Pack up your picnics mini quiche lorraines

1 tomato, chopped ½ cup grated tasty cheese ¼ cup chopped ham or bacon 1 spring onion, finely chopped ½ cup milk 1 egg

Preheat oven to 180 degrees

2 sheets frozen shortcrust pastry, thawed Raw rice for blind baking

Prep: 10 mins Cooking Time: 25 mins Makes 12

Cut 12 pieces of greaseproof paper rounds to cover each pastry shell (slightly larger than pastry shell). Cut pastry into 12 rounds with 7.5cm cutter. Spray shallow patty tin (muffin tin will suffice) with cooking spray. Line tin with pastry rounds, cover pastry with greaseproof paper and fill with uncooked rice. Bake for 5 mins then remove paper and rice and bake for a further 2 mins, cool before filling. Mix together tomato, cheese, ham and spring onion and spoon into pastry cases. Whisk together milk and egg. Pour enough into each pastry case to cover filling, being careful not to spill over or pastry won’t crisp. Bake in oven for 15-20 mins, or until filling is set and golden. Transfer to wire rack to cool. Will keep in airtight container in refrigerator for up to 2 days.
