Warm up this winter with this delicious chicken noodle soup with a Thai twist!

1 tbsp. oil 1 tbsp. sesame oil 1 medium onion 2 stalks of celery 4 cloves of garlic 1 tbsp. lemon grass paste 1 tbsp. chilli powder 1/4 tsp. dried chilli flakes 6 cups of chicken broth 1 cup crushed tomatoes 2 chicken breasts cut into bit sized pieces 3 tbsp. fish sauce 125g of asian noodles 150g of spinach Juice from 1 lime coriander leaves to taste

Thai Noodle Bowl Method: 1. In a large pot heat both oils, add diced onions, celery, minced garlic, lemon grass paste, chilli powder and red chilli flakes. Cook until soft over medium heat for 5 minutes. 2. Add the broth, tomatoes, chicken, fish sauce and bring to a boil, simmer for 10 mins. 3. Add the noodles to the pot and cook according to package directions. 4. Once the noodles are done, stir in spinach and lime juice and take off the heat. Top with fresh coriander leaves.
