in the cove below the pub~ 604 947-0881
It’s that time of year again here on Bowen, the sun is setting (much) earlier, we’ve dug out the warmer jackets, and we’re checking the local events calendar to make sure we don’t miss out on any of the holiday fun. It’s December, and the welcoming lights in the Cove (many hung by Basia and her helper elves) create a sense of holiday spirit that’s key in warding off the darkness. Many of those lights are from other sources too – the Bowen shops, restaurants, boutiques, artisans, and countless other folks who make the holiday season special. There’s a sense of security knowing they’ll be keeping the lights on at night, a welcome sight whether you’re climbing the hill to Artisan Square or arriving home in Snug Cove after a long day on the mainland. These Holiday Makers provide another sense of security too, in that – between them – they can help make any holiday memory we’re hoping to create come true. This could be the right set of Christmas lights for your house, the perfect cozy sweater for your partner, or an inviting place to take visiting friends and family out to eat. All of this is possible right here on the island, and never more than a short drive away. A special bonus of keeping your holiday business local is that it helps people you’ll run into way more often than just December. It’s likely you already know many of the faces behind our local establishments, and supporting them in your holiday pursuits helps ensure they can be there for the community the other 11 months of the year too. And if there’s a spot you haven’t visited yet, drop in there too! There are lots of hidden gems on this island waiting to be found. As we say so long to the sun for the next few months, many of these Holiday Makers will be the few beacons where we can still stop in a for conversation and a smile. Their presence in our town is a benefit through both the services they provide, and most importantly through the amazing, friendly, and talented people Bowen is able to welcome because of them. So head on out and say hi, they’ll have the lights on waiting for you. Happy holidays from all of us at the Undercurrent.

Holiday Bakers A TALE OF TWO SHORTBREADS by Claire Stewart “Hi Tracey, Pics of the recipes follow. I've included mum's original, but as she rarely wrote down methods and I've adjusted the ingredients a bit, I've included my version, too. My grandmother brought her recipe with her when she emigrated from Scotland at 14. I would guess it was her mother's recipe. She made them every Christmas for as long as I can remember. They will always be the gold standard for me. She always cut them in rectangle shapes and baked them very pale. I roll mine into logs and wrap in saran to cut like icebox cookies. Often, I'll add lemon zest, Earl Grey tea, minced candied ginger to the dough. She'd be horrified! Mum made her shortbread every Christmas as well. She was neither Greek nor an especially good baker, but these were delicious. She never wrote methods on her recipes. Only a list of ingredients, sometimes a bit cryptic. Also, as her spelling was terrible, they were always "Greek Sortbread" in our house (see her copy of the recipe). She always rolled them in oval shapes and never invested in a sifter. Instead, she'd use a spoon to shake the icing sugar over them. She made them every year until she was over 80. The first time I made them a few years ago, I adjusted her recipe a bit (I often add a tbsp of crushed anise). Instead of the oval shape, I decided they'd look better as balls. After they were all baked, dusted with icing sugar ( 3 times), cooled and set out on a lovely plate to be photographed I took a picture and sent it to my brother with the message "I've made mum's Sortbread!". His only comment "they're not the right shape". Now I make half oval and the other half balls.”

Holiday Bakers OATMEAL FREEZER COOKIES by Margaret Gedye Mom made batches of this dough and kept the freezer stocked so that she (and we) could have a quick 10 minute treat whenever there was need. Her friends would pop in for tea and a chat and she seriously disliked store-bought. I bake mine off in a small counter-oven and add a swipe of melted chocolate chips to make them even better. So easy! This recipe makes about 4 -5 dozen cookies, depending on how thinly you slice the dough. ¼ Cup white sugar ¾ Cup brown sugar 1 Cup butter, room temp Mix well together, until fluffy (~3 minutes) 2 eggs 1 teaspoon vanilla 1½ Cups sliced almonds ) Add & mix well Optional:1 Cup raisins 1¼ Cup flour ) Mix well together & then add to wet mixture 1 teaspoon salt 1 teaspoon baking soda 3 Cups quick cooking oats) Add & stir to blend but do not over-stir. Using half the dough, plop large spoonsful in a line along a piece of waxed paper. Roll the waxed paper and dough roughly into solid logs (diameter ~ 2”) and repeat. Freeze. Wrapped in waxed paper plus a (reusable) plastic bag, the dough will last months before any freezer burn. Slice thinly and bake @ 350*F on parchment or greased pans for about 10 minutes. Watch for golden brown – too pale and they are bland, but quick to burn too. Move them off the cookie pan to wire racks immediately (to stop the baking process). Optional: ¼ to ½ Cup chocolate chips (depending how many cookies you’ve backed off) – melted. Cool cookies completely before smearing ~ ½ teaspoon melted chocolate across the top. Let cool as much as 1 hour before storing in a tin (otherwise the chocolate will stick to the cookie on top). Will keep well in a closed tin ~ 2 weeks – they are still edible after that but lose their crispness. Enjoy!

Holiday Bakers SANTA’S FAVOURITE COOKIES by Nancy Lee I remember these were always a wonderful Christmas treat at my friend’s house. They are super easy to make and I think they are Santa’s favorite. 1/2 cup butter 2 cups semi-sweet chocolate chips (I used Ghirardelli Premium Baking Chip 326g) 1 cup finely chopped walnuts or pecans 1 bag mini marshmallows (I used the Fruit Flavoured because it makes the slices look pretty but my husband only likes the white mini marshmallows) 1 cup shredded coconut (you could omit the nuts and use graham crumbs) Melt butter and chocolate chips in a large pan over low heat. Take off heat and add chopped nuts. Let mixture cool slightly before adding marshmallows. Set aside and let cool. Sprinkle two pieces of parchment paper with the shredded coconut. Divide the chocolate mixture and form into 2 long logs. Use the parchment paper to help form into logs like making sushi. Coat rolls with the coconut. Wrap the rolls with cling wrap and refrigerate overnight. Cut into 1/3” slices with serrated knife.
