the brain as the primary tool for this research. The study evaluated 35 climbers for potential effects on the brain, 12 professional and 23 amateur climbers, without the aid of supplemental oxygen.

The Scientific American review of their report indicated that all but one mountaineer sustained brain trauma.

The most severe cases were observed in Everest climbers, but brain damage also occurred on lower peaks.

Fayed and his team had subdivided mountaineers into expeditionary groups that climbed Mount Everest (29,029 feet), Aconcagua (22,841 feet), Mont Blanc (15,774 feet), and Kilimanjaro (19,341 feet). Of the 12 professional climbers and one amateur in the Everest expeditionary group, 11 climbers’ MRIs indicated evidence of brain atrophy, a decrease in the size of the brain, and the enlargement of fluid spaces surrounding the brain vasculature. Eight climbers’ images were consistent with brain atrophy. Only the amateur’s image indicated brain lesions after suffering symptoms consistent with acute mountain sickness (AMS) and high altitude pulmonary edema (HAPE). One professional mountaineer’s image demonstrated normal MRI results with no atrophy or lesions.

The study did not record MR images before climbing, and tests focusing on brain function were not performed to check mental ability.

Considering that only amateurs showed evidence of irreversible lesions in the brain, the research suggested that a lack of proper acclimatization may effect negative changes in the brain.

But the study could not eliminate the chance that a lesion existed before climbers left sea level, however unlikely.

The rest of the climbers, including many professionals, showed evidence of atrophy and enlargement of fluid spaces surrounding the brain vasculature compared to normal scans, but for Everest professionals, this was not necessarily a direct impact of the climbs performed during the study. And these symptoms and image results are not clear indicators of brain damage or killing brain cells.

Fayed and his team’s research confirmed that individuals without proper acclimatization face higher risk of physiological changes in the brain. Further, the atrophy and lesion effects decreased with decreasing elevation — possibly putting Colorado’s 14ers out of the danger zone with appropriate acclimatization. Lesions persisted three years after the study in four of the eight Aconcagua climbers, and all eight were amateurs.

Nevertheless, many considered the results significant enough to sound an alarm within the mountaineering community that resonated across mountain ranges the world over — high altitude kills brain cells.

“It shows fairly terrifying results of scarring and cognitive impact on the brain due to high-altitude exposure,” Moniz says, “even on mountains like Kilamanjaro.”

But the study did not include baseline images that captured what trauma existed before the climb, instead comparing post-climb MRIs against a control of 20 “healthy” volunteers. The lack of preliminary data raised questions about possible preexisting conditions in amateur climbers’ brains, and tests were not performed to see whether climbers lost physical abilities, often evaluated using interviews and finger-tapping exercises.

The medical consensus on brain damage has yet to be established.

Inspired by previous studies and capitalizing on the advantages of access and

the decreasing costs of high resolution neurological imaging, Moniz says he hopes to contribute an individual look at the effects of altitude on his own brain.

The amount of information that he will be able to gather on his trip — though only one example and done with supplemental oxygen — is quite large and may serve as a template for future studies.

Part of the problem is not with the picture taken, but with the camera itself.

In acute cases of trauma to the body and brain, MRI serves as the first level of investigation in reviewing the structural impact of events, including fractures, strokes and hemorrhaging, to assist medical professionals in determining a treatment plan. But an MRI alone does not indicate brain function. That imaging’s inability to determine mental ability leaves an open, unexplored aspect of the human brain.

So Moniz plans to use both MRI and secondary nuclear-imaging in the form of single photon emission computerized tomography (SPECT) to evaluate his brain’s structure and function both before and after climbing some of the world’s tallest peaks. That combination should help bring the picture into focus.

He’s teaming with Denver-based CereScan, a leading company for clinical nuclear imaging specialists performing SPECT readings that correlate known conditions to mild-to-moderate brain injuries. Their technology assesses 5 million to 7 million data points across 140 regions of the brain, using data on normal brain function to determine how their results compare to known conditions that might affect brain function.

By comparing these data points to known cases of confirmed damage to the function of the brain, their method reduces the uncertainty of whether brain damage actually occurred.

evaluate NFL athletes, members of the U.S. Ski Team and participants in other potentially traumatic activities including hockey, rugby and cheerleading.

