EASY AMARETTI

Darcie’s mom Alice first had these at a Christmas party in Calgary and cajoled the hostess into parting with the recipe Darcie had just received her gluten allergy diagnosis and Alice’s shortbread was off the menu. We have been enjoying these at Christmas ever since.

2 eggs

1-1/2 cup sugar

3 cups ground almonds (not almond flour) or finely grind 3-1/3 cups whole almonds with skin

1 tsp instant espresso or coffee granules

1 tsp cocoa

½ tsp almond extract

½ cup sugar (for rolling cookies in)

Almonds for garnish

Preheat oven to 350 F.

Lightly grease cookie sheets.

In large bowl beat eggs and 1-1/2 cups sugar for a few minutes.

Stir in almonds, coffee, cocoa, and almond extract until blended

Roll into 1-inch balls.

Roll balls in sugar and place an almond in centre of each.

ORANGE OLIVE CAKE

This orange olive cake brings a warmth to my kitchen on winter days I love how the smell of orange peel fills the air. It’s the perfect, easy cake to whip up for unexpected company, making the season feel all the more cheery and warm.

Orange Olive Cake

Ingredients

3/4 cup sugar

Zest of 3 oranges

1 cup flour

1/2 tsp baking powd

1/2 tsp salt

1 egg

1 cup yogurt

1/2 tsp vanilla

6 tbps Olive Oil

Method

Preheat oven to 350

Rub together sugar and zest

Combine dry ingredients

Combine wet ingredients

Mix wet and dry ingredients together

Bake 25 mins (cake)

Bake 17 mins (muffins)

Top with powdered sugar

CHRISTMAS FRUIT CAKE

At this time of year so many people are making their Christmas cakes My family are not big fans of the tradition fruit cakes. This is my take on a Christmas fruit cake.

1 cup of butter, softened

1 1/4 cup granulated sugar

4 eggs

1 Tbs almond liqueur (optional)

1 Tbs orange zest

1/2 tsp almond extract

2 cups all purpose flour

1 tsp baking powder

1/2 tsp salt

1 1/4 cup chopped toasted almond (unblanched)

1 cup chopped dried apricots (or 1/2 c apricots and 1/2 c dried cranberries)

2 Tbs almond liqueur

Pre-heat oven to 350

In bowl, beat butter with sugar until light and fluffy. Beat in eggs, 1 at a time, beating well after each addition, beat in almond liqueur (if using), orange zest and almond extract.

In separate bowl, stir together flour, baking powder and salt, gradually beat into creamed mixture in 3 additions. Fold in the almonds and the apricots.

Spoon into 9x5 inch loaf pan lined with parchment paper. Bake in 350F oven for 75 minutes or until golden brown and tester inserted in center comes out clean. Let cool slightly on a rack Drizzle almond liqueur over top of cake Let cool completely Cake can be wrapped well in plastic wrap and refrigerated for up to 1 week or over wrapped with foil, placed in freezer for up to 1 month. Makes one loaf.

I use apricot brandy sometimes instead of the almond liqueur.

GINGER SNAPS

This recipe is from my favourite baker Zoe Bakes Cookies Ginger snaps are the quintessential Christmas/Winter Cookie!

Ginger Snaps

1 1/2 cups / 180g of all purpose flour

1/2 tsp baking soda

1 tsp unsweetened natural cocoa powder (try the Cocoa powder from Cocoa West)

1/2 tsp salt

1/3 cup / 105g light or dark molasses (not black strap)

2 Tbsp granulated sugar

1/4 cup / 57g coconut oil

1 Tbsp plus 1 tsp ground ginger

1 tsp ginger extract (optional)

In a large bowl whisk flour, baking soda, cocoa and salt. In a small pot heat molasses, sugar, coconut oil, ginger, and ginger extract over med heat. Let it cool slightly about 10 minutes and then pour it over the flour mixture and mix to combine.

On a sheet of plastic wrap, shape dough into a log 1 1/2 inches Refrigerate for at least 1 hour. The dough can also be made a day ahead. Preheat oven 350F. Line baking sheets with parchment paper.

Using a sharp serrated knife, cut the cookie dough into 1/8 inch thick and arrange on baking sheet leaving 3/4 inch between them. Bake one sheet at a time in the middle oven for 8 to 12 minutes until golden brown and set If they are underbaked, they won't snap. Cool completely on baking sheets.

*Tip If the cookies lose their snap you can reheat them in a 350F for 5 minutes.
