Wreaths for the Fallen expands, promises biggest year to date
W
ith almost 700 additional interments at the Minnesota veterans cemeteries in the last year the challenge for WreathsForTheFallen.org to honor all our country’s fallen veterans is greater than ever, the organization reported in a news release. For a number of years, WreathsForTheFallen.org has endeavored to honor all of the country’s fallen veterans at the cemeteries by placing a wreath on each veteran’s grave in December. “We are in hopes this year we will again be able to honor all
our country’s fallen veterans at the Minnesota State Veterans cemeteries in Little Falls and Preston, Minnesota,” said John Thomas, president of WreathsForTheFallen.org. This year the date for the National Remembrance Ceremony is 11 a.m. Dec. 16, the third Saturday in December, at the Minnesota State Veterans Cemetery in Little Falls and the veterans cemetery in Preston. After the ceremony consisting of representatives from each branch of the military, several thousand honor wreaths will be placed on the many markers of
fallen veterans. Many volunteers from Camp Ripley, the Minnesota Patriot Guard, Minnesota Civil Air Patrol, VFWs, American Legions and many other civic organizations along with hundreds of families coming from a wide area will perform the honor of placing the honor wreaths on the grave sites. Everyone is invited to come and assist in the wreath distribution. Information on how to get involved or donate is on the www. WreathsForTheFallen.org website. “Everyone is invited to join and assist us with this most worthy program,” Thomas said.
Wreaths to adorn Pequot Lakes area veterans’ graves
T
he Christmas for Vets organization will once again honor veterans in local cemeteries this holiday season. About 300 veterans in five cemeteries will have wreaths placed on their gravesites. The five cemeteries include the city of Pequot Lakes, Our Savior’s Lutheran, Kedron, Jenkins and Stony Brook. Additionally, the city of Breezy Point will honor the veterans in its cemetery, independently from this organization. Placement of wreaths will be at 1 p.m. Saturday, Dec. 9. Christmas for Vets is asking for volunteers to help with this project and to meet in the parking lot behind Our Savior’s Lutheran Church. Stakeholders for wreaths were placed in October. Placing the wreath and hooking it to the stake takes little effort, and with many volunteers, the wreath placement goes quickly. Letters have gone out to known family members of veterans,
requesting a $15 donation toward the cost of the wreath and stake. Local businesses have also been contacted for donations. Christmas for Vets is a nonprofit 501(c)3 organization. If anyone is able to provide additional funds toward this project, it will ensure that veterans with no living family will be honored with a wreath. There are five Spanish-American War veterans in the Pequot Lakes Cemetery, with no known family to provide funds. No veteran will be overlooked or forgotten. Donations can be sent to Cathy Malecha at 30966 Old Highway 371, #205, Pequot Lakes, MN 56472. In conjunction with the wreath placement, the Pequot Lakes Area Historical Society invites the public and all volunteers to an open house from 3-5 p.m. in the lower level museum in the Cole Memorial Building. The historical society will highlight the many veterans artifacts on display. Hot cider and cookies will be served.

Taste of the Holidays set Dec. 7 at Schaefer’s Foods
S
chaefer’s Foods of Nisswa will host its annual Taste of the Holidays from 4-7 p.m. Thursday, Dec. 7. Taste of the Holidays participants will sample food and beverage items from every grocery department, including deli, produce, meat, dairy and bakery. A minimum donation of $5 per person is requested, and all donations will be donated to the Lakes Area Food Shelf. The Lakes Area Food Shelf was started in 1991 at Lutheran Church of the Cross in Nisswa. Outgrowing its space, the Lakes Area Food Shelf built in its present location on the property of Grace United Methodist Church in Pequot Lakes.
The Lakes Area Food Shelf currently services 270 families from Pequot Lakes, Nisswa, Breezy Point, Lake Shore, Lake Hubert and Jenkins. The families can come to shop for food twice a month, receiving enough food for three meals for three days. The food these families receive during the winter is especially important. Families with children want to be able to give their kids something for Christmas so they need extra assistance with food. Schaefer’s Foods is located at the corner of Highway 371 and County Road 13 in Nisswa. For more information, contact the store at 963-2265 or visit www. SchaefersFoods.com.

• Preheat Oven to 375 degrees. • Whisk together flour, Baking Soda, Baking Powder and Salt in small bowl. • Beat Butter, Sugar, Brown Sugar and Vanilla in a stand mixer or in large bowl until creamy. • Add Eggs, beating well. • Gradually beat in Flour Mixture. • Stir in Chocolate Chips and Nuts. • If you are making the Vegan version of these, I highly suggest you chill the cookie dough at this point for at least 30 minutes – the results are much better! • Drop by rounded tablespoon onto ungreased baking sheets (I use parchment paper). • Bake 8-10 minutes or until golden brown. • Cool on baking sheets for 2 minutes, then remove to wire racks to cool completely.

Meanwhile, in a double boiler, melt the dark chocolate. If you don’t have a double boiler, place a metal bowl over boiling water, so the water is just below the bottom of the bowl. Once the chocolate is melted, dip the peels into it, either fully submerged or with one end remaining bare. Place on parchment paper and allow to cool. CHOCOLATE COVERED ORANGE PEELS
From the Whisks & Whimsy blog 4 oranges 8 ounces water 8 ounces sugar 16 ounces dark chocolate Separate the fruit from the peel, ensuring the peel remains intact. Reserve the fruit for another use. Slice the peel into thin strips or small squares. Bring water to a boil and blanch the orange peels in

SALTED CARAMEL CHOCOLATE CRACK BARK
From Deb’s Pots blog 1 package saltines 2 sticks unsalted butter 1 cup light brown sugar 1 teaspoon vanilla 1 package chocolate chips (milk or semi-sweet) Sea salt, to taste Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Lay the saltines out on the sheet. Melt the butter in a heavy, medium saucepan and add the sugar. Stir until the sugar melts and then cook over medium high heat for about 5 minutes until the bubbles begin to look frothy.
Remove from heat and stir in the vanilla and a pinch of salt. Pour the caramel over the saltines and spread with an offset spatula. Bake for 10 minutes. Take the baking sheet out and sprinkle the chocolate chips over, trying to evenly disperse them. Put them back in the oven for two minutes. Take them out and spread out the now-melted chocolate. Immediately sprinkle with salt. Let them cool outside or in the refrigerator or freezer until they are set. Once cool, break up the bark into smaller sized pieces. – DeLynn