“I think we’ll have a really intriguing opportunity to see whether there is structural damage, whether the performance of my brain has been somehow repaired, and, of course, what a lot of people question is, you know — what happens?” Moniz says.

Dr. Theodore Henderson, who works with CereScan, estimated that a normal mountaineer should demonstrate the same effects in a SPECT scan before and after a high-altitude bid. That is, no significant change is expected in the functionality of the brain after high altitude and low oxygen exposure. If they do see a change, they expect decreased brain activity. Further research would be required to determine whether changes in brain activity were merely an adaptive response.

In the weeks leading to Moniz’s departure to Nepal, Moniz and CereScan performed both MRI and SPECT scans in their testing with even higher resolution MRI equipment than Fayed and colleagues. The team will also perform the same testing procedure shortly after Moniz’s return to Boulder.

“I suspect with my genetics and my physiology, assuming if I take the right amount of time and am cautious, I shouldn’t have many problems,” he says.

“But you never know.”

Reaching out to fellow high technology colleague John Kelly, CEO of CereScan, Moniz used his own skills as chief executive of locally operated technology solutions firm Circadence to pitch his project to approach the brain from the functional perspective.

“I’ve known John Kelly for a while — having access to a broad database of different types of [cases] where they had hypoxic and toxic gas exposure and other types of traumatic brain injury,” Moniz says. “In most of the research that had been done in mountaineering [on the human brain], it all sort of surrounds structure, looking at it from an MRI perspective, but not really the function of the brain and how the brain was functioning post-summit exposure. I love science and biology, and thought this would be a great contribution.”

Seeing a potential health threat from one of his most enjoyable activities (one he especially enjoys with his teenage children, Matt and Kaylee, accomplished climbers themselves), Moniz says he recognized an opportunity to take a closer look at this high-altitude issue.

But in a recently completed prospective research study to evaluate the neurological effects on 49 climbers before and after ascending Denali (Mount

McKinley, 20,328 feet), Peter Hackett, director of the Center for Altitude Medicine in Telluride, found very different results than Fayed and his colleagues.

Hackett, who also serves as clinical director of the Altitude Research Center and clinical professor for the Department of Emergency Medicine at the University of Colorado Denver Health Sciences Center, and his team designed their own study to utilize MRI and neurocognitive tests, and used finger-tapping exercises to evaluate the speed and effectiveness of the brain’s responses to commands. Tests and MRIs were done the week before and the week after returning from the expedition.

Their research found abnormal brain scans in only three of 49 climbers (approximately 6 percent), and they observed this effect as increased white matter volume and subcortical lesions.

The negative impacts to climbers were significantly lower than Fayed’s research, with the additional contribution of prospective, before and after, neurocognitive data. And the three climbers who had abnormal brain scans experienced symptoms consistent with acute mountain sickness — their bodies hadn’t properly acclimatized. But no significant neurocognitive impacts were observed using finger-tapping exercises.

So, while time at high altitude presents risks to brain physiology, especially without proper acclimatization, the larger sample size of mountaineers, even those whose brains were modified by the time up high, returned functional.

Hackett shared his thoughts regarding Moniz’s efforts: “To really make it thorough, he should have neurocognitive testing as well,” Hackett says. This way, Moniz’s data would compare to previous studies. “Because if he does have brain changes, you want to know if it makes any difference. … Just because there might be changes in metabolism doesn’t mean it’s necessarily a bad thing. Maybe, if it’s an adaptive response, it’s a good thing.”

If there’s anything to take away from all the brain research out there, it’s not to stop — mountaineering has always had risks — but to be aware, as always.

With the hope to learn that high altitude does not compromise the mountaineer’s brain and mind, Moniz is on a route that sets a high, private standard by owning his personal health and exploring new technologies for medical research in the mountaineering community. All in hopes that further research holds implications for those up high and closer to earth.

AN INDIAN CULINARY ADVENTURE

L

ocal food enthusiasts are invited to join a cooking journey through India during a twoday workshop June 16-17 at the Auguste Escoffier School of Culinary Arts in Boulder. A panel of experts on Indian cuisine will lead participants in a wide-ranging feast of insights that includes an interactive cooking demonstration.

