September. Seasonal busy period The number of listings has continued to drop over the last 6 months to the current levels of 10,777. We are seeing a tight sellers’ market as stocks are below equilibrium of 12,000. Seasonally we see a lull before the storm in that August is quiet and September our activity increases.

The mango salsa 1 Large mango - not too soft 1 Bunch of spring onions, trimmed and chopped 1/2 Red chilli 1/2 Lemon - juice only 50 ml (1.8fl oz) Olive oil 1 pinch Salt and freshly ground black pepper Cut the mango (not too soft) into 5mm cubes and place in a small bowl with the chopped spring onions. Finely dice the red chilli and add to the salsa. Next, pour in the olive oil and the lemon juice then season lightly. Store in the fridge until required.

Tiger Prawn Spring Salsa The finishing touches... 4 Slices of crusty bread 1 tbsp Olive or sunflower oil 16 Tiger prawns 1/2 Lemon - juice only Preheat the BBQ or griddle pan. Brush the slices of bread with a little olive oil and toast until golden brown on both sides. Place the tiger prawns in a large bowl then sprinkle with the lemon juice and a little cracked black pepper. Place the prawns on the BBQ and cook for about 2 minutes on each side. Serve on top of the toasted bread with a spoonful of the mango salsa.
