This time of year Traditionally at this time of year Christmas features heavily. Either Buyers want to move in for Christmas or Sellers want to sell and move out before Christmas. The real estate market then goes quiet from late December through to mid-January as many people take their annual holidays. What goes quiet in Perth is then the boom for country towns especially the South West as Buyers walk into real estate offices whilst on holidays. On the rental front we are seeing a number of break-leases. This is where a tenant wants to terminate the lease and move out of the property before the lease expiry date. This is happening for mainly two reasons; 1 The tenants are buying their own homes rather than renting.

Recently one of our salespeople wrote sixteen (16!) offers on one property on a weekend!

Christmas Trifle

“Bourkes, own little Christmas cracker, Gaynor shows us how to make the tastiest Christmas treat”

Place jelly crystals in a heatproof bowl, add boiling water, whisk until crystals have dissolved. Stir in 400ml of cold water, cover, refrigerate for 2 hours or until just beginning to set (mixture should have a thick, syrupy consistency).

Ingredients 2 x 85 gram packets strawberry jelly crystals 2 cups boiling water 250 grams strawberries, hulled, sliced 1 x 440 gram canned peaches, drained 2 cups double thick vanilla custard 250 gram packet jam rollettes (or 1 jam sponge roll, sliced) 1/3 cup sherry 300 ml tub whipping cream Extra fresh strawberries, hulled, sliced for presentation

Gently fold in the strawberries. Line the bottom & sides of 12 cup capacity glass serving bowl with rollettes, and drizzle with sherry. Add slices of peach (or pear) then add the jelly/ strawberry mix over the top, cover, refrigerate for 4 hours or until firm. Spoon the custard over, then using an electric mixer, beat cream until soft peaks form. Top the trifle with the cream, cover and refrigerate overnight. Top with extra berries. Instead of plain cream (above) you could try lemon syllabub. Grate the rind of 1 lemon and squeeze the juice from half of it. Mix with 50ml of sweet white wine (a dessert wine such as botrytis Semillon) and ½ tablespoon of sugar in a bowl. Cover and leave overnight. The next day, whip the cream until thick,. Strain the lemon mixture, then slowly fold into the cream. Cover and refrigerate the syllabub until required.

Saint-Émilion’s history goes back to prehistoric times and is a World Heritage site, with fascinating Romanesque churches and ruins stretching all along steep and narrow streets. The Romans planted vineyards in what was to become Saint-Émilion as early as the 2nd century. In the 4th century, the Latin poet Ausonius lauded the fruit of the bountiful vine. The town was named after the monk Émilion, a travelling confessor, who settled in a hermitage carved into the rock there in the 8th century. It was the monks who followed him who started up the commercial wine production in the area. Saint-Émilion is located 35 km (22 mi) northeast of Bordeaux, between Libourne and Castillon-laBataille, France.