Executive Chef Suvir Saran, an author and celebrity chef who has appeared on Bravo TV’s Top Chef Masters, will showcase his knowledge of Northern Indian cuisine, while food writer and historian Ammini Ramachandran will turn audiences on to Southern Indian vegetarian cooking.

Rounding out the panel is Colorado-based Manisha Pandit, a food blogger with a focus on cuisine from India’s Western coast, and underground supper club enthusiast Asha Gomez.

Boulder’s rooftop patio scene is on the rise

here’s a spice that’s separate from the food itself, a flavor that doesn’t come from the dish. It’s the atmosphere in which a meal is enjoyed, and it can transform a regular outing into a distinctive experience.

Boulder has a love for fine dining and the outdoors, so it’s no surprise that combining both breeds success.

High above the bustling streets, rooftop patios provide a dining alternative where patrons enjoy their meal literally feeling like they’re on top of the world. Restaurants take the natural beauty of the outdoors and make it part of their ambiance. Rooftop dining creates an environment that redefines the concept of stepping out of the house for a bite to eat.

Kuvy Ax of Root Public Relations, who represents several local Boulder restaurants, says that the popularity of rooftop patios is not necessarily growing, it’s just that they’ve always been popular.

It is likely the trend will continue.

“Boulder is an outdoorsy place; drink outside, eat outside, [the rooftop] is definitely a plus,” says Eric Turner, owner of the Absinthe House.

When Turner inherited the patio after purchasing the space two years ago, the reputation of the laid-back environment came with the deal. People know how nice it is to eat on the rooftop patio, and Turner added to the experience by installing a DJ booth and a full bar.

changes, and rooftop patios take what’s going on outside and make it part of the restaurant. During the first year the Absinthe House’s rooftop was open the Fourmile Canyon fire could be seen from its patio.

Next door to the Absinthe House, the Rio Grande Mexican Restaurant’s rooftop is growing in popularity and is in its fifth summer of operation. Unlike the Absinthe House, the Rio had to convert its rooftop into the space that is enjoyed today.

“The permitting was probably a two-year process with the city, so a lot of planning, a lot of architect drawing and engineer analysis. We had to put a lot of support beams up there,” says see PATIOS Page 54

Go west for summer cookout fare

iven the West End Tavern’s name, I’m never sure if I’m more likely to encounter the Pet Shop Boys or the Sons of Liberty there, given the old-timey connotations of a “tavern.” However, a recent visit made it abundantly clear that encountering either the male equivalent of Bananarama or Revolutionary War plotters is unlikely.

What you will find is fare that’s less late-night bar and more the quintessential American cookout.

At a rooftop deck lunch, friend Lisa and I enjoyed the not-too-sweet $2.50 strawberry lemonade, spotlighting muddled chunks of berry, which weren’t so large as to clog up our straws. This finely executed hot weather refresher put us in a summery mood as we scanned the menu’s offerings of mac and cheese, fish and chips, entree salads, burgers and sandwiches.

First up was the Tavern’s $6 take on deviled, or as they call them, picnic, eggs, a selection my inner Cool Hand Luke found appealing. The West End’s presentation consisted of a half-dozen jumbo oeuvres, subtly spiced with turmeric, although they also suffered from too much salt. The yolks featured silky smooth texture, and appeared to have been piped through a pastry bag. Whites had a touch of give, and none of the rubberiness associated with overcooking.

Bits of maple-scented bacon and sprightly scallions contributed assertive flavor and visual appeal.

The burger’s birth

L

ike many popular dishes, the historical origins of the cheeseburger are shrouded in mystery. It appears to be an American creation, first showing up in the 1920s or 1930s. Some say Pasadena’s Rite Spot came up with this

classic in the mid-’20s, while Louisville’s Kaelin’s Restaurant in Kentucky claims it originated this staple in 1934. Interestingly enough, the owner of Denver’s nowdefunct Humpty Dumpty Drive-In (located near

Federal and Speer) was among the first to trademark the term “cheeseburger.” The restaurant may be long gone, but today a stone marker commemorates this eatery’s lasting contribution to culinary history.

piqued, I decided to sample the pricier $17 BBQ pork ribs. Like Lisa’s burger, this selection came with crisp fries and a fresh-tasting slaw with a pronounced fennel note that cut the richness of the pig. The ribs were falling-off-the-bone tender with a pleasant smoky aroma, and none of the over-salting all too common in restaurant ribs. One potential pitfall of this method of preparation is that a chef ’s inattentiveness can lead to a jerky-like dryness, but these ribs were satisfyingly moist.

While one’s initial impression of the West End may be that it’s strictly a place for bar food, that perception fails to account for its considerable skill in providing traditional but simple summertime fare. It’s also worth remembering that the Flatirons vista from the Tavern’s rooftop deck is one of the best views in Boulder, which makes this spot an especially appealing place to bring an out-of-town visitor.

Rob Trenz, manager of the Rio. Trenz doesn’t hesitate to say that despite the long leasing process and a $300,000 investment to convert their rooftop into a dining space, the result was well worth the effort.

“Each year it picks up in popularity and functionality,” Trenz says. On one recent Thursday night, there was a wait for a patio table between 6 p.m. and 10 p.m., something that is becoming more common during the summer.

One of the biggest challenges of the Rio’s rooftop is that it’s known as a “satellite dining area,” meaning it’s located far from the kitchen. Two flights of stairs separate the kitchen from the rooftop.

“It takes a lot of manpower to make that go smooth,” Trenz says.

Rooftop dining comes with its share of challenges for restaurants. The most common are the forces of nature that can take pleasure away from a meal, rather than adding to it. Because the sun sometimes becomes too hot, the Rio had to add misters to counteract the heat.

The wind is also a major factor, especially when umbrellas catch a gust.

Tim Shaughnessy, general manager of The Lazy Dog Sports Bar and Grill, says he remembers when the wind took an umbrella for a ride when it was not screwed in correctly.

“The umbrella flew off and landed right in the tree outside,” Shaughnessy says. He says he would rather have it land in a tree than on someone on the street, although getting the umbrella out of the tree proved to be a challenge.

According to Shaughnessy, the rooftop is responsible for 70 percent of the Lazy Dog’s business during the summer. In the seven years since it has been open, the scene on the roof has evolved. The once-makeshift bar is now full, but the live bands that once played out there have been discontinued.

Shaughnessy says that the music ended up being too loud for some customers who were trying to enjoy their meal. If you were there for the band then it was great, but not everyone was.

Due to noise ordinances, the music had to be quieter after 11 p.m., which can be a challenge. Even though the

music has been discontinued, the rooftop is open until 2 a.m. to accommodate the late-night revelers of Pearl Street.

Noise ordinances are the reason why Bácaro Venetian Taverna doesn’t host live music regularly. But that doesn’t hold back the events they host on their roof, which can accommodate up to 200 people in the summer, according to their website.

“We do tons of events,” says Klaus Nowels, general manager/event coordinator of Bácaro. “We did a 150-person party up there last night and we served over, I think it was, 240 mojitos.”

One of the benefits of Bácaro’s rooftop patio is that a transparent ceiling provides extra protection from the hot sun and rain. During the winter, Bácaro has heaters and tarp walls that keep its rooftop patio accessible in cold weather.

K’s China is another restaurant that keeps its rooftop open all year. K’s rooftop is more exposed than Bácaro’s, but portable heaters provide comfort for those who don’t want to be stuck inside.

According to K’s Bar Manager Kyle McNamara, its rooftop business is responsible for an extra $20,000 to $30,000 a month, which is worth it, considering the landlord charges for the extra space.

It’s hard to ignore K’s presence on the Hill when it hosts live music four to five nights a week, and most of its business comes from the late-night crowd.

Even though it has to be quieter after 11 p.m., McNamara says K’s hasn’t had any issues with the police in the last couple of years.

Boulder is known to be a city that loves the outdoors. Rooftop patios provide an opportunity for restaurants to make natural beauty a part of their establishment.

The variety of restaurants both on the Hill and on Pearl Street allows customers to take full advantage of quality dining and the amazing scenes that surround the city. They can make the natural environment part of their meal, enjoying not only what’s on their plate or in their glass, but also all the beauty that surrounds it.
